This month’s interview An interview with Evelyn Ndawa Kasonkomona, owner of Pansupa Lounge

This June, Pansupa Lounge, a chic afro fusion restaurant in Lusaka, is celebrating its second anniversary. Our multimedia journalist, Nambeye Katebe caught up with restaurant owner Evelyn Ndawa Kasonkomona, to find out what Pansupa has achieved so far, and what is on the books for the future! NAMBEYE: Give us a brief introduction about yourself? EVELYN: I have been an entrepreneur for the past 20 years or so! I am originally a convent girl but when my family moved to Lusaka, I went to Kabulonga Girls Secondary School. I have studied public relations, advertising and marketing. I am a qualified travel agent. I am also a professional beautician. I worked in England as a makeup artist for about two years. I have a passion for decor, design and events management. NAMBEYE: You have so much going on! With experiences in so many different fields, most of which have little to do with the running of a successful restaurant. How did you make the transition into getting involved with Pansupa? EVELYN: I believe everything I have done and all my experiences were a way of God preparing me for what I am doing now. There is nothing that has not played a part in creating this restaurant. For instance, interior design has been a major hobby for a long time. This played a huge role when it came to creating Pansupa as I came up with the interior design for the restaurant myself.

NAMBEYE: I must say Pansupa’s interior design is quite outstanding! How did you manage to pull off such a big project? EVELYN: When you have passion, it drives you to create. I keep my work as original as possible. When inspired by something I don’t make replicas. I interpret it to represent who I am and what I believe in. NAMBEYE: How did you come up with the concept of this restaurant? EVELYN: Pansupa has quite a rich history. The restaurant has actually been in existence for the past 20 years. It was started by my mother who had the concept of creating a place that would serve traditional African food. My mother started the restaurant from a small kiosk along Lumumba Road and when the local council decided to expand the road, they offered my mother this property where Pansupa is now located. Later on my brothers took over the running of the restaurant and

included modern dishes such as sausages and chips. When I became involved in the restaurant I wanted to bring back the original concept that my mother had. The idea of Pansupa was birthed several years ago when I was in Japan on holiday. I was reflecting on my life goals and what I wanted to achieve in the next few years, and voila! Pansupa was born. NAMBEYE: Pansupa is an unusual name for a restaurant; does it have any special meaning? EVELYN: The name originates from “insupa” which means calabash. Traditionally, when there was a meeting, people would gather around in a hut with a calabash with traditional brew in the centre. The people would drink, laugh, celebrate and have a good time. This is very significant - Pansupa is a way of bringing people together and embracing culture. NAMBEYE: Pansupa is said to be an afro fusion kind of restaurant, what exactly does this mean?

EVELYN: We mix traditional and contemporary dishes. For example, we have “pap sushi” which is an afro fusion dish - as opposed to serving sushi with rice we serve it with nshima. We play around with recipes and push boundaries. NAMBEYE: You serve traditional food which is seasonal. How do you react to and reflect seasonal differences?

We often offer our visitors munkoyo which is a local brew and interestingly enough no one ever says no. NAMBEYE: In terms of high profile people, who would you personally, love to host at Pansupa?

NAMBEYE: In terms of the menu, should clients expect new additions? EVELYN: Yes, we are introducing things like crocodile tail! NAMBEYE: I’m not sure I would try that but sounds interesting! You have travelled a lot - does this influence your menu in any way? EVELYN: It does! One of my plans is to travel to all ten provinces of Zambia learning how to cook all types of traditional foods. I would like to learn how local people prepare it and get the true flavour. At Pansupa we try to maintain natural flavours - that’s what traditional food is all about.

EVELYN: We stock up on seasonal food. We find ways of freezing and preserving food through some traditional methods. When this is not possible we work with what is available on the market.

EVELYN: My top three would be the Queen of England, our president H.E. Mr. Michael Sata and the queen of talk, Oprah Winfrey. These are people who have inspired me and it would be an honour to host them.

NAMBEYE: Your food is said to have medicinal value. How is this?

NAMBEYE: This month is special - Pansupa celebrates its second anniversary! What can clients look forward to?

EVELYN: Professors, some from Harvard, have attested to this. We serve a vegetable called “bondwe”. It contains selenium, an essential mineral. Even our chilli is said to be an aphrodisiac because of the way we make it. I didn’t even know that! NAMBEYE: Pansupa has hosted high profile people like Dr. Kenneth Kaunda and the former president of Botswana Fetus Mogae. How was this experience? EVELYN: It was amazing. Recently, we hosted the Tanzanian High Commissioner for his birthday. We also hosted Hillary Clinton’s right hand woman, during the AGOA forum. She came back twice which was

EVELYN: We are planning an event for corporates and one for individual clients. Of course there is our regular Shady Sunday event which usually attracts many. We are currently rebranding Pansupa too. We have registered it as a limited company and its new name is Pansupa Lounge Limited. We also run Plan It Designs which specialises in quality events, interior design, and landscaping. We have broken it down into two companies - Pansupa Events Limited and Pansupa Design Limited. We would eventually like to open a franchise and see Pansupa crossing borders worldwide.

NAMBEYE: On a more personal note, do you ever eat at Pansupa and what is your favourite dish? EVELYN: Certainly! I eat here a lot and sometimes I even cook. My favourite dish is “sombe samaki” - pounded cassava leaves cooked with dry fish, impwa, chikondia and a touch of groundnuts. NAMBEYE: Finally, what would you like to say to people who have not been to Pansupa yet? Pansupa is a wonderful African journey, ideal for those who love indigenous food. Our food is fresh, well balanced and nutritious. Apart from the food, we have a wonderful environment. People think if you want to enjoy traditional food it has to be in some shabby restaurant. that is not the case, especially at Pansupa! So, we look forward to hosting you.

— Staff news and opinions Personal views and reflections on what freedom means in Africa Today, I strongly believe that freedom is in information. If we can access information then we can gain knowledge. If we can gain knowledge we will find that we have more choices. Information brings the opportunity for growth and an awareness of how to tackle the challenges we face.

Since 1963 Africa Freedom Day has been celebrated. But, what does freedom for Africa mean today? Africa Freedom Day, also known as Africa Liberation Day, was originally declared to, “Mark each year the onward progress of the liberation movement, and to symbolise the determination of the People of Africa to free themselves from foreign domination and exploitation.” There has been much progress on that front. We all know that Zambia has been celebrating its independence since 1964. There have been many ups and downs, even since my arrival in Monze hospital in 1981. There are many more battles to be won.

To me, freedom today is access to information and the freedom to choose through the spread of knowledge. I grew up on a farm in between Ndola, Luanshya and Mpongwe. We had no electricity, running water or any form of communication except a radio with limited stations and poor quality sound. One could argue that this upbringing did in itself give me freedom. It was a wonderfully simple life and I was free to play, explore and enjoy my childhood. One could also argue that we were blocked off from the big wide world. At the time I did not feel that way, maybe because I went off to boarding school and I had opportunities to visit family abroad.

I hope Africa continues to develop the infrastructure needed to increase access to and improve the quality of the internet. As more and more people gain access to mobile technology information and knowledge is spreading. If children can have access to the internet whilst researching their homework, knowledge is spreading. If small villages can have access to even one or two cell phones with internet access they have access to key information like health care and agriculture. Information and knowledge is key to the development of Africa.

Africa is often split into two camps trade or aid? I am firmly in the trade camp. There may be a place for well managed aid, but I believe in trade because if we encourage business we encourage employment, self belief and self respect. We encourage opportunities for education and increased access to the internet. I love the internet. I work in marketing and communications to help spread information through the internet. I love how we encourage trade through thebestofzambia.com. By putting people online we are opening up Zambia to international opportunities. We are enabling the growing Zambian population with access to the internet to be able to make informed decisions about what they do and who they choose to buy from. We are also encouraging competition. And competition, if managed fairly, cultivates a culture of ongoing improvement and quality standards. Think about what Africa Freedom Day means to you. The Lusaka Animal Welfare Society is looking for continued support asking people to become members or renew their membership for 2012/13.

Project OSCAR is a community service society formed to make a difference in the lives of vulnerable members of society in Northern Zambia.

Kasama Fruit Orchard The trees are now in their third year. Most of them have doubled in size. Jackfruit, Mexican Apple, Avocado and Guava have proven to be the best suited to the area. Chikalisha Taleta Rural Development Women Club Harvests have started with Groundnuts, Soya beans and Maize. Sensitization workshops about deforestation, erosion control and organic agriculture need to be intensified, so sustainable food security can be achieved. Literacy classes are still held under the tree. A sub-group to learn about saving and budgeting was started. Chikalisha Taleta group has been accepted as a Multipurpose Cooperative by the relevant Government Department. The Peko Pe Stove Project The stove was exhibited and demonstrated at the Zambian Art and Design Fair in November 2011. ‘Miombo Organisation’ Norway came with improved prototypes. The stove

created a lot of interest. Our affiliated youth groups, Zambia Youths Multipurpose Cooperative Society (ZYMCOS) and Allied Youth Entrepreneurs (AYE) took the stove to the Global Expo in Botswana with eight participating countries from Africa and overseas, such as Brazil. He found that all his cancer patients seemed to have something in common - there had been some kind of psycho emotional conflict prior to the onset of their disease, a conflict not fully resolved. X-rays taken of the brain showed in all cases a ‘dark shadow’ somewhere in the brain. These dark spots would be in exactly the same place in the brain for the same type of cancer. There was also a 100% correlation between the dark spot in the brain, the location of the cancer in the body and the specific type of unresolved conflict.
