According to recent data from the U.S. Bureau of Labor Statistics, inflation in Utah has increased 10.4% since May 2021. This number is even higher than the current national average. It means a typical family of four is spending $700-$800 more per month on the same items they purchased a year ago. To help navigate the challenges of inflation, USU Extension created a website with information and resources at inflation.usu.edu. It includes tips from USU finance experts and faculty, and new information will be added as it becomes available. Website topics include budgeting for emergencies, combating panic-buying during inflation, teaching children about money management, positive conversations about money, and other topics. Also included are links to PowerPay, a free debt reduction tool; the Money Master online course; an Estate Planning Toolkit; Hidden Gems, free family fun guides for economical ways to play together as a family; and the Cutting Expenses Guidebook. There are also links to frequently asked finance questions and free inflation webinars. USU Extension will also provide free in-person finance classes at the Weber County library in September. The choice of utilizing and investing in existing venues is due, in part, to the lasting impact that the 2002 Winter Olympic Games had on winter sports in northern Utah. “We are excited to be the first venue to officially be on board when that bid does become reality. The level of support and cooperation between the venue and the above-mentioned interagency entities has been incredible to witness, and we are excited to continue to support each other as we bring international events to our venue,” says WCSC Director Mariko Rollins.

Earlier this summer, Weber County signed a Venue Use Agreement to be named an official venue for the Weber County Ice Sheet to 2030 or 2034 Winter Olympic Games through the Salt Lake Utah Committee for the Games. This agreement provides a fair rental reimbursement to utilize the facility and its staff and is a testament to the excellent care Weber County takes of its venues and facilities. It also propels the vision of another arena expansion for the 2002 Olympic venue.

Weber County, Ogden City, Weber State University (WSU), Utah Transit Authority (UTA), Weber County Convention & Visitors Bureau, and the Salt Lake Utah Committee have taken on local and statewide initiatives to bring another successful bid. “Naming Salt Lake City as a future Winter Olympic Games host city brings with it cultural excitement and buzz,” says Rollins, “but it also brings with it statewide infrastructure initiatives and improvements that many regions countrywide don’t plan for. We now have two once-in-a-lifetime opportunities to create a venue that fits the needs of world-class programs and teams and makes room for sustainable, smart growth of those clubs and organizations that call our rink home.” Rollins goes on to explain, “We’ve taken a look at the economic impact of the 2002 Winter Olympic Games and done cost-projection models of our clubs and organizations and have a solid understanding of how improved accessibility to our venue for spectators and participants will include more members of our community. Understanding how our population uses our venue is paramount to carrying out sustainable business models. We’ve taken into consideration in our venue remodel and expansion plans, utilizing a state award that was part of each of the facility improvement plans for all 2002 Olympic venues as submitted to the Utah State Legislature in early 2022, with expected funding throughout this fiscal year and completion pending a successful Olympic bid, and now know that increased seating will positively impact athlete and spectator experience, improved concessions will provide a higher level of event offerings, and expanded programming space will provide a place for all ages and skill levels to participate in ice sports, whether they step out on the ice as an athlete or experience the excitement from their Rollinsseats.” is serious about providing an excellent experience for all guests and has carefully considered all elements. “By the year 2030, close to 21% our national population is projected to be over the age of 65, and over 60% of that number may be challenged by either a seen or unseen disability. The individual knew that Detective Roche had a job to do to thoroughly investigate the cause of death. The individual commended Detective. Roche on his work and sensitivity to his pain. During this devastating time, Detective Roche checked in with him twice over the six months and provided comforting feedback, compassion, and empathy. Corporal Danielle Goodell is a tremendous leader at the Weber County Sheriff’s Office. Her current assignment is as the Grievance and Community Release Corporal within the Corrections Division. She is an outstanding example for our staff members to follow and look up to. Corporal Goodell is an active member of our Peer Support Group and our Special Operations Group. She recently attended the Inaugural First Responder Women 2022: Lift, Inspire, Focus, Empower for Life Retreat from which she brought back numerous ideas and motivations to increase and retain women in our chosen career of Corrections.

WEBER COUNTY LIBRARY: CAMACHO, BILINGUAL SPECIALIST Carlos earned a bachelor’s degree in Mexico before joining the Library. One of Carlos’ most enduring legacies is Story Fiesta, a program featuring hilarious storytelling and George, the sheepdog puppet. Carlos has presented state wide workshops on bilingual literacy, and he coordinates the Library’s America Reads program, matching children and volunteer tutors to boost reading skills.

Detective Roche recently received the American Spirit Award from the American Spirit Project. He was nominated for the award because his supervisors received a letter from a member of the community. In the letter, the individual explains that the “love of his life” took her own life early this year. The individual explains that Detective Roche was the investigator that responded to his residence that horrible day.

4. Shooting: If you are going to be out shooting, we have a simple rule: Do Not Shoot At Rocks. Do NOT bring exploding targets; bring soft targets. Weber County experienced a 40-acre fire last year, which required home evacuations, simply because someone was shooting at a rock.

0-5 feet from your home:

• When it comes to parking any vehicles, UTVs, or ATVs, don’t park them next to the house on top of dry vegetation. Hot engines and dry grass will not mix well for the fire safety of your home. 5-30 feet from your home:

• Continue to remove the limbs up your trees to six feet. Remove all dead and down trees or branches. Consider reducing the number of trees in this area to reduce the severity of a canopy fire.

2. Fireworks: Do not light fireworks anywhere near dry vegetation, whether by your own house or your neighbors' houses. Before you light the night sky, consider the worst-case scenario because, trust us, it can happen.

Be sure to also clean under your deck. As a rule of thumb, if it’s dead or down, get it away from your house.

5. Weed Eaters, Chainsaws, and Mowers: Do not use these items when the grass is dead and dry, as the metal parts of the blade will spark fastspreading fires. Above and beyond, enjoy recreating but play it safe! If you have any questions or would like the Weber Fire District to provide a free home assessment, please contact Captain Rick Cooper at 801-7823580 ext 206.

So far, 2022 has been a quiet and average year for wildfires, but Captain Rick Cooper doesn’t want to jinx it: the Uintah Fire was on an average year and a 40-acre fire at the gun range was on an average year. For these reasons, Captain Rick Cooper and his team are always on ready alert to handle even an “average day”. We sat down with Captain Cooper to get his tips on how Weber County residents can protect themselves and their properties from devastating fires.

3. Campfires: Check for restrictions in the area. Bring a shovel and have enough water to completely drown that fire out when you are done. If you feel the heat on your hand, even after you put water on it, that fire is still too hot. Mix and stir before you leave, making sure you’ve broken down the embers inside. Bring an extra five gallons of water for putting the campfire out.

• If you have a clean home and a clean yard, you should be in good shape. Keep in mind that leaf litter, pine litter, and wood stacks around the home are prime for heat traps and fire spreading.

• Remove as many flammable trees and bushes as possible. Oak, Conifer, and Maple trees can burn easily, and oak trees can produce flames up to 25 feet in the air. As a good rule of thumb, make sure to remove branches up to about six feet in the air. Surprisingly to some, grass will burn a house down just as fast as trees will. Make sure any grass or weeds have been mowed down to about 2 inches.

This one-of-a-kind shooting experience complex is equipped with one 50-yard shooting range, one 100-, 200-, and 300-yard precision rifle range, two classrooms, one shoot house, and a 50-yard law enforcement/ military shooting range. All ranges and venues are open year round. The shooting ranges are equipped with air conditioning and heat. The shooting ranges are partially covered, a Blue Sky Range, to assist in ventilation. This facility was originally opened only for law enforcement and the military to train. When Weber County purchased the shooting range, the vision was to continue to have the facility for law enforcement and military but also to open the shooting range to the public. We still proudly support our law enforcement, military, and security personnel, while offering an amazing, safe environment for our public. Our public 50-yard shooting range offers 18 shooting lanes equipped with a trolley system that allows you to set your target from seven yards to 48 yards - all for only $5 an hour per person. Bishop Stewart wrote about the ground breaking event of the new meeting house: “For approximately 25 years, the membership of the ward had tried to build up a building fund to the point where they could construct a new building. This was carried on through several bishoprics. We needed a new chapel badly. Our existing building did not have any inside restroom facilities and only cold water in the kitchen. It was heated by an old coal furnace.

Original structure of old Warren LDS Church - built 1905 In my hometown, the farming community of Warren, Utah, on the corner of 5900 W. and 1400 N., sits a historic church house that now serves as a reception hall. Its history is unknown to many in the community unless you lived during that time or have sat at the feet of long-time residents of Warren and listened to their stories. When I was a little girl, one of my favorite pastimes was visiting the widows and older ladies in Warren and listening to their stories. Many that I heard were about the Old Warren Church. I lived next door to this historic building and often had the privilege to explore it with the variety of residents it housed over the years. The number of classrooms, then converted into bedrooms, the spacious chapel and stage then converted into a living room, and the gym with its high ceiling and polished wood floor fascinated me as a child. There were many wild tales told among the youth about its history, and as a curious youngster, the mystery of the building was palpable to me.

Warren is an unincorporated community in Weber County. Originally settled in 1870 under the name of Salt Creek, it was renamed in 1896 in honor of Lewis Warren Shurtliff, the local stake president of The Church of Jesus Christ of Latter-day Saints. This church house was constructed not long after, in 1905, and then remodeled in 1940. It served as the LDS meeting house until the new church at 5900 W. and 950 N. was built in 1973 and rebuilt to accommodate a larger congregation in 2003.

I remember on one occasion, as we stood in line greeting the people coming to sacrament meeting, when two visitors or speakers asked Brother Lamar Skeen where our restrooms were. I remember Brother Skeen turning to me and saying, ‘Bishop, where are our restrooms?’ I replied back to him, ‘You know as well as I do where our restrooms are. They are outside in the back.’ We were embarrassed at that time. We had become known throughout the LDS Church as the only ward that had outside plumbing! We had become pretty well-known throughout the church. As a ward, we were the only one that did not have restroom facilities. I remember several times when church services had to be canceled because the old furnace would break down on Sundays and during the winter months when the place grew too cold to hold regular meetings. So we were due for a new chapel.”Later, it was said that, when President Monson was talking at a zone conference to the missionaries in Australia, he mentioned the ‘church with no restrooms’. After the conference, the missionaries lined up to shake hands with President Monson, and when Warren resident Elder Craig White met him, he asked where he was from. He said, “Would you believe I come from that ward with outside toilets?”

In a year where many were anxious about the economy and its effects on the outcome, records were broken and lives were changed at the Weber County Fair Junior Livestock Auction. Senator Mike Lee and Weber County Commissioners Jim Harvey, Scott Jenkins, and Gage Froerer were there in support and attendance. In her third year in 4H, Hallie Peterson started the year with the wildest hog she’s ever shown. She wasn’t sure how she and Wrangler, a spotted Hampshire cross barrow, would get along. Hallie says he was wild and unruly and loved to run. She spent many hours with Wrangler, exercising him and training him to listen to her commands. Even before they entered the show ring that day, she was anxious about whether or not he would listen amongst all of the noise and stress. They worked great together as a team, and the more time that they were in the ring together, the better Wrangler worked. They ended the long show day as 2022 Grand Champions. Although that alone made Hallie’s dream come true, she didn’t know what else was in store for her until she and Wrangler entered the auction ring the next day. They were the first of the day to start the bidding, and the auctioneer shared some of the trials that

Then when he was old enough, Howard hired our son to start apprenticing at the HVAC company and paid him well for the work he did. My son is an adult now and has different pursuits and yet Howard is still a good friend and mentor to him. In our life, Howard is an influencer. He has an impact in our life still today.

The annual Miss Rodeo Utah Fashion Show and Luncheon that is held during the week of Ogden’s Pioneer Days Rodeo was on July 23rd at the Eccles Conference Center Ballroom. Pioneer Days 2022 with ball caps and cowboy hats. I love that even people who don’t usually dress western get into the fun of dressing up for the rodeo. What stood out to me was seeing many ladies and girls in dresses, bell bottom pants, cute short boots, and fun hats. Dresses and skirts with ruffles, fringe, florals, aztec patterns, or animal prints are so popular right now. They are all so fun, feminine, and refreshing.

The fashion show featured great new looks from Smith and Edwards, Reams, and All Out Western Wear (me). The highlight of the show was the contestants modeling their ‘fashion forward’ creations as part of their competition. What a show of creativity and talent from the contestants! We saw elements from capes, full fringe, and jumpsuits to fairytale and superhero inspirations. It was quite the show to behold!

Paul was selected as the Grand Marshal of the Plain City 4th of July Parade in 2004 and was the first to be selected as Weber County Honoree at the Ogden Pioneer Days National Day of the American Cowboy – 2006.

He has won countless awards for his outstanding bucking stock.

In 1989, he married his high school sweetheart, Jennifer, and together they have three children: Jordan, Ashton, and Wyatt. They have been married for 33 years and currently live in West Haven.

Ben was born February of 1969 on a military base in White Sands, New Mexico. His father was an army veteran who served in Vietnam, and his mother is a retired Ogden City dispatcher.

Ben grew up in Roy, Utah, where he graduated from Roy High School in 1987.

Western Weber County was well represented and honored to have three of the five 2022 inductees into the Utah Cowboy Hall of Fame. The Utah Cowboy and Western Heritage Museum, located in the Union Station in Ogden, Utah, is a state-recognized museum which collects and presents artifacts of the American frontier. Every year, they induct a handful of cowboys who have made a lasting impression on the western way of life in Utah.

Dennis started his career in 1975 as a Police Chief of Huntsville, Utah, and continued in Public Safety for 40 years. He worked for Weber County Jail, Weber County and Ogden City fire districts, and Weber State University, with positions as a firefighter, EMT, SWAT member, and fire marshal. He loved working with and mentoring the youth. For 10 years, he served as medical advisement and recruitment for Utah High School Rodeo, including local, state, and national levels. From 19962003, Dennis was the assistant rodeo coach for WSU women’s rodeo team and led them to a national championship in 1997. As the head rodeo coach from 2003-2015, he again lead the women’s team to a national championship in 2006. In 2008, Cody Wade competed at Nationals in Casper, Wyoming, winning the National Steer Wrestling Champion title under the guidance of the big guy, Dennis Montgomery.

Paul H. (“Jaws”) Knight was a cattleman from his birth in 1919 until his death in 2009. He lived his entire 90 years in Plain City, Utah. Paul married June Maw on June 26, 1946. Together, they raised three children: Curt Knight, Gwen Knight Moitzfield, and Russ Knight. They have four grandchildren and eight greatAsgrandchildren.ayouth,Paul drove a team of horses to West Warren with his father to work in the fields on the family farm. He ran his own dairy herd from 1946 until 1976. Then, he owned and operated a beef cow/ calf herd from 1976 until 2008. Paul was very giving and enjoyed helping the youth. He provided the use of his calves to the students of Plain City Elementary to fit and show at the annual Plain City Dairy Days.

As owner of the Broken Heart Rodeo Company, Ben produces over 100 annual rodeo performances for RMPRA, UHSRA, NIRA, and numerous open rodeos.

ummer may be coming to a close, but we had a pretty productive summer around the funny farm. In the midst of babying the fair animals, which included massaging a pig’s throat almost daily (true story), we found the time to complete one of the coolest projects we have ever done –The Tiki Wagon.

The Tiki Wagon is a mobile party wagon for beach days. We’re hoping to find it the perfect home near Bear Lake. The idea is to load kayaks, paddleboards, kids, food, dogs, people, etc and make a trip to the beach.

We were scrambling to get the grass roof on when the photographer came, but I was in awe of what my husband had built. I think this might be one of the most ingenious projects Casey has ever created. Its currently parked in our barn yard, but it's fun to sit on the bar stools, feel the breeze, and drink a can of Tiki Punch, all while pretending you’re at the beach. I can’t wait to see it in use next to the turquoise water of Bear Lake.

The idea came from a beach visit to south Texas years ago, and my husband has dreamed about building something like this ever since. He took an old farm wagon and stretched the frame to 20 feet. Then, he added an 8-foot-wide deck, and the real designing started. We built and designed as it went up. As he starts high school rodeo this fall, he will compete in team roping as a heeler, his favorite, in District 9, and focus on making it to the National High School Finals next year.

Laney Parker

I have the pleasure of introducing you to a charming, young, all-around cowgirl, Laney Parker. She is a Sophomore at Fremont High School, where she is a member of the FFA. She loves Ag Business and Ag Science and states that the FFA classes are her favorite. She has been involved in competitive dance and cheer for 12 years. During that period, she performed in The Nutcracker five times. As she got older, she had to choose between dance and rodeo, and although she loves to dance, rodeo won. She expressed her love of the western lifestyle with me, sharing that it is a family tradition. She said it has taught her to work hard and focus on her goals. Laney hopes to keep the tradition alive and plans to raise her kids in the same lifestyle and would like to compete in Pro Rodeo as an adult. She is a member of the Champion Makers 4H club where she shows market hogs. She is also a member of District 9 of the Idaho High School Rodeo Association. She competes in barrels, poles, goat tying, breakaway roping, and team roping. She tells me that goat tying is her favorite event. She loves rodeo and the time she gets to spend with family and friends. She says, this year, she wants to have fun and meet new people. Laney is the 2022 Utah Youth Rodeo Association All-Around Cowgirl. She has set her sights on making it to the National Finals this year in Gillette, Wyoming. Judging from her past accomplishments, I have no doubt her dreams will become a reality. Meet Cinch Penrod: it is a fitting name for an exceptional young cowboy. Cinch is a 14-year-old ninth grader at Wahlquist Junior High School. He enjoys math, science, and P.E. Other than enjoying golf and bowling on the side, this young man is all cowboy!

Along with rodeo, this young man loves to ride and rope whenever possible. He is training some young rope horses and hopes to turn that into a career in the future.

Cinch is a member of District 9 of the Idaho High School Rodeo Association, where he competes in breakaway, goats, team roping, and ribbon roping. He had a momentous year last year and ended up winning the team roping and the breakaway at the Idaho State Finals. He also won the Reserve All Around Champion and Rookie of the Year awards!

He qualified for the National Junior High School Finals Rodeo in Perry, Georgia, this past June in all four events. Cinch won the Reserve National Champion title in breakaway. He says his best and hardest experience so far has been nationals. There was considerable pressure, but he learned much and was successful.

Cinch has big goals, and one of them is to push himself as far as he can go and “be the best that there is.”

3. It takes a lot of practice to get a cake to look like how you visualize it. Be patient with yourself and give yourself ample time to frost and decorate. Melanie recommends doing it a day or two prior to when you plan to serve it. She bakes her cakes, freezes them, then frosts and decorates them. Freezing the cakes makes it easier to decorate, and it also keeps the cake moist and delicious.

A 6-inch, 3-layer cake can comfortably serve 16 people, but it can serve as many as 30 for a kid’s birthday.

CAKE DECORATING

1. If you are going to bake and decorate your own birthday cake, give yourself ample time. You can’t decorate a warm cake.

Normally, people cut round cakes into wedges, but with a layered cake, those pieces can be quite large. You can serve more people with less mess using this tip: Cut the cake like a grid instead of a pie. Get a cutting board and stand it up next to the side of the cake. Slice the cake into a slab, tip it towards the board, and slowly lower the cutting board and the cake slab level with the table. At that point, cut the slab into the desired sizes and serve onto plates. Repeat this process with the rest of the cake.

e would like to spotlight local cake maker, Courtney Green of Farr West. It all started when Courtney was 11 years old and made cupcakes for her little cousin's birthday party. Her cousin’s neighbor, Chris Hogan, tasted them and asked if she could order from her. Courtney is so grateful that Chris believed in her and gave her the push she needed to start her business. Chris has now started a little floral/gift shop in West Haven called Posh Petal Floral. From that first order, Courtney’s mom, Jodi, started posting pictures of Courtney’s cupcakes on social media, and orders started to come in. Place over a double boiler on high heat. Whisk until temperature reaches 60-70 degrees Celsius Remove from heat. Add salt and whisk on high speed until the mixture has completely cooled and medium to high peaks have formed. Add room temperature butter slowly and cream together.

3. Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more once refrigerated.

Raspberry Buttercream

1/2 cup vegetable oil 2 tsp. vanilla extract

Pre heat oven to 350 degrees Fahrenheit. In a electric mixer, cream butter until fluffy. Add sugar, eggs, and sour cream. Mix until combined. Add cocoa, salt, vanilla, and food coloring mix, being sure to scrape down the sides of the bowl. Add baking soda and apple cider vinegar to the bowl and mix until combined. Add all the flour, while mixing slowly add milk. Mix only till combined. Over mixing will result in a dry and tough cake. Bake in desired greased cake pan for 25 to 30 min. It will be done when tested with a tooth pick and a few crumbs are on it.
