Publisher’s Notes Spring is the time for new beginnings and new possibilities.

Charity events are back in full swing, and we include photos from the recent Heart Gallery’s Be Mine event held at the Palma Ceia Country Club and the Dreammaker’s Luncheon that honored the Founder of the Children’s Dream Fund, Cynthia Lake Farrell. We are certainly glad to be out and supporting so many worthy causes. In METROPeople, we had the chance to interview Christine Barone, CEO of True Food Kitchen, that graduated from Plant High School, and is thrilled to finally bring the 40th location of the restaurant to Midtown Tampa. In METRO’s Home + Design issue, we future the home of McCord and Katie Christensen that have a stunning West Indies inspired home on Bayshore Blvd. in Tampa. The home was created by Cooper Johnson Smith architects, and when the couple moved from just a few homes down, interior designers Andrea Lundy and Christina Harcar with A. Label Interiors helped transform the interior into a home that is comfortable for the family, and ideal for entertaining. A simple change of lighting can make a big impact on a room, and we see the latest options in Home Trend by Clayton Gray Homes. We go high in the sky in downtown Tampa and peek inside a chic and modern condo at the Towers of Channelside, sold by realtor Craig Kincheloe and designed by Chelsea Potthast of Potthast Design. We’ve always known that Tampa Bay has a thriving culinary scene and great city for start-up restaurants. With customers wanting healthier dining options, writer Mary Lou Janson found four restaurants in Tampa Bay and the Art of Eating Well, that have taken their menus including plant-based concepts to a new level. Let me know what you would like to see in the upcoming issues. We are always open for ideas and input from our loyal readers. Enjoy this great weather and hope to see you out and about town.

Art of the Garden is a juried exhibition of original art showcasing fine handcrafted work inspired by the natural beauty of gardens and features many local Tampa Bay artists. Fifty artists created 90 pieces from fiber art and delicate jewelry to ceramic garden sculptures will be showcased. Artist Duncan McClellan works from his state-ofthe-art glass studio and gallery in St. Petersburg’s Warehouse Arts District. His stunning Dragonfly vase uses a sand-carving process that enables him to place imagery on the inside and outside of blown glass. Laurie Landry, of St. Petersburg, starts with a simple thrift store find to create a series of delightful mosaics, featuring tiny animals in garden settings. The mosaics like Squirrel! are created using glass, ceramic tiles, pieces of vintage plates, and animals such as a squirrel, a dog and other found items. They are put together with charcoal grout and ready to hang on the wall. Metalsmith and enamellist, Diana Hirschhorn, creates contemporary jewelry. Her sterling silver, 24 K gold, titanium and copper jewelry often have accents of vitreous enamel, pearls or stones. Her Golden Ginkgo Fan Earrings are made from enamel fired on copper with acid etching. Mark Anderson and Keith Bucklew have been involved with Florida CraftArt since they moved to St. Petersburg. “We are delighted to be supporters of Florida Craft Art, and to sponsor the inaugural “Art in the Garden” exhibit,” Anderson said. “We hope the show will motivate people to bring more objects of art into their green spaces.” The exhibition will be judged by Jennifer O. Rominiecki, President and CEO of Marie Selby Botanical Gardens since 2015. She possesses twenty years of experience at major New York City cultural institutions and served The New York Botanical Garden for 15 years. STARTING WITH DELICIOUS Meet Christine Barone CEO, True Food Kitchen She spent her teenage years here and is a graduate of Plant High School in South Tampa. Christine Barone, CEO of True Food Kitchen, is excited and thrilled to be opening the 40th location in Tampa in the hottest new project in Tampa Bay, Midtown Tampa. Florida, and especially Tampa, is a special place for Barone. While her and her family live in Arizona, her parents live in Town and Country and her sister resides in Orlando. The Tampa location holds a special meaning for her, as she moved to Tampa from Maryland when she was in 9th grade and completed

12

high school here. She vividly remembers the first day of school wearing shorts and a t-shirt, and everyone asking her whether she was a Gator or Seminole. At the time, she had no idea about the in-state rivalry. She is a holds a BA and MBA from Harvard Business School and worked for Raymond James Financial for a bit as an investment banker. METRO had a chance to chat with Barone, and find out what True Food Kitchen will be adding to the local dining scene, and where Barone prefers to dine when she is in town.

METRO: What is a favorite memory of Tampa? BARONE: It’s no secret, Tampa is a beautiful community. I love being out on the water, boating, and I loved being on the swim team at Plant. M: What is a typical day as a CEO? B: Never the same and always goes a bit differently than planned. I focus on our people and team of nearly 3,000 employees. I have to solve problems, while focusing on the future with financing the growth of True Food Kitchen. I think in the now and focus 5 - 10 years in the future. Fridays are always real estate days, where we review new locations. It’s a varied job, but I always focus on the team. M: What are your thoughts on the pandemic? B: It really hit the hospitality industry especially hard. Our job is to care about the people, make the day brighter, so our customers and team members walk out happy. I’m optimistic and believe brighter times are ahead. M: What are menu favorites? B: All of them are my favorites. I love the menu variety, but the Ancient Grains Bowl with curry and extra vegetables are a current favorite. I enjoy the grass-fed burger too. M: What is special about True Food Kitchen? B: It’s based on Dr. Andrew Weil’s anti-inflammatory food pyramid. We use only the freshest, seasonal ingredients. We are a scratch kitchen. It’s not about perfection, but how does the food make you feel? I’ve always loved food and great ingredients. True Food Kitchen is about meeting everyone where they are. Our goal is to make you feel good after a delicious meal, not worse. M: Where is your favorite place to dine in Tampa? B: My parents’ table. We just enjoy being together and preparing an amazing meal together.

A Taste of Margaritaville

It’s the ideal gift for any occasion for those who love Florida, and Tampa in particular. Local artist, Charles Greacen, recently completed the book, Florida Landmarks, Lodgings & Legends: Drawings and sometimes accurate accounts. The book captures illustrations of some of the iconic homes, restaurants and buildings throughout the area, along with Greacen’s humor and personal observations. It is a must-read for Charles Greacen anyone that loves history, architecture and a bit of humor thrown in for good measure.

If you can’t make it down to Margarittaville Beach House Key West, then you can certainly enjoy the taste of paradise with the culinary recipes in a cookbook that will tantalize the taste buds, Margaritaville The Cookbook. Open last year in November 2021, the Margaritaville Beach House Key West, formerly Barbary Beach House Key West, now showcases the iconic and delicious recipes from the Tin Cup Chalice Bar & Chill. The resort sits oceanfront along Smathers Beach and offers 186 spacious suites, a lagoon-style pool, and lounging hammocks throughout the grounds. Until you can escape for a visit, just open up the Margaritaville cookbook, turn on the Jimmy Buffet tunes, grab a cold drink and treat yourself, and your family, with a few delicious recipes.

Available for $35 at www.stpetersburgpress.com or email greacenart@gmail.com.

Tampa Bay and the Art of

Eating Well By Mary Lou Janson

Bare Naked Kitchen – “Roll In A Bowl”

26

www.TampaBayMetro.com

Remember being reminded to eat your vegetables? Or often being told about the benefits of a balanced, healthy diet? Turns out that advice still holds true today. Restaurants within the Tampa Bay area are increasingly focusing on fresh, seasonal ingredients, sourcing their supplies from farmers specializing in organically grown goods of sustainably raised crops or specializing in scientifically proven foods that build and maintain healthy bodies. And they are accomplishing those good-for-us goals with some serious culinary creativity. Beets and leaks are being taken to a whole new level. Diehard carnivores are clamoring for more beans and greens. And the days of most gluten-free baked goods lacking a favorable flavor or texture are long gone. Local chefs incorporating innovative, and irresistible, versions of dishes composed entirely of plant-based products into their menus. Produce once shunned, we are looking at you Brussels sprouts and okra, are now palate- and crowd-pleasing. In fact, meatless meals are being so well received, that diners not only desire them, but devour them. Even gluten-free folks are free to enjoy pizza again when the crust is made from cauliflower.

Bare Naked Kitchen

www.eatbarenaked.com With a name like Bare Naked Kitchen you may wonder if salads will be served undressed or pizzas prepared topless. Rest assured there is no lack of full flavored dressings such as buttermilk herb or cilantro yogurt. And be ready to bite into a pie well outfitted with crispy bacon or chicken sausage and coated in cheese. Options are available for those who prefer their meals meatless but, in the case of this place, tofu is not an option. However, steak, chicken and tuna are among the featured proteins. Partners Chef Chris Ponte, whose restaurants include On Swann, Olivia and Cafe Ponte at Midtown Tampa, and Bob Basham, an Outback Steakhouse co-founder who has also been part of PDQ and Glory Days Grill, have combined their knowledge, experience and creativity to bowl diners over with Chef Created Bowls and lavish them with lavash (flatbreads) or “cauli” crust pizzas. Using chef-crafted recipes, thoughtfully sourced ingredients and culinary inspirations from around the world, Bare Naked Kitchen hopes diners will shed their eating inhibitions for a more adventurous way to enjoy a variety of customizable bowls, select salads and pizzas, ready to eat, grab and go spreads, dips and nibbles and Sweet Tooth temptations. “At Bare Naked Kitchen we are more than a bowl place. We wanted to bring in flavors that are bold and ingredients that are thoughtfully sourced that people may not understand. The flavor experience is fresh and vibrant, while the atmosphere is fun and relaxed. That allows the guest to dine with friends and family but also, the flexibility to quickly grab a bite to go,” said Basham and Ponte in a joint statement.

Craft Kafe

www.craftkafe.com Bite into any of the freshly made pastries, breads or other baked goods that are handmade daily at Craft Kafe and enjoy exceptional sweet to savory flavors that are all the more satisfying because they are completely gluten-free. Thanks to the craftsmanship of Teddy Skiadiotis who opened the first Craft Kafe in St. Petersburg’s West Central Shopping Center in 2015, and has since added a second location in downtown St. Petersburg, the kitchens are gluten-free and all of the foods produced on-site are made without wheat, barley or rye. Now Tampa gets to find out how good gluten-free can be when Craft Kafe opens on this side of the bay along Kennedy Boulevard, just across from the University of Tampa later this year. “Eating gluten can cause inflammation in your stomach if you have an allergy or a sensitivity. We’ve notice a lot of people have this sensitivity, so we decided to commit to a gluten-free kitchen to not exclude anyone. Gluten-free isn’t a trend or a gimmick to us, it’s a different approach to baking and cooking,” according to Skiadiotis. “Making our food and pastries taste like other wheat-based food and pastries isn’t what we are about. We are about making tasty pastries and delicious food that will bring a smile to your face.” Craft Kafe also offers a selection of hot and cold coffees and teas, which may be served with house-made almond milk, vegan burgers and soups, organic salads, made-to-order omelets and ready-to-eat foods.

Florish

www.eatatflorish.com In a case of role reversal, brothers Demetri, 18, and Ethan, 15, encouraged their parents to eat more vegetables and join them as vegans. “They were following a plant-based diet and that inspired us. They did the research and started paying attention to what they were putting in their bodies more closely than we did,” recalled Jill Faline Sedita, an attorney. “But there were not many options out there in terms of finding what we wanted for a delicious lunch or dinner that was easy to pick up.” Working with his wife, Keith Sedita, former Vice President of New Business Development with the Columbia Restaurant Group, began formulating plans for Florish, a 100 percent plant-based dining experience, two years ago. “Since we had been vegan for a while, and have been cooking at home, we were already making many dishes that were flavorful and enjoyable that we can now offer to others. Food is two things, flavor and texture. If you can deliver on flavor and texture, it doesn’t matter what the source is,” he said. Signature dishes will include comfort foods like pizzas and bowls that can be ordered off the menu, or customized to include house-made cheeses and sauces and plant-based meats. Initially open for lunch, with dinner to follow, Florish will feature cans of craft beers, select wines and cocktails. Cookie recipes created by Jill will be mixed at the Metropolitan Ministries’ commercial kitchen, the dough delivered to the restaurant and freshly baked batches available throughout the day. “Community is important to us. We want to be more than a restaurant. This is our first location, but we want to find other ways to support our community in the future,” Keith added.

True Food Kitchen

www.truefoodkitchen.com With integrative medical expert Dr. Andrew Weil as the co-founder and media personality and celebrity Oprah Winfrey an investor and board member behind the concept, this new location of this seasonally inspired restaurant and craft bar is likely to attract diners not only eager to eat, but curious to experience this better health through better eating concept. The Tampa Bay area’s first True Food Kitchen is sure to lure guests curious about how the seasonal dishes and drinks featured here will check all of the boxes for tasting good, as well as, for featuring nourishing fare for lunch, dinner and brunch. This claims to be the only restaurant “fundamentally based on science which ensures all of its crave-able dishes and drinks work to increase the longevity of our people and planet.” The inspiration is based on Weil’s anti-inflammatory food pyramid which focuses on foods that help maintain optimal health. “We’re thrilled to officially debut our seasonal dishes and handcrafted beverages in our first Tampa-based restaurant located at Midtown Tampa Plaza,” said True Food Kitchen Executive Chef Hector Valencia. “This dynamic and wellness-driven community is the perfect fit for our brand and we look forward welcoming guests into our dining rooms to enjoy our crave-able menu with dishes and drinks for any occasion.” M

Publisher’s Notes Home is where the heart is.

Now more than ever this hits home. After all the work-life changes caused from the pandemic, it is has never been more important than to have a home to feel comfortable and secure, and a home that provides all the necessary space for work-life balance. A move to a house just a few homes down from their previous Bayshore Boulevard home was larger and allowed for two home offices, satisfied the needs of McCord and Katie Christensen. The stunning West Indies inspired home on Bayshore in Tampa was originally created by the architectural firm of Cooper Johnson Smith. Interior designers Andrea Lundy and Christina Harcar, with A. Label Interiors, recently transformed the interior into a home that is comfortable for the family, and ideal for entertaining with the use of bright colors, dramatic lighting and artistic flair. The eclectic use of materials are inviting, comfortable, and make you feel right at home. We showcase a condo in Towers of Channelside in downtown Tampa that features clean lines, modern shapes and cool blue colors of the sky and surrounding waters. Interior designer, Chelsea Potthast, along with Realtor Craig Kincheloe had worked on a previous project and decided to collaborate on the new project together. Despite the challenges of supply chain shortages and tight deadlines, the project was completed and the new homeowners delighted. It seems that according to many real estate experts, and Zillow, Tampa Bay is on fire. With buyers coming from out of state the demand is out sourcing the supply, raising prices to all time high. We feature a gorgeous Southern Plantation Style home with water views in Hot Property from Smith & Associates Leslie Minder and Mary Beth Byrd, along with the Stephen Gay Group. The next extended issue of METRO Home + Design will be in the September.October issue, so if you have a special project or home that deserves to be featured, please send us images for consideration. he South Tampa mansion boasting spectacular front porch views of Bayshore Boulevard’s sparkling waterfront and bustling promenade seemed an ideal fit for the family of five. However, less than two years after moving in, a nearby residence with similar picturesque, panoramic vantage points suddenly became available. McCord and Katie Christensen moved quickly and, before long, the couple and their three children moved to another Bayshore address that featured more square footage, 7,161 vs. 5,304, ample room for both parents to work from home during the pandemic and a layout perfect for entertaining. “We just realized how much we loved Bayshore and this was a significantly better home for our family and our lifestyle. We had all of the views and all of the privacy, space for entertaining and also for out-of-town guests,” said McCord. “We also had two nice offices where we work from home. We both work, and both have significant jobs, so that office space became very important to us.” He is the founder, chairman and CEO of a publicly traded company, PETIQ. Katie, whose background is in investor relations and corporate communications, was a partner with a large New York firm before launching her own business, Acadia Investor Relations.

While the two homes were only doors apart, the contrasting floor plans inspired interior designs that were worlds apart. The previous dwelling featured an elegant, but traditional, style of décor. In comparison, the current residence reflects a more flamboyant style defined by bold, bright colors, dramatic, custom-designed light fixtures and metallic features such as surfaces gilded in gold leaf. The West Indies-inspired home created by the noted architectural firm Cooper Johnson Smith, met several practical needs for the couple, such as an above the garage guest suite for overnight visitors, but also provided the perfect canvas for the couple’s youthful, creative and artistic aesthetic. Wide walls, 12-foot high ceilings and rooms blending seamlessly together created areas capable of accommodating large-scale works of art, a panel of faux greenery displaying neon letters proclaiming “This Must Be The Place,” and a multi-piece sectional covered in Missoni-patterned fabrics that comfortably accommodates several people.

“Making this house right is important to us. We wanted people to come in and say, ‘Wow, that was really cool,’ ” said McCord.

“This home has an eclectic mix of elements that are very much modern but also very inviting and fun,” said Katie. “We love to entertain so we wanted all of the rooms that you are in to make you feel right at home and comfortable.” Collaborating with design professionals Andrea Lundy and Christina Harcar, partners at A. Label Interiors, the Christensen’s commissioned various components, including paintings scaled for the space, and created specifically for them, by local artist Ron Francis. Two depict their relationship, from dating or “Takeoff” to matrimony or “Landing.” “Andrea was an incredible resource in terms of listening. The ideas she would bring to us were excellent,” said Katie. Tiles imported from an Italian quarry, a solid marble bench by luxury designer Kelly Wearstler, distinctive light fixtures configured specifically for each space and walls coated with Venetian plaster strikingly combined sophisticated materials with playful elements from floor to ceiling. “They (McCord and Katie) are always accessible which really helped to expedite the process and they gave us so much creative liberty,” said Lundy. “This is all next level. We even took a trip to the Miami design district so they could see some of the fabrics and materials that we were using in their homes and sit test things before they made it to their house.” The collaboration continues with A. Label Interiors overseeing the interior design for the new 60,000-square-foot Boise headquarters of PETIQ, plus the couple’s second home that’s also in Boise. “Making this house right is important to us. We wanted people to come in and say ‘Wow, that was really cool,’ ” McCord added. M 56

hen interior designer Chelsea Potthast of Potthast Design and her business partner and Realtor Craig Kincheloe met in high school, they never would have imagined that they would work together to complete a full renovation for a client twenty years later. Kincheloe, based in Tampa, who focuses on selling and sometimes “flipping,” lost touch with Potthast during the years she was honing her design practice in Los Angeles. They reconnected on social media in 2017, when Craig discovered that Potthast had opened her own interior design firm in her hometown of Saint Petersburg. At the time, he was in the middle of a renovation on an investment property, and needed some design consulting. “I actually never set foot in the space, and I was able to assist him virtually to complete much of his project,” says Potthast. Fast forward to 2020, Kincheloe reached out to Potthast again when buyers asked him to administrate construction on their newly purchased condo at Towers of Channelside. “Craig has a matchless way of connecting with clients and has great taste, but he knew he needed me to work with him to select all the finishes and fixtures,” Potthast recalls. “This particular client also needed every piece of furniture for their new place, as he had sold their prior home furnished. I jumped at the opportunity.” From prior consulting with Kincheloe, Potthast knew that they worked well together. “We both have excellent communication skills, except when Craig is too busy selling property to take my calls,” she laughs. While both maintain a high level of taste, and balance each other in design aesthetic, they sharpen one another by talking through challenges, laughing at themselves, and taking time to celebrate their wins. “We have obvious professional chemistry,” Potthast says. “I believe our success is rooted in our individual passion for our professions, our collective commitment to pursuit of excellence, dedication to personal and professional growth, and desire to have fun with clients amidst the pressures and challenges our industries bring.”

------..:

Potthast saw an amazing opportunity to inject a sense of place into the design, utilizing blues from sky, aqua from water, and flashes of colors from sunrise and sunset.

This project was no exception. The high in the sky residence on the twenty-fifth floor, is one that Potthast and Kincheloe completely transformed from a nondescript stark interior, into a home that their clients absolutely love. Their clients’ previous residence was a beach house with a very coastal aesthetic, and they literally wanted everything nearly opposite of what they had, a home that felt clean, light, white, bright, modern, and rich. “Chelsea is extremely detail oriented,” says Kincheloe. “She took the space planning into account first and foremost, to ensure that each design element on our clients’ wish list would fit properly in the space.” Potthast took cues from the gorgeous vistas the unit provided, and sought inspiration from her time spent in Miami and Los Angeles. She saw an amazing opportunity to inject a sense of place into the design, utilizing blues from sky, aqua from water, and flashes of colors from sunrise and sunset. While she employed clean lines, modern shapes, sculptural metals, and a cool color palette, she wanted to strike a balance with the contemporaneity and ensure a feel of warmth. “We cozied it up through a curation of sumptuous rugs, luxurious fabrics, and bespoke furnishings, and utilizing a myriad of wood species,” says Potthast. The space is enhanced through layering in whimsical artwork, distinguished objects, and electrified lighting she refers to as ‘jewelry.’ Both Kincheloe and Potthast agree that their biggest challenges throughout the duration of the project were, of course, the effects of the pandemic. “We experienced delays galore, oversold construction finishes and fixtures, transit-damaged items; honestly, you name it, and we had the issue,” says both Kincheloe and Potthast. “We did not anticipate encountering the supply chain issues as were also faced with a tight timeline.” Nonetheless, they managed to complete the project with a beautiful, functional space, and most importantly, delighted clients.
