Two of America’s favorite things – liquor and ice cream – have joined forces at a new shop of alcohol infused ice cream, across from University of Tampa, near downtown Tampa, next to Mise en Place and Oxford Exchange. Aubi & Ramsa was created in Miami by two former advertising executives, Matais Aubi and Rafa Ramsa. The trendy shop opened their Tampa location, with local partners, Edward and Judith Isaías. “Ice cream is the number one dessert in the world,” said Matais Aubi. “By combining alcohol and ice cream for the palette to savor, we bring two pleasure in one.” Through the use of packaging, top-shelf liquor and the finest ingredients, Aubi & Ramsa are poised for expansion. Innovation is the word that Rafa Ramsa says drives their company. There are 25 flavors for 21 +, as the ice cream does have a 4.9 percent alcohol content. The company is constantly experimenting with new flavor profiles. Soon, Ramsa says that they will be adding coffee-infused liquor for a new flavor.

Pavilion XXXIV Ordinary/ Extraordinary Presented by PNC Bank Tampa Museum of Art | Cornelia Corbett Center The Tampa Museum of Art celebrates 34 years of Pavilion, one of Tampa Bay’s most exclusive galas. This major fundraiser gathers museum supporters for an incredible black-tie evening of cocktails, dining and auctions to benefit the Tampa Museum of Art. Pavilion XXXIV co-chairs, Natalie and James Goodwin, and Stella Thayer have collectively been a part of the Tampa Museum of Art fabric for many years. Natalie’s connection with the Tampa Museum of Art began as a teenage volunteer for the set-up of Pavilion in the former downtown location. She marveled at the volunteer efforts and looked forward to one day attending. Cornelia has served on the Museum board in various capacities over the years and is currently on the Foundation Board of Directors, as well as vice-chair of the Board of Trustees. 10-year Anniversary of Working Women of Tampa Bay On September 5th, more than 400 attendees celebrated The Decade of Dynamic Women Dinner. As the area’s largest professional network for women, the organization has hosted more than 10,000 women at nearly 2,000 events since being founded by Jessica Rivelli in 2009. Guests honored 10 WW members who have helped the organization become more than a simple networking group, but an avenue where meaningful connections are forged and women lift each other up! The fundraiser was chaired by Michelle Turman, CEO of Catalyst Consulting Services and raised more than $16,000 for seed money that will assist entrepreneurs in launching or expanding their business. More than 200 attendees celebrated the end of summer at the annual White Hot Summer Night Party on Thursday, Sept. 5. The 10th annual CITY: Fashion + Art + Culture showcased the designs of Miami and NY fashion designer, Angel Sanchez. The colorful and flowing gowns showcased the spring/summer 2020 collection of Sanchez on the runway. The raised runway, built in the museum atrium, allowed nearly a 360 degree view for all the guests. Dressed in Angel Sanchez, event co-chairs, Lauren Pepin and Nina Traviesa and their committee, created a fashionable and stunning, sold-out event. Sanchez was an architect by trade and a fashion designer by choice and is a member of the Council of Fashion Designers of America. He has designed bridal gowns for notable clients including Sandra Bullock, Eva Longoria and Princess Tatiana of Greece. Hollywood red carpet fans include Meryl Streep, Diane Lane and Taylor Swift. Guests enjoyed delicious bourbon-glazed salmon, shrimp cocktail and beef tenderloin by Eddie V’s Prime Seafood and SaltBlock Hospitality provided a tempting and delicious dessert bar. Grand Celebration Seminole Hard Rock Hotel & Casino It was three days of celebrations, the Hard Rock way, as The Seminole Hard Rock Tampa’s Grand Celebration Weekend commemorated the completion of its $700 million expansion. The events were held Oct. 3 - 6, 2019 with plenty of celebrities walking the red carpet including Nicole Kidman, Keith Urban, Christie Brinkley and Kim and Kory Biermann from The Real Housewives of Atlanta. The morning kicked off with speeches from Chairman of Hard Rock International and CEO of Seminole Gaming Jim Allen and members of the Seminole Tribe, and a special thank you from now retired, John Fontana. Invited guests enjoyed a high-energy musical performance by Light Balance, a hi-tech neon and LED show. Everyone then headed outside to watch as Nik Wallenda, a seventh-generation member of the Great Wallendas, and his mother, Delilah, performed a high wire walk between the two hotel towers. Guests then watched the ceremonial Guitar Smash as Nicole Kidman announced the count down. A Nightlife Party in the new Hard Rock Event Center featured performances by DJ Jazzy Jeff and Big Boi, a member of the hip hop duo Outkast on Thursday evening. On Friday, country super star Keith Urban performed the first-ever concert in the Hard Rock Event Center. A Guide to the Best Bourbon and Whiskey Bars in Tampa Bay By Ronda M. Parag The brown spirits of bourbon and whiskey are enjoying a re-birth of sorts with restaurants and mixologists creating places, events and cocktails to cater to the boom. “With over 25 different selections, bourbons and whiskeys are Rococo’s biggest seller of spirits by far,” said Dave Madera, Director of Operations at Rococo Steak. “The popularity of bourbons these days is crazy. Old Fashioneds are almost an everyday order at our bar. It is exciting to see the

growth, but with bourbon in such high demand, it can be hard to get a hold of, or keep, certain brands in stock.” For some, including David and Christi Winsor of Tampa, it involved planning a bourbon pilgrimage and following the Bourbon Trail in Kentucky. From Lexington to Bardstown, Loretto to Louisville, tourism surrounding bourbon includes more than 35 distilleries – the biggest attraction in the Bluegrass State.


A Bourbon Conversation with David Winsor Senior Director of Corporate and International Accounting, Bloomin’ Brands A graduate of University of Florida, David is a huge football and basketball fan and a bourbon lover. He regularly attends Gator football games, and he created his own club of whiskey connoisseurs called the Whiskey Wolfpack of Tampa. METRO had a chance to chat with David, and discuss all things whiskey and bourbon. METRO: Why did you start the Whiskey Wolfpack of Tampa? Winsor: Christi and I visited the Bourbon Trail last summer in 2018 and had a phenomenal time. We really got into the distilleries, and the different ways they produce their product. Christi originally came up with the idea, since I have several friends that are really into bourbon. I mentioned the idea to Marc who got really excited about it. We decided to give it a shot and here we are today. Our first tasting was in January 2019 and we meet once a month. We have 10 core members, but we’ve had about 12-15 other guests, who have made an appearance. M: What is so special about bourbon? W: I really enjoy how unique each of them can be, even though most of them are produced in the same region (Kentucky). I also love how people will have such differing opinions. M: How large is your collection? Any favorites or surprising bottles? W: I have 72 bottles right now, and 30 of them are opened. My favorites have got to be the George T. Stagg 2018 release and VanWinkle Reserve Rye. That’s not really fair as they are the two most valuable bottles in my collection. My favorite inexpensive go-to is Eagle Rare. I do have a bottle that surprised me. I heard the Weller Antique 107 was good, but only ABC Fine Wine & Spirits sells it and you won’t ever see it in the state of Florida. So, I traded a bottle of Stagg Jr. (retails for twice the price) for it. It was definitely worth the trade, as this one has it all. Extremely bold, but also very smooth for 107 proof. The retail price is less then $30, which is surprising! If you want to try it, go to Whiskey Cake in Tampa. They did a barrel pick and have quite a few bottles. A barrel pick is where

they travel up to the distillery, taste several different barrels, and choose one for your liquor store or restaurant to receive all the bottles. M: Tell us about your pilgrimage to Kentucky. W: I’ve been up their twice now. Once in August 2018, and most recently for a good friend’s bachelor party in September 2019. We stayed in Louisville last year, but traveled to Lexington for one day. This year we stayed in Lexington and went to the Florida vs. Kentucky football game. Overall, I’ve been to about 12 distilleries between the two trips. The restaurant scene is pretty awesome, as well. M: What was the favorite distillery? Least favorite? Why? W: I have to say the best experience was at Peerless in

Louisville. We met the master distiller, who took us on a private tour of the facility. I still have two of the three bottles, I purchased that day and they’re both signed by him. My least favorite was Angel’s Envy. It was a nice facility, but I was hoping they would have more to their lineup. They only produce the Angel’s Envy bourbon, the Rye, and the Cask Strength, and they didn’t have the Cask to try or to buy at the distillery.

M: What are 5 must-have bourbons for the home bar? W: The distillery with the best product is Buffalo Trace. We went to that facility with the bachelor party group and it was a great time. They produce the coveted Pappy VanWinkle bourbons, along with many other favorites such as Weller, Blanton’s, Stagg, Eagle Rare, and the E.H. Taylor lineup.

Weller Special Reserve | A smooth easy drinker for $23 retail at ABC Fine Wine & Spirits. A little hint on this one…it won’t be on the shelf. Eagle Rare | This one has been aged at least 10 years and has a bold flavor. Another tough one to find, but is only $35-$40 if you do. Blanton’s | This is the original single barrel bourbon. I’m honestly not a huge fan of this one, but it has a massive following. The bottle is shaped like a barrel and the label has the date it was dumped from the barrel written on it. The top is pretty cool, as it has a horse and jockey. There are actually eight toppers that all have the horse and jockey in a different position of the race. People actually try to collect them all. Retail price is $60, but you’ll almost never see these in stores. Willet Small Batch Rye | This is a barrel strength rye, meaning it is not cut or diluted, it’s poured and bottled directly from the barrel. This one retails for $60 and is worth every penny. Four Roses Single Barrel Picks | They actually produce 10 different recipes of this one. Some will be spicier with more rye and some are smoother with more corn. You’ll find the recipe on the side label, and you’ll only find these when the barrel’s are chosen by a restaurant or liquor store. Retail price is $75.

Kentucky Wake Up Call Rococo Steak Making Coffee infused bourbon: • Pour 1 bottle of Old Forester Bourbon into top tier of coffee brewer. Top off with 1 cup ice • Fill 2nd tier with cold brew coffee grinds • Set drip nozzle to 1 drop per second • Wait for coffee to infuse with bourbon and drip down to bottom tier. Voilá, you have coffee infused bourbon! W

hen one of only a handful of homes boasting an exceptional downtown Tampa waterfront location became available, a Tampa couple living nearby immediately made an offer. During Punit and Carla Shah’s initial walk-through, they immediately realized something that was critical to their interest in the property was missing – views. While the residence faced westward, overlooking Garrison Channel and Davis Islands, there were few views from within the house. Walls and hallways defined the first floor of the 5,950-square-foot house, creating barriers to the scenic surroundings as well as a closed-in, dark interior. Given the idyllic, Harbour Island location and the ample space the two-story home provided the couple, their 10-month-old son Dev, and the family pet, a Shih-Poo named Boston, they closed the deal and began figuring out ways to make the water a more prominent focal point.

Collaborating with rel8 design p.a., a Tampa-based architecture, interior design and branding studio, the Shahs dramatically re-imagined the ground level layout to eliminate wasted space, obliterate obstructions limiting sight lines and accentuate open water views. “I am a big believer in downtown and Harbour Island,” said Punit Shah, CEO of Liberty Group, a commercial real estate investment, development and management company headquartered on Harbour Island. “Having western views of the water met our requirements and checked all of the boxes.” The Shahs literally lived on the same street as their new home, but in addition to admiring the sparkling waterfront and colorful sunsets they now enjoy, they also needed more room to accommodate their growing family. Walls, floors, cabinets and more were completely demolished to make

room for a larger, and more free-flowing, living space. Electrical and plumbing systems were upgraded, gas lines added and ceilings raised. New windows, glass doors and skylights helped fill the home with natural light. When the dust finally settled, only the grand staircase remained intact and untouched. “The challenge with this space was that it was so compartmentalized,” said Billy Rapp, principal architect. “They wanted an open environment designed in such a way that all of the materials work together. There is a cohesiveness, but also a uniqueness to each individual spot.” Phillip Jeffries textured wall coverings, hand-scraped oak floors and Nero Marquina, Carrara and Zebrato imported Italian marble floor tiles provided depth and dimension. nishings designed with family-friendly features, such as rounded corners and washable fabrics, added both flair and functionality throughout the five-bedroom, six-bathroom home. PM and designer Danielle Murray describes the finished, balanced look as one that combines classical elements with contemporary touches to create a warm and inviting environment. “When you add an element of fun, like a modern light fixture in an otherwise classical home, it feels more approachable,” Murray said. “This is a home where you feel just as comfortable taking your shoes off and getting on the floor with the dog, as you are having a glass of wine in the lounge. You can do all of these things within this space and still feel very elegant.” A classic black and white floor pattern designed for the foyer features a familiar look with a twist that makes it

Three shades of marble, black, white and blue-gray, were precisely cut to perfectly fit together in a custom pattern and then aged with a patina to reduce reflections from lights and add a touch of antiquity. While designed with the Shah family foremost in mind, the space also needed to be adaptable to entertaining large groups. Stressing out over stress? It’s easy to do, especially when you are suffering from stress-related symptoms like too little sleep, lack of energy, low self-esteem, chronic pain and constantly feeling anxious or agitated. Don’t give up and simply give in to stress. Learn to manage stress before it becomes detrimental to your emotional, physical and mental well-being. Headaches, upset stomache, rapid heartbeat, muscle tension and a compromised immune system are just a few ways stress takes a physical toll on our bodies. There is no escaping stress, but its impact on individuals can vary greatly. It is the body’s natural reaction to stressors that can range from exhausting work schedules to life-threatening incidents. The sympathetic nervous system responds to feelings of frustration, or fear, by releasing hormones that increase heart rate, boost energy and trigger a fight-or-flight response that may be necessary for survival. Once safety is achieved, or the source of stress has subsided, the body naturally returns to normal hormone levels. However, when faced with stress-inducing situations on a daily basis, the body keeps secreting elevated levels of adrenaline and cortisol. That can lead to chronic stress, a condition that plays havoc with our health.

Finding relief from stress can be as easy as focusing on slow, deep breathing. Stepping outside to feel the sun on your face or engaging in exercise helps. Talking to others, writing in a journal or taking time to meditate are also recommended. The Japanese practice of “forrest bathing” advocates allowing the sights, sounds and scents of the woods to help clear minds and calm bodies.

Sleep patterns are adversely affected by stress, leaving sufferers lethargic. That can lead to insomnia which prevents the body from getting the critical rest it needs. Matthew recommends following a regular, nightly routine to promote good sleep habits, a process she refers to as “sleep hygiene.” “You can’t bank sleep, or make up for lost sleep, so we need to make ourselves more apt to fall asleep,” Matthew said. Exercising before bedtime is likely to rev systems up instead helping brains and bodies relax. The bedroom needs to be used solely for sleeping. That means eliminating interactions with computers or cell phones, and engaging in recreational reading, not work-related research. If you wake up, simply write down whatever is on your mind and resume that train of thought in the morning. If sleep continues to be elusive, briefly get out of bed, find menial tasks to focus on for a few minutes, and then climb back between the covers. For a more comprehensive approach to increasing your quality of life while decreasing your stress levels, Matthew recommends a 12-week program called “WellBeing” at Florida Medical Clinic that offers a “complete

wellness transformation” combining healthy meal planning, fitness training, nutritional guidance and more to achieve lifelong healthy habits that can control stress. While stress impacts everyone, women, in particular, need to be mindful of stress.

“Women have more of the physical symptoms of stress than men and are more likely to report those symptoms to their healthcare providers,” said Dr. Laura Arline, medical director of Quality for BayCare Medical Group at BayCare Health System. “Women are more in tune with their bodies than men may be.” Finding the best way to manage stress may require attempting a variety of techniques. But the key is to find what works best to help you de-stress. “Stuffing stress down and not dealing with it will only force it to come out in physical ways,” Arline said. Instead of ignoring stress, talk to a friend or family member about your concerns, or seek help from a medical professional. Volunteer for a cause or organization that benefits others to help put your own life in perspective. Take a gratitude review of your day, and focus on what is right in your life, she suggests. One source of stress that has becoming increasingly common, especially among women, is social media. “Social media plays a big role in some women’s stress levels,” Arline said. “It can bring people closer together, but it also causes us to compare ourselves with others. You may be comparing yourself to one perfect moment in time that another person has captured, but that image of perfection does not exist.” Take control to combat those feelings and lower stress levels, she advised. “Go to that tool box and pick out the mechanism that works for you.” M

Driven and Passionate Meet Executive Chef / Partner Sean Brasel Meat Market Tampa |By Ronda M. Parag

I

t was years in the planning and execution, but with much anticipation, Meat Market Tampa is now open in Hyde Park Village. METRO had an opportunity to chat with Executive Chef / Partner Sean Brasel prior to the recent opening. Brasel was excited at the anticipated soft opening in Tampa. In fact, he was so thrilled to open Meat Market Tampa, that he relocated in July, from Miami, and lives in nearby Hyde Park. Talk about a close commute. “Everybody is very nice,” said Brasel. “I’m excited for the venture in this city, and to make Tampa my home.” The first Meat Market opened in 2008 in Miami Beach, with two other locations in Palm Beach and San Juan, Puerto Rico. Tampa is the fourth location of the contemporary steak house. “We do things completely different than a classic steak house,” said Sean Brasel. “We are taking meat into the 21st century with our preparation and

techniques.” Chef Brasel is willing to experiment and push boundaries by using microbiology. “Our joji-rubbed steaks allows dry-aging in just five days. We are combining science with food.” The menu showcases prime cuts of beef, seafood and raw bar selections. In addition to the main menu, Chef Brasel is creating a daily menu that will last about a week, depending on availability from local farmers. The idea behind the “daily” is to create unique dishes with the freshest ingredients around. While a particular salad ingredient may only be available for a few days to a couple weeks, Chef Brasel wants to find a place for it and by creating a daily special menu, he is able to do just that. If the concept is successful, he plans to implement the “daily” at his other locations, while preserving the integrity of the Meat Market brand. This will also allow the kitchen to experiment, and create daily ceviches and other local delicacies. Brasel says the most popular

side dishes include the cauliflower and brussel sprouts. When asked about his favorite local restaurants, Brasel is quick to compliment and says he has tried many places, and everyone has their own star. “I love the layout of Haven, Bern’s is a classic, Armature Works is a “dream concept,” Steelbach, Oak & Ola are all good, and I recently had at the foie gras at Rooster & the Till.” Brasel began his career as a kid and studied philosophy and psychology in school. He enjoys the passion, freedom and the adrenaline that being a chef allows. When Brasel is not creating new dishes and experimenting in his home kitchen, he goes to the gym and enjoys MI40 Gym and Soul Cycle. He is also and avid mountain biker, but has yet to experience any of the local trails. Enjoy a daily Happy Hour from 4 p.m. - 7 p.m., with Dinner starting at 5 p.m. Lunch service is anticipated in mid-November. M
