In a KitchenAid, mix all dough ingredients except salt and vinegar, for 3 min. Then add salt and vinegar and mix for an additional 8 min. Spray dough with oil, and cover for 1 hour to rise. Divide dough into 6-8 pieces. Cover for 15 min. Working with one at a time, using a rolling pin, make a rectangle. Place date paste roll at the long edge nearest to you, and roll dough over it as shown. Seal edges and connect both ends to form a donut shape and cover while working with the rest of the pieces. Brush each with an egg wash (egg yolk mixed with 1Tbs vinegar and a pinch of salt). Then sprinkle with any or all of the following toppings: sesame seeds, black seeds, powdered sugar mixed with cinnamon, and coarse sugar, and coarse sugar. You can use date syrup diluted 1:1 with water, instead of egg wash. With kitchen scissors, snip half way through the dough, about 1/2 inch apart, going all around the outer edge of each circle. Place in a preheated oven at 400ยบF for about 13 min on middle rack, then on top rack for an additional 2-3 min until golden brown. Enjoy! By Dr Anas Nahhas. Abumallek Makes and Bakes on youtube.
