On January 16, 2016, AAFS held a “Cosmic Bowling Night.”

Arab American Family Services (AAFS) is a nonprofit organization that provides assistance to Arab American residents in the Chicagoland area as well as all individuals in need as a whole. AAFS offers support in the areas of public benefits, immigration, domestic violence, mental health, and elderly services and sponsors outreach programs to build healthier families and communities.

AMVOTE PAC’s Event The American Middle Eastern Voters Alliance Political Action Committee (AMVOTE PAC) held their inaugural dinner on Thursday, January 28, 2016. Throughout the event, we heard from the founder, (Ret.) Judge William Haddad, founder and president of the Arab American Institute (AAI) Dr. James Zogby, and others.

AMVOTEPAC’s purpose is to expand the influence of American citizens of Middle Eastern ancestry, whether Arab, Muslim or Christian, through support of candidates who show a commitment to equal community opportunities in business, employment, government, education, and civil rights without regard to race, color, creed, and ethnicity.

AADC’s Event On Sunday, January 31, 2016, The Arab American Democratic Club (AADC) held their annual brunch to introduce local candidates running for office. The program consisted of the keynote speaker, President of the Cook County Board, Toni Preckwinkle, guest comedian, law professor, and activist Amer Zahr, an award presentation to the Ziyad Brothers, a representative for Cook County Commissioner Chuy Garcia, (ret.) Judge William Haddad, Oak Park President Anan AbuTaleb, and many more.

No-Bake Dark Chocolate Fudge with Pomegranate, Raisins and Nuts Yvonne Maffei, MyHalalKitchen.com

There’s nothing more endearing than to give someone you love and care about the gift of homemade chocolate. It doesn’t have to be daunting or tedious to do, either. This recipe combines wonderful ingredients that give a burst of flavor in each bite of fudge. The raisins are soft and chewy, the peanuts crunchy and salty, and the pomegranates burst juicy flavor right in your mouth. It’s the greatest combination of flavors and textures, but you can also certainly omit any one of them, if you prefer. The hardest part will be waiting for it to chill in the fridge so it can set and harden before cutting, but even that isn’t too long of a wait. Yields 24 bite-size pieces

Ingredients

1 pound dark chocolate (at least 70% cacao) ⅔ cup heavy whipping cream] 2 teaspoons vanilla extract 3 tablespoons cane sugar ½ cup salted peanuts ½ cup raisins ⅓ cup pomegranate seeds 1-2 teaspoons coarse sea salt, or to taste (optional)

Directions

-Prepare an 8” square glass dish by covering the bottom and sides with enough parchment paper, allowing the paper to hang over the sides of the dish slightly. This will help you turn it out to cut once it has hardened in the refrigerator. -In a double broiler over boiling hot water, add the chocolate, broken into small pieces. While the chocolate is heating up, stir vigorously with a wooden spoon or whisk to facilitate even melting. -In a separate bowl, mix together the whipping cream, vanilla extract, and sugar. Pour it gently into the melting chocolate and whisk it all together. Once the chocolate has melted completely, move it off the heat then use a spatula to gently fold in the peanuts, raisins and pomegranate seeds. -Pour the melted chocolate mixture into the parchment-lined baking dish and spread the mixture with a spatula to smooth out the mixture and spread it evenly into the pan. Once finished, sprinkle with sea salt, if desired. -Refrigerate, uncovered, for at least three hours or until the chocolate is completely hardened. Once ready, turn it out onto a chopping board and cut into desired pieces. Keep refrigerated.
