Summer is the time for a lot of things: the beach or the lake, weekend getaways, cold drinks, and simply getting outside. It’s also primetime to socialize and

spend time with your family and friends. If you have kids, summer is when you get extra time for making memories. So, gather some friends and head to the park or host a barbecue and make some summer memories with your loved ones. Enjoy some time just chilling out. I’m certain it’ll help you feel refreshed and ready to take on the fall! I’m so excited about sharing our summer issue with you. Gracing our cover are Rozonno and Mia McGhee­­ and their adorable sextuplets! The McGhee family is back in full force with their new TV series “Growing Up McGhee.” You first met the McGhee family in 2010 when a family photo they posted online went viral. The photo earned them a spot on “The Oprah Winfrey Show,” and later their very own television series on Oprah’s network called “6 Little McGhees.” On page 24 we caught up with the family to ask them about their journey from internet sensations to reality television stars. And, of course, we asked what life is like in a family of eight! In addition to the scoop on the McGhees, this issue is packed with tips and stories to help you finish your summer off right. A quick way to get in the mood for some rewarding downtime is to plan for it. We’ve come up with five unique ways to make the most out of these summer months and help you catalogue some good memories to reflect on for a lifetime.

a plate of snacks or a drink (taste). Place a record player or radio next to the chair on the floor. Keep your cell phone or tablet at bay (hear). The object here is to neglect digital media and ignore distractions that might keep you from basking in the moment of stillness. Dedicate at least two hours to this space at a time.

TIP #1 Make time for the things you enjoy.

Other elements of comfort to try:

Exercise your right to have fun by recalling what easily puts a smile on your face. Indulge in it. Do you get excited about film screenings or live performances? Are you motivated by sports and competition? Do you ever wish you had time to explore cooking or painting? Making time for your favorite hobby is not selfish; it’s rejuvenating and a great way to relieve stress after a long week. The challenge is to make time for it on your calendar and honor it no matter what.

TIP #2 Minimize your to-do list and add more exploration to the agenda. A good way to maximize

your summer with fun is to try something new. Developing a talent for setting no expectations and decluttering your calendar comes with practice, but it can be achieved. If you are in a place where you continue to do the same things over and over, simply because they are easy, you run the risk of becoming a boring, yet predictable friend or partner. There is still time yet to get acquainted with the spontaneity and divorce its evil cousin, complacency. Go to eventbrite.com or meetup.com and set up a profile. Sign up for events in your neighborhood or city for things you have never experienced. This is a sure way to get out of your comfort zone, meet new people and expose yourself to new environments.

TIP #3 Create a cozy zone in your space

enough fun and built up plenty of photographic moments to share on Instagram, take on the challenge of relaxing. Don’t plan to do anything except relax at home. But what if your scenario is one in which you don’t have room to claim as your own in your home? Build one! A cozy zone involves activating a feeling of comfort and peace using the five senses. Add aromas through candles or burning essential oils (smell). Collect soft fabrics and drape the arm of your favorite chair with them (touch). Grab some flowers to add color to the background (sight; also good for fragrance). Hang up a photo of a nature scene on the wall or add a floating shelf with books (again, sight). Grab a nightstand or short table to set

• Make sure you have enough room to stretch out in case you need to take a nap. • Make space near a window for the wind to seep in or build out this space on the back porch/patio (provide shade, if necessary). • Pray for peace in your home; have gratitude daily.

TIP #4 Tune in to nature. Nothing says summertime

like being exposed to the sun and catching a good breeze from the outdoors. It’s okay to be like children for a while (as opposed to being tied up with adult responsibilities/duties) and make up stuff to do (or play with) outside. If you have kids, play Frisbee with them or fly a kite. If you don’t have kids, play Frisbee with a stranger or fly a kite. There is literally no limit to this idea. Don’t have any shame in getting creative with ideas. Your joints and heart will thank you later for trying to live like a kid again.

TIP #5 Get away, even if you’re low on a

budget. Plan a staycation instead. You can take a chance

going on a trip alone or invite a friend to do either of the four tips above, just in a completely different neighborhood. AirBnB.com provides plenty of options in most states for obtaining a night’s stay in a home-like environment at low costs. You can investigate the best getaway for your city. But making the most out of a staycation does not have to involve a 24-hour itinerary or tour guide. You can order an Uber to pick you and your overnight bag up to take you across town to a safe, cozy space. Even explore a new neighborhood while you’re away. It’s much more fun if you take a friend. If you go by yourself, make sure you tell a close friend where you are staying in case of emergencies. Getting out of your normal routine and truly enjoying a relaxing, yet spontaneous summer doesn’t have to be a cumbersome task. Sometimes, fun travels to us in unexpected packages and it’s okay to open up to new experiences in the process. SUMMER 2016 HOPEFORWOMENMAG.COM  9

I’ve spent a lot of years being busy. As a matter of fact, I’m a professional at it. The fast power walk, the firm grip on the to-do list, the intrusive multitasking. I’m no different I bet from most of you. There are never enough hours in the day, and if I do get a lull, which is rare, I will fill that space by running an errand or adding additional items to my to-do list.

And if that isn’t bad enough, I am constantly managing a cacophony of technology to keep up with the demands of work, the schedules of my children, volunteer work, and my relationships with special girlfriends. It makes me tired just thinking about it. The truth is, the level of busyness in our lives is pure madness. So why do we do it? I believe it is because at the core of it, we are comparing ourselves to each other. Society puts value on the women who “have it all” and are “doing it all.” It must stop. This is madness. Life is to be lived, not managed. It took a series of health-related stumbles for


me to finally understand that if I didn’t start being more mindful about my busyness, I wouldn’t be on the earth to enjoy much of anything. One day I woke up and thought, Girl, you better adjust your Spanx and live differently. Since then, over the last five years, I’ve been on the quest to master the art of deliberate and bold chillness. This isn’t a formal or technical term, but it is absolutely profoundly necessary for you to consider. What I quickly learned is critical: There is no one way to accomplish this. There is absolutely for sure no real pill for chill. What makes us tick and what ticks us off is so different that to apply the strategies of someone else when it comes to relinquishing the busy conundrum won’t work. What I can tell you for sure is that examining your level of activity, distraction, and busyness is worth a closer look. And, creating true room for opportunities to chill, restore, and renew, without feeling like you have to perform is critical. While it is important that you create your own chill-out code, here are some of mine that you can borrow until you make your own.

Stop holding yourself hostage by the expectations and/or demands of others. For me, the first step I committed to was to release the need to live up to or perform to the expectations or demands of others. What others expect of me is none of my business. I have enough instructions from God regarding expectations for living my life.

Make space for stillness each and every day—no exceptions.

wasn’t good at it. How can you not be good at meditation? See how that happens? My need to perform or compare myself to others seeped in again. Beware. Having said that, each day I make sure if nothing else gets done that I spend time in total and complete stillness, quiet reflection, devotional time or just doing absolutely nothing. Every day—no exceptions. Yes, you read that right: every day. And consider this a warning: Resist the urge as time goes on to start reducing the time for which you do this.

Paradise is personal. I redefined what it meant to go on vacation. Don’t get me wrong, I love a great trip to the beach or time in the mountains, but sometimes time and money simply don’t allow for that, so I implemented a paradise is personal clause to my chill-out plan. This simply means that I can go on “vacation” in a variety of ways. It could be reading about far-away places with the perfect cup of tea or doing a staycation at a local new boutique hotel and rediscovering new restaurants, eclectic museums, or hiking the same path but slowing down to really notice nature. And do a fun check—if you have to work to do this, you missed the point. Soak up the sun this summer and devise your chill-out plan. You will be so glad you did.

I always figure if I do not feel wowed by what I have on, then no one else will be either, so I have learned to wait for the wow moment. I have created a habit of going through my closet each season using these three F’s. It makes it much easier to part with things that do not pop. Especially this summer you want to grab hold of all the color pop wardrobe pieces, accessories and shoes you can carry so that the colors will be inspire you to feel bright, beautiful and brilliant every day.

One of my favorite things to do is online shopping. I have my go-to stores that I already know their fit and I order way ahead so I can also check out their sales.

According to a survey of The American Psychological Association, 64% of individuals are stressed out about money, followed by 60% who are stressed about the workplace. Workplace stress and burnout have become such an issue that some countries have implemented burnout prevention legislation.

Before jumping into how to banish burnout, we have to clarify the differences between stress and burnout. What is stress? It is a term coined in 1936 by Hans Selye, a pioneer in the study of stress. He defined it as “the non-specific response of the body to any demand for change.” There has since been varying iterations of the definition, however, for the purpose of this article we are keeping it pretty simple: Stress is a state of mental or emotional strain or tension resulting from adverse or very demanding circumstances. The leading symptoms of stress are irritability, anger, anxiousness and feeling tired or unmotivated. Then there is something beyond stress, which is burnout. This is chronic stress. It’s stealthy. Burnout can sneak up on you, which can make it harder to recognize, however, your body will sound off with warnings that can help getting to the point where you are in full-blown burnout. Burnout has its own set of symptoms, including emotional exhaustion, depersonalization and reduced performance. But why wait until you’re exhausted, telling people off and looking burnout in the face? Instead, get in front of it and banish burnout forever. 20  HOPEFORWOMENMAG.COM SUMMER 2016

How do you banish it forever? You start by creating a life you enjoy and love. Stop being a slave to your to-do list. Learn how to say “no.” Create a standard of living for yourself where you become a priority. The American Heart Association says that cardiovascular disease, including heart disease, stroke and hypertension, is the number one killer of women. The World Health Organization echoes the same message. This says that globally more women die from heart-related disease than any other type of disease. That in and of itself should be a wakeup call that something has to change. From the moment that you’re reading this article forward, you are now aware and responsible for taking control of your life. It’s high time you take a chill pill and become intentional about banishing burnout.

The school year has come to a close, which means you probably have big summer plans—the beach, a camping trip, maybe a Fourth of July picnic. Plus, your kids have a lot of free time on their hands. The way I see it: summer plans + kids with free time = lots of money. No matter what your summer plans are, develop a financial plan. Don’t wait

Put the summer vacation, kids’ camps, and all your other summer-related expenses into your budget, along with normal expenses. Use a spreadsheet, a pencil and paper, or an online tool like EveryDollar. Your income minus your outgoing expenses should equal zero— that’s called a zero-based budget. The budget will also tell you how much money you have to work with, and whether or not it makes sense to take

that week-long vacation. If you’re in debt, you should worry about paying off that debt before jumping into a beach trip. It’s all about priorities.

Half of the year is almost over once summer gets going good, so take a step back and think about everything else you need or want to do this year. Then, simply prioritize what’s most important to you.

Speaking of debt, make sure you’re actually paying for all this summer fun, not just putting it all on a credit card. Vacations are a luxury, not a God-given right. There’s nothing wrong with taking a few weeks off while you pay off debt and save for the future (and a vacation).

Start with a budget. That’s your plan. That’s how you tell your money where to go before the summer expenses begin, instead of waiting until September to assess the damage. 22  HOPEFORWOMENMAG.COM SUMMER 2016

The best way to dump debt is using the debt snowball. Pay the minimum on all your debts except the smallest. Pay as much extra as you can on the smallest.

Once you have that paid off, move on to the next smallest. Continue until you’re completely out of debt. Here’s the cool thing: The more debt you pay off, the more money you have to spend. That means next year’s vacation could be paid for if you really get serious about knocking out those credit cards, old student loans and car payments. Don’t get me wrong. I want you to have an amazing, unforgettable summer. I just want you to do so without debt and without letting those vacations follow you home. So, before the summer begins, make a monthly budget and pay off any outstanding debt that’s getting in the way. You’ll have a much better summer when you don’t have to deal with financial stress.

Recently, a colleague shared that he wanted to purchase a loft. To do so, he moved out of his expensive apartment in the city and moved into a more modest space in the suburbs. I was quite surprised, even more so when he stated, “I am taking a step back to make a giant leap forward.” I really thought about what he did, which was smart, but I thought his attitude about it was the best. It made me think about how many of us may need to go on a financial diet. It’s so easy to get used to a certain lifestyle, with an expensive car or apartment, extravagant dinners and high-end wardrobes. But what happens when you need to save money for something or if you need to make a change? It could be a decision to purchase a home,

go back to school or to get your financial house in order. You may have to decrease your spending now to achieve a much larger goal later. Take a look at your financial lifestyle. Do you have the expensive car, but don’t own your home? Do you run out of money before your next paycheck? Are you lacking an emergency fund? Now is the time to go on a financial diet for your greater good. Maybe get a smaller apartment. When the car lease is up, get a less expensive car. Do a little less clothes shopping and put that money to better use, like buying a home or beefing up your savings. Don’t look at it as a negative. Look at it as sacrificing now so you can enjoy even more down the road.

It feels pretty good when your new family photo gets a few dozen likes on Facebook. But it feels absolutely amazing when millions gush over your beautiful babies, including Oprah Winfrey. Mia McGhee says when she posted the precious picture of her husband, Rozonno, or Ro, covered with six sleeping newborns online back in 2010, she thought only her 40 Facebook friends would see it. “I didn’t 24  HOPEFORWOMENMAG.COM SUMMER 2016

realize what ‘viral’ was,” Mia says with a laugh. “I just didn’t.” Soon Good Morning America was calling. Then Oprah Winfrey. “Now the rest is history,” says Mia. “All because of that photo. That’s amazing.” The energetic sextuplets— Olivia, Madison, Rozonno Jr., Josiah, Elijah and Issac— starred in a show on OWN, the Oprah Winfrey Network, called 6 Little McGhees. After a two-year break from television, the family is back with “Growing Up McGhee” for UP-TV. The fun-loving five-year-olds make each day an adventure for Mia and Ro. “They’re all six different personalities,” says Mia. “You’ll see us creating a lot of memories with the kids and making traditions together. It’s not just the kids that grow. It’s us maturing and developing as they grow.” Creating quality family time is a top priority for the couple

who wed when they were only 18 and 19 years old. Neither grew up with a dependable father figure. Ro says addiction plagued his mother for nearly two decades while Mia’s mother had four children with four different men and was never married. As a teenager, Mia’s mom kicked her out of the house, forcing her to drop out of school to support herself. One of Mia’s brothers was shot during a drug deal, and another died of Hepatitis C shortly after being released from prison. “Those were traumatic times in my life,” admits Mia, “but that’s helped shape who I am today.” Determined to create the family they never had, Ro and Mia tried for years to get pregnant. In 2009 they were pregnant with twins, but lost them during the second trimester. A year later, Mia discovered she was pregnant with sextuplets, news that did not seem positive at first. “I was devastated,” SUMMER 2016 HOPEFORWOMENMAG.COM  25

she recalls. “I thought I was living a nightmare. We were both afraid.” But she says a loving friend reminded her that children are a gift from God, the exact words Mia needed to hear. “I thank God she came over because she really did speak life to me,” she says. As infants the family easily went through 50 diapers and 30 bottles a day. Now in kindergarten, diapers and bottles have been replaced by sassy opinions and chore charts. “We’re trying to figure out how we can motivate them to do good instead of focusing on the bad,” says Mia, who admits parenting six at once is not easy. “Just this whole journey of motherhood has been trying and challenging.” It’s a journey she couldn’t imagine tackling without her faith. “There is no way I would be able to do what I’m doing if I did not have faith in God. There’s no way.” On top of raising their brood in Columbus, Ohio, the couple runs their family business McGhee Carpet Cleaning. Ro also serves as pastor of Promise Land Believers Fellowship Assemblies, a church passed on to him last year by his grandfather, Bishop Forest Rhodes. “We are trying to balance every single thing in our lives, but we have people that are helping us a great deal,” says Mia. “You have to work hard so we can play even harder.” The couple loves taking an annual kid-free vacation, time they say is necessary to nurture their marriage despite the demands of work, kids and a television show. Mia appreciates the opportunity to show people the real McGhees, imperfections and all. And while there’s no shortage of opinions, conflict and sibling drama, Mia says it’s a show the whole family can enjoy. “I don’t want to put anything out there that my kids can’t watch,” she says. “We want to help uplift and encourage our viewers.” Besides exposing people to the crazy life with sextuplets, Mia wants people to see there is light at the end of the tunnel. “They have more power than their past. A loud, piercing noise sounds. You take notice and

realize it’s the fire alarm. You smell smoke and even hear the distant crackle of flames. You grab what’s necessary and get out of there fast because you know that no matter how you feel about your right and entitlement to stay in that place, the current circumstance demands that you move—and move now. Prayerfully, you’ve never been in an actual burning building, but I bet you’ve had your fair share of red-hot fiery

conversations. How many times have you been scorched by the heat of a conversation or had a relationship totally destroyed by the flames of incinerating words? I know that in the moment of a heated conversation, you feel justified, entitled, even warrior-like. However, when you replay the scenario (as you always do), and recalculate the cost, was it really worth it? While there are times you need to stay and fight, a wise woman can smell smoke and know when to walk away from an engulfing conversation.


RELATIONSHIPS

GIRL, YOU’RE ON FIRE!

RAW, EMOTIONAL, NON-CONTEXTUAL WORDS ARE THE PERFECT COCKTAIL FOR A WORD FIRE—AND PEOPLE ALWAYS GET BURNED. Heated conversations usually become more about emotions and less about the real issue at hand. The problem with emotion-led conversations is that although they give people courage to honestly say what they feel, they usually do so out of context. Raw, emotional, non-contextual words are the perfect cocktail for a word fire—and people always get burned. In those moments, it may feel better

to stay in the fight than to leave. The urgency of getting your point across takes an immeasurable priority over slowing down and steering the conversation back to the original topic. It’s hard. I know. I get it. But learning to calm the fire is key to maintaining your personal peace of mind. Even if you don’t feel the other person is worth saving, surely you and your emotional health are worth it.

HERE ARE THREE TIPS TO EXTINGUISHING EMOTIONAL FLAMES:

Decide what the conversation is about before you start talking. Write it down on a small note card or make a note on your electronic device. Look at the card anytime you feel your emotions rising so you can remind yourself of the real issue. If the other party begins to show heightened emotions, politely remind them of the focus on the conversation.

Be honest about where the conversation is going. The note card is a great idea, but sometimes your emotions will still get the best of you. At that point, you have to be honest about possible outcomes of the conversation. Is there resolution ahead or just more flames?

Weigh the benefits. Is there greater benefit in talking it out or in being silent and walking away? Doing this requires you to discipline yourself to see past the immediate gratification of unloading on your opponent. Is this conversation really worth the expense?

I think women rock, but we have to trust our guts more.

Though progress has been made, women in business continue to face different obstacles and need support, networking opportunities and business tools to help them grow. For that reason, Debbie Saviano, Stacy Schieffelin and Linda McMahon came together to start the Women’s Leadership LIVE (WLL) conference. This year’s conference is October 13-15 in Salt Lake City, and its founders are ready. Saviano is a social media strategist who went from being a bus driver to the principal of five campuses. Schieffelin is founder and president of ybf Beauty, who spent 20 years at the Ford Modeling Agency. McMahon is co-founder and former CEO of the WWE and advocate for small business and female entrepreneurship. All three recently took time from their busy schedules to talk with Hope.

Each of you has a track record of success in different areas. What would you say your dynamic within the conference is? McMahon: While the three of us are entrepreneurs, our businesses are very different, but the common denominator is that we are all three “can do, get-it-done” women. I’ve been the CEO of a public company on the New York Stock Exchange, but I worked with my husband to build that company from the ground up, going bankrupt once, losing everything and starting all over again. There are so many business and life lessons learned along the way that are educational and hopefully inspirational to women who want “in.” Saviano: We all have the desire to take what we have learned and experienced and share that with others. We fully enjoy being part of something bigger than us, and we demonstrate collectively the power of women supporting one another and having a great deal of fun along the way. Each of us are at a point in our lives that we could easily step back and choose to retire or rest on our laurels. However, we consider it a responsibility to share our personal and professional journeys in the hope that we would provide insights to the challenges and the successes we have experienced, and WLL is our platform.

What is one of the biggest challenges facing women in business today? Saviano: Confidence! Research validates that the majority of women admit to struggling with confidence, worthiness, halo-effect, etc. With that said, women are challenged to do so much in their homes, businesses and communities and, as a result, they are overwhelmed. Opportunities need to be available for women to come together to learn, grow and be inspired by the content, conversations, networking and presentations — all with the intent of mastering their pathway to leadership. McMahon: Often we limit ourselves by a lack of confidence, and we won’t take the risks we need to take to advance. That’s why mentoring is so important and why WLL brings valuable resources together to help women who are just starting out, have left the workforce and are transitioning back after having a family and who want to burst that glass ceiling and advance to the C-Suite and beyond.

Why is it important for women to be aware of the gender-related disadvantages they may face in their career? Saviano: Knowledge is power, and it is important to recognize the challenges women face in regard to gender. When women are constrained and are unable to reach their full potential, society as a whole suffers. Lower levels of education, workforce participation and contributions to the gross domestic product affect society when gender-related issues exist. Women need to avail themselves of opportunities to increase their knowledge on how to overcome such disadvantages. Schieffelin: It’s so important to know the advantages of being a woman and that we are no longer in a man’s world. When I was a young girl, being an entrepreneur was considered a man’s domain, but the tide has shifted with my years. Today more than nine million U.S. companies are now owned by women; we employ nearly eight million people who are generating $1.5 trillion in sales, according to 2015 data from the National Association of Women Business Owners. And although more women are becoming entrepreneurs, they often face a set of challenges not characteristically shared by their male counterparts, so it is important to shed light on some of these disparities. McMahon: Look, the goal is not to be one of the boys. I think being a woman is a great advantage and not a disadvantage. Women make up 51 percent of the population, 53 percent of the voters and make 81 percent of buying decisions in their families. Companies with women on their boards and in the C-Suites are often better run and more profitable. We should

LINDA McMAHON take cues from our male counterparts when they are more aggressive in seizing opportunities. I think women rock, but we have to trust our guts more.

Why is it important for women to come together at events such as the WLL Conference? What was your goal in creating this conference? Saviano: It is important for women to be surrounded by other women who wish to be their support base and champions. Too often we don’t always see that high level of support and at WLL that is a priority. We have room only for those who want to be part of a positive movement. Our focus is always on providing content that brings value to those in the audience along with finding speakers whose message correlates with our core values and who recognize the importance of sharing their stories with the desire of encouraging and uplifting other women. Women do best in communities. We want WLL to be a place for women to come together to connect, network, grow and learn and, in doing so, build relationships. Having the opportunity for women to come together for an extended period of time, where they are away from the daily routine, allows them to fully focus on themselves. 32  HOPEFORWOMENMAG.COM SUMMER 2016

McMahon: To create a platform where we could share our collective expertise with women of different backgrounds and needs; to help train women for success ever how they defined it by giving them the tools they need. Because the more we share, the more enlightened we all are. We inspire and learn from one another. Schieffelin: It takes a village for sure to make us the women we know we can become. Even when we don’t recognize it, we can’t do it on our own. My life has been blessed with many transforming women who have shared their gifts and

life as well as their philosophies that always lead back to: no dream is too BIG!

What would you say is your greatest accomplishment? Saviano: One of the things we have in common is our values to family and community. We are all blessed with healthy, successful children and naturally that would be our greatest accomplishment. Professionally, it would be WLL’s first event. We had 200 women join us in Irving, Texas, for three days, and based on the surveys, it met the needs, expectations and intentions of the attendees as well as the founders. Knowing we are making a difference is a major highlight in our professional lives. McMahon: Having accomplished enough in my life so far to have my opinion matter in publications like Hope magazine. Farm to table is all the rage right now. Everyone wants food that’s crisp and fresh. I personally love going to the farmers’ market. It’s a fun trip for the whole family. Summer is here, which means lots of barbecues and family dinners. Buying local produce not only adds flavor and freshness to your dishes; it helps support local growers. Here are a few tips for shopping at your local farmers’ market. Big Bag, Small Purse Bring your own bags for your fresh produce. Some vendors provide a bag and some don’t. Don’t bring a big, heavy purse that is going to weigh you down. Wear something like a crossbody purse, which is light and easily accessible. Farmer Knows Best It’s great to ask the farmers questions like, “How long do these last in the fridge?” “What are your suggestions on how to cook them?” “Can you show me how to pick out the best ones?” When I asked that last question to the farmer selling the tomatoes, she said, “The uglier they are, the better they’ll taste!”

Be an Early Bird The best time to go to a farmers’ market is in the morning. You’ll get the best pickings. Come with a Plan Most fruits and vegetables last up to a week in the refrigerator, so plan some of your meals for the week. Look Before You Buy It’s better to hold off on buying the first item you see. Walk through first to see the best deals. Some vendors even have samples for you to taste. Carry Small Change Bring small change and cash to a farmers’ market—like singles, $5 bills and $10 bills. Keep the Pup at Home It may sound like fun to bring your dog along, but keep him home. Any produce your dog gets close to, farmers have to throw out.

Smashed Parmesan Red Potatoes Maple-Roasted Heirloom Carrots These are a beautiful summer side dish. The maple syrup gives them a hint of sweetness. Ingredients: 10 heirloom carrots, washed, peeled and stems removed 1 tablespoon grade A maple syrup 1 tablespoon extra virgin olive oil sea salt and coarsely ground pepper to taste Preheat oven to 400º. Grease a baking sheet with cooking spray. Lay the prepared carrots out in a thin layer on the baking sheet. Drizzle maple syrup and extra virgin olive oil over the top. Toss the carrots until they are well coated. Sprinkle them with sea salt and coarsely ground pepper—about ½ teaspoon for each. Cover with a piece of foil to keep them from burning and bake for 30 minutes. Makes two servings.

Dark Chocolate Cherry Oatmeal Cookies These cakey, soft cookies are little pillows of dark chocolate and freshly chopped cherries. Ingredients: 1 cup quick rolled oats 1 cup flour ½ cup brown sugar 1½ teaspoons baking powder 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg ¼ teaspoon salt 4 tablespoons butter, melted and slightly cooled 2 eggs 1½ teaspoons vanilla 1.2 ounces dark chocolate bar, 70% or higher, chopped ½ cup fresh cherries, pitted and chopped Preheat the oven to 350º. Spray a baking sheet with cooking spray and set aside. In a bowl, combine the flour, brown sugar, baking powder, cinnamon, nutmeg and salt. In a separate small bowl, stir the butter, eggs and vanilla until smooth. Pour the butter mixture into the dry ingredients and stir until combined. Fold in the dark chocolate and fresh cherries. Drop the cookie dough into 15 rounded scoops onto the prepared sheet and bake 10 to 12 minutes.

These red potatoes are a gorgeous color with a perfect crunch of parmesan cheese on top. Ingredients: 2 lbs. or 24 small red potatoes 4 tablespoons extra virgin olive oil 1 cup parmesan cheese, shredded salt Preheat the oven to 425º. Put red potatoes in a large pot. Fill it with four quarts of water sprinkled with salt. Boil for 20 minutes or until potatoes are tender, careful not to overcook. Grease a baking sheet with cooking spray, and place the potatoes in rows on the sheet once they have cooled. Using the back of a spatula, a potato masher or with the palm of your hand, smash the potatoes one by one flat like a pancake—you can cover them with a clean dishtowel and smash them with the palm of your hand if that’s easier. Once they are smashed, drizzle them with extra virgin olive oil (see tip below). Sprinkle each one with salt (be generous) and top each one with ½ to 1 tablespoon of freshly shredded parmesan cheese. Bake them in the oven for 20 minutes. Makes 24 Smashed Potatoes. Tip: If you can’t fit all of the potatoes onto one sheet, make sure you divide the extra virgin olive oil into only two tablespoons per batch.

Tomato and Mozzarella Salad This is a swoon-worthy salad. Ingredients: 3 heirloom tomatoes, preferably different colors 8 oz. fresh mozzarella cheese block balsamic glaze extra virgin olive oil fresh ground pepper Optional: 2 tablespoons fresh basil, chopped Wash the tomatoes and cut them into thick slices. Set aside. Slice the mozzarella into slices using floss, which cuts through mozzarella much easier and cleaner than a knife. Alternatively, layer the tomato and mozzarella slices on a platter. Drizzle with desired amount of extra virgin olive oil and balsamic glaze. Grind fresh pepper over the top and sprinkle with fresh basil. Serves four to six people. Did you know that strawberries are great for your heart? They contain a special nutrient that works to protect the heart and cardiovascular system. Make sure the strawberries you’re getting are fully bright red throughout. When they are in season, they have the most of that nutrient and they also taste the sweetest. This is a recipe that tastes just like ice cream, only it’s totally good for you.

TWO-INGREDIENT STRAWBERRY ICE CREAM 2 frozen ripe (early freckled stage) bananas, frozen 6 large ripe strawberries, frozen 1. Add chunks of frozen banana and strawberries to a food processor. Pulse several times until a mixture the consistency of ice cream forms. Only pulse! If you blend it, it might turn into a smoothie. Scoop it out into a small bowl. 2. Remember that you can always freeze the ice cream for later.

STRAWBERRY COCONUT BLENDER WAFFLES ½ cup coconut milk 2 large eggs 2 cups whole rolled oats 2 teaspoons raw and local honey 2 cups fresh sliced strawberries ¼ cup unsweetened shaved coconut Toppings for waffles: Shaved coconut Fresh strawberries, sliced thinly 1. In a high-powered blender, add coconut milk and eggs, and blend. Then, add oats and baking powder, blending again until well mixed (oats will be chopped, but mixture won’t yet be smooth). Add honey and strawberries, then process until mixture is smooth. Using a spatula, stir in the shaved coconut, gently scraping down the sides as you go. 2. Heat a Belgian waffle maker and give it a light coating of nonstick spray or brush it with coconut oil. Pour in ¾ cup of batter into the middle. Close the waffle iron and cook 3½ minutes.

3. Remove waffle and repeat for the rest of the batter. Top with fresh strawberries and coconut, or strawberry ice cream made with a frozen banana and strawberries. Yum. Note: A good way to keep waffles warm as you wait is to place them in a single layer on a baking sheet and keep them in a 200º oven.

BLACKBERRY CRUMBLE SMOOTHIE BOWL Smoothie Bowl: ½ cup fresh or frozen blackberries 2 frozen bananas 2 tablespoons unsweetened cashew butter 1 cup coconut milk, plus more Crumble Topping: 2 tablespoons oats 2 tablespoons chopped walnuts 1 Medjool date, diced or torn with your fingers ¼ teaspoon ground cinnamon Other Optional Toppings: Fresh blackberries Shaved coconut flakes Coconut butter, melted 1. In a blender, add blackberries, frozen banana, cashew butter and coconut milk. Blend on high until smooth. If needed, add another splash of coconut milk. 2. On a baking sheet, toast oats and walnuts at 400º until lightly browned (about four minutes). Remove and sprinkle oats and walnuts with cinnamon and mash with date, mixing it together on the baking sheet with a fork. 3. Cauliflower is stealing the substitution spotlight. It’s become a great go-to when trying to lighten up recipes, taking the place of rice, potatoes and even pizza crust. Its texture and ability to take on flavor makes it the perfect alternative. Plus, this cruciferous gem is loaded with good stuff. One cauliflower head has 11 grams of protein, 12 grams of fiber, tons of vitamin C, calcium, magnesium, iron and vitamin B-6. Cauliflower is the cool kid, and this veggie should be your new BFF. Here are two fantastic recipes where cauliflower reigns supreme. 40  HOPEFORWOMENMAG.COM SUMMER 2016

Cauliflower Pizza Crust 1 head of cauliflower 1 egg ¼ cup shredded Parmesan cheese ¼ cup mozzarella cheese ¼ teaspoon salt Four leaves fresh basil, finely chopped ½ teaspoon dried oregano ½ teaspoon garlic powder A few shakes of crushed red pepper (optional)

1. Prep cookware: Preheat oven to 450º and place a pizza stone or baking sheet in oven as it warms. Next, place a large piece of parchment paper on a cutting board and generously spray with nonstick cooking oil. Set aside on countertop. 2. Prep cauliflower: Rinse and thoroughly dry your cauliflower. Cut only the florets off the head; it’s best to not use much stem. Pulse in food processor for about 30 seconds until you get snowlike cauliflower. This should yield about 2 ½–3 cups. Place the cauliflower in a microwave-safe bowl and cover with a towel. Microwave for four minutes. Place cooked cauliflower onto a clean tea towel (diaper cloths work great, too) and allow cooling before moving on to next step. 3. Draining: Once cauliflower is cool enough to handle, wrap it up in the towel and wring it out aggressively. It is extremely important to get as much water out as possible. You may want to use a few towels. This will ensure you get a nicely formed pizza crust instead of a dry, crumbled mess. 4. Mixing and forming the dough: In a large bowl, add cauliflower and all other ingredients. Mix well using a wooden spoon or rubber spatula. Next, form your dough onto the oiled parchment paper. Gently pat it down with a rubber spatula in circular motion. Be cautious to not spread it too thick or too thin. 5. Baking: Using the cutting board, slide only the parchment paper onto your hot pizza stone or baking sheet in the oven. Bake for 8–11 minutes or until it starts to turn golden brown. 6. Finishing touches: Now the fun begins! Add any sauce, cheese or toppings you like. Place back into the oven until your cheese is melted, slightly browned and bubbling. Voilà. You just made yourself an amazingly healthy pizza. Eat up.

Asian Chicken Cauliflower Fried “Rice” 1 head cauliflower 1 large chicken breast, cubed and cooked 2 tablespoons sesame oil 2 cloves minced garlic 1 carrot, chopped finely 5 green onions, chopped 1 cup frozen edamame (thawed) ¼ cup water chestnuts, chopped 1 egg, 2 egg whites, beaten together 2 tablespoons low-sodium soy sauce 1 tablespoon teriyaki, hoison or ponzu sauce (depending on your preference) Sriracha sauce, to taste 1. Cook chicken: Cube chicken, lightly salt and pepper the pieces, and pan fry over medium heat in coconut oil until lightly browned. 2. Prep cauliflower: Using a grater, shred cauliflower using the largest side of the grater, or you can use a food processor. Set aside. 3. Stir fry: Heat one tablespoon of sesame oil in a large skillet over medium/low heat. Add the carrots and garlic, and fry until fragrant, about four minutes. Add the cauliflower, edamame, water chestnuts, green onions, chicken and the remaining sesame oil to the pan. Stir fry quickly to cook the cauliflower to a soft (but not mushy) texture. 4. Add the egg: Make a well in the middle of your stir-fry. Turn the heat down a bit and add the eggs. Stir gently and continuously until the eggs are fully cooked. Add in the soy sauce just before serving. 5. Finishing touches: You can drizzle a tablespoon of teriyaki sauce and/or Sriracha sauce to give the dish a nice sweet and spicy flavor. Get ready for your new favorite dish! You won’t even miss your old rice!

Summertime tends to be the months most parents can take time off from work and kids are out of school. Why not use these months to focus on your overall well-being? You’ve been working hard all year long, and busyness, frankly, has just been in the way. Take the time to reevaluate your family’s health and wellness and dare to live a healthier life than you did last year. Wellness is much more than physical health, nutrition and exercise. There are several dimensions of wellness, including physical

Physical wellness is the ability to maintain a healthy quality of life via the proper care of our bodies. The summer months are perfect for family outdoor fitness activities, such as hiking, swimming, bicycling, surfing or beach volleyball. Good natural nutritional supplements can help with energy support you’ll need to endure physical activity. Be sure to protect yourself from overexposure to sunlight by using natural sunscreens without excessive chemicals that can cause allergies, hormone disruption, and cell damage, according to the Environmental Working Group (EWG.org). However, with keeping environmental wellness in mind, if you’ll be spending most of your time indoors, beware that the air quality is two to five times worse than outside. This is due, in part, to the products we use on an everyday basis, such as household cleaners, personal care products like bath soaps, liquid soaps, deodorants, toothpastes, shampoos, nail polish, hairspray, and cosmetics, detergents, air fresheners and perfumes. Do a little home improvement and consider converting your home to safer, more natural solutions. According to John Valenty, CEO of Wellness.com, “Wellness is the result of personal initiative, seeking a more optimal, holistic and balanced state of health and well-being across multiple dimensions.” Other dimensions of wellness include emotional, intellectual, social, occupational, financial and spiritual wellness. These dimensions work together to help achieve total wellness. Along with physical wellness and environmental wellness, emotional, intellectual and social wellness deals with one’s own self and relationships with others. Emotional wellness ensures that we: 1. Avoid stress 2. Use the support from others 3. Have a positive attitude 4. Have a strong sense of self 5. Express feelings freely

During the summer, we need to ensure that our children’s minds continue to grow. Prepare them for the upcoming school year by helping them enhance their intellectual wellness. Instill the importance of good study habits and time management. Teach them to build relationships, explore diversity in relationships, deal with interpersonal conflict in a positive and healthy manner, and connect to a positive social network to enhance social wellness. As for parents, evaluate your occupational wellness— the work that you do—paid or unpaid. Is your career motivating, interesting and enjoyable? Is it consistent with your personal values and beliefs? Are you able to communicate and collaborate with others effectively? Make sure you leave work feeling inspired and challenged. If you don’t, don’t settle. Keep motivated and seek other professional development opportunities. Whatever career you have, ensure it meets your financial wellness goals of being able to live within your means. Learn to manage your finances so you have little or no debt, adequate emergency savings, and minimal financial stress. Meeting your financial goals could allow for peace of mind, more quality family time, and a carefree retirement. Finally, having spiritual wellness is of utmost importance. It helps you find meaning in life, explore your purpose, and define and live a life filled with the things that matter most.

Bathroom towels are important to the design in general. They allow you to showcase your décor theme. The towels are usually placed on a bar or a ring near the sink, which makes them easier to reach. Fancy decorative towels placed on the rack do not need a “do not touch” sign. It is already known, except in the guest bathroom.

the kitchen towel

Kitchen towels serve a major use when preparing foods and during clean-up. As a decorative item, we often place them on the oven handle or dishwasher handrail. These towels usually match the theme of the kitchen.

the beach towel

Beach towels come in all shapes, sizes, colors and fabrics (yes, they can be different). Beach towels are typically 30x60 inches. These are not normally used as everyday towels in the home. They are customarily printed with different big images on one side.

the multi-purpose towel

This towel is permanently stained with make-up or it’s the faded one that becomes the multi-purpose towel in the home. Once you change your décor, style, and color scheme, the old towels become the ones that you use to wash and dry the car or the ones you grab when there is a spill or leak.

Fabric weight is measured in GSM, or grams per square meter. This number refers to the density of the towel’s construction. The GSM varies from 300 to 900 for towels: • 300–400 GSM is lighter and thinner • 400–600 GSM is a medium weight • 700–900 GSM is a luxe weight, which is heavier, denser and can absorb the most water The sizes listed are typical for most of the towels, so when choosing, consider your personal bathroom size and the practicality of their use.

Every woman needs her own tranquility spot—a place where she can begin and end each day. A place she can retreat to during the day for a five-minute respite, a 15-minute nap or a lengthier encounter for planning, dreaming, reading or simple resting.

Women give, give, give all the time. We are wives, mothers, daughters, sisters, friends, employees and employers. We are caregivers, home keepers, organizers, hostesses, volunteers and mentors.

However, if we don’t take time to nurture, refresh and renew ourselves, we’ll have nothing to give. We cannot pour from an empty vessel! This is why it is so important for us to have a space to refresh and renew daily.


HOME A SPACE TO CHILL Make creating your tranquility spot a priority. The goal is to create a space you truly enjoy and where you have everything you need to refresh, renew and refill. It does not need to be anything more than the corner of a room. 1 Select a spot that is away from the activity in your home. 2 Minimize clutter and make sure you have a desirable view. 3 Make sure there is a comfortable place to sit, whether it’s your favorite chair, recliner or couch. 4 Set a table next to your seat large enough to hold a beverage, lamp and artwork with an inspiring message. Add a vase of fresh flowers and light a candle if you want. 5 Add a pretty pillow and cozy throw to your chair for those moments when you want to meditate or indulge in a short nap. 6 Include a CD player or iPod for listening to uplifting/ relaxing music or an inspiring message. 7 Add a pretty basket with your tranquility spot tool basket: your Bible, inspirational books, note pad/ journal, pens, tissues, pretty note cards (in case you’re inspired to send a note to a friend), sticky notes to write little notes on as you read and are inspired. (I have markers and coloring books in mine!) 8 Reserve space in your schedule for you and keep it like any other appointment. Move your tranquility spot to another location from time to time. For instance, on a gorgeous day, take your respite to the backyard, the patio or the deck. At the end of a busy day, rejuvenate in a bubble bath. As long as you have your tool basket stocked, bring it along and enjoy the new scenery. Honor your tranquility spot by keeping it ready and available at all times. Escape often, even if it’s only for a few minutes. You’ll find this ritual of intentionally slipping away will leave you feeling more relaxed, balanced, filled and fulfilled— ready to face your busiest of days. Take care of you! You deserve it.

In an age where many believe luxury train travel to be a thing of the past, I am here to tell you it is alive and flourishing in British Columbia, Canada. While most of today’s travel leaves you weary, a journey on the Rocky Mountaineer luxury train will keep you looking up toward the clouds.

If you’ve never experienced a luxury train car before, prepare to be surprised. When you first board, a bagpipe-enhanced send-off will lead you to believe you

Of course, my welcome-aboard toast included a mimosa. Soon afterward, it was time to discover the luxury and comfort of my two-level, glassdomed coach with full-length windows, which put you right in the middle of such jaw-dropping scenery that I thought only existed in the movies. Disney couldn’t create something this magical. While your eyes are completely entertained with what is outside of the train, the rest of your body is enjoying the never-ending comforts of the GoldLeaf level of luxury service. Your GoldLeaf Dome Service includes much more than luxurious dining. It also brings the comforts of panoramic views from the full-length dome windows, reclining and rotating dome-level seats, a spiral staircase, ADA elevator, overnight accommodations and complimentary transfers. While upstairs is extremely dazzling to your eyes, the meals on the lower level will dazzle your taste buds. While some types of travel leave you with hard decisions about where to dash to make your next connection, a Rocky Mountaineer trip’s hardest question is what divine dishes to order off the menu. Executive chefs Jean Pierre Guerin and Frédéric Couton make this decision extremely hard. Every meal, you will be tempted to order more than just one. With continuous treats at every turn, such as scones and chocolate, I did my best to order only one entrée from the menu so delightfully labeled, “Eat Well, Travel Often.” The stars of the trip are your hosts, who are passionate about your surroundings and your comfort. Another amazing Rocky Mountaineer perk is that you never have to tote your luggage anywhere. Just leave it in your room at the beginning of your journey and it miraculously appears each night in your hotel room. My luggage was there when we stopped in Kamloop, Canada, one of the friendliest locales I have ever encountered—and this coming from a southern gal. Be sure to check out the local wineries in Kamloops. This region offers internationally award-winning wineries. If you are looking for an under-the-radar wine tour,

your inner sommelier will be delighted. Check out my favorite Harper’s Trail Dry Riesling, and you will understand how strong the wine is in this region. End your evening in Kamloop at The Noble Pig with their signature fried pickles. While many travel writers give you distinct itineraries, my vision is to lead you on new paths of discovery, which along the way, will help you discover yourself. My biggest tip for you on a Rocky Mountaineer adventure is to just soak it all in and be in the moment. Don’t worry about what you have left behind (cell phones, emails, etc.). Take this time away and refresh yourself with new sights, sounds and friends. Together, you will discover a once-ina-lifetime experience aboard a Rocky Mountaineer adventure.
