aybe it’s me but, as I get older, the years seem to going by ever more quickly. It seems only a few weeks ago we were saying Happy New Year in 2023 and now, here we are, welcoming 2024. Hey ho, perhaps it’s true that time flies when you’re enjoying yourself. The start of the New Year always brings lots of good intentions.

For some of us, that will be a pledge to get a bit healthier and perhaps overhaul our diets. With that in mind, our cover story features Veganuary, a look at the worldwide movement towards plant-based eating that’s taken root in January, when lots of people choose to try this lifestyle for a month. I enjoyed talking to a few of the people championing veganism in the city and was surprised to discover just how quickly and widely it’s been embraced in Qatar. In the Travel Section, I stuck with the ‘do no harm’ ethos of Veganuary with tips for some amazing trips – a couple I’ve done and one that’s very definitely on the bucket list. I must admit, I’m not a great one for New Year’s resolutions, I reckon it’s just setting yourself up for failure. But, one resolution I always have is to travel more, and those gorillas are definitely calling me. In our dining pages, you’ll find lots of new deals to bring in the New Year and, rest assured, we’ll be getting round to try them since we’ll be launching the Fact Dining Awards 2024 this month. Our Listen Up section features lot of news and happenings from around the country and we have our usual roundups of snippets from the motors industry, fashion, tech and more. Happy reading. A COOL DEBUT FOR RAS ABROUQ This month, the west coast UNESCO site will see the launch of the country’s first Our Habitas property in partnership with Qatar Airways.

A NEW DAWN FOR DESIGN More than 100 designers from the MENA region will feature at the first edition of Design Doha. Qatar Museums has announced the inauguration of Design Doha, a biennial showcase for excellence and innovation in the design community in Qatar and the Middle East and North Africa (MENA) region. The event will take place from February 24 to 28 across multiple venues in Msheireb Downtown. Design Doha will serve as a dedicated platform for fostering creativity and design excellence. It looks to provide creatives and institutions with a space to showcase their designs and ideas. It is committed to offering tangible and authentic solutions, displaying the richness of MENA culture and creativity, while highlighting the exceptional design environment of Qatar on the global stage. Established under the leadership of Qatar Museums’ Chairperson, HE Sheikha Al Mayassa bint Hamad bin Khalifa Al Thani, Design Doha will be a new platform for practitioners from across the Arab world, helping to build professional pathways and engage with acclaimed design professionals from around the world who will convene at the event. Sheikha Al Mayassa noted: “With so much talent in the region, our aim is to provide a platform to support Arab designers in advancing their creative practices and businesses and to share their talent with the world.” The event will be led by Artistic Director Glenn Adamson. He revealed: “For Design Doha, we have adopted a museumbased curatorial model, dedicated to showcasing designers from across the Arab world. The energy in the region is 12

extraordinary, and Doha has rapidly become a global design destination. The biennial will take its place alongside museums, stadiums, studios and infrastructure, creating a platform for the creative industries into the future.” The event will consist of a diverse programme of exhibitions, new commissions, artist collaborations, mentorship programmes, workshops, panel conversations and special events for both the public and industry leaders and practitioners. Subjects will span a wide range of artistic disciplines including urbanism, architecture, textiles, ceramics, environmental design, landscape, graphic design, woodwork, glass, crafts and more. Among these will be more than 20 activations curated by partner design studios based in the region. A site-specific commission by South Korea-based designer Choi Byung Hoon will go on permanent view at the National Museum of Qatar and a commission by Dutch designer Joris Laarman, entitled the Doha Dragon, will be installed in the Doha Design District. Juried prizes will provide monetary awards, mentorship opportunities with international design experts and market exposure. Design Doha will also feature a series of illuminating conversations with global leaders of design and the creative industries. ✤

Visit Qatar has announced the return of ‘Shop Qatar’, the country’s largest shopping festival taking place until January 27. Being held under the theme ‘Your Shopping Playground’, the near month-long event has the participation of 13 malls and shopping districts from across the country, offering a variety of activations, raffle draws, cash prizes, competitions, sales and entertainment suited to visitors of all ages. The participating malls include – Place Vendôme, Doha Festival City, Mall of Qatar, Hyatt Plaza, City Center Mall, Landmark Mall, Tawar Mall, Al Hazm Mall, Msheireb Galleria, Gulf Mall, Al Khor Mall, Lagoona Mall, and UDC, The Pearl-Qatar. In a show of appreciation, Qatar Tourism will recognise malls and their team members in a curated ‘Mall & Retail Awards’ ceremony that will also take place on the final day. will host various festivities and entertainment while extending notable discounts and bringing to residents thrilling raffle draws and prizes. Raffle prizes include four luxury cars, exciting giveaways distributed by hosts during interactive contests and cash prizes of varying amounts. PLEDGE VEGAN FOR VEGANUARY! As the New Year rolls around, everyone’s humming the ‘new year, new you’ tune. For those of you who want to challenge yourself, why not give Veganuary a go? This feature has you covered, with everything from the basics of what it means to be a vegan, to the health benefits and where best to satisfy your vegan appetites.

WHAT IS VEGANUARY? Veganuary is an annual movement that has gained momentum and marked the start of the calendar year for many a healthconscious foodie over the past decade. Launched in 2014, Veganuary (a portmanteau of ‘vegan’ and ‘January’) is an initiative by a UK-based nonprofit that encourages people to embrace a vegan lifestyle throughout the month of January. But what does it really mean to be vegan? The essence of Veganuary involves steering clear of all animal-derived products for the month. It's a challenge that invites participants to explore a meat-free, dairy-free and cruelty-free diet, excluding not only meats but also fish, poultry, dairy, eggs and even honey. The campaign serves as a platform to promote and educate about veganism. According to the official website, Veganuary’s popularity has been remarkable and in 2023 it broke all previous records, with 706,965 people officially signing up from nearly every country in the world.

VEGANISM IN ESSENCE Beyond a month-long commitment, veganism embodies a holistic philosophy that seeks to minimise animal exploitation and cruelty in all spheres of life. It goes beyond dietary choices, extending to clothing, cosmetics and other products derived wholly or partly from animals. Veganism advocates for ethical alternatives that benefit not only animals but also human health and the environment. The underlying motivations behind embracing a vegan lifestyle vary from person to person, be it ethical considerations, environmental consciousness or personal health goals. 20

WHY IS IT GAINING POPULARITY? Veganism's become the talk of the town lately, and it's not just a passing fad. Google search trends reveal heightened interest in vegan-related topics, with countries like the UK, Australia and the US leading the search queries. Also, as per online data platform, Statista, the global vegan food market surged to nearly USD16 billion in 2021, a figure expected to surpass USD24 billion by 2026, indicating a growing demand for plant-based alternatives. Greater awareness regarding the treatment of animals within the food industry has prompted many to shift toward a vegan diet. Endorsements by celebrities and influencers have also normalised veganism, making it more acceptable in mainstream culture. Accessibility to plant-based alternatives in stores and restaurants has further encouraged the adoption of vegan diets.

HEALTH BENEFITS Is veganism really healthy? That’s a question that needs careful input from a qualified expert. So, we caught up with Danah Quintana, a clinical dietitian, to discuss vegetarian and vegan diets. “An appropriately planned vegetarian/vegan diet can be healthy, nutritionally adequate and provide health benefits in the treatment and prevention of certain diseases, such as ischemic heart disease, type 2 diabetes, hypertension, certain types of cancer and even obesity,” she said. According to Danah, the high intake of nutrient-rich foods like vegetables, fruits, whole grains, legumes, soy products, nuts and seeds that are packed with fibre and phytonutrients and the low intake of saturated fats, can help lower cholesterol levels and improve blood sugar control. This can contribute to the reduction and risk of chronic diseases. On who should consider veganism, she says that a wellstructured vegetarian/vegan diet can be suitable for all stages of life, from pregnancy and infancy to older adulthood and even for athletes. She emphasises that it’s important to ensure one eats a wide variety of fruits, vegetables, seeds and whole grains. It's also vital to swap unhealthy fats with healthier alternatives and to maintain portion control. Even with nutritious, low-fat, plantbased foods, consuming excess calories can lead to weight gain. Thus, she recommends keeping an eye on food labels and incorporating regular physical activity into your routine.

ENVIRONMENTAL IMPACT Apart from the significant health benefits, a vegan lifestyle also positively impacts our environment. As shown in research 22

published by Nature Food, opting for a vegan diet can substantially reduce greenhouse gas (GHG) emissions, water pollution and land use by as much as 75%, compared to diets high in meat consumption. It also reduces the destruction of wildlife by 66%. Moreover, according to the Vegan Society, plant-based foods require significantly less water compared to animal products and can reduce water use by 54%, which means that adopting a plant-based diet is an effective way of conserving water resources – a win-win, we say! Another important point is that cattle grazing generates substantial amounts of methane and carbon dioxide – potent GHGs that contribute to climate change. Therefore, by choosing a vegan lifestyle, we can help reduce the release of these harmful gases and keep both the cows and Mother Earth happy.

VEGANISM IN QATAR Over the past few years, veganism has been flourishing in Qatar. From an influx of plant-based brands in the supermarkets to vegan menus entering the restaurant arena, the local food scene has had a tremendous facelift when it to comes to vegan choices. Numerous restaurants and five-star hotels now either serve plant-based options or offer full vegan menus. We spoke with various local brands and long-term vegans to get their views on plant-based lifestyles and their experience of veganism in Qatar.

Ghanim Al Sulaiti

THE VEGANPRENEUR Ghanim Al Sulaiti is the man behind Doha’s original plant-based brand, Evergreen Organics. How and why did you decide to adopt a vegan lifestyle and was the transition difficult? I started my journey back in 2013 when I was living in the US and I was watching Good Morning America. They were hosting a very famous nutritionist called Kimberly Snyder to promote her book The Beauty Detox. I was interested in what she was talking about, how food changed the way she feels and how food can impact your energy. I picked up the book and when I started reading it, I realised that I needed to start incorporating more fruits, vegetables, nuts and seeds into my diet. This had 24

a tremendous impact on my health, making me feel energetic, lighter and nourished. This is kind of how my journey to veganism started – from a book that made me start thinking about the power of food. Of course, the transition wasn't overnight. I took it step by step; it was literally baby steps that allowed me to make the full transition and it took me almost a year to transition to a vegan lifestyle. But my intention wasn't to go vegan, it was to eat better, feel better and I think because I was focused on that, I became consistent. I'm still vegan today, 10 years later.

Please tell us a bit about Evergreen Organics - how it started and how it's going. After being vegan for a few years, I realised that we had zero options here in Doha. It was difficult for me to go out and eat lunches and dinners with friends and family, being in a restaurant was a complete challenge and hassle. So, I started travelling the world, exploring societies and communities living this lifestyle. I visited vegan restaurants around the world, just to understand the movement of veganism, how vegan restaurants were operating and the options that are out there. Every time I came back to Qatar I could see a huge gap in what was offered and what was available. I decided to create a space that could inspire people to live a lifestyle that is healthier, based on plant-based food. The Evergreen idea became reality when we tried to come up with a concept that could change the way people see vegetables and how they perceive a plant-based diet. From day one Evergreen was a hit and became a favourite. Before long, we realised that the demand was growing and people wanted more options for healthier food. That’s what allowed us to expand from launching a meal plan service, to creating a subsidiary called Green and Go, that is based on grab and go, at 26

the metro stations, to opening two branches of Evergreen, one at Hamad International Airport, the first vegan restaurant in an international hub, and opening one at The Gate Mall. Aside from your cafes, you are involved in other sustainable initiatives and education. How do you decide what to pursue? My mission from the start was to educate society and raise awareness bringing attention to the connection between the climate and our food and how our choices can have a huge impact on the environment playing a big part in sustainability. So, I've always been very passionate about creating options and solutions in different formats. That's why I’ve created businesses like Papercut, our packaging factory, Botany, our skincare brand, and our Good People water company that tries to eliminate plastic bottles. I also launched Enbat which is a consultancy that focuses on helping other businesses become more green and more sustainable. My choices come from a place of need, a place of commitment to help Qatar to become the leader, not just in green initiatives but also in sustainability. I believe Qatar has the potential and there's a lot of work that has been done to set the foundation for a more sustainable future.

THE LOCALS Thomene Dilley – former proprietor of a vegan food delivery business Fresh Doha, explains her decision to go fully plant-based. I was vegetarian from the age of 12, I’m 46 now, and I went plant-based about seven years ago. I took the decision, not just for health reasons, I watched a documentary about the dairy industry and it absolutely freaked me out. So, I decided to just give up dairy. Seafood was the hardest for me. I’ve had my weak times but then you focus on why you stopped. For me, animals is not even a discussion. I wouldn’t want to eat a dog, so therefore I’m not going to eat a cow. It’s a very personal thing. I tend to not be crazy wild about meat substitutes, for me it’s mostly fresh veggies – steamed, grilled, whatever. I love adding lentils and chickpeas to my meals and I love soup. There is never a bad day for soup, especially my homemade soup. I started my plant-based food delivery service seven years ago. There was a high demand for it because people felt that, living this lifestyle here, we’re so much more active in our home countries. As expats you come here and it’s much more sedentary and people just pick up weight more quickly and the American fast-food industry boomed here, I think a couple of years ago. You know, it’s quick and convenient. People aren’t here for the scenery, they’re here to work. They generally work long hours and through that they realise that, if there’s something they can control, it is their diet. There was a huge demand for it, there still is. There’s a lot more competition now, which is fantastic. People are becoming more aware of veganism and it’s becoming more popular and people are realising that it’s not some fad diet, it’s a sustainable way of eating. The health benefits are phenomenal, all the documentaries, such as What the Health, show it. It’s based on science and you can’t argue with science!

Nosh Cravings proves that vegan food is definitely not all about salads – in fact, their menu looks drool inducingly sinful. It’s owned by Layla Al-Dorani and managed by Gabe Glennon who says: “Nosh was created to give Qatar vegan food that anybody can eat, vegan or non-vegan. Shawarmas, burgers, pizzas, kofta and milkshakes which are all dishes everyone can relate too. [We wanted] To elevate and raise awareness that the world of plant-based food is expanding greatly." Asked about his favourite place to eat vegan food in Qatar, he said: “The favourite place to eat is probably at home, we try new vegan dishes weekly. It’s the best to invite friends over and have them enjoy a dish that delights and surprises them because you would have no idea it’s completely plant-based.”

175g self-raising flour 150g light brown sugar 52g cocoa powder 105g bag of ‘Free From Fellows Mini Pink & White Vegan Mallows’ 350g dark chocolate (50g chopped into smaller chunks and 50g for drizzling on top) 100ml vegetable oil 200ml oat milk 1 tsp almond extract

For the Pasta sauce 1 1/2 cups water 1 1/2 cups raw cashews 1/4 cup nutritional yeast 1 1/2 tsp salt 3 tbs lemon juice 1 tsp Dijon mustard 1 clove garlic 1/4 tsp cayenne pepper Pinch of turmeric (for colour)

METHOD ● Heat your oven to about 170C. ● Line a 27cm x 18cm baking tray with baking paper. ● Melt 250g of dark chocolate in a saucepan, continually whisking

so it doesn’t burn.

Keep an eye on them, if your knife or cake tester comes out almost clean take them out of the oven and leave on a baking rack to cool down. ● Once the brownies have cooled, melt 50g of dark chocolate and drizzle across the top of the brownies and sprinkle with mini mallows. Once set, cut your brownies into good-sized squares.

in automotive focus. The Audi e-Tron series is a range of electric and hybrid vehicles developed by the company over the last 15 years. Unveiling their first e-Tron concept vehicle at the 2009 International Motor Show in Germany, they only released a plug-in hybrid model, the A3 Sportback e-Tron, in 2014. It was in 2019 that they introduced the first fully-electric version. Recently, FACT had the chance to test drive the latest generation (2024) Audi e-Tron GT Quattro, compliments of the team at Audi Qatar.

the famous four rings – a promise to all would-be buyers of the exceptional quality of this vehicle. We collectively agreed that the muscular fender flares help to endow the Audi with an athletic stance, as do the fivesegment ‘Aero’ style wheels with platinum grey finish and our model’s 21-inch tyres. At the back end, an animated light strip runs across the car’s entire width, framed at its outer edges by individual V-shaped LED segments within the lighting units. We were told that this impressive double reversing light and indicator function is a first for the brand. Overall, we found the sculptural design of the exterior to epitomise both power and performance, while combining the sportiness of a high-performance vehicle with the everyday usability of a four-door family car.

With a wide and flat body sitting on a long wheelbase, our first impression of the 2024 Audi e-Tron was that it has the proportions of a Gran Turismo. Wherever our eyes rested on the e-Tron, we appreciated its aerodynamic design. From the intelligent air inlets at the front to the vented wheel arches at the sides, to the striking rear diffuser, this car has been configured to slice effortlessly through the air. Just looking at this modish coupé made us itch to get out on the roads. From head-on, the LED headlights with dynamic turn signal sit stylishly at the front of the indented bonnet, drawing the eye to

As we entered the vehicle, we were taken by the immaculate composition of the cockpit and overall cabin area, along with the abundance of natural light provided by the panoramic glass sunroof. The sportiness exuded by the car’s exterior continued inside, albeit combined with a sense of exclusivity and ultimate comfort. We were impressed by the comfy yet supportive nature of the 14-way power-adjustable front sport seats, with integrated head restraints and shaped seat side bolsters – providing excellent lateral support for sporty driving. Yet another superbly designed element was the flat-bottomed, multi-functional Plus steering wheel, featuring shift paddles and electromechanical power-steering. The wheel felt perfect in hand and further urged us to get the car’s wheels spinning on the tarmac. Adding to the day-to-day practicality of the vehicle are the two luggage compartments that provide 85 litres of storage at the front and 405 litres at the back – a capacity considerably increased with the rear seating folded flat.

High-end Tech & Infotainment Audi have long been amongst the front runners for in-car tech, a fact that is showcased in the new e-Tron GT. The visually stimulating infotainment system housed in the new e-Tron may not be the most touch-orientated ever presented in an Audi model; however, it does contain an abundance of indemand content and assists with navigation and communication, providing a wide range of important performance information. We accessed this user-friendly system through the 12.3-inch digital cluster and a 10.1-inch central touchscreen, which we operated through steering-wheel-mounted controls and via voice-recognition software. Our additional must-mention tech features include the effective three-zone climate control system, the subscription-based wi-fi hotspot, the optional wireless charging and the superb standard Audi sound system.

As we applied pressure to the right foot pedal, we were instantly pressed hard against our seating, immediately grateful for the support provided. With ear-to-ear smiles delivered in part by the exhilarating experience and in part by the g-forces, we surged from 0-100km/h in a mere 3.9 seconds! Fortunately, the firstclass braking system and overall sublime handling of the car always kept us in complete control of the driving experience. Although electronic vehicles are generally known as quiet rides, Audi have composed a unique soundtrack for the e-Tron GT that we found both powerful and progressive. These sounds emanate from speakers integrated within the vehicle’s architecture and change according to the driving behaviour – another automotive first from this trailblazing brand. Audi have also included a full suite of state-of-the-art driver assistance and safety features to ensure the well-being of both driver and passengers.

Impressive Range and Easy Charging The new e-Tron GT Quattro has a range of up to 488km when fully charged, thanks to its battery which has a net capacity of 93kWh – a range similar to a full tank on many fuel-powered vehicles. Recharging this GT isn’t a hassle, with a typical charge of 5% to 80% taking an average of 22.5 minutes on a high-powered charging (HPC) column. If in a hurry, a mere five-minute charge will deliver a 100km range. ✤

Surprising Power & Performance Despite the fact that electronic cars have often proven themselves as capable as their fuel-powered counterparts in terms of onroad or on-track performance, we were still pleasantly surprised when putting the new e-Tron GT through its paces. This latest model from Audi packs a pair of potent electric motors that work together to create an electronic variant of the brand’s Quattro all-wheel-drive system. This not only provides exceptional on-road handling – especially when combined with the adaptive three-chamber air suspension and an electronic differential lock on the rear axle – but also delivers a whole lot of power. The new e-Tron GT features exhilarating launch control and

CUSTOMISED LUXURY VEHICLES Genesis announced its vision for the region with its personalisation and performance projects at the stunning Distinctly Yours event.

Demonstrating the brand’s strong commitment to delivering a hyper-personalised and luxury experience, under the creative vision of COO Luc Donckerwolke, two ‘One of One’ cars marked the first public showcase of Genesis’ bespoke programme. Three performance-based projects were also featured: the GV80 Coupe Concept, G80 Performance and X Gran Berlinetta Concept. The One of One name originates from the art scene, in which pieces and collectibles are numbered to signify single, unique editions. Genesis applies the same concept, making each One of One car an original piece as well as offering hyper-personalised service beyond the vehicle. The first reveal was the brand’s initial One of One model, designed to demonstrate the programme’s scope. A G90 long wheelbase with a two-tone exterior body in black and white, the car comes in a pearlescent paint finish that provides a unique sheen. Meanwhile, its deep black paint coating features red metallic flakes to subtly match the red hue of the interior under sunlight. The G90’s numerous interior customisations, such as analog watches built into the rear seats and a cooler holding a crystal carafe and glasses, were made based on both design and function to set it apart from the standard Genesis lineup. The second car revealed was the GV80 Twilight Special Edition by Genesis One of One, the first special edition introduced by the bespoke programme. Drawing inspiration from the hues and textures of Middle Eastern deserts, the term ‘Twilight’ symbolises the convergence of two lights – as the sun sets and the moon rises – similar to the meeting of two cultures, the Middle East and Korea. 40

The GV80 Twilight Special Edition by Genesis One of One was created exclusively for the Middle East region and will be limited to 20 cars. Donckerwolke then switched gears to the three performancebased projects – all marked with ‘Designed by Genesis’ to signify the brand’s pride in introducing its high-performance vision. At the launch of the lifestyle-oriented GV80 Coupe Concept in April Donckerwolke promised to “inject more adrenaline and fun into the brand”. Referencing this promise, he presented the G80 Performance for the first time, describing it as “the thoroughbred of the G80 family” with everything from the design to the aerodynamics and suspension modified to enhance the athletic component. The G80 Performance will be a limited series of up to 20 and will be available in the Middle East with various options for personalisation. The final reveal of the evening was the X Gran Berlinetta Concept which was created as part of Polyphony Digital’s Vision Gran Turismo series and will be available to race in the game starting this month. On the unveiling of the three cars, Donckerwolke stated: “We wanted to showcase our commitment to delivering a driving experience that is both emotionally charged and dynamically vibrant. Please tell us a bit about VCS, what it does, and where our readers may have seen your operations. VCS is a boutique audio-visual (AV) company that tailors hi-tech AV solutions for our clients to achieve memorable experiences by assisting them to bring their ideas to life. We have worked alongside the biggest names that Qatar has welcomed, including Hublot Private Villa in 2022, Meta's very own launch for businesses in the Middle East, and we supplied backline and technical support for stars such as John Legend and Mariah Carey. How did you become involved in the events field? Well, I was a musician travelling in the Middle East when I made connections to a businessman who had experience in the AV industry. Through this I gained exposure and I was lucky enough to join an industry that I love. You’ve worked with big-name artists, such as The Scorpions, Robbie Williams and Alicia Keys. You must have some great stories to tell. Is there one particular memory you can share with our readers? As a young music enthusiast inspired by the Scorpions’ electrifying performances, I aspired to work in the music industry. Through dedication and hard work, I eventually got an opportunity to work alongside what to me is the best band. My journey involved late nights coordinating stage setups, ensuring sound perfection and witnessing the band’s magic unfold night after night.

As I stood backstage, watching them perform to a roaring crowd, I couldn’t help but feel a deep connection to the music that had shaped my dreams. At that moment, surrounded by the electrifying energy of a Scorpions' concert, I knew I was living the dream I had once only imagined as a young fan. What Qatar event are you most proud of and what did it involve? The World Petroleum Congress, at the time, was such a prestigious event to be a part of. I remember having four technicians and taking on clearly more than I could execute on my own. Yet with great support and collaboration within the industry in Qatar, I was able to pull off and manage all the audio visual and production requirements with the help of close contacts. I must say the support and network we have in Doha within the industry is truly a blessing. Companies that have truly stood by me in this journey are Technical Solution for Events (TSE), Symphony Events and ES: ME. When you’re not busy with work, you’ve mentioned travel as one of your passions. What’s the best place you’ve visited so far and where would you really love to go? As a passionate salsa dancer, I’ve attended many events around the world, yet nothing has captured my attention as much as Romania and I’ve been going back every year since my first visit. Next on my to-do list are to go on safari and see the penguins in Cape Town, being exposed to so many Saffas [South Africans], they really are a proud nation and I’d like to experience it. ✤ fact magazine

What is your first kitchen memory and how did this shape your choice of career? As long as I can remember gastronomy and the passion for it have been part of my life. I grew up surrounded by family members who pursued these dreams. So, I guess there is not this one special moment in the kitchen that sparked but the everyday passion for it which I was surrounded by. You’ve described your overall cooking philosophy and style as ‘Quintessence’. What does this mean? Quintessence is mindful eating and eating in tune with nature. It is an experience that touches all senses. The essence of tradition, knowledge and cultural influences. Breaking it down to the focus of each product. On each dish there will be one product as the star. I then add flavour that enhances the main product, breaking it down to the soul/essence of each dish. This is how I would describe my overall cooking style

How are you bringing the Waldorf-Astoria New York’s rich heritage to Doha? Waldorf-Astoria New York has long been known as one of the world’s most grand hotels, where tradition meets the pulse of time. The restaurants have always been ahead of their time. One would think such a grand hotel would only serve classic traditional cuisine. However, in this they would be mistaken. The Waldorf-Astoria New York’s dining outlets have been innovative in introducing new products to the market. That is exactly what we are going to do here. What is the secret of your signature dish, Bass in the Bag, that sets it apart? Bass in the bag is a dish that I still remember from when I was small. Something I learned during my early years. It’s quite a classic cooking technique, which has kind of been forgotten throughout the culinary scene as everyone is using more modern techniques. I thought I should bring back the classic technique as it enhances the flavour of the fish, setting it in focus, as I love doing – transforming this classic dish it into a contemporary one. ✤ fact magazine

Your culinary career has been peppered with one-of-a-kind, high-end experiences such as catering at the Cannes Film Festival and feeding presidents, heads of state and other VIPs. But what first inspired you towards a life in the kitchen? My journey into the culinary world was deeply influenced by my family – my mother and grandmother. Their home-cooked meals, filled with love and warmth, greeted me each day after school. The enticing aromas that wafted through our home weren't just inviting; they sparked a deep-seated excitement and anticipation for the flavours that awaited. This sensory experience was the foundation of my inspiration. Life has a way of guiding us to unexpected paths. Initially, my ambition was to become a football player but an unforeseen injury redirected my course. It was then that a family friend, who ran a catering business and served as another source of inspiration, offered me a summer internship. Making the decision to trade leisure for learning, I immersed myself in the culinary arts. This experience ignited a passion within me, leading me to enrol in culinary school, where I graduated as the top student in my class. This path also afforded me the privilege of working alongside some of the best in the field, such as Bernard Loiseau. Under his mentorship, I had the unique opportunity to delve into the world of Michelinstarred cuisine, further shaping my skills and culinary perspective. Of all the accolades bestowed upon you, including Michelinstarred status and being named as one of the 100 best chefs

in New York, which has meant the most to you and why? The Michelin star because it’s like winning the World Cup! You spent many years working with the late renowned chef Joël Robuchon and now you are helming his namesake restaurant in Qatar. What can diners expect from you and your team? I aspire for his name and reputation to resonate with everyone who visits, crafting an unforgettable dining experience that lingers in their memories. The essence of a remarkable restaurant experience is not just in the immediate joy it brings, but in its enduring impact. Imagine dining at a place where the ambience, flavours and service are so extraordinary that, even a month later, you find yourself fondly reminiscing and sharing stories about it. That's the kind of memorable experience I aim to deliver – a lasting impression that continues to delight and inspire long after the meal has ended. Please tell us about your signature dish. How was it developed and what, in your view, makes it popular? Oeuf de Poule with Caviar is a Joël Robuchon signature dish. It’s a perfect illustration of how something as simple as an egg, in the right hands, can become an unexpected masterpiece. The dish is a mix of smoked salmon with egg yolk and cream. ituated in the historic former Ministry of Interior building, The Ned Doha is an iconic hotel featuring KAIA, an Asian-Pacific restaurant specialising in delectable cuisine from Southeast Asia and Hawaii. Stepping into this establishment is akin to embarking on a journey back in time, immersed in the captivating glamour of the 1970s. Throughout the hotel, this theme echoes, evoking an aura of cool sophistication befitting the refined patrons it attracts. As I entered KAIA, the mellow tunes of subtle jazz filled the air, lending a delightful ambience to the restaurant’s atmosphere. The space was cleverly sectioned off, affording a sense of privacy, making each seating area feel exclusive, enveloped by heavy velvet curtains that gracefully partitioned the space. The décor exudes a seamless blend of chic modernity and timeless elegance. Plush, comfortable chairs and sleek benches nestle around scalloped tables, inviting guests to indulge in a truly opulent dining experience. The soft glow of low-level lighting, cast by ornate lamps strategically placed throughout the room, bathes the space in a warm, intimate aura. The choice of colours, an exquisite blend of burnt orange and glamorous greys, accentuates the refined ambience. Patterned carpet adorns the floor, contributing to the visual allure of the venue. The perfectly contrasting tones and intricate patterns captivate the eye, ensuring a constantly stimulating visual experience. On this visit, we sampled a range of KAIA’s most popular dishes, all of which were utterly delicious, but what follows are our musttries. The first to arrive was the spectacular Crispy Crab Salad fact magazine

• CULINARY SPOTLIGHT served in a magnificent tower; it was a dish that truly struck a chord with its vibrant combination of flavours and textures. An ensemble of delightful ingredients, crisp cucumber slices provided a refreshing crunch, while a hint of spiciness added a tantalising kick to every bite. The finishing touch was the impeccably crispy noodles that encased the entire creation, imparting a satisfying crunch. Sat inside, the shredded crab, with its succulent flesh, fused seamlessly with the creamy richness of avocado. Served with it was the Miso Aubergine. The aubergine, cooked to perfection, boasted a soft, velvety flesh that effortlessly melted in the mouth. Its meaty texture was enhanced by the infusion of miso, creating a depth of flavour that was simply exquisite. The dish was elegantly decorated, a true feast for the eyes. The glossy, charred aubergine skin contrasted beautifully with the pale, creamy miso glaze. Another popular dish here is the JFC (Japanese Fried Chicken), which is, as you would expect, crunchy, succulent and moreish! KAIA’s design boasts an open kitchen, alive with the hustle and bustle of talented chefs which allowed us to watch some of our sushi being constructed. We tasted the Beef & Reef Roll, a combination of Wagyu striploin, succulent shrimp tempura and a generous dollop of smooth onion marmalade. The delicate touch of yuzu kosho mayo added a zingy burst of citrusy freshness, while the velvety teriyaki sauce lent a rich and savoury note. If you like your sushi warm, you will love this! To add to the mix, six types of Nigiri, each portioned perfectly to tuck into in one bite. The selection included tuna, salmon, mackerel, shrimp, yellowtail and seabass, plenty enough to share. A memorable dish from the evening’s selection? The Tuna Poke. Each element was meticulously crafted, ensuring a symphony of colours and textures that left me in awe. First, the Avocado Rose. Delicately formed, it stood proudly amidst the dish, a testament to the artisan skill employed. The vibrant green hues of the avocado petals contrasted beautifully with the soft, pink-hued tuna, causing my eyes to deceive me momentarily, mistaking the fish for the luscious shades of a ripe watermelon. Speaking of the tuna, its cubed form shimmered with an astonishing brightness reminiscent of a precious gemstone. As my fork gently pierced the surface, the smoothness of its texture was revealed, a velvety sensation that effortlessly melted in my mouth – the epitome of culinary indulgence and a healthy choice to boot. Moving on to some options from the Robata Grill, Peking Duck truly embodied the essence of an immersive dining experience. As I gazed upon the magnificent dish before me, I couldn’t help but marvel at its fun and interactive nature. The meticulous hours invested in the preparation were evident in the precise chopping of ingredients. Oh, the crispy skin! It crackled audibly as I took my first bite. A generous helping of hoisin sauce complemented the savoury duck with its tangy sweetness. (A side of chilli awaited, poised to add an explosive twist to the flavours.) Thin, stretchy pancakes delighted my senses as the hand-rolled construction melted in my mouth, revealing succulent, tender meat beneath. For me, this was sheer perfection – a balance between delicate and indulgent. On to the delightful sweet selection, we sampled two contrasting dessert options: The Chocolate Lava Cake and the Frozen Mochi. The first was a warm, velvety treat, with molten chocolate oozing 56

from its heart, encased within a fragile exterior. The moment the spoon pierced the surface, a river of creamy cocoa goodness cascaded into the bowl, I lapped it up, as each mouthful left me craving more. Alongside, the vibrant colours of the mochi ice cream tempted me to take a closer look. As my teeth sank into the soft exterior, a burst of refreshing flavours exploded in my mouth. The sweet, luscious ice cream harmoniously melded with the delicate chewiness of the mochi casing, creating a symphony of textures and tastes. KAIA expertly surpassed our expectations and provided an unforgettable experience that delighted all of our senses. We know for sure we will be back; there’s too much temptation not to promise a second sitting! ✤

ince the opening of Hilton Salwa Beach Resort & Villas in February 2021, staycationers and tourists alike have flocked to the family-friendly haven, perfectly situated in Qatar’s sun-kissed southwest coast. Whilst this hotspot itself is known for its theme-park thrills and bespoke villas; we arrive to immerse ourselves in a more European affair. Enter Dante Cucina Italiana, where we begin an indulgent experience that transports us to the heart of Italy. Famed for its glorious landscapes, artistic legacy and smorgasbord of cities and small villages scattered about the lush green countryside, Tuscany is also the home of culinary excellence, where simple yet delicious dishes are crafted from outstanding produce. The dining experience is nothing short of poetic, as described by the restaurant manager, Samar. Infused with Italian flair, the interior of Dante Cucina Italiana dances between contemporary chic and Middle Eastern conviviality, making communal seating the main course – because good food is best enjoyed with others. Amidst the greys, metals and tall ceilings, a wall mural of a Tuscan village adds a touch of tradition and warmth to the space. With the soft embrace of subdued lighting, the atmosphere becomes a comforting backdrop for the sharing of tasty and filling food. After meeting newly appointed Chef Marco, we quickly learn what exactly makes Tuscan cuisine so light on the palate, yet rich and moreish at the same time: classic ingredients. In fact, the kitchen itself is unique as it takes centre stage in the restaurant where customers can see the chefs at work stirring, whipping, sautéeing and more. On this occasion, Chef Marco offers to surprise us with his own signature main courses (yes please!) but leaves the choosing of the appetisers to us. It is worth noting that the main course dishes we try are not yet available on the menu but can be requested – a decision you will not regret. To commence our culinary journey, the mixologist whips us up a delicious beverage. The Royal Refresher is a sumptuous cleanser for the palate, infused with pineapple, passion fruit and a crisp slice of cucumber, which sets the tone for an evening filled with surprises. Now, onto those appetisers. Lovers of crispy calamari and vegetable tempura, the Frittura Di Pesce & Dell'Orto catches our eyes immediately and Samar (who continues to look after us all evening) suggests we complement the savoury experience with a Rocket & Burrata Salad. As expected, the calamari boasts a golden, crunchy batter, giving way to thick rings of tender and flavourful squid. The drenching of charred lemon adds a zesty twist, while a dip in the sharp, zingy tartar sauce awakens the succulence of the fish. Looking back, devouring every piece of burrata and calamari wasn’t quite the best idea, but it was too hard to say no! Crafted carefully (and in full view) by Chef Marco and his team, for mains, we are served a zucchini pizza layered with smoked cheese and topped off with succulent tomato halves. Stringy and oozy, the zucchini sauce and blend of mozzarella and parmesan melts in the mouth, leaving us wanting more. And by more, we mean precisely four extra slices! We find ourselves returning to this Italian classic throughout the evening, nibbling away at the crowns of tomatoes or the crisp slices of zucchini. fact magazine

• DINING DELIGHT A new favourite emerges as the next dish graces the table: the pumpkin risotto, a perfect choice for the winter season in the desert. The dish presents a balanced medley of earthy notes, heightened by the aromatic infusion of truffle oil, which adds a garlicky yet fruity flavour. The velvety smoothness of each mouthful is broken up by the sudden and satisfying crunch of hazelnuts that have been sprinkled on top. I have eaten many risottos, but none truly as satisfying or creamy as this one. Within mere minutes, the ceramic plate of starchy deliciousness is polished off and we find ourselves still thinking about it days later. I am introduced to passatelli for the first time at Dante Cucina Italiana. Whilst passatelli is not made with flour, it is still classified as a type of pasta. Soft breadcrumbs, grated parmigiano cheese and eggs come together as part of an ancient tradition that is rooted in rural low-income areas. In this instance, our dish is accompanied with mushrooms and small chunks of wellseasoned and succulent sausage, adding a saltiness to the bready texture. Chef Marco is keen to share that a bite with all the ingredients is needed to get a true flavour of the classic village dish. And he is right. When merged together, the flavours complement each other beautifully. Having consumed many breads and grains throughout the evening, we are pleased to learn that the final main course is

a simple yet delicious staple, meatballs and mashed potato. Served in a ceramic bowl, creamy mashed potato (not a lump in a sight) rests under three perfectly sized tomatoey meatballs, cooked just right. The meat is tender and tasty, while the spicy sauce adds to the flavours of the buttery and pillowy soft mash. No surprises here, again the dish is cleaned up despite our trousers bursting at the seams by this point. Of course, a visit to an Italian restaurant isn’t complete without dessert. Tiramisu is a classic choice, which Dante Cucina Italiana does absolutely perfectly. The creamy mascarpone is slightly sweetened, offsetting the nutty flavours of the coffee-laced sponge. In true keeping with the earlier offerings, each mouthful is intense and rich in flavour yet somehow leaves us craving more. True to its name and history, Dante Cucina Italiana not only captures the essence of historical gastronomy but also presents it in a modern, savoury symphony that pays homage to the roots of Italian cuisine. It’s no wonder that this restaurant remains a firm favourite amongst the many visitors to Hilton Salwa. ✤

himmering like a diamond on the ground floor of Banyan Tree Doha, you will find the lavishly beautiful Jardin Restaurant. This Mediterranean gem is situated in a breathtaking conservatory in the heart of Mushaireb. My dining partner and I made our way towards the entrance and as we were warmly welcomed by Ye Mann Aung, their star waiter, we were in awe of the magnificence of the natural light cascading through the glass panels over the plants, as if we had stepped into a magical world. The décor is flawless, inspired by the Mediterranean with blues and crisp white textures, elegantly furnished with natural elements. Once we were seated on the spacious terrace, Rupesh, the restaurant manager, came to introduce himself and enthusiastically told us that their head chef would be preparing us some selected meals from both menus. The indoor menu has a strong emphasis on prime beef such as Wagyu ribeye steak, prime Black Angus cuts and you can even order a kilogram of Tomahawk Wagyu. There is also a sumptuous Russet potato selection, from creamy Gremolata to truffle-infused mash. The outdoor offering focuses more on Arabic fare with delectable hot and cold appetisers, pastries, mixed grills, lamb chops and shish tawouk. Our Starter Platter arrived; it was out-of-this-world. We had a selection of six mouth-watering dips served with their fluffy flatbreads that are lovingly prepared each day by the chef. The muhammara was on point. You could taste the roasted red pepper and it gave it a delectable smoky flavour with a delightful slight crunch from walnuts. The hummus was smooth and creamy, with delicate citrus flavour leaning more towards the Mediterranean side, without cumin which made my heart happy! The showstopper was the fattoush salad, served inside a round fried pita bread. Our waiter cracked the bread until the pieces combined with the salad. A drizzle of dressing, et voila! A masterpiece. The dough for the zaatar manakish was thin and crispy and the taste of thyme, coriander and sumac combined with toasted sesame was stunning. Our mocktails arrived and they were fresh and citrusy. All Jardin’s mocktails are named after landmarks in the Mediterranean region and each has ingredients inspired by their location. We indulged in La Promenade des Anglais and I felt I was somewhere on the French Riviera, sipping on liquid from the gods. Lychee, peach, fresh lime and soda brought this together sublimely and it quenched my thirst and my soul. The large ice balls are made in-house and the drinks looked gorgeous topped with a flower in each glass. Our main dishes arrived, and we had the Wagyu tenderloin with mushroom sauce and the classic mashed potato and fries. The beef was seared to medium perfection, deliciously pale pink on the inside. The mash was creamy and buttery and the mushroom sauce boasted a subtle hint of thyme. The fries were hand cut and wonderfully crispy on the outside. We also opted for the grilled hammour and vermicelli rice. The fish was grilled beautifully. Moist on the inside with lemon and garlic coming through splendidly. All our main meals were served with sumptuous grilled vegetables on wooden boards, and you also have the option to choose a steak knife from their selection. For dessert we decided on the Chocolate Fondant, Oriental IceCream Sandwich and the Blue Eye, their signature dessert. The fact magazine

Chocolate Fondant was phenomenal. Soft with the centre filled with a caramel and chocolate ganache. It was served with vanilla bean ice-cream topped with a dash of sugar powder. The ice-cream was not too sweet, and it complemented the chocolatey goodness of the dessert. While I looked away for a few seconds, my dining partner finished it after I had only one bite. I can’t say I blame him! The Oriental Ice-Cream Sandwich came in three flavours. Almond, pistachio and chocolate. Each topped with a perfectly thin layer of puff pastry. Tones of Cardamom and rose reminded me of the sweets sold at the souq. And the Blue Eye was fresh and delicate. This Yuzu blueberry cake resembles the blue eye, known to some as the ‘evil eye’, thought to represent calmness and serenity. It was a piece of art. Yuzu is a Japanese citrus variety and the taste is pungent, lush and fresh. The cake is decorated on the outside with the blue eye symbol and has a delectable Yuzu mousse layer with cream while the centre is filled with blueberry. It was a perfect dessert before relaxing and reclining on the comfortable chairs with a decaf Americano from their generous coffee selection. Ye Mann Aung informed us that Jardin has a live Cuban band every Friday from 8pm to 11pm on the terrace and they also offer an afternoon tea daily. They have valet parking and wheelchair access and a hookah menu is available. Overall, our experience was flawless. The food was magnificent and the staff friendly, knowledgeable and attentive. Both restaurant and staff left us dazzled and we will definitely be going back. ✤

M

y husband and I decided on a mini getaway in the middle of the week. So, after we dropped the children to school, we packed for the day and headed to the Sheraton Grand Doha Resort & Convention Hotel. We arrived with a sense of anticipation and excitement as lately, we have been cocooned in our daily routine and surely needed a break together. While we have visited the property several times over our years in Doha, typically to experience some of the most popular restaurants around or make the most of its fantastic recreational facilities – this would be our first actual stay in a room. As always during my visits, the staff, from the valet to the reception, gave us a grand, warm welcome from the moment we reached the driveway all the way to the lobby. We headed towards the reception and even from afar, the team were already greeting us with smiles and served us Turkish coffee while we waited for our keys. We could not help but still be in awe of the grand lobby, how it has kept its grandness and heritage, true to its character all this time. The Sheraton Grand Doha was Qatar’s premier five-star international resort and convention centre built in 1982 and remains one of the country’s main landmarks in the city. Affectionately dubbed the iconic ‘Pyramid of the Gulf’, due to an outstanding architectural design that stood alone for many years as a feature of Doha’s cityscape, the project took pride of place while the rest of the city rose around it. Now, more than 40 years later, the hotel remains a firm favourite among locals and tourists alike. I cannot return often enough.

DAYCATION •

A walk through the mezzanine corridors on a lush royal red carpet led us to our room, a bright, airy and ultra spacious Deluxe Guestroom with Seaview. We are balcony fans, so we were immediately drawn towards that space which overlooked the pool and the panoramic view of the Arabian Peninsula. It’s amazing how quiet and serene the room seemed. We felt we could be anywhere. Truly, we had the sense that we had left the outside world behind the moment we stepped into the lobby.

And this was just the beginning of our little getaway. Breakfast makes or breaks my day; I simply cannot function without it. So, we decided to enjoy this most important meal first before checking out the facilities and the fitness centre. We headed to Al Hubara where a fine selection awaited. The spread was everything you could want for breakfast, from cheeses (where I fully indulged), to salads, sausages and pancakes. For our personalised eggs, we ordered omelette and Eggs Benedict. The service was warm, welcoming, not over intrusive but very attentive, even the chef himself came to our table to check on us. I went back to our room to catch up on a few tasks on my laptop, taking advantage of the workspace which I found so cosy. It was so comfortable, I even wished I could stay there a little longer! My husband is a devoted swimmer, but we had left his goggles at home, so he made a quick stop at the City Centre mall literally across the street – a great illustration of the convenience of this location.

• DAYCATION I could not miss the chance of using the fitness centre which is, in my view, one of the largest and best facilities in the country. The sprawling area holds classes both indoors and outdoors, it houses some of the best padel courts in Qatar, indoor squash and tennis courts, yoga and spinning studios with amazing views and the fitness centre with personal trainers. I work out regularly and welcomed the chance to enjoy the topof-the-line and extensive equipment. The centre boasts the most modern Technogym machines and expert trainers are on hand to offer support as well as provide you tailor-made programmes and complete body assessments, which are available from the morning until midnight. I thoroughly enjoyed the cardio step ladder with the sea views. After a rigorous yet enjoyable workout, I joined my husband at the beach area. Without a doubt, this was my favourite part or the day, as I relaxed on the comfortable sun lounger. The weather was amazing, the sound of the sea calming and with the gentle music in the background, I was completely lost in the moment. We opted for the Pool Restaurant for a late lunch once we had worked up enough appetite. It was a beautiful walk in a tranquil environment to reach there and we chose to sit on the terrace overlooking the sea and enjoy the weather. The menu is not overflowing but it has everything you could want for a light midday meal, from salads, sandwiches and burgers to mains like fish and chips, chicken skewer, striploin steak and more. Everything was enticing but, in the end, we chose Pink Sauce Pasta with Chicken and Caesar Salad with chicken, which were creatively served and palatably delicious. I could not decide, but I guess, the next thing was my real

favourite part of the day. We headed back to the pool and plunged into the oversized Jacuzzi right by the beach facing the horizon. The temperature was soothing and complemented the weather, and the pressure of the jets was simply perfect and precise. It really felt as if time had stopped and the day was paused; aimless and undefined it was an open time in which to playfully see where the winds of fate would take us for the rest of the day.

But time didn’t stop. Our visit was almost over before we realized it and we decided to stay and wait for sundown in the Jacuzzi. Soon enough, the picture-perfect sunset danced away and we were at the centre of it all. As we walked back towards our room, we had smiles on our faces and a sparkle in our eyes. We truly never imagined that a day’s break could feel like a week’s holiday. We spoiled ourselves with the bathroom and shower which could have been made for royalty with their marble fittings and Eco Fresh Camella amenities. And then it was back to the lobby for check out and a return to the real world. It was a day. But it felt like we were away longer and I cannot think of any other way to experience a mini-break that packs it all in. We left feeling rejuvenated, recharged, ready and inspired to go back to our routine. ✤

Since we’re celebrating Veganuary, with its ethos of doing no harm to the animal kingdom, we decided to look at ethical animal experiences for travellers.

rom meeting elephants to feeding tiger cubs, there are numerous ways to get up close and personal with the local wildlife pretty much anywhere you go. But, though many of them may seem to be legitimate, it’s worth remembering that anything offering you the chance to interact with what should be a wild animal will, almost certainly, go against that creature’s natural instincts. And anything that involves an animal performing in any way for public entertainment, from dancing bears to aquarium acts, definitely doesn’t fall into the ethical animal encounter bracket. In some cases, rescue and rehabilitation centres may allow limited contact but, if you like your wild animals, well, wild, then it’s best to stay away from all but the very best. Look for options such as those included here or take a trip where you simply watch from a respectful distance.

The Sheldrick Elephant Orphanage, Nairobi, Kenya As one of Africa’s oldest wildlife charities and a leading conservation organisation, the Sheldrick Wildlife Trust (SWT) embraces all measures that complement the conservation, preservation and protection of wildlife. The trust has been rescuing elephants, and a few other species, for more than 45 years and a visit to the orphanage on

the outskirts of Nairobi is a truly magical experience. Africa’s elephant population is under ever increasing pressure from both development and, more so, poaching, which means there is never any shortage of babies needing help. At the orphanage, the youngsters, who can sometimes be just a few weeks old, are looked after by a team of carers who eventually prepare them for life back in the wild. The trust has sites across Kenya, where the growing elephants undergo staged release once they are old enough (usually around three or four years), sleeping in stockades and getting used to life in the bush during the day. You can visit the orphanage but, as mentioned above, you won’t be able to touch or cuddle the baby ellies. However, you can witness them coming in from their daily bushwalks with their carers and greedily gobbling down special milk formula from their bottles. If you’re very lucky, you might even get the chance to meet some of the long-stay residents who are not candidates for release. Some while ago, we encountered a grown adult rhino who, being blind, will live out his life at the orphanage and likes nothing better than to have his head scratched. Whale Watching, The Azores Not only are the islands of The Azores an amazing place to visit – wild, beautiful, quite off the beaten track and a bit of a trek to get to. They’re also on the North Atlantic whale migratory route and the waters surrounding the islands are absolutely teeming with incredible marine life. We had been planning to feature swimming with wild dolphins through a company called Azores Adventures Futurismo (AAF) since we liked their overall ethical stance. However, when we got in touch for more information, they informed us that they’ve become concerned about the lack of reliable research into whether human contact with wild dolphins really is harmless. Hence, they’ve stopped conducting the activity. Since they’re the experts, we decided to take a look at their whale watching activities instead. Trust us, we’ve been there and whale watching off the Azores is an amazing, one-of-a-kind experience. Not only does AAF provide would-be watchers with loads of good educational and conservation information, the company conducts research and uses non-invasive spotting techniques to locate these giants of the deep. It is also World Cetacean Alliance certified and observes strict rules and protocols to do no harm on the water. And there’s an added bonus. You may also spot dolphins, sharks, manta rays and big fish species. Don’t forget it’s also possible to see dolphins, whales and dugong in our own local waters but make sure you keep your distance and give them the respect they deserve. Gorilla Trekking, Uganda, Rwanda and Democratic Republic of Congo Gorilla Trekking, visiting the mountains to see families of endangered animals, certainly raises ethical questions. In fact, the renowned primatologist Dian Fossey, whose life’s work was portrayed in the film Gorillas in the Mist, was very anti wildlife tourism arguing that these magnificent beasts, whose DNA is so close to our own, should be left to their own devices and allowed privacy. However, it cannot be denied that gorillas live in developing nations and this kind of tourism is seen as essential for generating income to protect the primates. Funds raised through permits to access the areas in which they’re found are put back into both employing rangers to combat poaching and investing in local communities providing infrastructure and jobs. Bwindi Impenetrable Forest National Park in Uganda is home to almost half of the world’s population of mountain gorillas with more than 300 living there. When it was first opened to the public in 1993 there was only one gorilla family in residence. Over the past 30 years, this has grown to 17 families. So, it could certainly be argued that wildlife tourism has been good for the primates. Access to the gorillas is strictly controlled with permits ranging from USD450 in Congo and USD700 in Uganda to USD1,500 in neighbouring Rwanda and travellers must adhere to a tough set of rules, including not visiting if they are even slightly unwell since human germs can be very harmful to our primate cousins. However, with all the above taken into account, as well as the sometimes-strenuous trek needed to reach the gorillas’

PASSION, FASCINATION AND SELF EXPRESSION We caught up with Kholoud Al Ali, alias @koodiz, to find out what makes her tick.

You’ve been described as the ‘first Qatari female fashion and lifestyle influencer’. When, how and why did you get started? My journey into the world of fashion and lifestyle influencing began quite organically and was never part of a planned career path. Since I was young, I've had a deep fascination with art and a strong desire to express myself creatively. This passion for artistic expression naturally evolved into a love for fashion, style and capturing moments of beauty in everyday life. I started sharing pictures and snippets of my lifestyle on social media, showcasing not just my personal style but also the modern side of my culture. It was my way of expressing who I was and what I aspired to be. As I continued to share my experiences and style, it resonated with many people. My platform grew, and I found myself becoming an image and an inspiration for others, especially young women in our region. It was never planned, but I embraced the opportunity to be successful in what I do, always aiming to stay authentic to my love for art and expression. Being described as the 'first Qatari female fashion and lifestyle influencer' is an honour that reflects my journey – a journey that started with a simple love for art and a desire to share a piece of myself with the world. 84

The images on your IG page are stunning. How did you learn the art of photographic presentation and how much work is involved? Thank you for appreciating my Instagram posts! It’s more of content creation and it was a mix of self-teaching and watching trends. It's not just about taking pictures, but about telling a story or creating an experience. Each post involves planning, capturing and editing to make sure it fits my brand and connects with my audience. It's a lot of work, but it's rewarding to see people enjoy and engage with my content. You’re usually pictured in traditional abaya and head cover but for some of your collaborations with international brands you debuted a gorgeous, casual look. How did the partnerships come about and why did you decide to go the non-traditional route? The collaborations with international brands were an exciting opportunity that came about through mutual appreciation of diverse fashion styles. They reached out with the idea of showcasing their collections in a way that would resonate with a broader audience, including my followers. Deciding to highlight a more casual look was a thoughtful choice. Fashion for me has always

been a platform for self-expression and creativity. It was important to me that this venture respected my values while also embracing global fashion trends. I saw it as an opportunity to bridge cultural and fashion divides, showing that style can be both respectful of tradition and modern. It was about striking a balance and demonstrating that fashion is a universal language, capable of transcending cultural boundaries. The response from my audience has been overwhelmingly positive, and I believe it's crucial to keep evolving and experimenting in fashion to foster understanding and appreciation of diverse styles. Do you have any hints or tips for people wanting to get into influencing? If you're looking to get into influencing, start by finding a topic you're passionate about. It's important to be genuine and authentic in what you share. Regularly post high-

quality content and engage actively with your audience. Keep learning and adapting to new trends and consider collaborations to expand your reach. Building a community and being consistent in your efforts are key to growing as an influencer. Do you have a secret talent or something about yourself to share that would surprise our readers and your followers? Many might find it surprising, but before delving into the world of fashion and lifestyle influencing, I was actually a gymnast. This experience taught me a lot about discipline, grace and the art of presentation – skills that have been invaluable in my current role. tro’s AW 23 women’s collection, Radical, under the direction of Marco De Vincenzo, is borrowed from the Late Latin radicalis, meaning root. And the roots of Etro are in fabric and print: tartans, cravat-inspired motifs and, of course, paisley. All of it comes back this season framed by a new sense of precision, a proclivity for sharp cuts and the rhythm of patterns. Things come together instinctively, as long billowy dresses are paired with droopy, chunky knits, and androgynous trousers and vests are mingled with silk blouses. Tailoring is tall and precise, in opulent fabrications. Necktie motifs swarm on enveloping coats with contrast prints on the inside. Denim pants peek a boo, hinting, indeed, at a radical look. Etro being a whole world, elements of home furnishing are borrowed, with blankets wrapped on light dresses. Fringes dance along the hem of chunky polos and scarves, while applique gives argyle knit a three-dimensional charm. Accessories are just as radical: the Aladdin clogs become boots, while polished Mary Janes have thick heels and a platform. Oversized laser-cut totes provide a domestic feel and the new Saturno bucket is appropriately and positively moody. For men, the creative path originates in the sense of reassurance offered by a jacquard velvet blanket, cherished by Marco as a child, the pattern of which is reproduced onto broad woollen coats and jackets. Tactility is key, with jacquard and weaving overtaking print. Pieces are put together and assembled to stimulate both sight and touch, with 3D crochet fruit growing on jumpers, Melton

However, when oil was discovered on Osage territory, they became some of the richest people in the world overnight. The plot follows the turmoil that occurs when the wealth of these Native Americans attracts nefarious outsiders who devise ways to steal the tribe’s money. They manipulate, extort and swindle as much Osage money as they can before completely giving in to their greed and resorting to murder. The improbable romance between Ernest Burkhart (DiCaprio) and Mollie Kyle (Gladstone) is highlighted as it starts off with genuine love but then devolves into unspeakable levels of betrayal – all in the name of money. Scorsese masterfully crafts this historical drama and sharply spotlights the evil and injustice operating in plain sight during this period.

Why Is It Worth Watching?

The film is based on true events centred around the Von Erich family, a dynasty of professional wrestlers from Texas, USA, that had great success in the early 1980s and were well known for popularising the ‘iron claw’ professional wrestling hold. The plot follows the trials and tribulations faced by the Von Erich brothers on their road to success inside the ring, but also highlights the string of unbearable personal misfortunes and tragedies faced by them outside of it, which came to be known as the ‘Von Erich curse’. On the one hand their mother tried to protect them by instilling a strong sense of faith in them. While on the other, a domineering father and coach with sky-high expectations and demanding standards, harshly trained them to be the toughest and strongest, so nothing could ever hurt them. The movie emphatically depicts the pressures and difficulties the brothers faced to meet those expectations, especially in an era and industry where any male vulnerability was seen as weakness. The performances and intense storyline effectively present a cautionary tale about parental influence, sibling rivalry and the various dangers of the professional wrestling business.

What Them Dogs Don’t Know They Know By G’s Us

Before and After is the 45th studio album by Canadian-American singer-songwriter Neil Young. Comprising 13 tracks, it features fresh solo acoustic takes on some of Young's lesser-known works pulled from his distinguished vault. Presented in a stripped-down but nevertheless sincere manner, a consistent hallmark of Young’s style, the album effectively presents his impassioned vocals over unfaltering guitar chords and his salient harmonica playing. The opening track I’m the Ocean, originally recorded in 1995 with Pearl Jam on Mirror Ball, is rivetingly reworked and immediately sets the mood. There’s an entrancing fragility in 78-year-old Young’s voice with all of its ageing, aching beauty spotlighted front and centre on tracks like A Dream Can Last, Birds and My Heart that’s suitably accompanied with delicate piano playing. When I Hold You In My Arms is a another favourite on the album. In a statement on release Young revealed that: “The feeling is captured, not in pieces, but as a whole piece — designed to be listened to that way. This music presentation defies shuffling, digital organisation, separation. Only for listening. That says it all.” And we wholeheartedly implore you to take his word for it.

Underground rap favourites R.A.P. Ferreira and AJ Suede unite as G’s Us to release their inaugural full-length album – What Them Dogs Don’t Know They Know. Elite with their penmanship, there isn’t any mumbling, stuttering or second guessing on this lean 27-minute project. Summoning the lost art of the rap duo, G’s Us come together to trade bars and present a celebration of lyrical dexterity that allows listeners to revel in the sheer joy of language. Complemented by Steel Tipped Dove’s immaculately brooding production, the duo make the most of abstract noir sounds with the gloomy piano and wind instrument samples that are effortlessly arranged with booming off-beat drums and menacing bass lines. The duo kick things into motion effortlessly on smooth opener Universe. Followed up with the standout Freaks featuring Blu, the lyrics blunt and hardhitting are drenched in foreboding, spacey beats with jazzy elements sprinkled throughout. The sultry drums and horns on Skin Glowing jump out while the hypnotising wordplay stays sharp as ever. Airtight, intimidating and beautifully crafted, the project showcases R.A.P. Ferreira and AJ Suede excellently complementing each other’s light and shadow.

A long time ago, probably before many but the most dedicated muso cares to remember, records came on vinyl. If you were lucky, you had a multi-record player that dropped 45 after 45 – that’s RPM for the babies in the audience. But vinyl was a bit of a pain, records got scratched and needles (yes, they were needed to play these discs of sound) wore out.

There was a huge outpouring of grief at the death of Irish singer-songwriter Shane McGowan, who went to the great bar in the sky just short of his 65th birthday. Across the world and across social media, friends, fans and fellow musicians paid tribute to the great man with renditions of his songs – some good, some not so much. One of the most popular was his twisted Christmas carol Fairytale of New

But, at this time of year, it’s always fun to take a look at what some not-so-bright tourists have been up to across the world over the past 12 months. But now, it seems, we’ve come full circle with vinyl sales in the UK at their highest since 1990. Looks like the kids are finally learning about quality sound. We just have to wait for the music to catch up.

This one was even dumb enough to tag his own name! All we can say is, if you’re travelling in 2024, make sure you behave and don’t end up on the naughty list.
