It bounces off raindrops to give us rainbows and travels at a speed equal to 7.5 circuits of the globe per second; you can photograph and paint it but never hold it in your hand; shadows only live where it exists but die in its direct glare. Light is a riddle of physics artists have been solving since man learned to use tools and even if your knowledge of prismatic refraction stops at the album cover of Pink Floyd’s Dark Side of the Moon, its uplifting qualities are essential in these dark times. Belinda Beckett finds out how artists got to grips with it.

LIGHT IN THE DARK AGES

In the beginning, artists played with fire, gold and glass. CAVE CARTOONS

Prehistoric rock artists didn’t only need firelight to see what they were doing. Clay fire pots (early oil lamps) unearthed this century reinforce the theory that our ancestors used strategic lighting to animate their bison and deer. Flames flickering over multiple images of animals had a strobing effect, creating the illusion of one single animal running, the way cartoons are made. The original Flintstones home movies!

Tutankhamen’s gold and lapis lazuli funeral mask weighs 10 kilos. Art continued to be created for the glory of God throughout the Dark Ages. Christian monks captured saintly light in their illuminated manuscripts with gold leaf which shimmered as the pages were turned, and artists festooned their frescoes with golden halos.

HEAVENLY WINDOWS

Stained glass church windows were the period’s big pictorial art form. Royal patrons lavished their crown wealth on them in the hope of buying favour in this world and avoiding hellfire in the next.

DIVINE LIGHT

Sainte-Chapelle in Paris, the royal chapel where the medieval kings of France bent the knee, is a 13th century tour de force: 15 towering arched windows depicting 1,130 biblical figures, crowned by a rose window with 87 petals. It’s not a lost art either. The stunning blue windows at Dom Bosco Sanctuary in Brasilia, made from 7,400 pieces of Murano glass, have symbolised Jesus as the ‘light of the world’ since 1960.

THE DARK ARTS

‘A painter should begin every canvas with a wash of black, because all things in nature are dark except where exposed by the light,’ wrote Leonardo da Vinci. His study of optics shone new light on the flat paintings of medieval times and art began to stand out in 3D realism as artists discovered light and shade. Chiaroscuro (Italian for light and dark) took bold contrast to the extreme and Caravaggio was its champion. He pierced his sombre backgrounds with a laser of light that seems to sever his subjects in two: half illuminated, half in the shadows. It’s a fitting metaphor for this brilliant but dark young artist who got away with murder before he died at 38. On the contrary, his work will arrest you!

ENLIGHTENED TIMES Artists saw the light from a new perspective and discovered how to paint in 3D THE WINDOW PAINTER

For Vermeer, light wasn’t only technique – it was the subject of his paintings. And he was fixated with windows. The softer light they cast was something new for artists as glazing was only just becoming affordable for ordinary households. Vermeer rose to the challenge, infusing his paintings with a pearly iridescence that became his signature style. The 17th century Dutch artist was OCD about colour tone and used expensive paints. His favourite ultramarine from powdered lapis lazuli was costlier than gold. Poisonous lead white pigment was

key to painting light until the 19th century. In medieval times it was prepared by suspending strips of lead above vinegar or urine in a sealed jar and burying it in a dung heap until a white rust formed which was ground into pigment. Today it’s a banned toxic substance.

BROAD DAYLIGHT

Art came out of the studio big style in the mid-19th century. Painting En Plein Air cast new light on the capricious colours of nature and the Impressionists went to town with their palettes in the countryside. Monet found inspiration in the changing colours of the Japanese water garden at his home outside Paris – “my true masterpiece” – created with his own green Monet’s Japanese Bridge fingers. He painted 250 versions of Water Lilies at different times of day. “There are moments when I’m appalled at the colours I’m having to use,” he said. “The light is simply terrifying.” As his later work shows, after a cataract operation he was able to see ultra violet like insects, which may have been truly terrifying!

After Edison’s light bulb moment in the late 19th century, light itself became the canvas, the paintbrush and the palette. ILLUMINATING INSTALLATIONS

Light as a tool for artistic expression began to dazzle us after a group of spaced out California hippies formed the Light and Space art movement in the 1960s. James Turrell, one of its leading lights, generates, channels and colours it and plays with its geometry in architectural installations that are ‘dull to describe but magical to experience’. His 82 walk-in Skyspace sculptures crop up in unexpected places all over the world. There’s one at the NMAC Centre for Contemporary Art in Vejer de la Frontera. “I apprehend light — I make events that shape or contain

light,” he says. Danish-Icelandic artist, Olafur Eliasson worked similar alchemy in Denmark’s second city of Aarhus where Aros Museum visitors can walk through his magical glass corridor in the sky, Your Rainbow Panorama, tinted in the colour spectrum. His waterfall cascading from midair at Versailles and his ‘green rivers’, tinted with fluorescent dye (eco-friendly and with prior permission) are all part of his fascination with light and colour.

Tribute in Lights is the world’s most recognisable installation you can only see once a year: two vertical beams shooting into the sky six blocks from New York’s Ground Zero, where the Twin Towers stood before 9/11. The collective work of New York’s Municipal Arts Society, they light up on that fateful anniversary from dusk to dawn and can be seen from 60 miles away. Despite the expanding constellation of light artists, there’s only one museum in the world dedicated to their work: the Centre for International Light Art in Unna, Germany. The former brewery’s 52-metre chimney lights up in numbers called the Fibonacci sequence – the mathematical formula for growth patterns in life forms related to the Golden Ratio, every artist’s Holy Grail.

Photography is Latin for ‘writing with light’ but Picasso’s scribbles seem basic now, compared to the grand opuses being created with portable LEDs, tripods, smart cameras and long exposures at dead of night. Light painting practitioners dress in black to appear invisible in the picture (or not, if they want to be seen) and work with torches, lamps and Jedi Knight light sabres which they flash and twirl in front of the camera to surreal effect. His scifi concepts have won him contracts with Nike, the Tokyo Motor Show, Canon and Coldplay. “I love to work with old, broken and lost places… to think my light art breathes life back into the area,” he says. “It’s a mixture of creativity, fantasy and a little bit of madness.”

It doesn’t sound like a best-seller at the moment but art created with bioluminescent bacteria could be the next big thing. American geneticist Hunter Cole is one of the pioneers of this weird art-meets science where agar dishes are ‘painted’ with a solution of glow-in-the-dark microbes, trawled from the darkest depths of the ocean, and photographed – a kind of invisible ink which vanishes in daylight. Vivid Sydney puts the city’s iconic architecture under the spotlight for three weeks during the Australian winter (May/June), though sadly not this year due to Covid-19. Amsterdam’s Light Festival is a highlight over Christmas with millions of lights strung along canals and bridges. The reflected light in the water amps up the impact. In scale and spectacle, few festivals outshine Japan’s Nabana no Sato which lights up the eponymous Botanical Gardens in Kuwana City from October to May. Fairytale scenes of cherry blossom, paddy fields and Mount Fuji are connected by tunnels of light recreated in eight million petal-shaped LEDs powered by solar energy. On a clear night their glow can be seen from space. e

If you were still questioning whether or not a visit to Croatia was worth it, check out the Veliki Slap (or ‘Big Fall’), located in the water-filled oasis that is the Plitvice Lakes National Park. This fall is over 76.2m high, but its beauty lies not so much in its length as in its breadth and intricacy. Plitvice is divided into upper and lower lake areas, which boast lakes and waterfalls of all sizes. While you are there, head to Pevalekovi Slapovi – a semi-circular crest of falls which flow over a beautifully pristine pool that is surrounded by a lush forest.

In my view, the best waterfalls are the ones you can get close to without any fear. Seljalandsfoss, with its 60m drop, is one of them; you can walk to the base or hike to the top upon a verdant hillside. IGUAZÚ FALLS, BRAZIL AND ARGENTINA

Iguazú, the world’s largest waterfall system, csovers 2.7km of land between Brazil and Argentina. Legend says that a God once wanted to marry a beautiful woman called Naipí. She was already in love with a human, Tarobá, and the young couple decided to escape. The God grew angry and ‘broke’ the river, creating the deep falls so the young couple were doomed to death. The God had a great eye for design, having created 275 falls in total. ‘Devil’s throat’ bears a gracefully curved shape with 14 falls dropping to a height of 107m. MULTNOMAH FALLS, THE UNITED STATES

I can think of few spots in the world that are quite as picture-postcard perfect as the bridge looking out to Multnomah Falls. Dropping 189 spectacular metres, it is the tallest in the Columbia River Gorge in Oregon. Fed by both rainfall and snowmelt, it reaches its maximum volume in the spring – the season in which wildflowers grace nearby trails. Hike to the bridge and bring a pair of binoculars to spot nearby wildlife. You can also catch a lovely view from the lower viewing platform, or take on the vertiginous 265m hike to the upper viewpoint. It has the world’s highest flow rate (28 million litres travel down the falls every second) and it is also one of the fastest moving falls, making it a vital hydropower source. If simply feeling the cold spray of the falls makes you feel nervous, take note – five people have taken tightrope walks over the Falls, and one of them was blindfolded!

VICTORIA FALLS, ZAMBIA AND ZIMBABWE

It is one of David Livingstone’s most amazing discoveries and it is also one of the Seven Wonders of the World. These falls are 1,708m wide and 108m high and they are the largest curtain of flowing water on the planet (they are twice as high as the Niagara Falls and 1.5 times wider). Around 75 per cent of the Falls can be seen from the Zimbabwean side, while the remaining 25 per cent can be viewed from the Zambian side. When the light of the full moon hits the Falls, they form a stunning lunar rainbow that is the stuff dream photographs are made of.

Another waterfall in Indonesia in such a small list? Why not? What makes Tukad Cepung worthy of commentary is that it is located inside a cave. Sometimes, when the sun’s rays hit the glistening water, a delicate rainbow forms, adding an ethereal feel to the already spiritually charged area. Unlike all other waterfalls in Bali, the water does not fall into a river or stream. It simply drops into its crystalline pool from a cliff, coming into view after you climb down a small set of steps. e

and became a much loved hotelier. Heading north now it was just another half hour or so on the road to Oban and our destination for two nights – the Loch Melfort Hotel. Not only is this a dogfriendly hotel but the house hound, Hector, has his picture on the wall as you enter. Check-in was done by a smiling Hungarian, one of three we were to encounter here. This hotel has it all – easy parking, good wifi, rooms with balconies affording dreamy views, two restaurants, and music if you time it right.

Many Highland hotels and pubs offer music, some of it professional, but more often than not it depends on who is around and whether the fiddle is in tune. I once had a great Saturday night at the Castlebay Hotel in Barra, where the party scene in the film Whisky Galore was filmed. We had checked with the Loch Melfort Hotel on booking and sure enough it all came to pass – 15 musicians straggling into the Bistro by the back door, some with guitars, then a banjo, a harmonica, a piper, a harpist (the harp was in situ) and a triangle

no less, and more than a few fiddlers including the hotel owner, Calum Ross. Hector stayed away. Needless to say it was a night of much foot-tapping and jollity, ably assisted by the happy Hungarians running the bar. A good day out is to drive to Oban, port for the isles such as Mull, Iona, and the Outer Hebrides. The Hebridean Princess and the Majestic Line are among the regulars here, offering cruises in these beautiful waters amid islands blossoming with purple heather. Oban harbour, fringed with seafood restaurants and a commendable dusk of the north."

Sailing to Lochranza

Whisky, particularly the heavily flavoured peaty taste of Laphroaig and Lagavulin, has long made Islay famous. Its bookshop, is worth a stroll, and hats off to Tesco for three hours of free parking. Some really good walks are close to the hotel, such as the Arduaine Gardens, there are a few Highland cattle grazing nearby, but proper boots are recommended to get to an iron-age fort and cairns believed to mark graves from the times of Viking invasions. Best of all was

the spectacular view from our balcony. The road south was a delightful drive, and we stopped at the pretty little town of Tarbet before catching a Caledonian Macbrayne ferry from Kennacraig to Islay. It’s a two-hour crossing on a modern, comfortable vessel offering hearty food including a daily curry. The 'quiet room' is recommended for siestas. first legal distilleries date from 1779, but you can be sure many a still was producing whisky long before that. At one time

there were 23 distilleries and now there are nine, but they all appear to be thriving. Another three are about to open, gin is also produced in a still called Ugly Betty, and enterprising local founders of The Islay Boys, rejoicing in the names of Mackay Smith and Donald MacKenzie, are the new owners of the Islay Ales brewery. True whisky lovers can stay in the Bowmore Distillery’s own cottages which come with a bottle of 10-year-old. This is a place where you can sleep

tight, in the heart of a village with two other distilleries a stone’s throw away, a pizza joint called Peatzeria across the road, and for those in need of redemption, Bowmore’s famous round church just up the road. It was built this way so the devil would have nowhere to hide. Golf lovers however, will have no hesitation in heading for the Machrie Hotel & Golf Links. The course here has been around for a long time but needed work, and as for the hotel the less said the better. Then a golf samaritan with a big wallet came by, hired the talented DJ Russell to redesign the course, and rebuild the hotel. What you have today is a beautiful building inside and out. It has the charm of a Scottish manor house with fine

views of the sea, and is a fine piece of work by the Campbell Gray company which has an eclectic range of hotels in Europe and the Middle East. My bedroom was superb, one of the best ever; I actually spent time admiring the carpet, while the restaurant and bar are places to linger. Downstairs, the well run golf shop was the road to a wonderful golfing experience. I had played the course just after it reopened with David Whyte, Scotland’s best known golf photographer, and we were deeply impressed. DJ Russell, who also designed the Archerfield course

near Edinburgh, did a superb job. Even the no-nonsense Scottish golf magazine Bunkered said the course was as good as anything on the mainland, and concluded it was enchanted with the entire project. Green fees are 120 pounds. There’s also a 'wee course' with six par3 holes, and a covered driving range. The Machrie is very close to the airport, which has nonstop flights to Glasgow and Edinburgh by Loganair. I noted a handsome Pilatus aircraft there, a Canadian maple lead discreetly painted on its tail. Apparently it belongs to the Canadian branch

Isle of Arran Coast

The airport, a U-boat hunter base during the war, has a proper runway, unlike Barra, where planes land on the beach, and is a lifeline in more ways than one. For example, when asked when newspapers were available, a visitor to Barra was told, “when the tide goes out,” which is pure Highland newspaper lore. When we were there former prime minister David Cameron flew in, then took the local ferry to nearby Jura.

Not a few visitors go to Jura, where George Orwell wrote his last novel, 1984. His house, Barnhill, can be rented by the week but getting there, 20 miles on a single-track road and four miles on foot, is not for the faint-hearted. However you are unlikely to be alone as deer are everywhere and golden eagles soar overhead. The Jura Hotel is a good place to stay, and here you’ll find out what to do, such as visiting the whisky distillery, and indeed the newish gin distillery run by three women. There’s also a golf course on a fine

waterfront location, but getting a game here is at the whim of the wealthy Australian owner. One local told me that island residents get on once a year, otherwise one assumes it’s for his digger pals. If it’s golf you’re after, the isle of Arran is the place to go, and that’s what we did via an easy journey back to the mainland and a 30-minute ferry ride from Claonaig to Lochranza. Getting on this versatile little boat is via a ramp over the swirling sea, but as we found out it’s a piece of cake, and the


Clyde-built vessel is one of only three ferries in the world to incorporate a low-carbon hybrid system of diesel electric and lithium ion battery power. Arran is an island like no other, easy to get to yet with a charm that comes with being surrounded by water. It has some mighty peaks including Goatfell, believed to mean goat mountain (from the Norse geita) and standing stones. As a result the seven golf courses are all pretty sporty, other than Brodick, which is a delightful holiday course. The 12-hole Shiskine course is world famous, rejoicing in holes named Crow’s Nest and the Himalayas, and features in the mellow book Preferred Lies, in which author Andrew Greig describes the view from the 10th tee at Shiskine: “I stood on the tee at the top of the course, with a 360-degree panorama across the Arran, the Sound and Kintyre peninsula, where the threequarter moon had silently risen like a blood grapefruit. The breeze had dropped to a whisper; sea and birds were hushed in the gloaming, that luminous summer dusk of the north."

We stayed at a handsome guest house in Brodick called Glenartney, run by Ross Duncan and his wife Hannah. Both Ross, born into a distinguished family of hoteliers on Arran, and Hannah gave up good positions in financial services in England to work in a business where they could have children and spend time with them, and a good job they are doing. Our room was spacious and had a fine view of Brodick Bay, the

island’s splendid castle, and Goatfell, the latter well known to Ross as he is on the mountain rescue team. Indeed he had been called out to rescue tourists the night we arrived, but next morning was in the kitchen making a very good breakfast, a handmade treat compared to many hotels’ lingering buffets, bringing to mind the observation by author Somerset Maugham that to eat well in Britain, you should have breakfast

three times a day. Unlikely, of course, that Maugham made it to Arran, in reality rich in little restaurants around the coast, while in Brodick, just a short stroll from the Glenartney, is Wooleys the baker. Step inside for the magical aroma of fresh cakes and pies, and counters with Wooleys legendary oatcakes. My tip for a summer day – hire a bike, pack a lunch from Wooleys and go explore. You’ll love it. e

In 2005, 700 hectares of the land was cultivated following the principles of Rudolf Steiner. Today, La Dehesa Biodinámica produces 95 per cent of what is consumed on the estate – by humans and animals. Last year this included 5,488 kilos

of olives (462 litres extra virgin olive oil), 528 kilos of almonds, over 2,000 kilos of Petit Verdot and Blaufränkish grapes and 236 kilos of medicinal honey.

hour of arriving...” The kitchen is the heart of La Donaira, where guests share meals and can observe the cooks at work. Nicky will serve you breakfasts like you have never eaten before, with fresh juices, hot out of the oven bread, organic honey, jams, butter, yoghurt, and fruit, all grown and made on site. Whether you eat in the kitchen, the library or in the living room, the table is set with beautiful French linen, a rosemary sprig and antique silverware. The food at La Donaira is a chapter in itself. Both lunch and dinner include at least half a dozen dishes, arriving as succulent sculptures on the plate, topped by micro greens and edible flowers. Fabienne serves each dish with a sense of pride, giving detailed descriptions of the taste symphony we are about to partake in. This all-organic, zero-kilometre cuisine is created by their Swedish chef Fredrik and his team, and always ends with a pièce de résistance dessert, such as a sorbet from almonds grown just down the hill.

orsche’s main aim with its new Taycan (say tie-kahn) was superlative performance – something to be expected from a maker whose reputation was established around thrilling response, taut handling and a storied racing history. One look at the Taycan’s performance stats will confirm that. For starters, how about zero to 100 km/h in under 3.0-seconds and a top speed of up to 412 km/h?

The Taycan is a four-door coupé styled sports saloon and auto industry insiders believe that it’s pitched straight at the Tesla Model S, though the Porsche has even sleeker lines. Porsche denies that the Tesla was a key rival. The Tesla is more affordable and has a better range of up to 630 km, meanwhile the Taycan looks a little like its stablemate Panamera but is perhaps a little sleeker and more satisfyingly balanced.

There are three variants to choose from – 4S, Turbo and Turbo S. Horsepower differs according to choice, but even the entry-level car is very fast and powerful. The base 4S model delivers 522 or 563 horsepower according to battery; the Turbo, 670-hp and the Turbo S, a solid 750-hp. Taycan range is in the 301 to 346 km mark, dependent on the model. It’s worth mentioning that EV range diminishes when the weather is very cold.

Behind the Taycan’s remarkable performance are two electric motors that drive all four wheels. Unique to the entire EV field is a two-speed transmission operating on the rear motor. For an extra outlay, Taycan buyers can opt for an 800-volt fast charger that’s said to take the battery from five to 80 per cent charge in just over 22 minutes. Public EV charging facilities don’t always include fast charging but at least they’re becoming further widespread as motorists embrace electric vehicles more enthusiastically.


The Taycan is surprisingly roomy inside given its styling and reasonably tall adults can sit comfortably in the rear seats. The car can even be ordered with a rear centre seat, but most people would not want to sit there for too long. It’s very convenient, though, for the occasional youngster. In addition to occupant space, the Taycan offers very good luggage capacity, mostly in the rear but boosted by a small compartment up front. It’s good to see Porsche presenting an electric car with all the performance characteristics that consolidated the company’s name. Rival manufacturers with high-performance EVs at the design stage will be using the Taycan as a benchmark and not many of them will match its appeal. e

ZODIAC

INFLATABLES The practical reality of an inflatable boat means that it can be easily moved from one location to another and it can be stored away from the water when not in use. In theory, this should be the perfect gift for those for whom spontaneity is important. “Where shall we take the boat this weekend?” An inflatable boat delivers various different cruising options that can be enjoyed, be that on the sea, in lakes or on wider rivers. This real flexibility is king. WORDS MARK WILKINS

ood quality inflatable boats are not cheap but the single most valuable benefit is that they result in a huge saving on mooring fees and other costs of conventional boating. There are certain iconic products that through familiarity, usually based

on exceptional build quality, have become the noun that defines the object. Their name is often used as a shorthand description for the generic product. The examples of this phenomenon include Hoover, Durex, Sellotape and Zodiac. They are what are described as

heritage or legacy brands that deliver the user a comfortable, predictable and reliable experience based on proven performance. My wife, when a teenager, spent many happy summers on Spain’s Costa del Sol and when describing an inflatable


boat she always uses the term ‘Zodiac’. I suspect most of the inflatables she enjoyed were indeed Zodiacs and owned by those who’d equip them with a Mercury or Johnson outboard for use as a ski boat, a fun day boat or even as a tender to larger vessels. It will come as no surprise that these air filled, thermo bonded and tube-gunwaled boats can trace their origins to the airships of a French company, Zodiac Aerospace, founded in 1896. In the 1930s, Zodiac engineer, Pierre Debroutelle, developed early prototype inflatable boats for the use of the French Aéronavale, the aviation arm of the French Navy. In 1934 he invented an inflatable kayak and catamaran and in 1937 Aéronavale commissioned Zodiac to produce inflatable pontoons to carry naval ordinance. Following its development for military use, in the 1950s French Naval officer and biologist, Alain Bombard, is credited with designing the

combination of an outboard engine, a rigid floor and the boat-shaped inflatable. The resulting design was built by Zodiac. To prove his inventions endurance, Bombard sailed a version across the Atlantic in 1952 with his long-time friend and fellow naval officer, Jacques-Yves Cousteau. Its excellent performance made the Zodiac, in later years, the obvious tender of choice for Cousteau when equipping his iconic dive boat, Calypso.

The 1960s saw a growth in the market for the recreational use of small boats. Zodiac answered this demand partly by increasing their own production and also by licensing others, such as Humber in the UK, to produce their excellent boats. Further, in an early example of product placement, US viewers were exposed to Zodiac inflatables in Cousteau’s film The Undersea World of Jacques Cousteau. An inevitable spike in US sales resulted. Increasingly from the early 1970s, the modern rigid inflatable boat (RIB) was a development of the classic, almost unsinkable, inflatable boat. Its simple design was enhanced by the addition of a rigid floor and solid hull in either Glass Reinforced Plastic (GRP), steel, wood or

aluminium. The addition of a sturdy transom allowed a powerful outboard engine to be mounted to the rear, making these crafts both quick and very agile. RIBs have proven themselves to be extremely reliable and able to cope with the roughest seas. I do not wish to sound too purist but the idea of having a solid GRP hull seems to chop off at the knees the trophy of flexibility that the inflatable offers. For some, the time taken to inflate the boat that already has a solid hull seems to mitigate away from the core idea. Why not just have a solid-hulled boat, along with the attendant limitations, in the first place? RIBs became a favourite with the military and Zodiac established a separate division, Zodiac Milpro, to service this demand. The

RNLI and air-sea rescue services applications for which Zodiac RIBs have been employed are an area where the product’s durability, stability and manoeuvrability really excel. Often manned by several crew, many kite and wind surfers and those who have drifted out to sea on a beach lilo owe their lives to the heroic operations of these services and their trusty crafts. Illegal drug and tobacco smuggling gangs, intent on landing contraband while avoiding detection in a part of the world many of us know well, made RIBs their vessel of choice. The Customs authorities armed with even more militarygrade versions of the RIBs have sought, often very successfully, to thwart the smugglers ambitions.


In the summer of 2018 it was announced in Madrid, as part of Spain’s ongoing war against drug smuggling, particularly on the Costa del Sol and around Gibraltar, that the Spanish Government would take steps to ban the private use of RIBs that were longer than 8m or smaller but with a 150kW engine or greater. The ban came into effect in early 2019. You will require to own a vehicle with a reasonably large cargo space to complement the user-friendliness of your inflatable boat. You will need to accommodate the uninflated boat, an outboard engine (nothing too small), a fuel tank, folded flooring and life jackets. For the larger versions you may also need to have access to a trailer to launch your craft. Is this starting to sound less convincing as an

alternative to conventional boating? Time also needs to be allocated for the inflation of your boat. As kids we had a bright yellow but very solid Campari inflatable dinghy that was like a tender to our cabin cruiser in locations where nighttime mooring was difficult. It was small and took perhaps half an hour to inflate using a rather pedestrian and whistling foot pump. I appreciate that technology has moved on and with 12 volt air pumps, a fairly large inflatable can be ready to go in a reasonably short time but it’s not a ten minute job. Given the construction of the modern inflatable with its series of stand-alone thermo-bonded air bags, designed to prevent a complete disaster if one of them fails while at sea, there is quite a lot of pumping to do.

here has for a long time been a heated debate about whether or not there is life beyond the realms of what we know, i.e. outside of our planet. While scientists calculate the mathematical probability of some kind of lifeform existing elsewhere in the universe,

given its vastness, many others claim to have actually seen UFOs, actual aliens, and even to have been abducted aboard spaceships. Add Roswell, conspiracy theories about whether or not we actually ever made it to the moon, and purported visits by aliens such

as Valiant Thor, and there is a lot of material for a lively debate and widely diverging theories on the subject. One of these takes the topic of alien life, UFOs and visitors from other worlds a step further and places it not so much in the future or even the present, but in our long and distant past. For believers in the concept of ‘ancient astronauts’, it is not only beyond doubt that aliens exist, have visited the earth and interacted with

humans, but they also believe that this contact is so old and frequent that it is woven into the very fabric of who we are and what we have achieved both today and long ago. According to these people, there are many signs that

point not to a scary future meeting with intelligent beings from outer space, but to an existing, benevolent relationship.

You see, if you’ve ever wondered how on earth the ancient Egyptians managed to build huge, complex pyramids up to 4,500

years ago, without the benefit of laser cutting, giant cranes and advanced hydraulic lifts, you’re getting close to the kind of reasoning put forward by proponents of ancient astronaut theories. As we would struggle to build the pyramids even today, how is it indeed possible that the ancient Egyptians succeeded in doing so in an age long before electricity,

advanced machinery or computers? The same puzzling mystery surrounds pyramid structures elsewhere in the world, Stonehenge, and the puzzling giant geoglyphs found in distant parts of the planet, but especially in Peru and Chile, where the uniquely dry and still conditions of the Atacama Desert have preserved 1,500 to 3,500 year-old features such as the Nazca Lines and the Atacama Giant. There is as yet no satisfactory explanation for the huge geoglyphs

depicting animals, people and what appear to be deities, which cannot be seen from the ground but only take shape from very high up. Some glimpses can be had from mountain peaks, but they only really come into view from aircraft, which begs the question: how could an ancient and modestly advanced Amerindian civilisation create these if they couldn’t see what they were making and never witnessed the end result? Placing these

giant and geometrically complex markings on the ground without having a visual reference requires a level of advanced technical know-how, which it is hard to believe the local Indians had that long ago. We know that civilisations have come and gone, like the mystical Atlantis, or Tartessus, said to be buried in the swamps of the Doñana nature reserve near Cádiz, but even so there is no explanation yet as to how our ancestors

could have built such huge-scaled, advanced structures, which appear to line up with important celestial movements and often depict famous constellations. For some, the answer is clear: they simply could not have been made by humans alone, so ergo these and other baffling creations – like the Moai, or Easter Island statues – must have been constructed with the aid of visiting intelligent extraterrestrial beings.

Why indeed have we always turned our gaze to the heavens?

THE SIGNS ARE OUT THERE… Those who follow this line of thinking also point to ancient wall carvings and paintings found in different parts of the globe that depict not only people, animals and other natural or manmade phenomena, but also what appear to be people wearing motorbike helmets. Extrapolated further, and away from outlandish military helmets, they look like the kind of headgear worn by astronauts and fighter jet pilots. It does get a little odd when you zoom into some wall carvings and even Egyptian hieroglyphs, and discover what look very much like helicopters,

aeroplanes, and…UFOs. According to ancient space travel theorists, these wall paintings and carvings, just like the unexplained marvels of an ancient past, all point to something coming from the skies. Most religions on earth have also always tended to look up to the heavens, where gods, angels and demons are said to reside. Ancient philosophers point to the fact that virtually all religions’ scriptures made reference to beings that descended to the earth from the sky. They quote passages describing them as looking like humans, but being larger, more

THE BANKER

Two African-American businessmen in the 1950s hire a white man to pose as the company CEO while they in turn pretend to be a janitor and chauffeur. The film, which is based on a true story, does an excellent job of showcasing discrimination in business at its worst. It celebrates entrepreneurship, ethical business, and having fun while making money but its core is serious and, as a whole, it has a suspenseful feel. The actors aren’t half-bad, either. Nicholas Hoult, Samuel L. Jackson, and Anthony Mackie never disappoint! i WATCH IT ON APPLETV+.

ALWAYS BE MY MAYBE

This film is a great choice for those after something romantic, light, and funny. It tells the tale of two friends (played by Randall Park and Ali Wong, who wrote the movie) who meet

It seems like Covid-19's reins on the globe are hopefully beginning to slacken (fingers crossed) and as we went to press the organisers of the Starlite Festival released a statement saying they hope to put on a revised line-up from July 30 until August 29. More information was due to be announced after our deadline date so keep an eye on the official website for any news. If given permission, there are bound to be gigs galore elsewhere so check your local weekly publications to see if anything has been arranged. All info on this page was correct when written. Thousands of lockdown concert clips have streamed since March – without doubt this scribe's favourite is the DROPKICK MURPHYS (for those who don't know them – best described as an revamped punky version of the early POGUES) who on May 29 performed live their Streaming Outta Fenway charity gig at the legendary Fenway Park baseball stadium in Boston and it has been portrayed as the 'first great rock show of the pandemic era.' All eight members of the band (including a bagpipe player) were introduced Major League style, running out oneby-one to the empty stadium to take up a baseball field position. Towards the end of the two-hour set they were joined on the giant stadium video screen by BRUCE SPRINGSTEEN who sang and strummed along from his home. Fancy a look? It's on YouTube.

All these narratives are bound together by the theme of unintended consequence – how one small change can have a tremendous unforeseen result. It is the kind of speculative fiction that makes you wish Ted Chiang were more prolific.

EXIT BY BELINDA BAUER

A gripping new crime novel from the bestselling author or Snap. 75-year-old widower Felix Pink is an Exiteer – a member of a secret voluntary organisation that witnesses, but does not assist, severely ill people commit suicide. Felix sees it as an act of kindness, to sit with the dying in the last moments of their lives, removing the evidence so insurance companies will pay out. However, everything goes horribly wrong when Felix and 23-year-old newbie Exiteer, Amanda pay a visit to 3 Black Lane. What transpires leaves Felix and Amanda in a difficult situation both morally and legally. For a story that revolves around euthanasia it is surprisingly witty. A quirky, heart-warming read.

THE BALLAD OF SONGBIRDS AND SNAKES

AIRPORT SAFETY RESTRICTIONS

The announcement in May that Spain would be reopening its doors to international tourists without the previously announced 14-day self-isolation period has made many people excited about heading to our shores again. In May, Spain already began talking about air bridges between EU nations, with Foreign Minister Arancha González Laya announcing, “In July we will gradually open Spain to international tourists, lift the quarantine, [and] ensure the highest standards of health safety. We look forward to welcoming you!” The announcement has given the tourism industry a light at the end of the tunnel, since Spain usually welcomes more than 80 million tourists, and this industry accounts for over 12 per cent of our GDP. ith Ryanair and Easyjet announcing the sale of tickets for July flights, questions regarding airport security and safety measures to be taken spring to mind. Just a few changes you might expect at airports around the world include: RESTRICTIONS IN AIRPORT ENTRY To maintain safe social distances, airports will most likely be restricting airport entry to people who are actually travelling. It will also make health testing key.

DECIDING WHO IS FIT TO FLY Airports may also conduct thermal testing, using thermal cameras to test the crowd for high temperatures. To back up these measures, some airports may require passengers to pass through a disinfection tunnel. The latter was built in China recently to fend off COVID-19. It sprays those who pass through it with a sanitising solution that takes just a few seconds to do its work. CT SCANS FOR EXTRA SAFETY Airline marketing strategy firm, SimpliFlying, predicts

that simple temperature check-ups may be backed by more sophisticated technology, including lung CT scans. Airports may also administer express blood tests to employees regularly. EFFECTIVE CLEANING MEASURES Other features that can help include ‘sole-sanitising carpets’ (to eliminate bacteria and viruses on feet) and frequent sanitation in airports. In China, over 400 subway stations were cleaned daily to curb the spread of the virus. In airports like Hong


Kong, sanitising robots regularly clean floors. Planes themselves will be sterilised by equipment like the GermFalcon, a machine which applies Ultraviolet-C to commercial aircraft, mitigating passenger risk. CONTACTLESS CHECK-INS For many travellers, one of the only stages requiring contact with other individuals is baggage check-in. Prior to COVID-19, many airports were already allowing passengers to speed up the process through digital check-ins. Some airports across the globe have biometric check-in systems that allow you to use your face as I.D., printing out a bag tag quickly and efficiently. As a back-up, some airports may also require your luggage to go through a dedicated disinfection tunnel. MORE BARRIERS In the same way that visors are being used as a physical barrier against the virus, we may be seeing more methacrylate barriers so as to create safe nooks for people to rest before

boarding their flights. Common waiting areas are also more likely to have free gel sanitiser. Throughout walkways, arrows and circles may indicate where people should walk and stand, to ensure social distancing measures are adhered to. PROOF OF IMMUNITY Although scientists are still at odds regarding the date that the COVID-19 vaccine will become available, the latter is certainly advancing in leaps and strides. In May, human trials began in Australia and by the time we go to print, we may be closer than ever to a vaccine that will put an end to the last embers of a disease that has taken the lives of over 400,000 people. Once vaccination programmes are up and running, airports may

require proof of vaccination before entry is permitted. Some airports (e.g. Vienna) are conducting blood tests on passengers to ensure they are COVID-free. These tests and passports may not be required forever, but while the virus exists or small outbreaks continue to threaten human health, airports may require us to exchange personal liberty in order to enjoy the right to travel. As of July 1, Spain will be open to all Schengen countries and the UK. As the weeks go by, borders will be opened and the vaccine will be ever closer. Perhaps only when vaccination is available for all will travel be the totally liberating activity it used to. Until then we will have to take a little precaution to enjoy the best this world has to offer. e

In a world where such practices are catching up with us, organic architecture, though not new, offers an inspiring way forward, for not only does it champion harmony between mankind and nature, but it also addresses the needs of the individual, of society and of our personal wellbeing in its very design philosophy. the desolate landscape we’re creating. Detroit, Mexico City, Sâo Paulo and Moscow, the examples are many, but you needn’t look too far to spot the concrete rot and urban decay, for it surrounds us in many cities and exists even in the most picturesque. From Monaco to Manchester, ill-advised designs or the actual lack of design, planning and consideration seem to be the norm, rather than the bashful exception, and the individual actions of many different developers add up to the often austere, artificial and not particularly human-friendly environment we have created for ourselves. We leave nature behind to live in urban centres, but with the exception of some parks, most cities are jungles of unfriendly,

unyielding materials whose ultimate decline ushers in a host of social problems. This is partly due to a scale that dwarfs the very societies they were intended to serve and the use of harsh materials, the lack of softening green spaces, and in in general terms the unforgiving density of buildings, roads and traffic that makes many urban centres and highrise suburbs around the world a bit of a hell. It is out of a reaction against this that the flight to the new suburbs of the early 20th century first took place, but these too have now become so big and sometimes monotonous that the original purpose is lost. In an age where sustainability is becoming a pressing need, we look to organic architecture for inspiration.

A BATTLE OF PHILOSOPHIES Architecture is often regarded as the science of design, but whereas the shapes given to the edifices created are central to this discipline, there are many other facets that are almost as important, especially when you regard it not just as the abstract exercise of construction in its own right, but believe that architecture has a vital social role to play in shaping our urban landscapes. If it cannot be denied that buildings, homes and urban planning in general affect individuals and societies, then it follows that a gentler, more beautiful, spacious and nature-friendly urban setting is also conducive to a happier, healthier society. Architects have been pondering these issues for centuries, and increasingly so since the right to prosperity and happiness became a thing a little over a century ago, and it is out of this that movements such as organic architecture evolved. It was just as mankind’s technological and industrial advances enabled it to bend nature to its will and create new artificial materials and densely-packed, massproduced housing, that the first

reactions against this form of soulless, automated living took root. Already at the turn of the 20th century, Art Nouveau sought inspiration in the complex, organic shapes of nature for the design of buildings, furniture, art and jewellery. The rationalist, functionalist thinkers who would dominate much of the 20th century and so far most of the 21st, saw the world through different glasses, abhorring the apparently chaotic variety of organic styles and preferring instead the imposition of rigidly simplified linear lines – minimalism. Unlike William

Morris and other members of the Arts and Crafts Movement, they eschewed the use of more natural materials such as wood, stone, ceramics and cork in favour of steel, polished stone, chrome, glass and concrete, their favourite material. From Le Corbusier and Walter Gropius to the Brutalist designers of Fascist Italy and Soviet Germany, austere functionalism was the dictate. latter, there have still been notable movements that have fought it or sought to assimilate the rational and technological thinking of ‘modern’ architecture into a human and naturefriendly philosophy. Organic architecture is perhaps the most important of all of these, and its desire to find a harmony between people, their habitat and the natural world dates back to the early 20th century but is all the more relevant today, not just in terms of the need to protect the environment, but also to keep our everexpanding urban centres liveable. Early exponents include some of the greatest names in architecture, such as Frank Lloyd Wright and Alvar Aalto, who are not exactly known as

tree-hut building hippies. Both employed the latest technologies and building techniques, were fully engaged with the modern world and designed important structures for it, but they also viewed the site, the plot of land as a sacred and finite gift that the architect, and mankind in general, has to treat with respect. Careful consideration should therefore go into the design process, and this produced long planes in the case of the Lloyd-Wright’s Prairie Houses, and a love of wood in the modern designs of Aalto. Antoni Gaudi came from

another direction, espousing the traditional crafts also seen in the Arts and Crafts movement and the weirdly organic shapes of Art Nouveau. Like the Austrian architect Hundertwasser, he took them out of the ‘real world’ and into a realm of otherworldly fairy tales, and both Barcelona and Vienna are so much the richer for it. More than them, the other organic architects have their roots in the modern design movement, but instead of interpreting it in an industrial way, they sought to include, not shut out or delete, nature. This philosophy defines

organic architecture in everything from flowing, natural forms and styles to the use of wood, natural stone, intricate brick and plasterwork, and even recycled tiles and ceramics.

Looked at in this way, architecture should be rich in diversity of materials, styles, shapes and inspiration, but while it can stand out

in its own right, organic architecture seeks not to diminish nature but to complement it as much as possible, and harness natural beauty for the wellbeing of the human occupants. This affects volumes, functionality, internal distribution, views and the use of materials, including recycled ones, but above all it depends upon a benevolent and idealistic urban planning ideology that wishes society to be the very best it can – happy, healthy and inspired by the beauty of nature. Maybe organic architecture is the answer to our present and future needs! e

THE BEES?

Bees are responsible for pollinating one sixth of all flowering plants on Planet Earth and they help produce around €529 billion in crops (35 per cent of global food production), according to EarthDay.org. However, they are declining at an alarming rate, with some regions losing up to 90 per cent of their bee populations.

Between October 2018 and April 2019, around 37.7 per cent of the managed (beekeper-owned) population was lost, which is seven per cent more than in the previous winter. As noted by the Environmental Protection Agency, the number of hives that survive the coldest months are an indicator of overall bee health. We are doing something wrong and if we don’t fix it, we will be living in a less biodiverse and infinitely poorer world; one in which many of the foods we enjoy daily become a luxury to be relished by a very small percentage of people.

WHAT PLANTS DO BEES POLLINATE?

To obtain a good idea of how important bees are, it is worth mentioning just a few items of produce that rely on pollination. The

list includes honey, fruits from trees (think apples, lemons, apricots, and peaches), berries (raspberries, strawberries, blackberries and more), avocados, almonds, onions, tea plants, beans, tomatoes, grapes, cauliflower, beetroot, the cocoa bean, sugarcane, coffee, and more. As stated by The Pollinator Partnership, “Worldwide, approximately 1,000 plants grown for food, beverages, fibres, spices, and medicines need to be pollinated in order to produce the goods on which we depend.” If bee populations dwindle, food prices will skyrocket – something that already beleaguered populations will not be able to sustain.

WHAT IS CAUSING BEES TO DIE?

Some of the biggest culprits when it comes to bee health are global warming, pesticides, and pollution. In the first decade of the new millennium, the term ‘Colony Collapse Disorder’ was coined after the drastic disappearance of bees worldwide. Loss of habitat (thanks to construction and poor management practices) are the final straw on the already-fragile proverbial camel’s back. Another big problem is the Varroa mite – a female mite that invades a honey bee brood, laying eggs on honey bee larva prior to the pupation stage, before bees cover

their cell in a protective wax covering. When the mite eggs hatch, they begin to feed on bee larvae. The bees are weakened but still able to chew their way through their protective wax layer. When this occurs, the mites leave the cell and the whole cycle begins again. The mite is somehow ‘intelligent’, only laying its eggs on larvae that will turn into drones (the bees that mate with the queen). Hive experts note that when the mite targets the larvae of the numerous group of worker bees, they commit suicide to stop the mite from reproducing. When only the drones are infected, the queen and swarm of healthy workers abandon their hive to give the colonies a fresh start, leaving the breeding drones behind.

WORKING TO REVERSE THE TREND Some countries are taking the problem of declining bee populations seriously. Others are not giving it the tremendous importance it has. For instance, the United States recently suspended data collection for its Honey Bee Colonies survey just weeks after discovering that 40 per cent of managed bee colonies in the country had been lost. However, other countries (like Slovenia) are showing how, with hard work and commitment, bee populations can actually flourish. Recently, the Slovenian Beekeepers Association reported a 57 per cent increase in beehive numbers. Slovenia was the first country to ban neonicotinoid pesticides

when the government decided to follow beekeeper’ instincts that this pesticide was responsible for bee mortality. This experiment resulted in far fewer bee deaths and paved the way for the EU-wide ban on the use of three types of neonicotinoids on field crops (not on plants in greenhouses). “Slovenia was very active, as were the French beekeepers, in bringing (the danger of neonicotinoids) to everyone’s attention,” says Jeff Petis, the president of Apimondia, the International Federation of Beekeepers’ Associations.

The European Food Safety Authority guidance on how to assess the risks of pesticides for bees played an important role in the neonicotinoid ban, but some countries failed to adopt it. The guide is being revised by an EFSA scientific working group with the aid of a stakeholder consultative group. The new guidance will most probably be adopted in 2021. In the Netherlands, beekeepers are looking for ways (including genome sequencing) to breed varroa-resistant bees. As Science magazine's Erik Stokstad reports, “Since the varroa mite jumped from Asian honey bees (Apis cerana) to the common domesticated European honey bee (A. mellifera) more than a half-century ago, researchers have discovered some bees can keep the mite in check through behaviors such as fastidious grooming and removing mite-infested larvae.” New tests are allowing lab scientists to identify the bees that carry genes for these protective behaviours. On an individual scale, we can all do

You can also build a small bee bath in your garden with clean water and pebbles, so the bees can land on your bath and have a drink. If you see a bee that looks dehydrated, feeding it a little sugar and water can give it a second kick.

ARE THERE ALTERNATIVES TO BEE POLLINATION?

Although life (and food) as we know it would be unthinkable, there are a few initiatives being taken to pollinate plants without bees. These include mechanical pollination, pollination by hand, and the new RoboBee prototype created by researchers from the National Institute of Advanced Industrial Science and Technology in Japan. This ‘bee robot’ uses a drone to pick pollen up from one plant and cross-pollinate others. It is quite genius yet still no match for bees! e

The travel sector has been through a very unexpected rollercoaster recently, but with booking levels for this summer already recovering and Spain – and the Costa del Sol – becoming the number one destination in terms of online searches and reservations, it looks to be bouncing back with gusto. Within this, however, there is a growing trend towards specialisation.

n 2012, a small travel agency was born in the heart of Marbella that would become one of the most outstanding specialists in luxury madeto-measure excursions – and the only one in Andalucía to belong to the luxury travel association, Traveller Made. time now, the industry has been diversifying into increasingly specialist sectors,” says Pepequin. “The days when tourism in this region of Spain was simply about hotels, apart-hotels and summer ‘bucket and spade’ holidays to beachside destinations are gone. Family beach holidays are perhaps still the largest individual segment of the market, but ultimately they’re now just one of many sub-sectors that include cultural, gastronomic, adventure, nature, convention, sports, and health tourism.” Besides being a popular place to come and relax and/or enjoy a lively summer scene, the Costa

FINALLY!

BACK ON THE BEACH! I couldn’t believe it when we entered Phase Three and going to the beach for a swim was ok. It finally feels like we are getting back to normal and we can all enjoy a fun summer with our family and friends. I know that teens are getting a pretty bad rap in Spain, with quite a few videos having been taken of ‘botellones’ and other parties with heaps of people huddled together and nobody wearing masks. There are safe ways to get together with others without risking our own health or that of our parents or grandparents. I thought I would share a few recent Instagrammable moments. These are the first five things I did as lockdown restrictions started easing. WORDS JOFFREE KING

HIT THE BEACH I went with my dad and one school friend. We met on the beach and kept a 2m distance from each other, without missing out on swimming, surfing, and a paella afterwards at the chiringuito. Man, I missed having lunch on the beach! The place we chose was pretty cool; it had a kind of door you had to go through that ‘sprayed’ you with a cleansing spray.

ENJOYED MY HONEY MUSTARD CHICKEN AT ORIGEN I had been waiting with bated breath for Origen to open. This place in the centre of Marbella is best known for its steaks but I am hooked on their honey mustard chicken, barbecued to perfection on the outside and juicy on the inside (the Josper oven does the trick). The whole family enjoyed a meal there, ordering chorizo, salads, and a mean melted Provolone platter we dipped pieces of freshly baked bread into. HAD A HAIRCUT I admit that I like my hair to be on fleek at all times; as soon as my hair grows to over 3mm on the sides and my toupee style starts looking like Rick Astley’s 1980s do, I start getting a little nervous. I had to make an appointment and wait for around a week, since my hairdresser was fully booked. The wait was worth it; I felt a million bucks by the time I walked out of the salon.

WENT TO THE MALL I went through a bit of a growth spurt in the past couple of months and that means that when I tried on last year’s shorts, I suddenly found myself looking like one of the boys in the Von Trapp family (yes, I do like The Sound of Music). Faced with the possibility of social isolation (owing to lack of clothing), I finally made it to La Cañada and upped my swag. I think I am officially worthy of being invited to my BFF’s upcoming pool party (only three of us are invited in

GAMING WITH MY BEST FRIEND It was awesome to be able to visit my friend and enjoy a game of GTA and other favourites together. I was planning on staying for an hour or so but we ended up playing ‘til late

Things are slowly getting back to normal and the beach is a great place to go (and is still relatively empty, though I imagine it will change this month). I am still very careful (wearing my mask when I go shopping or anywhere indoors) but the trick to enjoying this time, in my view, is opting for outdoor gatherings and small get-togethers at friends’ homes. e

accident he had at 30. “I suffered a heart attack and during recovery, it became crystal clear to me that the reason why I wanted to cook was to make people happy. This emotion has guided me throughout my career and it is always my ultimate goal. If you like to keep up on gourmet news then you undoubtedly have r ead about the Acánthum team’s laudable efforts with World Central Kitchen (WCK) – Chef José Andrés non-profit organisation. WCK has been playing a key role in helping to feed the needy during the COVID crisis. “The World Central kitchen contacted us and we were keen to be part of the project. For seven weeks, our staff worked in our kitchens, preparing a total of 26,900 meals for vulnerable members of society.” The staff

joined a select group of restaurants in Madrid, Sevilla, Cádiz, Córdoba, and Galicia, who also lent their support to Andres’ acclaimed project. Chef Elías now has his sights set on the reopening of Acánthum to the general public, as part of the easing of COVID-related-restrictions. He has taken this time to strategise, defining a new path for his team to tread. When I ask him if his restaurant has had to make any renovations to adopt recommended regulations, he answers, “Funnily enough, Acánthum always had a distance of over 2m

hen Acánthum restaurant received a Michelin star, it became the first establishment in Huelva to do so. However, such acclaim was just about the last thing on Chef Xanty Elías’ mind. He had been passionate about cooking since the age of 12, when his mother took him to Madrid to lend his uncle Claudio a helping hand. Claudio was a baker and in his warm and fragrant kitchen, little Xanty fell in love with the aromas, the technique, the chemistry behind bread baking – so much so that by the time he was 14, he was already enrolled in cooking school. Xanty honed his craft under a host of culinary wizards, including Juan María Arzak, but when he launched Acánthum, he remained true to his dream: that of creating cuisine which highlighted the plentiful produce of farmers and suppliers from Huelva. Xanty’s childhood love for food preparation was deepened by a motorbike

between tables. The restaurant has a capacity for 70 diners but we only accept 22 to enhance the sense of intimacy and privacy, in line with our diners’ preference.” The post-COVID Acánthum will look different, despite adhering to the same philosophy. Chef Elías says, “Our research indicated that diners were viewing Acánthum as the kind of restaurant you visit for a special occasion like a birthday or anniversary. We wanted to turn that idea on its head; to encourage people to visit us more often and enjoy a less formal experience. Our research also indicated that, postCOVID, people are seeking to reconnect. The ground floor of our restaurant will be dedicated to casual

dining, while the top floor will feature the tasting menu experience.” Even the menú de degustación (tasting menu) has been turned on its head. “There will be one table upstairs, which a total of eight people can book.” This means that one couple might book two seats and join other couples or small groups of diners, sharing a unique social experience. “I will be right there cooking in front of you,” says the Chef, “but I will also ask you to take on a role. I might put an apron on a couple of you or surprise you in other ways.” The idea of opening up mind, heart, and palate to new experiences sounds like a panacea after living for so long in relative isolation. ‘What type of cuisine will I

be trying out in Acánthum?’ you may ask. The answer is: creative dishes made with Huelva-produced and -sourced ingredients like prawns, choco, mojama, anchovies, and caballa. “We will also be serving ingredients like langostinos de trasmallo (King prawns that are not dragged along a net and which therefore have a superior taste and texture).” Every tasting menu is different and based on the produce sourced on the day of your booking so you will never know what to expect. One thing you can be sure of, however, is that you will have a great time and experience, once again, the inimitable joy of carefully crafted dishes in the company of people who are as passionate about food as you are.

OLDER VINTAGE T

he question: ‘Will my tinned tuna still be usable two years after the best before date?’ was probably never asked at the official medical briefings during the pandemic. However it will have shocked many to find a forgotten tin did have a limited shelf life. Similarly, that pack of dried mushrooms had spawned enough life to entertain a botanist. The arrival of the new season’s produce brought freshness, youth and vitality to shopping baskets. These same characteristics are keenly anticipated in the new white and rosé vintage now on the market. But are we really helping ourselves by ditching the old in favour of the new? With rosés, a qualified ‘yes’, but with whites we need

to adjust this default setting. With food, particularly meat or fowl, youth is not the best friend of flavour or texture – where would we be without the aged Rubia Gallega beef? White wine is similar and made me think that more guidance is needed for it: no, not units per bottle, or good with tinned sardines but ‘do not open before’. Many in the UK believe that ageing white wine means the time taken from purchase to opening! For the Friday evening bottle, this is usually 20 minutes (allow an extra 20 minutes to chill) so a UK version of ‘do not open before’ would show a clock not a year. Here’s a little help for those afraid of the unknown.


A SUITABLE GRAPE VARIETY Numerous white grapes have potential, but notables include Chardonnay, Sauvignon Blanc (yes, despite the innumerable cases of vinous infanticide) and from a Spanish perspective Albariño and Viura (Macabeo). “Sourced from our single vineyard planted in 1945, the Viura of Capellania produces wines with great concentration and maturity balanced by a high acidity. Despite being very accessible once released, usually 4 to 5 years after the harvest, it offers still a great ageing potential. A 2015 will be refreshing and fruit forward but a 2001 or 2004 for example, would still be vibrant and show great capacity of ageing,” says María Vargas, Head Winemaker My formative years in Germany involved drinking a lo t of Riesling, which bestowed a healthy respect for the

patience needed to enhance its enjoyment. Tasting notes of the new vintage Rieslings in April and May were peppered with words like needs time, green, appley, or (sometimes) bracingly acidic. Even in 1986, the 1984 vintage still showed an overabundance of acidity. This highlights a co-dependency between acidity and time: you need the former to maintain freshness while developing and the latter for it to work its magic. Old World Rieslings take 2-3 years to start showing their elegance and majesty, as does Albariño.

SKIMMING THROUGH THE SCIENCE (THE DRY BIT) Changes in a wine occur during maturation. These take place between the alcoholic fermentation and bottling and again in the bottle. Many wines undergo a malolactic fermentation, which is common for reds but less so for whites.

However, the change from the harsh, applelike malic acid to softer lactic acid makes a white wine taste creamy and enhances its life. White wine maturation usually takes place in stainless steel vats and the bottle. Sometimes barrel fermentation and maturation is used for part or all of the wine, along with the use of new and old oak. Producers have become adept at putting together a cocktail of these parts for the final release and subsequent development. There are numerous opinions but no definitive answer as to how a producer should mature a wine (unless the wine laws state otherwise).

ILLUSTRIOUS OPPOSITES Take two iconic Spanish whites: Terçer Año from Palacio de Fefiñanes and Capellania from Marques de Murrieta. The former from Galicia is made from Albariño, produced and matured in stainless steel. The latter from

Rioja is made from Viura, fermented in stainless steel and matured in French oak. They are completely different apart the use of the best quality grapes. These are earmarked for those specific wines and that is a skill of the estate. Both are brilliant and given time, multi-dimensional.

THERE’S NOTHING TO FEAR With reds we recognise that further ageing produces extra dimensions. Note the differences between Joven, Crianza or

Reserva Riojas with changes of colour, softening of tannins and development of flavours and bouquet. But with whites, consumers appear uneasy waiting for the dissipation of acidity to transform an edgy, green palate to a smooth textured one. They are equally reluctant to accept any sacrifice of a floral or fruity bouquet. And if the colour deepens from pale to gold, it’s apparently on the way out… Sauvignon Blanc (SB) probably best emphasises this double standard. Rueda and New Zealand SB are perfectly enjoyable after three years even without the nettle-like sting or freshly cut grass character of their youth. Like Rieslings, the noble Fransola from Torres (a blend of SB and Parellada) only starts to open up after that period.

TRY THIS AT HOME Buy six bottles of a quality Cava such as Gran Juve. Drink three, put three aside.
