BREANNA A t Hardin j efferson High School, BreAnno a nd Derrick never spoke. After hig h school, BreAnno 's brother, j oke and Derrick enlisted in the Marine Corps. At Jake's graduation, BreAnno found herself sitting next to Derrick's sister and dod. This was the first time the couple actually spoke to each other. Over the following months, they kept running into each other, but soon, the boys, Jake a nd Derrick, were deployed to Afghan iston. BreAnno would constantly Skype her brother because she d id n't wont him missing out on all the happenings of her senio r year, and in the Skype sessions, she'd always ma ke jokes about find ing her a "marine-friend" w ho could toke her to the Marine Boll . To her surprise, she received a text from Derrick asking her to th e Marin e Bo ll . Unfortunately, they ended up not going and stopped talking for about a month due to coming home parties, but the spark between them could not be denied ! In that time, BreAnno beco me best friends
w ith Derrick's sister Brooke, w ho is now her ma id of honor. BreAnno is sure she and Derrick wouldn't be w here they are now w ithout her. O nce BreAnno and Derrick started seriously "ta lking ," they caught themselves falling in love, but
were both hold ing bock because BreAnno was moving to California to attend acting school. They d idn't wo nt to dote due to the d istance, but less than two weeks after BreAnno left, Derrick booked a flight to visit. Soon they were exclusive.

BreAnna returned to Texas once she realized her life's dream was to be with Derrick. Derrick proposed to her in front of all her family and closest friends, and now they're getting

Vista West was perfect for a glamorous, country chic wedding. The ceremony was held outdoors under an arbor filled with fresh cut roses overlooking the scenic Texas Hill Country. Ted Wiese, a rodeo cowboy minister, perf01med the ceremony. Shea carried a picture of her sister Tarni , who passed in 2010 , in a locket on her bouquet. Following the two-ring ceremony, guests moved to an outdoor garden for cocktails. The reception was held in a bam a few steps from the ceremony site. Guests created their own cheesecake masterpieces at a cheesecake station and posed for ftm pictures at the photo booth. Shea spent months getting custom-made Corral boots for the bridesmaids and groomsmen. All were personalized with initials on pull tags. The bride's and groom's
boots said "I" on one and "DO" on the other. The biide woie the 'Sloan' gown by Maggie Sottero and her hair was in a flattering side ponytail. The couple honeymooned in Bora Bma and AustJ:alia aftei the Wianglei National Finals Rodeo. -Laurette M. Veies

Natalie and Ryan are small town people and always will be, so wearing a suit and tie just wasn't a part of their daily lives, besides Ryan never owned a tie until the wedding.

Randy Fenoli takes center stage at the Bridal Extravaganza Show to educate brides about bridal fashion, and share secrets for selecting the perfect gown. His message also elevates self-confidence. Fenoli leads brides through the gown selection process without the usual stumbling blocks associated with a good fit and flattering line. Brides can carry his message beyond the dress as they strive for success in life. He feels more education leads to fewer diseases, more cures, less wars, better understanding of the environment and humanity. As Fenoli inspires, he helps brides young and mature to feel beautiful. “Pictures (in magazines) are not realistic,” he says hoping brides take the message of empowerment beyond their wedding - 194 -
day. “Of course I hope my fans will take responsibility for their lives and feel good about themselves.” In 2013, Randy celebrated 20 years of dressing brides in bridal fashions. Randy was raised on a farm in southern Illinois and learned to sew on his mother’s sewing machine. “I made my first dress at nine years old on mom’s sewing machine,” he says. “She couldn’t sew, but I could.” This skill came easily to Randy.
It’s All About the Dress Randy became an author when he compiled some of his favorite brides with his personal tips in the book: “It’s All About the Dress.” “Of all the things I have done this is one I am absolutely so proud of. I believe every human being is beautiful. How could a higher power create something imperfect? We’re perfect. We’re really what we are supposed to be. Each one of us is different and unique. Beauty doesn’t come with a size or an age or a shape. It comes with being individual.

Fro m Coso Alborada, o ne of the villas sitting o n the ridge, you can look o ut across the na ture preserve and the coconut plantation a nd see Coso La Lo ma, two to three miles away, a nd the ocean beyond . To fully enjoy the property, you need a car; a trip to one of the fo ur completely private beaches can be a 25路minute drive. The grounds are pristine w ith lush, ma nicured foliage around the homes. 2. For the stock: Arrange the wings in a single layer on baking sheets, then top with the onions, celery, carrot, garlic and parsley. Place in the oven and bake for 45 minutes.

Remove from the oven and add the remaining stock ingredients to a large stockpot, scraping the baking sheets to ensure all flavorful bits fall into the pot, then bring to a boil, reduce heat, cover and simmer for 2 hours. Strain the liquid into a large bowl and chill. Discard the wings and veggies. Allow to cool, then refrigerate till chilled. (TIP: The chicken wing meat is delicious. Don't let it go to waste- separate it from the bones and make chicken salad.) 4. When the broth has chilled, scrape the fat off the top. 5. Make the brine: Combine all the ingredients except the chicken in a large stockpot, bring to a boil and simmer on high for 15 minutes. Strain and cool the liquid to 40째F. Once cool, place the chicken in the brine and allow to marinate in the fridge for 24- 48 hours. 6. Make the breading: Combine all the ingredients in a large bowl, then divide the mixture into 2 equal parts in separate bowls. You will coat the chicken twice, and the second coating is easier with a fresh batch of breading mix. 7. Fry the chicken: Preheat the deep fryer to 360째F. Preheat the oven to 200째F and place a wire rack on the baking sheet. Take the chicken out of the brine and drop into the flour. Coat, shake off excess breading mix and set aside for 30 minutes. Repeat with all pieces. Drop the chicken back into the breading mix and immediately into the deep fryer. Cook until golden brown. Remove from the fryer and place on a wire rack and put in the oven until ready to serve. Repeat until all the chicken is cooked. Chicken can hang out in the oven for more than an hour.

Fry the bacon until crisp in a large saute pan; remove and chop. Add the peppers, onion and garlic to the bacon grease and cook until tender. Add the okra, tomatoes and seasoning. Cover and cook over medium heat until the okra is tender, about 15 minutes. Return the bacon to the pan, adjust seasonings and serve.

1. Preheat the deep fryer to 375•F. Boil the water in a large pot and prepare the ice bath in large bowl. Scrub the potatoes and cut into desired fry size. 2. Working in batches, drop the potatoes in the water and blanch for 5 minutes, remove and immediately drop into the ice bath. Dry the chilled potatoes and drop into the fryer, cooking until they start to turn brown. Remove and set aside to cool. 3. Just before serving, drop the fries back into the fryer and cook until golden brown, drain on paper towels and season with salt; serve immediately. MAKE-AHEAD TIP: Save time on party day by blanching the fries, then deep frying until they start to brown and freezing. Before dinner, drop the frozen potatoes in the fr yer for a few minutes, until golden brown.

1. Preheat the oven to 350°F. Butter and flour a baking dish. 2. Beat the butter and sugar together until fluffy, then add the vanilla. Add the eggs one at a time, blending well after each addition. Combine the flour with the baking soda and salt. Start adding the flour mixture in small amounts, alternating with adding the buttermilk. 3. Pour the batter into the prepared baking dish. Bake for about 1l2 hours or until a toothpick inserted in the center comes out clean. Allow to cool and remove the cake from the pan. 4. Make the filling: Whip the cheeses, lemon juice and zest until creamed. Cut the pound cake in half, lengthwise, and spread the filling in the middle. Put the cake back together and back into the pan. 5. Make the sauce: Mix all the milks together and pour over the cake. Let the cake sit and soak for at least 1 hour. 6. Make the meringue: Whip the egg whites, gradually adding the sugar until stiff peaks form. Spread t he meringue on top of the pound cake and bake at 325°F until the peaks are brown . . Serve topped with fresh fruits.

When couples and their families make the rehersal dinner or bridal brunch an opportunity to serve-up dishes, loads of decisions can be added to the plate. Here are a few recipes Tom Flynn acquired from he and his wife, Laurette Veres’, culunaryschool honeymoon visit to Sonoma Valley. Duck is best if it is seasoned and rested overnight. With that in mind, I chopped this meal into two days of tasks, with
the goal of a stress-free dinner party for four. Most things can be prepared long before guests arrive and reheated. The only cooking that needs to take place near dinnertime is roasting the duck breasts, glazing parsnips and onions, which have already been cooked, and the quick second baking of soufflés. Peas and Madeira sauce can easily be reheated while the salads are served chilled. When the guest count increased to eight I added a couple ducks, an extra stock pot, and everything else times two.

4 Quarts Cold Water 2 Duck Carcasses, Cut In Pieces 2 Large, Unpeeled Carrots, Sliced 3 Celery Ribs, Sliced 6 Sprigs Parsley 3 Medium White Onions, Sliced 7 Cloves Garlic, Peeled 20 Black Peppercorns, Cracked 3 Bay Leaves

Preheat oven to 425°F. Place duck carcasses and fresh veggies on baking sheets and roast for 45 minutes. Place carcasses in stockpot, add water and bring to a boil. Reduce heat and simmer, skimming foam as it rises to the surface. Continue until foam stops appearing. Add all remaining ingredients, reduce heat and simmer for 1 hour. Strain stock through cheesecloth or a strainer into glass bowl or pitcher. Chill and remove fat (it will rise to the top and harden).
MADEIRA SAUCE
2 Tablespoons Olive Oil 2 Large Shallots, Diced 1 Clove Garlic, Peeled And Chopped 1 Cup Madeira Wine 1 Cup Port Wine 1 Tablespoon Balsamic Vinegar 4 Cups Veal, Chicken Or Duck Stock Salt And Pepper To Taste Heat olive oil in a large, wide saucepan. Add shallots and garlic and sauté until softened, about 3 to 4 minutes. Add Madeira and port and let bubble until reduced by two–thirds. Pour in stock, add thyme and bring to a boil. Again, reduce by two–thirds until it thickens to a syrup consistency. Remove thyme and season with salt and pepper.

2 Cups (hulled) Fresh Green or Snap Peas 1 Small Bunch Mint Leaves, Stems Removed 1 Tablespoon Olive Oil Salt And Pepper To Taste Blanch peas and mint leaves in boiling water for two minutes. Drain and put in a food processor. Add olive oil and pulse for a few seconds until lightly crushed, but not puréed. Transfer to a bowl and season with salt and pepper.
GLAZED ROOT VEGETABLES
16 Baby Onions 4 Parsnips 1 Tablespoon Lemon Juice 1 Teaspoon Olive Oil 4 Tablespoons Butter 1 Tablespoon Honey Salt And Pepper To Taste Immerse onions in boiling water for one minute to loosen skins; peel. Return to water and boil until tender, about 15 minutes. Set aside. Peel parsnips and cut into one-inch pieces and drop into a pot of cold water. Add half the lemon juice to prevent discoloration.
TWIC£ BAKED GOAT CHEESE SOUFFLE 2 Tablespoons Butter For Coating Ramekins 112 Cup Dry Breadcrumbs 5 Ounces Crumbled Goat Cheese 1 112 Tablespoons Butter For Recipe 1 112 Tablespoons Cake Flour 112 Cup Milk 1 112 Egg Yolks 112 Cup Egg Whites Salt And Pepper To Taste Preheat oven to 425°F. Melt butter and thoroughly coat inside of 4 ramekins. Dust each with breadcrumbs; shake off excess. Place goat cheese in a large mixing bowl. Melt butter in stainless steel saute pan over medium-high heat. Add flour and whisk constantly for 20 seconds. Add milk and continue to whisk for 1 minute, until mixture thickens to a pourable pudding. Pour over goat cheese and mix well. Add egg yolks and mix again. Season with salt and pepper. Beat egg whites with an electric beater until stiff peaks form. Fold half the whites into cheese mixture. Then gently fold in remaining whites. Pour equal amounts of souffle mixture into coated ramekins. Sprinkle breadcrumbs on top. Place in a deep baking pan and fill pan with boiling water until water is halfway up ramekins. Place in the oven and bake until golden brown, about 25 minutes. Remove from oven and let stand in water bath for 15 minutes. Turn souffles onto a baking sheet; run a knife gently around edge of ramekin if needed. Souffles may be held at room temperature for up to 6 hours before final baking. When ready to serve, bake at 425°F for 5 to 7 minutes. They will rise again.
GREEN SALAD WITH POACHED PEAR CHUTNEY, DUCK FAT VINAIGRETTE AND CRISPY CROUTONS For the duck fat vinaig rette: 1/4 Cup Duck Fat 3 Shallots, Minced 114 Cup White Wine Vinegar 2 Tablespoons Honey For the duck skin croutons: Crunchy Cooked Duck Skin Lime Juice Salt For the poached pear chutney: 3 Cups Pears. Peeled, Cored and Chopped 1 Cup Cider Vinegar 1 Red Onion, Chopped 112 Cup Sugar 1 Tablespoon Fresh Ginger, Grated 1 Teaspoon Coriander 114 Teaspoon Crushed Red Pepper
Salt And Pepper To Taste For The Salad: 6 Cups Mixed Greens ¥1 Cup Chopped Pecans Make the duck fat vinaigrette: Heat duck fat in a skillet. Add shallots and cook until softened. Add vinegar and honey, and bring to a boil. Remove from heat. Make the duck skin croutons: Squeeze lime juice on duck skin, lightly salt and toss. Make the poached pear chutney: Combine all ingredients except salt and pepper in a saucepan and bring to a boil. Reduce heat and simmer for 30 minutes. Season to taste with salt and pepper; chill. Combine greens and pecans in a large covered bowl. Add vinaigrette and shake vigorously to coat greens. Divide greens onto 4 salad plates. Add a few croutons and meat from one duck leg (confit). Top with chutney. Serve with a goat cheese souffle.
