Wedding Location: Paula & Alan were married under a giant oak tree at the groomâ&#x20AC;&#x2122;s private property in Cameron, TX, overlooking a pond and nearby hay bales. The altar area was centered between two beautiful ferns and the tree was adorned with flowing fabric that allowed the light to shine through it. The family farm was recently acquired by the groom and was the perfect setting for this Fall wedding with hay bales, changing leaves and a starry night sky. This loving couple read their own heartfelt vows aloud with teary eyes and joyful smiles.

Unique Details: All of the details including Paula’s bouquet were handmade by the bride. The decor featured an array of fall colors and green elements from silver dollar eucalyptus. The reception took place in the nearby home’s covered porch. The cake topper was first used by the groom’s mother when she was married in 1955. This was a surprise to her and a very moving gesture from the mother of the groom. Lit lanterns swayed in the gentle breeze, while Edison lights hung from the ceiling.

How you met Rocky and I met in 2003 in Allen, TX when we were in middle school. We were both playing basketball with our friends when he challenged us to play against him. Despite how bad I beat him in basketball, I knew in that moment that he was going to be my husband one day! We continued to be friends in middle school and dated through high school. Proposal story On August 5, 2017, Rocky and I were on vacation with our family in Estes Park, CO. That afternoon, Rocky took me on a hike in the mountains while our family stayed at the campsite. I noticed he was acting different, and would not let me hold the backpack we took with us. We hiked to a waterfall and climbed down from a rock to get closer to the view. As we were both admiring the breathtaking scenery, he opened his backpack and pulled out a ring. I was astounded and I immediately asked him, “What are you doing?” before realizing what a special and life changing moment this was.

Honeymoon Rocky completely surprised me by planning our honeymoon! He took me on a cruise through the Caribbean where we visited, Puerto Rico, the Dominican Republic, St. Thomas USVI, and the Bahamas. Our luxurious rejuvenating trip was full of only bliss. We relaxed near the blue glistening beaches, ate delicious food that had an explosion of unique tastes and enjoyed the history and tastings of the alcoholic beverages they created. This will always be the most memorable trip of our lives!

Anything you did that was unique Rocky has always surprised me with my favorite flowers, red roses. Coincidentally, my middle name is Rose! We knew the theme for our wedding would be centered around red roses and our hashtag, #RockandRose. We love the holiday season and had Christmas trees lined next to our sweetheart table hence, our wedding theme December to Remember. This, along with the lights and red roses, made the reception hall feel intimate, yet elegant at the same time.

For her special day the bride wore not one, but two beautiful gowns. For the ceremony she wore a long sleeve fitted gown with sheer accents by designer Michael Costello. For the remainder of the night the bride wore a solid white off the shoulder gown by designer LaQuan Smith. Erica made her descend from the second level down the grand marble staircase and onto the Italian cobblestone floor where her groom was waiting. Erica was given away by her Aunt who raised her; her late mother was honored at the wedding. The bride and groom exchanged personal vows along with a Cartier ring for the groom.

Frank and Natalie met on a stormy Houston night at a neighborhood lounge. Natalie had attended a charity fashion show that evening and was meeting friends afterward. As she exited a cab and came running in out of the rain, overburdened and struggling with her garment bags on the slippery tile floor, Frank spotted Natalie and the potential for disaster and immediately came to her assistance. The rest is history.

When the time came to pop the question, Frank organized a surprise engagement party at the coupleâ&#x20AC;&#x2122;s newly purchased home. Since the space was still empty, Frank hired a caterer and bar staff and rented furniture. Then he invited and coordinated travel for out of town surprise guests. That evening Frank suggested that they stop by the house to celebrate their new home with a bottle of champagne but when she opened the door all their beloved family members and friends were waiting in the rotunda to witness the big moment. Natalie was surprised and bewildered; she had no idea why her family was in town or that she was about to be engaged. When Frank dropped to one knee and proposed to Natalie in middle of the crowd, she was overwhelmed with joy and the celebration began.

For their ceremony, Frank and Natalie decided on a Sunday, family-only wedding on Halloween weekend at Evelyn’s Park, a beautiful community green space in Bellaire. The couple loves to host and still wanted to include their friends in their wedding weekend, so they organized an all-day costume party on Saturday before the big day. They extended an open-door policy to their home throughout the day, inviting friends and family to enjoy pumpkin carving, yard games, music, open bar and grill, and general camaraderie. To create instant, long-lasting memories of this special day, Frank and Natalie had a themed photo backdrop so their guests could capture the fun with Polaroid instant photos, paste them in an album, and write a meaningful message to the newlyweds. Frank and his family have always loved music, singing, and dancing. Since their mutual love of music is one of the things that brought Frank and Natalie together, Frank had the unique

Your family and friends are there to celebrate YOU and your husband - not the candy with your faces on it, or the outrageously expensive veil, or whether the flowers perfectly match your bridesmaids dresses. DON’T compare yourself to others. The reasons you and your wedding are special are different from anyone else’s. DO have great music, food, and libations. In my experience, those are the key components for an amazing party! DO ask for help. Your loved ones will be honored to help address envelopes, pick up the cakes, or let you borrow decorations.

Walking along the Riverwalk in San Antonio, Johnny and Katie stopped to sit on a bench that sat off to the side atop a peninsula. Katie noticed her mom with her camera, which was not unusual as her mom is a journalism teacher and is always taking photos of the family. As they sat down Johnny asked Katie if she knew where they were, she said “a bench, duh”, as she said this Johnny began to get down on one knee. The next thing Katie heard from Johnny was “No, this is Marriage island”, as she realized what was happening, she began crying.

The couple chose to get married at their family-friends’ ranch, Rain Creek Ranch in Brady, Texas. They visit every year for Thanksgiving and knew it was the perfect place to begin their new journey together. As guests arrived, they were prompted to “pick a seat, not a side” where blue and black western blankets covered hay seating. Katie walked down the aisle in a stunning red custom gown from Renegade Bridal. Her veil was made from her first communion veil, which was made from her mother’s wedding veil. The couple celebrated with family and friends as the Texas night shone with stars.

Advice I really enjoyed having a small ceremony out of town with close family and friends and then a larger reception back in Houston a month later! It’s no accident a garden is the first thing you see as you enter the meticulously maintained grounds, herbs and vegetables are served daily in the dining room. The front garden contains a sugar kettle turned fountain from Louisiana, a nod to the heritage of one of the owners. As this garden

hen you selfsoothe anxieties, you reduce the emotional weight your beloved carries in a relationship with you. But don’t misunderstand, this doesn’t mean to ignore your feelings. It means finding ways to get what you need

satisfied on your own. When your mate is still learning how to be present for you, these self-containment techniques will manage what you unload, on an unsuspecting ally. Here are 5 ways to keep your emotional weight on the lighter side.

To wait means to acknowledge you have unconscious fears, which make you feel insecure. Wait until you can listen and analyze their perspective, before jumping down their throat with yours. Wait, ask more questions for clarity, before skipping to conclusions about why they said or did what they said or did.

2. Practice Self-Comforting Self-comfort means to take responsibility for what you feel, even if your emotional state is the result of another’s actions or words.

Dependence is the kind of behavior that scares people away because most of us are only able to sustain ourselves. We are not so well equipped to maintain another as well.

Internal wisdom asks you to find the love and sustenance you think you need from another, in a self-love practice.

You can self-soothe your fears and pain by remembering this: you are just fine and the situation is only temporary. Walk it off, shake it off, or suck your thumb, but when your beloved can’t be there for you, you don’t need to blame them for their inadequacy to be of service to your needs. If your mate doesn’t have to lift you or reassure you, when you’re feeling weak or insecure, then they get to meet you as an equal. Keep your mate from getting in the middle of your emotional process, as well, by soothing yourself amid disagreements.

3. What you are is greater than the you who is involved with another. You were you long before they showed up in your life. So, remember who that is, always. When you forget, don’t go to your partner to remind you who you are. Go to you, reclaim the best you that you’ve forgotten. The trick to avoiding romance sabotage is to be self-sufficient.

Be independent of your mate’s actions, so that you stay you. Be yourself, always. Don’t lose yourself to keep someone in your life, either, or in time you’ll lose them. If you ever wonder who you have to be, what they want you to be, you have lost your hold on you. Stop. Relearn you, before asking them whom they want of you.

4. Learn where or when you become dependent on someone else to make you feel better. When you’re in a gloomy state of mind, and you call on your mate to make you feel better, that’s just what friends do, right? Well, unfortunately, when your mate cannot improve your mood just by being present, he or she loses faith in your ability to feel better on your own. They’ll start to see you as needy, clingy, or a downer. For most people, depression is a temporary state with

many causes and triggers. For others, however, they have a habit to go into melancholy because it’s all they know how to do when dealing with immobile states of mind. Move out of depression with gratitude of thought. Begin by being grateful for all you have. Itemize these things you have and say, “thank you” deep within you, so your higher-self and higher power can hear you. There are so many who don’t have what you have. This is a way to remember the specifics of that disparity in your favor. With gratitude for the little things, you’ll not only feel better, but your better feelings follow you and lighten the mood everywhere you go.

5. Find independence from the opinions of another. Most people are mostly independent and self-reliant. Some, however, seek reliance through relationships.

Self-love means you don’t need someone else to tell you how to feel, or how you should behave. It means you take yourself seriously enough to know you are capable of being whole on your own. It also implies you don’t take yourself so seriously that you need others to do and say just the right thing, in just the right way, for you to love yourself. Your self-love ought to be independent of another’s mistakes in understanding you, too. You are not needy but you have needs. You are not pushy, though you might be pushed by unconscious conditions that you are learning to control better. You are not “too much,” even though you might feel more than most and have a dramatic way of being. These are examples of seeing yourself with love, instead of allowing someone’s opinion to force judgment on you. Self-adjustment suits the wellbeing of your relationship, without feeling attacked for just being yourself. When you are self-contained, you clear the heart for romance. You don’t need someone to agree with you, be sympathetic toward you, or over-concerned with your woe. That effort relieves them so they can focus on their inadequacies, rather than wasting precious romance on holding up your end, as well as their own.

Short Rib Tacos

Place cantaloupe and 1/2 cup orange juice in blender and spin until smooth, add in remaining orange juice, lime juice and cinnamon. mix well. Add mint and refrigerated for 2-3 hours.

Garnish: ½ cup sugar ½ cup water 8-10 mint leaves mint sprigs ■ cantaloupe, ¼ inch cubes ■

honeydew, ¼ inch cubes

Make a simple syrup by combining sugar and water in small pot and boil until sugar dissolves. Pour into a jar to cool. Wrap mint leaves in cheese cloth and tie off with butchers twine. Drop mint packet into simple syrup and refrigerate overnight. Place melon cubes on toothpick or skewer.

Plating: Pour chilled soup in cordial or shot glass and place on plate. Add melon skewer and spoon minted syrup over the melon skewer. Garnish with mint sprigs.

Roasted Grape Bruschetta Hattingley Valley Classic Reserve Sparkling Wine & Chateau Trocard Monrepos ■ ■ ■ ■ ■ ■ ■ ■ ■

4 cups red grapes 1 tbls olive oil 1 tsp kosher salt 1 tsp chopped fresh thyme ¼ tsp pepper 1 tbls balsamic vinegar ½ cup soft goat cheese 24 slices baguette, lightly toasted ¼ cup chopped walnuts, toasted

Preheat oven to 325. Spray a large glass baking pan with cooking spray. Place grapes in large bowl, add oil, salt, thyme and pepper and toss to coat grapes. Pour into baking pan and place in oven, stirring occasionally. Roast until grapes begin to wrinkle, about 50 minutes. Drizzle with balsamic. Spread goat cheese on baguette slices, top with grapes, sprinkle with walnuts and drizzle with honey.

Preheat oven to 375. Arrange wrappers on baking sheet (not touching) brush with olive oil and sprinkle with salt and pepper. Bake until brown, 7-9 minutes, and transfer to wire rack to cool.

Dice tuna into ¼ inch cubes and place in glass bowl. In separate bow mix olive oil, lime zest, limejuice, wasabi, soy, pepper sauce, salt and pepper. Pour over tuna, add scallions and jalapeno. Mix well. Fold in avocado and sesame seeds and chill at least one hour. Spoon tuna tartar onto wontons and serve.

Duck Confit Salad ~ ~

4 skinless duck legs 3 tablespoons salt ¼ teaspoon fresh ground pepper 4–5 cups duck fat 4 clovesgarlic, minced 6 sprigs thyme

Duck Stock ■ ■ ■ ■ ■ ■

Massage garlic into duck legs sprinkle with pepper and salt. Place in a resealable bag and refrigerate for 24 hours. Select a heavy saucepan just big enough to hold legs in a single layer. Heat fat until it simmers very slowly. Remove legs from bag and gently wipe excess salt. Place legs, garlic and thyme in pan and cook until the meat is tender and easily pulls from bone, about 2 to 3 hours. Remove from pan, let cool and pull meat from bones. Save the duck fat! Some of it is needed in other parts of this meal.

2 duck carcasses, cut in pieces 2 large, unpeeled carrots, sliced 3 celery ribs, sliced 3 medium white onions, sliced 7 cloves garlic, peeled 4 quarts cold water 6 sprigs parsley 20 black peppercorns, cracked 3 bay leaves

Preheat oven to 425°F. Place duck carcasses and fresh veggies on baking sheets and roast for 45 minutes. Place carcasses in stock pot, add water and bring to a boil. Reduce heat and simmer, skimming foam as it rises to the surface. Continue until foam stops appearing. Add remaining ingredients, reduce heat and simmer for 1 hour. Strain stock through cheesecloth or a strainer into glass bowl or pitcher. Chill and remove fat (it will rise to the top and harden).

Dressing In a large mixing bowl whisk mustard, vinegar, salt and pepper. Add 4 tbls olive oil and whisk until emulsified. Stir in shallot. Heat 1 tbls olive oil over moderately high heat, add duck meat and cook until crisp, stirring frequently. Add greens and cheese to dressing, season with salt and pepper and toss until greens are coated. Place on plate, garnish with pears and toasted nuts, top with duck confit.

Roasted Duck Breast over Brussels Sprouts Paired with Rioja Ontanon Reserva Roast Duck Breast ■

boneless duck breasts, skinon,

slightly scored ■ salt and pepper to taste

Season duck with salt and pepper. Cover or seal in a plastic bag for 24 hours (optional). Preheat oven to 425°F. Heat a large ovenproof skillet until hot. Place duck in the skillet, skin side down. Cook until skin is golden brown, about 3 to 4 minutes. Flip and sear other side brie y. Transfer to a baking pan and cook in the oven 6 to 8 minutes. Remove duck from the pan and let it rest 5 to 10 minutes.

Brussels Sprouts ■ ■

30 brussels sprouts 6 tablespoons olive oil, plus more as needed

cloves garlic, chopped

■ coarse sea salt, to taste

■ fresh cracked pepper, to taste

Remove loose leaves from sprouts, trim stems and cut in half. Place in bowl, drizzle with olive oil and shake to evenly coat. Heat olive oil in large pan over medium heat. Add garlic and sauté until it begins to turn brown. Place Brussels sprouts flat side down in pan. Season with salt, cover and cook until sprouts brown on bottom. Flip sprouts, sprinkle with salt and pepper. Cover and cook 3 to 4 minutes. Serve immediately. Serves 6–8

Cherry Sauce ■

oz dried cherries cup bourbon cup finely diced shallot cups chicken stock cup tawny port cup duck fat cup honey

Combine bourbon and cherries in sautee’ pan. C Cook over medium heat, heat until bourbon begins to bubble. Use a long lighter to ignite booze and let

it burn until the flame burns out. Remove from heat and set aside. Heat duck fat in heavy saucepan over medium heat. Sautee’ shallot in fat for 30 seconds. Add bourbon/ cherry mixture, stock, port and honey. Turn heat to high and reduce to a glaze. Whisk in 6 tbls cold butter, one tbls at a time. Remove from heat and season with salt and pepper. Serving Place Brussels sprouts on plate. Slice duck breast and add to plate. Top duck breast with cherry sauce.

8 (1-pound) bone-in short ribs salt and black pepper, to taste 9 tablespoons butter, divided 3 onions, chopped 14 cups cabernet sauvignon 12 cups chicken stock 12 cloves garlic, chopped 3 stalks celery 10 sprigs fresh parsley 2 small carrots

Preheat oven to 350°F. Season ribs with salt and pepper. Melt 6 tablespoons of butter in a large Dutch oven or braising pot. Brown ribs on all sides and remove from the pot. Add onions to butter and sauté until translucent. Add wine, then bring to a boil and reduce liquid to 3 cups. Return the ribs to the pot and coat in wine sauce. Add stock and remaining herbs and veggies to wine and ribs and heat until slightly bubbling. Cover and cook in the oven for 21⁄2 - 3 hours, until meat is tender but not falling o the bone. Remove the ribs and strain drippings into a saucepan. Remove the fat and reduce drippings to 2 cups over high heat. en, whisk in 3 tablespoons of butter. Place the ribs on a plate and cover with sauce.
