A Sip of History An elite breed of whisky aficionados hunt for bottles produced by distilleries that have long since shuttered their operations, allowing them a rare taste of the past. By Roger Grody Every sip of whisky reflects a synthesis of complex characteristics developed from the moment the precious nectar began its aging process, essentially transporting its drinker through years or decades. In most cases, future editions of that very whisky, however rare, will be released — they are patiently aging in oak barrels as you enjoy your current bottle — but others are frozen in time. A whisky from a now-defunct distillery, a so-called “ghost distillery,” is among the rarest tastes of all. Those ghost whiskies are highly sought after, as they provide the ultimate aura of exclusivity. Philip Morrice, historian and author of The Schweppes Guide to Scotchand The Whisky Distilleries of Scotland and Ireland, reports robust interest in drinking or collecting spirits that will eventually be unattainable. “As global interest in whisky has expanded, thanks to the marketing efforts of the main producers, particular interest in the ‘dearly departed’ has developed, not least because their stories are often tinged with mystery, mayhem or neglect,” he says. The Australian-based Morrice is the founder of MyWhiskyJourneys, a platform that sells rare whiskies from private collections and dedicates an entire section to nearly 40 different ghost distilleries. A 1982 vintage 20-year “Rare Malts Selection” from Brora, one of Scotland’s most revered ghost distilleries, is listed at $2,497, while a 27-year “Final Resurrection” from the former Ben Wyvis distillery

in Invergordon, Scotland, commands $2,189. Another top whisky commentator, Glasgow-born Dave Broom, insists the popularity of this niche specialization (and the escalating prices that result) are driven primarily by scarcity. “They’re in finite supply. Every bottle emptied is one less,” states Broom. Ghost whiskies represent the chance to taste a bygone era, explains the author of The World Atlas of Whisky and Whisky: The Manual, but snarks, “For others, the dwindling supply means dollar bills replace their eyeballs.” Broom cautions that neither acclaim nor soaring prices are necessarily reliable indicators of quality, suggesting not every shuttered distillery produced exceptional whiskies, however rare they may now be. “But because they were no longer available, suddenly they became cults and peoples’ critical faculties disappeared,” quips the ever-candid Broom. Consumers seek out ghost whiskies for various reasons, whether a connection to their family heritage or birth year, or simply wanting to taste something that will eventually be impossible to find. Broom recommends looking for whiskies from the abandoned Scottish landmarks of Cambus, Caledonian or Carsebridge, and also advises exploring lesser-known ghost malts from the now-defunct distilleries of Convalmore, Caperdonich, St. Magdalene, or Rosebank. continued on page 20

With Montreal’s Berkshire Hathaway HomeServices Québec joining an already strong presence in Toronto, the luxury real estate world in Canada is heating up amid a new normal. By Jessica Ganga

With its vast landscape, rich culture and friendly reputation, Canada should not only be a place to visit, but a place to call home. A gleaming combination of metropolitan cities and breathtaking natural open spaces, the country has a little something for any buyer, especially those in the luxury market. Even with today’s “new normal,” cities like Toronto and Montreal are 4

looking toward the future and know that their markets — and country — have so much to offer. Toronto in Canada’s Ontario province is a true mix of Canada’s picturesque out- doors and its touch of luxurious finishes. Jennifer (Wood) Simpson, chief experience officer of Bespoke Experiences, a luxury tour


company that curates tours in cities across the U.S. and in Toronto, painted a picture of different places the company takes their travelers. “There are so many options within the city, or nearby,” Simpson says. For those seeking a unique view of the city, Simpson recommends the CN Tower Edgewalk, which she describes as “not for the faint of heart,” with people getting the chance to walk along the tower’s main pod at 1,168 feet in the air. When people want to escape the city, Simpson says there are finer options. “Head south to the Niagara-on-the-Lake region to sample the region’s finest wine, or explore famous Niagara Falls, less than two hours away.” According to Simpson, the company pays special attention to traveler’s needs when it comes to dining. Toronto isn’t short on options, and people can experience highend restaurants through the company. “Hotel restaurant reservations are becoming more and more coveted as they feature 5-star celebrity chefs, and private chefs are increasingly preparing a homecooked meal in short-term rentals.” Berkshire Hathaway HomeServices Toronto Co-Founder and CEO Mark Wadden attributes the city’s growth in its cultural scene, along with its population and housing supply, to its increasing popularity as a destination for luxury buyers, “overall, making Toronto real estate attractive to both foreign and domestic investors or end-users alike. Steady growth in the last decade, even during downturns in most other surrounding regions, makes Toronto a sound place to own property and establish a real estate portfolio.” Toward the end of 2019, Toronto saw a surge in its market, one that Wadden attributed to buyers. “2019 is when we saw buyer confidence increase, coupled with a healthy supply of listings, which still led to a rising trend of multiple offers and bidding wars,” Wadden says. That dynamic continued into the beginning of 2020, according to The Toronto Star. The city saw an increase in luxury condo prices due to the low supply and high

demand from Toronto’s foreign buyers. But as real estate continued to heat up, the world faced a setback. As the global COVID-19 pandemic forced countries to shut down, real estate companies were looking at an uncertain future. Even with Ontario’s shutdown of most businesses in mid-March, Toronto still saw a strong end to a good month of real estate, “The overall yearover- year average price almost stayed the same and saw total transactions in March 2020 with official operations starting in early June. “I’m very excited to take that next level with regard to a prestigious brand such as Berkshire Hathaway HomeServices,” Brosseau says. “It’s an absolute honor to be able to represent such a brand — to be the one to launch it in this province. I’m also very much looking forward to working in collaboration with my friends over in Toronto and making sure that everyone in the Berkshire Hathaway HomeServices world knows that Canada is on the map.” According to Mansion Global, Montreal’s luxury housing market “accelerated” within the last five years and continued its growth into the beginning of the new decade. “We had, in 2019, an incredibly booming construction market, especially in the heart of downtown, [with] all types of condos, from micro-condos … all the way to luxury penthouses.” As the market took a slump, similarly to Toronto, Brosseau looks at it as not a problem, but a way for the industry to move forward, saying, “In my professional opinion, this is just a pause” and that “we’re going to bounce back from this in a very healthy way. I think that the market will bounce back properly.” As a diverse area for real estate, Montreal offers various areas for a variety of buyers looking for an investment. From the “predominant luxurious area” of Westmount (as Brosseau describes it), to the old-world feel of Old Port of Montreal, varying price points and options appeal to those seeking to live in or near the Europeanesqe city. Brosseau says they saw an influx in 2019 of foreign buyers who contributed to the real estate growth, and doesn’t see the demo- graphic of buyers changing, due in part to the culture and what the city has to offer. “If you have to think about Montreal as the place you want to live, we really encourage people to come here during the sum- mer,” Brosseau says. “During the summer it’s really festival season and you really see the city light up.” 5

A Sip of History cont. Even large corporations like Diageo (the London-based maker of Johnnie Walker Scotch, Don Julio tequila and Guinness beer) recognize a market for this whisky subculture. Its limited release Johnnie Walker Blue Label Ghost and Rare has showcased whiskies from famed ghost distilleries Port Ellen and Brora, and most recently Glenury Royal. One of only three distilleries to carry a royal title, Glenury produced whisky for 160 years before the Scottish Highlands facility closed its doors in 1985. “Shining a light on this hidden treasure of the whisky world is something we’ve wanted to do for some time,” explains Johnnie Walker’s master blender Jim Beveridge. Whiskies from other ghost distilleries, including Cambus and Pittyvaich, are blended into this product to balance Glenury Royal’s fruit-forward character with toffee and butterscotch notes. Seattle’s Canon is home to one of America’s largest spirit collections, with three-quarters of its approximately 4,000 selections comprised of whiskies. Among the approximately 450 ghost labels found within Canon’s 150 pages of whiskies is a 1978 Port Ellen, aged 37 years, that commands $998 for a one-and-a-half-ounce shot. Canon owner Jamie Boudreau reports customers regularly request ghost whiskies, even those with stratospheric price tags. “These whiskies really are special, with a finish that seems to linger for days,” says Boudreau, adding, “They’re really special drams that are actually worth the hype.” The Whisky Attic, discretely located off the Strip in Las Vegas, is not a bar or retailer yet is home to one of the most expansive whisky collections in the world, currently totaling more than 4,500 distinct selections. “We offer unique, bespoke educational experiences,” reports founder and curator Sir Dr. Adam Carmer, whose appointment-only tastings are held in Las Vegas and around the world. “There’s a story connected to almost every bottle of whisky, but ghost whiskies in particular are driven by legend and lore,” says Carmer, who reports stocking about 125 different bottles from now-shuttered distilleries. “At one of our sessions, you’re tasting and discussing whiskies in real time, and it’s really a synesthesia of learning,” explains Carmer, who moonlights as a university professor. He says of these ghost whiskies, “You’re tasting a piece of history.” 20

“There are ghost distilleries which never reopen and either stand as forgotten monuments to their past glory or are completely dismantled,” states Morrice, who reports some are occasionally brought back to life by new owners. “Buying whisky from a ghost distillery is, in fact, purchasing a piece of history to consume, hold in your collection or to resell in the future,” he says, indicating demand has increased exponentially in recent years. Morrice is partial to Port Ellen, the legendary Scottish distillery on the isle of Islay, reporting, “There is a vast selection of expressions from that distillery, the quality of the whiskies is universally high and its following is devoted.” He recommends a 20-year 1978 vintage from the distillery’s “Rare Malts” series ($1,878 on his site), which was one of the first official bottles of Port Ellen to be released following its closure. “It is fresh and clean, and unusually so for a 20-year old at this strength [60.9% alcohol by volume],” assesses the author. Whisky lovers in Washington, D.C. gravitate to Jack Rose Dining Saloon, which in a normal year pours the equivalent of about 10,000 bottles by the dram. The kind of place where a Georgetown grad student might sit next to a member of Congress, this bar/restaurant is one the few things in the capital city receiving bipartisan approval. Unfortunately, owner Bill Thomas began selling some of his formidable inventory to weather the challenges of the corona virus crisis, but great bars in D.C. have a way of surviving, regardless of who is in office. Jack Rose Dining Saloon currently offers a variety of ghost whiskies, including several vintages of Kentucky’s Stitzel-Weller, a prestigious ghost distillery that was once the production site for Pappy Van Winkle, America’s acclaimed, wildly expensive bourbon. A recent-era Japanese distillery named Karuizawa (production ceased in 2000) is in tremendous demand by collectors, driving prices from approximately $200 per bottle to more than $15,000 in about a decade. Suggesting Karuizawa may be the poster child of overpriced cult-status ghosts, author Dave Broom states, “You couldn’t give it away when it was open, and now it’s probably the most expensive ghost whisky at auction.” He concludes, “It’s the whisky world’s equivalent of Van Gogh.
