graduate profile Kristen Donnell

Diploma in Culinary Arts Every now and then a student will come along whose efforts and results in the classroom catch the eye of a tutor. “Kris has been an outstanding student, achieving A grades for all assessment work,” said Bart Vosse, chef lecturer at Waiariki Institute of Technology. “Her passion and relentless focus combined with academic ability has made her a pleasure to teach.” Mr Vosse first met Kristen Donnell in 2011 when she enrolled on the twoyear Diploma in Culinary Arts. “In my previous life,” Kris explained, “I was a registered nurse but my main hobby has always been good, nutritionally sound food. The transition from nursing to cooking has been fun as it’s still all about care and passion.” Kris has been a nurse since 1985, working as a cardiac nurse specialist. One of her responsiblities was educating her clients in matters of the heart and its health. Although making a big shift in careers, she still sees a strong link between the two as she wants to continue along the vein of education. “I have to teach. I want to get people excited about cooking. I’ve always been a great cook, but never worked in the industry. I never did the course with the intention of starting up a café or something, but I would love to have a cooking school some day.” Kris admitted that leaving the comfort zone of a safe job and studying as an adult – she’ll be 50 early next year – was scary at first but the supportive environment at Waiariki and her tutors made the transition easy. “My tutors are passionate and generous with their knowledge and I enjoy the interaction with the other students. The qualification is comprehensive and I learn something exciting every day.”

Nestlé Toque d’Or Student Competition

For the past several years, Waiariki culinary and hospitality students have the opportunity to represent the institute by competing at the Nestlé Toque d’Or. Toque d’Or is an annual national event held in Auckland where tertiary students compete in an intense two-and-a-half hour live cook off and meal service. In the 2013 competition, Waiariki Certificate in Professional Cookery students Courtney Rigg and Drenna Leenstra won a silver medal for their work in the kitchen and Diploma in Hospitality Management student Chakraveer Singh Ranawat earned bronze for his restaurant skills. This marks the fourth consecutive year Waiariki earned medals at this national student competition. The culinary students must create their own four-course menu and ensure their skills meet strict judging criteria in areas such as professionalism, work methods, knife skills, recipe development and hygiene. Judging criteria for the hospitality students includes personal presentation, customer service skills, and menu and wine knowledge. The teams of three students must coordinate their cooking and serving, timing everything to the minute and providing a top dining experience for real guests. For several months leading up to the competition, Waiariki culinary arts lecturers Jonathan Chemis and Tik wang Tan, and senior hospitality management lecturer Thomas George coached the students to prepare them for this prestigious event. The event provides a great platform for restaurateurs to spot New Zealand’s rising culinary and hospitality stars and create future contacts and potential employees.

graduate profile Yuxiang He

Bachelor of Tourism Management When Yuxiang’s parents visited Rotorua for their son’s Bachelor of Tourism Management graduation from Waiariki Institute of Technology, they saw and felt for themselves just why and how Yuxiang had fallen in love with the people and the place. “They had a wonderful time. Firstly they were part of a Chinese tour group so they got to see the North and South Islands. And then, while they stayed with me they spent time with a Māori family. They learned how to live family life with geothermal energy to cook with and for warmth. They went fishing on the river, just spent time with them so it was very authentic travel and they felt the warmth of the people here.” Yuxiang leapt at the opportunity to study internationally, seeing it as an ideal way to learn independence and confidence while studying his chosen field. “Rotorua is a main tourist destination and is the place tourism started in New Zealand. That history was a big influence for me. The work opportunities here are good while you are studying and this experience can make you a stronger candidate after graduation, giving you a better understanding of the people and the industry.” Yuxiang has been working at the Millennium Hotel in Rotorua but has just secured a new role with a hotel on Mount Ruapehu, New Zealand’s North Island snow ski Mecca.

Nick Chater

SENIOR LECTURER, ADVENTURE TOURISM To find someone as experienced or passionate about adventure tourism or as connected to our landscape and culture as Nick Chater is would be tough. Nick is senior lecturer for the Certificate in Adventure Tourism and Diploma in Adventure Tourism at Waiariki Institute of Technology. He has more than 20 years as an outdoor instructor in whitewater rafting, mountaineering, mountain biking, rock climbing and kayaking in the United States, Australia, Japan and Costa Rica. Nick also owns a successful outdoor education specialist company, Multi-Day Adventures. He has a deep connection with the land and Māori culture and believes these elements hold Rotorua and the Waiariki adventure qualifications distinct from anywhere else in New Zealand. “Māori culture is what distinguishes us from other stunning adventure destinations like Queenstown. The way Māori culture permeates our landscape and people inspires the way we teach here. I believe those values boost student success. Most develop a real grounding and a feeling of deep connection, belonging and respect for our country, its waters and mountains.” When Nick is not teaching or running Multi-Day Adventures, he is found representing New Zealand in any number of outdoor passions around the world including whitewater rafting and waka ama.

Students pursuing the degree with a single major will take a total of 45 elective credits from any Waiariki course(s). Students pursuing the degree with a double major are not required to take elective credits. NOTE: Students pursuing the degree with a double major are not required to take elective credits, however, they will take the total 150 credits from the major-specific options list. Criteria for Award To achieve the award of the Bachelor of Tourism Management, students must pass a total of 360 credits, including: a maximum of 150 credits at Level 5; a minimum of 120 credits at Level 6; and a minimum of 75 credits at Level 7. No major: 210 compulsory credits; 60 credits from the options list; and 90 elective credits. Single major: 210 compulsory credits; 75 credits in a chosen major and 30 additional credits from the options list; and 45 elective credits.

Special Awards By completing the requirements for a single major, students may achieve the award of the Bachelor of Tourism Management with an endorsement in Tourism Operations or Hotel Management.
