Industry News STRIKES COME AT ‘WORST TIME’ FOR SCOTLAND’S BELEAGURED SECTOR Rail strikes could not have come at a worse time for Scotland’s already struggling hospitality sector, according to a leading industry body. UKHospitality Scotland says planned industrial action on Tuesday 21, Thursday 23 and Saturday 25 June could permanently derail hundreds of beleaguered hospitality businesses desperately trying to recover from the effects of Covid. UKHospitality Scotland Executive Director Leon Thompson said: “For a devastated hospitality industry beginning its tentative post-pandemic recovery, these

strikes couldn’t come at a worse time, and might deliver a fatal financial blow to those businesses already struggling to survive. “Together, three days of strikes will cost the sector £540m across the week, based on a 20% drop in sales where a typical June week sees takings in the UK of £2.75bn. “Fragile consumer confidence will take a further hit; thousands of people able and willing to spend money in hospitality venues across the country will be prevented from doing so; while staff will undoubtedly struggle to even get to work, losing wages as a result. “After a ruinous couple of years, we should all now be pulling in the same direction to get the UK economy back on track. Urgent and productive talks are needed if we’re to avoid widespread and costly disruption, next week.”

LAUNCH OF NEW FOOD AND DRINK PODCAST ‘FOOD CONNECTIONS’ ‘Food Connections’ will be an initial five-part series that will showcase different aspects of the Scottish food industry, including mixed beef and arable farming, dairy and fruit and vegetable seasonal production. Guests on the podcast include industry experts such as Lynn Mann, from Supernature Oil and Jackie McCreery from Yesterfarm Dairies. Dr Wyness, an award-winning Registered Nutritionist specialising in evidence-based nutrition writing, workplace wellness and nutrition communications, hopes that the podcast will empower people to think more about where the food they consume comes from.

Edinburgh-based Regional Tourism Food Ambassador, Dr Laura Wyness, has launched a new podcast with the aim of helping people better understand the food they eat and connect to those that make it. The latest Provenance Perceptions research from the Scotland Food & Drink Knowledge Bank showed that 67% of Scottish shoppers now say that where their food is being made or produced is becoming increasingly important to them, while seven out of ten Scottish shoppers think that food and drink produced in Scotland is better quality than anywhere else. 4

Dr Laura Wyness said: “Throughout my career, I have noticed that there is a disconnect between consumers and the food that they eat. There is a gap in knowledge which needs to be filled if we are to encourage the public to eat healthier food which is locally sourced. Food Connections has allowed me to use my role as a Regional Food Ambassador and my passion for nutrition to bridge the gap between producer and consumer, giving the public the information that they need to eat better while also supporting Scottish producers.” Dr Wyness is one of 24 Regional Food Tourism Ambassadors, a new programme which places food tourism at the heart of the recovery of Scotland’s tourism and food and drink sectors. Bringing a canned alternative that is not only a great product but really stands out on the bar, provides a more environmentally friendly cost-effective alternative. Justin continued, It’s a little nod to the 80s also when brands like Red Stripe, Schlitz, Suppuro etc were a massive trend but with a modern twist. The Perfect Project P

roject Pizza and Project Bar officially opened in January 2020, unbeknownst that Covid would have the impact that it did.

They actually opened the restaurant first as it did not have our alcohol license at that point. This came midway through lockdown, therefore when the venue initially opened, it was seen as a pizza restaurant, and nothing more. However, they were very busy when it first opened due to the offices in and around the city centre, which was very encouraging. It has only really been since the easing of restrictions that they have been able to show Glasgow and their customers that it is a destination for both food and drinks. Unsurprisingly this has been challenging, as for certain periods you could only drink alcohol outside or during restricted times. With many offices still adopting a work from home policy, they are still educating people about what they do. We spoke to General Manager Steven Dunnett to tell us exactly what the venue has to offer and discuss all things pizza as well as their extensive cocktail menu . Our venue looks nothing like how it did when lockdown started. We utilised lockdown to ensure that when we reopened, this time with our alcohol license, we delivered

as much as we could for our customers. So, out went the touchscreen ordering systems, the barriers (which helped for one way systems during lockdown) opening the place up and allowing us to have sofas, benches, another bar near the door, making the place look more comfortable and appealing to the public. A lot of research was done during lockdown to try and give our customers the best possible experience they could get, and make Project Pizza and Project Bar a place they come back to time and time again. We often speak about making Project Pizza and Project Bar a “destination” for our customers. Our food options are superb, and we have recently been nominated as a finalist for Best Pizza Takeaway in Scotland. We always use fresh ingredients and our General Manager Steven, has an expansive knowledge of Italian meats and produce which is evidenced throughout our menu. As for Project Bar, whether it be for televised sport, our extensive drink options, our relaxed vibes, our LIVE Ibiza sunset (which ties in to our usual beach house music), or the fact that we 13


do not take ourselves too seriously, customers will not be disappointed. If our national football team are playing, we play Scottish music, you get the idea. We also ensure our staff are relaxed and having fun at work, as this reflects back to the customer. Happy and relaxed staff make for a much more enjoyable experience for everyone. Our joy of having fun at work can’t be seen more than when someone orders our Chicken Wing Challenge, where victims try and take down 5 wings in 5 minutes. During this challenge, the lights dim, the Grim Reaper appears to the sound of the Undertaker theme tune, and delivers the wings to the challenger and stands ominously over them while they attempt to beat the challenge. We do like to have some friendly dialogue with our victims during the challenge and our GM will usually be on the mic having a laugh, or mickey taking depending on the circumstances. Once the challenger has failed, which is more than 99% of the time, the Grim Reaper then leaves with an eerie laugh. Like we say, not too serious at all. These are the kind of experiences that people remember and help bring them back time and time again. Our vision of the bar was simple. When you go on holiday, you rarely remember the hotel, the beach, the pool or the food. It’s that one bar you went to every night due to the atmosphere, the music, the people, and the fun nature to it. This is what we try to replicate on a daily basis here at Project Pizza and Project Bar 14

Whilst we understand the importance of having key brands that everyone is familiar with, we want to do things differently. People are more aware, than ever, of local companies or small drinks producers that have different ideas and products, and we want to build on these. One of the main reasons for the second bar, near our door, is so that we can have different companies come in and show off what they do. We want small upcoming drinks companies to have a chance to show off what they can do, introduce new products to Glasgow or even just have a platform to elevate their own brand. There are a lot of successful brands in Glasgow and we can give them a platform to allow them to grow. We want to build relationships with these producers which, in turn helps both our businesses. We feel this is where the future of the drinks industry lies. The key focus this summer is building the awareness of our brand to the people of Glasgow and beyond. We have a great place, superb atmosphere, fantastic food and a magnificent team. We just need to tell more people about us. We always have great promotions on, whether it is our £5 pizza deal or our £5 cocktail deals. We keep very fluid to keep in line with trends and market changes, while ensuring we always offer something for everyone. If we get to the end of summer and Glasgow knows that Project Bar is the destination for their food and drinks on a night out, we will be very happy. ontradescotland.co.uk

With over 100 different rums, the tastiest Thai dishes, fresh draught beer, and an eclectic soundtrack from our DJ’s every weekend, there really is something for everyone at Tiki Bar. We’ve been lucky enough to welcome our lovely guests for 12 years now and these are just some of the things that have helped us build a name for ourselves over the years. Oh, and did we mention we’re dog friendly, too? You’ll find both our downstairs bar and beer garden kitted out with dog bowls and lots of friendly staff waiting to welcome your pampered pooches. We love seeing your furry friends, so don’t be a stranger!

We welcome anyone and everyone at Tiki Bar. Since opening our doors back in 2010, we’ve witnessed all sorts of excitement: from birthday parties to works dos, Christmas gatherings to first dates – we’ve even had a wedding! Although we are predominantly a popular bar and restaurant, our food is also available to takeaway through our Thai K-away service, so those who want to kick back on the sofa for the evening can still grab a taste of Tiki Bar without moving an inch – and it’s the perfect hangover cure too, if we do say so ourselves… In 2021, we totally refurbished our beer garden and, as a result, we’ve been able to bring the Tiki theme to the outdoors and create a tropical medley of both our Bar and Kitsch Inn by serving all food and drink outside, too. Our outdoor area is arguably the biggest beer garden in the city, it can be fully heated and sheltered for use during the colder days or winter months, and it’s south facing so you’ll never miss that city sun (when it actually bothers to show up!). been great for us as it’s been increasingly popular as the summer months approach, and it’s also a great way for passers-by to have a glimpse of Tiki Bar on their way to work! We can hold hundreds of guests at any one time out there, making us the perfect venue for showing larger sporting events on our 98inch TV such as the Euros and the Europa League Final. The pandemic was incredibly tough for the hospitality sector in general, and so we wanted to make sure that we were fully prepared for reopening back when the time came. Since reopening after COVID19, we adapted the customer offering slightly by investing hugely into our beer garden. We wanted to place an emphasis on outdoor dining and drinking during the warmer months, and we also wanted to show more sport in our outdoor area. Increasing the amount of sports shown outside also attracts a wider, more different audience and invites people in that may not necessarily have considered trying Tiki Bar before. We did this by investing in the likes of sports channels such as BT/Premier Sports and Sky Sports, along with purchasing in our whopping 98-inch TV. We spent many months decorating our beer garden: think vintage Air Streams, artificial grass, heaters, awnings, murals, Easter Island Heads, and palm trees. It was important to us to bring something unique to our garden so that returning customers had something new to look forward to after the closure from the pandemic. Our beer garden has allowed us to offer something different to our guests and has also upgraded their experience greatly. As a result of our growing number of guests, we’ve also needed to increase the number of staff we employ to

accommodate this. Tiki Bar has also placed more of an emphasis on adding deals and discounts to our menu to appeal to a wider range of guests. For example, we offer heavily discounted selected cocktails and beers every Sunday to Thursday, we offered incentives such as free pints for Dads on Father’s Day, a free meal for Mums on Mother’s Day, and buy one get one free curries on Jubilee Bank Holiday. We want people of all budgets, age and walks of life to be attracted to our business and so we wanted to increase the experience that we’ve given our guests through investing and adapting Tiki Bar. It’s incredibly important that our guests have the full Tiki experience when visiting us. We want our venue to be a fun, happy place, shown through our décor, DJs, drinks, and friendly staff. The aim is to leave guests coming back for more every time! Through our Kitsch décor, funky music and Tiki mugs and cocktails, our venue is unique to Glasgow and therefore offers our guests an experience they wouldn’t get anywhere else. Our Our DJ’s on Fridays and Saturdays, sports out in our beer garden, and our amazing Thai food, Tiki cocktails and foosball tables aim to cater for everyone and offer out guests a more well-rounded experience. Our Tiki Bar decorations is a great way alone for us to offer our guests a unique experience as we have spent many years adding to our Kitsch collection. For example, we have worked with local artist Rogue Oner, Bobby, who has designed and created a beautiful mural for our beer garden to match our tropical Tiki paradise theme. We’ve also invested in a plethora of fun furnishings such as lights, paintings, signs, wooden Tiki carvings, Tiki mugs, 17


and wall furnishings. We’re also lucky enough to be one of the only outdoor venues in Glasgow which have managed to keep a palm tree alive! As a bar and restaurant, we wanted to offer events or nights that differed slightly from fellow local hospitality and so, over the year, we’ve held events out in our beer garden this past year, such as Fright Night (a Halloween themed move night back in October) and Festive Film Night (a Christmas themed movie night in December), where we turned our beer garden into a Winter Wonderland themed paradise with a 5m Christmas tree and many other festive decorations to get our guests in the spirit and to attract more visitors. We’ve also held large sporting events such as the Euros where we set up an auditorium-style seating arrangement and welcomed upwards of a hundred guests. We want to be guests’ go-to venue whatever the occasion, and hosting events like this gives our guests something more than just food and drinks, and helps us achieve just that! We also host giveaways for our social media followers where they can win a night on us at Tiki Bar and, in the past, we’ve also offered them Kings Theatre Tickets that they can use after their dinner with us so the winner has won an actual experience and would hopefully feel eager to return to Tiki Bar after such a positive experience. We’re a rum centric bar that’s forever on the lookout for exciting rums across the world. With over 100 different rums to choose from, we’re no stranger to working with brands and experimenting with what we offer our guests. There’s been a mini boom in the distribution and recognition of Scottish rums and we’re incredibly excited to see what comes next! Recently, we’ve worked with various brands such as Bacardi and Guinness who have supported us with events and our outdoor murals, and we’re always on the hunt to continue this and make sure we’re always offering our 18

guests something different. The focus for us over the summer as a venue is to continue doing what we’re doing: continuing to serve our food and drinks to our lovely guests and hopefully up this number as the summer months continue and the weather gets a bit warmer. Our Thai dishes and tropical cocktails are great all year round, whatever the occasion, however, we’re hoping to increase the amount sold over the summer as University’s break up for summer and people take more time off work, and so the warmer weather should help us achieve this. We want to continue to increase the use of our beer garden and increase the number of guests eating and drinking out in the (rarity of) the Scottish sun. The good thing about the beer garden is that it can be sheltered and heated so, regardless of the weather, we’re able to welcome our guests and we won’t have the weather stifle their experience. Most importantly, we want to continue to open our doors to our guests every day serving their favourite Thai bites and cocktails, and make sure that they have the best summer with us! BEER & PUB INDUSTRY CALLS FOR HOSPITALITY AND LATE-NIGHT CHAMPIONS AS PART OF LOCAL ELECTIONS MANIFESTO

N

ew ‘hospitality and late-night economy champions’ should be appointed in Edinburgh and Glasgow, the Scottish Beer & Pub Association (SBPA) has today recommended, as part of its manifesto launch.

The recommendation, which would see roles introduced similar to those of Sacha Lord in Manchester and Amy Lamé in London, forms part of the Association’s 10-point manifesto aims to support the sector’s recovery following over two years of pandemic restrictions. Other manifesto recommendations include: •

We fully understood the need to keep people safe but now, as we come out of the pandemic, there must be a path to recovery. “Appointing industry champions to stick up for the industry, to help local and national government understand the challenges we face and what is needed to build back, would be a great start. “Our survival and subsequent recovery is dependent on the support of national and local policymakers. PREMISES LICENCE DOCUMENTATION – THE MOST IMPORTANT THING FOR LICENSED PREMISES? We have given a lot of advice recently on staff in premises and how to structure your licensed trade business, but the most important part of all licensed operators in not the staff, nor even the operator, but the premises licence. Without a premises licence there would be no alcohol sold in premises! must be displayed in the premises. It should not be behind a bar or counter but must be in an area members of the public can access at all times the premises are open. It should not be in a frame. Members of the public should be able to look through this, look at all pages, and look at it up close of necessary to allow them to read it properly, so it is important not to frame it. 2. The premises licence - this has mandatory and local conditions attached – this part should be stored in your office or staff area and is not displayed. That said, it should not be locked away in a safe so it is available and can be produced of the Licensing Standards Officer (LSO) or Police Scotland attend at the premises and want to look at it.

Jo Millar - Head of Licensing There is a great deal of misunderstanding about premises licences and what they are made up of. They have four main parts: 1. The summary premises licence – this has mandatory and local conditions attached and

3. The operating plan – this outlines the activities which the operator is able to carry out in the premises and includes such information as on and off sale, accommodation, live music, children’s access, capacity and similar. 4. The layout plan – this shows the extent of the licensed area which may not be as obvious as operators think. If the premises are located in a tenement property, is over different floors, has outdoor areas (including street café and beer gardens) these must all


be clear on the layout plan. It also shows capacity for on and off same and narrates where certain activities can take place on the premises. 5. Section 110 notice – it is so called as it is under section 110 of the current licensing legislation - the Licensing (Scotland) Act 2005, as amended. This states no sale of alcohol to anyone under 18 and should be displayed at any tills or payment points. 6. Children and young persons information – this must be displayed at any access or exit (access or egress) points of the premises. When customers are entering the premises with children or young persons, they need to be clear on where the children and/or young persons can be in the premises. It is not a given that children or young persons can be in any area of the premises. For example, it may be they are not allowed in a public bar

area. This also states what times children or young persons can be on premises and under what conditions – for example, only with an adult, only when having a meal, and similar. 7. Personal licences – the principal of personal licences for staff working in the premises should be in the premises All of this may seem very obvious but we often have clients call us in a panic after LSO or Police Scotland visits as their licence documentation has not been correctly displayed or it has been missing sections. We can assist with a due diligence check to ensure premises pass all of the documentation requirements. RECORD STAFF SHORTAGES CAUSING HOSPITALITY TO LOSE £21BN IN TRADE

A

joint survey by UKHospitality, the British Institute of Innkeeping, and the British Beer and Pub Association, demonstrates how a shortage of workers is damaging hospitality businesses and the UK’s recovery

Staff shortages in the hospitality industry are reaching critical levels, causing nearly half (45%) of operators to cut trading hours or capacity in order to cope, costing the industry £21bn in lost revenue and causing an estimated £5bn loss in tax for the Exchequer. The survey also shows that staff shortages are forcing one in three businesses in the sector to close one or more days a week. Recent ONS figures show sector currently has a record 174,000 jobs available and is experiencing 83% more vacancies compared to March-May 2019 (the most recent comparable period). The joint survey reveals that the highest shortages are for front of house roles, with 81% of those operators with vacancies looking to fill these roles. Chefs are the next most sought after, with 76% of operators with vacancies looking to recruit these positions, followed by kitchen porters (67%), and assistant managers (53%).

“Operators have been doing all they can to help solve the issue, from increasing wages, to flexible working. However, this can only help so much, and the sector must be given targeted support in order to solve the crisis. “People are at the heart of hospitality, providing the quality customer service and personal experiences that people want. On the other side of the coin, the sector offers jobseekers a wide range of roles and fulfilling careers with great potential for progression. The sector offers opportunities to people of all levels of expertise, experience and backgrounds. A booming hospitality workforce will create fantastic opportunities, drive economic growth and aid regeneration in communities across the UK.” Last month UKHospitality launched its nationwide hospitality workforce strategy to nurture cooperation between industry stakeholders and boost recruitment and training for a new generation of skilled hospitality staff.

In a joint statement, UKHospitality, the British Institute of Innkeeping, and the British Beer and Pub Association, said: “These figures clearly show the danger to the industry and financial loss to the country via taxes posed by the current staffing crisis. In short, the recovery of both the sector and the UK economy are being threatened by this workforce shortage. 32

HOSPITALITY BOSSES URGED TO BECOME FRIENDS OF THE BEN

L

ast year the Be Kind To Hospitality campaign asked the public to be nice to staff postlockdowns – now the campaign has shifted the focus to business owners within the hospitality and night-time industries.

The campaign is asking them to help support much-loved charity The Benevolent Society by pledging to donate £25 a month to become a Friend of The Ben. The Ben supports people working across those industries, offering mental health support, grants and ongoing financial aid should hard times strike for ANY reason and anything else they can do to assist with any personal situation. For just £25 a month, business owners can pledge their support to the charity and help them continue their incredible work, providing a safety net for not only their own employees but the entire industry. Graham Chalmers of Radisson RED Glasgow, founder of #bekindtohospitality, said: “This is such an important cause and one we in the industry really need to get behind. We have all suffered in the last couple of years so helping to offer support for those in greatest need is vital. “The public responded hugely when we asked them to Be Kind To Hospitality – now it is time for businesses, owners and senior staff from within hospitality and associated industries to do the same, to help everyone across the trade. The people have helped us – now we help each other. “Whether you’re a trainee glass collector, a dishwasher, a cleaner, a nightclub cloakroom attendant, a DJ, a mixologist, a chef, a porter, a manager or even a business owner, The Ben exists to act as a safety net for you. “Anyone who works in hospitality, leisure or night-time industries can contact them in their hour of need and ask for help and support – they look at each case on merit and offer not only one-off grants but ongoing support as long as it is needed. Their mental health helpline and support are so essential in these stressful times, for all of us. “I have recently joined the committee of the charity and I’m hugely proud to be part of such a wonderful cause – I really want to ask the whole industry to get behind The Ben and join the team, to support staff should something go wrong.” All Radisson hotels in Scotland have signed up to be Friends Of The Ben - so Radisson RED Glasgow, Radisson Blu Glasgow and Radisson Blu Edinburgh have all taken the pledge. This makes them the first group to commit - and they’re urging others to join them. Graeme Cheevers of Unalome, Scotland’s latest Michelin starred restaurant, was keen to join the Friends Of The Ben

campaign as he wanted to provide back-up and support for workers in the industry across Scotland. Graeme said: “My big reason to get involved is to give hospitality workers some support after all their hard work. They have stuck with the industry through the hardest times any of us can remember, so I feel it’s important we try to show our teams we care, by making sure there’s someone there to help if for any reason we can’t.” Radisson RED’s Graham Chalmers was keen to stress the appeal is only aimed at those in a position to donate money, not businesses who are struggling already. He added: “We appreciate how tough things have been for businesses with inflation, the staffing crisis, rising costs and so on impacting businesses and households. We aren’t asking everyone – we are asking those who feel they are in a position to do so. “Young people, those often most in need, tend to not be aware of The Ben, so please tell your staff about it, and if you are one of those young hospitality workers then please make sure your friends in the trade know there is help out there for them if needed. “Small businesses or those which are not cash-rich may not be able to support staff and pay their wages if they’re off sick for months – that’s where The Ben can step in and help save the job, the person and the business.” You’re eligible for help from The Ben if you have worked within the hospitality trade for a year, whether as a chambermaid in a hotel, a bouncer in a nightclub, ANYTHING in the licensed trade. And if your company signs up as a Friend of the Ben and finds they’re struggling to keep your job, they can approach The Ben for help. Chris Gardner of The Ben said: “The Ben is YOUR charity – funded by the trade and there to support the trade. We don’t receive public funding so, simply, if you don’t support us then we won’t exist. “We are asking businesses who can afford it to sign up to pledge £25 a month, to allow us to keep supporting your staff, and indeed staff across the whole industry. “We step in when you can’t – whether someone is off long-term, or your business is struggling, or there’s a global pandemic – we are there. When you can’t help or support your staff, we are there. “And if you yourself need help – we are there. But now we need you. So please, help us help you.
