Oh & we now have a major international gathering descending on Glasgow with 30,000 guests descending on the city. Train travel suspended, bins not collected, but in the blue zone all is normal let the gathering begin....? Yeah right !!! When will the powers that be listen to the industry and it’s forward thinking people and do what is right ? Solutions like Room To Breath which has been proven to safeguard indoor venues are being ignored while the government spend £300k per week on above the line advertising to promote a fundamentally flawed scheme that causes more problems than it attempts to solve. THERE ARE BETTER WAYS We continue to fully support the #BEKINDTOHOSPITALITY & #SAVETHENIGHT campaigns and the very important message they carry the work NTIA & Graham Chalmers & Radisson Red have done to drive these campaigns have been outstanding & we ask everyone in the trade to put their weight behind them also. Industry News UKHOSPITALITY TO HOST EVENT AT COP 26 The event aims to showcase the industry’s sustainability initiatives. UKHospitality is inviting operators and industry representatives to attend an industry event at COP 26 next month. There they will join MPs, Scottish Parliamentarians, sustainability experts and suppliers to celebrate the great strides the hospitality industry is making on its sustainability journey. The event is free to attend and will set out the sector’s net zero ambitions, as well as offering attendees practical advice to reduce costs and carbon emissions. Speakers at the event, which will take place on Wednesday

10th November, from 2-6pm at Revolution Glasgow, Mitchell Street, include: • Mark Chapman, Founder, Zero Carbon Forum • Seema Malhotra MP, Shadow Minister for Business and Consumers In addition, operators including IHG Hotels & Resorts, BrewDog, Burger King and Compass will join a panel to talk about the opportunities and challenges involved in driving more sustainable businesses. RESTAURANT OPERATOR TARGETS TIKTOK BUZZ FOR RECRUITMENT In a UK hospitality first, Scottish independent restaurant and bar operator Buzzworks Holdings, is to launch a major campaign on TikTok to aid recruitment across its 13 venues. To cater to the rising trend in Gen Z TikTok users creating and sharing high-quality social content, the Kilmarnock headquartered business will use the social platform’s popularity to meet the recruitment crisis facing the hospitality industry head on. The pioneering #ineedajob campaign will run for three months, utilising content creators such as Scheiffer Bates, Scotland’s Steven McKell and 2020 Love Island winner, Paige Turley, to shine a light on the benefits of working within hospitality through light-hearted video shorts. Through an innovative design aimed at a younger demographic, applying for a job will also be speedier and more enjoyable than ever before through a simple one-

click process, or utilising the hashtag #ineedajob. The campaign from Buzzworks, which has ranked within The Sunday Times Best 100 Best Companies to work for in the UK for the past five years, hopes to generate an influx of Gen-Z applications, TikTok’s biggest users, through showcasing both the benefits of working at the familyowned business, as well as working within hospitality in general. Kenny Blair, Buzzworks Holdings MD, said: “It has been a challenging time for the hospitality industry across Scotland and beyond recently and operators are finding it increasingly difficult to attract and retain talent. Brand News NEW MASTER BLENDER FOR JOHNNIE WALKER AS INDUSTRY LEGEND RETIRES Emma will be one of a small, select group of people, and the first female, to take on the coveted role of Master Blender in more than two centuries of the business’s existence, the first being founder John Walker. Aptly named, although no relation to the Walker family, Emma joined Diageo 13 years ago and has gained extensive knowledge and experience of Scotch production and innovation to become a highly respected blender who has worked extensively on Johnnie Walker for the last six years. Her innovations include the Johnnie Walker Blue Label Ghost and Rare series and Jane Walker by Johnnie Walker.

Emma Walker succeeds Jim Beveridge OBE becoming the first female Master Blender in the 200-year Johnnie Walker story. Today Johnnie Walker, the world’s best-selling Scotch Whisky, announces that Dr Emma Walker will take over the reins from Dr Jim Beveridge OBE, who retires at the end of the year after more than 40 years at Diageo, 20 of which as Master Blender.

The role of Johnnie Walker Master Blender is one of the most coveted in the industry, and Emma will lead the 12-strong team of expert whisky makers in the pursuit of exceptional flavour, crafting and blending whisky from the four corners of Scotland to create the numerous Johnnie Walker variants which are sold in more than 180 countries around the world. During her career, Emma has worked in different areas of whisky production; gaining experience and understanding of how flavour develops in fermentation, distillation, and maturation, striving to ensure quality at every stage of the process. She has spent several years working with Jim to develop an encyclopaedic understanding and knowledge of whisky.

STRONGBOW PARTNERS WITH KWIZZBIT As pub quizzes continue to increase dwell time and bring customers together post-lockdown, the benefits of KwizzBit versus more traditional quizzes are plenty. Access to unlimited quizzes, cheat-proof software, no requirement for marking, simple to play anywhere, or by anyone with access to a smartphone, are just some of the benefits versus traditional formats. By introducing the contactless quiz, KwizzBit also makes the pub quiz a safer experience for customers.

Strongbow, has partnered with online quiz platform KwizzBit to support UK pubs, providing them with access to endlessly exciting quizzes to help drive footfall and frequency of visits. The makers of Strongbow Original, Dark Fruit and Cloudy Apple will provide 2,000 outlets with access to the platform, worth £250 each. The interactive quizzes ditch pen and paper for a smartphone, providing venues with over 5,000 new quizzes and the opportunity for pub teams to compete in the Strongbow national quiz to win cash prizes each month.

All participating outlets will also have access to a support kit containing posters, bunting, host t-shirts and instruction guides. A suite of social media advertising assets will also be available, to drive awareness and footfall – particularly helpful for quieter, mid-week occasions, with the most popular day to host a quiz being a Thursday, followed by Sunday. Our main challenge over the last eighteen months has been navigating our way through the ebbing and flowing Covid restrictions – especially given the different government rules North and South of the border, affecting our English and Scottish properties in different ways. More recently, we have focussed on resetting: preparing the business to fully re-open and welcome guests back.

We took the decision to keep all of our hotels open for key workers in line with Government restrictions, and took the opportunity to re-invest in our product with the refurbishment of some of our bedrooms, suites and public areas.

Support in the industry is vital currently, so we continue to work closely and collaborate with other local businesses and venues, reigniting existing and new relationships.

Our people are our passion; it was important to get the team back and motivated. Our focus was to meet the demands of increasing volume as restrictions lifted; it has been key to engage with the team and prepare them for returning to work. Throughout Covid, we have found the respective

In exciting news, we have recently rebranded our bar in Glasgow to ‘Jacks Bar’. Transformed into a bustling destination hotspot, we have created new branding, updated our cocktail menus, and even revamped the uniform! Over at Dakota Eurocentral, we have recently launched our new event space ‘Dakota Events’: boasting six

spacious event spaces, Dakota Events is the perfect destination for weddings, corporates and celebrations. Our three Scottish Hotels are preparing for very busy November with the Global Climate Change Conference, COP26, being hosted in the city. This event will draw an international audience and we are expecting a very strong rate performance. We are lucky to have team members who have been with us for many years that have worked in multiple departments; teams continue to support one another where needed. We are on a recruitment drive via our social channels and recruitment fairs, hoping to source some brilliant talent to support. We are also ensuring that we carefully manage the flow of business so that we are able to provide exceptional guest experience at all times. It’s undeniable that the industry has had to be especially flexible in the last year; whilst we have experienced some supply issues, it has been

important to adapt our menus to any changes due to limited produce. It has been important to maintain supplier relationships and support each other; Enotria & Coe, and Hallgarten Wines have been invaluable with communication and pivoting product lines. Hospitality and Events are back, and business is moving at a fast pace. Now is the time for our Sales teams to continue to be more proactive than ever before, maintain relationships with clients, and to be available with quick responses to all enquiries. It’s important for us that our Dakota service standards are now back to how they were pre-Covid; to keep the team spirits up and for us all to be kind to each other. We have all been through challenging times, and it’s not over yet. We must remember why we are all in the industry: to make people feel special when they visit us.

xperience is very important to customers as they look for the complete package when venturing out n about, immersive surroundings, friendly welcoming staff, good cocktail menu, & a good atmosphere are probably high on the list of musts & one venue in particular has been delivering all of the above regularly, not to mention their is a TREE in the middle of the venue what more could you ask for in being eco friendly in supporting climate change in the lead up to COP26? We catch up with Iain Reid General Manager of the fantastic Metropolitan in Glasgows merchant city on how the venue is driving forward in a very positive way & how they are dealing with the challenges everyone has faced. Metropolitan has been trading since 2002 and is one of the largest cocktail bars and restaurants in Scotland. We have varying clientele from week days to weekends with DJ’s until 3am at weekends and a busy lunch and dinner services during the week. Metropolitan sits at

the heart of the Merchant City and like many other city centre venues across the country, we have had to endure multiple closures over the last 18 months. Fortunately, we have been able to retain our full team which has helped us significantly over the last 2 years. We have a very

supportive owner, with his continued support has made the last 18m months easier for us all as a team. We have seen an excellent return to business since reopening. Even with the restrictions placed upon us us, being a large scale venue we have been able to have a high number of seated areas which helped with the initial rules when we first came back and thankfully we have seen trade continue at a level above what we enjoyed prior to the lockdown. Customers in general have been great and on the whole supportive of the ongoing challenges we face and understand that the restrictions have not been put in place by choice. On the whole it has been great to get back to interacting with the public and seeing people out enjoying themselves again. Going forward I think the lines of communication need to be clearer and being in the industry we simply cannot find out changes to our operations from watching the news and having to react last minute. The furlough scheme has been amazing to keep everyone in a job but the support given overall to cover costs simply hasn’t stacked up. Since reopening the supply chain has been an issue but working closely with our key suppliers such as Inverarity Morton and Alexander Wines we have been been able to keep up with demand. The key brands we work with like Bacardi, Pernod Ricard and Brown Foreman have also been a great help and we value their continued support. The

food supply chain has also been an ongoing challenge and with the upcoming COP 26 road closures it is looking like again, local businesses logistics have not been taken into consideration at all and we will see more disruption most likely in the coming weeks. We are building up our team to allow for more flexible working as this is something that as an industry we are seeing needs to be added in order to make hospitality an attractive sector to work in and build a career. We have plans to invest further in our Restaurant and Private Dining areas in the coming months with the addition of a new food menu and wine list. Our new cocktail menu will be launching next month just in time for Christmas. In January we will see the launch of our mid -week cocktail and drinks deals which will run into March. With the Hogmanay Party returning this year and further large scale events and conference dinners in 2022, an excellent boost to all businesses in Merchant Square, we are looking forward to an exciting time ahead. I would like to thank the amazing team we have at Metropolitan and all of our partner brands as without everyone’s continued hard work since reopening it simply would not be possible. These partnerships make it exciting to see what we can achieve moving forward for the business through our busy Christmas period and into 2022.

ontrade@gilsongray.co.uk Now the Licensed Trade is open again, is it time to consider you and your family? The last 18 months has brought hardship to many people. For some life will never be the same again. Not being able to trade has impacted many business and their operators and employees financially. Statistics now show just how many businesses have borrowed to try to head off disaster, some using Governmental backed loans such as CBILs and Bounce Back to see them through that difficult period and allow them to have a future. For many businesses Jo Millar the level of uncertainly Head of Licensing presented was beyond challenging and could not be compared with previous experiences. But what happens if disaster strikes now and you or another key person in your business dies or becomes seriously unwell? WHERE ARE WE NOW? In the wake of the pandemic, the licensed trade has reopened and is proving that its operators are more determined than ever to succeed. Many operators are still reeling from the effects of the pandemic, in some cases both from business and personal losses. While business security is important, that is affected by the welfare of the individuals in the business. No doubt, operators welcome personal security for themselves and their families. With ever moving goal posts from the government, it remains a frustrating time. There are hints in the national news that restrictions may be brought back in some form as figures are on the rise and there are Christmas concerns. Our Gilson Gray licensing team regularly speak

to licensed trade clients who tell us they are worried about restrictions being imposed again. This uncertainty is difficult for business and people in general to plan around – everyone wants this Christmas to be a great one to allow business to trade and families to get together again. Putting things in place to not only protect yourself, your family and your business should the worst happen, is now more important than ever. Recent research by Legal and General found that 52% of small and medium sized businesses felt they would cease trading within a year following the death or serious illness of a key individual. This demonstrates why it is imperative that business owners to take action. CONSEQUENCES OF NOT PUTTING THINGS IN PLACE? Unfortunately, we at Gilson Gray often hear first-hand experience of the consequences of not putting the relevant business protection in place. Chris Wilson, a Financial Adviser in our Gilson Gray Financial Management team, has this sobering and very personal tale. Chris says: “I lost my dad to a heart attack when he was only 54. Prior to that, my dad had a very successful engineering business, however, he did not put any contingency plans in place to limit the financial impact if he became seriously ill or passed away. That meant I had to go through the difficult process of winding the family business up, including telling existing staff they no longer had a job. That was an extremely tough thing to have to do, at an already difficult time. Had my dad had the right financial protection in place to limit the financial impact on his business, I could have continued my dad’s legacy. Through sharing this story with others, I hope to make them aware of the reality of this kind of situation, and the fact we cannot presume it will not happen to us. This is even closer to home for everyone in light of the recent pandemic! There are steps you can take now, simply and without great expense, to secure your business and avoid the really difficult experience which my family and I went through.”

WHAT SUPPORT IS AVAILABLE TO BUSINESS OWNERS? To limit the potential financial impact of a scenario like the above, a business owner can set up ‘Key Person Cover’. This is put in place for individuals whose role is crucial to the overall success of the business. The premiums are paid for by the business, resulting in some tax advantages. Should the worst happen, the business would be paid a lump sum. This allows it to take positive action such as: bringing in a temporary replacement; averting potential loss of profits; and continuing to trade and serve its customers. For businesses where there is more than one owner (shareholder), operators should consider protecting the interests of the business owners and their immediate families. Shareholder protection allows business owners to buy shares back from any shareholder should the worst happen. There are different ways in which agreements and protection can be put in place however, the key thing is that it allows the surviving shareholders to retain overall business control to keep the business going. STAFF RETENTION – IS THERE AN ANSWER? While there may not be a single answer, there are options and action operators can take to help retain staff. A knock on effect of both Brexit and the pandemic is the shortage of workers in some areas and rates of pay those able to work in the UK are seeking. Employees may not take into account increased wage bills is another financial burden on licensed trade businesses, so it is worth considering other forms of benefits that you could offer staff which may be more cost effective. The cost of these are paid from the business so again there are some tax advantages. • A group Death in Service Scheme is one such benefit. This allows individuals, especially those who may

previously have found it difficult to be accepted for cover due to health reasons, an opportunity to put in place cover without any medical underwriting.
