t’s January, a time when we always expect great things to occur as a new year begins. With December’s winter solstice behind us, the days ahead promise more light and less darkness; that alone gives us a feeling of hope as if “every little thing is going to be all right.” And, they are. I for one look forward to knowing that no matter what, the dark periods do not last forever;

eading a few of the best romantic stories of all time may be a good way to get in the mood for the weddings coming up among our friends and families this year. Outlander by Diana Gabaldon is the clear winner among the random eight top-ten lists surveyed. It appeared on five of the lists with a weighted score of 32. This is a time travel romance. Married World War II nurse Claire Randall mysteriously finds herself in 1743 Scotland where she is forced to marry young clansman Jamie Fraser who turns out to be a lot more desirable than she thought at first. Jane Austin fans, of whom there are very many, would certainly move Pride and Prejudice up a notch, but in this informal survey, it came in second with a score of 22, only appearing on four of the lists. Of course, the story centers on Elizabeth Bennet and Mr. Darcy, who also find each other less than compatible at first. Next on the lists is The Bride with a score of 19. In Julie Norwood’s novel, Jamie is the choice of a powerful Scottish laird to be his new bride. They marry, but Jamie vows he will never have her love. She further learns that there is a rumor that he killed his first wife. Also high on the lists of favorites were Wuthering Heights by Emily Bronte, Jane Eyre by Charlotte Bronte, Lord of Scoundrels by Loretta Chase, Beautiful Disaster by Jamie McGuire, Anna Karenina by Leo Tolstoy, and The Thorn Birds by Colleen McCullough. PIONEER PRIEST AND FOUNDER OF THE MOTHER CHURCH

W

hen the earliest European settlers arrived in what was to become Visalia, not only did they bring their possessions, they brought their religious beliefs as well. They built “Fort Visalia” in the fall of 1852 for security, but the enclosure also served as an interdenominational church. In fact, the three Glenn sisters were married inside its walls. Once these early arrivals discovered there was no need for the fort, they ventured out and built houses, businesses, and churches. From the earliest time, several denominations including the MethodistEpiscopal South and the Christian Church were in Visalia. The Catholic Church, although not part of the first

wave, was not far behind. In 1859, Father Francisco Mora, Pastor of the San Juan Bautista Mission, offered mass for the first time in Visalia and planted the seed for a Catholic Church. The following year Father Mora returned and gave the effort another push, but very little happened until Father Daniel Francis Dade was named Visalia priest by Bishop Thaddeus Amat. At the time of his “call,” Father Dade was serving as the Santa Barbara parish priest. When word of his impending departure reached his Santa Barbara parishioners, many signed a petition imploring the bishop to reconsider. In part, it said, “We the undersigned, inhabitants of this place,

most respectfully request that the Rev. Daniel F. Dade be retained among us. His Christian virtues and charity have endeared him to this community, and we cannot but view his removal as a great loss, both to Catholics and nonCatholics.” Their plea to keep him was not successful and Father Dade left Santa Barbara. In 1861 he arrived in Visalia, then a small remote frontier town with a population of about 600. He had no church building, so he conducted services in homes and halls. That changed when Gideon Aughinbaugh offered him a piece of property complete with a two-story brick building on it.

The building, part of which served as a stable, was not ideal, but Father Dade graciously accepted it. With some fix up, it served as the church, a boy’s school, and the Father’s home. He named the parish, Church of the Nativity of the Blessed Virgin Mary, and he called his school Academy of the Nativity. He was the only teacher and offered classes including English, Latin, Greek, French, Spanish, and Italian. When Father Dade was not teaching or caring for his parishioners in Visalia, he made long distance spiritual rounds with his “gray horse and rickety buckboard,” covering a jurisdiction that stretched from Mariposa to Havilah, now a ghost town once southeast of Bakersfield. The Visalia church, located near the current St. Mary’s Catholic Church, became the “mother church” for many Catholic congregations established throughout the southern San Joaquin Valley. Although he was a Catholic priest, Father Dade was highly respected by people of all faiths. According to Sister Mary Thomas, his biographer, “He made himself loved universally by old and young, by Catholics and non-Catholics alike. In social affairs, Father Dade mixed with all regardless of their religious affiliations.” Although many of the early church records are gone, the first Visalia marriage performed by him took place on May 30, 1861 between Edward Milford and Catherine Kickem. He also signed the first baptismal record for Joseph Benson. For the next several years, Father Dade taught at his school, ministered to his growing Visalia congregation, rode the missionary circuit, and helped with numerous non-church community activities. By 1868 he began working on plans for a larger church. He had space near the original church, so on October 18, 1868, construction on the new parish

began by local contractors Redd & Palmer. On Sunday, September 26, 1869, at 10:30 a.m., the dedication ceremony for the brick Church of the Nativity took place with Father Dade and a large number in attendance. The solemn event was led by visiting Rev. Father Patrick Henneberry, a friend of Father Dade. By 1872 Father Dade’s hard work

was taking its toll. He was exhausted, which was made worse by the malaria he had contracted. Then in April the beloved pastor was seriously ill with “hemorrhage of the stomach.” He tendered his resignation from the Visalia parish and was given a less stressful assignment as principal of a boy’s school in Rohnerville, California. Word of his leaving was a blow to the parishioners, but as a parting gift, they gave him $450 and shared their feelings

in an open letter in the Tulare Times published August 31, 1872. They said, “During your sojourn in our midst, you have proved yourself a devoted pastor by your holy work and conversation. By your zeal, energy, and industry, you have done much to advance the material interests of this community and have ever been the friend of education and progress.” The departing padre answered their kindness by writing back, “More than a decade of years have I been in your midst, laboring in a quiet unostentatious way for your spiritual advancement, for the prosperity and improvement of our beautiful little town, for the culture and education of your dear little ones, your richest and most precious treasures, during all which time I have been cheered and encouraged by you…Oh, how can I thank you? Farewell, dear, kind friends, farewell.” On April 30, 1874, the Visalia Weekly Delta reported the sad news. Father Dade, Visalia’s first Catholic priest had died on April 2, 1874, in Rohnerville at the age of 58. He had been in Visalia during some of its darkest days and had helped the little town survive. His conciliatory and compassionate style helped bring people together and it was his leadership and hard work that formed the foundation for Visalia’s St. Mary’s Catholic Church. I am grateful to Sister Mary Thomas for her Father Dade biography called Apostle of the Valley, and to contemporary historian and friend William “Bill” R. Allen for his book It Started in the Stable. Both are wonderful local history books and are still available.

Typically, most wedding tips focus on the bridesmaids, but we're going to take a moment to focus on the men’s attire. A great way to incorporate this color is in the men’s accessories, which can include bowties, traditional solid ties, matching patterned socks, or simply embellishing the suits with a pop of solid greenery for the men’s boutonnieres. A few companies I would recommend looking at are The Black Tux and The Grunion Run, which also offer custom monogramming, doubling as a day-of wedding gift. Now I am sure you’re wondering about the bridesmaids. Other than the obvious choice of using the Pantone color in the bridesmaid dresses, we can continue the accessories theme with one added twist! While most weddings tend to stick with traditional dresses for the ladies, a more recent trend is to have your bridesmaids wear a skirt versus a dress. Or perhaps you can select a neutral tone dress and incorporate the Pantone color in your bridesmaid’s shoe selection or jewelry.

The great thing about this year’s Pantone color selection is that it’s already used in floral design. However, instead of including greenery as just a filler in the floral arrangements, consider making the bridesmaid’s bouquets entirely from greenery. If that’s too much green for you, a more subtle option is to wrap green velvet ribbon around a floral bouquet for a pop of color. Another idea is to use large greenery leaves and create a backdrop for your ceremony area.

TABLETOP DESIGN

There are many elements involved in successfully pulling together a table setting, which includes linen selection for tables and napkins, runners, menus, place cards, glassware, table numbers, and candles, just to name a few. When it comes to your table, there are subtle ways you can incorporate the Pantone color without your wedding looking too bohemian or tropical. For example, you can place a greenery sprig on top of your napkin at each place setting, or perhaps use a colored green glass at the bridal party table for an extra pop of color. If you’re feeling really risky, incorporate a green printed runner on the tables; the possibilities are endless.

We all love quality paper goods, and even though they might get tossed at the end of the evening, ensuring your wedding invitations, menus, and signage all have a cohesive theme can be important to the overall look of your wedding. Incorporating the Pantone color into the tabletop menu and ceremony program design is a creative way to tie together the theme of your wedding. You can even include the same design for signage around the ceremony and reception site, including the seating charts, the ceremony entrance, the guestbook, and the table numbers.

ROMANESCO SOUP WITH GOUDA AND GRILLED BRIE CHEESE INGREDIENTS

DIRECTIONS

2 heads romanesco, cut into florets 2 shallots, chopped 3 T olive oil 2 C chicken stock ½ C heavy cream Salt to taste Pinch or two of white pepper

Toss the florets with the olive oil, place on a baking sheet, and roast for 30 minutes. Place the olive oil in a sauté pan over mediumlow heat and cook the shallots until translucent. Transfer the romanesco to a soup pot. Add the chicken stock and shallots. Cook for about 15 to 20 minutes, until tender. Purée in a blender or food processor. Transfer back to the soup pot, add the cream, salt and pepper to taste. Garnish with small pieces of the romanesco.

GRILLED CHEESE TOASTS INGREDIENTS Mayonnaise to spread 16 pieces of bread (I use La Brea Bakery sunflower seed bread) 8 slices of Gouda 1 wheel of Brie, cut into ¼-inch slices DIRECTIONS Spread mayo on one side of bread. Heat a flat griddle or sauté pan and brown one side of the bread until golden. Continue with all the slices. Lay the single slices down on a sheet pan. Put a slice of Gouda and a slice of Brie on each toasted bread, then top with the second slice of toasted bread. You can prepare these in advance, and when you are ready to serve, place in the oven to melt the cheese and crisp up the bread.

POACHED PEARS WITH CARAMEL SAUCE AND ICE CREAM INGREDIENTS 4 pears, peeled and cored 2 C water 1 C sugar 3 cloves 2 sticks cinnamon 2 oz brandy DIRECTIONS Place the water, sugar, cloves, cinnamon, and brandy in a saucepan. Bring to a boil. Add the pears and reduce the heat to medium-low. Remove from pot and place in individual bowls. Poach for about 10 minutes. Add a scoop of your ice cream of choice.

CARAMEL SAUCE INGREDIENTS 1 C brown sugar 1 stick unsalted butter ¼ C cream 1 tsp vanilla extract DIRECTIONS Cook ingredients in saucepan to desired thickness. You can drizzle over the pear, add glazed nuts to garnish with mint, or you can make designs on a silpat or sheet pan with parchment. It will harden and you can break into designs.

SALMON ROULADE WITH SUN-DRIED TOMATOES IN A LEMON BUTTER SAUCE INGREDIENTS 3-4 pound whole piece of salmon, skinless 1-2 T olive oil 1 C sundried tomatoes, packed in oil 1 lb. baby spinach 2-3 shallots, thinly sliced and caramelized in olive oil until golden brown 2 T olive oil 2 T butter DIRECTIONS

SAMBUCA PRAWNS WITH ARUGULA AIOLI INGREDIENTS 16 prawns (U-15 is the size used here, which means there are 15 shrimp per pound) ¾ C Sambuca liqueur ½ C olive oil 1 sprig rosemary, finely chopped 1 C quality mayonnaise 1 lemon, squeezed 2 handfuls baby arugula DIRECTIONS For the marinade, mix together the liqueur, olive oil, and rosemary, and soak the shrimp for three to four hours if you can (at least one hour). Grill shrimp on your BBQ, one minute per side, or in a sauté pan for a minute or two, just until pink. Set aside and make aioli. I prefer these served room temperature. To make the aioli, place the mayonnaise, lemon juice, and arugula in a food processor and blend.

To make the filling, sauté the spinach with olive oil to wilt. Remove excess water. Set aside in a colander. Cut a piece of aluminum foil the length of the salmon along with a piece of parchment paper. Place the parchment on top of the foil and brush the parchment with enough olive oil to coat lightly. Place the salmon on the parchment and with a sharp knife, carefully butterfly it lengthwise to fold open. Be careful not to cut all the way through. You want to open it out into a thin, double fillet. Season with salt and pepper. Spread the spinach, sun-dried tomatoes, and shallots over the side closest to you. In a jellyroll fashion, you will start rolling the salmon as you would a sushi mat. Use the parchment and foil as an aid in this process. Keep

rolling until you have a semi-tight roll. To finish, roll the foil-parchment sheet around the salmon and twist the ends together. Chill for at least one hour to firm the roll. When you are ready to serve, preheat the oven to 450° F. Cut the roulade into about six equal slices, about three to four inches thick, cutting right through the foil. Heat olive oil and butter in sauté pan over high heat. Sear each side for about two minutes. Place on a baking sheet to finish in the oven. Cook about five to six minutes per inch or about 15 to 20 minutes. To serve, remove the foil wrappers and garnish with sauce.

LEMON BUTTER SAUCE INGREDIENTS 2-3 shallots, peeled and chopped 3 oz champagne vinegar 3 oz white wine 1-2 tsp lemon juice 2 T Dijon mustard 1-1/2 C heavy cream ¾ stick butter DIRECTIONS Place shallots, vinegar, and wine in a small saucepan and boil until reduced by half. Add the lemon juice and Dijon. Add cream and cook over mediumhigh heat. Let thicken. Remove from heat and add the butter.

FRESH MINT FRENCH 75 The French 75 is a classic cocktail that fits this new trend in drinking. You can add a twist to the original by infusing the simple syrup with a seasonal herb. Fresh mint is used here, but it can be substituted with summery basil or earthy rosemary. Make the syrup at least one day ahead, and allow the mint to infuse the syrup during that time for even more fresh mint flavor. INGREDIENTS Mint Syrup (prepare in advance) 1 C of sugar ½ C water Large handful of mint leaves, torn 1 oz gin ½ oz fresh lemon juice ¼ oz mint syrup Ice Sparkling white wine or champagne Lemon zest and fresh mint for garnish PREPARATION To make the mint syrup, heat the sugar and water over medium heat stirring occasionally, until the sugar is completely dissolved and syrup is clear. Remove from the heat, add the mint leaves, and stir. Let cool for at least one hour, preferably 24 hours. Strain the syrup and discard the mint when ready to use. Add the gin, lemon juice, mint syrup, and 3 to 4 ice cubes to a cocktail shaker. Shake until chilled, about 30 seconds. Strain into a champagne glass. Fill the glass to about ¾ full with sparkling wine and garnish with lemon zest and mint before serving.

ORANGE IPA PUNCH Beer cocktails are another chic way to incorporate low alcohol drinks into your cocktail hour and reception. The citrus flavors of an IPA make a delicious mixed drink and you don’t need to be a beer lover to enjoy it. The juice of oranges and lemon, along with the brightness of citrus vodka, tame the bitterness of hops for a balanced, mildly sweet beverage. INGREDIENTS 4 oz fresh navel or Cara Cara orange juice ½ oz fresh lemon juice ½ oz citrus vodka Ice 3 oz chilled IPA Orange slice and lemon zest for garnish INGREDIENTS Add the orange juice, lemon juice, and vodka to a cocktail shaker. Drop in 3 to 4 ice cubes. Stir well for 30 seconds. Strain the cocktail into a serving glass. Pour in the IPA. Let any carbonation settle. Garnish with an orange slice and strip of lemon zest before serving.

Wherever you plan to visit, be aware of the seasonal weather at your destination to ensure your memories are filled with quality time spent together rather than hunkered down in the middle of a monsoon or alone with your straightening iron as humidity gets between you and your spouse. Many couples prefer to visit a destination where neither person has been before; this allows you both to experience the location for the first time together, which will create truly special and lasting memories. ACTIVITY LEVEL From beachside lounging to mountain climbing, the list of activities to participate in is as extensive as locations to choose from. All-inclusive resorts, such as Sandals in the Caribbean Islands or The Royal Playa del Carmen in Riviera Maya, offer a myriad of activities and dining possibilities, all while leaving your wallet safe in the room. Just be aware; you will be surrounded by many other newlyweds and couples.

Although traveling to the Maldives or Tahiti may call to your exotic senses, these destinations might not be the best choice when the trip itself leaves little time to actually be there. And if all you want is to vegetate on a beach, the expense of an exotic locale may be wasted. weather. The day flew by so quickly, it felt surreal to both of us. It may sound cliché, but everything was perfect. The ceremony was sweet and classic, outside with rolling green hills in the background. We were so overwhelmed that we had so many friends and family there to support us, it was almost hard to digest. What moment did you realize you were in love? It was after we had been dating for three months and we took a trip from Azusa Pacific University, where we met, to Visalia, Kevin’s hometown. I met his family for the first time. After that trip, I knew without a doubt that I was in love with him. I loved Visalia and I could see our life there someday. Our future became real. Kevin felt the same after seeing me with his family and in his hometown. What is the biggest challenge of your current stage of marriage? Adjusting to almost always being together. Sharing a home and figuring out how each other works. Creating a new normal for routines. The everyday life adjustments. What is the most valuable lesson you’ve learned from marriage? You are not always going to agree on things.

Sometimes you have to disagree and trust the other person’s decision. Just because you have different ways of doing things does not mean it is right or wrong; it’s just different. What do you think is the secret to a long and successful marriage? Communication and faith. Being honest with each other and not expecting the other person to know what you are feeling or thinking. Not being afraid to communicate something. Just being honest and having faith in each other, our marriage, and faith in God to bring us together when times are tough. In your years together, what is a significant memory that stands out to the both of you? It was the first night we really talked and we were out line dancing with a group of friends. Neither of us knew how to line dance, but one of the couples made us dance with each other. Nervous and somewhat offbeat, we made it around the dance floor once then quietly stepped off. We didn’t feel very successful with the dance, but ended up talking the rest of the night. Now we both love to dance together, even if it is occasionally offbeat.

MARRIAGE of air travel. The best part of the day for us was exchanging the vows. In that moment, everything faded to black and we only focused on each other; for a moment, it was only us and God. That moment has become a cornerstone for us. What moment did you realize you were in love? Michael: I stole an impromptu dance in front of the giant Hollywood Studios globe one night. The music was playing and I uncharacteristically grabbed Gail and began dancing with her. In that moment of doing something for me which was so brave, I knew I loved this woman.

How old were you both when you got married? We were both weeks away from turning 24.

Gail: I had a particularly rough day at work. When I got to my apartment, I found Michael had left a blow up Godzilla punching bag and had “My Best Friend” by Tim McGraw playing on repeat. Hearing those lyrics, knowing that he knew what I needed, even before I did, I thought, wow…I love this man.

Describe your wedding day: It was a perfect fall southern California day. We were surrounded by family, friends, and a ton of college students. Just days after Sept. 11, those that traveled felt brave for attending despite their natural fear

What is the biggest challenge of your current stage of marriage? Time, balance. There is never enough of it. We both work more than full-time jobs that occupy our heart and head. We have two amazing boys that need parents.

We try twice a year to escape just the two of us overnight. Sometimes they’ve been elaborate, sometimes they’re local, but for us, it’s about time and space to be husband and wife. What do you think is the secret to a long and successful marriage? Live each day. Avoid ‘once the kids get older’ or ‘once things aren’t so busy at work’ or, or, or. We’ve found too often it's easy to put marriage in the backseat for what seems to be more pressing, immediate issues. But for us, a strong marriage means we can get through the tough other things. In your years together, what is a significant memory that stands out to the both of you? Becoming parents. Buying our first home. The vacations we’ve spent just the two of us. All time things, which is why we work so hard to invest that time now. We know it’ll make for more significant memories later.

Describe your wedding day: We scheduled a morning wedding to avoid the intense July heat. Surprisingly, we had a little rain that day. We were married by our Calvary Chapel friend and pastor. After, we celebrated at the reception with mariachis, food, dancing, and about 80 of our closest friends and family. What moment did you realize you were in love? When we could not envision any future without each other, we knew it was a done deal. What is the biggest challenge of your current stage of marriage? Finding alone time is a challenge. Between work, our daughters, and their busy

schedules, sometimes it's difficult to make time for a getaway or even a date. What is the most valuable lesson you’ve learned from marriage? We've learned that every challenge, hurdle, or difficulty, must be faced together. We approach every decision or trial, as a team. What do you think is the secret to a long and successful marriage? It's not one single ingredient, but several: we are best friends, we have fun and laugh together, we are committed to the end, we have common goals, and most importantly, we have placed God at the center of our marriage. In your years together, what is a significant memory that stands out to the both of you? Most definitely the birth of our three girls. They made us complete. After 10 years of being a married couple, they turned the two of us into a family of five.

What moment did you realize you were in love? We met in college, in several classes together. Can’t recall a specific moment, but it was only a few months until we both knew we were destined to share life, love, and music together. We married nine months after our first date.

What is the biggest challenge of your current stage of marriage? Juggling our two jobs and staying in touch with our children and grandchildren. What is the most valuable lesson you’ve learned from marriage? Keep working on it! Divorce wasn’t an option. Working things out, knowing when it’s the best time to talk, and making it a priority. Caring for one another and learning to forgive. What do you think is the secret to a long and successful marriage? Working together and sharing interests. Playing together. Making our relationship a priority in family and work. Worshipping and praying together. In your years together, what is a significant memory that stands out to the both of you? Traveling on a Mediterranean Cruise to Israel and walking where Jesus walked has impacted our life and ministry together.

Describe your wedding day: We were still away at college and our wedding was planned by our parents, so it was somewhat of a surprise – and beautiful! We remember it was a very long day, ending with a family and friends dinner at the bride’s home. When did you realize you were in love? Probably sometime in the first year of dating. It’s hard to say since we dated for 3 ½ years before we saved enough money to get married and finish school. What is the biggest challenge of your current stage of marriage? Adjusting to retirement; reevaluating the importance of previously-made goals; keeping busy and finding new interests.

What is the most valuable lesson you’ve learned from marriage? Compromise and accept not always getting your way. Value others and work hard to make relationships successful. What do you think is the secret to a long and successful marriage? Just be nice; share the load; compromise; stick it out when arguments come and try to work on your own attitude; understand that no one is perfect; find activities that you both enjoy; keep criticism to a minimum and use lots of praise and thankyou; use humor when you can to diffuse the tension. Most important to us is worshiping together every week and being involved in our church. What is a significant memory that stands out to the both of you? Family vacations to the beach, mountains, cruises, Catalina with our kids from babies to adulthood.

Beverley, 20; John, 22 Describe your wedding day: It was a long time ago and we don’t remember much about it except that one of the bridesmaid’s hats was missing, and John had to make a bee-line to Fresno right afterwards. When did you realize you were in love? We never did really “fall in love” as such, but we learned to love and respect one another as time went on. What is the biggest challenge of your current stage of marriage? To stay healthy and to deal with the many health problems you experience as you age together. What is the most valuable lesson you’ve learned from marriage? No one is an

island; to work out your problems and issues together as you go along. What do you think is the secret to a long and successful marriage? The three F’s: friends, family, and faith. Marriage is too big to try to do it alone. If you have faith and the love of Jesus in your heart, that relationship will really help work out your issues. Our family (of about 32) loves to get together for various occasions, and we are blessed to have the support of many friends. What is a significant memory that stands out to the both of you? Most recently, it was being chosen King and Queen of Kings County Homecoming in 2011. Also, the many trips we took together to Europe and in the US. The greatest is the blessings received raising four God-fearing children. All are believers and so are their children and grandchildren.
