CUISINE FROM DIFFERENT COUNTRIES


We are going to do a tour of some countries of the world to know its gastronomy and its popular holidays.


NEW ZEALAND

New Zealand has a notable British

nfluence regarding its food.

New Zealand, a country composed of islands, offers a

wide range of fish and seafood, all of qreat

quality, which influences in a decisive way its culinary

radition, this doesn't mean that there aren't plenty of meat

dishes, especially lamb or pork.


NATIONAL PRODUCTS:

We can mention the kiwi,

amb ...

CUSTOMS:

The majority of new-zealanders eat their main meal in the

evening. The majority of families try to eat dinner

ogether several times a week.


TYPICAL FOOD:

* Lamb is one of the most popular traditional dishes.

It is almost always cooked in the oven together

with potatoes and zapallo ( a type of pumpkin ). It is a

tradition to prepare it every Sunday.

* Fish and chips ( fish with potatoes fried ) is a typical

ood of New Zealand that is served

wrapped in newspaper.


* Hangi MaorĂ­, is a local dish of the maorĂ­ culture, it consists of putting meat or fish in the oven accompanied by ( sweet potato ) in baskets and cooking it underground. * Fried whitebait is made with scrambled eggs and small fish and tomatoes.


As a dessert we can choose: * Pavlova, it's a type of meringue covered with whipped cream with fruit on top.

* Lamingtons, a type of spongy cake covered in chocolate, raspberry jam or desicated coconut.


* Anzac biscuits.

The most popular drink is beer,it is served in glasses full up to the top and without foam. It is also common to find all tupes of fruit juice.


POPULAR HOLIDAYS: The Day of Waitangi stands out, it is the national day of New Zealand and is celebrated on February 6. This day is celebrated with concers, activities for children and traditional markets.


On Boxing Day they eat the left overs from Christmas ( Christmas pudding, stuffed or roast turkey, roast ham, cranberry sauce, cherries, strawberries etc ).


CHINA Food seems to be the core of all the significantevents ( weddings, births... ) Some of the original food products from China are: * Rice, (constitutes the prop of the chinese diet ).


* Soy bean, ( constitutes an important part of the Chinese diet. Both the milk and the sauce are extracted to be used in seasoning. The soy bean shoots are used to aceompany many Chinese dishes ). * Tea, ( has it´s roots in China. Te is the national drink of China.


* Chinese ingredients: The principal ingredients used in Chinese gastronomy to season are garlic, ginger, Chinese parsley or corriader and green onions. * Sauces and Chinese spices: Soya sauce, oyster sauce, five spice powder, rice vinegar...


* Chinese vegetables: Bok choy, Chinese aubergines, Chinese cabbage,

Chinese broccoli, soy bean shoots, Chinese mushrooms,

bamboo shoots...


* Other basic ingredients: Pastry for spring rolls, tofu or soya cheese, noodles, rice noodles.


COOKING EQUIPMENT:

* A wok is a practical utensil often used

for frying.

* Cleavers and cutting blocks or chopping tables are

excellent for cutting, mincing, crumbling, griding and

crushing any type of food. Sometimes,

knives have a hole in the front part.


* Spatulas are often used for cooking and mixing ingredients, ladies for frying ( excellent to lift food out of boiling oil ), long chopsticks for cooking ( ideal to sautĂŠ, fry, beat eggs, mix noodles and stir ingredients ). * Bamboo or metal steamers ( to cook in steam ). The favourite food for eteam cooking is fish, meat or seafood. One of the most popular dishes is skeamed fish with ginger, steamed


crab, and of course the famous dim sums.

Traditional steamers are made from

bamboo.

The main methods of cooking are frying, roasting, boiling

and stir frying, which involves stirring all the ingredients

ogether that have been cut into small pieces, over a very

high fire, using very little oil. Cooking

ime is very short, five minutes.


A balanced Chinese food consists of two elements: - The fan element from starches and cereals ( rice, noodles ). - The tsai element that contains meat and vegetables.


TABLE UTENSILS: A typical table serving includes: - A bowl of rice. - Chopsticks. - A porcelan spoon of soup. - A plate to put under the bowl of rice used for bones and discarded food. - Small plate for sauces. - Cup of tea.


HOW A CHINESE MEAL IS SERVED: A typical Chinese meal normally consists of various �strong plates�. Usually all the plates are brought to the table at the same time and everybody helps themselves. There are normally a couple of meat dishes, one vegetable, fish or seafood dish and a soup. Boiled rice is the central food and the


base for the individual chopsticks that are served. Desserts are not common. They normally finish off with fresh fruit. Fortune cookies are not from China, they are an American invention. Frozen drinks, sodas or juices are not served with typical Chinese food. The Chinese enjoy a cup of tea or soup with their food.


TYPICAL DISHES: 

Three delights fried rice.

Pork in sweet and sour sauce.

Won Ton.

Foo Yung.

Chinese mushrooms in vinegar.

Spring rolls.

Salad.


Prawns in ginger.

Chop suey.

Fried banana.

Quince balls in sesame and coconut.

Shark fin soup ( one of the most famous dishes of the region ). Dim sum ( afternoon sandwiches that can be eaten

accompanied with green tea. They can have various fillings: meat, chicken, tofu, seaweed, vegetables...


TRADITIONAL HOLIDAYS: Chinese festivals are based on the lunar calendar. Of all the traditional Chinese holidays, the most important and awaited festival is the spring holiday, when the Chinese New Year is celebrated. Some other important celebrations are: * Chinese New Year. This holiday takes a lot of preparation. Here are some of the traditional dishes served on New Year´s day


Meat balls for good luck.

Mandarines for prosperity.

Apples for peace.

Sweet rice cake for increased wealth every year.

Fish for abundance.

Vegetables and noodles for a long life.

Chicken for wealth.

Mustard leaves for a good crop.

Soup to make this year better than the

last.

* Moon holiday or Mid Autumn Festival. This is the night the moon is at it's brightest. Relatives and friends meet to enjoy the moonlight and of course to eat moon cakes.


* The Lantern Festival. Celebrated on the 15 th of the first lunar month which coincides with the first full moon of the year. A typical food for this day is sticky rice balls stuffed with sweets or meat.


* Dragon Boat Festival. It's a day full of emotion with the teams competing to cross the finishing line. A tradition during this holiday is to eat Zongzi ( sticky rice wrapped in bamboo or cane leaves ).

Apart from these tradictional Chinese holidays, many

local festivals are celebrated like the festival of Bin Hills in Hong Kong


BRAZIL The gastronomy of Brazil has influences from parts of Europe, Africa and indigenous people. It is a rich and very varied diet, every region of the country, has its own regional dish.


TYPICAL PRODUCTS: Some typical products of Brazil are coffee, tobacco, sugar cane, fruits, etc...


TYPICAL PLATES: The national plate is the feijoada ( made from a based of vegetables and pork ). It is served with boiled rice, vegetables and pieces of orange. The native cooking offers elaborate fish dishes, exotic fruits such as mango.


Some local dishes of this area are: the tacacรก not tucupi swimming crabs or crabs, duck not tucupi.


The food of the Bay, region of the north-east, is influenced by African cooking, where there are dishes garnished with fish and seafood, bananas, coconuts, roast peppers and oils. Some dishes are: the vatapĂĄ, the cururĂş, the mosqueca...


The food in the South, it is represented by meats such as steak, grilled meat and barbequed, this food is influenced by German and Italian cooking. Some local dishes of this area are: barreado, steak etc.


The center- west region, the food of Matto Grosso, the most traditional dishes are loin and ham of pork, rice with sua, roupa velha, etc... The southeast region, food of Mines geris, is known for the cheese it uses ( the queijo of Mines).


As for dessert it is necessary to mentiun fruits such as mango, bananas, guavas, cherimoyas, etc... Rich ice creams.


Regarding desserts we have to mentiun brigadeiro, a dessert with chocolate and vanilla. Ambrosia, a pudding made with an egg base. There are other sweets like the guava sweet, papaya sweet and fig sweet.


The national drink is caipirinha made with cachaca ( distilled unmatured brandy from sugar cane ), lime juice, sugar and ice; beer ( golden and very good ); mate ( tasted like tea but it's aroma is similar to tobacco ) and fruit shakes. We cannot forget the excellent Brazilian coffee. The guarana ( made with fruits that are grown in the amazons ). Cane broth ( juice of sugar cane ). Coconut milkshake (coconut made from, rum and sugar, all this is blenden in a


mixer ). Coconut water ( coconut water not the milk, is very good for hydrating ).


POPULAR HOLYDAYS: Popular holidays in Brazil are the most expressive and richest in the world. Amongst the large amount of holidays they have we have to mention: * January, 1st of January, New Year. National holiday. It´s known world wide as a firework show that is celebrated on the Copacabana Beach ( Rio de Janeiro ).


* In February, Carnival, though it is celebrated in all the cities of Brazil, the most famous is that of Rio of Janeiro.

* March/ April, Holy Week, is celebrated in the majority of towns in Brazil. We have to mention the one that is celebrated in Brejo's city of the Mothe of God.


Easter Week ( the week after Holy Week), tradition

of the rabbit (that symbolizes fertility) and Easter eggs.

* In June, Folklork Festival of Bumba-Meu-Boi,

celebrated in Parintins's city ( the amazon) where varied

local dishes are eaten such as

cheese of coalho, roast maize,


canjica, brigadeiro, roast meat and everything accompanied by a good caipirinha. * October ( 5 to October 22 )- Oktoberfest in Blumenau ( Holy Catarina ) German culture holiday with music, dances and a food festival in where an average of 500 thousand barrells of beer are drunk.


CONDUCTS IN THE TABLE: A special characteristic is that dishes are put on the table at the same time, except the soup, which is served before the food, and the dessert, which completes it.


MOROCCO Morrocan food is one of the richest and most diverse foods in the world part of this is due to the different cultures that live in Morroco. It is usually homemade by women. It's principal feature is the use of sweet and sour which cames from the Orient. Morrocan cooking is very famous,


Overall thanks to the use of natural products. Morrocan cooking is usually simple and easy to cook, its main ingredients are usually: * Cuscous ( semolina ) * Vegetables ( some of the most popular are the aubergine and garlic ). Morrocan garlic is different to that from Europe * Fruits ( the most important are citrus fruits especially lemons . They also


use a lot of dried fruit, mainly dates and melons.

* Cereals ( is also a principal ingredient, mainly

used for bread, especially the famous pitta bread ).

* Meat ( the most common meat used is lamb or chicken)

* Fish and seafood ( usually cooked or fied ). To get good

ishdishes you should go to the coastal areas.

* Spices ( it is a fundamental food and used a lot in

morrocan cooking examples of some

spices are cinnamon, pepper, minta,

saffron, black pepper, and cummin.


Morrocans prefer to use aromatic plants and natural

herbs such as cilantro o parsley, basil, mint, onion or

garlic.

* Tea ( is one of the drinks consumed the most

n Morroco. They drink it up to six times a day. Morrocan desserts are well known.

The principals ingredients are dates

honey, almonds, walnuts, sesame....


CONDUCTS IN THE TABLE: Morrocans tend to eat with three fingers of his right hand. They eat with their hands. The food is taken in a low table with people lying on the floor. Women often eat separately and at different times of the men. This well seen sipping tea or burp loudly high after eating. Morrocans tend to eat three meals.


UTENSILS AND CONTAINERS: One of the most indispensable elements fo the

preparation of stews is Tajin. Other instrument widely used clay

s the Tangier in which products are cooked. The couscous is made in a cuscuseras.

Some of the common tools in traditional Moroccan

cuisine are the Ghorbal, the chtato, the

Magla ( sort of pan ), the Tanja ( pot )


TYPICAL DISHES:

There are many types of soups such as Harira

served every day during the month of Ramadan.

There are very typical dishes like Bissara is a puree of

beans.

The moroccan dish par excellence is the tablet of

darling.( pastela )

The most famous dish is couscous.


Other typical dishes are: the kebabs, the baddaz, the tanjya. Among desserts are chebakia, bahlawa. Concerning the drinks should be noted especially tea. Juices abound in the country especially orange juice. Also consumed almond milk.


FESTIVALS: * Feast of lamb. Lasts two days. The festival is a ritual animal sacrifice, a lamb, so that later the meat can be eaten. On this day we eat lamb.


* Ramadรกn. Holy month for muslims. The month of fasting. Men and women should stop eating and drinking ( fasting ), perfume, sex and smoking from sunrise to sunset. Harira eats, dates, sweet,..


ENGLAND INGREDIENTS OF ENGLISH COOKING: The most common meat is beef and pork usually served grilled and with varius sauces and toppings, as we discussed before with vegetables. Where fish is concerned, it is very


typical in coastal area. Salmon is the most typical fish either salmon or salmon trout.

TYPICAL DISHES FROM ENGLAND: 

One of the most typical dishes is fish and chips which

people eat in the streets. 

Another dish is from Cornwall, the


pasty. It is a meat pie with vegetables and potatoes.

Roast beef and hyorkshire pudding is considered a

national dish.We can define English cuisine as the quality of its roast served with different, elaborate sauces.

Some examples of desserts are pancakes, fruit pies,

chocolate and cheese.


TRADICIONAL FESTIVALS:

* Mothering Sunday. This festival in the UK is the

equivalent of Mother´s Day in other countries. Mothering

Sunday is a time when children pay respect to their

Mothers. Children often give their Mothers a gift and a

card. Simnel Cake:


* Pancake Day. Pancake Day ( also know as Shrove Tuesday ) is the last day before the period which Christians call Lent. It is traditional on this day to eat pancakes. A pancake is a thin, flat cake, made of batter and fried in a pan.


* Good Friday. On this day, Christians remenber the day when Jesus was crucified on a cross. It is a traditional to eat warm � hot cross buns � on Good Friday. Hot Cross Buns with their combination of spicy, sweet and fruity flavours have long been an Easter tradition. The pastry cross on top of the buns symbolises and reminds Christians of the cross that Jesus was killed on.


CUSTOMS: Breakfast is the most important meal of the day. It is usually eaten twice a day. Breakfast - is one of the most abundant of the world, it is always served with a lot of ingredients: tomatoes, sausages, embultidos, bacon, fried or scrambled eggs, chips etc. All this along with coffee or tea and orange juice.


Afternoon snack-- is at tea time ( the tea is served with muffins or pastries cookies...) Enghish used to eat the cutlery ( knife, fork, spoon ).

This island is located in the Pacific. It is an exotic island. Its inhabitants are very hospitable with tourists. The main ingredients the island are: cuscous, pineapple, coconuts, tea, turkey, rice, kiwi...
