n the West Coast, most of us know Nigel Barker as the celebrity photographer/

judge on America’s Next Top Model. These days, the 38-year-old married father of two is extending his celebrity clout to get behind causes he’s passionate about. And he’s using the camera to connect with his audience. Among the causes he’s chosen to back are The Edeyo Foundation and he’s currently spokes-

Quiche Lorraine

Mushroom & Hollandaise Crêpes Raspberry Macaroon Tarts

Pâte Brisée 1 ½ cups flour ½ tsp salt pinch sugar 5 ½ tbsp unsalted butter, chilled 3 tbsp shortening, chilled ¼ cup ice water Combine the flour, salt and sugar. Cube the butter and shortening and cut into the dry ingredient mixture, turning until crumbly (the size of peas). Gently add the ice water and blend without overworking the mix. Form into a firm dough and let chill in the fridge for 30 minutes before turning out onto a floured board. Roll out and shape into a 9” quiche pan. Prick the bottom of the pastry with a fork to prevent bubbling of the pastry. Fill with dried kidney beans to hold the shape and cover with foil to prevent overbrowning. Place into a 350°F preheated oven for 20 minutes or until golden.

Crêpes ½ cup flour 2 eggs 2/3 cups milk 2 tbsp butter, melted pinch salt Whisk eggs, salt and milk before adding to the flour and adding the butter. Using a small 6-8” non-stick pan over medium heat, use a scant ¼ cup of batter for each crêpe.

Egg Filling 2 eggs 1 cup half & half cream to taste salt/pepper/nutmeg 4 strips bacon, cooked & diced 2 cups sautéed mushrooms, sliced ½ cup leeks, whites only, diced (optional) 2 cups grated mozzarella Whip together eggs, cream and desired spices before turning in the bacon, mushrooms and half of the mozzarella. Pour into the pre-baked shell and top with the remaining mozzarella. Bake for 20 minutes at 350°F. 12 MAY 2010 INDULGE

Mushroom Filling ½ cup assorted mushrooms, sliced 1 tbsp butter 2 tbsp onions, chopped 1 small garlic clove, chopped 1 tsp thyme to taste salt and pepper ¼ cup mozzarella Sauté onions and garlic until translucent. Add the mushrooms and cook until golden brown before seasoning with the thyme, salt and pepper. Fill the crêpes with the mushroom mix before topping with mozzarella, rolling and placing in a 350°F oven for two minutes or until the cheese runs nicely. Plate and top with Hollandaise. Hollandaise Sauce 3 egg yolks 1 tbsp lemon juice pinch salt 4 oz butter, melted to taste white pepper Whisk egg yolks, lemon juice and a pinch of salt in small heavy saucepan over very low heat until the egg mixture thickens. Remove pan from the heat and dribble in the melted butter, whisking constantly; add white pepper to taste.

While the Little White House makes a delicious trade secret of their pastry recipe, standard pastry or frozen mini-tart shells will work well with these bite-sized delights. 18 mini-tart shells 1 egg ¾ tbsp milk ¼ tsp almond extract ¼ tsp baking powder 2 tbsp water ¼ cup white sugar ½ cup plus 2 tbsp unsweetened coconut, shredded as desired raspberry jam Line tart shells and pre bake at 350°F until the edges start to turn golden. Spread a small amount of jam in the bottom of each shell. Combine remaining ingredients and spoon into shells. Bake at 350°F until puffed and set, approximately 20 min.

Little White House Greens w/ Raspberry Vinaigrette Salad 2 cups spinach ¼ cup goat cheese ¼ cup Craisins™ ¼ cup candied pecans Toss the ingredients together in a bowl, crumbling the goat cheese and pecans as desired. Vinaigrette 2 tbsp raspberry vinegar 2 ½ tbsp vegetable oil 2 tbsp olive oil 1 tsp grainy dijon 1 tbsp sugar Combine the ingredients to make the vinaigrette and shake in a jar. Drizzle over plated salad.

They are a business triumvirate with a winning formula. Karen, Franco and Tracy are the owners of a thriving business called Western Water Farms and Gardens Inc.

The company is located in beautiful Langley, BC and specializes in pond materials, installation and maintenance, along with an extensive offering of garden décor and unique giftware.

That sometimes means trying to talk a client out of buying something or at the very least downsizing. “People want to go for the Koi right away but we recommend starting with goldfish until the client finds out what kind of predators could be lurking.”

Karen comes from a long line of commercial fishermen. She is also a lifelong gardener. Her extensive knowledge of fish and passion for backyard beauty and her partners knowhow have helped create the thriving business, which began life as a gardening store at which the trio worked. Karen says customers often asked about fish and water plants so, when the store was put up for sale, they decided to buy in and branch out. “Customers complained that there was nowhere to find plants,” Karen recalls, “and nowhere to find fish and we saw the opportunity to supply that niche market.” Five years later, Western Water Farms and Gardens Inc. has established a reputation for its knowledgeable staff and well stocked showroom. To enter the world of soothing ponds and spouting fountains, one needs to learn about spitters (basically the spout of the fountain) and the rest of the lingo associated with the business of ponds — liners, filters, pumps, and test kits. And then there is the key question of

You just do.” “The sound of the water helps tune everything else out, physically and mentally.” Karen and her co-owners see the soothing effect in action every day at the store, where the sound of water is a constant. Peace of mind isn’t pricey. Although prices can range into the thousands, a client can have something built and up and operating for as little as five hundred dollars. If the client is prepared to do the prep work themselves, they can save on the installation. One owner’s favorite is a completely selfcontained preformed fiberglass pond that comes with a pump, tiny waterfall, and rock edging and sells for nine hundred dollars. “If you’ve got easy dirt, it’ll take you two hours to dig the hole,” Franco promises, “and you’ve got a pond that is ready to go.” Two hours to tranquility? Sounds like a very good deal, indeed.

don’t know about other novice home renovators, but when I got down to the lighting portion

of my fixer-upper, it was the lighting fixtures that made me return to the stores again, and again, and again. It was definitely an exercise in frustration, and after it was all said and done, it was obvious there was more to it than choosing favourites and installing them. This is a specialized field. I was up against a mammoth task, and instead of going the proper route and co-ordinating halls, with a dining room, and a living room, as well as a foyer, I began purchasing lights area by area. That was a huge mistake, and one I could have easily avoided had I just asked for professional help. Then there was the removal of a good part of a wall that complicated the design even further. Now I had to co-ordinate lighting for all main living areas, with the exception of a family room that was tucked off to the side, but wait...it had to blend with the kitchen, which flowed into the 28 MAY 2010 INDULGE

{ dining and living rooms. Well, that would now be a problem, since I had already purchased and installed four hallway lights, leaving the main foyer light out of the loop. Now I had the task of finding lighting that would match up with what was already purchased — not to mention vanity fixtures that should flow into the design as well. I can’t tell you how many trips I made to view lights, make decisions, and how many times I left some of the largest home centres frustrated, for lack of design expertise, lack of staff who actually had time to deal with me, let alone find one who specialized in lighting exclusively. I was disillusioned and began the argument that 80s lighting could make a comeback.

Plus, I learned some important facts about saving money and reducing energy consumption: Did you know lighting uses 12 to 15 percent of the electricity consumed in a home? I opted for dimmers, which saves energy and I can adjust the “mood� in the dining room. And, a clean light is a bright light. My recommendation: When you start a lighting project, start with the experts. The final results are far better than anything a novice such as I could ever conceptualize.

Osoyoos If you’ve ever spent anytime in this south Okanagan playground during the spring and summer, you won’t be surprised to learn that Osoyoos is consistently ranked among the hottest places in the nation. A fine example of that is the Hat Creek Ranch, a living museum of sorts chronicling not just the wagon train past of the area but also that of the Shuswap Nation people. Located a few minutes drive north of Cache Creek, the ranch features a roadhouse from the 1860s complete with interpreters dressed in period costumes providing guided tours. Further up the road are a number of provincial parks ideal for camping, fishing and canoeing, and guided horseback rides — a family favourite — can be had up and down the highway. While possible to visit over the course of a weekend, the Cariboo is well worth a couple of extra days, as every time you get back on Highway 97, someone in the back seat will say, “Hey, pull over up here.
