o you ever have one of those days when, no matter how hard you try, nothing goes quite right? You spill your coffee all over yourself on your way to work, you can't find your keys when it's finally time to go home and every step you take throughout the day is a struggle. Then, something remarkable happens: you sink into the driver's seat of your car and turn on the engine, just in time for your favourite song to come on the radio. Suddenly, as the familiar music starts to seep into your soul, the troubles of your crummy day dissolve away, until you can't help but smile all the way home. It's the power of music, and the effect it can have on anyone – from the young to the old – is undeniable. For Canadian singer/songwriter Sarah McLachlan, the opportunity to not only embrace music, but to create and share it with the world came at a young age. It's something she says "saved" her as a teen, at a time when social pressures and growing pains can take a toll on a young person's confidence. And so McLachlan has spent the past 14 years sharing the power of music with underprivileged children and teens in Vancouver by way of a music school in her name, with plans to bring her successful program to Surrey in the new year. News of the expansion is an early Christmas

present for the Surrey community, and in this holiday issue of Indulge, McLachlan talks about what the program means to her and the many children who have benefited from it. hile holding to a semisubterranean, strip mall location that might have even Santa second guessing the reindeer and GPS, over the past decade, Fieldstone Artisan Breads in Crescent Beach has become a well-plotted destination for local foodies and seasonal celebrities alike. Naturally, this being the West Coast, some of those celebrities wait in line like everyone else, but the true stars – the local ingredients – make their way directly into the kitchen. For the past 10 years, owners Paul and Nicola Hanley have committed themselves to creating a one-of-a-kind destination – a seasonal, artisan bakery with a serious commitment to local farms and customers alike. It is an admirable ethos made all the sweeter to savour as it extends over a rotating roster of 350 baked goods of invariable quality. Come the holiday season, the volume of that commitment ramps up so radically on both sides of the counter that the Hanleys, along with their two young ones, close up shop for two weeks and head away for some annual R&R. “Christmas is absolutely crazy here. Last year we had over 350 pre-orders and there was still and hour-and-a-half lineup on Christmas Eve. It’s our longest day, for sure, even for a bakery,” says Chef Paul Hanley. “Our baker Gord and I come in at midnight on Christmas Eve and work until 5 a.m. when the crew comes in, and Nicola stays until everyone leaves. Our customers now know we are going to be gone for a bit after that, but we’re back to lineups in January.” Langley-raised and reared within the industry, Paul’s father owned an English restaurant in Aldergrove; it was there his appreciation for the kitchen and customer took hold, extending into another father/son opening in Abbotsford. It was a world away though, while living in Japan as food and beverage manager at a resort, that Paul discovered the two passions that have kept him smiling since – chiefly, Nicola, who also worked there and a pastry chef who provided him ample inspiration and initiation into the craft of baked goods. Elevating the baking beyond what Paul had previously experienced was an attention to the detail that would become the primary import of their business model – everything else, they would source locally. Returning home to hone his skills at the Pacific Institute of Culinary Arts, Paul first entered Fieldstone’s bakery on a study

practicum in 2000. Graduating, he went on to ply his pastry skills at a number of bakeries and restaurants before returning to work at Fieldstone Artisan Breads. Seven years after opening, the prior owner sold the business outright to Paul and Nicola in 2005, and they moved their longtime dream into action. Of course, nothing makes a better bakery than better butter. For Hanley, that meant real Canadian butter, a commitment that took five years to put in place, but also secured him a government subsidy for his local logic. While keeping the best elements including the talented team, the Hanleys put the massive Pavailler oven – considered the best bread-baking oven in the world and capable of giving rise to 200 lovely loaves at once – to fresh purpose. What has defined Fieldstone since is both simple and complex – delicious baked goods taken to greatness by the utmost care for ingredients, a care which extends as much to the farmer as it is enjoyed by the customers. It is a highly edible ethos and one usually associated with top restaurants. For the Hanleys, those local-source relationships are many, but one holds particular significance. From the first fingers of asparagus and rhubarb of spring to the fuller body of summer fruits, his relationship with Hazelmere Farms runs year round. It

also holds deeper meaning, as it was here that Paul’s culinary ethos was moulded under the mentorship of farmers Gary and Naty King. Following Gary's passing in 2009, their commitment to Naty’s rotating fresh bounty has only been strengthened, and inspired others. “We have a staff of 20 and everyone loves to work with the fresh ingredients. I love to go out to the farm, come back with fresh ingredients and start handing them out to customers. We need to see and hold those local ingredients sometimes to understand that they are what really makes the difference in the final product,” he says. “Whether it is the fresh chanterelle mushrooms in the quiche or the sweetness of the corn bread, it comes back to the local goodness of those ingredients.” Based on lineups alone, that love of local has proven a solid business logic, but that is not what fuels their continued efforts. “I’ve been in this industry all my life and worked with a lot of old-school chefs who stressed the importance of doing it right – and we are. We do what we love, can do whatever we want and people thank us for it. That’s unbeatable,” says Hanley. He smiles, thinking of the busy holiday season ahead. “That said, those couple of weeks away in a house on a warm, deserted beach eating, drinking and swimming…we’ll be ready for that soon enough!” INDULGE • Winter 2015 7

Shortbread

1 lb. lean ground pork

300 g all-purpose flour

½ lb. lean ground beef

300 g superfine whole-wheat flour (available at Fieldstone)

1 onion, diced 1 clove garlic, minced ½ cup water 1 ½ tsp salt

175 g rice flour 454 g butter (salted) 9 g salt

½ tsp dried thyme, crushed

205 g berry sugar

¼ tsp ground sage

Cream butter and berry sugar. Slowly incorporate flours and salt. Tip cookie dough

¼ tsp ground black pepper 1/8 tsp ground cloves 1 pie pastry (enough for a 9” double crust pie) Combine pork, beef, onion, garlic, water, salt, thyme, sage, black pepper and cloves in a Dutch oven. Cook over a medium heat until the mixture boils, stirring occasionally. Reduce heat to low and simmer until meat is cooked, approximately five minutes. Allow to cool to room temperature. Preheat oven to 425 degrees F. Spoon meat mixture into prepared piecrust. Place top crust on top of pie and pinch edges to seal. Cut slits in top crust so that steam can escape. Cover edges of pie with strips of aluminum foil. Bake in preheated oven for 20 minutes, remove foil and return to oven. Bake until golden brown, an additional 15 to 20 minutes. Allow to cool before slicing. 8 Winter 2015 • INDULGE

onto cutting board and roll into two logs. Wrap dough in plastic and refrigerate for a minimum of two hours. Preheat oven to 350 degrees. Cut dough into one-inch rounds. Bake on parchment-lined baking tray until golden brown – approximately 30 minutes.

Raspberry Sable Cookies 1 cup butter (unsalted) 1 cup sugar ½ tsp salt 2 eggs 4 cups all-purpose flour 1 cup raspberry jam ¼ cup icing sugar Cream butter and sugar. Add eggs, one at a time, until well-incorporated. Add flour and salt, mixing on low until the dough comes together into a ball. Wrap dough in plastic and chill in fridge for a minimum of two hours. Roll dough out and cut into circles with cookie cutter. Cut out a small star in the centre of half of the cookies – these will be your “tops.” Bake cookies at 350 degrees until golden brown – approximately 12 minutes. Warm raspberry jam. Spread jam on whole cookies, top jam-covered cookies with “tops” so that jam peeks through. Dust finished cookies with icing sugar.

Holiday Bread 2 ½ cups warm water 1 Tbsp dry yeast ½ cup honey 4 Tbsp butter 3 eggs 1 Tbsp salt 8 cups all-purpose flour ¼ cup dried cranberries ½ cup toasted pistachios 2 Tbsp coarse sugar Sprinkle yeast over barely warm water. Beat in honey, butter, two eggs and salt. Add the flour, one cup at a time, beating after each addition, graduating to kneading with hands as dough thickens. Knead until smooth and elastic and no longer sticky, adding additional flour as needed. Cover with a damp cloth and allow to rise until dough has doubled in size (approximately 1.5 hours). Punch down the risen dough. Add pistachios and cranberries and gently knead for one minute. Turn out onto floured cutting board. Divide dough in half and knead each half for approximately five minutes, adding

flour where necessary to prevent dough getting sticky. Divide each half of dough into thirds. Roll each third into a long snake, approximately 1.5 inches in diameter. Pinch the ends of the three snakes together firmly and braid from the middle. Place each braid on a baking sheet lined with parchment paper. Cover with tea towel and allow to rise for approximately one hour.

Preheat oven to 375 degrees F. Beat the remaining egg and brush a generous amount over each braid. Sprinkle with coarse sugar. Bake at 375 degrees until golden brown (approximately 40 minutes). Bread should have a nice hollow sound when tapped on the bottom. Cool on wire rack for a minimum of one hour before slicing.

Canadian songstress set to enlighten, inspire and instill confidence in Surrey youth with expansion of her after-school music program

f you plan to visit the Stanley Park Christmas train this holiday season, don't be surprised if you spot a familiar face amongst the crowd. It's a favourite of Canadian singer/ songwriter Sarah McLachlan, who told Indulge last month the train provides the perfect opportunity to spread some holiday cheer. "I go stand in line every year at the Christmas train and I bring a carol book and I try to get everybody singing," McLachlan said. "I just love making music with people." Her passion for sharing music with others has driven the multiple Grammy- and Junoaward-winner to reach out to kids and teens in Vancouver, through the Sarah McLachlan School of Music. The program, launched 14 years ago, caters to at-risk or under-served children and youth, providing free, after-school music classes taught by professionals both offsite and at their dedicated facility near Main Street and 7 Avenue. In September, McLachlan announced plans to bring the music program to Surrey early next year. "I had so many opportunities when I was growing up, not only in the school system, but my parents spent money on private music lessons and private art lessons," McLachlan,47, said when asked what prompted her to start the school. "That was what saved me growing up. If other kids didn't have that same opportunity, they're missing a huge piece, and I wanted to help fill that gap." While McLachlan doesn't teach the students herself – "I don't have the patience and I don't have the skill set," she admitted – there are often opportunities for her to connect with the kids and share creativity. She recalled a photo shoot at the school, when she and several students were posing with instruments, and one boy started playing a little tune on the piano. Asked what he was playing, he responded it was nothing; McLachlan encouraged him to play it again, and began jamming along.

"As we went through the day, we ended up writing a song together," McLachlan said. "Nobody was afraid to offer their ideas, it was just so open. For me, it means the culture there is working." Immersing herself in the "pure art of creating" is something McLachlan said she is lucky enough to be able to do every day. She's currently working on a Christmas album, due for release next year, out of the recording studio in her West Vancouver home. Earlier this year she wrapped up the second leg of her U.S. tour in support of her 2014 album, Shine On, following shows across Canada late last year, and a summer tour across the U.S. prior to that. With her two daughters – India, 13½ and Taja, 8 – joining her on the road, McLachlan said touring is a much difference experience than it was 27 years ago. "When I was younger, I'd go out for two years. I certainly can't do that anymore," she said, noting tour dates are selected based on her

daughters' school schedules. "It's a real luxury to be able to plan like that and be able to have them with me. I'm very lucky – I've missed very little of anything with them, because of that." That's not to say the balance between music and family comes easy to McLachlan, she concedes. Despite nearly three decades of honing her craft, she still faces challenges when it comes to creating music, perhaps now more than ever. "It's never been particularly easy for me to write, and it continues to be that way," she said. "If anything, it's worse now, cause I have bigger distractions, therefore it takes me longer." When she's not recording or touring, McLachlan enjoys getting out with her daughters in the town she's called home since her late teens. Hiking and surfing in the summer, and skating in the winter are among the favourite activities in her household, although she admits some difficulty getting her teenage daughter on board these days.

The confidence I've seen emerge is just incredible... "She's either got a friend over half the time or she's at someone else's house half the time," McLachlan laughed. Well-known for her philanthropic involvement – her hit ballad, Angel, was featured in a famously heart-wrenching ASPCA commercial nearly a decade ago – McLachlan said she strives to do what she can to help organizations in need, from providing auction items and fundraising packages to playing at charity events. Next month McLachlan will perform in Tom Janis' The American Christmas Carol at New York's Carnegie Hall, benefitting The Golden Hat Foundation, a charity founded by actress Kate Winslet. But the music school remains her main passion, and in the 14 years since the program launched she has seen first-hand the impact it has on the lives of students. "Seeing the little ones come in, first grade, the first time they perform, they're terrified, they can't even look at the audience," McLachlan said. "And then I watch them grow and I watch them graduate and they've become valedictorians of their class, and they're up there speaking eloquently about the song they've written.

"The confidence I've seen emerge is just incredible." The program is tentatively set to launch in three elementary schools in North Surrey next spring, although exact locations have yet to be confirmed. The program was given a financial boost from the City of Surrey in September, who announced a $30,000 commitment in support of the expansion. The school is hoping to raise another $100,000 in donations to help cover start-up costs for the first year; anyone wanting to contribute can do so online at www. sarahschoolofmusic.com McLachlan said she's thrilled at the prospect of bringing the school to Surrey, and looks forward to the impact the program will have on not only the students, but the community as a whole, as it helps to shape the next generation of young adults in a "confident, open-minded, community-driven" manner. "I don't think we can put a value on that, on how important that is to give young people the realization that they can do anything they put their minds to despite the challenges they face, despite the hardships, despite the setbacks," she said. "To be able to push through and continue to, not only endure, but to shine."

Guatemala This diverse Central American country has everything a traveller could hope for – culture, beauty, history, majestic ruins, gorgeous streetscapes and plenty of adventure. Highlights range from the cosmopolitan centre in Guatemala City – where you'll find renowned golf courses, world-class shopping, museums and more – to La Antigua, the pinnacle of Hispanic colonial heritage, surrounded by three volcanoes, mountains and coffee plantations. In this historic town – known for its sense of romance – you'll find cobblestone streets, boutique hotels, picturesque churches and bustling markets. If you're an active traveller, your days spent in Guatemala will be busy. Hike jungle trails and to the tops of volcanoes, seek the thrills of worldclass white-water rafting, explore ancient caves and enjoy the natural

beauty from some of the country's hundreds of ziplines. And with coasts on both the Pacific and Caribbean oceans, your beach-lounging options are plentiful. On the Pacific side, Monterrico is revered as the country's most popular beach, with black volcanic sand, strong currents and breathtaking views. On the opposite side of the country, the funky town of Livingston is wedged between the Caribbean and the rainforest. A short hike along the coast will take you to some remote spots, a favourite of which is Playa Blanca, with warm water, white sands and coconut trees.

U.S. Virgin Islands The epitome of a tropical locale, the U.S. Virgin Islands, located about 200 kilometres off the coast of Puerto Rico, boast not one but three major islands to visit, each with a unique character of its own. St. Thomas is home to one of the most beautiful harbours in the world, site of the most-visited port in the Caribbean. The main city, Charlotte Amalie, offers elegant dining, bustling night life and submarine rides. Though the island is only 50 square km, it has the most to offer of the three islands, including the awe-inspiring Skyride, a cable car that travels 700 feet about the city (inset photo). For a true sense of the Carribean's natural beauty, the island of St. John features more than 5,000 acres – two-thirds of the island – of designated national park. When it comes to destinations chock full of history, it doesn't get much more historic than Greece. The first hints of human habitation in Greece appeared during the Paleolithic Age, in approximately 10,000 B.C. And traces of centuries-old history can be found in every corner of this European country. The city of Athens boasts several of the country's must-see historic sites, including The Acropolis, an ancient citadel located on a high rocky outcrop of the city; the Parthenon, a temple dedicated to the Goddess Athena; and Plaka, a historic Athens neighbourhood incorporating labyrinth-like streets and neoclassical architecture. But a trip to Greece isn't just ancient architecture and historic ruins – the Mediterranean landmark is also well-known for its gorgeous and diverse beaches. Santorini, likely the most popular destination of the Greek isles, boasts a combination of beaches, restaurants, spectacular scenery, ancient cities and an active volcano. The city curves around a giant lagoon in the Cyclades islands, south east of Athens,

creating stunning views both from above the city and from sea level. Also part of the Cylades island group is Mykonos, one of the more glamorous of the isles, known for its non-stop party atmosphere. A popular stop for cruise ships in the Mediterranean, Mykonos is booming, with luxury hotels, beach bars, fine-dining restaurants and massive night clubs. In the northern end of the country is Thessaloniki, Greece's second-largest city, cited as the cultural capital of Greece. The nearby area of Halkidiki, a trident-shaped peninsula, offers several beaches ranging in size and popularity.

Maldives If it's seclusion you seek, the Maldives – a cluster of tiny islands in the Indian Ocean – provides the perfect atmosphere of privacy.
