editor’s LETTER

C

hristmas and New Year is coming up and here in Sweden, the first snow had already fallen. This year it came both early and big. The snow cover is about half a meter thick around the house where I live. It’s as it should be around Christmas time. However, it also puts everyday life to the test as train derails, cars get stuck, sidewalks disappear, flights are cancelled and messenger’s car with supplies are running late or not showing up at all. Not surprisingly the snowstorm affected even me and the work with Fine Decors Christmas edition. After some delays and some rearrangement, our special issue on Christmas & New Year is finally ready!

This issue differs from the previous ones. It’s shorter and focuses entirely on Christmas and New Year. Interviews, fashion, jewelry, beauty and travel pieces are not included in this Christmas-issue, but will of course be back in our February issue in 2013. The content in this issue focus entirely on Christmas decorating tips, DIY projects, and some seasonal dishes. If you plan to invite to a New Year’s party this year, do not miss our great story about New Year’s Eve. We will advice on everything; how to make the finest decorations, how to set the table beautifully and how to easily cook a three-course dinner. Most of this issue’s DIY projects are without instructions, it may sounds strange. Of course you should be able to see how we did it. So where instructions are missing, a date indicates when the instructions will be presented on our new blog; blog.finedecor.se, so keep on eye out for that! I would also like to thank all of you for the past year. It has been rewarding, inspiring and incredibly fun! I have deliberately produced slightly different content in the magazine during this year. Issue 3 (July/August) had more focus on interior design and decoration, while Issue 4 (October/November) more focused on interviews. Number of readers also differ between these two issues, and based on that, I have taken the decision on how the contents of the upcoming issues for 2013 will look like. The magazine will still feature inspiring interviews but will also feature style & fashion, beauty, travel and food. Decoration and Interior will take more space in the magazine, which many of you readers have requested! During 2013, Fine Decor Magazine will be releasing eight issues including two special editions; one wedding special and one Christmas & New Year’s special. The first 2013 issue will be released in February 2013. You can read more about some of the content on page 64. Only one thing remains and that is to wish all of you a pleasant reading and a Merry Christmas and a Happy New Year!

Bûche de Noël This Bûche de Noël which is a variant of the classic Swiss roll is sure to be popular among the youngsters. Fine sponge cake in Christmas tree green rolled up with tasty filling with flavours of cream cheese. Frost the cake with a thin layer of cream and top off with sprinkles in the Christmas colours. SPONGE CAKE 3 eggs 0.6 cups (1.5 dl) of sugar 0.8 cups (2 dl) of flour 1 teaspoon baking powder 2 teaspoon vanilla Green food coloring FILLING 1.3 cups (3 dl) heavy cream 200 grams of cream cheese 0.5 cups (1 to 1.5 dl) powdered sugar DECORATION 1 cup whipping cream sprinkles

HOW TO DO IT: 1. Preheat oven to 250 °. 2. Prepare a baking tray with baking paper. 3. Beat eggs and sugar until fluffy. Preferably in 5 minutes. The mixture should be white and fluffy. 4.Mix together flour, baking powder and vanilla sugar in a separate bowl. 5. Sift the flour mixture into the egg mixture beating on low speed to the batter is smooth and fine. 6. Spread the batter on baking paper. 7. Bake in middle of oven 5-8 minutes. 8. Turn the cake on a sugared parchment paper. Pull off the baking paper and let the cake cool off in the baking tray. 9. Start with the filling, whip the cream thick. 10. Mix in cream cheese and the icing sugar. Beat with electric mixer. Spread the mixture over the sponge cake. Roll up the cake, starting from the short side. Roll the cake in baking paper and leave it with the seam-side down.

This decoration is colourful, playful and modern. You can make it easily by yourself using a few sheets of paper in different colours, a string , a pair of scissors and some glue.

1. MATERIAL A dark green string, a pair of scissors and a glue gun. Two circular templates, one a bit larger than the other one.

4. GLUE Start gluing. Take the large roundel / dot and add a dab of glue in the middle. Add the string in glue and then place a small dot on top and press firmly. Then do the same thing with just enough space between the dots. u

2. MATERIAL Several sheets of paper in different colors. Use of a thicker paper, about 180-200 grams.

How to do: blanched almonds butter brown sugar salt flakes optional spices you like, for example; fresh sage fresh thyme chili cayenne pepper Melt the butter in a frying pan, season and stir until the almonds turns into a light brown colour. Let the almonds cool on a baking tray sheet. Serve!

TOAST SKAGEN Toast Skagen is one of the most common starters in Sweden. The base is hand-peeled shrimp mixed with mayonnaise, served with buttered toast.. 8 -10 people TOAST SKAGEN 800 g shrimp 0.6 - 0.8 cups sour cream 0.6 - 0.8 cups mayonnaise roe or caviar lemon dill pepper salt ev. horseradish white bread

HOW TO DO IT: 1. Peel the prawns. 2. Mix together mayonnaise and sour cream in a separate bowl. 3. Stir in fish roe and sliced dill (save some for garnish). 4. Mix the mayonnaise mixture with the prawns. Do not take it all at once, but take a little at a time until you get the right consistency of mayonnaise mix. It should be pretty solid

5. Season then with salt and pepper. Squeeze the lemon to taste, and perhaps a little grated horseradish. 6. Fry the slices of bread with plenty of butter. We chose to do little bits, croutons. 7. Ad a large dollop of mayonnaise mix in the middle of the plate. Place the bread pieces around. Squeeze some lemon and sprinkle with chopped parsley. Finish with a slice of lemon on top.

ROASTED BEEF TENDERLOIN WITH POTATO PURE WITH PARMESAN , BALSAMIC AND ARUGULA CREAM Beef tenderloin with a tasty puree, sweet balsamic and spicy arugula cream topped with chopped almonds. Start with arugula cream and balsamic sauce so they are fully ready before you start with the meat and parmesan pure. BEEF 2 kilo beef butter pepper salt POTATO PURE WITH PARMESAN 2 kilo potato 1 - 1.2 cups of heavy cream 200g Parmesan butter pepper salt SAUCE OF BALSAMIC 3 tablespoons brown sugar 3 tablespoons balsamic vinegar 3 tablespoons veal stock 1.6 cups of red wine 2-3 tablespoons cornstarch 2 tablespoons butter ARUGULA CREAM arugula Turkish yogurt liquid honey salt and pepper

HOW TO DO IT: Do 5. and 6. first. The balsamic sauce will be fine to warm up just before serving. 1. Brown the meat all around over high heat. Season with salt and pepper. 2. Roast in the oven at 175-200 degrees Celsius. For the beef to be rare, the inside temperature of the roast should be around 60 degrees Celsius. For medium, the inside temperature of the roast should be up to 65 degrees Celsius. Let the meat rest outside the oven for a while before serving. Use a meat thermometer. 3. Boil the potatoes while grate the parmesan cheese. 4. Mash the potatoes and mix in the cream, butter and cheese. Use a hand blender and mmix into a smooth puree. 5. Rinse the arugula salad and drain. Save a few whole leaves for garnish. Mix to fine consistence with a hand blender. Squeeze out the liquid. Mix a few tablespoons yoghurt and season with honey and salt. Place in the refrigerator. 6. Melt the sugar in a saucepan. Then pour in the wine, vinegar and stock. Let simmer for about 15 minutes. Stir in the cornstarch to thicken the sauce. All of this is possible to do in advance. When you later heat the sauce before serving, add some butter.

MERINGUE & ICE CREAM CAKE WITH TASTE OF LEMON & LICORICE Lemon and salt licorice with sweet meringue is a perfect end to New Year’s dinner. The cake should be done a day in advance as it needs to stand in the freezer for at least 6 hours. 8-10 PIECES NOTE. If you like the picture with a small round cake, you need to make two batches to get 10 pc pastries. You also need two molds with removable rim ICE CREAM 4 eggs 0.6 cup of sugar 1 vanilla pod 1.6 cups whipping cream 200 g cream cheese 1 lemon 12 bits of Turkish pepper (Salt licorice hard candy) Finnish licorice with lemon taste sparklers before serving

HOW TO DO IT: 1. Take out three bowls. Crack the eggs and divide the yolk from the white into two separate bowls. 2. Beat the egg whites hard and set aside. 3. Pour in the sugar and scrape out the vanilla pod in the bowl with the egg yolks. Whisk vigorously to a porous and almost white batter. Whisk in cream cheese. Whip the cream in a third bowl and add to the bowl with the egg and cheese mix.

4. Mix together egg and cheese mix with the beaten egg whites. Grate the rind of a lemon and squeeze the juice from the lemon into the mixture. Stir 5. Take out a form with a removable rim. Add meringue base at the bottom. Chop the then Turkish pepper hard candy with a mortar and sprinkle over meringue base. Pour in the batter and place the dish in the freezer for at least 6 hours.

6. If you choose to make round cakes, remove the molds and let thaw slightly so that, if you are using a circular cookie cutter, can make 8-10 pastries. Then place the pastries back in the freezer again and take out about 20 minutes before serving and garnish with Finnish licorice and a sparkler that you lit just before serving.
