Garden grows love

By Liz Alderslade A small garden tucked away in the outskirts of Tanunda, a small-dedicated group come together to tend to their garden and their friendships. The Cross Roads Community ‘Grow Love’ Garden has been expanding their gardening knowledge and produce over the last six years since their inception. Founded in 2009, the community garden began with five friends who wanted to grow

ended up becoming a lot more than that. “ We w e r e v e r y f o r t u n a t e . We got a grant from the Barons of the Barossa and a council grant. So that helped us establish the place and just about all of our equipment was donated,” said Denise. “We have become a really neat group, we enjoy each other’s company. We have developed friendships.” Not only have they grown friendships amongst the gardeners, but they have also expanded what they grow in the garden. The garden is currently full of onions and garlic with beans ready to be picked by Christmas. The group are also growing pumpkins, tomatoes, eggplant, basil, capsicums, asparagus, rhubarb and so much more. One of the most peculiar vegetables they have grown in the past was artichokes, but they decided they would not take up the offer of growing them again this year. As they expand their knowledge on what they grow and how they grow it, the gardeners are also in the process of making the garden more sustainable. “I think each year we develop a bit more. Each year we grow a little more. We started just with pumpkins and onions. Then we went into broccoli, cauliflower and cos lettuce. I think we are diversifying more,” said Denise. “By developing the soil here we are getting

better crops. I think it’s a good thing we don’t spray anything. Our practices are becoming more and more developed. “What we are endeavouring to do perhaps over the last 12 months now is become selfsustainable, making our own compost, etc.” The group is full of lots of ideas with a few inner circle debates about what to plant next. Some of the local gardeners at the Cross Road’s Community ‘Grow Love’ Garden happen to judge events at local shows and know what good produce looks like. The produce is sold at markets in the Barossa, through their own church parishes, to the Faith School kitchen and at The Hub in Tanunda. Denise says they have always had good feedback from people about their produce and is glad that people are so willing to donate seeds and equipment to their cause. The money raised at the garden goes into keeping the garden running and its equipment and maintenance, they also help out the Cross Roads Centre. Recently, the gardeners donated whatever produce they had at the moment to the Kind Hearted Kitchen, who were able to use the produce to go into the meals made for struggling families. Starting at a grassroots level, the garden has been built from the ground up and nurtured strong friendships in the gardening community.

Winning ways continue at Fernfield

There’s a festive feel at Fernfield Wines and it’s not just because Christmas is approaching. Winery owners, Scott and Bec Barr are celebrating Bec’s recognition as “Best Cellar Door Person” at the 2015 Barossa Cellar Circle Awards for excellence in Barossa Cellar Door outlets. It’s a prestigious win for the family owned winery based at Eden Valley which the Barrs bought from the Lillecrapps two years ago. A winemaker first and foremost, Bec said she was taken aback by the recent accolade. “It was a lovely surprise,” said Bec. “We’re both pretty quiet people. Not loud, marketing type people. We’re just being ourselves really.” Representatives from wine regions including the Adelaide Hills and McLaren Vale as well as Kym Brown from Tour Barossa were among the five judges who travelled to Cellar Doors in search of Barossa’s best. Considering most entrants specialised in Cellar Door,

Bec said the prize was all the more sweeter. “Cellar Door is their job. For us, we’re winemakers. Scott and I do a lot of everything. We do the vineyard, the winery, the cellar door, all sales.” Bec believes authenticity is what many tourists and visitors seek when wine tasting. “They are chatting to the person who made the wine and I think a lot of people love that part,” Bec said. “We’ve put a lounge in the Cellar Door so that people can relax, have a few drinks with us and feel at home. We’ve got customers from Cellar Door who will come around and spend the afternoon here. They are definitely our extended family.” Fernfield Cellar Door is a 160 year old cottage and exudes warmth and charm with a laid back, friendly atmosphere - quite different from the feel it would have had last century. “Back in the early 1900s it was home for wayward city girls,” Bec said. Things have certainly changed within the walls of the original stone building over the years, but one thing has not - the award winning wines produced at the property. “When we took over Fernfield Wines, the big thing was that every wine had won an award. So far we’ve kept that up. Every wine we have released so far has won a silver or a gold,” Bec said. “It’s all about the wine. We want to make really good wine and if we can share it with people, that’s great.”

Choosing wine for Christmas By Scott Barr, Fernfield Wines

I love a family Christmas gathering with a good spread of food. Having emigrated from the UK, my wife Bec’s family celebrate Christmas with the traditional English feast of turkey, ham and deliciously crispy roast potatoes. My big farming family add lots of modern Aussie barbecue and seafood to the mix. If you’re planning your own family’s feast, have a crack at planning your wine pairings too. A great wine match can bring the meal to another level, bringing out the best flavours in the food. A good rule of thumb with meats is that higher fat content suit wines with a higher acid or tannin content (such as our Big Barossa Reds).The classic steak and red wine applies here, but we can get a little trickier if you’re feeling up for it. When pairing wine with barbecue food, it’s all about the intensity of the cooking. For a big, charred and smoky barbecue, the wine needs to be equally big and bold to match - a light wine could taste bland next to strong barbecue flavours. A full bodied Shiraz or Cab Sauv from a warm climate like Barossa Valley floor will be your best bet. When cooking leaner cuts with lighter

By Cathy Wills, Barossa Tourism The Barossa is an amazing place for children to grow up, and summer is a perfect time for exploring our region together as a family. My memories of childhood summer holidays include lazy afternoons by the pool, searching for yabbies in the creek, the taste of deliciously ripe summer fruits, long bike rides and of course the excitement of family Christmas celebrations! We’re privileged in the Barossa to have so many marvellous food and wine experiences on our doorsteps – as well as fantastic activities for children and families. If you are having relatives or friends come to stay, or you’re looking for holiday activities, why not take advantage of our long summer days and explore the family friendly side of the Barossa? It wouldn’t be a summer holiday without water – and The Rex Barossa Aquatics Centre is a great option in the heat of summer. The leisure pool with its beach entrance and water features are fun for children, adults and families (not to mention their café...). The Barossa’s extensive network of cycle trails connects so many exciting places to explore – hours can be spent clambering over the old steam train at the Nuriootpa Train Park, or practising jumps at the adjacent Tolley Reserve Skate Park, or simply lazing around on a picnic blanket on the grass. A ride to Angaston opens up all kinds of opportunities - like stepping right back in time at the Doddridge Working Blacksmiths

flavours, generally the same should go for the wine. A cool/mild climate red from Eden Valley will match most cuts. The classic ham can be a little tricky with all the different ways we like to prepare it. A savoury, smoky ham with a peppery mustard can work with a bigger shiraz and cabernet, but a sweeter ham with a honey or pineapple glaze may be overpowered. A nice Riesling is hard to falter for the range of ways a ham can be prepared, with acidity to cut the fat and work with the sweet, just need to moderate the salt for this match to work. For turkey, which is quite lean, a wine with lower tannins will be a better match. Full flavoured whites such as chardonnay will have the right acid balance to match well, or else for reds, an aged Merlot or Cabernet blend will work, as they tend to have lower tannin concentration than the bigger Cabernets and Shiraz, and ageing polymerises tannins, causing them to soften, and won’t over-power the lean turkey. A great way to tackle the matching is just to have a range of wines on your table and then have fun with your friends and family debating on what works best for you.”

ROSIE’S SCONES THE TALK OF THE TOWN The famous Connections Coffee Shop scones are always a talking point around the Barossa due to their signature taste. The staff at Greenock Primary School recently enjoyed the light and fluffy scones for World Teachers Day, and Mr David Penny from Community Helpers raves about the recipe. Ms Rose Hegarty, co-ordinator of Connections Coffee Shop, Greenock said, “It’s just a recipe we use because it’s quick and easy. “People say that you can either make scones or you can’t. This is a recipe that is fail-safe. It’s why we use it here, plus they are beautiful and fluffy scones that everyone seems to love.” Rose and the volunteers bake the scones in the morning so that the smell wafts out into the coffee shop, and by the afternoon they are usually sold out. Served with fruity jam and local Jersey Fresh cream, the Connections scones are certainly a drawcard for the community outreach venture at Greenock Uniting Church.

Ingredients - 4½ cups of self ra ising flour - 300mL Jersey Fr esh Pouring Cream - 1 can of Lemonad e (375mL) Method 1. Mix all ingredient s together. 2. Knead lightly on a well-floured boar d. 3. Roll out to 1 inch thick. 4. Cut scones out with a 6cm cutter. 5. Place on baking tray close together . 6. Bake at 200°C fo r 20 minutes.

New look for Table Cafe and Wine Bar

Sourced Local • Made From Scratch • Cooked Fresh The Table Café & Wine Bar, Lyndoch has stepped up to the plate with the charming café now opening a wine garden. The café’s ongoing project has been an outdoor garden and wine bar that will accommodate for their new concept menu. The newly renovated building has a casual and friendly atmosphere, which will welcome anyone to come and enjoy breakfast, lunch or dinner. The food philosophy of the café has always been to have locally sourced produce that was made from scratch and cooked fresh. James Moir and Lynley Down are hospitality veterans who have refined their taste to be able to create delicious food from the Barossa produce. The new menu includes big and small share plates, tapas style food and a special “taste of the table” range which is the chef’s selection that gives you a chance to sample the essence of delicious, local food from the region. Lynley and James also use a 20 mile wine philosphy for their large selection of wine that they will be serving to pair with the new menu. The Table Café showcase boutique wines in the Barossa region and support the smaller winemakers who do not have their own cellar door. Local artists in the area are given the opportunity to showcase their handpicked art work in the café which are available for purchase. On Friday, December 18 the cafe will be hosting a wine’d down event that will feature live music from local musician Cloudy Davey, including a happy hour from 4-6 p.m. to celebrate the holiday season. Like The Table Cafe and Wine Bar on Facebook to find out about its exciting new loyalty card; The Locals Card. This card will offer customers discounts on coffee, access to regular happy hours and more! The delicious local food made at The Table Café and Wine Bar is also available for catering for events and parties. Government Advocacy

Members of the Barossa Food committee recently had the chance to meet with State Government Ministers during Country Cabinet in the Barossa. Barossa Food is advocating for labelling integrity, changes to regulatory restrictions and access to micro-finance along with broader Barossa issues.

A favourite amongst locals for almost 150 years, The Willaston Hotel is continuing to thrive as an excellent bistro dining experience. Originally called ‘The Victoria Hotel,’ the pub has been operating since 1866. The spacious and modern dining area promotes a family-friendly atmosphere, which accommodates anyone from those simply wanting a family dinner, to large group functions. New Manager, Mr Adam Birch is hoping to build on the already successful business and is keen to bring new ideas to the table. Although he has only been there a few months, he has had 10 years’ experience with the Australian Leisure and Hospitality Group in chef and managerial positions. Adam said The Willaston Hotel has a good reputation, catering for people of all ages. “I would describe it as an up-market pub, but we also focus on creating a very family friendly

sort of feel.” There is a secure playground facility available, in addition to offering children’s party packages. On Friday and Saturday nights they put on ‘Fun 4 Kids’ session with face painters and balloon artists. Adam believes that that the success of the pub has been built on “excellent service.” “A lot of the staff here are local people, so they know and understand the local community.” He also said that customers appreciate the affordable, quality dining experience The Willaston Hotel provides. “The items on the menu are reasonably priced, and

customers get great food value.” Head Chef, Mr Adrian Richardson said the menu offered an experience “in between fine dining and pub food,” which is emphasised in the gourmet presentation. He said favourites on the menu include the Signature Beef Burger, schnitzels and steaks. In addition to an extensive menu on offer, there is also a salad bar and ice cream machine. Customers can also set themselves up for the day on weekends and public holidays, with a full buffet breakfast of both hot and cold options. Adam said that they aim to use the freshest, quality produce, including local bakery products and Barossa wines. The venue has recently undergone an exciting face-lift, but Adam said, “there is more to come” with The Willaston Hotel’s growing success as a welcoming, local dining hub.

Two pairs of brothers have come together to create a fragrant, aromatic Riesling blend that is a perfect avantgarde summer wine receiving recognition after placing eighth in the Top 10 of the Hot 100 SA Wines announced Thursday, December 3. Düfte Punkt was made by Chaffey Bros. Wine Co. winemaker, Daniel Chaffey Hartwig and his brother-in-law, Theo Engela, together they have created an intriguing drink that is turning wine critics’ heads. Local growers in Eden Valley region, Graeme and Michael Fechner, have produced and grown the obscure grapes that created the summer white wine. Graeme came across a German grape variety called the Kerner during a trip to Germany. “One local winemaker said to me that the 2003 vintage was the hottest Germany had ever had. The wine he was producing from that vintage had such terrific flavour that he thought maybe it was too cold in Germany for the Kerner variety,” said Graeme. “I thought if it’s too cold in Germany, and they just had the hottest summer on record and he reckons it was a wow of a wine, excuse me, we are living in Australia. A little light bulb went on in my head. “We are the only growers of Kerner in South Australia that we are aware of and by area, we are the largest growers in Australia of this variety.” Graeme and Michael were selling the fruit to wineries in the Barossa and sometimes bottled Kerner wine themselves. It was by chance that they gave the Chaffey Bros. a bottle to taste when they came back to discuss the possibilities. Daniel said, “It was an interesting style. We thought we could make it more flamboyant and aromatic… We took a gamble.” The Düfte Punkt wine has a blend of three different grapes, Gewürztraminer, Riesling and Kerner, that are all supplied from the Fechner vineyards in the Angaston hills of the Eden Valley region. “There is a really incredible story DH0708-V12

behind putting three dramatic, aromatic varieties into one wine,” said Daniel. “In 2014 we made all three wines individually and then blended them. Although the wine was fantastic the first year, I think we nailed the balance in 2015 when we co-fermented the juice. It has become something quite special.” The wine name, Düfte Punkt, translated from German, means aromatic point, which the Chaffey Bros. believed to be an accurate description of the wine. Daniel explained that the Kerner, a 1929 crossbreed between Riesling and the red grape Trollinger, has an incredible flavour profile akin to a more tropical version of Riesling but with more structure and texture. He said that a lot of winemakers tend to shy away from phenolics in white wine but they are seeking to find the balance between fleshy fruit sweetness, texture and subtle hints of bitterness, which can give a refreshing quinine like finish similar to a gin and tonic. The Chaffey Bros. also have plans to make a single variety wine to highlight the uniqueness of the Kerner grape. Daniel said, “We don’t have any vineyards so we rely on our growers, such as the infamous Fechner brothers. “We look at everything we do as a partnership, Graeme and Michael have done all the hard work. Then it’s our job to take their incredible fruit and not ruin it.” The Chaffey Bros. believe that the Fechner vineyards have a great minerality with an intense flavour and little compromise. The Fechner boys are glad they took the chance to experiment with the unique Kerner grape, which has given them the opportunity to work on a bold and distinct wine. The Chaffey Bros. and Fechner boys are working side by side to transform an unheard of grape into an aromatic and boutique wine that consumers aren’t able to find anywhere else.
