I

used to be pretty scathing of pantomime. I don't actually remember going to many as a kid, even though there are some vague recollections of screaming 'it's behind you' until my voice went hoarse. When I hit early adulthood, the thought of going to see panto was greeted as enthusiastically as doing the laundry. I was way too cool for that, so it was many years before I went again in my late 20s when my then three-year-old nephew wanted to go. It was staged in Worthing and had some washed up actor in one of the key roles (I am too polite to say who) and I prepared for an excruciating two hours. But, against all odds, I found myself caught up in it and by the end had a new found appreciation of this most crucial aspect of the festive season. Now it seems that all manner of actors are keen to be involved in the shenanigans. In this issue, we chat to Katie Pritchard about why the acclaimed comedian wanted to spend her festive days in Worthing in their 2023 panto Sleeping Beauty, plus we look at the other must sees across Sussex. Now I just have to convince my 15-year-old niece to join the fun this year. I hope you all have a Merry Christmas!

Why the award-winning comedian, musician and actor Katie Pritchard wouldn’t be anywhere else but Worthing for Christmas B y N ATA L I E L I

h, the festive season; a time of merriment, overindulgence and for one pantomime performer, a time to catch up on sleep. And who can deny Katie Pritchard a full day’s rest during the Worthing Christmas panto run, where she stars as Fairy Amethyst in this year’s Sleeping Beauty. “My parents come to Worthing from London with tupperware filled with Christmas dinner, so we pop it in the microwave and then it’s a long walk on the beach and back home to bed after a few more roast potatoes,” chuckles the actor whose theatrical credits include Dreamboats and Petticoats in the West End. “It doesn't sound fun, but we have a fake Christmas Day when I return from panto. I used to try and get home for Christmas Day, but it just doesn’t work with the schedules. It’s only a day, isn't it? You can do Christmas Day any day!” For Katie, there’s nowhere she’d rather be than bringing fun and frivolity to audiences at the Pavilion Theatre, for the fourth consecutive year having previously starred as Jack, in Jack and the Beanstalk, Crepe Suzette in Beauty and the Beast, and The Fairy Godmother in Cinderella. “There’s something so special about

panto isn’t there that you just couldn’t not do it,” adds the endearing bright-eyed comedian. Growing up in a family that cherished music and harmony, it was no surprise that Katie, a multi-talented performer, would follow suit. Her parents created a sevenpart harmony vocal group when they were expecting her. She believes her prenatal exposure to the performing arts literally set the tone for her future career choice. As if it wasn't enough, Katie made her debut on stage at the tender age of six months, playing the role of Baby Jesus. Recounting the experience, she says: “My mum’s friend had to carry me up some scaffolding as part of the show. My mum was understandably worried, but it all turned out just fine.” After studying at the Chickenshed Theatre in North London and performing arts at Buckinghamshire New University, Katie has continued to thrive as a versatile performer, transitioning between quirky comedy, music, and acting. She enjoys the diversity of the live circuit, where she can engage with a wide range of audiences. Yet panto remains the highlight of her year. “It’s really cool because you’re a part of everyone’s Christmas. For a lot of people, it’s their first experience of the

theatre. Worthing is great for inclusivity and accessibility, so you’ll find relaxed shows to dementia friendly performances.” Of course, some shows have their fair share of farcical moments and aren’t as slick as others, but Katie believes the trick is trying to make sure that the audience doesn’t notice. “As an actor you have to improvise and work around whatever's going on,” she smiles. She giggles as she recalls an incident in last year’s Jack and the Beanstalk. “We call it ‘The Shy Giant’ moment because the giant prop reveal didn’t happen, and we had to pretend he was just tall and gesture towards the air. The rest of the cast didn’t realise the giant wasn’t there and it was funny to see them jump on stage to fight something invisible.” Alongside Katie this year, Marcavia McCarthey stars as Sleeping Beauty and fringe favourite Patrick Monahan returns to Worthing starring as the Evil Underlord. Katie expresses her excitement for this year’s role: “They’ve written me a really nice character. There’ll be lots of shenanigans and kerfuffle that I get into. I can’t wait.”

Q It’s not been long since Resilience in

Clay closed – how do you feel it went?

A I was really pleased with how it went. I got

a lot of support from the Cathedral, which made the installation smooth and easy. The reaction was overwhelmingly positive, and it was really good to know that so many people got to see it, and reflect on its message of hope.

Q What was the initial inspiration

behind this series of work?

A Back in 2016 I visited a refugee processing

camp in Paris. The majority of people there were young men, and it really got me thinking about their mothers, and how worried, helpless and concerned they would be thinking about their children miles from home and in that situation. Resilience in Clay was an extension of that.

A It took six months. I had seven sitters who

all came to my studio. We did three hour sessions and I did eight sessions per person.

Q Who were your sitters? A Sanctuary is a great charity who work

tirelessly to help people who are trying to make a new life for themselves in Chichester. I met all my sitters by working with them.

Q Was Chichester Cathedral the

perfect home for the exhibition?

A Chichester Cathedral is amazing. It has

a rich heritage of supporting the arts. It also has a feeling of serene calm. It’s a good place to stop for a moment to think. What made it really perfect was the overwhelming support I got from Ollie and Rebecca and all the Cathedral team. They totally got what I wanted to do immediately. Their support,

collaboration and enthusiasm took it to a place far beyond my initial hopes and aspirations. Q Did you feel the local community really

embraced what you were trying to say?

A I think it is very easy to be distracted

by the loud minority. I firmly believe that the majority of people, the quiet majority if you like, are compassionate and caring. They understand that the plight of many is desperate and that help and support is needed. We received thousands and thousands of messages of support, so yes I think the local community were very supportive.

Q How does it feel when an exhibition closes? A I wasn’t expecting to feel the way I did,

so it’s a really good question. I expected to feel a sense of relief. In fact I felt dreadful! Really flat and very sad that it was finished.

Q Taking a step back Kate, when

did your interest in sculpture first develop? A I think I made my first sculpture when I was about nine, so I was into it early! At 16 I had an inspirational teacher who really ignited my passion for sculpture. She really encouraged me, so I was really lucky to have had that help to get me going.

Q When did it become your career? A I started straight after graduating from

Winchester School of Art in 1991. Initially I did a lot of furniture design, I was always sculpting but that was my main focus. I slowed it down a bit to get my children up and running, but have been doing it for over 30 years.

Q Have you always been

based in Chichester?

A I have been in Chichester for 28 years, I

really love it. My studio is three miles south. It was in need of major renovation, so I have been very lucky to have been able to design and shape it exactly as I want it. It’s my happy place, despite being a bit chilly in the winter!

Q How do you tend to work? A I tend to get laser focused on a

sculpture and work on it quite rapidly. The hardest thing with sculpture is to know when something is finished. Usually I get stuck into the next sculpture, which tells me the previous one is done!

hen I started writing Wills, back in the dark ages, students checked libraries for information and pub quizzes were a test of memory, not stealth phone checking. I very clearly remember being taught how to send an email, and when the office got its first networked computer receiving about one message a week. Then the internet exploded. Social media was invented, and suddenly it appeared that teenagers everywhere were becoming overnight multi-millionaires. The problem with teenagers is that they think, or know, that they are immortal: 40 is old, 60 is ancient and 80 is positively biblical! An

added complication is that most of the teenagers were based in various states in the USA. Each state has had to create its own laws about the digital world, and not all of them are the same. In the more refined world of Will writing, we may still refer to laws made in 1809, but we do move with the times. Recently we have had to start advising clients who may have a significant digital estate to deal with. It’s easy to find yourself with Facebook, Instagram, X, TikTok, iTunes, a couple of online only bank accounts, PayPal, a Gmail address and various other sundry accounts-you-onlyopened-once-and-now-can’t-rememberthe-password-to (or is that just me?). There are several digital vault providers who will store all your passwords and aim

to make it easier for your Executors to deal with those assets on your death. Our advice to clients has been to ensure that they are aware of how all the providers will deal with their accounts on death, and to ensure that passwords are safe, but accessible somewhere to your Executors. We have found that often the most fool proof is “Old School” and to write them down on paper, and store that paper safely. As the teenage whiz kids and their customers mature it is becoming increasingly important to clarify, and ease, the procedures for closing accounts. Facebook have a “Legacy Contact” to manage your account. You do not do this by Will, but through Facebook itself. It allows your contact to manage your page, post on your behalf and close it down if required. Apple also has a new Legacy Contact setting in its latest iOS update, which allows you to give someone access to your Apple Data after you die. Google also has the option for you to appoint a Trusted Contact who can deal with and even shut your Google accounts if you pass away. Much of the present confusion and proliferation is bound to be harmonised in the future, but I wouldn’t hold your breath, or you might be needing that legacy contact sooner than you think. In the meantime, it’s worth making sure your real-world Will is up to date and your digital wishes are recorded to make it as easy as possible for your loved ones to manage your estate and digital afterlife. It’s a great time of year where we can utilise game from the estate and showcase produce that we have preserved from the autumn harvest. Q What are you looking to offer with this year’s festive offering at Chalk? A We are offering an à la carte menu available for both lunch and dinner, which will showcase seasonal and local produce. We have decided to leave the turkey off the menu this year. Instead, we will be cooking some stunning free-range chicken and duck. Q How important is the Wiston Estate to what you come up with? A It’s fundamental. I will be talking regularly to our stalkers and gardeners to see what is coming in and plan accordingly.

A Two deceptively simple dishes that are equally satisfying to prepare and eat: Estate Venison Ragu Rigatoni & Twineham Grange, and Chicken Liver Parfait, Quince Jelly & Toasted Brioche. We barbecue the haunches and shoulders of the venison, marinade in Wiston wine and braise low and slow for 24 hours as the basis for our ragu. It’s a two-day process in the end, but the results are worth waiting for. For the parfait we have developed a new technique to create an even softer texture along with our house-made brioche using flour from regenerative farms and paired with quince from the garden. Q Do you think Chalk is the perfect spot to enjoy the festivities? A It’s really great that we can offer guests a choice of the private dining room (up to 10 guests) or our main dining room. Q How has this year gone at Chalk? A It has flown by. It’s lovely to have received

recognition in both the Michelin Guide and the Good Food Guide. What’s been equally great is seeing so many returning guests.

Q What do you love most about overseeing the kitchen at Chalk? A I am fortunate to work with such a dynamic, driven and enthusiastic team. I love dish creation and nurturing an idea from paper to plate. Q Will you get any time off over Christmas? A We are closed from Christmas Day to the

27th, which gives the whole team space to spend time with their families. Our annual closure in the first two weeks of January also provides time for the whole team to rest up after what has been a very busy year.

Q Do you still like to cook at home on Christmas? A Yes, I do love to cook at home, but I normally avoid turkey on Christmas Day. I would much rather spend time on a beautiful fish such as a whole turbot. I like to cook this on a bed of fennel with white wine, rosemary and plenty of butter. This makes such a lovely sauce when combined with roasted turbot juices, a Pil Pil of sorts. We also don’t serve Christmas pudding, so a simple scoop of vanilla ice cream will suffice – we have to leave room for a cheeseboard, which must include Mont D’Or. Q What does 2024 hold in store for Chalk? A We will continue to develop our offering

along with running more winemaker dinners and some interesting chef collaborations. We are also looking to launch a fixed, fivecourse dinner menu that allows us to really showcase the beautiful produce on the Estate and from our trusted local suppliers.

Exploring the history of Carr Taylor vineyards - and why the future looks just as exciting

n 1969, Linda and David Carr Taylor purchased at auction the estate which surrounded the family home at Westfield, Hastings. For the first two years they grew wheat and hay, but found it unprofitable. So they had to find a crop which would be both interesting and rewarding. After numerous soil analyses and research, the choice was narrowed down to onions, white roses and vines. Of all the possibilities, vines seemed the most promising and certainly the most interesting. Having chosen the crop, it was necessary to choose the method of growing the vines. David pioneered the High Wire Trellis system, which consists of raising the plants to approximately 5 feet above the ground to avoid the effects of ground frost in the spring. The rows have to be 12 feet apart so as not to overshadow one another. Only 450

which was then fermented into apple wine. This proved so popular that a range of fruit wines was developed as a complement to the established range of Carr Taylor wines. The flavours in the range gradually changed over time to match demand and has now been extended to include a very popular Mead and Ginger wine. Carr Taylor is now firmly established as one of the premier vineyards in England with an unrivalled heritage. The good mix of products and understanding of the industry and wine business has enabled it to weather recessions and adapt to changing trends in wine drinking. The next major phase for the business is a bold and exciting one. Planning permission has been gained for a complete rebuild of the current shop and winery buildings. This will allow a purpose built visitors centre to be constructed with an enlarged shop, restaurant, conference facilities and brand new winery. This will significantly enhance the visitor experience and bring the business up to par with other international wineries. The future looks very exciting indeed. carr-taylor.co.uk

This helps reduce the initial investment and, because of the fertile soils, allows the vines to grow larger to absorb the vigour. The initial planting commenced in 1971 with varieties such as Reichensteiner, Gutenborner, Muller Thurgau, Dornfelder and the classic champagne varieties, Pinot Noir, Pinot Meunier and Chardonnay. There have been many changes and success stories over the years – and we would need several pages to cover all – and the last piece of the jigsaw for the company came about due to a need to respond to the seasonality of the wine year, improve efficiencies in the winery and provide a greater range of products to please the broad range of tastes to the visitors to their shop. ven though my daughter is now two and a half, I’ll admit that my pelvic floor probably isn’t as strong as it should be post-birth. I know I should be doing more pelvic floor muscle training, but I’ll hold my hands up and admit that I’m not very good at remembering when I’m busy. y family’s background is based in design, so I’ve always grown up with a fascination for interiors and creativity, from childhood visits to galleries, to being inspired by historic architecture, through to completing property renovations in my adult life. As the agency had been established for 35 years, I was incredibly impressed that DesignLSM had (and still has) built up such a respected reputation within the hospitality industry – delivering beautiful interiors around the world. I was inspired by the vast range of projects they had delivered and the brands they worked with, from Michelin star chefs to entrepreneurial start-ups. I was eager to bring my strategic and commercial experience to further enhance the studio’s offering.

Becoming MD was the biggest moment in my career so far. Having worked within the company for a few years and assisting in the delivery of many fantastic projects, being asked to take over this role for such a wellrespected agency was a complete honour and privilege, which was accentuated when I also became an owner. Throughout the years, DesignLSM has undergone significant evolution, especially in bolstering our strategic offering. We’ve consistently honed our approach to delivering designs that are both visually impressive whilst being rooted in strategic intent and functionality. Furthermore, our work and influence across the Middle East has grown markedly. This geographic expansion has not only expanded our client list, but also enriched our design ethos, enabling us to seamlessly integrate global aesthetics and demands, with local sensibilities.

Future GLANCE

One of the significant projects I’ve had the privilege to work on was Heythrop Park Hotel. It’s a stunning Grade II listed 440-acre estate located in the Cotswolds. Appointed by Warner Leisure, our role was multi-faceted, encompassing strategic creation of F&B concepts and guest experiences through to the planning of the property and extensive interior design across six lounges, three restaurants, two bars, The Orangery, a ballroom and state-of-the-art theatre. Another noteworthy project has been 81 Bay Street in Toronto where we delivered the concept proposition, masterplan and design of the F&B proposition for TABLE Fare + Social. This venue is a pioneering initiative in the city, located in a new high-rise development, covering a sprawling 45,000 sq. ft. It features an upscale independent restaurant and a dynamic food hall that houses a casual restaurant, a coffee outlet, a bar, and multiple food kiosks. At DesignLSM, we take immense pride

in not adhering to a specific ‘house style’. Instead, as a strategic design agency, our approach is rooted in understanding our clients and creating a unique vision. Our primary goal is to collaborate closely to craft a space that not only embodies our client’s ambition, but is also tailor-made to their guests’ needs. Design focussed and informed by the brand’s DNA, delivering commercial and operational purpose as well as captivating guest experiences to forge deeper emotional connections with the space and brands. I’m based in Laughton, which is nestled within the beautiful Sussex countryside. While it’s not in Brighton itself, it’s conveniently close to our studio, ensuring easy accessibility to both the team, but also travel networks to our clients. I love the places I live and work within. I am constantly inspired by my surroundings and find Brighton such an invigorating city – its myriad of cultures, people and landscapes are so fascinating. Watching it develop and grow is fascinating, particularly seeing the success and expansion of home grown F&B brands. For my more meditative time I always look closer to home and the Sussex countryside – walking my dog with my family in the fields and woods is very much my happy space. I love Christmas and I am particularly excited for this year, as we have recently undertaken a large renovation of our family home. Having moved out of the house for almost a year, we are now back in and I am very much looking forward to decorating for Christmas, being cosy with the log fires lit and spending time relaxing in our new spaces.

ou can easily get caught up in the moment of having achieved a lot by opening a College; especially in the current UK education climate, we are bucking a trend. However, seeing our students arrive on site at the beginning of September was genuinely momentous after a long period of planning and preparation. The development of the College site has been huge, so it is rewarding to see students interacting with each other and the space. We are right at the beginning of our journey – one that I am honoured to be at the helm OIC BRIGHTON STUDENTS ENJOYING A VISIT TO THE CITY

of – and, since opening, we have had to be clear with our students about what the site looks like now and how it is going to develop. It’s exciting for them because they have the opportunity to really make it their own. Our Grand Opening was a special event because it allowed us to set out our stall in terms of our vision, purpose and ambitions for our students. And what does that look like in practice? The most important thing for me is to put wellbeing at the heart of what we do whilst not compromising on our academic ambitions. I believe that human relationships are at the absolute core of a good educational experience, and if we can get that right then the learning naturally flows and enables our College to feel like a true community. Our approach to education is a tried and tested formula at a new campus; our sister college in Oxford achieved the best A-level results in England this year. We are motivated to meet the same academic expectations and exceptional outcomes for our students. Our model is built around preparing our students for entry to the world’s top universities. For students in all year groups, we match them with a tutor who can give them strategic advice for their future study. We group tutors by faculty with specialists in engineering, medicine and humanities to help guide and support students on their academic journey. Having said this, at OIC Brighton, we also want to ensure that all our students develop personally and professionally. They have already started running their own student-led societies, and our first ever student council is taking leadership training through the Society of Heads. It’s brilliant that our students want to shape the College and want to influence things; if you don’t have opportunities for student voice, then there is no opportunity for them to offer feedback. But it is just as important that our students understand and

So, on a termly revolving basis, our students will all have the opportunity to take a leadership position and understand that there are obstacles, processes and challenges involved in decision making. This will also help our students to think critically and appreciate different opinions and approaches to tasks – something which is hugely important in our international college where our student cohort is made up of over 25 nationalities. If we are not able to bring them all together in a forum where they can understand each other, share ideas, and challenge each other’s ideas, then they are missing out on the opportunities to learn a lot from being in such an international setting. And so, my focus will be to continue to develop a happy, warm, and friendly learning community where students have common ambitious academic goals. TIDINGS The Head at Windlesham House on how boarding festivities help to share the joy and spread the magic B y B E N E VA N S

C

hristmas is a special time of year for schools. At Windlesham, we like Christmas and the excitement of the festive season to start a little earlier. For example, it has become a much-anticipated tradition to mix the school Christmas cake during an assembly under the guidance of our head chef. We ask the oldest and youngest pupils in the school to sir the cake mixture whilst the whole school makes a wish. This simple community act marks the start of our celebrations. There are dorm decorating competitions, which are only limited by the children’s creativity. It is wonderful to see the school come alive with tinsel and festive trimmings, plus a healthy dose of friendly competitive spirit. Winners are chosen from the boys’ and girls’ houses and an overall decorating champion is announced. The house Christmas tree decorating competition is a firm favourite too. Much work goes into the handmade decorations and there is a different theme and colour each year; the decorating itself is a joint affair, and the judging is always a difficult task. In our food technology kitchens, the annual Christmas cake competition continues apace throughout November and December. The

finished creations are a sight to behold and again, the judging is an almost impossible task. At the weekends, there are also present and card making workshops, visits to Worthing to see the lights, mince pie and Christmas biscuit making sessions, and the odd Christmas movie too – it is easy to see why the children are always happily immersed in a festive fantasy throughout the whole of December. Another great opportunity during the festive season is our whole school Christmas Fair. Our boarders play a large part in organising this event, which is always on a Saturday morning in December. Those in Years 7 and 8 run their own Windlesham Diploma entrepreneurship company stalls at this event, selling a whole range of home-produced Christmas themed goods as well as fun activities with all profits going to our school charities. A highlight of the season has to be the advent and carol services at which our boarders play an important role with many singing in the various choirs, playing instruments or leading the readings. Our chapel, at the heart of the school, is candlelit for a small and intimate advent service with mince pies and hot chocolate at the ready. Our term then ends in the school theatre, seating 300 parents who watch our pupils come alive with much loved carols, amazing performances and, most importantly, the wonderful feeling of community and festive anticipation. After a busy and hard-working term, the atmosphere in the boarding houses takes a slightly slower pace. There are evenings of storytelling around the open fires in the drawing room, with children under blankets and more hot chocolate on offer, bedtime festive tales in dorms from our academic staff, and one of the favourite times of the year, Christmas singing in the front hall. Traditional carols mixed with the best of modern festive songs – there is nothing quite like it for bringing children of all ages together. Our boarding communities are extremely close knit, living and working together and sharing the highs and sometimes lows, supporting each other and enjoying the

fellowship and friendships that will last a lifetime. Christmas at Windlesham allows this to happen in different ways and at a time of the term when the structure of the day is more relaxed and there are opportunities for different events and activities. Within our pupil body at Windlesham, we have a rich diversity of nationalities, customs and cultures. As such, Christmas gives us the opportunity to explore these in assemblies and chapel services, through our lunch and supper menus, and in PSHE lessons. Last year, our carol service readings were presented in two languages, which not only allowed more children to participate, but also highlighted what a wonderfully multicultural community we have. Regardless of religious beliefs, the festive season in schools should be fully inclusive. It is an opportunity to bring children together, share lots of fun, excitement and experiences that may only come around

at this time of the year. British culture and traditions are highlighted and can be explored along with lots of Christmas food and other treats. So much of what and how we celebrate Christmas today transcends religious beliefs, particularly in schools. It is far more important that we ensure all pupils are catered for. Our Christmas catchphrase is ‘share the joy and spread the magic’. We want the festive season to be fun, memorable and, most of all, a time in the school calendar that brings children and adults together. Our message to the children and our boarders is one of sharing, generosity of spirit, kindness and respect. Whilst this doesn’t change at Christmas, it is perhaps easier at this time of year to focus on the idea of giving and supporting those who are less fortunate than ourselves. windlesham.com A B S O L U T E LY m a g a z i n e s

Rockinghorse

Children’s Charity The Brighton organisation has been named as Highly Commended in the Medium Charity of the Year category at The ThirdSector Awards

ockinghorse Children’s Charity has been part of the Royal Alexandra Children’s Hospital in Brighton ever since the charity was founded in 1967. As the official charity of the Royal Alexandra Children’s Hospital, Rockinghorse has supported babies, children, and young adults in Sussex for over 55 years. The ThirdSector Awards celebrate the outstanding achievements of individuals and organisations operating in the Third Sector, or non-profit making organisations, recognising their tireless efforts and transformative impact. This prestigious award underscores Rockinghorse’s position within the Third Sector, acknowledging their role within their industry and driving positive change. Chief executive, Donna Holland, says: “The Rockinghorse team work incredibly hard every year, not for recognition or reward, but to make sure that the children and young people in our community get the support and care that they really need. However, we couldn’t be happier to be recognised as Highly Commended for such a prestigious national award. If nothing else, it’s wonderful that the Rockinghorse name will be showcased along with so many other well-deserving organisations.” This recognition helps reaffirm their mission in continuing to positively impact the lives of children and families throughout Sussex, ensuring they receive the care and support they deserve. The charity, known originally as the ‘Rockinghorse Appeal’, was founded by much-loved paediatrician Dr Trevor Mann in 1967. Originally started as an appeal to provide the first incubator outside of London, Rockinghorse was adopted as the Royal Alexandra’s – known as the Alex – official charitable fundraising organisation. In the run up to Christmas, they are once again running their ‘Be a Rockinghorse Star’ campaign to raise funds to make

sure that no child visiting or staying in hospital throughout Sussex this Christmas misses out on the festive fun. Donna adds: “Christmas is an especially busy time for the charity. Over the coming months we will support the families who already know they are going to be in hospital at Christmas; those who have just got a diagnosis, or whose child is already sick. They know that Christmas Day will be spent on a ward, in a treatment room or having surgery. “But we also support the families who don’t know they are going to be in hospital yet. They will be planning for Christmas as normal, but sometime in the next month or so, something will happen that will completely change their plans. At Rockinghorse, we support all children and their families.
