LETTER FROM THE EDITOR

Welcome to the annual Gentlemen’s Issue, Alexandria!

Depending on the cover photo of the copy you’re holding in your hands, you can no doubt imagine there’s more to that shot than meets the eye. A total of 11 awesome dogs paired with 11 incredibly unique men in the community for photo shoots that, of course, didn’t go exactly to plan. There was the stormy day Sheriff Sean Casey came for his shoot with Mickey, the German Shepherd, when the thunderstorm didn’t let up except for a five-second window when the rain stopped and our photographer was able to capture an amazing photo that gives absolutely no hint at the chaos that ensued only moments before. Or Shawn McLaughlin, who was attacked by bugs that morning and then, like the rest of the great guys and remarkable dogs who the fantastic people at Animal Welfare League of Alexandria so kindly brought in, had to endure the 100+ degree temps and oppressive heat that settled over the area.

Whether of the four-legged or two-legged variety, these guys deserve a lot of credit—plus a great deal of admiration for who they are. Read on and you’ll get a peek behind the curtain at who these gentlemen are and why we chose them for this year’s issue. Note that we have multiple covers, a first for our Gentlemen’s Issue, but a move we thought was important to highlight that all of these men are cover-worthy.

And so are the dogs. These are just some of the faces you’ll see at the shelter and we can’t stress enough the importance of supporting the Animal Welfare League of Alexandria's mission! Thank you to all of AWLA's amazing volunteers who were there to run dogs in and out so they could enjoy a break from the heat in the air conditioning, ensure that these pups had the water they needed and everything else to keep them happy and healthy during our shoot. We love you guys! We also had an awesome event celebrating our most interesting men at Barkhaus—many thanks to Alex and team and our incredible sponsor, TING!

Enjoy the issue and get to know these men a little bit better. We have no doubt you’ll see what we see and just why they have been nominated to this year’s lineup. Happy reading, Alexandria!

YOUTH ATHLETE OF THE MONTH

Lyndsey Ahrens

As someone who has danced since she was three, Lyndsey Ahrens has always been athletic. Adding hockey and softball to her repertoire increased her desire to strengthen her body and improve her fitness, so the 16-year-old focused her training at D1 Training over the past year.

Ahrens’s first experience with D1 involved improving her hockey skills by focusing on specific off-ice workouts. That sense of gain led to a desire to continue training with the pros at D1. “My workouts consist of lots of focus on building leg muscles to skate faster and stronger,” says the Woodson High School junior. “All D1 workouts finish with cardio—usually running—and that has really helped me improve my stamina, which helps with skating for extended periods of time during games and practices. I have also noticed improvement in my arm muscles, which translates into having a stronger shot in hockey.”

As she continues training, Ahrens’s goals for the future are to build her upper body strength as much as she has strengthened her lower body. “I also want to be able to better balance being muscular and strong for hockey and softball, while being lean and fit for dance,” she says.

With 13 years of dance, a decade of softball and six years of hockey, Ahrens has balanced a busy schedule for much of her life; but her passion keeps her driven, despite the long hours she puts in. “I'm passionate about sports because it can be a release from the world

where I can push myself and have fun with my teammates,” she says.

Ahrens is the middle of three children and comes from a family that is extremely active and involved in multiple sports. In her free time, she plays guitar and loves to hang out with her friends. She works as a lifeguard during the summer, but usually spends most of her time at her assorted sports practices. Her favorite subjects in school are American sign language, ceramics and personal fitness.

REBUILDING TOGETHER DC ALEXANDRIA REVITALIZES HOMES, COMMUNITIES + LIVES

Andrew and Kim Moten live on a fixed income in Alexandria. Their home repair needs were piling up, but they did not have the budget to make those repairs. That is, until Rebuilding Together DC • Alexandria stepped in. Last December, the local nonprofit installed a lift on the stairs (Kim, 64, is physically disabled and spends most of her time on one floor of her house since she cannot go up and down steps easily), replaced the refrigerator, cleaned out the basement, gave them new windows and fixed the plumbing — all free of charge.

“I’m just overwhelmed,” Kim Moten says. “I couldn’t afford it.”

Rebuilding Together DC • Alexandria is a grassroots movement to restore lives and revitalize communities by repairing homes, according to Director of Development Brandon Swain. The organization rejuvenates neighborhoods in Alexandria and Washington, DC by maintaining housing

for low-income homeowners and providing critical home repairs that eliminate health and safety hazards.

“We will fix anything that needs to be fixed,” says Swain. “People are so grateful because for so long, it’s like they felt like they were invisible or just didn’t have the financial support to do anything about it.”

Rebuilding Together focuses on stabilizing 25 specific items that the National Center for Healthy Housing (NCHH) found to drastically improve living conditions for a home’s residents, with a particular focus on low-income persons living in older and/or substandard housing who are disproportionately affected by home hazards. Volunteers work throughout the year on home safety, accessibility modifications and fire and carbon monoxide safety prevention improvements.

The nonprofit’s data confirms improvement in communities. Rebuilding Together's clients met only 68% of the recommended items on the NCHH list before repairs, but

23 | VIP ALEXANDRIA august 2023 ALX IMPACT IS BROUGHT TO YOU BY MCLAUGHLIN RYDER INVESTMENTS 1421 PRINCE ST #200, ALEXANDRIA, VA 22314 | (703) 684-9222 WWW.MCLAUGHLINRYDER.COM

after Rebuilding Together made repairs and upgrades, 86% of the items that contribute to a safe and healthy home were completed.

“I want to say thank you. I don’t know what I would have done without them,” says Moten.

SCHOOLS AND CIVIC GROUP REVITALIZATION

Rebuilding Together also provides modifications and upgrades to schools, parks and other common spaces in underserved neighborhoods.

The organization’s Community Strong program upgrades or renovates these areas. Activities include building greenhouses and vegetable gardens, installing benches and tables, creating walkways, planting greenery, installing play areas and much more.

The efforts bring positive results, according to organization officials. Children have safer areas to play, neighbors have gardens to grow their own food, seniors have social connection spaces and safe facilities to attend and whole neighborhoods have been revitalized.

Simon Elementary School, in Washington, DC, held a revitalization day in May; a perfect example of the valuable work done by Rebuilding Together. Over 50 volunteers from Cushman and Wakefield real estate services joined forces with Rebuilding Together to make sure the DC school’s gardens were tended to, railings and curbs were given a fresh coat of paint and blacktop was painted with a map of the United States.

“It’s one thing to say education is important; it’s another thing when a kid walks into a school and they feel that where they are going is important, where they’re going matters,” says Swain. “When they see that their school has been brightened up and repainted and everything, they’re more engaged.”

FIXING HOMES, BUILDING COMMUNITY

Rebuilding Together addresses home repair and maintenance issues that potentially present an immediate safety or health risk to local homeowners, thereby preventing unnecessary illness, disease and perhaps even death. The recipients can’t say enough about how much they appreciate the help.

“I’m just overwhelmed. The volunteers, they were wonderful,” says Moten. “When they came here, they did some work in my basement; they cleaned out the basement for me — they cleaned it out! It was just a mess and they came and they cleaned out everything.”

A HOME OF YOUR OWN • ALEXANDRIA

Rebuilding Together’s Home of Your Own program provides first-time buyers with an opportunity to become homeowners. The organization acquires foreclosed properties, renovates

24

them using volunteer and skilled tradespeople and sells the units to low- and moderate-income City of Alexandria residents and workers with greatly discounted and subsidized funding. Based on four recent acquisitions, buyers were able to decrease their housing costs by $350/month, according to their website. For additional information regarding qualifying criteria, please call the Office of Housing at 703.746.4990 or visit the Office of Housing’s website at www.alexandriava. gov/housing.

VOLUNTEERS AND SPONSORS

Individuals and organizations are needed to volunteer and sponsor services performed by Rebuilding Together. The organization’s website encourages individuals and companies to "adopt" a home, providing critical repairs necessary to the home. Rebuilding Together also collaborates and communicates with other local nonprofits and civic organizations to find recipients for their services.

“We so desperately need our volunteers and we so desperately need our sponsors,” Swain says. “We know we don’t have enough people to help everyone who needs assistance. The more sponsors we have, the more volunteers we have, the more we can do.”

Swain says volunteers don’t need to have a background in construction to be a part. There are numerous tasks to do that don’t require specialized training. “We have all the tools, all the supplies, everything ready to go so that all you have to do is show up and go to work,” Swain says.

In addition, Rebuilding Together also jumps at the opportunity to partner with skilled craftspeople, whether they be plumbers, carpenters, roofers or other tradespeople.

Many companies find volunteering with Rebuilding Together is a wonderful opportunity for team building. Companies are encouraged to recruit a group of employees to complete a single-day volunteer project, taking place either in Washington, DC or Alexandria. The event would include repair tasks at the house of a homeowner in need or a community space (such as a park or school) in an underserved neighborhood. An exclusive project day is a great way to provide immediate, tangible assistance to homeowners and communities in need.

Financial support is also greatly appreciated. It goes a long way in helping needy residents. All monetary and in-kind donations are tax-deductible as provided by law and go directly to Rebuilding Together DC • Alexandria.

25 | VIP ALEXANDRIA august 2023
“WHEN YOU’RE ASSISTING INDIVIDUALS, IT CAN FEEL SOMETIMES LIKE YOU’RE EMPTYING A LAKE WITH A PLASTIC CUP. IT CAN FEEL LIKE THERE ARE SO MANY PEOPLE THAT NEED HELP AND ASSISTANCE, PARTICULARLY IN AN AREA LIKE OURS... AND GENTRIFICATION OCCURS AT SUCH A RAPID PACE THAT THEY OPT TO SIMPLY SELL.”

Also, gift cards can help. Because Rebuilding Together purchases all the supplies and materials needed for repair services, they will gladly accept gift cards.

AN UPHILL BATTLE

The organization, despite best efforts, sometimes cannot meet the needs of the community.

“When you’re assisting individuals, it can feel sometimes like you’re emptying a lake with a plastic cup,” Swain says. “It can feel like there are so many people that need help and assistance, particularly in an area like ours that's changing rapidly with a lot of people in need of assistance. And gentrification occurs at such a rapid pace that they opt to simply sell.”

For now, Rebuilding Together will continue to reach as many residents as possible, repairing, restoring and revitalizing. Swain says the organization is a win-win for both the recipients and the volunteers.

“You always see the smiles on the faces of the people we serve. You can see it in their eyes,” Swain says. “I tell every volunteer, there’s never a doubt that we’re making a difference.”

PERFECT PAIRINGS

Dalia Maris Creamy Salt Cod Pasta

BROUGHT TO YOU BY UNWINED STORY & RECIPE BY BRIAN ACTON

28

Giampaolo Venica doesn’t mince words. He is a winemaker with a clear vision, unwavering in the face of trends. This should be unsurprising given that his family’s winemaking history in the region of FriuliVenezia-Giulia—an undulating land situated in the northeast corner of Italy, sandwiched between Italy’s Veneto to the west, Austria to the north and Slovenia to the east—dates back to at least the 1930s. They’ve seen trends come and go, both within their region and across the world of wine. Just in that time, with the advent of modern winemaking technology, they’ve seen their home region shift from a focus on red wine production to producing highly sought after cool crisp whites; while the wine world itself has bounced seemingly aimlessly from fashion to fashion—barrel fermented Chardonnay, ABC (anything but Chardonnay), Grüner Veltliner, 200% new oak and so on.

His new project under the Dalia Maris label calls into question the dictum underpinning many modern white wine production techniques, namely that, above all, a white wine must first be

refreshing. This typically translates into low alcohol, high acid wines. Obviously, there is merit to this approach, as anyone who has enjoyed a taut Sancerre or a flavorful but brisk Kabinett Riesling on a summer afternoon can attest to. But, not every grape variety or terroir is best expressed through a wine that is picked early, fermented in stainless steel and has a final alcohol of 12.5% or less. What this thinking seems to say is that white wine is for refreshment, while red wine is for complexity. This, however, cuts the wine drinker off from a whole world of enjoyment.

While seemingly radical, especially given that linear, bright whites put his native Friuli on the map with wine drinkers, Giampaolo’s thoughts dovetail perfectly with those expressed by Jean-Emmanuel Simond, wine writer for the French "La Revue du vin de France." In his recent interview with former sommelier, Levi Dalton, Simond decried this trend for low alcohol, high acid white wines for compromising a wine’s ability to gain complexity with age—a hallmark of a truly fine wine.

I should also note, yours truly began this series of installments criticizing such fashions while advocating pairing richer white wines from the Rhône Valley with fall cuisine.

The wine I’d like to recommend to you today is the 2020 Dalia Maris Bianco “Cru B” ($75). Cru B is a field blend of 80% Tocai Friulano and 20% Ribolla Gialla sourced from 60- to 80-year-old vines planted in the Buttrio cru in Friuli’s Colli Orientali zone. It is here that Giampaolo’s thoughts reveal themselves to be based on keen insight rather than merely the expression of contrarian impulses. While the international varieties, Pinot Grigio and Sauvignon blanc, express themselves uniquely in Friuli’s terroir when farmed

29 | VIP ALEXANDRIA august 2023

and made for freshness, the region’s native varieties, such as Friulano and Ribolla Gialla, find their true typicity at a higher level of ripeness. Giampaolo therefore looks to France’s Northern Rhône region as his model for viticulture and winemaking, rather than the ever fashionable and leaner in profile Burgundy. From 2017 to 2019, he flew to Hermitage in the Northern Rhône to work with the renowned Jean-Louis Chave after completing harvest at home to try to refine his vision.

The end result is one of the most spectacular Friulanos you can hope to have; a triumphant expression of the Buttrio cru, which is one of the warmest sites in the Friuli with unique clay soils. This site yields richer, fleshier wines, making it the perfect site for Giampaolo to actualize his vision. The 2020 wine spent 12 months in oak barrels, the very barrels in which Chave’s coveted Hermitage Blanc is raised, and the rest in stainless steel before being bottled in July of 2022. The 2020 wine is perfectly balanced with a nose effusive of white flowers, baked apple, custard and

baking spices and a creamy concentrated palate brimming with ripe orchard fruit—all buoyed by an expressive mineral finish. To pair, I’d recommend a dish that matches the creamy richness of the wine, which allows its fruit to shine and its acidity to cleave through the dish—clearing up your palate for the next bite. In particular, I’d recommend pasta with salted cod, prosciutto and cream. If you want to pay homage to the wine’s homeland, serve the dish over polenta instead of pasta, spike the cream sauce with raisins, a cinnamon stick and ditch the peas.

Creamy Salt Cod Pasta

INGREDIENTS

• 6 tablespoons of olive oil (extra virgin)

• Salted cod fillet (Baccalà), about 8 oz, rinsed

• Medium onion, chopped

• 2 to 4 garlic cloves, sliced as thinly as possible

• 1 cup of white wine (dry)

• 1 medium Yukon Gold potato, peeled and cut into chunks

• 2 green onions, sliced thinly

• 4 oz prosciutto, diced

• 1 cup peas (frozen)

• Flat-leaf parsley, minced (to taste)

• Zest of a lemon (to taste)

• 1 lb dried tubular pasta, such as penne or rigatoni

DIRECTIONS

Place the cod filet in a pot of cold water and place the pot in the fridge. Soak the cod for two days, changing the water at least once. Pat the fish dry and cut it into chunks.

In a deep skillet, heat four tablespoons of olive oil, onion and half of the garlic over medium heat until the mix is softened,

30

but not browned. It should take five to eight minutes. Add the cod and cook it until the onions begin to brown (approximately five minutes). Next, add the wine, stir it in and cook it until the wine is almost evaporated. Then, add the potato with two cups of water. Bring it to a simmer and continue the simmer until the potato is tender (about 10 to 15 minutes). Then, transfer the contents of the pan and one cup of the liquid to a blender and blend it until smooth.

Sauté the remaining garlic and scallions in the remaining olive oil over medium heat until they are softened, which should only be a few minutes. Add the cod puree, peas and prosciutto. Simmer it until the peas are warmed through.

Add the al dente pasta (check the pasta after about five minutes before the time suggested by the package instructions). Thin the sauce with pasta water, if necessary, and top it with parsley and lemon zest.

Polenta is a dish of boiled cornmeal that was historically made from other grains. The dish comes from Italy. It may be served as a hot porridge, or it may be allowed to cool and solidify into a loaf that can be baked, fried, or grilled.

Since opening in 2022, Balian Springs has been a sanctuary and haven of health and wellness, offering the best parts of wellness culture from around the world in one Alexandria-based destination. VIP sent local influencers, Aaron Huie and Gabriel Soto, there to enjoy a relaxing day focused on their minds and bodies.

Take a walk back in time and you’ll see a myriad of ways ancient civilizations engaged in selfcare, from the acupuncture treatments of China to the curative thermae baths of Rome. Clearly, the spa concept is nothing new. Today, we have updated treatments and combined practices and methodologies to create the most holistic environments possible.

Since opening in 2022, Balian Springs has been a sanctuary and haven of health and wellness, offering the best parts of wellness culture from around the world in one Alexandria-based destination. “We haven’t reinvented the wheel; we are spotlighting known methods and therapies that have worked for centuries, while keeping our pulse on any new trends and treatments that all can tie into longevity and health,” says owner Stephanie Chon. “Fusing together traditions with modern science, physical health with spiritual healing, Balian Springs is all about balance. What sets us apart is the community aspect that [is] sometimes overlooked when it comes to health. We are a social club focused on wellness and driven by greater human connection.”

That social aspect is one of the draws for making a day at Balian Springs such an experience not only for individuals and couples, but also for friends like Aaron Huie and Gabriel Soto, who spent a day together focused on their minds and bodies. Huie, a management consultant, small business owner and local artist, lives in Alexandria, while Soto is a systems engineer at a tech startup based in DC.

“This was my first time to Balian Springs and I was overjoyed to hear that something like this exists nearby,” says Huie. “While I was traveling in Asia, the Japanese onsens—or bathhouses—were one of the greatest highlights of my time there. Balian Springs is the only location in Virginia that is truly comparable to the bathhouse experience that Japan offers. My friend and I both decided it would be an excellent choice to prioritize our physical and mental well-being and take the day to explore all of what Balian Springs has to offer.”

And what the spa has to offer is, indeed, plentiful.

Huie and his friend spent their day moving throughout Balian Springs in a progressive order that capitalizes on the effects of its various treatments. First, they started out at the private bathhouse. “Our Aqua Lounge is a modernized bathhouse with showers, wet treatment rooms, three plunge pools and a dry and wet sauna,” says Chon. “This is just one of the offerings we brought from overseas and is really an homage to the social aspect of wellness that we have neglected for many decades. Back in ancient times, bathhouses were the pillars to society, where business was conducted or lectures held. The whole idea of a quiet, solo visit to a day spa is a very Western way to experience self-care and to offer healing through water — or salus per aquam — which has been around for centuries, but [to] ignore the bathhouse culture where it all stemmed from would be inauthentic.”

Everyone must shower before entering any of the pools and it is typical that spa guests self-exfoliate during their shower, as well. Next, guests enter different temperature pools, working their way down in temperature, starting from hot and ending in cold.

After leaving the Aqua Lounge, Huie and Soto moved to three of the spa’s different saunas: Himalayan salt, gold and infrared. The warm, pink-hued glow and salt-infused air of the Himalayan salt room promotes respiratory health and cleanses impurities in addition to soothing the muscles, invigorating the senses and restoring balance. The gold room is designed to improve mental sharpness and concentration through heightening the conductivity between nerve endings. Gold treatments are also believed to improve the function of sluggish organs, especially the brain and digestive system, and reduce the symptoms of autoimmune disorders such as rheumatoid arthritis. The infrared room utilizes microscopic infrared waves that are directly absorbed into the body to reduce pain, stiffness

and fatigue. Infrared also promotes the production of collagen and promotes a youthful glow.

Next, the friends moved to the chilly temperatures of the igloo, which, in sharp contrast to the heated rooms they just visited, is a cold sauna. Short bursts of exposure to cold is shown to improve the body's antioxidant capabilities and helps strengthen immunity, firm the skin and tighten pores. Contrast therapy between hot and cold is also helpful in lymphatic drainage. “The Himalayan salt sauna and the igloo room were some of our favorite aspects of our day at Balian Springs,” Huie notes.

“Contrasting treatments like Aaron and Gabriel experienced are extremely beneficial,” Chon says. “The heat of the saunas opens up the pores and increases blood flow and circulation, which quickens the nutrient delivery to injured areas throughout the body to promote recovery and healing. The cold helps tighten it all back up, inducing vasoconstriction of

35 | VIP ALEXANDRIA august 2023

the blood vessels to reduce inflammation and slow things down. The cold exposure also brings down the heart rate and helps your body acclimate to normal temperature after being in such heated environments as the saunas.”

Having returned to a more normalized body temperature, Huie and Soto enjoyed a delicious lunch cooked by Chef Dom, along with a bottle of Brut. “Chef Dom and his cooking were such a wonderful part of our time,” says Huie.

After lunch, the men revisited the pools to level up their experience, starting with the 104-degree-pool, moving next to 70 degrees and finally ending in 45-degree water. “We spent most of our time cycling between the heated and cooled pools,” Huie says. “Doing so both relaxes and stimulates the mind-body connection.”

"BACK

WERE THE PILLARS TO SOCIETY, WHERE BUSINESS WAS CONDUCTED OR LECTURES HELD. THE WHOLE IDEA OF A QUIET, SOLO VISIT TO A DAY SPA IS A VERY WESTERN WAY TO EXPERIENCE SELF-CARE AND TO OFFER HEALING THROUGH WATER.”

Adds Chon, “Moving from hot to cold helps decrease pain and inflammation, soothes sore muscles, boosts your immune system and circulation, strengthens your metabolism and boosts endorphins. Ending in cold immersion also helps acclimate the body back to normal temperature after we’ve expanded blood vessels and heated up the body in heated water.”

Having been revitalized by the cold plunge, the pair of friends hit the gym, where Balian offers cardio equipment such as treadmills, ellipticals and bikes as well as a range of free weights and an interactive workout mirror.

They finished the day with a shower and a final visit to the Aqua Lounge. “In both of our fields of work, our minds are subject to a constant state of decision analysis,” Huie says. “It can be a challenge to take the proper rest and slow down both mentally and physically as we both maintain multi-faceted creative and professional lifestyles. Deciding to take a full day to dedicate to wellness not only benefits the mind and the body, but also helps to properly prioritize the matters of importance in our lives, instead of running on auto pilot. Taking a wellness day refocuses and re-energizes the mind and body in a results-oriented way.”

intro by LIESEL SCHMIDT story + photography by HAVIN BAUCOM

With his trademark style leading as an introduction before he even opens his mouth, Havin Baucom II has established himself as someone who knows how to dress, regardless of where he is or what he’s doing. In fact, as the owner of an eponymous wardrobe consulting service, he’s made being well-dressed and dressing others his business. And while his company, H. Baucom, may be a side-hustle to his work for the Executive Office of the President, the impeccably dressed thirty-something is never off the clock when it comes to fashion. Giving us some insight into his best tips for fall dressing, Baucom is sharing that knowledge with VIP Alexandria and our readers.

I’d love to offer some practical advice for dealing with changing weather conditions as we enter my favorite season of the year, fall, while also maintaining your sense of style. One way to stay weather appropriate while keeping a cool look is through weatherproof outer layers and accessory items such as Chelsea boots. Combine with a practical crossbody bag and layer tops like denim button ups with lightweight sweaters or sweatshirts, and you’ll have your perfect after work/weekend look. Investing in an overshirt and incorporating richer, deeper hues into your wardrobe adds seasonal flair. Additionally, bulking up your clothing with heavier options allows you to maintain your personal style while staying warm.

38
"understanding color combinations, experimenting with different patterns and incorporating subtle details can elevate the overall look."

versatile + classic

Technical raincoats made with durable materials like Gore-Tex and featuring taped seams are great choices to keep you protected from downpours. It's worth noting that modern weatherproof outerwear comes in stylish designs that are more fashion-forward than utilitarian. If traditional options like trenchcoats or fisherman's jackets don't appeal to you, consider looking for water-repellent bombers made from waxed or coated cotton. These options combine functionality with contemporary aesthetics, allowing you to stay dry and stylish during the unpredictable weather of autumn.

A sports coat or blazer is a versatile and classic piece that can elevate your outfit during this upcoming season, as well. When choosing a blazer, there are a few factors to consider such as fit, fabric and style. Look for pieces that have a tailored fit, as this provides a polished and flattering look. Also consider getting it tailored specifically to your body type. In terms of fabric, options like wool, tweed or cotton blends offer durability and a touch of sophistication. When it comes to style, consider the occasion as well as your personal preference. A navy or charcoal blazer is a timeless choice that can be easily dressed up or down. If you want to add a touch of personality, you can explore different patterns such as checks, plaids or subtle textures. Experimenting with different colors and patterns can help you express your individual style while still maintaining a professional appearance when needed. Ultimately, the best blazer for you will depend on your personal style, body shape and the occasions on which you intend to wear it. It's always a good idea to try on different options and see what fits and suits you best.

Did someone say suits?! Keep in mind, a well-tailored suit doesn’t require a slim frame, quiff hairstyle and clean-shaven, square jaw to achieve a suave and polished appearance. It's important to acknowledge that it takes

39 | VIP ALEXANDRIA august 2023

more than just genetics to consistently make a suit work—it requires style, knowledge and attention to detail. Taking cues from Omari Hardwick in the Starz’s series Power (my personal choice for the best-dressed character in a TV series) to achieve a suave suit look like his, this requires selecting suits that fit impeccably, paying attention to proportions and choosing quality fabrics. Tailoring is crucial to ensure a sleek and flattering silhouette. Pairing the suit with fitted shirts, appropriate accessories and polished shoes further enhances the overall ensemble. Additionally, understanding color combinations, experimenting with different patterns and incorporating subtle details can elevate the overall look. Confidence and the ability to carry oneself with poise also play a significant role in making a suit work effortlessly.

DAVID PRESIDENT +

GOLDIE

By day, David President works as the regional director of sales and marketing for Remington Hospitality, which means he spends his time overseeing all things sales and marketing for the Hilton Alexandria and several other hotels in the DMV area. While the position has its creative aspects, President’s real creativity comes out after hours.

Spoiler alert: he’s an incredibly talented designer. “I’m known as the Traveling Tailor,” he says. “For the past 13 years, I’ve created and designed full collections and showcased them at fashion shows across the East Coast. In 2016, I won the Orlando International Emerging Designer competition. I’m passionate about fashion and I believe that every man should own a tailored suit or garment.”

Like his designs, there’s more to President than meets the eye. His outgoing personality gives him an ease in connecting with people from different backgrounds and walks of life and he prides himself on helping those in need. The next generation of young men are a particular focus for President, who mentors juniors and seniors in college through a program called “Call Me Mister,” which educates young men on life skills, etiquette and financial literacy. Each mentee is even provided with a custom-tailored suit.

TREND HE HOPES RETURNS...

"For the next generation’s sake, I hope that playing outside with friends makes a return. The new generation is so consumed with technology that they are missing out on basic social skills. Everyone is communicating behind a screen, and it’s consuming their lives. I remember, as a child, no one had to force us to go outside. We couldn’t wait to see our friends and have fun."

The Charleston native is also a published author, having written The Power of a Suit in 2020. “It’s a short, but powerful read, designed to motivate, encourage and enhance the reader’s personal brand,” says President, who moved to the DMV seven years ago with his wife.

Not surprisingly, if he were to change careers, President would focus fully on fashion. “I would operate my clothing business full-time,” he says. “I would love to open a flagship store where customers could come and experience my services in a luxury setting.”

President and CEO are impressive titles to hold in any company—even more so when that company is a successful investment firm. As the owner of McLaughlin Ryder Investments, Inc., Shawn McLaughlin carries those titles as well as the responsibility of managing money for the clients who entrust him with their financial security. “I love that I have done this long enough to watch my clients benefit from my advice,” says McLaughlin, who loves the daily challenges that come in his career and enjoys pushing his own limits. “There is a feeling of immense pride and joy in seeing your hard work pay off.”

As high stakes and stressful as his work can be, McLaughlin likes to spend his downtime in more relaxing ways. “I have a strange passion that most people probably wouldn’t enjoy the way that I do,” he admits. “I personally detail my car nearly every weekend. It allows me time to unwind and relax and it gives me a sense of accomplishment different to the one I find in my work.”

Clearly, the man has a meticulous attention to detail. That is a character trait that translates into all aspects

The Belmond, Iowa, native has come far from the one-stoplight town where he grew up. Alexandria has been home since his graduation from Georgetown University in 1982. Being financially savvy as he is, hindsight has given him a few regrets. “I wish I had borrowed every nickel possible and bought several homes in Old Town,” he says. “I would be working on my golf game 24/7 right now!”

Since childhood, staying in pique physical condition has been important to CJ Wesby. Growing up in Brooklyn, New York, coaches and trainers helped him improve every aspect of his life. The desire to do the same led him to the fitness industry. Now, Wesby is the owner of Foundation Fitness, with training studios in four locations.

When he’s not at work, Wesby’s greatest passion is his involvement with the Boys & Girls Club at the Dunbar/Alexandria location, where he currently serves as the board president. “I love helping kids develop and brighten their futures,” he says. Being community and service-minded, in fact, is what Wesby believes to be his best quality. “I’m always willing to help others in need.”

In his downtime, Wesby is an amateur photographer with a great eye for the perfect shot. As talented as he is, however, if he were to change courses in his career, it wouldn’t be to pick up a camera. As one might suspect from knowing him, he’d prefer something a little more impactful. “If I did anything else but what I do now,

SHERIFF SEAN CASEY

+ MICKEY

Like many kids, Sean Casey dreamed of becoming a cop. That youthful aspiration became a reality after he experienced the thrill of a few ride-alongs during college. “I was hooked,” he recalls.

Most of what hooked young Casey wasn’t the adrenaline rush. It was the community impact and opportunity to make a difference in people’s lives that made law enforcement so attractive. After a successful 14-year career with the Alexandria Police Department, Casey joined the Sheriff’s Office in 2017, where he worked his way up to the rank of captain. In 2022, he was elected sheriff of the City of Alexandria, following in the footsteps of his longtime mentor and friend, retired sheriff Dana Lawhorn.

Born and raised in Alexandria, Casey loves serving his community and holds the distinction of being one of the detectives who brought serial killer Charles Severance to justice in 2016. “It was one of the most tragic and rewarding cases I’ve ever been a part of,” Casey recalls.

"Carpentry, working on projects on the house and fixing things. I also love coaching youth sports."

As the father of two little girls, he loves to spend his free time with his wife and daughters and coaches their basketball and soccer teams. “I try to be engaged in as many ways as I can,” he says.

In his line of work as the sheriff, as well as in his role as a husband and father, patience and the ability to listen have been some of Casey’s strongest qualities. If he had taken a different path in life, he would most likely have been an elementary school teacher. “I spend a lot of time in schools with my job and I know that teachers have an incredible impact on their students’ lives, being with them day to day,” Casey says. “I love making that kind of immediate impact.”

Joel Gordon has always been something of a tech geek. Having been introduced to video games and coding at an early age, he went on to work as an assistant to a college professor during high school, during which time he further honed his computer skills. The rising demand in the technical field, combined with his interest and experience in computers, led him to pursue a degree in IT, despite a music scholarship. Over the course of the career that followed, he joined the team at Oak Grove Technologies in Alexandria—his first “real tech gig”—before going on to work for the DoD, the Department of State and the Department of Justice. In 2009, he lived and worked in Kyrgyzstan, expanding his world view. He now works as a technical product manager at Tanium.

Clearly, Gordon is highly skilled in tech. But as that unused scholarship would indicate, the man has incredible proficiency in music, as well. He plays multiple instruments including “a little alto sax and a little violin,” though guitar and piano are where his greatest skills lie. In fact, as a young man, Gordon spent time as a church pianist for churches that hired his services. He even recorded two CDs in high school to raise money for mission trips. Now, he likes to play cover songs by ear on the piano at

Wayne Fisher is someone captivated since childhood by details that other people miss, and has fashioned a career and life on that premise: the weather- and age-patinated façade of an old building, the wear pattern of a European crosswalk, a detached fragment that has long since lost its relevance (to most anyone else). He combines his love of history and his education in fine arts to create his unique gallery, Wayne Fisher’s American Design, to offer clients treasures that are beautiful and often utilitarian as well. “I’ve lived a life of seeing the world in a way that most people don’t,” says the artist, designer and stylist, who came to Alexandria as a visitor in the 70s and fell in love with the charm, ambiance and history of Old Town. Born and raised in upstate New York, Fisher waited patiently for the right moment to move here and complete his advanced degrees in painting and American art history.

His downtime bears little difference to his work. “I love to celebrate the world at my doorstep and travel to Europe, taking lots of obscure images and doing creative things with them -- and, of course, sharing them with kindred spirits. I encourage others to do the same and look beyond the obvious . . . explore the back roads and alleys." In 2007, he and his husband purchased a historic landmark farm in Maryland. GEORGE THEODOROU + BENJI

Take a peek into his family history, and you’ll see that restaurants are in George Theodorou’s blood. Born in Cyprus, he came to the US with his parents as a toddler when the family fled after the Turkish occupation in 1974. Here, his parents started their own restaurant. That restaurant—the original Delia’s—was the blueprint for his own restaurant years later when he and his sister, Alki, opened a new Delia’s, adding a modern flair of their own to the Italian and Greek influences of the menu.

As one would expect, Theodorou is a passionate foodie who loves to try new restaurants and cuisines. His greatest regret, in fact, is not having traveled more to try authentic cuisines directly from their various points of origin. When he doesn’t have a fork in his hand, the restauranteur puts his passion to work cheering on his favorite sports teams. “I’m an avid sports fan,” he says. “Particularly soccer, which I played professionally in Cyprus for a short bit.”

Theodorou still misses the field. “If my body wasn’t battered from years of sports injuries, I would have continued my professional soccer career,” he says. “I considered getting

into coaching, but after a season coaching my daughter’s recreational soccer team, I am seriously rethinking that.”

Theodorou lives in Alexandria with his wife, Meesha, and their twins. Naturally, he feels a sense of community that comes from his long history in the area. But his personality also plays a part in creating a community that is genuine. “I’m a people person, but I’m not out to impress everyone,” he says. “I am authentic, honest and real. I’m not playing up to some unrealistic expectation, and that surprises people.”

While it may sound more impressive by its technical name, the term hydrotherapy simply refers to treatments performed in warm water or pools. Before you start imagining a gaggle of mature women in bathing suits following the lead of a water aerobics instructor while they bob around, there’s actually more to it than that. Hydrotherapy is an overarching term that includes steam baths, foot baths, contrast therapy, hot and cold showers, aquatic physical therapy, warm water baths, immersion therapy and wet saunas and can be as passive as sitting in a jacuzzi or as active as swimming or using an underwater treadmill. Studies show it to be beneficial to humans, but it’s also extremely useful in treating dogs for a variety of issues and can give your furry friend a happier, healthier quality of life.

Much like traditional hydrotherapy for people, canine hydrotherapy is a non-weight bearing exercise performed either in a pool or with the use of an underwater treadmill—though some canine treatment centers offer the use of whirlpools, as well. Regardless, what makes this type of exercise beneficial is the reduction of pressure on the joints and improved range of motion that water creates.

62
62

The benefits of canine hydrotherapy, in fact, are many, as studies show it not only removes pressure from the joints and improves range of motion, but also reduces inflammation in the joints, improves circulation, increases muscle mass, builds stamina and strength and improves cardiovascular fitness. Consequently, hydrotherapy is useful in post-operative recovery from orthopedic procedures and can be used to treat dogs with neurological conditions, osteoarthritis, pain due to hip dysplasia and metabolic conditions such as Cushing’s or diabetes that often cause muscle atrophy. It is also effective for paralyzed dogs as well as helping with weight loss in overweight pets. Hydrotherapy can even be used as a training tool to help working dogs reach optimal fitness levels. On the psychological side, dogs that undergo hydrotherapy treatment sessions see the benefits of mental stimulation.

“Hydrotherapy can help in rebuilding lost muscle mass and muscle weight due to age, injury or lack of exercise,” says Lisa Castaneda, owner of Aquatic Paws in Falls Church and Chantilly. “It’s also a great way for healthy dogs to maintain strong muscles and joints. When swimming, a dog is completely non-weight bearing, which means they can exercise sooner after injury or even when suffering from issues like arthritis."

As beneficial as swimming can be for a dog, some dogs need the assurance of a solid surface under their feet to feel relaxed and avoid panic. This is where an underwater treadmill becomes a better

option than swimming. Additionally, these enclosed treadmills allow for the water level to be adjusted to suit the particular needs of the dog and increases the dog’s awareness of their own movements through contact with the treadmill belt rather than being suspended in water as they are when swimming. Simply put, they can feel the "ground," which makes them feel more secure. An underwater treadmill also helps in gait re-education, increases muscle mass due to a degree of weight going through the limb and, at the same time, encourages equal weight bearing on all limbs. The treadmill also allows for more controlled movement and alteration of speed, which are important to a dog’s recovery after surgery.

“In the case of using the underwater treadmill rather than swimming, the weight bearing load is decreased by up to 50 percent,” Castaneda explains. “That decrease in impact encourages better range of motion, willingness to put some weight on the foot and building muscle mass and muscle strength as the water acts like resistance bands and increases circulation.

“All dogs, regardless of whether they are swimming or using the treadmill, start with a life jacket,” Castaneda continues. “The goal with the treadmill is to walk for 20 minutes. Sometimes the dog is not able to walk 20 minutes straight, so we do the best we can and build up from there.” Castaneda recommends sessions at least once per week, though many people come twice a week. Results are typically seen by the third visit.

Animals & Aesthetics

A Q&A with Carlee Cardwell of Dambly Design

66

When local vet Dr. Shawn Wilson began envisioning his new clinic, he saw something more than just the sterile, serviceable spaces that often comprise veterinary hospitals. Instead, he wanted something beautiful, comfortable and soothing to the animals who were coming in for care as well as to their humans.

With more than 20 years in business and an aesthetic that matched his wish list for the new space, Carlee Cardwell and her team at Dambly Design were perfectly suited to design Mountain View Animal Hospital.

VIP: When did Mountain View approach you about their project and what was their vision?

CC: We were referred to ownership, Dr. Shawn Wilson, in 2019 by a colleague from graduate school. Dr. Wilson was in the early planning stages of construction for a new specialty animal hospital in Hagerstown, Maryland. He had a clear vision for the operational requirements of the facility, but not for design. [Mountain View's] only requirements were ease of cleaning and maintenance and [considerations for] how the animals would move through the space.

VIP: How long did the project take?

CC: We started the design process in the spring of 2019 and installed the project in the winter of 2021. Everything took slightly under two years to complete.

VIP: What made you go with such a minimalist aesthetic?

CC: We wanted something the staff would enjoy, coming to work every day. Also, customers and their pets, which are like family to so many people, needed to feel welcome. But ease of cleaning was the main concern for the client, so we designed all the seating to be cantilevered, as nothing touches the ground. This makes it easy to clean underneath. It was also important that we minimize[d] the stress of navigating the space with animals on leashes or inside their carriers.

VIP: What materials did you use (i.e., the “foliage” in the trees, the greenery wall, etc.)?

CC: The acoustical trees are made of Canadian birch trunks with wool felt leaves and a plywood birdhouse that conceals the electrical cords for the lights nestled in the trees. The window trim is [a] ¾-inch multi-layer birch material with an exposed edge as a design detail. The flooring is a luxury vinyl plank tile in a grass green color and wood-look pattern. We selected a bandana-inspired textile for the seating that is anti-microbial and can withstand with inherent wear and tear, which is key for a space of this nature also. You can also clean it with bleach. The moss used in the wall art is organically preserved and sourced from France.

67 | VIP ALEXANDRIA august 2023

VIP: What was your inspiration in designing the space?

CC: We took inspiration from the Japanese concept of shinrinyoku or “forest bathing” in a somewhat interpretive manner, along with the vision of an indoor park. The idea of bringing nature inside with the birch trees and other wood elements and colors serves the design so well at so many levels.

VIP: What was the reasoning behind the choice in color palette?

CC: The patients coming to Mountain View are either in trauma or are having a specialized type of surgery or care. So we wanted to follow nature and use the color green because it is naturally calming and especially soothing to pet parents. Symbolically, green also represents new beginnings and renewal. In addition, when we had our initial meeting with Dr. Shawn and his staff, they mentioned how inspired they were by the custom moss artwork of animal silhouettes showcased in our studio.

VIP: Have you designed a space like this before?

CC: This is our second medical facility. In 2015, Treehouse Eyes approached us for the interior design of their eye care clinics that specialize in the treatment of myopia in children and adolescents. There are now Treehouse Eye clinics across the US that we continue to support.

VIP: What makes designing a space for animals different than a space for humans?

CC: It’s funny because there’s not much difference at all. Animals are a part of our daily lives and they’re considered a main customer in this instance. Every project, whether for humans or animals, has its own special requirements like functional and operational factors, sound transmission, circulation through the space, hygiene and sight lines. These were just a few of the main driving design considerations for Mountain View.

VIP: Which clients—human or animal—do you feel are more difficult and why?

CC: Perhaps animals, due the environmental factors in a space that may impact their sense of well-being. There are so many sights, smells and sounds that could contribute to their anxiety in an already stressful situation.

VIP: What considerations were made, knowing the space was made for humans and animals?

CC: Seating, circulation and sight lines were top of the list. Controlling those factors that may trigger a scared or anxious animal was key. In the plans for this space, we offered ample seating options that provided safe distance between the patients. The orientation of seating was also varied to offer a distraction, if necessary. The cantilevered seating can also offer the animals a cozy place to retreat and cat carriers can easily be tucked underneath.

68

VIP: What were some of the most challenging aspects of the design?

CC: Since this was new construction, we had a quite a bit of latitude with the design. But like any design of this magnitude, there are always things that will pop up as little—or sometimes bigger— challenges. We were very fortunate to have not had to endure any major setbacks. But with over 20 years of experience, we’ve become nimble enough to address many of the unforeseen challenges and seasoned enough to anticipate many of the things that often derail a project during all of the design and construction phases. This was just one of those great projects where everything came together beautifully and the clients were very pleased with how it turned out.

We wanted to bring the beauty of our outside landscape into Mountain View. Living in this beautiful part of the country, most of our staff and clients hike, kayak and enjoy the outdoors with their pets and that is what our lobby represents. Dambly

because, as a large-scale element, it balances the trees and ties all of the elements together.

VIP: How long have you been a designer and what led you to this particular profession?

CC: In 1996, I created and operated an organic juice bar in Phoenix, Arizona that was featured in Forbes magazine for its design and originality. Subsequently, I was recruited by Vail Resorts to manage their Design Support Services department in Breckenridge, Colorado. Those two experiences were foundational to launching Dambly Design in 2000. We’ve done so many amazing projects, from luxury homes and big city flats to hotels, restaurants and other commercial spaces like Mountain View. I enjoy the challenges of each project and we love to take on new concepts. It helps keep our creativity sharp and spurs collaboration, which is one of our strong suits.

VIP: What kind of feedback have you gotten about the design?

CC: The project has been well received. People have said that they absolutely love the dramatic feel of the four 15-foot trees when you walk in. It is such an unexpected and whimsical feature, especially when people start looking around and discover the birdhouses. The backlit birch cut-out feature wall is also a favorite among visitors

GOOD DOG!

Wholistic Hound Academy

Picture this: You're a dog who has never been taught how to behave with other dogs or how to interact with children. Hell, you don't really understand what makes it such a big deal to poop in the house. And what's with the people getting so pissed off when you don't roll over or sit on command?

As a dog, how do you think you would react to being dominated by the person training you? Would it be effective, or would you rebel against it?

As much as society loves dogs, one of the biggest hurdles in pet ownership can be training, especially in the case of puppies or rescue dogs who may not have had any kind of housebreaking. Cute or not, all that love we have for our furry best friends can turn to frustration when they destroy the house or won’t obey a command. For that reason, professional obedience training has become a successful aspect of the pet industry, in high demand all over the nation—and rather than using the old-school method of establishing dominance over a dog, reward-based training has been shown to be the most effective way to re-wire a pup's behavior patterns.

As a dog owner herself, Sandy Modell found the efficacy of positive reinforcement when training her first rescue Vizsla in 1993. After successfully training her dog, as well as those of friends and family, she took countless courses, attended training conferences and

workshops, studied and earned her certification as a professional dog trainer and continued attending training camps and learning from the best. Over the next 20 years, Modell trained people and dogs part-time. What made her method so much more effective than what others had been trying with their dogs was that rewardsbased method that gave the dogs in her care positive reinforcement rather than breaking them by asserting control over them. And so word spread...and the demand for her expertise grew.

Naturally, she saw the possibilities in front of her. And so Modell launched Wholistic Hound Academy (WHA) in 2017. “My vision for launching WHA was to have a place in Alexandria where people and dogs could come and learn, build positive relationships and have fun—all using reward-based training,” says Modell.

WHA offers classes in basic foundation skills, advanced behavior, dog sports and group conditioning, also workshops and private one-on-one lessons. WHA also has an innovative and popular drop-off day and puppy academies. Finally, Modell developed an apprentice program to teach people who are interested in becoming dog trainers using positive reward-based training methods and techniques.

With so many successful stories of dogs that have come through WHA in the past six years, the academy has received multiple awards. And it all started with just one dog.

MAN UP!

THE IMPORTANCE OF BECOMING VULNERABLE

to you

“Man up!” It's become a problematic term for many reasons; however, this phrase is internalized for generations of men when it comes to displaying emotions. Mental health is a taboo topic in this community. It takes discomfort, authenticity and advocacy to change that.

I encourage you to think about your childhood heroes. Okay, now think about the heroes you’d admit to having when asked by others. Something tells me you weren’t always comfortable admitting that Kimberly, the pink one, was by far the best Power Ranger. More likely, the answers included figures such as Superman, Batman and Spider-Man. If you are familiar with these characters, you’ll notice their admired qualities of toughness. Among these are emotional withdrawal and stoicism; they don’t cry and they don’t show vulnerability. They say, “Up, up and away," and they never fear. Males in our society are taught to be like this. There’s just one problem (okay, there are plenty): they are all fictional!

These are stereotypical characters created for entertainment. Real life doesn’t work like this, yet men are expected to strive for this level of emotional stoicism. Therefore, when overpowering feelings emerge, we may feel the urge to pretend these don’t exist. According to the World Health Organization, men tend to suffer alone from mental health concerns. This leads to higher rates of self-medication with drugs and alcohol, suicide and reduced help-seeking behaviors (Sagar-Ouriaghli et al., 2019).

I am a licensed professional counselor. Through my career, I’ve worked with numerous males who display shame related to their emotions. It ties directly to the impact of gender stereotypes. Many men fear that others perceive seeking therapy negatively more than they acknowledge the positive outcome that is possible from therapy. This reaction makes sense. Not everyone knows how to respond to the topic of therapy; therefore, men internally fill the silence with assumptions.

I was recently at a reunion and was catching up with some old college teammates. As we were catching up, one friend casually mentioned his therapist. While this seemed like such a minor part of the conversation, much less the reunion, I was quite moved. After those words were said, the world kept moving! He did not lose respect from his male peers. He was not outcasted. I want to fully acknowledge this is not the same in every scenario and I feel very grateful to have this positive experience. The thing is, these conversations should be normalized somewhere. That’s how they catch on. That’s how people seek therapy.

Following my friend’s casual disclosure, I noticed a shift in communication patterns. People seemed to lean in more to what others were saying, conversations were somewhat deeper and the night went from exchanging platitudes with classmates (and, let’s face it, bragging about successes since graduation) to discussing how therapy needs to be normalized since everyone could benefit from it, whether there is a pressing crisis or not. Through conversations like these, males can combat the stigma and shame around seeking therapy. In therapy, we realize, “Wow, I can actually feel this way. I'm not alone." We learn to challenge questions like, “Why do I feel this way? How do I immediately fix it?” and replace them with, “What am I feeling? What can I do with it?”

It is going to take buy-in from society. We need to create a place that feels safe. So ante up already, so we can start this! It’s okay

to fear. It’s okay to grieve. It’s okay to cry. It’s okay to seek help! Vulnerability builds connection. So, let’s start the conversation and continue to normalize men seeking therapy. Then, we can go out there and unapologetically be ourselves. Circling back to the beginning of the article, maybe some of us will even gain so much self-acceptance and confidence, we will happily admit that our childhood hero was actually Britney Spears, not Batman, and that’s okay! No matter the topic, you find out you are not alone through therapy.

OF JUNCTION BAKERY

Like most chefs of a certain age who have seen Burnt or Kitchen Confidential, Brian Rowe would have Bradley Cooper play him in the movie of his life, because—well, it’s Bradley Cooper. Is there really an explanation needed? Admittedly, it would be an interesting watch, regardless of who was playing him. Rowe grew up spending summers in the kitchens of his family’s restaurants in and around Annapolis, then spent six years as an Army Ranger. Now, his life may no longer have the high-pressure situations of Army missions, but he’s found excitement in the place he loves most: the kitchen. As Executive Chef of Junction Bakery, he shows his incredible skill and innate talent with every plate he puts out.

VIP: How long have you been a chef?

BR: I’ve been cooking my whole life, but professionally about 12 years as a chef.

VIP: What first interested you in food and working in restaurants?

BR: My great-grandmother used to cook constantly: chicken pot pie, beef stew, vegetable crab soup... I would sit next to her in a chair

and she would explain everything she was doing. As I grew older, I found that I love the “kitchen culture.” It’s a place where everyone gets a shot and you’re judged on your tangible skills, not a piece of paper that says you test well.

VIP: When did you become the chef at Junction Bakery?

BR: I came into the Rex Management/Landini Group in December of 2019 to help with the opening of our Capitol Hill location and the subsequent expansion of the Junction brand.

VIP: Who were the biggest influences on your career?

BR: Anthony Bourdain. I’ve always loved his energy. Reading Kitchen Confidential really brought my love of the kitchen culture out as a young man.

VIP: Who’s your favorite chef on TV?

BR: Marcus Samuelson. He always has kept true to himself and has never bent to the mainstream.

VIP: Who would you most want to cook for (dead or alive, historical figure, celebrity, personal acquaintance, etc)?

BR: I like to cook for anyone that will let me; it’s my love language. But to choose one person, I’d have to say Anthony

78 VIP PROFILE

Bourdain. Anthony inspired my generation of cooks to embrace the “degenerate” label placed on most cooks and chefs at that time. He came through the trenches and gave a generation of cooks the pride that we all now take in our culture. Even throughout his rise to stardom, he always kept that respect.

VIP: What’s your favorite food?

BR: Pizza. I love all pizza, but my current favorite is Detroit style.

VIP: What is your favorite kitchen tool?

BR: Knives. There are so many different types and each one has a very specific purpose. I love their practicality. However, my favorite is my first kitchen knife—and it’s nothing fancy, just an old Wusthof eight-inch chef knife.

VIP: What is your least favorite thing to make?

BR: Whole roasted fish over an open fire. When we were camping about a year and a half ago, Noe Landini and I wanted to do something fun and cool for our group, so we decided to get these giant branzini and roast them over open fire. It was a terrible idea! They took over an hour to cook halfway, and then they still wouldn’t cook without burning the skin. It was a disaster!

VIP: What do you feel was your hardest thing to master?

BR: Myself. Discipline is paramount in our industry, and you need to be able to conduct yourself and your staff in a very disciplined fashion. It can be extremely difficult to master that degree of discipline.

VIP: If you were trapped on a desert island, what three things would you take?

BR: My Kindle and Kindle Unlimited subscription, a sharp knife and my dogs.

VIP: If there was one piece of advice that you could give to a younger version of yourself, what would it be?

BR: Keep going and never give up. The juice is worth the squeeze.

VIP: If you could work at any restaurant in the world for one week, where would it be and why?

BR: Nowhere specific, but I've always wanted to work at one of the small mussel bars in Bruges, Belgium. I just love those places, but it's hard to put into words why I love them so much. There’s a simplicity to them that I doubt you could find here in the US.
