he Trattlerhof has now been a place of hospitality for over 370 years, and the Forstnig family have acted as hosts in this historic 4 star hotel since 1884. We are proud of the fact that over the past 130 years the Trattlerhof has been transformed from an inn “licensed to serve alcoholic beverages” to a high quality hotel with modern comfort, imaginative cuisine and a richly varied programme of activities for our guests. Each of the five generations of the Forstnig family has made its own special contribution to the Trattlerhof, maintaining the authenticity of the present-day hotel and at the same time providing experiences to be enjoyed by guests of all ages. In the second issue of our “Hofpost” magazine, we want to honour this tradition and also tell you more about our latest innovations: 28 new “estate” and “larch” rooms, a “Swiss stone pine” bio sauna, a walk-in wine store and much more. We look forward to your visit at the Trattlerhof where you can enjoy these new holiday experiences!

The Trattlerhof in Bad Kleinkirchheim looks back on a long history.

T

he first written records concerning the property date from 1520. 371 years ago, on 14 July 1642, the then owners of the Trattlerhof were given a licence to serve alcoholic beverages by the Jesuits who governed the region. This licence included not only permission to operate as a hospitality establishment in the modern sense, but also the “privilege “of trading as weavers and shoemakers, operating as retailers, brewing beer and baking bread.

Stages in the expansion of the Trattlerhof

The contributions made by past generations of the Forstnig family to the Trattlerhof

with the Trattlerhof for 130 years. In 1884 Jakob II Forstnig, a miner who was living in the Trattlerhof at the time, acquired the property and ran the inn as well as a quarry and a lime kiln. Over generations the business has been continually expanded and modernised. Today, the traditional 4 star hotel is in the capable hands of the fifth generation, represented by Jakob Forstnig, who manages the family business with touristic expertise and a strong awareness of the Trattlerhof ’s traditions.

The Trattlerhof as we know it today has been lovingly expanded by five generations of the Forstnig family, who have always endeavoured to retain its traditional character. The present-day structure of the hotel was created in two major expansion stages, each generation adding their own numerous innovations to the range of services offered.

ver the last twelve months we have further expanded the services we offer involving our horses. Last year our four trained horses and two ponies moved into the new stable with

ince last year, the Trattlerhof has been the first and only “Austrian Eco-Label” hotel in the Nockberge region. This year we have further expanded the “environmental” theme and have set up the first charging stations for electric vehicles in a Carinthian skiing area. Now drivers of electric cars can charge their vehicles either in the car park of the restaurant Einkehr (Maibrunn valley station) or directly at the Hotel Trattlerhof. “In Carinthia there are now over 170 charging stations empowering all those who want to travel in an environmentally friendly way that dispenses with the internal combustion engine. We are delighted that together with the Forstnig family we have been able to offer these facilities now also to skiers and walkers in Bad Kleinkirchheim,” says Gerald Miklin from the e-mobility initiative “Lebensland Kärnten”.

In our riding school, qualified riding instructors give “taster” lessons to beginners as well as lunge lessons and dressage for advanced riders. Our instructor Rosita has helped many people in the first stages of learning to ride: “If you feel comfortable on a horse, you should definitely take a ride into the Nockberge Biosphere Park and enjoy the lovely scenery. Younger children can also get to know our ponies, and in the evening they can experience a walk by torchlight with horses under the stars.”

Guests at the Trattlerhof and interested persons can also borrow electric bikes and our own Mercedes A-Class e-cell electric car, and experience “electromobility” for themselves. “With a range of 250 km and a maximum speed of 150 km/hour, the luxury speedster is

also easy on the wallet: a full charge costs just three Euros! The power for the charging stations is produced by our own small hydroelectric power plant,” explains Jakob Forstnig, who has himself become a fan of electric motoring.

As an additional innovation, and to further reduce the burden placed on the environment by the use of water and cleaning materials, we are offering our guests the option of dispensing with daily cleaning of their rooms. In return they are given 3 Euros credit for purchases at the hotel bar – our “green Euro”!

“I

mpulse on the Mountain“ is the apt title for a dialogue series which the hotelier Jakob Forstnig set up in collaboration with tourism pastor Uwe Träger two years ago, whereby interesting personalities meet at the Trattlerhof in order to discuss contemporary and timeless issues with guests and interested parties. The summer programme at the Trattlerhof was started off by the e-mobility expert Gerald Miklin from the Carinthian Provincial Government. In July the “Austrian of the Year

2013” and star architect Roland Gruber presented his participatory approach to urban planning, followed in August by the historian Alexander Wolfram-Hanisch on the subject of “overcoming the past”, and in September 2013 by the theologian and medical ethicist Ulrich Heinz Jürgen Körtner. The “Impulse on the Mountain” series came to a close in October with the research director of the OttoBöck Institute, Bernhard Graimann, speaking on the subject of technology in modern medicine.

A special theme of the “Impulse on the Mountain” series this year was the presentation of the project “nock/art - a walking art project in Bad Kleinkirchheim”. “The idea is to further develop walking in an integrated sense and to expand the experience of sport and nature to include an additional cultural dimension. Over the next few years, at different places around Bad Kleinkirchheim, six “nock/art/ walks” will initially be created, covering a total distance of over 50 kilome-

tres. Along these walks, well-known international contemporary artists will install works of art,” explains the artistic director of the project, Edelbert Köb, formerly director of the Museum of Modern Art in Vienna. The participating artists were introduced during the “Impulse on the Mountain” programme at the Trattlerhof: AO&, Daniel Knorr, Roman Signer, Michael Strasser, Ingeborg Strobl and Lois Weinberger. “The Trattlerhof will actively participate in this art project, with the hotel’s quarry in Staudach being incorporated into an art project,” explains Jakob Forstnig.

ur chalet restaurant Einkehr, which has had “Genusswirt” certification from Genussland Kärnten for the past two years, has again retained the sought-after “Falstaff ’s fork” (80 points) award this year. The “Kulinarix” restaurant recommendation in the local Carinthian newspaper Kleine Zeitung has also given us an “excellent” rating. This achievement is above all due to our restaurant staff and kitchen team! One of our culinary innovations is steaks cut from dry-aged beef hung on the bone, a traditional skill of our local butchers. Together with the Carinthian butcher Frierss, we have revived this type of steak. Fresh fish

from our ponds are also extremely popular with our guests. The fish come from the local fish farm run by Andreas Hofer at Feld am See. Gourmets are also thrilled with our seasonally changing menus and the wine-tasting menus we offer in collaboration with our local wine producers. Naturally classic Carinthian specialities such as Kasnudl, Buchteln, Reindling etc. are a popular dishes on our menu.

Tafelspitz-Ravioli with horseradish sauce

Ingredients to serve 4:

Noodle dough: 125 g durum wheat flour, 150 g flour, 5 egg yolks, 1 whole egg, ½ teespoon salt, 1 tsp olive oil, 1 tsp soft butter Filling: 30 g butter, 30 g flour, 300 g Tafelspitz beef broth, 50 g cream, 1 carrot, ¼ celeriac, 2 sticks of celery, 500 g boiled beef [“tafelspitz”], 1 bunch of chervil, 1-2 tablespoons horseradish (grated), 1 egg Horseradish sauce: 1 shallot, 4 tblsp butter, 100 ml white wine, 500 ml Tafelspitz beef broth, 200 g cream, 2-3 tblsp horseradish (grated), 1 egg yolk, sea salt, pepper, sugar, nutmeg, fresh horseradish, cress

Preparation:

Noodle dough: Knead ingredients in the kneading machine at a low setting for about 10 minutes, then continue kneading by hand for 5-10 minutes. Wrap in foil and refrigerate for 4 hours. Roll out thinly and paint one half of the dough with beaten egg. Drop teaspoonfuls of the filling on to the dough 5 cm apart, then place the other half on top and press around the filling. Cut out ravioli to a diameter of about 8 cm. Filling: Melt butter and stir in flour, add 250 ml of the stock and stir until smooth. Add cream and simmer for 30 minutes. Cut vegetables up into fine cubes and blanch in water containing salt and sugar. Cut beef into fine cubes. Mix vegetables, beef, horseradish and herbs and spices into the sauce and fold in vegetable cubes and chervil Horseradish sauce: Sweat the shallots until they turn translucent, deglaze with white wine and reduce; stir in beef broth and cream, add horseradish and season sauce

Alpe-Adria-Trail – from the Grossglockner over the Nockberge to the sea T

he “Alpe-Adria trail” connects the three regions of Carinthia, Slovenia and Friuli Venezia Giulia, extending over 750 kilometres in a total of 43 stages. Ambitious hikers can complete it in one trip, or it can be tackled in individual sections. This long-distance trail leads from the foot of Austria’s highest mountain, the Grossglockner, through Carinthia’s loveliest mountain and lake scenery, over the Nockberge to the Adriatic at Muggia / Trieste.

Alpe-Adria cuisine Influences from the three countries of the Alpe-Adria Trail are reflected in the cuisine offered. Trattler’s Einkehr, for example, offers “Kärntner Låxn with Ritschert” with fried rocket a combination of Austrian salmon trout and a garnish with an Italian influence, which in itself is typically Carinthian. Ritschert is prepared in this case like risotto.

The Sonnwiesenbahn is also being “speeded up” and fitted out with comfortable seats and a conveyor belt to the Mittelstation.

very winter the “ski stars of tomorrow” carve for only € 1 per day of skiing. “The package is valid for families with children up to 12 when they purchase a 6-day ski pass between 4 January and 7 March. The Family Euro is part of a weekly all-inclusive amount which is bookable at member businesses, i.e. including the Trattlerhof in Bad Kleinkirchheim,” explains Oliver Dedic, in charge of marketing at the Trattlerhof.

Over a hundred years ago, weaving and the retailing of linens and loden cloth were actually practised at the Trattlerhof, which even at that time was a useful service for travellers who needed their clothes repaired or replaced.
