As the weather starts to cool down these fragrantly spiced cakes baking will fill your home with warmth and a spicy aroma that will make it hard to wait until they have cooled down enough to frost. Reduce speed to medium and add eggs one at a time, mixing after each addition until combined. Mix in vanilla. Reduce speed to low and add the flour, once combined add the apple and mix until it is evenly distributed (should only take a few seconds). Divide mixture evenly between the prepared baking papers in the muffin tray. Bake on the middle rack in the preheated oven for 15 - 18 minutes or until golden brown on the top and a skewer inserted comes out clean. Remove from oven allow to cool in muffin tray for 5 minutes then remove to wire tray to cool completely. Once cool use a knife to spread on a dollop of cream cheese frosting and sprinkle with a little cinnamon sugar. Can be stored in an airtight container in the fridge for up to 3 days. Remove from fridge 30 minutes before serving.

Cream Cheese Frosting 50 g cream cheese 25 g unsalted butter 1 cup icing sugar (sifted) 1/2 tsp vanilla extract 1/4 tsp cinnamon

Combine all ingredients in a large bowl and mix at low speed until combined. Increase speed to high and mix for 3 minutes or until light and fluffy. Use immediately.

Cinnamon Sugar

3 tsp ground cinnamon 1/4 cup sugar Mix cinnamon and sugar together until well combined. Store in airtight containers until required.
