CREATE YOUR OWN CRACKING VEGAN CENTREPIECE

Cook up this mushroom hotpot as a meat-free Christmas main. Totally vegan, the intense vegetable filling combines mushrooms, swede and lentils in a rich Porcini gravy, and it’s topped with crispy golden potatoes for a striking Christmas dinner highlight.

VEGAN MUSHROOM HOTPOT

Serves 4

Takes 1 hr 45 mins plus soaking

540g dried porcini mushrooms

4 tbsp olive oil

200g shallots, peeled and quartered

160g Portobello mushrooms, sliced

200g Chantenay carrots, halved lengthways

350g swede, peeled and cut into small cubes

3 tbsp cornflour

1 vegetable stock cube, made up to 200ml stock (ensure vegan if required)

100ml red wine (ensure vegan if required)

250g pouch cooked puy lentils

15g fresh thyme, chopped, plus extra sprigs to garnish

2 tbsp redcurrant jelly

600g potatoes, peeled

1 Preheat the oven to gas 5, 190°C, fan 170°C. Put the dried porcini mushrooms in a heatproof jug, cover with 300ml boiling water and set aside for 20 mins. Drain, reserving the liquid.

2 Heat 2 tbsp oil in a large saucepan. Add the shallots, Portobello mushrooms, carrots, swede and 4 tbsp water. Cook for 10 mins until the shallots have softened. Stir in the cornfour and cook for 1 min. Gradually add the stock, the reserved porcini liquid (except for any gritty bits at the bottom of the jug) and wine. Cook, stirring continuously, for 3-4 mins until the mixture has thickened. Stir through the lentils, porcini mushrooms, chopped thyme and redcurrant jelly. Season well, then transfer to a large ovenproof dish or casserole dish.

3 Finely slice the potatoes into rounds. Parboil for 5-6 mins until slightly softened. Drain and arrange the potatoes in rings on top of the hotpot, overlapping slightly. Brush with the remaining oil. Cover with foil and bake for 50 mins until the potatoes are just tender.

4 Increase the oven temperature to gas 7, 220°C, fan 200°C. Remove the foil and bake for a further 30 mins until the potatoes are cooked and golden brown. Scatter with thyme to garnish. Serve with vegan gravy, see right, and all your usual trimmings.

A MAKE-AHEAD-AND-FREEZE VEGAN GRAVY

Serve this flavour-packed sauce to pour over meat-free dishes.

THYME & MUSHROOM GRAVY

Serves 6 Takes 50 mins

1 tbsp olive oil

1 onion, fnely chopped 190g mushrooms, fnely chopped 5g thyme sprigs

2 tbsp plain flour

1 vegetable stock pot, made up to 600ml 1 tbsp soy sauce

1 Heat the oil in a saucepan over a medium heat and fry the onion with a pinch of salt for 20 mins, stirring occasionally, until golden and

caramelised, adding a splash of water if it starts to catch.

2 Stir in the mushrooms and cook for another 10 mins until golden. Add the thyme sprigs, then stir in the four until combined.

3 Pour in the stock, a little at a time, stirring constantly. Once all the stock has been added, simmer for 15-20 mins, stirring regularly, until thickened to your liking.

4 Discard the thyme, add the soy sauce and season to taste.

ORANGE, CARDAMOM & PISTACHIO PAVLOVA CROWN

A spectacular dessert to impress all your guests

Serves 6

Takes 1 hr 20 mins plus cooling

100g demerara sugar

225g caster sugar

4 medium eggs, separated, 2 egg yolks reserved ¼ tsp cream of tartar or 1 tbsp white wine vinegar

8 cardamom pods, 3 lightly crushed, seeds removed from the rest and crushed 20g pistachios, fnely crushed 2 oranges

100g extra-thick brandy cream

For the orange curd

100ml fresh orange juice (from roughly 1 orange) 25ml lemon juice (from roughly 1 lemon) 40g unsalted butter 1 tbsp cornflour

1 Preheat the oven to gas 6, 200°C, fan 180°C and line a large baking sheet with baking paper. Mix the demerara sugar with 125g caster sugar and spread out on the sheet; bake for 7 mins, then use the paper to carefully pour the sugar into a jug. Reduce the oven to gas 1, 140°C, fan 120°C.

2 Meanwhile, gently whisk the egg whites and cream of tartar in a large, non-plastic mixing bowl with an electric whisk for 1 min, then increase the speed to medium-high and whisk for 2-3 mins or to stiff-peak stage. Still whisking the egg whites, slowly add the warm sugar a little at a time, whisking until the mixture forms stiff peaks again. Once all the sugar is mixed in, increase the speed to high and whisk for 5 mins or until very stiff and glossy and the sugar has mostly dissolved. Fold in the cardamom seeds.

3 Spoon just under half the meringue into a large disposable piping bag and cut a 3cm opening; set aside. Spoon the rest of the meringue onto the lined baking sheet in a deep,

flat circle (about 18cm). Pipe the remaining meringue in 12 ‘towers’ about 4cm high around the edge to create a strong rim. Sprinkle the peaks with 10g pistachios and bake for 1 hr. Turn the oven off and leave the meringue inside to cool for at least 2½ hrs (or overnight).

4 Meanwhile, make the orange curd. Put the orange juice in a saucepan with the lemon juice, butter and 50g caster sugar, and heat gently to melt. Increase the heat to bring to a simmer, then remove from the heat.

5 Whisk the egg yolks and cornflour in a bowl. Slowly pour the juice over the egg mix, whisking until combined. Return the mixture to the pan and bring to a simmer, whisking all the time. Bubble gently for 1-2 mins until thickened.

6 Pass through a fine sieve to remove lumps. Cover with clingfilm (touching the surface of the curd); cool completely.

7 Use a small, sharp knife to top and tail the oranges, then remove skin and pith. Slice into 5mm rounds; transfer to a bowl with any juice and set aside.

8 Put the remaining 50g caster sugar in a small saucepan with 50ml water and the cardamom pods. Heat gently to dissolve the sugar, then increase the heat to high and bubble for 3 mins until thickened. Set aside to cool for 15 mins, then pour over the orange segments. Cover and chill for 30 mins or until needed.

9 To serve, softly whip the brandy cream and swirl through 3 tbsp orange curd; spoon into the middle of the meringue. Top with the remaining curd and the orange slices and scatter with the remaining pistachios.

Pick a platform

Dig out your favourite wooden board or serving platter – consider an interesting size, shape or style – to artfully arrange your cheese and charcuterie on.

Load it up

It’s all about a choice of cheese rather than quantity. Go for soft, hard, young, aged, blue – the more varieties you have, the less you need of any one kind. The same is true of meats.

Don’t forget the support acts Line up a selection of good-quality accompaniments that offer different tastes – from sweet to salty and spicy – alongside varying textures,

including crunchy and chewy. Think crackers, olives, breadsticks, fruit, nuts, chutneys and relishes (nothing will be wasted when there’s a storecupboard to stock!). Sliced ciabatta bread is always a hit with a charcuterie platter, and part-baked loaves are handy to have in reserve.

Finishing touches

1 pineapple, skin removed, cut into quarters and core removed 3 tbsp sweet chilli dipping sauce

4 tbsp crunchy peanut butter

1 Cut each prepared pineapple quarter into 4 thin wedges, then cut in half widthways to create 32 small wedges. Insert a skewer (wooden skewers should be soaked in cold water for 30 mins first) into each piece and set aside.
