Dear SOFFA readers, There is no other way for us to begin than by thanking you for all your support in 2015 – which we appreciate greatly – and wishing you a happy, creative and unforgettable 2016!

n

Thanks to you and with you, SOFFA had a lot of wishes and dreams come true last year. In February, the first ever printed issue of the magazine saw the light of day; during the autumn, we managed to raise the money necessary to print the Photosynthesis 2016 calendar; and, at the end of the year, we launched our new SOFFA & FRIENDS creative evenings. We already can’t wait to tell you about all the things we have planned for 2016. In addition to a new series of SOFFA & FRIENDS workshops (go to shop.soffamag.com to see the list), we have one big surprise waiting for you in tandem with the February printed issued. We can only say that we think you will like SOFFA even more! As you will still have to wait a while before we reveal the surprise, we have this mini issue for you as a consolation. In it you will find a wonderful recipe for a winter quiche with mushrooms and chorizo. We wish you a wonderful winter! Your SOFFA team

SALON DŘEVOSTAVEB 2016 The modern wood-based architecture has made many fans in our country. A considerable share of this is also due to the largest non-competitive display of the best in the sphere of the modern wooden architecture created over the last year – SALON DŘEVOSTAVEB (THE TIMBER CONSTRUCTIONS SALON), whose eleventh edition will be introduced on February 4 to 7, 2016 for the first time. This year’s edition will present 40 constructions altogether, 23 projects from the Czech Republic, 16 from Slovakia and 1 from Austria. Thanks to the enlightened investors it is now far from being just about the houses. There is the university centre of The Czech Technical University; there is also a kindergarten, a winery, a lookout tower and many others. The Timber Construction ceremonial premiere will be held on Friday, February 5 at the space of PORT 58. This afternoon will be dedicated mostly to foreign guests who will present their projects there at the specialist conference. Austrian architect Juri Troy whose work is associated with the region of Vorarlberg will come to share his experience; his work is associated with the region of Vorarlberg and he will present, among others, his project called Haus 37m. The representative from Slovakia, Peter Mandl, won’t also be missing and he will introduce his pier with a café on the Danube River. Visitors can remind the experience from the Tinder Construction Salon by the publication named Yearbook of timber constructions 2015, where all the constructions are introduced. RECIPE Delicious winter quiche

n

M U SHRO O M A N D C H O R I ZO Q U I C H E Recepie, styling a photo: Gabriela Iancu

WHETHER YOU ARE PREPARING A QUICK DINNER FOR THE FAMILY OR A PARTY FOR FRIENDS, YOU CAN DO NO WRONG WITH GABRIELA IANCU’S QUICHE: THE CRUST IS MADE FROM THREE KINDS OF FLOUR AND THE FILLING IS A LUSCIOUS COMBINATION OF MUSHROOMS AND CHORIZO SAUSAGE. QUICHE, A SAVOURY PIE ORIGINATING IN FRANCE, HAS ALREADY BECOME FIRMLY ESTABLISHED IN CZECH KITCHENS AS WELL. IT ALSO AN IDEAL WINTER DISH FULL OF ENERGY! PREPARATION TIME: 30 mins ENOUGH FOR: 20 cm tart INGREDIENTS: QUICHE CRUST 1/2 cup white rice flour 1/3 cup buckwheat flour 1/3 cup whole flou 1/2 tsp sea salt 1 tbsp chia seeds 6 tbsps butter 3 tbsps cold water

INSTRUCTIONS: In a food processor, combine the flours, sea salt, and chia seeds; pulse to combine. Add diced butter; pulse until mixture resembles coarse meal. Gradually add the water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add more water, 1 tablespoon at a time). Do not overmix. Form dough into a ball and wrap tightly in plastic. Refrigerate until firm, at least 1 hour (and up to 3 days). Preheat the oven to 180°C. Roll and cut the dough to fit inside a 20 cm tart pan, cover it with a piece of parchment paper and top ► it with pie weights or dry beans. Prebake the crust for 10 minutes.

13

QUICHE FILLING 2 eggs 1 tbsp butter 3 shallots 2 cups chopped white or brown mushrooms 1/2 cup chopped chorizo 2 cups mixed blue and Gruyere cheese 1/2 cup half-and-half 1/8 tsp ground nutmeg

In a large skillet, heat butter over medium. Add shallots, and cook, stirring occasionally, until softened, 1 to 2 minutes. Add chorizo and toss, cooking for 3 to 4 minutes. Add the mushrooms and season with salt and pepper. Cook for 5 to 6 minutes, stirring occasionally, until the mushrooms are soft and the liquid is evaporated. Top the crust with this mixture and cheese. Set aside. In a bowl, whisk together eggs, half-and-half, nutmeg, sea salt and pepper. Pour egg mixture into crust. Bake until centre of the quiche is just set, 25 to 35 minutes. Let quiche stand 15 minutes before serving. â–

LANDSCAPES South Bohemian fishpond

AT T HE PA N Č Á L F I S H PO N D text: Adéla Kudrnová | photo: Lina Németh

DID YOU ENJOY THE FOGGY AND MAGICAL ATMOSPHERE OF THE FISH HARVEST AT THE PANČÁL FISHPOND THAT WE WROTE ABOUT IN THE DECEMBER ISSUE OF SOFFA 12? WE HAVE FOR YOU A FEW MORE IMAGES OF THIS SOUTH BOHEMIAN FISHPOND, WHICH IS BEAUTIFUL IN ANY SEASON.

The red-tinged skies hovering over the landscape, the hoarfrost covered trees and the small winter clouds reflected on the water’s surface – that was the atmosphere at the Pančal fishpond prior to Christmas. What will the pond look like in the spring? Take a trip to South Bohemia during 2016 to discover the beauty of its numerous fishponds and perhaps send us some of your photos. We’ll be looking forward to them. :) ■

SILESIA BAZAAR BECAUSE PEOPLE FROM POLAND LOVE INDEPENDENT FASHION AND DESIGN! We are all bored of fashion from popular brands. We look for something new, fresh and made by people we know or at least people we may meet one day. We are tired of big posters in our cities and we want to buy ecologically made clothes. That is why a group of people from Katowice (Silesia, Poland) decided to start a project called SILESIA BAZAAR. They wanted to bring the newest independent fashion and design to Katowice and made this event the biggest and most popular in Poland. SILESIA BAZAAR is a great alternative for shopping in malls and each time it happens Katowice become a mecca for independent fashion. It’s a great place for shopping and finding unique, original, made in Poland or other European country products. The first edition took place in December 2014, gathered 150 companies and almost 5 000 visitors. The second edition took place in June 2015 and gathered 120 companies. The third edition took place between 12th -13th December 2015, gathered more than 200 companies and almost 8 000 visitors. It was a great success! The event finally became the biggest event in Silesia region and very famous in Poland. SILESIA BAZAAR vol.3 was a great place and time for Christmas shopping. All products could become a perfect Christmas present. Most of the them were unique. You could be sure that none of your relatives or friends already have what you buy. This kind of gift definitely could make them happy. Except buying you could watch an exhibition of young designers from Katowice Academy of Art (ASP Katowice) called “Dizajn jest dla Ciebie” (Design in for you), eat great food from restaurants and bars from Silesia and relax in Chill Zone. There was a special place and entertainment for kids as well. Organizers also decided to help kids in need from Katowice and supported two fundations: “House of Guardian Angels” and “Helping with a smile”. What is the most important during the 3rd edition SILESIA BAZAAR celebrated initiating cooperation with Bohemia Market Design which is a company from Prague with similar vision and ideas. Together they hosted some companies and designers from Czech Republic. What is interesting some companies from Ukraine also came so the last edition of SILESIA BAZAAR was very international. 2016 years promises to be extremely interesting. The organizers are planning to launch six events which include the edition dedicated to children’s fashion and design. SILESIA BAZAAR could be a new destination for Czech companies. Watch project’s website and social media channels and stay tuned!
