t seemed like yesterday when our lives made an abrupt turn, and we embarked on a grueling journey into the unknown. Looking back, we learned that news of a new and mysterious viral illness—incubated in China—was discovered, but it took months before an announcement would reach the world. On January 4, 2020, the media obtained crumbs of information about the possible devastation; and from here, a sprint to battle the terrifying disease turned into a marathon, giving American’s a front-row seat to a tragic comedy of errors which continues to haunt the country. We know you’ve had about all you can take; nerves run like hot wires, and the meaning of ‘patience is a virtue’ is a hardfought reality. Through the echoes of unnecessary demands of “do this,” and “don’t do that,” our thoughts, words, and actions feel as if they are insensibly corralled by a tone-deaf government. Freedoms we take for granted have been stripped away—but not without clamor and push back from some of the most unsuspecting citizens. We see hairstylists and barbers, gym owners, restaurants, 12 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

along with thousands of citizens who want a distraction by spending a few hours at the beach, turn into modern-day revolutionaries. They don’t protest with firearms or throw tea into the harbor; instead, they defy misguided instructions by Governors who lack common sense in laying out a constructive pathway for the rest of 2020. While the future remains uncertain, it’s settling to know that we continue to work hard to bring you one of the only free, high-quality magazines still available. ince the beginning of the end of our civilization (the media hopes you believe this inaccuracy), the public has not lost sight of their aspirations and love of freedom. Their work ethic remains resilient and their ambitions beyond restraint. Millions of businesspeople, gigworkers, and those in the private sector, continue to possess an intrinsic desire and the overt willingness to return to work. Their allegiance to their rights and responsibilities has not swayed; rather, they continue to demonstrate—in mass, a commitment, and fortification to prosper and propel themselves into personal success and financial security. At the same time, they watched—in horror, the preventable deaths of senior citizens and Veterans. Skewing heavily on data points, the charts reflecting these fatalities are the result of actions taken by Governors, from states most affected by Covid-19. Adding insult to injury is their indifference and casual responses when asked why they performed in such a manner. 14 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

From the beginning of this catastrophe, individual rights and liberties have been eradicated; the faithful prevented from practicing their religious obligations, and prisons are allowed to hemorrhage their residents, only to re-offend. Is it any wonder the public believes their elected officials are complicit in the gross mismanagement of an epidemic that could have been contained through early intervention, proper isolation practices, and medical infection control techniques? American’s realize they have the power to repair a fallen leadership; and that, as citizens with the right to vote, they don’t have to tolerate the politicization of a crisis any longer. It’s not enough to put on a shirt—with the logo of the month, and hunker down in a shelter or hold daily televised press conferences with empty promises and zero solutions. The public is waiting for— but yet to be given—a common-sense approach, one they can comprehend and follow like a map.

We can no longer allow incompetency and distrust of the people to fill the corner offices of State Houses. What takes place this November will quantify as personal reflection and a healthy dose of armchair quarterbacking; this will allow an overwhelming number of voters the opportunity to ask the most pressing question of all; “Have I been respected and served by my elected officials?” The answer will be different in every state, and so will the justification for outcomes in our next elections. Memories will fade, but the financial injustice imposed on us will burn like a branding iron. Voters won’t forget that they—the little guy, touted as the backbone of the country, is being marginalized, their Constitution voided. At the same time, a repeat performance of bailing out big money over Main Street America is still the rule of the day. Hold on Governors; the train is leaving the station, and your ticket is going to be punched. H

A

s a kid, family camping trips were a summer highlight. The car would be packed with tents and sleeping bags, lots of food for the grill, and every small amenity that would be needed for a long weekend in the woods. Nights were spent under the stars; fireside games were played, and marshmallows were roasted. Days were spent on the lake fishing, swimming, and running through the woods. The relentless itch of bug bites and the plague of a stiff back in the morning is absent from childhood memories but are all too real for us adults when thinking about heading into the wilderness for a weekend away. As we struggle with the misfortune of a virus sent to the US from China, this upscale form of living outdoors takes on a new appeal. Wouldn’t it be great to enjoy the freedom the wilderness offers, while exercising caution by keeping others at a distance? NEW ENGLAND NEWS + MEDIA | JUNE 2020 | 25


There has never been a better time to enjoy the concept of glamping—which translates into “glamorous camping.” With glamping, there is no need to pack your car full of supplies or sacrifice comfort for open-air adventure. Just head to the destination of your choice and hunker down in a luxury tent, yurt, log cabin, teepee, hut, pod, or in some locations—an igloo! Independent properties and large hospitality brands are capitalizing on this camping phenomenon, and the public is responding. According to glamping.com, in 2015, there were over three million searches for glamping with huge increases continuing. And, with the thought of having to shelter in place at any given time, it might be wise to discover who—and in which state—will be open for business this summer. Luxury glamping sites have popped up all over the world, offering amenities that far exceed traditional camping sites— but you don’t have to go far to indulge in one of these outdoor destinations. There are dozens of locations in New England— from kit-built yurts and log cabins in Maine, to treehouses in Vermont and rustic barns in Massachusetts. A simple internet search will display the many glamping options in Northeast and beyond. From trailers to tents, sites like huttopia.com take guests to a new level of enjoyment in the wilderness. Yurts are portable, circular tents, and at Crowley’s, they are fully furnished and complete with a kitchen, wood and gas stoves, beds, and composting toilet. Fellow Mainers Tim Harrington and Debra Lennon were also bitten by the luxury camping bug. The duo partnered in 2009 to grown their mutual vision of luxury hospitality. Lennon brought 15 years of hospitality experience with the Sheraton Corporation, and Harrington, who previously worked in real estate development, moved into hospitality in 2005 when he purchased and renovated The Cottages at Cabot Cove in Kennebunkport and later Hidden Pond. Day-trippers have been known to call the island “primitive” when describing it to others, while many who are more seasoned, have an opinion that a journey to the island is like buying a ticket to paradise. In any case, there’s nothing to compare it too—it is a one-of-a-kind adventure. A day on Cuttyhunk is not all that tough, but be advised, it can be similar to hiking in the mountains—you must be prepared. Pack sunblock, aspirin, any medication you may need, a cooler with your lunch, snacks, and water are the basics for an enjoyable day. Of course, a blanket or towel will be necessary so you might lounge on one of the many beaches.

Be sure to bring a light jacket or overshirt since it will be cooler when you return to the mainland. Another interesting note about Cuttyhunk is that you never know what will be open or available. With fewer guests during the beginning of the season, don’t expect stores and dockside shacks to be fully functional—and if they are, pickings might be thin. The Cuttyhunk Ferry Company, owned and operated by Captain Jono and his wife, Sue Billings, offers daily travel and freight service from the New Bedford Seaport. Complete with lunches, snacks, and bathroom facilities (don’t want you to think you’ll be on your own there), the ease of travel is beyond compare. Their courteous crew will quickly load the boat and get you aboard for great sightseeing and the start of your vacation. Captain Jono knows the trip well and accommodates his guests with anecdotes about the journey, the area, and what you can expect to see once you arrive at your destination. Be sure to bring a camera or whatever device you own so that you’ll be able to record your blissful day on the “rock”— but one thing to emphasize; it’s doubtful you’ll be texting or calling anyone because service isn’t the best, and that’s a good thing. reast cancer, hormonal disruption, skin ailments, and leukemia—the list goes on and on. In today’s modern world of science, one would think that technology could keep pace with, if not advance beyond, many of the disease processes facing women. Having unique needs—or at least different preferences than their male counterparts—they are continuously faced with decisions which often lead them to ultimatums, either they prefer not to take (but do anyway), or ones in which the consequences are not clear. On average, the typical woman (even though I don’t believe there is a typical woman) uses about 10 products each day. Of this list, there are over 160 chemical compounds in those products, with little information shared with an unsuspecting public. Beginning at birth, you have been cleaned, bathed, and covered in lotion from head to toe, nearly every day of your life. As you mature, you begin to use products to improve or soften your skin or use makeup advertised as a means for becoming more beautiful than the girl next door. With aging comes hair-coloring— a secret between you and a box, or if you can afford it, your hairstylist. Laboratories develop just about everything you desire or believe will improve your appearance. While chemists test the results of their innovations (usually on rodents), the goal is not to decide if a product will harm or kill consumers; instead, they strive to seek levels of toxic ingredients the body can tolerate—with constant use—this is called creating a “standard.” Too often, women become unintended subjects of product testing, and unless they are harmed, and a direct link can be established, liability for injury is impossible to prove. If a devastating diagnosis is ever made, often with an unconfirmed etiology, seldom can the disease be traced back to a lotion or potion you may have used? But, it

does make you wonder if any of the personal care products was a contributor. Compounding the importance of this issue is the alarming aspect of how companies are marketing personal care products to a young and influential audience. Gone are the days when a young girl would ask permission from a parent to purchase her first tube of lipstick, or her mom handing her a deodorant stick and saying, “You might want to start using this.” Instead, young ladies are taking it upon themselves to get advice and direction from older sisters, friends, social media, or worse—advertising that targets them as the next life-long consumer. These actions raise concerns since these women will face a lifetime of products that are at the least, questionable, and for the worst—deadly. With our country’s medical model focused on cure rather than prevention (though this is improving over the last 10 or 20 years), this approach is cyclical. It never addresses the cause of illnesses related to the environment or human-made substances. In a study conducted by Dr. Kim Harley, from the Center for Environmental Research and Children’s Health at the University of California, Berkeley, found that a group of teenaged girls not only had measurable levels of hormone-disrupting chemicals in their bodies, the research also showed that once subjects stopped the use of personal care products, (cosmetics, soaps, and shampoos), the levels of substances plummeted, leaving their bodies clear of contamination. If nothing else, there is comfort in the fact that stopping the use of questionable products can return body chemistry to normal. But, we need to question these findings and ask; should we use products that infiltrate into our biological system in the first place? Harley, who happens to be an epidemiologist, identified three particular substances that have been labeled endocrine disruptors: phthalates, paraben, and triclosan.

These chemicals are found in dozens upon dozens of health-care, beauty, and cleansing products on the shelves of practically every retailer; this includes grocery stores that promote organic-based and chemical-free products. In addition to these chemical compounds, identified by Harley, it has long been felt that antiperspirants containing aluminum are high on the do-not-use list. This active ingredient blocks sweat glands and prevents the natural flow of toxins from being released from the body to the skin’s surface. Research has suggested that the aluminum components of these products are absorbed by the skin and result in changes to estrogen receptors of breast cells. It should be noted that estrogen

is responsible for both cancerous and non-cancerous cell development, making antiperspirants containing elements of aluminum a high-risk agent. Another concern is the relationship between aluminum substrates and the onset of Alzheimer’s disease. While medical experts are claiming they are linked in some manner, nothing has been done to eliminate aluminum from store shelves or online retailers. WHAT CAN BE DONE?

Over the last few years, many new healthconscious companies have been identifying problematic substances in the products used by women and began to offer viable alternatives—although more expensive than what is mass-marketed. Over the last year, the quest to control harmful compounds available is a good news/bad news scenario. BAD NEWS

In the past, the government agency known as the Food and Drug Administration (FDA) hasn’t been looking out for you as once believed. Because they have zero authority for the monitoring of personal care products, it is an open playing field. It is a little-known fact that most industry leaders in this category can manufacture products and use chemicals or substances without having to show evidence that they are safe for our health or the environment. These large companies are also experts in the manipulation of messages about health and beauty. 42 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

This loophole is evident when they show a cute, chubby baby wrapped in a pink or blue blanket in the arms of a caring mother, but neglect to tell you about the possible toxins you exposed your child to during a bath. With what we know, this form of promotion is unfathomable; the notion that mothers and fathers in this country are continuously exposing their children to dangerous products is on the verge of recklessness, but the answer is often the same: “Show us where the harm is being done.” UPDATE

On April 20, 2015, Senators Dianne Feinstein (D-California) and Susan Collins (R-Maine) introduced legislation to protect consumers and proposed a bill that would create a method for industry compliance known as the Personal Care Products Safety Act. It sat in committee until March 7, 2019, where it was read twice and referred to the Committee on Health, Education, Labor, and Pensions. As of today, it remains idle and un-passed. This new law would give governance to the FDA to regulate all of the ingredients found in personal care products. Most noteworthy is that this soon-to-be regulated industry sector is expanding to an estimated $70 billion in US revenue; troubling, is that it is an industry lacking oversight during the last 75 years. According to Senator Feinstein’s website, which details the bill, long discussions have taken place between the FDA and companies manufacturing many of these targeted products.

In support of the bill, Senator Feinstein is quoted as stating, “The use of personal care products is widespread; however, there are very few protections in place to ensure their safety. Europe has a robust system, which includes consumer protections like product registration…I am pleased to be introducing this bipartisan legislation with Senator Collins that will require the FDA to review chemicals used in these products and provide clear guidance on their safety. Additionally, the legislation has broad support from companies and consumer groups alike.” BUT WHO IS BEHIND THE LEGISLATION?

One organization involved with the construction of this bill is known as the Personal Care Products Council. This trade association, representing over 600 industry-related concerns (who most likely have a Washington lobbying company working diligently on their cause), would appear to be the wrong people to sit at a table when discussing safety over profits. The very nature or objective of this group would, at face value, be counter to the ultimate goal. The intimacy between the industry and the government gives rise to another question: How well will consumers’ rights be protected—within the language of the law—if the industry is writing it? It is important to identify others included in the writing of the bill: n Johnson & Johnson, whose brand names include: Neutrogena, Aveeno, Clean & Clear, Lubriderm, and a long list of Johnson’s baby products. n Conglomerate Proctor & Gamble (how appropriate), with a list of popular products used by women, including Pantene, Head & Shoulders, Clairol, Herbal Essences, Secret, Dolce & Gabbana, Gucci, Ivory, Cover Girl, Olay, Sebastian Professional, and Vidal Sassoon.

In light of full disclosure, the bill is supported by the following consumer groups (though we are unable at this time to learn how they contributed to the legislation): n The Environmental Working Group n Society for Women’s Health n Research National Alliance for Hispanic Health n Healthy Women n Endocrine Society n National Psorias What seems to be missing in this cooperative effort is a national watchdog organization that monitors the language and follow-up enforcement piece of the legislation. From first glance, it seems that government agencies, trade associations, 44 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

and companies producing or at least marketing these controversial products are a bit too cozy. Since this is such an important issue, should we as consumers want businesses to be allowed to exert so much influence? Even with this proposed legislation, how can we believe these sizeable personal care companies will modify or change their successful formulas due to suspicion—especially with a lack of scientific data to demonstrate harmful outcomes to the end-users of their products? According to the analysis of the bill, the FDA would be responsible for evaluating at least five ingredients yearly. From a long list of chemicals considered conspicuous of causing health problems, this process would create a means for notifying companies how and when compounds can be used, at what levels they should be regulated, and if a consumer warning needs to be issued. A problem that could result from this approach is that the law ends up as window dressing only to allow the opportunity for these personal care companies to claim they are adhering to the will of the people and government and until such time evidence can demonstrate a cause and effect relationship between product and illness. It’s been announced that one of the first compounds to be reviewed is known as diazolidinyl urea (just the name sounds threatening), a preservative found in bathing products, lotions, deodorants, shampoos, and conditioners. Also, to be examined—once legislation is passed—will be lead acetate, found in hair dyes, along with methylene glycol and quaternion-15, both components of shampoo, shaving and skin creams, and cleansers. While the FDA will be able to enforce labeling on products, we have to question if it will go far enough. It can be hypothesized that those who read labels are already aware of harmful content and will make personal judgments, but for the majority of consumers, the only label they’re concerned with is the one with a price.

Another interesting—but late-toshow—rule is that companies will be to provided “information” about their dangerous personal care products (within 15 days) if they receive a report of a severe or adverse problem which resulted in disfigurement, hospitalization, or perhaps death. Having to wait until a horrible outcome occurs before action is taken seems to allow a considerable corridor for problems to exist and not be reported. It would be nice to believe a company would come clean (no pun intended) when something they produce and market is hurting people. It’s apparent we need oversight of businesses that touch our lives, especially in such a personal manner; if nothing else, this is a good beginning. AFTER ALL OF THAT— WHAT IS THE COST?

If you want to know the answer to this question, simply follow the money. Of course, as with anything the government becomes involved with, there will be a price to pay; and, who better than the consumer to cover the cost for protection. This new law will result in personal care product companies having to pay a user fee to the government agency, only to have this charge passed on to the consumers. From this, we can conclude that for many Americans, the choice they end up making will be based on price. Unfortunately, the lowest price is usually the least desirable product from a quality standpoint. We should be pleased that some action is being taken on our behalf; however, change takes time, and so we can probably expect the process of how consumers select personal care to be slow in coming. Now is the time to teach the next generation of our mistakes and ignorance. By explaining to teens and young women what they are subjecting themselves to when using products that promise everything, but a healthy life; it’s vital to give them alternatives which are pure and natural. Perhaps as consumers, we can pressure a multi-billion dollar industry to put health in front of profits. H

ove relationships and marriage can be complicated— so much so—that they test every fiber of our being. During difficult times partners teeter on the brink of ending their relationships; often, unhappy couples bounce between the choice of staying or leaving, between hope and desperation. While struggling with such a choice, partners may live with unexplained emotional fluctuations and turmoil, a symptom of the battle between the head and the heart. To determine their best course of action, an individual will ask themselves, “Should I be true to my needs, or stay true to love?” It’s during this emotional struggle, the juxtaposition of two commitments becomes evident; loving a partner versus the obligation to love ourselves. Swinging between these values and stuck in indecision can torture a partner, causing 48 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

emotional instability. As outlined below, three factors can help a partner struggling with relationship uncertainty and aid in making the all-important decision: “Should I stay, or should I go.” With marriages, dissatisfied partners need to earn a ticket out. Our love relationships serve a deeper purpose that gets little attention: the facilitation of our growth. If we do not do the work, we set ourselves up to repeat the same life lessons in our next love relationship—similar to the movie Groundhog Day. The first element is growth in the personal areas of the relationship. By focusing on this obligation, we fulfill the underlying purpose of choosing a partner and forming a relationship. Once the work of growing is complete, we become released, and our emotional bond is loosened. By personal improvement, an individual can show they are ready to be partnered in a healthy and satisfying relationship. Element two is the elimination of our

contributions to a relationship’s problems. Only through rigorous self-scrutiny, and asking ourselves, “How much do I contribute to the issues,” may we understand and own up to the influence we have on the relationship’s discourse. Through strength and action to eliminate our impact on the relationship’s difficulties, may we be more precise about ourselves. A third element is giving our best effort to the relationship. Partners in trouble are easily controlled by their hurt and anger; an offended person gives less than his or her best shot. A poor attitude, combined

with negative behavior, is sure to produce a deprived relationship. Our best means being non-judgemental, patient, and showing acceptance of a partner; not taking the partner’s limitations personally, but to act compassionately, and show understanding—these are essential ingredients in loving generously. When we make a full commitment to consistently deliver our best, we are then ready to internally set a generous enough deadline that our best efforts may produce a positive result and improve the relationship. In the end, if the predetermined interval

hasn’t achieved success, then it is likely time to call it quits, and partners are free to go separate ways. Conversely, the partner’s efforts to improve and make a go of the relationship are more attractive and satisfying. Loving ourselves means always putting ourselves in a good position, and by going through these steps—regardless of the outcome—we will feel good about ourselves. WHAT’S YOUR

AGEOTYPE? Why age may be much more than just a number

ome may have heard of the concept of biological versus chronological age or the reality that two people can be 40 years old, yet one person has the body of a 50 year old, while the other could pass for 30. Though not definitive, biological (also called physical) age is influenced by numerous behavioral factors like diet, exercise, sleep pattern, and tobacco and drug use. While scientists say that, for the most part, aging is determined by our genetic endowment, our health habits do have a say in how rapidly we age. Science currently has established clinical markers associated with aging in older people, such as high cholesterol; but the detailed discovery of how we age has been lacking. A recently revealed aging classification could change the landscape. 50 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

FOUR TYPES OF AGING

Researchers from Stanford University School of Medicine believe they’re on the right path to determining how common biological markers are related to the aging process. Earlier this year, in Nature Medicine, a team led by Stanford Medicine Professor and Chair of Genetics, Michael Snyder, Ph.D. published findings from a two to three year study of changing clinical patterns in 106 healthy men and women aged 29-75.1,2 It was the first study to detail age-related changes in the same individuals. Snyder’s team used biological samples such as blood and stool to monitor changes over time in markers such as microbe populations and molecules, including proteins, metabolites (e.g., glucose), and lipids (e.g., cholesterol). Four distinct biological pathways of aging, coined “ageotypes,” were identified: metabolic, immune, liver (hepatic), and kidney (nephritic). A person with a metabolic ageotype at risk for type 2 diabetes may have increased levels of A1c, a measure of average


blood sugar, as they age. Another person may have elevated biomarkers for liver or kidney issues. And, while there were no clear boundaries between ageotypes, it was determined that some individuals remain at risk for more than one disease. Snyder noted that a person’s ageotype represented their most pronounced biological pathway of aging and that those markers rising the most over time are the major contributors.

Participants still aged, but their rate declined after losing weight and changing diet, corresponded to a decrease seen in hemoglobin A1c. Likewise, others saw a decline in creatinine, a marker of improved kidney function, after beginning statins (no mention of side effects was made). Inexplicably, others saw a decrease in ageotype markers with no visible lifestyle changes, and yet another group maintained a lower-than-average aging rate throughout the study. The researchers say the results gave a “much more comprehensive” picture of aging patterns. The study used a broad array of molecular markers through multiple samples from the same individuals over several years—enough time for participants to make changes reflected in their ageotypes.2 “We’re able to see clear patterns of how individuals experience aging on a molecular level, and there’s quite a bit of difference,” said Snyder.2

BIOLOGICAL CLOCK

It could be that those who maintained slower-than-average aging throughout Snyder’s study had fewer programmed changes to their DNA. Population-wide genetic research supports Snyder’s findings in individuals. Studies have shown tissue-specific genetic changes in metabolism, immunity, aging, and cells’ ability to rejuvenate, with these changes accelerating aging.3 There is strong evidence that too much or not enough methylation (the natural addition of methyl groups) to a DNA molecule can turn off gene activity, accelerating aging and promoting age-related diseases. It’s well established that the biological age of a person’s tissues can be known by markers of methylation, and that these genetic changes can be due to environmental factors like unhealthy eating, lack of exercise, and immune cell injury. Because this can be tracked across a person’s lifespan, DNA methylation “clocks” are now being studied as a way of predicting life expectancy.3 Type 2 diabetes, for example, can be caused by changes in a person’s DNA coding (genetic), altered gene expression/activity (epigenetic), and environmental factors. Preliminary research has shown epigenetic dysfunction in muscle and pancreas cells of diabetic versus healthy people and identified DNA methylation and altered expression in specific genes.3 One study showed the fat mass and obesity-linked (“FTO”) gene to be under-methylated prior to disease onset.4 Researchers feel these epigenetic biomarkers could be a critical addition to the more common factors used in early disease detection (blood sugar, body mass index, chronological age, etc.).3 Another potential aging factor is telomere length. Telomeres are protein “caps” on the ends of DNA chromosomes that prevent them from deteriorating or binding with neighboring chromosomes. These structures determine the lifespan of a cell. When telomeres become shortened, a person is more likely to live an abbreviated life or develop a disease.5 Conversely, one study showed that a healthy lifestyle could lengthen telomeres and reverse this aging process.6 Generally speaking, the higher one’s chronological age, the shorter their telomeres. IMPLICATIONS

Snyder’s study made national headlines before the current pandemic, but his findings may hold higher value in the present day. Americans are now, by and large, more sedentary and not as diligent with healthy eating.8, 9 This not only points them toward the four pathways to age-related disease, but it could also leave them vulnerable to more serious illness from COVID-19 infection. Furthermore, the Centers for Disease Control and Prevention states that more than one-third of US adults (roughly 88 million people) have prediabetes, with some 80 percent unaware of it. Combating insulin resistance through lifestyle changes such as starting a weight training program can help prevent prediabetes from progressing to type 2 diabetes. (Snyder, who used his data for the study, began lifting weights and wonders how this will affect his ageotypes.) C

oming from a Southern background, I learned there are three topics you never want to discuss in a public setting: politics, religion, and who makes the best barbecue. Yes, there are places where the time-honored tradition of mixin’ up a “mess” of barbecue is taken more seriously than who you don’t want elected president. Typically, the responsibility of smoking, grilling, or baking authentic home-style barbecue is regulated to the person most admired for their skills in the kitchen, and who likely has an award-winning recipe locked away in their minds. For most, the secret to making an award-winning pulled pork dinner is found in the sauce; but, equally important is how they trim 54 | JUNE 2020 | NEW ENGLAND NEWS + MEDIA

and prepare the meat. Such time-honored traditions are passed from family to family over generations. For some background, Harold McGee’s book, On Food and Cooking: The Science and Lore of the Kitchen, is an excellent resource on the history of cooking. In it, records attribute the science of sauce to Chinese Chef I Yin in 239 BC. During this period, Yin’s appeared to be the first recorded account of how sauces were blended, and tell how many tastes we enjoy are specific to the map of our tongues. His initial work on the senses of sweet, sour, bitter, pungent, and salty continue to play an essential role in today’s kitchens. As for the word barbecue, documents point to Columbus and the Spanish; as they were exploring new worlds, it

seems they discovered a tool or machine used for smoking fish, lizards, and small animals. The term used by these people was barbacoa and may be the origin of the word “barbeque.” As people traveled from all around the globe, they came to the new land with animals and ingredients indicative of their culture. These tribal or ethnic orientations led to different areas of the country, reflecting the personal tastes of a region and to the variety, we know today. While everyone has their favorite type of meat to treat with a flavored sauce, we decided that to keep it simple we would stick to one kind of protein for our recipes, we decided on a pork shoulder or pork butt. Over the years, I’ve tried everything from a big ol’ slab of pork to lean, grass-fed


table cuts that once roamed fields and farmland. To be honest, when selecting meat—for me—the leanest is the meanest, although there are traditionalists who claim, “the fat is where it’s at.” All you need to do is compare waistlines, and the decision becomes clear that, if you’re going to eat meat, it might as well be the healthiest you can find. This month’s recipes include one found in a hand-written cookbook by Edith Lockwood Danielson Howard of Providence, Rhode Island (who would have guessed), in the library of the wellknown cooking school, Johnson & Wales College of Culinary Arts. By all estimates, this recipe is over 100 years old. Another one we share is a never written recipe from a cook and housekeeper known as Haddie. This jovial barbeque master worked her entire life for a family who lived in the small town of Cheraw, South Carolina. Haddie’s pulled pork recipe is as accurate as anyone can recall, and because she couldn’t read or write, and

relied on memory, this is as close to the original recipe as we will ever get. Finally, we offer a third recipe from North Carolina. While slightly different— it has some red in it—the taste is sweeter than the others. Regardless of the recipe you decide to replicate, it’s time to bury all of our opinions and differences, and get down to some cooking and sharing among friends.

RHODE ISLAND BARBECUE SAUCE

SOUTH CAROLINA BARBECUE SAUCE

¼ pound of butter ¼ cup of water 1 teaspoon of dry mustard 1 teaspoon of (indistinguishable from the hand-written recipe) habanero sauce Dash of cayenne pepper Chopped parsley 1 Tablespoon of tomato catsup 1 Tablespoon of lemon juice 2 Tablespoons of vinegar 1 Tablespoon of onion powder 1 Tablespoon of tomato sauce

3 ½ (20 ounces) cups of cider vinegar 1 ½ Tablespoons of sugar 1 teaspoon of salt Pinch of black pepper 1 ½ tablespoons of red pepper flakes 1 cup of water

An undetermined amount of Crisco shortening. Heat all items in a sauce pan and bring to a boil. Use to baste the pork meat.

COOKING PULLED PORK, BUTT OR SHOULDER

Regardless of how you want to cook your pork—and there are many ways to roast this meat—we’re sticking to one easy method that has never failed. You may have heard, “low and slow is the only way to go.” This adage means you set your oven somewhere between 175–200°F and put the meat in a roasting pan (some like it on a rack, while others like to let it sit in the sauce). It should be rubbed with some of the dry ingredients used in preparing the sauce. Then after

a few hours, waiting for the “bark” to set up (the crusty exterior of the meat, giving it texture and appearance), you baste the heck out of it. While some cook it overnight, others will pop it into the oven early in the morning so that it’s finished for the dinner hour. Regardless of your choice, plan on cooking it from 8 to 10 hours. For firsttimers use a meat thermometer; we don’t want you eating raw pork, never to try it again. When finished, take your prize out of the oven and with two forks, “pull” the pork apart. To keep it moist, pour some sauce over it—heated, of course—and serve it up with your favorite side dishes. THE SAUCE IS THE MAGIC

These sauces are not what some might expect; they are in liquid form, and not thick as you may be used to from prepared marinades. Keep in mind that basting is important to keep the meat moist. H

5 Tablespoons of brown sugar 5 Tablespoons of white sugar ½ Tablespoon of fresh-ground black pepper ½ Tablespoon of onion powder ½ Tablespoon of ground/dry mustard 1 Tablespoon of lemon juice 1 Tablespoon of Worcestershire sauce Dash of cayenne pepper 1 teaspoon of red pepper flakes 2 pinches of kosher salt Oil up the boneless pork and set in a pan. Rub the dry ingredients over the pork, leaving the brown and regular sugar for last. Boil the mixture and then let it simmer. Once the outside of the meat appears to be brown and a little hard, begin basting with the sauce. Due to taste differences, add more or less water to accommodate the degree of hot or sweet.

Roasted Cauliflower Steaks with Walnut Gremolata FOR THE CAULIFLOWER

PREPARATION

1 large head cauliflower 2-3 Tablespoons olive oil ½ teaspoon salt ¼ teaspoon black pepper ¼ teaspoon garlic powder ¼ teaspoon paprika

Preheat oven to 500°F and line a baking sheet with foil. Remove the outer green leaves from the cauliflower and cut in half lengthwise. Carefully cut into 4 thick steaks and place steaks and any loose florets on baking sheet.

FOR THE GREMOLATA

½ cup California walnuts, coarsely chopped ½ cup parsley, lightly packed 1 clove garlic, minced Finely grated zest of 1 lemon Salt and pepper to taste

Drizzle or brush on both sides with oil. Mix all seasoning in a small bowl and sprinkle evenly on both sides of cauliflower. Cover with foil and roast for 5 minutes. Remove foil and roast for 10 minutes more. Gently turn cauliflower over and

cook for 6 to 8 minutes more or until browned and crisp-tender. While cauliflower is roasting, toast walnuts in a small skillet for 5 minutes or until fragrant. Let cool and toss with remaining gremolata ingredients in a small bowl. Serve immediately over cauliflower steaks.


Serves 8 Coconut aminos and mushrooms bring out the umami flavor, while walnuts and beets add great nutrition and color, similar to beef tartare. Please note, you have to soak walnuts overnight.

GARNISHES

5 eggs, in shell 20 baguette slices 1 tablespoon olive oil 15 gherkins PREPARATION

TARTARE

2 cups chopped California walnuts 2 Tablespoons coconut aminos, divided ½ Tablespoon olive oil 2 oz. baby bella mushroom, chopped 2 Tablespoons minced shallots 12 oz. cooked red beets, chopped 1 Tablespoon chopped parsley 1 ½ teaspoons Dijon mustard 1 ½ teaspoons ketchup 1 ½ teaspoons organic mayonnaise Salt and pepper to taste

Place walnuts in a medium bowl and cover with water. Stir in 1 tablespoon coconut aminos; cover and let stand overnight. Drain well. Heat olive oil in a small skillet. Add mushrooms and saute for 5 minutes to soften.

Transfer to a bowl; cover and refrigerate for at least 1 hour. Bring a large pot of water to a boil. Carefully drop in eggs and cook for exactly 6 minutes; remove and chill, then carefully peel and cut in half. Lightly brush baguette slices with oil and season with salt and pepper; broil for 1 to 2 minutes or until golden brown. Pack about 1/2 cup tartare on each plate with 4 baguette slices, 2 egg halves and 3 gherkins.

Transfer to a food processor with walnuts, beets, parsley, shallots, Dijon, ketchup and mayonnaise. Pulse to finely chop then season to taste with salt and pepper.

his is the month in which a riot of color will blanket many of the fields in the mountains of northern New Hampshire. The Fields of Lupine Festival, begins on June 1 and continues until June 17. It includes the towns of Lincoln, Woodstock, Sugar Hill, Franconia, Easton, Bethlehem, Lisbon, and Littleton. During this time, the floral carpet is rolled out for visitors to the region by way of walking tours. Take an easy ride up Interstate 93, or if you venture from the north, down 93, pull off at Exit 38, and follow Route 117 up to Sugar Hill, where the heavenly beauty will captivate your senses. Be sure to carry your cameras, both video and still. ART of the OCEAN STATE The Wickford Art Association (WAA) is thrilled to announce the return of their most popular exhibit: Art of the Ocean State. 2020’s exhibit introduces Jurist William Heydt of Newport to curate a collection of works in all media that represents Rhode Island, and all the Ocean State offers.
