Autumn is here! We’re already looking forward to cooler weather, the change of seasons, and fashions are refreshing. The kids are finally back at school after a challenging start to the year and who knows what disruptions ahead of us. Over the break, I caught COVID, but can say with relief, I (fully vaxxed) had hardly any symptoms and tested negative after seven days. It’s not the same experience for many people and the daily figures are harrowing. My condolences to families who have lost loved ones or who have friends and relatives in hospital on ventilators or ICU. My prayers are with you. As we spread our wings and venture forth into the gradually opening world, it’s exciting to see Rebel Wilson, the comedian and actor, as a vibrant and vital Ambassador for Fiji – now open to Aussies and greeting us with their renowned warm welcome and hospitality. We all love Rebel Wilson. I have been a fan of her movies for many years. How hot does she look after her commitment to health and well-being in 2020-21. Go Rebel! What an amazing achievement and such incredible inspiration you are for all of us. Threads are made up of the material used in dissolvable stitches called polydioxanone (PDO). These very fine filaments of PDO are placed under the skin. Vale Thierry Mugler BY LIZ CLIFT ADIEU TO FASHION MOGUL MANFRED THIERRY MUGLER 1948-2022. HE WAS A DEFINING FORCE IN THE WORLD OF FASHION. A VISIONARY WHOSE IMAGINATION EMPOWERED PEOPLE AROUND THE WORLD TO BE BOLDER AND DREAM. I was thrilled to be invited by my friend Liz Parsons to his 20th anniversary show in 1995 at Cirque d’Hiver in Paris; a spectacular event with Verushka, Tippi Hedron, Kate Moss, Naomi Campbell, Jerry Hall, Carmen Dell’Orefice to name a few of the A-list models. James Brown sang while male dancers in g-strings gyrated on podiums. Liz and I were invited to his private party that evening at a night club and we were out-numbered by men in latex and “trimmings”. After selling his brand name Thierry Mugler to Clarins in 2002 he reverted to his birth name Manfred, only to return to design the internet-breaking outfit for Kim Kardashian West for the 2019 Met Gala. The extravagant, bodyhugging ensemble consisted of latex and crystals suspended like water droplets, completed by a wet-look hairstyle and slick skin to embody the ultimate mermaid. The dress marked the first design Mugler had created for his namesake

house in two decades and took months to create. It joins the many thousands of magnificent Mugler gowns and designs from a career that embodied art, whimsy, fantasy and science fiction. “Fashion is a movie. Every morning when you get dressed, you direct yourself,” so stated Thierry Mugler himself. Born in Strasbourg, France in 1948, Thierry Mugler had an astonishing career; ballet dancer, photographer, fashion designer, artistic director for the stage and MTV videos, parfumier and stylist to the stars. His sense of fashion engineering has thrilled and surprised the fashion world at every turn and his diversity is legendary. In 1973 he created his first personal collection “Café de Paris” which was both urban and sophisticated. A powerful fashion editor Melka Treanton helped to launch his career. In 1976 she asked him to do a show in Tokyo for an event organised by Shiseido. He became a name to watch. 24 slim magazine Autumn 2022


Thierry opened his first boutique at the Place des Victoires in the 1er Arrondissement at the same time as launching his men’s collection, favoured by celebrities and performers, including David Bowie. At the request of Chambre Syndicale de la Haute Couture he completed his first haute couture collection in 1992. Also that year, he launched his perfume “Angel”. He created the music video for George Michael`s “Too Funky” and designed the wardrobe for “Macbeth” for the Comedie Francaise. In 2009 he was the artistic director for Beyonce’s “I Am World Tour” and designed her costumes. He filled his runways with an eclectic mix of stars and models , among them Cyd Charisse, Diana Ross, Sharon Stone, Ivana Trump – in Mugler`s words “personalities who know and accept who they are and fashion themselves accordingly”. At his 20th anniversary show at Cirque d’Hiver in Paris in 1995, Mugler created a monolithic white set consisting of two runways connected by a spiral staircase with the star-shaped logo of his best-selling perfume Angel as a backdrop. Mugler showed an unprecedented 300 looks on a diverse line-up of models from every era, including legends like Carmen Dell'Orefice, Veruschka and his muse Jerry Hall alongside Naomi Campbell, Eva Herzigova and Kate Moss. The cast also included some of his favourite actresses, while socialite Patty Hearst did a striptease. He showed beauty through the ages, from masterfully cut catsuits, glamorous evening gowns to a futuristic gold bodysuit. The show culminated with a performance by James Brown as confetti rained down on near naked male go-go dances gyrating on pedestals. I immediately raced to Place des Victoires and stocked my wardrobe. How could you not? The man was the most innovative designer on the planet. Mugler stepped away from his label in 2002 to concentrate on creative directing projects. His visionary excellence has been embraced by a new generation of pop stars and designers who he has influenced with his mastery of design, Alexander McQueen to name one of many. I visited his first major museum retrospective “Thierry Mugler: Couturissime” in Rotterdam Holland. The tour which started in Montreal examines his visions for “metamorphoses, superheroines and cyborgs”. His exhibition showcases 150 of his dramatic ensembles. Designed between 1977 and 2014, the pieces demonstrate the creative prowess of the house of Thierry Mugler, which is credited with revolutionising the fashion industry, and particularly haute couture, with his theatrical designs. I was entranced with his comprehensive retrospective of his work, aligning garments, accessories and costumes together with video, photography and archival sketches. The exhibition conveyed the masterful creations of a fashion genius. Rest In Peace Manfred Thierry Mugler.

After completing a degree in psychology at the University of Newcastle, Donna finished her medical degree at Bond University. My relationship with food was ok, but I was not eating the right foods that I should have been, especially having thyroid disease. I only ate two meals a day lunch and dinner and sometimes I would only eat lunch and when I did eat, I would eat the wrong foods.

I trained for two years and in that time, I trained six days a week I still didn't eat right, however I did cut out the junk food. I drank a lot of Pepsi Max. I would have up six cans a day this did not help with my weight.

What motivated you to go on your weight-loss journey?

My motivation was to make changes in my life and to start with my weight as this was the main reason I was miserable and depressed. A couple of ladies at 38 slim magazine Autumn 2022

work had the procedure done and I watched their progress. I decided to look into the Gastric Sleeve, so I took myself to my GP and sought his advise. He highly recommended me to have this procedure done and referred me to the experts. I was a bit sceptical at first, as having Hashimoto’s disease I wasn’t convinced that this was going to work. So, I rang the Doctor’s practice and had a chat with him about the procedure and how this would work with my thyroid disease. The Doctor assured me that this will work and that he had help other patients with thyroid disease and it was successful for them. So, I decided I would give this a go, as what else do I have to lose, and I booked myself in. How long had you battled with weight issues? I was diagnosed with Hashimoto’s


disease when I was 23 years old and that is when my weight-loss battles began. After the birth of my third child at the age of 35 I found it even hard to lose weight. Over the years, I found that I started to put more weight on. In 2014 I decide to join a gym trained six days a week only to drop one dress size, from 18 to 16. This was heartbreaking, as all this hard work I was doing and I wasn’t getting the results that I should have. In 2019 I started working from home for six months and during that time, I was not leaving the house and I found myself at the weight of 106 kilograms. I was miserable and I had to do something about it but didn't know what else I could have done. I started eating the right foods and walking but this wasn't enough to lose the weight that I wanted to lose. What health problems did you face as a result? In 2015 I had a mini transient ischemic attack (TIA), a brief blockage, only to find out I have a small hole in my heart. I could no longer train at the gym six days a week therefore this resulted in me gaining all that weight back on after all the hard work I had done for the last two years. I struggle with depression even though you would never know it! As I got bigger I found I had less energy and everything was such an effort. This made me even more depressed as I am not the type of person who sits on their backside for too long.

The Facts about Breast Reduction

BREAST REDUCTION SURGERY, ALSO KNOWN AS REDUCTION MAMMOPLASTY, REDUCES THE WEIGHT AND VOLUME OF THE BREASTS, AS WELL AS PROVIDING AN “UPLIFT” TO THE BREAST. FAT, BREAST TISSUE AND SKIN ARE REMOVED FROM THE BREASTS, FOLLOWED BY RESHAPING AND REPOSITIONING OF THE NIPPLES. Candidates for breast reduction surgery include women who experience functional problems of back, neck and shoulder pain, skin irritation under the breasts. They may cause poor posture, inability to exercise and deep indents in the shoulder area from the bra. Women may also feel like their breasts are disproportionate to their body size, have unequal breasts or have long term breast implants for removal and their breasts have grown over the years. Scars are placed around the areola, vertically under the areola and horizontally in the crease under the breast. Scars can be minimised by proper surgical techniques, postoperative care and scar management. This includes expert taping, silicone gel and laser treatment.

Breast reduction can be considered in men who have a condition called gynaecomastia (breast enlargement) or for gender changes. Surgery is performed either as day stay (home the same day) or one to two nights hospital stay. The surgical procedure takes 2.5 to four hours to perform and usually pain is minimal and recovery several weeks. The postoperative size of the breast can be varied and is discussed with each individual patient and depends on the preoperative size and shape. Sometimes breast implants can be inserted with a reduction to produce a fuller upper pole to the breast. Some costs of the surgery can be claimed from Medicare and Medical Insurance. EGG FREEZING ALLOWS YOU TO STORE YOUR UNFERTILISED EGGS, TO PRESERVE THEIR QUALITY FOR USE IN THE FUTURE. Frozen eggs may be stored for many years. When you are ready to use your eggs, they are thawed, and then fertilised with sperm – either from your partner or a donor. A healthy fertilised egg can develop into an embryo, which will then be transferred back to your uterus, with a subsequent chance of pregnancy. Egg freezing can benefit women who may not be ready to get pregnant yet, but are concerned about the effect of ageing on their fertility. Age-related infertility in women is one of the most common issues presented to Fertility Specialists each day when trying to help patients become pregnant. A woman’s most fertile years are in her 20s and early 30s, when the ovaries still contain a large number of healthy eggs. For the 10 to 15 years prior to menopause the ovarian function deteriorates, meaning women in their 40s have a much lower chance of producing a healthy pregnancy using their own eggs.

The stimulation typically involves daily injections of hormones using a tiny needle under the skin, which are very easy to administer. You will be given instructions on administering the medication in an introductory session with our fertility nurses. During this time, you will also need regular blood tests and ultrasound scans to monitor hormone levels and egg development. Egg collection The eggs are removed from the ovaries using an ultrasound guided probe. Attached to the ultrasound probe is a fine needle that passes through the vaginal wall into the ovary and draws the fluid (and egg) from the ovary. You can go home about one hour after the procedure and are advised to rest quietly for the rest of the day.

The younger the woman is when her eggs are frozen, the better the chance of the thawed eggs resulting in a pregnancy. Egg freezing in women over the age of 37 or 38 would be expected to have a lower chance of pregnancy. Egg freezing costs vary depending on your individual circumstances. If there are medical reasons for freezing eggs, Medicare will provide a rebate on the associated costs. Once eggs are frozen, ongoing storage fees will also apply every 6 months. The eggs undergo freezing, or cryopreservation, in the IVF laboratory, using the latest scientific technology. This process involves immersing each egg in a series of special fluid solutions to protect its cellular structure, followed by storage in freezing tanks of liquid nitrogen. Eggs may be stored for many years.

To obtain eggs for freezing, you will usually undergo hormonal stimulation over 10–12 days enabling a group of eggs (usually 10–15) to mature. There are a variety of stimulation techniques for this, and your Fertility Specialist will work with you to develop the best treatment for your individual circumstances.

A stimulated cycle would result in the collection of 10 to 15 eggs. Approximately 70 to 80 percent of eggs would survive thawing, approximately 40 to 50 percent of surviving eggs would fertilise and approximately 79 to 90 percent of fertilised eggs would develop into good quality embryos, depending on the age of the woman and her inherent

If you are a woman aged 45 and over (or 30 and over for Aboriginal and/or Torres Strait Islander women), speak to your GP about your risk of heart attack and stroke and have a Heart Health Check.

Research shows that women are much less likely to undergo treatment for heart attack or angina (chest pain) in hospital compared to men.

Pregnancy puts a lot of stress on the body. Some of the complications of pregnancy, such as gestational diabetes and high blood pressure can increase your risk of cardiovascular disease later in life.

For women, the risk of cardiovascular disease changes throughout life’s course. It’s important to be aware of the risk factors that specifically affect women, and what you can do to look after your heart health. Spontaneous coronary artery dissection (SCAD) is an example of a condition that occurs more frequently in women. It occurs when a split suddenly develops between the inner layers of a coronary artery. Blood flows into this space and reduces the amount of blood flowing through the artery. This means less blood and oxygen reach the heart. The symptoms of SCAD are similar to those of a heart attack or angina (chest pain). Most people who have SCAD have few or no known risk factors. Recognising the warning signs of a heart attack, and getting treatment as quickly as possible, is important for women of all ages. Chest pain is the most common heart attack symptom affecting women (and men). However, women are more likely than men to experience non-chest pain symptoms including jaw, shoulder or back pain, nausea or vomiting, dizziness, shortness of breath/difficulty breathing, indigestion or fatigue/tiredness. In addition to traditional cardiovascular disease risk factors, the risk of a heart attack or stroke can also be affected by women-specific risk factors.

As women transition into menopause, their risk of cardiovascular disease increases. During menopause, women experience changes to their sex hormones, fat distribution and lipid metabolism and are at greater risk of high blood pressure, high blood sugar, excess body fat around the waist and abnormal cholesterol levels which can increase their risk of cardiovascular disease. Women who enter menopause at age 45 or younger (early onset menopause) have a higher risk of cardiovascular disease.

Risk factors for cardiovascular disease in women include: high blood pressure, high cholesterol, Diabetes, obesity, unhealthy diet, physical inactivity, smoking, polycystic ovary syndrome, premature menopause, pregnancy complications, autoimmune disorders and their treatments, some cancer treatments, contraception and depression. A heart-healthy diet is low in unhealthy fats, salt and added sugar, and rich in wholegrains, fibre, vitamins, minerals and healthy fats is ideal. Consider adding fruit, vegetables and wholegrain cereals, healthy proteins especially fish, seafood, legumes, nuts and seeds with smaller amounts of eggs and lean poultry. Limit lean red meat to one to three times a week. Choose unflavoured milk, yoghurt and cheese. Those with high blood cholesterol should choose reduced fat varieties. Healthy fat choices with nuts, seeds, avocados, olives and their oils for cooking. Use herbs and spices to flavour foods, instead of adding salt. Source: heartfoundation.org.au

Hormone replacement therapy (HRT), which includes oestrogen replacement, has been used for many years to treat short-term menopausal symptoms. In some women, depending on their GP’s advice, HRT has also been used after menopause for those with osteoporosis. There has been a lot of research into the effects of HRT on the development of heart disease. Based on this research the Heart Foundation does not recommend HRT in the treatment or prevention of heart disease. There is evidence to show the use of HRT amongst postmenopausal women around 60 years of age or older may increase the risk of cardiovascular disease. Before commencing HRT, women should discuss the risks and benefits of the therapy with their GP. 46 slim magazine Autumn 2022

Demystifying Menopause By Dr Donna Tanchev, Her Medical

THE TERM "MENOPAUSE" REFERS TO THE FINAL MENSTRUAL PERIOD. AT MENOPAUSE, OVULATION NO LONGER OCCURS AND PRODUCTION OF OESTROGEN AND PROGESTERONE CEASES. FLUCTUATING HORMONE LEVELS CAUSE A RANGE OF SYMPTOMS WHICH CAN VARY FROM MILD TO DEBILITATING. TYPICALLY SYMPTOMS LAST FOUR TO EIGHT YEARS AND ARE MOST INTENSE IN FIRST YEAR, THE AVERAGE AGE FOR MENOPAUSE IS 51. Peri-menopause is the time leading up to menopause which is signalled by irregular periods and changes in the flow. Common symptoms include hot flushes and night sweats, aches and pains, fatigue or irritability, vaginal dryness, loss of libido, urinary frequency, dry skin, weight gain and an overall loss of vitality. Anxiety, forgetfulness, brain fog and insomnia are also common. There is no way to predict how long these will last. Women do not have to suffer through the symptoms of menopause. There is a variety of natural, non-hormonal and hormonal options to ease the symptoms of peri-menopause. Dietary and lifestyle modifications including reduction of alcohol intake, sleeping with the fan on, maintaining a healthy BMI, dressing in light cotton layers as well as cognitive behaviour therapy can help to reduce the negative effects of hot flushes. Avoidance of spicy

foods and not smoking may also help to keep hot flushes at bay. There are herbal supplements available over the counter and online which in some women help to reduce the frequency of hot flushes and night sweats - talk to your doctor about which products are reputable and safe to try. Dietary supplements that can be found in health food stores and even supermarkets may also provide relief of symptoms. Yoga, acupuncture and hypnosis have also been investigated in the management of menopausal flushes however the evidence is mixed. Similarly, regular exercise has not been found to reduce the frequency of hot flushes however it is beneficial for strengthening bones and maintaining heart health which is important at this stage. Dodging Dementia A RECENT STUDY HAS IDENTIFIED AN ASSOCIATION BETWEEN LIGHTINTENSITY PHYSICAL EXERCISE IN OLDER ADULTS AND A REDUCED RISK OF DEMENTIA. THE STUDY, WHICH APPEARS IN “JAMA OPEN NETWORK”, LAYS THE GROUND FOR FURTHER RESEARCH TO DETERMINE WHETHER LIGHT-INTENSITY PHYSICAL EXERCISE CAUSES THE REDUCTION IN RISK.

Dementia is the term used to describe the symptoms of a large group of illnesses which cause a progressive decline in a person’s functioning. It is a broad term used to describe a loss of memory, intellect, rationality, social skills and physical functioning. There are many types of dementia including Alzheimer’s disease, vascular dementia, frontotemporal dementia and Lewy body disease. Dementia can happen to anybody, but it is more common after the age of 65. Although dementia can affect younger people, it is increasingly common with advancing age and mainly occurs among those aged 65 and over, but is not a normal part of ageing. Dementia is a major cause of disability and dependency among older people. It not only affects individuals with the condition, but also has a substantial impact on their families and carers, as people with dementia eventually become dependent on their care providers in most, if not all, areas of daily living. How common is dementia? The exact number of people with dementia in Australia is currently not known. It is estimated that in 2020 there are between 400,000 and 459,000 Australians with dementia (AIHW 2018; DA 2020), with Alzheimer’s disease accounting for up to 70 percent of diagnosed cases (DA 2018). Risk factors A range of factors are known to contribute to the risk of dementia and may affect the progression of its symptoms. Some risk factors can’t be changed, such as age, genetics and family history. However, several are modifiable,

and can be altered to prevent or delay dementia. High levels of education, physical activity and social engagement are all protective against developing dementia, while smoking, hearing loss, depression, diabetes, hypertension and obesity are all linked to an increased risk of developing dementia (Livingston et al. 2017). Impact Dementia was the second leading cause of death in Australia in 2018, accounting for almost 14,000 deaths (ABS 2019). For females, dementia was the leading cause of death (nearly 9,000 deaths), while it was the third leading cause for males (nearly 5,000 deaths). Australian statistics (January 2022) • Dementia is the second leading cause of death of Australians • Dementia is the leading cause of death for women • In 2022, there are an estimated 487,500 Australians living with dementia. Without a medical breakthrough, the number of people with dementia is expected to increase to almost 1.1 million by 2058 • In 2022, there were an estimated 28,800 people with younger onset dementia, expected to rise to 29,350 people by 2028 and 41,250 people by 2058. This can include people in their 30s, 40s and 50s • In 2021, it is estimated that almost 1.6 million people in Australia are involved in the care of someone living with dementia • Approximately 70 percent of people with dementia live in the community • More than two-thirds (68.1 percent) of aged care residents have moderate to 56 slim magazine Autumn 2022

severe cognitive impairment. Dementia risk reduction Being brain healthy is relevant at any age, whether you are young, old or in between. However, it is particularly important once you reach middle age as this is when changes start to occur in the brain. While we cannot change getting older, genetics or family history, scientific research suggests that changing certain health and lifestyle habits may make a big difference to reducing or delaying your risk of developing dementia. There are 12 recommendations for reducing risk for cognitive decline released by the World Health Organisation: • Be physically active • stop smoking • eat a balanced diet, like the Mediterranean diet • drink alcohol in moderation • cognitive training • be socially active • look after your weight • manage any hypertension • manage any diabetes • manage any cholesterol • manage depression • look after your hearing and manage hearing loss.

Lose the booze MANY OF US HAVE BEEN HOUSEBOUND OVER THE PAST FEW YEARS, LESS ABLE TO COMMUTE AND LESS INCLINED TO GET OUT AND ABOUT. PLENTY OF US HAVE GAINED “COVID KILOS” DURING LOCKDOWNS AND THE DISRUPTION TO OUR ROUTINES.

According to data from the Australian Institute of Health and Welfare, weekly alcohol spending rose between four and 24 percent between May 2020 to February 2021. A poll taken by ANU over the same time found 18.1 percent of females and 15.5 percent of males increased their alcohol consumption. The most common reason given for increased alcohol consumption was spending more time at home, followed by boredom and increased stress – or a combination of all three! Alcohol can cause weight gain in four ways: it stops your body from burning fat, it’s high in kilojoules, it can make you feel hungry and it can lead to poor food choices. Whether or not you personally gain weight from drinking alcohol depends on many factors. These include: your behaviours when you drink, what you drink, how often you drink, how much you drink, what you eat when you drink, factors that relate to your unique

body and lifestyle, your overall diet, your genetics, your gender, your level of physical activity, your age and your health, for example the presence of other risk factors such as obesity and diabetes. Drinking alcohol, particularly in excessive amounts, has many other serious health risks beyond possible weight gain, including high blood pressure, high triglycerides, insulin resistance, heart disease, stroke, liver disease and some cancers. To reduce the risk of harm from alcoholrelated disease or injury, the National Health and Medical Research Council recommends men and women drink no more than 10 standard drinks a week (one standard drink equals 100ml - less than half a cup), and no more than four standard drinks on any one day. The less you drink, the lower your risk of harm from alcohol. Reducing or quitting alcohol can improve your life in many ways, including improving your mood and

sleep, increased energy, improved relationships, better performance at work, lowering your risk of long-term health problems such as cancer and heart disease, and saving you money! Dietitians Australia recommends aiming for two alcohol-free days per week and drinking plenty of water to avoid dehydration. Other tips include alternating alcoholic drinks with non-alcoholic drinks such as water or soda water and avoiding snacking on foods high in salt. Not only is too much salt unhealthy, but it can also increase the likelihood of having another drink. Avoid pre-mixed drinks with added sugars. These are very high in both kilojoules and sugars. Discovering a Plant-based Diet THE WORDS VEGAN, VEGETARIAN AND PLANT-BASED TEND TO BE USED INTERCHANGEABLY BECAUSE THE PLANT-BASED DEFINITION IS A LITTLE VAGUE AND SUBJECTIVE.

I can, I appreciate that supermarket chains are the most convenient and accessible for most consumers. Thankfully, you can find everything you need for a well-balanced plant-based diet at traditional grocery stores.

A plant-based diet is a style of eating where plants form the basis of the diet yet animal products in all their forms aren’t omitted. As a dietitian, I am a huge advocate for a plant-based style of eating. After all, some of the most well researched and advantageous diets in the world are constructed around plants i.e The Mediterranean Diet. Most of us do need to prioritise including more plants in our diets but animal products do not have to be completely removed to lead a healthy lifestyle

When shopping, you don’t need to fill your trolley with expensive ‘fake-meats’ or ‘cashew cheeses’ and ‘vegan icecreams’ which are often expensive and lack nutritional value.

When thinking of transitioning to a plant-based style of eating, the first thing to remember is that your mindset is everything. It’s important not to go into this new chapter with a closed, restrictive, guideline-driven mindset. Plant-based eating is the exact opposite of that. It encourages you to incorporate more plants into your diet without being fixated on rules and restrictions. Plant-based diets allow for ‘all-foods’ and are a sustainable and highly enjoyable way of eating. Don’t forget that! For any lifestyle or dietary change to be maintainable, you must understand your ‘why’. In this case, why do you think it’s important to eat more plants? Is it to improve your gut health, your mental health, immune strength, disease risk, skin and sleep quality, environmental impact, animal welfare? There is no right answer, the purpose just has to align with you! Secondly, think about all of the simple things you can do to slowly start implementing more plants in your diet. Remember, plant-based doesn’t necessarily mean excluding animal products all together, so before you become overwhelmed with the concept of plant-based, you don’t actually have to remove any foods. Knowing where to shop and what to put in your trolley doesn’t have to be too complicated. While I do prefer to shop local where

Fill your trolley with fresh or frozen fruits and vegetables (both are just as nutritious), tinned or dried lentils and legumes, nuts and seeds (buy these in bulk to keep costs at a minimum), and whole-grains and cereals such as rice, pasta, rolled oats, quinoa, cous-cous, wholegrain breads and wraps. I also think a great alternative to dairy milk is almond or oat milk, particularly a brand such as Inside Out, whose homegrown journey started in Sydney farmers markets and only uses Aussie almonds, oats and real ingredients with an abundance of nutritional value. Here are a few places to start your journey: Plan your meals at the start of the week and aim for 75 percent of the ingredients to be derived from a plant. Remember, plants don’t just equate to vegetables, they also cover fruits, nuts, seeds, lentils, legumes and wholegrains so get creative on how you can incorporate these types of foods into the meals you regularly cook at home.

Freekeh has been my new favourite grain as of late and I’m loving the nutty flavour and coarse texture it adds to my meals. You may wish to try a fortified plantbased milk such as Inside Out’s Almond/ Oat Milk which contains the necessary vitamins and minerals you would find in traditional dairy-based milks. Add plant-based milks to smoothies, breakfast bowls, in your home baked sweet treats or as a substitute to cream and/or milk in savoury pasta dishes or curries. SALTED CARAMEL POPCORN CLUSTERS

METHOD

1. Line a baking tray with baking paper. Combine popcorn and peanuts in a large heatproof bowl. 2. Combine oil spread, sugar and syrup in a small saucepan over low heat. Cook, stirring, for 6–8 minutes or until sugar has dissolved. Increase heat to high and bring to the boil. Cook, stirring occasionally, for 5 minutes or until mixture reaches 122°C (hard-ball stage) on a candy thermometer. Remove from heat. Pour caramel over popcorn mixture and gently stir to combine. 3. Working quickly with wet hands, roll 2 tablespoons mixture into a ball (take care as mixture will be hot – alternatively, spoon mixture into 24 cupcake papers to shape). Place on prepared tray and insert a wooden stick in the centre of the ball. Repeat with remaining popcorn mixture to make 24 balls in total. Set aside for 15 minutes to cool. Serve.

METHOD 1. Toss prawns with seasoning in a bowl to coat. Cover and refrigerate for 10 minutes.

• 400g raw peeled prawns • 2 teaspoons Cajun seasoning • 1 apple, cut into thin matchsticks • 2 celery sticks, thinly sliced • 100g radishes, trimmed, thinly sliced • 2 tablespoons chopped fresh mint, plus extra leaves to serve • ¼ cup (60g) 99% fat-free plain Greek yoghurt • 4 x 40g white wraps, warmed Lime wedges, to serve

I N G R E D I E N TS SERVES 4 PREP: 15 MINS | COOK: 25 MINS

• ½ cup (100g) brown rice • 2 teaspoons plain flour • 3 eggs • 2/3 cup (40g) panko breadcrumbs • 4 x 65g lean pork loin steaks, fat trimmed • 1 brown onion, halved, thinly sliced • ½ cup (125ml) chicken stock • ½ teaspoon white sugar • 2 tablespoons teriyaki sauce • 1 bunch baby bok choy, halved lengthways • 2 green shallots (spring onions), finely sliced

METHOD 1. Preheat oven to 200°C. Line a baking tray with baking paper. Cook rice following packet instructions. Set aside. 2. Meanwhile, place flour on a plate. Whisk 1 egg with 1 tablespoon water in a shallow bowl. Place panko on a separate plate and season with salt and pepper. Working with 1 pork steak at a time, dust pork with flour, dip in beaten egg, then toss in panko to coat and place on prepared tray. Lightly spray with oil and bake for 10 minutes, turning halfway through, or until lightly golden and cooked through. Rest for 2 minutes, then thickly slice. 3. Lightly spray a large nonstick frying pan with oil and heat over medium–low heat. Cook onion, stirring occasionally, for 5 minutes or until softened. Whisk stock, sugar and teriyaki sauce in a jug, then pour over onion. Simmer for 4 minutes, until slightly thickened. Carefully place each cut pork steak on top of onion mixture, keeping the slices together and leaving some space in between. Whisk remaining eggs in a jug and slowly pour around onion mixture and a little over the pork. Season with salt. Cover and cook for 2 minutes or until egg is set. 4. Boil, steam or microwave bok choy until tender. Divide bok choy and rice among 4 serving bowls. Divide the pork and egg mixture in the pan into 4 even portions, and add into each bowl. Serve sprinkled with shallots.

CHOCOLATEBERRY PAVLA INGR EDIENTS SERVES 12 PREP: 35 MINS | COOK: 1 HOUR 30 MINUTES + CO OLING

• 4 egg whites (at room temperature) • ¼ teaspoon cream of tartar • 1 cup (220g) caster sugar, plus 1 tablespoon extra • ¼ cup (25g) cocoa powder, sifted • ½ cup (125g) mascarpone cheese • 115g light cream cheese (at room temperature) • 3 teaspoons skim milk • ½ teaspoon vanilla extract • 200g strawberries, halved • 30g dark chocolate, shaved

3. Using a rubber spatula, gently fold sifted cocoa through meringue in 3 batches until just incorporated (be careful not to deflate meringue by overmixing). Spoon onto prepared baking tray and gently spread to form a 23 cm round with a 2.5 cm high edge.

METHOD 1. Preheat oven to 120°C. Line a large baking tray with baking paper. 2. Beat egg whites, cream of tartar and a pinch salt in a large bowl with an electric mixer on medium–high speed until soft peaks form. METHOD 1. For the pastry 1 egg yolk whisked with 20ml water, for glaze. Place the dry ingredients and butter in a food processor and process until the mixture resembles breadcrumbs. (Alternatively, this can be achieved by rubbing the ingredients together with your fingers.) Transfer to a large bowl, make a well in the centre and drizzle in enough cold water – around 125ml – to make a soft dough. Don’t add more water than is necessary or it will become too wet. Wrap in plastic wrap and place in the fridge for at least 30minutes to firm up before using. 2. To make the filling Preheat the oven to 200°C. Heat the oil and butter in an 18 x 28cm (flameproof baking dish, 5cm deep, for 5minutes. Meanwhile, combine the salt, paprika, thyme and mustard powder in a small bowl, then rub all over the chicken breast. Add the chicken to the hot dish and bake for 5minutes, then turn and bake for 5 minutes more, or until just cooked through. Remove from the oven, cut the chicken into 1cm pieces and set aside to cool. Add the mushrooms, onion, leek, garlic and chopped thyme to the dish and stir to coat with the chicken juices. Heat over medium heat and sauté until the onion is soft, around 3minutes. Stir in the chicken stock and bring to the boil. Thicken with the cornflour paste, boiling for 1 minute more. Remove from the heat and stir in the cream mixture and the lemon juice, then add the chicken pieces. Add sea salt, to taste, and set aside to cool. 3. To assemble for baking Preheat the oven to 200°C (400°F). Grease a 20cm round pie dish, 6cm deep. Cut one-third from the pastry, cover and set aside. Roll the remaining pastry out on a lightly floured surface until large enough to fit the base and side of the dish. Press into place, spoon in the cool filling, then brush the upper pastry edge with a little cold water. Roll out the reserved pastry to make a circle large enough to cover the top. Lay the pastry top over the filling and crimp the edges together with your fingers or a fork to firmly seal. If desired, make small leaves from the scraps of pastry. Brush with the egg glaze. If using, place the pastry leaves on top and glaze. Prick the top in several places with a fork. Bake for 10minutes, then reduce the oven temperature to 170°C and bake for 20–25minutes more, or until the pastry is golden and the filling is piping hot. Note: The filling can be made up to 2 days ahead and stored in the fridge.

CHOCOLATE CHERRY COCONUT SHORTCAKE

FOR THE BASE

• 300g cherry jam • 125g very soft salted butter • 125g white (granulated) sugar • 1 egg, lightly whisked • 220g self-raising flour • 30g cocoa

• 3 egg whites • 170g white (granulated) sugar • 100g desiccated coconut

METHOD 1. Preheat the oven to 160°C. Grease a 25 x 35cm slab tin, 5cm deep, and line with baking paper. 2. Base Using a hand whisk, mix the butter and sugar together until creamy, then whisk in the egg until well combined. In a separate bowl, combine the dry ingredients, then fold into the butter mixture with a metal spoon to make a soft dough. Press the dough evenly into the tin. 3. Topping Using hand-held beaters or a stand mixer, whisk the egg whites until soft peaks form, then gradually whisk in the sugar until soft peaks form again. Using a large metal spoon, fold in the coconut until well combined. 4. Assemble Spread the cherry jam over the shortbread base. Spoon the meringue topping over the jam and smooth with the back of a damp spoon. Bake for 30 minutes, or until the topping is golden brown and the base is cooked through. Cut and serve straight from the tin.

CREAMY POTATO BAKE IN G R EDIENTS SERVES 6-8 FOR THE BASE

• 3 garlic cloves, crushed • ¾ teaspoon sea salt • 600ml pouring cream • 1 teaspoon dijon mustard • 3 teaspoons mayonnaise • 2 teaspoons cornflour (cornstarch)

• 950g peeled potatoes (see note below in method) • 400g onions or 4–6 spring onions (scallions), finely diced • 3 teaspoons chopped rosemary or oregano • 200g rindless bacon, diced • 100g tasty cheese, grated

METHOD This dish is full of oozy, creamy luxury with the flavours of onion, chives, bacon and mustard. It’s a special occasion dish that encapsulates the spirit of comfort baking. Preheat the oven to 170°C. Grease a 25 x 35cm baking dish, 8cm deep. In a bowl or jug, whisk the garlic, salt, cream, mustard, mayonnaise and cornflour until smooth. Cut the potatoes into 6mm slices. Drizzle 50ml of the cream mixture into the base of the dish. Layer one-third of the potato over this, then top with half the onion, sprinkle with half the herbs and then one-quarter of the bacon. Pour 180ml of the cream mixture on top. Repeat the layers. Top

with the last of the potato and drizzle on the remaining cream mixture. Sprinkle on the last of the bacon and top with the cheese. Bake for 1 hour, or until the potato is cooked. Leave to stand for 10 minutes before serving. Note: The potatoes do not necessarily have to be peeled.

COCONUT RICE WITH FRUIT TARTARE IN G R EDIENTS

METHOD

Difficulty: easy Preparation: 30 minutes Cooking: 45 minutes

1. Crush the Speculaas biscuits in a bowl, add the softened butter and mix well. Press the biscuit mix into round tart rings to make the bases. Set aside. 2. Combine half the coconut milk in a pot with the rice and sugar. Split the vanilla bean lengthways and scrape the seeds into the pot, then add the empty bean. Bring to the boil, then reduce the heat to low and cook, stirring constantly, until the rice has absorbed all of the coconut milk. Gradually add the remaining coconut milk and cook until the grains of rice are mushy. 3. Add the white chocolate to the hot rice and stir until it is completely melted. Remove the vanilla bean and leave to cool. 4. Remove the seeds from the pomegranate. Peel and dice the mango and pineapple. Put the pomegranate seeds and diced fruit into a bowl, add the lime zest and mix together. 5. Assemble the dessert like a cheesecake by topping the biscuit bases with the cold coconut rice. Decorate with the diced fruit and a few edible flowers. Serve chilled.

• 200g Speculaas biscuits (Dutch spiced biscuits) • 1/3 cup (80g) unsalted softened butter • 2 cups (500ml) coconut milk • 100g parboiled long-grain rice • 40g caster (superfine) sugar • 1 vanilla bean • 40g white chocolate • ¼ pomegranate • ½ mango • ¼ pineapple • Thinly sliced zest of 1 lime • Small edible flowers, such as coriander (cilantro) flowers or pansies

SEA BASS CARPACCIO WITH GREEN MANGO INGR E D I E N TS Difficulty: easy Preparation: 45 minutes SERVES 6

• 3 whole sea bass or 6 x 150g sea bass fillets • 2 tbsp vegetable oil • 2 green mangoes • ½ red onion • 1 lime • ¼ pomegranate • 3 sprigs coriander (cilantro) • Salt and Penja peppercorns • 3 tbsp mango purée • 1 tsp ntorolo • A few croutons • A few baby spinach leaves 64 slim magazine Autumn 2022

METHOD 1. Wash the bass fillets and remove the skin and bones. Brush them with a little oil, then lay them flat in a container before putting them in the freezer for 30 minutes to firm up. 2. To prepare the mango relish, peel and finely dice the mangoes and red onion. Zest and juice the lime. Remove the seeds from the pomegranate. Finely chop the coriander. 3. In a bowl, mix the diced green mango, red onion, lime zest, pomegranate seeds and chopped coriander. Season with salt and pepper. 4. Make a dressing with the lime juice, mango purée and ntorolo and season with salt and pepper. Mix the dressing with the mango relish. 5. Remove the fish from the freezer, cut it into very thin slices and arrange on a serving plate. Serve immediately with the mango relish, small croutons, baby spinach leaves and a few Penja peppercorns.


Recipes……… METHOD 1. Clean the chicken the day before, or at least 2 hours prior to cooking, and remove the breasts and thighs from the bones. Set the carcass aside for the sauce. Juice the lemon. 2. Coat the chicken pieces with the lemon juice and nokoss and season with salt and pepper. Leave to marinate in the fridge. 3. To make the sauce, break up the chicken carcass. Heat the oil in a pot and sweat the red nokoss for 3 minutes. Add the pieces of chicken carcass and brown for 20 minutes over medium heat. 4. Stir the peanut butter and 2 cups (500ml) water into the chicken and red nokoss mixture. Add the whole chilli and simmer over low heat for 30 minutes. The sauce will gradually thicken. Season to taste. 5. For the crust, finely crush the roasted peanuts and mix them with the breadcrumbs and a pinch of salt and pepper on a plate. Mix the beaten eggs with 1 tbsp water in a shallow bowl. Put the flour on another plate. Coat the chicken pieces in the flour, then dip in the beaten eggs and coat with the peanut breadcrumbs.

PEANUT-CRUSTED CHICKEN

6. Preheat the oven to 150°C. Heat the oil in a large fry pan and brown the crumbed chicken pieces. Transfer the chicken to a tray and bake in the oven for 30 minutes or until cooked through. Serve the chicken and sauce with rice, banana fufu or cassava tubers cooked in water.

FOR THE CRUST • 1/3 cup (50g) roasted peanuts • ½ cup (50g) breadcrumbs • Salt and pepper • 2 eggs • 1/3 cup (50g) plain (all-purpose) flour FOR THE SAUCE • 3 tbsp vegetable oil • 2 tbsp red nokoss • 3 tbsp peanut butter • 1 mild/sweet chilli • Salt and pepper

FOR THE CRUMBLE • 50g garri (fermented, dried and ground cassava) • 50g plain (all-purpose) flour • 50g ground African pistachios or pepitas • 50g softened butter • ¼ cup (50g) light brown sugar

METHOD 1. Peel the pineapple and cut it into quarters without removing the core. 2. For the caramel, peel the ginger and cut it into thin strips. Split the vanilla bean in half lengthways and scrape out the seeds. 3. Pour the sugar into a heavy-based pot and cook over medium heat until caramelised. Carefully add the butter and stir to combine, then remove from the heat. Add the cinnamon, ginger strips, star anise, vanilla bean and seeds, then mix again. Add the pineapple pieces and cook for 10 minutes on each side.

4. Deglaze the caramel with the rum and flambé it, then pour in the pineapple juice. Cook over low heat, turning the pineapple pieces regularly, for 45 minutes. 5. Preheat the oven to 180°C. To make the crumble, mix all the ingredients together in a bowl, spread the mixture on a baking tray covered with baking paper and bake for 15 minutes. Leave to cool and set aside. Sprinkle the crumble on a plate, then place a piece of warm pineapple on top and drizzle with the caramel.

ITALIAN MERINGUE

• 150g unsalted butter, plus extra for greasing • 150g 60 percent dark chocolate • 65g dark palm sugar (jaggery) • 3 eggs • 3 egg yolks • 40g plain (all-purpose) flour • Pinch of salt METHOD

• 180g white (granulated) sugar • 50ml water • 90g egg whites

Combine the butter, chocolate and palm sugar in a heatproof bowl over a saucepan of simmering water and stir occasionally until melted and combined. Whisk in the eggs and egg yolks. Add the flour and salt and whisk until the batter is thick and smooth. Transfer to a bowl and refrigerate for at least 30 minutes. Preheat the oven to 170°C. Grease four 7cm cake rings with butter and tightly wrap the bottoms with foil to create a base, then grease the foil bases. Place the cake rings on a baking tray. Alternatively, grease four 8.5cm ramekins with butter.

IN G R EDIENTS SERVES 4 GANACHE CENTRES

• 150ml thickened (whipping) cream • 150g 55 percent dark chocolate • 15g unsalted butter

ME T H O D Pour the cream into a small saucepan and bring it to a simmer. Put the chocolate in a heatproof jug. Pour in the hot cream and, using an immersion blender, blend in the chocolate. Add the butter and blend until glossy and smooth. Pour the ganache into four 5cm diameter silicone mini muffin moulds. Place in the freezer for 4–5 hours or until frozen solid.

Transfer the chilled batter to a piping bag and half-fill the greased moulds, then place a frozen ganache round in the centre of the batter. Make sure the ganache is sitting directly in the middle of the batter. Pipe more batter over the ganache until the moulds are threequarters full. Bake the lava cakes for 18–20 minutes. Meanwhile, prepare the Italian meringue. Allow the cooked cakes to cool for a few minutes, then run a small knife around the edge of each one to loosen it and turn it out.

METHOD We’ve got left-over egg whites, so we may as well turn them into meringue… Combine the sugar and water in a small saucepan over low heat. Once the syrup reaches 100°C on a sugar thermometer, put the egg whites in a mixer fitted with the whisk attachment and turn the speed to medium–low. As soon as the syrup reaches 118°C, remove the pan from the heat, turn the mixer to medium speed and slowly pour the syrup onto the egg whites in a thin stream down the side of the bowl. Turn the mixer to full speed and whisk until the bowl has completely cooled down.

ASSEMBLY Freeze-dried mandarin segments Grated citrus zest, to garnish (optional) Edible flowers, to garnish (optional) Ice cream of your choice, to serve Stand each lava cake on a serving plate. Place a spoonful of the meringue on the side of each cake. Work it upwards, making little peaks with the back of the spoon. Use a blowtorch to brown the meringue. Lightly brown the freeze-dried mandarin segments with the blowtorch. Garnish each lava cake with the mandarin segments, some citrus zest and edible flowers, if using. Top it all off with some ice cream and cut into that bad boy to see it ooze.


RUBY RASPBERRY & ROSE TART IN G R EDIENTS SERVES 8 RUBY CRÉMEUX

• ½ gelatine sheet (titanium grade) • 50ml full-cream milk • 150ml single (pure) cream • 100g raspberry purée • 2 eggs • 10g white (granulated) sugar • 200g ruby chocolate M ET H O D Soak the gelatine in cold water to soften. Combine the milk, cream and raspberry purée in a saucepan and bring to the boil. Meanwhile, whisk the eggs and sugar in a heatproof bowl until fluffy. Whisk in the hot milk mixture, then pour the mixture back into the pan and cook until it reaches 83°C on a sugar thermometer. Squeeze the excess water from the softened gelatine, add it to the pan with the ruby chocolate and whisk until smooth. Strain the crémeux into a container and refrigerate overnight. FRENCH EARL GREY TART SHELL

• 375g plain (all-purpose) flour, plus extra for dusting • 80g white (granulated) sugar • 200g chilled unsalted butter, cubed • 6g French Earl Grey tea, ground to a fine powder • 1 egg • 1 egg yolk • 50g white chocolate

M ET H O D Preheat the oven to 170°C. Place a 20 x 2 cm perforated tart ring on a baking tray lined with baking paper. Combine the flour, sugar, butter and ground tea in a mixer fitted with the paddle attachment. Mix until a sandy texture is formed. Slowly add the egg and yolk and mix until a dough is formed. Wrap in plastic wrap and refrigerate for 30 minutes. Roll out the chilled dough on a lightly floured surface to a thickness of 3–5 mm. Drape the dough over the tart ring and tuck in the edges, cutting off the excess. Prick the centre of the tart shell with a skewer a few times. Line the shell with baking paper and fill with baking beads or uncooked rice. Blind bake the shell for 15 minutes. Remove the paper and beads or rice and bake for a further 15.minutes or until golden. Set aside to cool. Melt the white chocolate in a heatproof bowl in the microwave or over a saucepan of simmering water. Coat the inside of the tart shell with the melted chocolate.

BERRY COMPOTE

• 100ml rosé wine • 150g raspberries, halved • 150g strawberries, quartered • 85ml water • 50ml lemon juice • 80g white (granulated) sugar • 4.5g pectin NH powder ME T H O D Combine the rosé, berries, water and lemon juice in a saucepan. Cook over medium–high heat for 15–20 minutes or until the berries have broken down. Whisk the sugar and pectin together, then whisk it into the berry mixture and bring to the boil. Remove the pan from the heat. Transfer the berry compote to a container and place in the fridge until needed. ROSEWATER JELLY

• 50ml rosewater • 100ml water • 50g white (granulated) sugar • 2g agar

METHOD Combine the rosewater, water, sugar and agar in a saucepan and whisk over high heat until boiling. Transfer the jelly mixture to a small tray or container. Place in the fridge for 10–15 minutes or until set. ASSEMBLY

• 10 strawberries, cut into eighths • 16 raspberries • Dried rose petals, for sprinkling METHOD Transfer the berry compote to a piping bag and pipe it into the tart shell as shown below, leaving a 1cm gap from the top edge. Transfer the ruby crémeux to a piping bag. Pipe a 1cm thick layer of crémeux on top of the berry compote as shown. Place in the fridge to set for 15 minutes. Cut the rosewater jelly into 5mm cubes. Arrange the strawberry pieces and raspberries on top of the ruby crémeux. Scatter spoonfuls of the rosewater jelly cubes on top of the berries and garnish with the dried rose petals.

COBZZA I N G R E D I E N TS SERVES 4

• 1 x 25cm round cob loaf • 250ml (1 cup) tomato pizza sauce • 300g (2 cups) grated mozzarella • 12–15 slices of salami (hot salami totally rocks, just saying) • 3–4 sprigs of basil, leaves picked • 1 tablespoon extra-virgin olive oil simple Italian salad, to serve. METHOD 1. You can cook the cobzza in an air fryer or the oven. If cooking in the oven, preheat it to 180C. 2. Using a bread knife, cut the top off the cob loaf – avoid the temptation to eat it as we need it later. Pull out most of the soft, inner bread from the cob loaf and set it aside, then press down on the hollowed-out base of the loaf to make a firm layer. This will prevent the ingredients from leaking through. 3. Spread half the tomato sauce across the base of the cob loaf, then top with half the mozzarella, half the salami and a few basil leaves. Drizzle half the olive oil over the basil leaves, then repeat the process until you’ve used up all the ingredients (save a few basil leaves for scattering over at the end).

Who doesn’t like an 80s-style cob loaf with a melted cheese fondu? Okay, I’m not really into it either, so I set myself a mission to make this retro classic super cool with a contemporary twist. I was thinking about it while eating pizza, then bang! It hit me. I’ll create a cob-loaf dip with a pizza twist: cobzza! My girls love pulling out the soft, inner bread and squeezing it to create edible bread balls, and when they’re in the mood they even help fill the loaf with their favourite toppings. Make it a fun, interactive meal that everyone can participate in.

4. Pop the reserved lid on top of the loaf. If cooking in the oven, transfer the cob loaf to a baking tray and cook for 20 minutes, removing the lid for the last 5 minutes of cooking to allow the cheese to get all melty and slightly grilled. If using an air fryer, cook at 170C for 10 minutes, removing the lid for the last 3 minutes of cooking. 5. Top with the remaining basil leaves and serve with the reserved pulled-out bread for dipping into the cheesy sauce and a simple Italian salad on the side.

Recipes……… SATAY CHICKEN SKEWERS

I N G R E D I E N TS SERVES 4

• 1 supermarket whole roast chicken • 2 x 250g packets of microwave long-grain white rice • 1 Lebanese cucumber, halved, deseeded and sliced into half moons • 3 spring onions, chopped

SATAY SAUCE • 1 tablespoon red curry paste • 80g smooth peanut butter • 125ml (1/2 cup) coconut cream • 1 tablespoon soy sauce • 1 tablespoon palm sugar, grated

METHOD 1. Soak eight bamboo skewers in a large bowl of cold water for 30 minutes. Drain. 2. To make the satay sauce, grab a small saucepan and add the red curry paste. Cook, stirring, over medium heat for 5 minutes, until it starts to sizzle. Add the rest of the ingredients and keep stirring until the sugar dissolves and the sauce thickens. 3. Cut the chicken into eight pieces (try to separate the breast and leg without shredding the chicken). Gently peel the skin off the chicken (or leave it on if you prefer). 4. We now need to cut the chicken into cubes. Cut each breast into four pieces, then remove the remaining meat from the bones in large chunks and trim into rough cube shapes. Thread the chicken onto the prepared skewers, alternating the breast and leg meat. 5. Microwave the rice according to the packet instructions, then transfer to a serving bowl. Place the cucumber in a small bowl.

LEMON-BAKED FISH WITH BUTTERY MASH

6. Place the chicken skewers on a tray or platter, spoon over the satay sauce and sprinkle with the spring onion to create a masterpiece. Serve with the rice and cucumber.

• 4 x 150–200g skinless firm white fish fillets, such as butterfish • 40g salted butter, melted • 1 teaspoon salt flakes • 1 tablespoon snipped chives • 1 lemon, finely sliced

BUTTER MASH • 1kg red royale potatoes, peeled and chopped into bite-sized pieces • 200g salted butter, chopped, plus extra to serve • 250ml (1 cup) full-cream milk • 1 tablespoon salt flakes

M ET H O D 1. Preheat the oven to 180 C. Line a baking tray with baking paper. 2. To make the buttery mash, bring a large saucepan of salted water to the boil over high heat. Add the potato, reduce the heat to a rapid simmer and cover with the lid to speed up the cooking process. Cook for about 8 minutes, until tender. 3. While your spuds are cooking, brush the fish with the melted butter, sprinkle the salt and chives over the top, then lay the lemon slices, overlapping, on top of the fish. Pop the fish on the prepared tray, then transfer to the oven and cook for 15 minutes or until opaque and just cooked through (the cooking time may vary depending on the thickness of the fish).

4. Drain the potato and return it to the pan, along with the butter. Place over low heat and pour in the milk. Grab a potato masher and start mashing the potato – you’ll need to go hard as we want the butter and milk to dissolve into the spuds. Add the salt and mix through, then taste test to make sure you’re happy with the seasoning. 5. Serving time. I love to simply take the baking dish with the fish over to the table and serve the buttery mash in a large bowl next to it. Don’t forget to add a teaspoon of butter to the top of the mash for an extra touch of buttery delight.
