The hotel is set within 1000 acres of Northumberland moorland and forest lays, and the Edwardian mansion and new contemporary extensions complement each other perfectly. All but seven bedrooms are within the aptly named New Room, and range from Classic to Family rooms as well as suites. The estate also has a choice of luxury lodges available to guests, which are ideal for families or groups and can sleep between four and eight people. . There are three restaurants at the hotel, the main one is inspired by the surrounding area in name and culinary fare, Hadrian’s Brasserie. Duke’s Grill resides in the main building’s former drawing room while The Claret Jug serves light meals and teas during the day and in the evening it transforms into a deluxe bistro, specialising in classic dishes. The Whiskey Snug, which is true to its name in all respects, is the perfect place to finish your glass of wine or sample a fine malt. Matfen Hall is a converted stately home, surrounded by over 300 acres of land, boasting 53 rooms and suites which combine traditional design with contemporary facilities; and the odd four-poster bed! Dining is in The Library and Print Room, which unsurprisingly denotes the artistic traditions of the aristocracy and has two AA Rosettes for its seasonal cuisine. The spa and leisure club at Matfen Hall is an award winning, contemporary addition, that the original proprietors would no doubt approve of thanks to a gym, aerobics studio, a 16-metre UV filtered pool, a hot tub, herbal sauna, crystal steam room, ice fountain, tropical feature shower and salt grotto. Dedicating itself to the pampering element of a country escape, the spa has five treatment suites including a dual room, where therapists use Elemis to deliver therapies including facials, wraps, massages, reflexology and thermo auricular therapy as well as head-to-toe rituals. They also use Orly nail treatments for manicures and pedicures and MAC cosmetics for make-up consultations.

Half an hour from Durham city centre, Seaham Hall is an iconic building in the style of a Georgian country house, dating back to 1791. Today it is a five star hotel, with 22 suites that treasures its rich history and retains its eccentric character alongside contemporary interiors, all the while set against a backdrop of 37 acres of grounds perched on a cliff top. EXCITING EVENTS AT GOSFORTH'S NEW INCLUSIVE ARTS VENUE

G

osforth Civic Theatre is a new art and performance venue, based right in the heart of the town, with a fully licensed café/bar, gallery and community space. The theatre is a social enterprise initiative, managed by and run by Liberdade Community Development Trust. The aim of the Development Trust was to create a truly inclusive arts venue that breaks down misconceptions of learning disability, and demonstrates that learning disabled individuals are able, skilled and valuable members of society. In 2014, Liberdale won a competitive process to take on the community asset, Gosforth Civic Hall. This building enabled Liberdade to increase its impact on the wider community by developing a truly inclusive arts venue, café/bar, gallery, and community facilities. These new social enterprises will be used to provide valuable real world work placements for learning disabled people. The trust hope it will fundamentally change the position and perception of the learning disabled community, from one which is peripheral within community provision and reliant on other providers, to one which puts this community at the heart of social development within the region. In April 2016 they signed a 30 year lease for the building, and over the following months they worked

hard to give the building’s interior a much needed face lift to make it fit for their new venture. The new look venue officially opened in September last year, and already has an exciting roster of theatre and performances, alongside a range of community events from markets to beer festivals. The onsite café is open Monday to Friday 8.30-5.00, and on a Saturday from 10.00-5.00, and boasts a mouthwatering menu, based around fresh local produce, and fair trade sourced beverages. They serve a range of stotties, sourdough toasties, salad bowls and sweet treats, making sure everything is fresh and locally sourced where possible. All of the sandwiches are served on freshly baked bread from Pink Lane Bakery, all of the cheese on offer is from The Northumberland Cheese Company. The selection of meat comes from local butcher Warren Butterworth, and all of their fruit and vegetables coming from local grocer J.R Holland.

The new look venue boasts an exciting roster of theatre and performances, alongside a range of community events from markets to beer festivals. The Union Hand Roasted Coffee is roasted in small batches in their vintage Probat coffee roaster, then immediately packed to keep it tasting as fresh as possible. They also work together with coffee farmers to keep prices fair and improve coffee and livelihood longterm. The house espresso is Bobolink, grown on a small sustainable farm in Brazil and our filter coffee is Cocagi, grown on a cooperative sustainable farm in Rwanda. ince its launch almost two and a half years ago, Pikku, has become an established favourite on Gosforth High Street. RECIPE RECIPE

MINCE & DUMPLINGS A REAL WINTER WARMER By Be Hulbert of Baker Be

Mince and dumplings are a firm favourite in our house. This recipe makes enough for the four of us but we are quite piggy! It’s real comfort food for cold nights. You can substitute the beef mince for veggie mince and can use wholemeal flour instead of white if you want to be healthier. Thank you to my good friend Tracy who gave me her dumplings recipe a few years back. It’s a winner!

INGREDIENTS For the mince: 600 g beef mince 1 onion 1 carrot Handful of frozen peas (or Sweetcorn if you prefer) 600ml beef gravy Salt and pepper to season Olive or coconut oil for frying For the dumplings: 4oz self raising flour 2oz suet (I use vegetable suet) 5 tbsp. water Handful of chopped parsley

Add parsley, herbs or even cheese to your dumplings.

METHOD 1 Preheat the oven to Gas mark 6, 200°C, 400°F. 2 Finely chop the onion and fry gently in the oil in a frying pan. 3 Add the mince and cook until browned. 4 Chop the carrot into small cubes (approx ½cm) and add to the mix. 5 Stir in the gravy – I just use gravy granules to make my gravy. 6 Add a handful of chopped peas. 7 Season to taste. 8 Simmer gently whilst you prepare the dumplings. 9 In a bowl mix the flour, suet, parsley and water together. This should form a dryish dough.

If the mixture isn’t coming together add a splash more water. 10 Roll into balls between your palms. I make 8 dumplings with this mixture. 11 Pour the mince mixture into an oven proof dish and put the dumplings on top of it so half are in the mixture and half are poking out. This way, once cooked, the dumplings are crispy and brown on top and soft underneath. 12 Cook for approximately 20 mins until the dumplings are golden brown and the mince is bubbling.

FIRST CLASS PHYSIO If you have travelled along Gosforth High Street in recent times, you'll have noticed the bold blue and yellow signs advertising a special physiotherapy service – Gosforth Physio & Wellness. This centre of excellence on Ivy Road offers help, assessment and treatment to anyone suffering from a wide range of physical, psychological and wellbeing issues. Its physiotherapy services are second-to-none – but it offers much more than that. Gosforth Physio's founder, Kevin Kennedy, has brought together under one roof a team of highly qualified, expert and empathetic clinicians in fields such as podiatry & chiropody, acupuncture, psychology, sports injury & rehabilitation, pilates, yoga and therapeutic massage. With Gosforth Physio and Wellness about to celebrate its first year in business, I went to see for myself exactly what makes this clinic different. I spoke to Kevin Kennedy about his vision… He told me “When I first qualified as a physiotherapist, I became aware that, although there were many examples of good practice in our profession, complementary services were often fragmented and scattered. This meant that many patients with particular issues had to seek out experts in different locations in a bid to solve their problems. It was difficult for patients – and treatments were, by definition, often piecemeal and sometimes almost contradictory. “I was determined that, when the time was right, I would establish a practice that could deliver the best evidence-based, holistic, physical and psychological services to patients – all in one place. 22

If you can’t have a comfortable conversation with someone who is two metres away from you, turn the

volume down. • Use noise-cancelling headphones. If you don’t wish to turn the volume down, you can buy headphones that block out more external noise, meaning your volume doesn’t need to be so high. • Protect your ears. If you work in a noisy environment such as a building site, pub or workshop, use ear protection equipment such as ear muffs or ear plugs. • Don’t interfere with your ears. Avoid damage to your ears by keeping them clear of cotton buds, cotton wool, tissue (and fingers!). The ears are self-cleaning and shouldn’t need your assistance. RECIPE

FRYING-PAN SPINACH SOUFFLÉ The word soufflé seems to strike fear into the hearts of even competent cooks, but this version is simple and accommodating. All you’re looking for is to get the eggs to rise slightly, then crisp a little on top, like a puffy omelette. You need a smallish frying pan which can go in the oven – 21–23cm in diameter. The two things to get right with any form of soufflé are to whisk your egg whites until you can tip the bowl over your head without them falling out (really!) and to fold them in gently to keep as much air in the mixture as possible.

SERVES 2 INGREDIENTS

300g spinach, washed, leaves stripped from their stalks * 4 eggs * ¼ tsp ground nutmeg * 1 good tsp wholegrain mustard * 75g grated Cheddar * Sunflower or light olive oil, for frying * Salt and pepper

METHOD

* Heat your oven to 210˚C/Gas 6. * Cook the spinach in a pan of boiling water for 1–2 minutes, until wilted. Drain and refresh in a bowl of cold water, then drain again. Wring it out with your hands to remove excess water, then roughly chop the leaves. * Separate the egg whites and yolks into 2 bowls.

Whisk the egg whites until they form firm but soft peaks – an electric whisk makes life easier. Lightly beat the egg yolks together. * Add the spinach to the yolks, then add the nutmeg, mustard and three quarters of the cheese. Season with salt and pepper. * Take a spoonful of the egg white and stir it into the egg yolk mixture, then very gently fold in the rest. * Pour 1 tablespoon of oil into a 21–23cm frying pan. Wipe the base and sides with kitchen paper to coat it. Heat the oil gently, then tip in the egg mix and tip the pan from side to side to cover it. * Sprinkle over the remaining cheese. Transfer the pan to the oven for 10 minutes, until the mixture has risen and is fluffy and slightly golden from the melted cheese on top. * Cut in half or wedges to serve.

HOME FROM HOME AT EOTHEN

In 2016 Eothen Homes, www.eothenhomes.org.uk, opened a brand new, purpose-built residential home for people living with dementia. Here Ron Ward, whose wife Margaret is a resident there, tells us why the specialist Wallsend development is second to none. Tell us a little about you and Margaret and why you chose Eothen Homes for her care. Around seven years ago there was the first evidence Margaret was suffering from Alzheimer’s. Her formal diagnosis came in 2012 and after this I became her carer for several years. In May 2015 Margaret needed a hospital stay. Following this it was clear she required specialist care so I spent time and energy looking for a suitable home. Unfortunately the home she went into was unable to cope with her various needs. Her lifestyle was very restrictive and her care inconsistent so much so that I used to take her out daily, sometimes all day to keep Margaret active and mentally stimulated. Thankfully at this time I was introduced to Judy Mattison, the manager at Eothen’s Wallsend development, who explained to me about its specialist care facility with its ‘butterfly approach’. This means the care workers respond to residents’ needs rather than follow a structured regime and it’s much more like living at home, just with 24 hour support and company as needed. Margaret moved in on its opening day and since then, we’ve never looked back. We have been incredibly pleased with her care. 40

What makes the actual Wallsend development different in terms of design? Eothen’s Wallsend site is a lovely place to live and spend time. The place has had a huge amount of thought put into it. Margaret is in one of four spacious households each with their own shared kitchen, dining and lounge area, which gives it a warm community feel. I spend a lot of time there and can easily go for a day and sit myself down in the Atrium with a book. In fact, I often volunteer time in the garden, helping to tend to the plants. The main thing is the amount of freedom that’s afforded to residents. Margaret was a PE teacher and needs mental and physical stimulation. From her room she can access the garden and walk round the expansive grounds in total security. She can also enjoy the Atrium when the weather’s poor and the various reminiscence areas and activities that take place. We also like the fact there is a Chapel on site so if Margaret or I wish to attend a service, we can do without the additional preparation that comes with taking her for a trip out, although we still go out and about, often to St Mary’s Lighthouse, very regularly.

What kind of care is provided? It’s possible to see what kind of care is provided from the warm welcome you get by staff on arrival. Margaret is very content and it’s not just down to the layout and atmosphere but the attention and time she gets from the team. There’s a real family feel and it’s very personalised so everyone gets exactly what they need. I know that if Margaret was ever sat on her own, someone would be across straight away to spend time with her, if that’s what she wanted. It’s a very special place and I only wish other homes would mirror their approach to care giving. What would you say to others about Eothen Homes Wallsend? When I was researching residential care homes there were more than 50 on the North Tyneside website and I must have looked at most of them. I didn’t come across one designed or run like this by Eothen. Eothen Homes Wallsend is a completely unique development that is well worth a visit in order to understand what it has to offer, not to mention the actual scale and quality of the home. The Undertones are back after reforming in 1999 with a new frontman

T

he Undertones have been announced as the first band to play next year’s Northumberland Live series of festivals, including the hugely successful Blyth event. Timeless hits such as ‘Here Comes the Summer’, ‘Jimmy Jimmy’ and “My Perfect Cousin” will be heard across South Beach at Blyth on 24th June 2017 as well as the ground-breaking ‘Teenage Kicks’ which was famously played twice in a row on primetime BBC Radio 1 by DJ John Peel. The Undertones originally released four studio albums and thirteen singles before breaking up in 1983. Now they are back after reforming in 1999 with a new frontman, the flamboyant Paul McLoone who took over from original singer Feargal Sharkey. Recently the band has played at sell out venues and festivals all over Europe but it will be their first ever visit to Blyth. The festival’s tradition of staging bands with well known sing a long songs follows on from last year’s successful appearance of Scouting For Girls at Northumberland Live where approximately 15,000 people turned out to watch the band and enjoy all of the other activities on offer. Chair of Blyth Town Council Events Committee, Councillor Kath Nisbet, is already looking forward to the festival. “Northumberland Live is all about bringing the very best international acts to South East Northumberland; and at the same time giving local performers a chance to star alongside these chart favourites. I’m delighted that this festival helps to put Blyth on the cultural map and encourages tourism and

T

raditionally heritage centres were not built to listen, however the Old Low Light Heritage Centre on North Shields Fish Quay is aiming to address this with its 2017 programme of events. Honestly, I wonder how many of you reading this feel a strong sense of belonging in your local museum or heritage centre, let along one of the big nationals. How many of you can say that you feel that your voices and sense of place are connected to the objects that are on display? In the words of the America’s great arts leaders ‘Heritage reminds us that we belong, “voice” offers the promise of what we can become. An individual life that exhibits a balance between heritage and voice can be thought of as rich and empowered.’ (Eric Booth At the Old Low Light, we believe in the power of our objects tell these stories, and these stories to act as kind of talismans that get handed down through the generations. Organisations like the Old Low Light are guardians of these stories helping us all to understand who we are and our connections to our

wider global family. Without doubt there is little doubt that stories can transform us. Compelling storylines in soap operas can both represent and reflect societies’ values which can in turn help break down barriers and prejudice without the need for activism and policy. This year we are inviting people to come and help make things happen as we dive into our fishing waters to create this summer’s hero participatory exhibition; ‘It Started With A Fish … … the origins of North Shields.’ We want our communities to help us develop an exhibition which will tell stories that will open up debate as well as engage. For over a thousand years hundreds of families have made their living from fishing and its associated industries. We are asking people to be part of telling the story of this unique heritage and distinctive lifestyle. Themes that we are asking our communities to explore are; methods of fishing, role of women in the industry as well as the social and economic conditions that saw North Shields become England’s largest

prawn port. From the early 13th century the growth and prosperity of North Shields depended upon fishing and the industries which supported it. From the ship’s nets and its decks an entire economy grew and fortunes were made thanks to this resource. For every one man at sea, there would have been five on land supporting the industry, and we would love people to bring in their both their objects and any memories that run alongside them. ‘It Started With A Fish’ will prompt us to ask some bigger questions, such as how can the sea’s resources continue to feed a world’s growing population? What can sustainable and responsible fishing be? We want to open up the exhibition to allow as many people as possible to have their say; from fishermen and trawler owners to organisations committed to protecting the environment and biodiversity. What memories of the fishing industry do you have? How did the industry bring the community together? Which of your memories belong to be shared with the Old Low Light’s visitors?
