C CANADA has its winter from december to february. while there is plenty of cold wind, ice, and snow, the people of canada have learned to adapt. as a result, the winter months are full of wintertime activities and fun for those who head north to enjoy them. from ice bars and hotels to dog sledding and skiing, there is something for everyone who wants to embrace the glory of winter.

easonal vacations are on everyone's minds right now, but where to go? Canada! During the warm months, the countries top spots are overwhelmed with tourists. However, colder temperatures bring with them better travel deals and hotel and restaurant availability. It's the perfect time, right now, to make plans to visit one of North America's most beautiful countries. Canada hosts fantastic festivals and cultural events throughout the year, but major hot spot

cities like Toronto, Montreal, Ottowa, and Quebec City are still vibrant, despite the frigid temperatures. Fortunately, there is no need to limit yourself to city destinations. Canada is full of outdoor adventures yearround, but especially during the winter months. Strap on some skis or hire a dog sled tour guide. Skate the day away or take a sleigh ride... or just relax by the fire at one of the numerous ski lodges. Canada is waiting for you this winter. Just be sure to bring your gloves.

BRING THE HEAT...

Each individual sheet is heated over an intense pinewood fire to make it malleable.

BRUT STRENGTH...

The sheet is then pounded flat by hand using incredible human force, which ensures the malleability.

Copper sheets are used for the skins of each piece. This begins a complicated and laborious process of turning theses sheets into a finished product attached to individual skeletons.

The clean and perfected sheet is then passed to an artisan, who uses a specially made hammer to embellish the metal with a specific design or pattern., Hundreds of strikes to the metal are required to create each precise and unique design.

THE FINAL TOUCHES...

It is reheated and pounded a second time. The flattened sheet is washed, inspected for defects, marked, and repaired.

Once the design is completed, the sheet is "fitted" to the shape of the structure and adjusted to ensure alignment. After each section of the skin is applied, welded to the skeleton, and edges soldered together, each edge is polished and stained to ensure the highest quality appearance possible.

AMARETTO HOT CHOCOLATE Begin with 8 ounces of our basic hot chocolate recipe. Before serving, add one ounce of amaretto liqueur. Top with meringues, crumbled amaretto cookies, and chocolate.

The ingredients: • 4 cups whole milk • 10 ounces dark chocolate, chopped • 6 tablespoons brown sugar The instructions: 1.

Heat milk in a medium saucepan over medium-low heat. When it begins to simmer, remove it from heat.

2. Add chocolate and whisk until all of the chocolate is melted. 3. Return to medium heat and simmer for 5-6 minutes. Whisk occasionally until it reaches the desired consistency. 4. Turn off heat and add brown sugar. Whisk to fully incorporate. 5. Garnish as desired and serve immediately. NOTES:

KAHLUA HOT CHOCOLATE Add one ounce of Kahlua to 8 ounces of our basic hot chocolate recipe. Top with whipped cream. Dust with espresso powder. Add chocolate covered espresso beans and chocolate cookie sticks.

Heavy cream is not necessary. The longer it simmers, the thicker it will get. Use good quality chocolate. Choose bittersweet to very dark and adjust the brown sugar level to your liking.

*Make smaller marshmallow disks by rolling whole marshmallows under a sharp knife on a cutting board.

GETTING STARTED

Fill a medium saucepan with an inch or two of water. Bring the water to a simmer and reduce the heat as low as you can while keeping the water at a simmer. Melt butter and set aside. Place egg yolks in heat-proof bowl over simmering water.

FINISHING THE SAUCE

Start whisking the eggs and then whisk in the vinegar. Keep the heat low to prevent the egg yolks from scrambling. Whisk until smooth, pale, and creamy.

Keep whisking while slowly drizzling in the melted butter. Continue to whisk until all of the butter has been incorporated. Whisk in seasoning to taste and add squeezes of fresh lemon juice until you reach the desired consistency.

Hollandaise is a soft and creamy sauce that is often found on holiday brunch tables. While there are premade versions available, a homemade version will always be superior. The process is easier than you might imagine and the results are superb. While we often associate Hollandaise sauce with eggs benedict, it has many other applications. Try it with vegetables such as broccoli, asparagus, or spinach. It also pairs very nicely with seafood such as salmon and other fish or lobster, scallops or crab. Consider a fresh made Hollandaise sauce for dinner with appetizers like the one on the next page or perhaps an entree of roasted pork tenderloin.

BASIC HOLLANDAISE SAUCE serves 4

The ingredients: • • • • •

10 tablespoons unsalted butter 2 large egg yolks ½ teaspoon white vinegar juice of one lemon pinch of cayenne pepper

salt and pepper to taste

NOTES: A clean bowl and a wire whisk are the keys to success. It is critical that the water be on heat as low as possible, but still simmering. If the heat is too high, the eggs will cook. You must continue to whisk, especially when adding the butter. This will keep the sauce smooth. The sauce should be served right away or kept warm. To keep the sauce warm fill a thermos with hot water and then pour the water out. Fill the thermos with the sauce and seal until ready to use.

IF YOU CAN'T FIND POLENTA CAKES, MAKE YOUR OWN BY SPREADING 4 CUPS OF COOKED POLENTA IN A 9 X 13 BAKING PAN LINED WITH PLASTIC WRAP. REFRIGERATE UNTIL FIRM. CUT OUT CIRCLES WITH A BISCUIT CUTTER OR LARGE COOKIE CUTTER.

HOLLANDAISE SAUCE IS GOOD FOR MORE THAN JUST EGGS BENEDICT.

POLENTA CAKES WITH SPINACH AND SMOKED SALMON The ingredients: •

8 polenta cakes

¼ cup vegetable oil

1 cup chopped spinach

salt and pepper to taste

thinly sliced smoked salmon

1 cup marinated mushrooms

fresh chives

4 teaspoons caviar

1 cup Hollandaise sauce

The instructions: 1.

Heat oil in a skillet over medium-high heat. Cook polenta cakes in oil on both sides until golden brown on edges. Remove from heat and drain on paper towels.

Heat spinach in saucepan or microwave. Squeeze and drain spinach to remove excess liquid. Season to taste with salt and pepper.

3.

Assemble plate with polenta cake on the bottom. Top it with ⅛ cup of spinach, a 4 inch piece of salmon, a couple of mushrooms, and chives. Top with ½ teaspoon of caviar.

Drizzle Hollandaise sauce over the top just before serving. Add a little more sauce to the plate with a few mushrooms.

Set the stage with a great linen tablecloth. Start with plates, but don't go overboard. A charger is absolutely NOT necessary. Add the cutlery, but only what you will actually use. Most people do not know what to do with five different knives. Choose just one size wine glass and one water glass. Use good, linen napkins. No need to press to perfection. Simply fold them and place them on the plate or under the knife/spoon. Add cork trivets for hot

dishes to protect your tablecloth. Add flowers or greenery in short vases. The food and company should be the stars of the evening. Lighting should be dimmed and candles should be low. Place a couple sets of salt and pepper pots or grinders around the table. A few small bread baskets and butter crocks is a good idea, too. Keep wine bottles on a small tray to avoid stains on your tablecloth.

what is biophilic design? Biophilia is the hypothesis that the presence of natural, outdoor elements like plant life provides measurable benefits to our mental and physical well being. Even the soil works to nourish us through “outdoorphins”, which release cytokines that act as natural antidepressants. The practice of biophilic design is the use of direct and indirect natural elements to connect our indoor spaces to this innate need for the natural world, and it is becoming a central focus of residential and commercial design projects. The use of biophilic design has grown significantly in recent years as our modern lifestyles increasingly separate us from our outdoor roots.
