NOTE FROM THE EDITOR... As someone who travels 6-7 months out of the year, I know how important it is for me to slow down a little bit during the summer. Perhaps you feel the same way. For me, it's important every summer to create the space to simply breathe, bask in the great outdoors (my passion), and spend time with my friends and family, cooking for them with the freshest seasonal summer ingredients. That's also why in this issue of Seasonal Living Magazine, I wanted to take you to the Scandinavian countries, because their culture and design aesthetic embodies a cleaner, modern, uncluttered, simplified way of living that resonates with me right now. Inside you will find recipe ideas for Scandinavia's famous *open sandwiches* (so super easy but these gourmet creations are truly works of gourmet art), get tips on hillside picnic entertaining in the flower-filled meadows, learn where to stay, where to eat and what to see while in Norway, Denmark, Finland, Sweden, and Iceland and be inspired by the Scandinavian influenced design work of Austin based interior designer, Christine Turnkett of Breathe Design. Our guest contributor this issue, kitchen designer and photographer, Susan Serra, CKD, the owner of Scandinavian Made Rugs, will share with you the history of Scandinavian design. As always, you will be treated to images of the clean, modern Scandinavian inspired designs we have for your indoor/outdoor living areas here at Seasonal Living.

With Iceland and the four close neighbors of Norway, Sweden, Denmark, and Finland, this region comes together to offer a wide variety of vacation options from exploring wilderness to submerging yourself in iconic design and architecture. There is a relaxed way of life in Scandinavia that is evident everywhere you go. The Danish word Hygge (pronounced hoo-ga) is more than just a trend. In Denmark, this is a way of life that encompasses a feeling of contentment, of being in the moment, of slowing down, and comfort and coziness. The vibe is easy and focused on well-being. Indeed, the people are friendly and travel to Scandinavia is generally safe for solo travelers as well as families.

SMOKED SALMON Start by spreading a thin layer of butter on the bread. Use very thinly sliced smoked salmon to create a layer, bunching them together with your fingers. Top with thinly sliced radishes, fresh dill, beet sprouts and horseradish sauce. Finally, top with crispy onion rings.
ROAST BEEF Top the bread with a layer of mayonnaise. Bunch up thinly sliced roast beef and place several slices on top of the mayonnaise. Randomly sprinkle a generous amount of chopped dill pickles (or cornichons), sliced cherry tomatoes, and pickled beets. Top with leek sprouts.
COOKED SHRIMP Spread a generous layer of mayonnaise (or remoulade). Add a layer of sliced boiled eggs (5-6 slices), overlapping them, and then a layer of overlapping boiled shrimp. top with lemon zest and chopped chives. Season with a bit of salt and pepper to taste.

THE KEY TO SUCCESS WITH OPEN SANDWICHES STARTS WITH THE BASE. THIS IS NOT YOUR ORDINARY DARK BREAD. THE TRADITIONAL BREAD IS CALLED RUGBROD AND MAY NOT BE READILY AVAILABLE AT YOUR LOCAL GROCER. IT IS MUCH MORE HEARTY AND DENSE AND AN EXCELLENT FOIL FOR HOLDING PILES OF YOUR FAVORITE TOPPINGS.

PACK LIGHT - Plan carefully for just what you will need. Nobody wants to carry a heavy basket. Speaking of baskets, there are many varieties that take the strain out of carrying them. Look for one that can be carried like a backpack or even one with wheels (see page 9).

STAY DRY - Avoid unwanted moisture from the ground with a lined picnic blanket. We like the ones that roll up and have a carrying strap (see page 9).

NO ICE - Steer clear of heavy coolers and ice. Opt, instead, for insulated bags. Your food will stay fresh, they are much lighter, and more space efficient.
•
BRING MUSIC - Create a playlist that is long enough to last throughout the picnic. Bring along a portable speaker for a little background music to set the mood.
•
MENU MATTERS - Choose easy to eat foods that look and taste good at room temperature or slightly chilled.

Generally speaking, picnics are a wonderful way to gather together outdoors. However, there are pitfalls to avoid if you want the actual event to live up to what you’ve imagined. Small planning mistakes such as packing too much or inadequately, pest control, and soggy food can put a damper on your dinner. Here are a few tips to make sure your picnic is a summer success.

DESIGNER SPOTLIGHT Christine Turknett Austin, Texas-based Christine Turknett, the principal of BREATHE DESIGN, has been attracted to the clean, modern, graphic simplicity of Scandinavian design ever since she first visited IKEA as a young teen. She got her start in interior design when, after graduating with her Ph.D. in English, she and her architect husband built and furnished a home in the trendy new urban Austin neighborhood of Mueller. Upon its completion, neighbors started asking her for her assistance in styling and designing their own homes and her business was born.

Christine brings her research training and intellectual rigor to bear on each of the homes she designs as well as a well-honed eye for how positive and negative space can be used to create dimension and life in a home. Christine's clients often remark how much better they feel in their homes after her work for them is completed. Her use of natural light, her thoughtful blending of the indoor and outdoor environments, her focus on using only quality materials and craftsmanship, and her unique ability to contextualize the graphic relationships of one item to another all add to this feeling of well-being her clients experience.

Once upon a time, in the kingdom of Sweden, His Majesty King Gustav III visited his royal comrade, Louis XVI at the Palace of Versailles in the latter 1700s. Upon his return to Sweden, King Gustav dearly wanted Stockholm to be recognized as the Paris of the north. His Majesty’s interest in developing a new design aesthetic evolved into elements of the Gustavian style that is still so loved today. A simpler interpretation of French Neoclassicism with light colors rather than the rich, deep colors of Versailles, defined the King’s new design movement. The incorporation of light colors with their reflective properties, introduced by King Gustav, was (and still is) used as a response to the long Swedish winters. Gilded surfaces and mirrors were used to catch the light and this design aesthetic eventually spread to the upper classes. The more middle class and rustic interpretations of Gustavian included even simpler designs and motifs accompanied by light and softly painted blues, grays and greens that we cannot get enough of even today. Later, at the end of the 19th century, the famous Swedish painter Carl Larsson brought the Swedish

home to life with his many paintings depicting warm and cozy interior spaces marked by a casual elegance. Elements of nature and his use of stripes and checks grabbed hearts and minds. Blues in all their shades and soft yellows, both colors of the Swedish flag, were common in Swedish design of this period. Other soft colors such as greens, soft corals and of course, white, created the dreamy, pastel look of Swedish interiors we know and love. Larsson and his wife were strongly influenced by the Arts and Crafts movement. Both folk art and formal furnishings were mixed into the design, creating a lived-in, eclectic look. It’s what we now think of when we think of “Country Swedish”. Handwoven rugs with wonderful color palettes were often seen in Larsson’s paintings, too. Handweaving rugs on a wooden loom in the home became a popular, cultural craft. These vintage rugs are a lovely accessory, highly collectible, and widely used in today’s interiors. Fast forward a couple of decades to the start of the machine age and Bauhaus beginnings, which transformed Scandinavian interior design once more, creating an entirely new design vernacular. While all Nordic countries took part in this new

SEASONAL design movement, Denmark is most well known for the contributions of the country’s incredibly talented architects and designers. The Midcentury design movement, as a result of manufacturing efficiencies, democratized design, allowing the middle class access to original pieces designed by future icons. Aesthetics and function were equal partners in Midcentury design. Production quality was equally paramount. The priority of function without the elimination of beauty defined this philosophy. The human form and how it could best interact with an object was and still is a leading factor in Midcentury design. The most notable period of Scandinavian Midcentury Design, also called the Golden Age, ranges from the 1930s to 1970s. Perhaps the 1940s to the 1960s brought forth the most innovation in design. Sweden was known primarily for ceramics, Finland for its glass and Danish artisans for wood furniture. Although less noticed during that time, Norway made important design contributions to this period as well. The fabulous Wegner chair used in the debate in 1960 between JFK and Nixon, the quiet elegance of Kjaerholm’s daybed, woven chairs, lighting by Poul Henningsen and Le Klint are just a very few examples of designs by Danish masters. In recent years, as a renewed surge of interest in the brilliance of Mid-Century design was awakened, old designs, including many never put into production, were brought back into the marketplace and received by an enthusiastic audience. The Scandinavian Midcentury Modern aesthetic speaks to how we live today and fits like a glove into many of today's well edited interiors. Today, as we endure an ever busier more frenetic world, the calmness of Scandinavian style is speaking to us more than ever before. But, what's happening in the Scandinavian design world in just the past few years is another movement, where Scandinavian designers are creating new interpretations of their own iconic Mid-Century designs, and designers are readily adapting by incorporating them into interiors in fresh and exciting new ways. Start with a spread or pate of some kind. This will add flavor and create a barrier between any moist toppings and the bread and prevent the bread from becoming soggy

GO GREEN - You don’t have to skimp on style to get something disposable. Look for disposable bamboo or palm leaf plates that are compostable (see page 9).
Pickled herring is the primary choice for open sandwiches. While this may not be readily accessible to many, other fish, such as smoked salmon, can be substituted.

EASY CLEANUP - Bring along a few zipper lock storage bags and some moist kitchen wipes to tidy up your mess in a flash.
•
UNINVITED GUESTS - Use citronella candles or a smokefree, cordless mosquito repeller to keep mosquitos away (see page 9).
•
STAY ENTERTAINED - Keep a couple of travel games and a frisbee on hand. They could be just the thing you need if things start to get dull.
•
MEMORIALIZE THE FUN - Get an instant camera to snap photos of the fun to share with your guests (see page 9).
There are a few open sandwiches that can be served on white bread, but generally they are built on dark rye bread.

Any proteins, such as shrimp, beef, chicken, or bacon, can be added, but seldom two different proteins on one sandwich. • • •
Consider other combinations like: pate, pickles, mushrooms, and bacon meatballs with red cabbage ham and asparagus
Choose vegetables for color and texture such as beets, chives, sprouts, greens, and red onion. Open sandwiches are generally not eaten by hand. This is a plate and fork situation. Many spreads are used (butter, mayo, mustard, etc.) but ketchup in not one of them. The sandwiches are meant to be open so you can stack them high and highlight the beauty of the ingredients. Do not add a top slice.
Finn Østergaard, a furniture architect, was born in 1946. His talents are diverse ranging from interior design work on Danish ships, textile design, carpet development, and lamps. In late 2012, Østergaard won gold in China for best design and innovation, and silver in 2013 at the world's largest fair in China. CIFF. Approximately 33 years ago he opened his own chair shop, which was the first specialty store in Scandinavia with only chairs.
