POTLUCK PERFECTION

Be a potluck pro. Get our tips for how to do it right and the most popular dishes to make.

Like many of you, I was finally able to get out and travel again over this past summer. I’ve been to the Pacific Northwest, to Canada and to Europe. It has been wonderful to be able to see my family and friends again. I hope most of you reading this have also been able to see your own family and friends again, too. With Fall here now, a season turns and once again I’m looking forward to being able to travel even more to see many of Seasonal Living’s customers at the upcoming fall tradeshows – Design Edge Boston this month, High Point Market in October and Boutique Design New York in November. I also want to personally say thank you to those of you who have supported and purchased items from our new 42 piece indoor/outdoor Provenance Signature Collection by Laura Muller. I appreciate it and invite you to see more from our new collection inside the pages of this issue. Inside this issue you’ll also find the work of 3 interior designers, Chicago’s Amy Kartheiser, Aspen, CO based Robyn Scott Interiors [ it’s her work on the cover ], and Sedona, AZ based Stephanie Larsen. Over the past year, I’ve been asked several times how to submit for publication in our magazine. First, you don’t have to have used our products or be a customer to be featured. In addition, no one pays to be featured. Being featured in Seasonal Living Magazine is a genuine editorial opportunity. If you think you have a project that fits the modern indoor/ outdoor aesthetic of the magazine, please submit images and a brief description of the project and what makes it unique to editor@seasonalliving.com.

CLEVER KITCHEN

Chicago designer Amy Kartheiser artfully reimagines a kitchen with a set of unique problems to solve.

Whether or not my team and I think it’s right for one of our 4 seasonal issues per year, please know we will get back to you immediately with a “Yes”or “No” so you can submit it quickly to other publications if we’re not able to use it. As always, thank you for reading Seasonal Living Magazine. We appreciate it and invite you to send your feedback at any time to editor@seasonalliving.com. Gary Pettitt

TAKE ADVANTAGE OF SEASONAL PUMPKIN OFFERINGS WITH THIS DELICIOUS SOUP.

VARIATIONS

This recipe has an average amount of curry powder. If you like stronger curry flavor, you might want a bit more. Start with the recipe quantity and taste to make any adjustments after you have added the pumpkin and milk. The mushrooms are an excellent addition to this soup. They add texture and a bit of complexity to the flavor. However, they are not necessary for the soup to be a grand success. If you prefer, the sour cream can be substituted with nonflavored yogurt. For a little more protein and no fat, opt for Greek yogurt. Some squash seeds are rich in dark color. They add a nice visual to the dish, but these could certainly be replaced with toasted pumpkin seeds, sunflower seeds, or another of your choice. Like a little extra heat? Consider adding red pepper flakes to the soup when you add the curry and ginger.

PUMPKIN SOUP IS GOOD. PUMPKIN SOUP WITH WARM, SOUL SATISFYING SPICES IS BETTER. THIS CREAMY PUMPKIN SOUP RECIPE TAKES A SOLID PUMPKIN SOUP BASE AND ADDS JUST THE RIGHT AMOUNT OF CURRY AND GINGER TO TAKE IT TO A WHOLE NEW LEVEL. SERVED IN A SMALL, ROASTED PUMPKIN, THIS DISH WILL 'WOW' AND WARM YOUR GUESTS.

CURRY PUMPKIN SOUP serves 4-6

The ingredients: • 1/ 2 pound fresh mushrooms, sliced • 3/4 cup chopped onion • 1 clove garlic • 2 tablespoons butter • 2 tablespoons all-purpose flour • 11/ 2 teaspoon curry powder • 1 teaspoon fresh ginger • 3 cups vegetable broth • 1 can (15 ounces) pumpkin purée • 1 can (12 ounces) evaporated milk • 1/ 2 teaspoon salt • 1/4 teaspoon pepper • finely chopped chives, pumpkin or squash seeds, and sour cream for garnish • small pumpkins for serving The instructions: 1. To prepare the pumpkins, pre-heat the oven to 350˚F. Cut off the top third of the pumpkins with a serrated knife. Scrape out the insides with a spoon. 2. Brush the insides and outsides with olive oil. Sprinkle each with salt. Bake on a baking sheet for 20-30 minutes, or until fork tender. For a little extra color and carmelization, place the pumpkins under the broiler for just a few minutes. Set aside. 3. In a large skillet saute the mushrooms on medium heat in 1 tablespoon of butter until tender. Remove the mushrooms and add onions and the other tablespoon of butter. Salt the onions lightly and allow them to cook, stirring occasionally, until tender. Add the garlic and cook for one minute. Stir in the flour, curry, and ginger and mix until well blended. Add the vegetable stock and bring to a boil. Cook for 2-3 minutes or until thickened.

FALL FRUIT GALETTE WITH BOURBON CARAMEL SAUCE

FALL FRUIT GALETTE

serves 10-12

FALL FRUIT GALETTE The ingredients:

• 1 pie crust, prepared or homemade (recipe follows) • 1/ 2 cup mascarpone • 2 apples • 2 pears • 3 figs • 2 tablespoons lemon juice • 1/3 cup light brown sugar • 2 tablespoons cornstarch • 11/ 2 teaspoons ground cinnamon • 1 teaspoon fennel seed, crushed • Pinch of salt • 1 egg whisked • demerera or raw sugar for finishing crust • chopped walnuts • bourbon caramel sauce (recipe follows)

COOK'S NOTES: A store bought crust will work, but our basic pie crust recipe is tried and true. Give it a shot and be rewarded with glorious light and flaky pastry. A few things to remember... The temperature matters. Use frozen butter cubes and very cold water. Allow the crust to warm a bit before trying to roll it out. Be sure to place prepared dough back in the refrigerator for at least one hour before baking. Do not allow it to come to room temperature before baking. The very cold, flour-coated butter hitting a hot oven is what delivers the coveted flaky crust.

The instructions:

We are very used to seeing cinnamon and nutmeg together... especially in fall dishes. The crushed fennel seeds add a unique flavor to this galette.

Sam Henderson

You might want to consider making extra bourbon caramel sauce. It requires close attention, but it is ridiculously delicious and would be useful for many other desserts.

1. Roll out pie crust dough to about 13 inches in diameter. Spread mascarpone evenly to create a circle in the center about 10 inches in diameter. 2. Place cornstarch, cinnamon, fennel seed, sugar, and salt in a small bowl. Mix well. 3. Cut the apples and pears in half and use a melon baller to remove the cores. Slice the halves vertically into 1/4 inch slices. Dip each sliced half in lemon juice, keeping the slices in order. Dip the slices in the spice mixture, getting a little between each of the slices. Place the sliced halves on the dough starting in the middle. Alternate the direction of each half, working toward the edges of the mascarpone. Fill any gaps near the edge with remaining slices of fruit. 4. Cut the figs into quarters and place them in any of the dips between the fruit halves. 5. Bring the outside edge of the crust over the fruit, folding the crust every three inches. Using a pastry brush, coat the crust with the

beaten egg. Sprinkle raw sugar on the crust. Refrigerate the unbaked galette for at least one hour before baking. 6. When you are ready to bake, preheat oven to 400˚F. Take the galette from the refrigerator and immediately to the oven. Bake for 25-30 minutes. The crust should be golden brown and the fruit should be tender when poked with the tip of a knife. 7. Remove from the oven and sprinkle with chopped walnuts. Cool before serving to allow liquids to fully set. 8. Serve with bourbon caramel sauce and vanilla ice cream, if desired.

BOURBON CARAMEL SAUCE The ingredients: • 1 cup sugar • 1/4 cup water • 1/ 2 cup heavy whipping cream • 1 tablespoon bourbon • pinch of salt

The instructions:

1. Put sugar and water in a medium saucepan over medium-high heat. Stir gently in the beginning just to dissolve sugar. Continue cooking until syrup becomes amber in color. Use a rubber spatula occasionally to keep the sides of the pan clean and prevent the sugar from crystallizing. NOTE: This part requires close attention. Sugar goes very quickly from amber to burnt. 2. When the sugar syrup is ready, remove it from the heat and slowly add the cream while whisking. When it is mixed completely, add the bourbon and salt and whisk again. Let the caramel sauce cool before serving.

BASIC PIE CRUST The ingredients:

• 2½ cups all purpose flour + extra for rolling • 1 cup unsalted butter (2 sticks) • 1 teaspoon sugar • 1 teaspoon salt • 6-8 tablespoons very cold water

HOW TO BE A POTLUCK PRO THE CONCEPT OF POTLUCK DINNERS HAS BEEN AROUND FOR A VERY LONG TIME., AND FOR GOOD REASON. IT'S A GREAT WAY TO GATHER WITH FRIENDS AND SHARE A MEAL WITH A VARIETY OF FLAVORS. BEST OF ALL, YOU DON'T HAVE TO DO ALL OF THE COOKING. HOWEVER, THERE IS STILL SOME PLANNING INVOLVED TO PULL OFF A SUCCESSFUL EVENT.

Organizing a potluck dinner takes a bit of work, but you'll only be on the hook for hosting and clean up. With a few tips, you will be on your way to a flavorful and fun evening. Here are our top ten tips for a successful potluck. HOST'S CHOICE - you choose the courses and allow guests to choose from those available. For example, you designate 3 appetizers, 3 main dishes, 3 desserts, 3 drinks, etc.. This way, you won't end up with 6 trays of brownies. NO SOUP FOR YOU - don't allow soup or anything that must be served in a bowl. Stick to plates for easy clean up. BYOS - ask your guests to bring their own serving utensils or anything necessary to serve their dish. You don't want to be responsible for making sure you have everything necessary... plus, you're doing the dishes. NO WAY, CRUDITÉ - nobody likes dried up carrots or wimpy celery sticks. Avoid the inevitable supermarket tray by asking your vegetable-loving friends to bring a salad or something more inventive. PRE-PARTY PREP - encourage your friends to fully prepare their dishes before arriving. A quick reheat in the oven is OK, but you don't want 8 people in the kitchen trying to complete their dishes at the same time. CHECK YOUR STOCK - make sure you have enough plates, cups, napkins, and cutlery. WHAT'S IN THIS, ANYWAY? - these days people are more concerned than ever with ingredients, sometimes for very good (health) reasons. Help your friends by having note cards handy so they can name their dish and list main (and/or problematic) ingredients. TAKE-OUT - purchase enough deli-type containers to allow your guests to take home leftovers. This will be nice for them, and reduce your clean up efforts. NO DISH LEFT BEHIND - have simple masking tape and a pen on hand to label serving dishes so everyone leaves with what they brought... or so you can return it later, if necessary. SAFETY FIRST - follow simple food safety protocols. Keep warm foods at 135˚ in a slow cooker or warmer. Other perishable foods should not be at room temperature (inside) for more than 2 hours. If your potluck is outdoors, keep foods covered to avoid germ-spreading insects. Refrigerate leftovers immediately.

A AMY KARTHEISER HAS TURNED A PROBLEM INTO A BEAUTIFUL, WELL-DESIGNED SOLUTION IN THIS CHIGAGO HOME. THE CHOICE OF NATURAL MATERIALS CREATES A SPACE THAT IS WARM AND INVITING, YET STILL DECIDEDLY MODERN. WE SPOKE WITH AMY TO LEARN MORE ABOUT THIS IMPECCABLE KITCHEN PROJECT.

The clients were referred to us by a previous client, which is always exciting for us. Based in Chicago's Lakeview neighborhood, the husband and wife wanted to design a kitchen that solved a unique set of problems: the husband was tall and always hitting his head on the previous stove hood, and they were lacking valuable seating for their family. To tackle these design challenges, we removed the stove (and hood) from the island, and added additional seating around it, making the space perfect for shared family meals and after school homework. In addition to these reconfigurations, a complete kitchen update followed suit.

SEASONAL design WHAT WAS YOUR CLIENT'S MOST UNIQUE REQUEST? They needed to add a workstation to the existing, limited space. To create this experience within the kitchen, we put a simple desk in front of the glass block windows. Not only does the desk feel tucked away, it reaps the benefits of this unique design element, soaking up the light that pours in from top to bottom. WHAT PROBLEMS DID YOU ENCOUNTER AND HOW DID YOU SOLVE THEM? Aside from the height-impeding challenges, functionality and storage were also key here, as in any space. To utilize the updated stove hood and optimize storage, we installed a walnut niche behind a sliding porcelain door, which lives underneath the hood itself. The clients use this extra space as a coffee bar, storing all cups and other accessories for their morning brew.

Werner Straube

WERE THERE ANY UNIQUE LIGHTING SOLUTIONS THAT WERE DESIGNED INTO THIS SPACE? This home actually has an interesting heritage, as it was originally an old manufacturing plant before being redesigned with residential use in mind. The original glass blocks in the kitchen allow for an abundance of natural light to shine through while also delineating the space. We also incorporated glass pendants above the island to create a disappearing effect, providing unobstructed views of the cabinetry. WHAT BRANDS/SUPPLIERS DID YOU SPECIFY TO CREATE THIS BEAUTIFUL SPACE? The appliances are from Abt. The kitchen sink is from Galley. We specified Sub Zero for the glass door refrigerator, wine refrigerators, and stove. MGSI supplied the porcelain countertops and the kitchen hardware is from Katonah.

I knew in my heart that the answer was interior design and it’s a passion I’ve been following ever since. 25 years later and I’m incredibly grateful that I was pushed to follow my interests from an early age, setting the foundations for the knowledge that I continue to build upon today. To me, great design is about going beyond materials and finishes to create a finished space that brings together elegance and functionality in equal measure. It’s about creating balance in a way that fits each client’s unique lifestyle, telling a story of who they are and what they love, and giving them the space to indulge and celebrate in the joys of everyday living. WE LOVE YOUR *TRANQUIL VISTA* PROJECT AND THE ACCESSIBILITY ASPECTS. CAN YOU TELL US MORE?

Sedona is a relatively small community and my client came to me through a word-of-mouth recommendation looking to transform her vacation home into a tranquil and functional full-time residence. Recovering from an injury, it was vital that the client’s remodeled space not only looked beautiful but also helped to enhance and streamline every aspect of everyday living. In each room we ensured that surfaces were kept flat and wheelchair-friendly, with curbless showers, wide hallways and expanded door frames that allowed for easy navigation. This remodel also included a significant expansion of the home’s interior and exterior spaces, adding just over 500 square feet of livable space including a new master suite and

SEASONAL extras a generous extension of the home’s back patio, each placing a spotlight on the property’s panoramic red rock views. Physical therapy was another factor that played an important role in my client’s day-to-day life and so we included a treadmill pool as part of the outdoor living space to help assist in her recovery process. Additionally, aging-in-place was a factor that influenced many design decisions. Easy-to-clean, petfriendly performance fabrics were utilized whenever possible, and additions like a dry bar off of the master suite enabled effortless accessibility to everyday comforts. Finally, creating a seamless transition between the home’s indoor and outdoor living spaces was a top priority as we wanted the home to carry a sense of harmony and easy-flow as you moved between the interior and exterior. This was achieved by bringing many of the home’s interior motifs into the outdoor living space, utilizing pattern, organic textures and a continuous palette of soft neutrals to generate a relaxed continuity that tied the property together.

The instructions:

1. Cut the butter into ½ inch cubes by slicing the sticks of butter down the center lengthwise and again on the other side to create 4 long strips. Then cut the sticks into cubes. Place in the freezer for at least 30 minutes. 2. Place dry ingredients in a food processor and give it a few pulses to be sure it is well mixed. Place butter cubes in the food processor and give it 8-10 pulses until you have small pea-sized pieces of butter coated in flour. 3. Add the icy cold water one tablespoon at a time and give the dough a pulse after each addition. The dough is done when it looks crumbly but holds together when you pinch it. 4. Divide the dough in half and knead each portion just enough to shape it into a disk about ½ inch thick. Wrap each disk in plastic wrap and transfer to the refrigerator for at least one hour or up to 2 days or in the freezer for up to 2 months.

WHAT MAKES DESIGNING IN SEDONA DIFFERENT? In Sedona we are fortunate to have some truly wonderful weather with over 300 sunny days every year. Because of this, there is a unique opportunity to really utilize your home’s exterior as an extension of the living space. Patio spaces don’t just have to be for entertaining, with the right design decisions they can play a key role in your everyday lifestyle. I love to incorporate features like NanaWall’s Folding Glass Walls to create a seamless transition between indoor and outdoor spaces, carrying through interior motifs and connecting the home in a way that enhances functionality and takes advantage of Sedona’s favorable climate for outdoor living.
