A not-for-profit, member based organisation, Waikato Food Inc has two goals; to promote Waikato food producers and hospitality businesses and to help these businesses grow. The Waikato is a lush, productive region stretching from Coromandel in the North to Lake Taupo in the South. World-famous for our dairy industry, we understandably have several award- winning cheesemakers - but the Waikato is so much more than just dairy! The Waikato grows more blueberries than any other region in New Zealand. If you are visiting the Waikato during the summer months, picking berries is a great activity for all ages plus you can enjoy the fruits of your labour. Strawberries also thrive in the Waikato and you won’t need to search too far before you will find fields of fresh berries ripe for the picking. Looking for a great brew? You will easily find a delicious cup of coffee made from locally roasted beans. If beer is more your style there are many local craft brewers to tempt your taste-

buds. Or if wine is more your style Waikato has a tradition of pioneering winemakers, from the government vineyard in Te Kauwahata which helped establish the wine industry in New Zealand to local favourites Vilagrads in Ohaupo. Did you know the Waikato is home to New Zealands only tea plantation? We grow chestnuts, macadamia nuts, grapes, pears, apples, kiwifruit, garlic, mushrooms, oysters - the list goes on. It is little wonder we have so many award winning restaurants and cafes with chefs spoilt for choice when it comes to such beautiful produce. Our region has a number of truly unique attractions: from Waitomo Caves to Hobbiton, the stunning Hamilton Gardens to the black sand beaches along the West Coast and the hot springs in Te Aroha. Celebrating Waikato’s emerging foodie culture, Dough Bros is all about sharing delicious food with great company. Owners Katherine and Jake Mitchell returned home from Melbourne to start something special, a place perfect for family celebrations, a date, catch up with friends or simply a quick mouth-watering midweek meal. Step inside to the simple, modern interior and be drawn to the warmth of the wood fired oven and the wall of stacked wood that feeds it. The wood fired oven is the heart of everything they do imparting lovely earthy flavours into the food and pizza is just the start. “We looked at pizza as a sharing food so the rest of the menu is geared that way,” explains Katherine. The pizzas are based on the principle of less is more with classic combinations and quality ingredients that are allowed to shine. Think beautiful cherry tomatoes, basil and fresh mozzarella topped with rocket and local Magill’s prosciutto or house-smoked chicken with zucchini, garlic cream and pine nuts.

Jake is quite rightly proud of their pizza bases which are made from a three day cold fermented sourdough. There were quite a few man hours put in to developing the recipe and this is just one example of the Mitchell’s quest to create simple, delicious food. Those on gluten free diets are catered for too with Dough Bros’ own gluten free pizza bases.

Fully licenced with a menu that caters to all dietary preferences, Prof’s has somehow magically been able to cater seamlessly to corporate events, families, high teas, celebrations and couples.

Peruse the menu and you will find something for everyone, from kale chips with kawakawa and cashew rub to smokey pork ribs with apple slaw or perhaps an antipasto plate with local salami and prosciutto, goat's cheddar accompanied with onion jam, cornichons, bread and crostini. Whatever you order make sure it includes some hand cut potato chips with aioli!

crème de la crema of coffee roasters Over the past two decades, expert coffee roasters and baristas have sprung up across the Hamilton and Waikato region, creating a major draw for locals and visitors alike. One of these is Rocket Coffee in Hamilton. “We wanted to do something different,” says co-founder Glen Crompton about opening the first Rocket café in 1995. “At the time, there was nothing like it in Hamilton.” Rocket Coffee operates a roastery and adjoining café in Hamilton’s Barton St, as well as another recently opened café, the SL28, also in Hamilton. Roasting coffee is what interests Mr Crompton most. “It’s all about letting the coffee beans tell the story of where they come from. It’s an interesting way to introduce New Zealanders to the cultures of the world.” Hamiltonians are in fact spoilt for choice with several other dedicated roasters calling the city home as well. There’s also Laroma, in nearby Frankton, where customers can bring their own lunch while experiencing one of the expresso bar’s exotic coffee roasts and new-kids-on the block, the Manuka Brothers, can often be found selling their fresh, artisan coffee at the Hamilton Farmers’ Market. Online purveyor Weka Espresso has made a name for itself selling its quality coffee roasts on the ‘world wide web’, and while not a roaster themselves, Urge, a coffee and tea boutique located in the heart of the CBD is also a local Hamilton favourite. It boasts over 20 different coffee blends and roasts, which are sold as beans as well as ground coffee. Other specialist espresso bars in the central city include Union

and Demi-Urgos which offers drip filter chemex alongside all the favourite espresso options. Further afield other coffee roasters have built up their businesses in the region’s smaller towns, including Essenza Coffee Company, which operates out of a converted dairy shed on a dairy farm 11km from Morrinsville, and Red Cherry in Cambridge, which runs a popular café and shop and also produces Nespresso compatible capsules using its own blends. In the south of the region Roger Sheppard from Origin Coffee believes people will go out of their way for a good coffee. A former coffee plantation owner in Malawi, Mr Sheppard founded the Origin espresso bar and roastery in Otorohanga soon after immigrating to New Zealand in 1998. He says being on the route to the Waitomo Caves means there is a fair amount of tourist traffic, which is good for business. “We get a lot of people turning up here from all over the world who are really happy to get a decent coffee.” Surfer and entrepreneur Tony Bruce opened his first hole-in-the-wall coffee shop in Raglan in 1998, followed by a roastery several years later. He and business partner Bobo run eight cafes around the country and are looking to expand further. Mr Bruce says Raglan Roast’s formula is simple and effective: good coffee at affordable prices, in pared-down settings. “We cut to the chase. We’re all about coffee. People don’t come to us for bacon and eggs or trendiness, that’s for sure.”

bottoms up for beer lovers visiting the Waikato Craft beer enthusiasts are increasingly spoilt for choice in the Waikato region, with established brewers and new specialist beer bars offering a range of local brews to rival any in the country. At Hamilton’s Good George Brewing, the growing popularity of craft beer is paying off. In three years, the business has gone from producing 80,000 litres to 800,000 litres of beer a year, and supplies more than 400 commercial customers around New Zealand, says managing director Darrel Hadley. “Three years ago, we saw an opportunity. At the time, the New Zealand craft beer scene was mainly centred around Wellington and Nelson and there was a gap to be filled.” Good George started out as a single brewery and dining hall, and has since added two more Hamilton bars and eateries, Good Neighbour and Little George with Good Union Cambridge set to open in December 2016. The brewery is constantly growing to accommodate increasing demand, Mr Hadley says. Good George also supplies the exclusive brews served at The Green Dragon Inn to visitors of Hobbiton Movie Set. Brewing businesses often begin with a personal passion. That is certainly the case for Greig McGill, who started out as an enthusiastic home brewer before setting up Brewaucracy with Phil Murray in 2011. His motivation was to make craft beers modelled on some he’d tasted in Europe. “We’ve taken a leaf out of our European book,” he says. Brewaucracy’s flagship beers include a vanilla-flavoured English porter and a smoked lager.

Brewaucracy’s beers are brewed out of Shunters Yard Brewery, which is owned by another pair of beer enthusiasts, Peter McKenzie and Dave Smith. They brew no less than 17 different beers including those under their own label as well those under contract for other local brewers including Three Fat Pigs. The brewery is located in a converted shed behind the Woodside Cafe in Matangi on the outskirts of Hamilton, and is open for viewing by appointment. The region’s rural towns are also benefiting from the brewing bonanza. That includes Te Kowhai, where Pilot Brewery opened in 2013. The brewery produces 50,000 litres of beer a year for cafes, restaurants and liquor stores in Hamilton, Tauranga, Whitianga and Nelson. Another brewer who has set up shop in a small town is Waitomo Holiday Park owner Bruce Tobeck, who is one of the driving forces behind King Country Brewing. The venture was born out of a desire to produce a locally brewed range of beers that would appeal to both local farmers and tourists visiting the Waitomo Caves. Their beers can be found at select venues such as Waitomo’s Curly Bar and HuHu Café, Otorohanga’s Thirsty Weta Bar & Eatery, and Lake House Taupo. Craft beer lovers can also sample the region’s brews at places like Craft Bar, Dough Bros or the Local Taphouse in Hamilton, which opened in October 2015. The bar is owned by SkyCity Hamilton and partners with Good George, which fuels 10 of the bar’s 30 taps with its range of beers and ciders. The Local Taphouse also serves Brewaucracy and tries to keep their beers as local as possible says manager Ash Green.

CELEBRATING LOCAL BEER AND CHEESE October, known around the world for a celebration of beer is also NZ Cheese Month. Home to several award winning cheese makers and of late many exciting craft brewers has the mighty Waikato primed for FermentFest a celebration of these to industries. At the forefront of promoting local food producers and hospitality industries, Waikato Food Inc have brought local brewers and cheese makers together for this inaugural event to be held at SkyCity Hamilton on Saturday the 1st October. Chairperson, Vicki Ravlich-Horan, says this free event “is just the start! We hope it will grow each year and become an annual fixture on the calendar.” Waikato Food Inc is a not for profit member based organisation with two main goals; to help local food and hospitality businesses grow and to make the Waikato famous for the abundance of amazing food we produce. Their annual Matariki Dish Challenge,

which from humble beginning s is now a fixture on the local culinary calendar has just wound up having the team focus on their next event, FermentFest. Vicki says “Our Matariki Dish Challenge is a great way to bring together producers, eateries and the public. Ferment Fest ticks many of these boxes too, highlighting the vast array of fantastic brewers and cheese makers we have in our backyard.”
