Inside and Out Well, like many in Humboldt and beyond, all of us at the Insider had more than a year inside. The pandemic had us home alone or with our families, relying on essential workers keeping things going in the world outside. Without the festivals and live music, the restaurant dining and winding through little shops, the impromptu drinks with friends, we had to think hard about what makes Humboldt County a community and rediscover some of what we love about living here. We found some new ways to enjoy and support the small businesses we love, too. The natural beauty of our local landscape has been a refuge. Taking a break from our worries with a walk through the redwoods or along the river is always a balm to the soul, but we’ve never been more grateful for them. And seeing as we’re not out of the metaphorical woods yet, we may be spending more time in the literal ones. For a different perspective on the big trees, you can stroll the newly built Redwood Sky Walk at the Sequoia Park Zoo, featured in this issue’s Adventure. Read about the ADA accessible feat of engineering and then go see it for yourself. Our Perfect Trips include some excellent options for enjoying the outdoors, too, whether it’s zipping along the Eureka Waterfront on an electric bike or traversing the otherworldly Samoa Dunes. There’s plenty of outdoor art to enjoy between the recently added sculptures in the Creamery District and a fresh crop of murals from the Eureka Street Art Festival. Grab-and-go goodies from some of the restaurants that have adapted to takeout should keep you well fueled — a cone from Cat Shack while you tour Ferndale’s Victorians or a Cocina Mariposa burrito to get you through all 18 holes at the Municipal Golf Course? You’ve got options. When you’re ready to put your feet up, a glass of wine on the patio at Septentrio Winery (and maybe some apps from the on-site truck The Nosh) is a fine way to unwind. We’ll introduce you to the folks who make its wines and kept it on track as a place to con-

nect, even with social distancing. And for homey Southern cooking, we’ll take you to Fat Anne’s Bistro for a plate of fried chicken, a hunk of carrot cake and memories of the owner/chef’s grandmother cooking and laughing, cocktail in hand. After so long restricting our shopping to targeted missions for essentials, it’s with renewed joy that we once again wind our way through independent shops to browse and discover. For this issue, we returned to Just My Type Letterpress and Paperie in its new spot full of work by local artists. Listen, Zoom calls have lost their novelty — writing letters with stationery printed on 200-year-old presses feels like a refreshing change. In the back of the magazine, as usual, you’ll see our calendar. This time, it extends to the end of the year, based on what we know so far. Conditions and safety recommendations from Public Health may change, so you’ll want to check the updated calendar online at www.northcoastjournal.com. Not so usual is the list of restaurants, delis, food trucks, markets, bars, wineries and breweries that normally fills the annual Menu of Menus guide. It’s been a tough year for food and drink businesses and so we’ve rolled the listings into this installment of the Insider to get it in more hands and make it easier to peruse local offerings and check them out. Flip through and we bet you’ll find a few places you haven’t thought of in a while that you might like to sample and support. Meanwhile, as we’re enjoying the people and places of Humboldt, we’ll be masking up and observing the safety guidelines at local shops and restaurants to show our appreciation for how they’ve gotten us through all this. And when those events in the calendar happen, we’ll be thrilled to see you there. — Jennifer Fumiko Cahill

CACAO COCOON’S MISSION

Sweet

By Andrea Juarez • Photographs by Dave Woody

Food is more than what you eat — it’s also about people and the planet. For local chocolatiers Elissa Verdillo and Zach Funk, these values guide Cacao Cocoon, which is celebrating its 10-year anniversary. “I don’t make chocolate just so people can have dessert … it’s revolutionary,” Verdillo says. “It brings people together rather than divides.” The duo are the sole employees of the family-based, Arcata business and mindful about how their work has enabled them to live as they believe. From the organic and Fairtrade products they use to make their chocolate to generating income to help extended family in Chiapas, Mexico, they strive to have an ethical and socially conscious business. “We are firm in our values — we really believe in equality. We really believe in unity,” Verdillo, 37, says. “That’s why we name our chocolate bars really powerful names because we want to send a message.” Today, the “honey-spun” chocolate company has six chocolate bar flavors, including Clarity (vanilla bean and Himalayan salt), Love (vanilla bean, Himalayan salt, ginger and maca), Inspiration (peppermint, vanilla bean and Himalayan salt), Balance (lavender, vanilla bean and Himalayan salt), Transformation (citrus, Himalayan salt, vanilla bean and bergamot) and Unity (cashew milk, vanilla bean and Himalayan salt). They are produced with organic “single origin” Fairtrade cacao butter and cacao powder from a family-run farm in the Dominican Republic. “By buying the butter and the powder from the farmers themselves, they get to add value onto it and there’s value kept in the local economy where the cacao is grown,” Funk says. “That’s one ecological, economical and social benefit to buying value-added, single-origin cacao.”

Funk, 39, moved to Humboldt in 2009 from the Bay Area via the Midwest to go to college. He graduated from Humboldt State University with an undergraduate and master’s degree in sociology.

Honey Special Cacao Cocoon’s use of honey is also part of what makes it special. It is one of the rare small-batch, artisanal chocolate companies in the U.S. making

chocolate bars with honey. It uses raw blackberry honey from Collett’s Humboldt Honey, which has hives in Northern California, Oregon and Montana. “Sugarcane adds a flat sweetness but honey adds to the equation,” Funk says. Verdillo agrees and says honey makes chocolate more sensual and nuanced. It’s also the motivation for a new project that’s now in research and development: creating a line of “bee to bar” chocolates featuring honey

from a variety of origins, such as Hawaii and Mexico. They are looking forward to offering a way for people to taste the different notes that emanate from the natural nectar. Honey is also the sweetener of choice for their bars because it honors the original, traditional methods of sweetening chocolate in Mexico, with which Verdillo has experience.

Verdillo’s Chocolate Journey Prior to moving to Humboldt, Verdillo, an East Coast native, was a small-scale chocolatier in Palenque, Chiapas. While she was raising her daughter with her former husband and living with extended family, she taught herself how to make chocolate to bring in extra money. In Chiapas, her initial handmade bars were bean to bar, made from the labor-intensive process of stone grinding local cacao and blending it with honey. She soon changed her recipe and chocolate making process, switching to cacao powder and cacao butter from nearby farms, and honey sourced from Zapatistas. Under the name Cacao Hermonilla, and living in the larger city of San Cristobal de las Casas, Verdillo sold chocolate to yoga studios, health food stores and markets, and occasionally handto-hand. She had a product people liked but it needed more traction to become something bigger. Fast forward to 2009, Verdillo and her daughter Solstice, then a toddler, moved to Arcata. She put chocolate making aside and says she worked as many as three jobs just to get by, including cleaning homes. Then in 2010, she met Funk and the two eventually teamed up personally and professionally, and nurtured Verdillo’s dream of building a chocolate business. In 2011, Verdillo started the makings of their handcrafted chocolate bar business. While Funk was bringing in income from teaching online classes, she began the process of putting things in place, like licensing and securing a commercial kitchen. As she had done in Mexico, she made the chocolates, packaged them and loaded them up in her basket to hit the streets, selling the bars at farmers markets and festivals in Humboldt County. “She scraped, scrimped, saved, ate beans and rice, and saved up to build the business,” Funk says. “From the get-go, it was 100 percent from her sweat equity.” Running the company has been no small feat especially since the couple is raising three daughters, Solstice, 14, Ominira, 5, and Mbeya, 2. Since its start, pre-pandemic, the business

mainly relied on face-to-face sales at events like the Eureka Friday Night Market and was distributed at just a few stores locally until 2020. With the pandemic, Cacao Cocoon refocused efforts to its website, social media and online promotions. As a result, Funk estimates sales have been up about 35 percent. The company's products are also now available in more local stores. So now, business is more than steady and they’re looking to an exciting future.

Building Bridges with Palenque In February, Verdillo and daughter Solstice went to Chiapas to visit Solstice’s father’s extended family. While there, Verdillo witnessed firsthand how much of Mexico’s economy was suffering with tourism coming to a halt. Cacao Cocoon is now selling handmade jewelry by Solstice’s grandmother, Leticia May, with 100 percent of the profits going to May. Her necklaces, earrings and bracelets are made of amber, seeds, red coral and other natural gems from the area. When Verdillo returns later this year from Palenque, she’ll have more jewelry and clothes to sell. Building a deeper connection with Palenque is also part of the couple’s vision. This summer, Verdillo and Funk will also be looking at land in Palenque with the plan of building a farm where they can grow cacao, raise bees, preserve some land in the jungle, provide jobs and support the local economy. They are already in the beginning stages of cultivating cacao in Palenque. “I’m envisioning connecting Humboldt with Palenque with this project,” Verdillo says. She hopes the Humboldt community will want to be a part of this. “We have a certain amount of money set aside for this land and we know that we have a great following here in Humboldt and a true dedication. We know people who believe in the natural world and preservation.” As the Palenque project comes together, locals can continue to enjoy Cacao Cocoon’s honey-spun chocolate. The Clarity bar is the best seller, by the way, but the Unity bar, made with cashew milk, is a smoother and creamier dark chocolate version and Verdillo’s favorite. When you taste Cacao Cocoon’s chocolate, they hope you’ll think about their story, their values and Verdillo’s sage words, that chocolate is more than dessert. She says, “We want people to eat this chocolate bar and remember.”

adventure

Up in the Trees A stroll along Eureka’s Redwood Sky Walk

Story and photographs by Mark Larson Going for a walk in the redwoods at Sequoia Park in Eureka now includes a self-guided interpretive walk up. Instead of keeping to the forest floor, you can tour redwoods on suspended walkways with spectacular views in the recently opened Redwood Sky Walk adventure at the Sequoia Park Zoo. The experience high up in the redwoods is somewhat reminiscent of life among the Ewoks from Return of the Jedi (famously filmed in our county). You’re perched on platforms and bridges, gazing out into the forest and down at the trails and ferns below, taking in the same view as the birds and other creatures that make their home up in the branches. It’s breathtaking. To get to the Sky Walk, pass through the attractive and efficiently staffed Zoo fee entrance on W Street and turn left to walk past the flamingo pond and enclosed aviary. (Definitely stop to catch a glimpse of the seriously cute red pandas a short distance after the Sky Walk entrance.) After entering the out-and-back ¼-mile-long Sky Walk gate, you will walk up a slow incline on the wide Ascent Ramp built firmly to terra firma and come to the large 28-foot high Launch Deck platform (it looks similar to a fire lookout tower), before stepping out onto the suspended bridges and platforms that range from 60 to about 100 feet off the ground. Here — or even before you enter the Sky Walk — is where you’ll need to monitor your fear of heights before proceeding. Rest assured, though, the platforms and bridges all have 3.5- to 4-feet-high guardrails that make for a steadying place to grip and because this is not an

18

adventure course, no harnesses and helmets are required. Strolling the network of suspended walkways high up in swoon-inducingly tall redwood trees will give you a new perspective on these ancient trees and the life forms that reside there. While on the Sky Walk, pause for a moment to look around you into the canopy of these huge trees and listen for the chatter of ravens. The platforms circling the tree trunks and most of the aerial bridges from one tree to the next are rigid and firmly attached to the trees. But one optional 369-foot-long section between tree platforms is suspended by cables, much like a swinging bridge. The footfalls of walkers on this section create motion — either terribly fun or a little scary, depending on whom you ask. This aptly named Adventure Segment, with its height exposure, motion and flexible surface, is the only part that’s not fully ADA accessible. Surrounded though you are by the wonder of nature, take a moment to imagine also the creativity needed and challenges faced by workers on the construction crew that installed these aerial walks. Look closely at the construction design and materials, and consider the tree-climbing skills required to do the work … without any safety net below. The Ascent Ramp and Launch Deck are wood structures with concrete foundations. The surface you’re walking is made of Dynaplank — a walkable tread surface that is non-slip (important in our rainy and foggy climate) and highly durable. The posts and handrails on the structure are redwood with metal panels between posts. Fun fact: The ascent ramp is 360 feet, just shy of the height of the tallest known living coastal redwood (~380 feet). Fabricated aluminum makes up the bridges and platforms above, and they feature the same Dynaplank surface for safety up high. The railings are made from cable and metal mesh panels that block as little of the view as possible. The local company Greenway Partners came up with the initial project designs and the subcontractor team from Synergo (a Tigard, Oregon company that specializes in the design and installation of challenge courses, zip line tours and aerial adventure parks) was hired to do the aerial construction work. After making your way through the Sky Walk, don’t miss visiting other zoo humboldtinsider.com

highlights including the nearby barnyard for the animal petting/feeding area, the river otters at the Watershed Heroes exhibit, close-up looks at a raven, spotted owl and two bald eagles in an enclosure for injured and rescued birds. There’s even a memorial statue of local legend Bill the Chimp. If you’re peckish, the ECOS Café is open Wednesday-Sunday, 11 AM to 4 pM. You should also check posted updates on what educational activities are being offered and what zoo areas might be closed (due to current pandemic guidelines). Currently face masks are required for everyone over the age of 3. Guests must practice social distancing and frequent hand washing at hand sanitizer stations throughout the zoo is encouraged. On the way out, consider an earthbound tour of Sequoia Park, which includes a new playground, a slide built into a massive redwood, walking paths through 60 acres of coast redwood forest (some of which you’ve glimpsed from above) and a pond that often offers a chance to view colorful wood ducks.

The Eureka Waterfront Trail on a summer day is glorious. You can see some of it as you stroll, limited by time minus energy. Rent an eBike from Redwood Cycles and you can take it all in, relying on a quiet motor or pedal power as you desire. Go free range or choose from four group rides: Avenue of the Giants, Eureka’s Old Town and Waterfront Trail, Hammond Trail or Old Trinidad Highway 101. It’s $25 per hour (2 hours minimum) or $75 for the day, helmets and other gear included. Parents, it’s up to you to decide if your child is able to ride an eBike safely (waivers required), but child and dog trailers are available at your favorite price: free. An orientation gives you the lowdown on the cool ride and the opportunity to ask as many questions as you need before heading off prepared for your adventure. Redwood Cycles is easy to find at 1 C St. in Eureka’s Historic Old Town. Call owner/operator Steven Light at (707) 599-2008 or visit www.RedwoodCy-

cles.com to make a reservation. Delve into the everchanging Samoa Dunes and Wetlands (New Navy Base Road). Rain, tide and wind flow through this landscape, shifting and shaping the meandering paths. Hike around, up and down, or head for the shore. Bursts of wildflowers and cool green fronds line the way. Was that a red legged tree frog? Pause in a patch of shade and listen to birds happy in their native habitat. Currently stewarded by the Friends of the Dunes, SDW is a rarity. How often does a new dune preserve come along? Find the georeferenced map at www.friendsofthedunes.org to appreciate the scope of this special place and get the best parking info (no dedicated lot, see the FAQ). Inclusiveness through gastronomy. The menu entices a return for a breakfast of chorizo con huevos. Or maybe Taco Tuesdays and house-made horchata? Breakfast or lunch? Either way, you win at Cocina Mariposa, 4750 Fairway Drive, Eureka (9 aM-6 pM. Tuesday-Sunday). There is no summer without beer. Humboldt Brews gives us all the support we need to enjoy our full-fledged freedom to enjoy a good craft ale. Or, particularly, to love 25 of Humboldt County’s best brews on

tap rotation. Thirst quenched, hunger beckons. Hum Brews, as it’s known, offers delights like Humboldt grassfed beef and local organic tofu, both of which work with a pitcher of the Ardell Brothers’ storied Red Nectar Pale Ale, a long-ago local classic once again being brewed in our county. Though you may need milk, as this wingmaster does not play: award-winning wings (10 awards to be precise) served by the pound and a house Suicide Sauce that comes with a warning — eyes may water at its appearance on the table. Social lives are rebirthed Tuesdays over spirited games of cornhole (loser buys). Watch the game in the sports bar with a delicious hummus tostada salad and a Smokey Hazy Hemp IPA. When it’s time to go home, grab a growler of your favorite brew. Check out www.humbrews.com and www.northcoastjournal.com for updates on the live entertainment schedule. Find it all at 856 10th St., Arcata, (707) 826-2739. Café Feast just gave Redway another reason to be happy. Laura Lasseter and her family took over the former Meadows Café and re-imagined its offerings to better serve the community. Using seasonal ingredients, she’s crafting a menu to drool over. Fresh salads, like the delightful blueberry feta salad, and her take on a sweet and spicy chicken taco served on a Hawaiian roll, topped with Asian slaw and bacon bits. The tri-tip sandwich is a favorite, taken to the next level with the addition of a basalmic glaze and fresh organic greens. Relish a flaky Brio pastry with espresso or a refreshing smoothie. A memorable picnic along the Avenue of Giants starts with a charcuterie board or box of succulent fruits, fresh veggies, crisp crackers, savory nuts and Cypress Grove cheese. Take a Sweet and Savory basket along for a romantic stroll on Shelter Cove’s Black Sand Beach. Or create your own mix with a grab-and-go sandwich and gourmet treats from the café’s bright shop (wagyu jerky or old-fashioned popcorn balls?) and lose yourself in the Lost Coast. A bread crumb trail from Café Feast will lead you back to 1211 Evergreen Road for more (8:30 aM to 2 pM. Monday-Friday). Take U.S. Highway 101 to Redway Exit 639B, then turn right at Redwood Drive and right at Evergreen Road to the Meadows Industrial Park. Find it on Facebook.

Art Lovers An explosion of art is just what the Insider orders after months of looking at our own walls. The 2020 Eureka Street Art Festival celebrated the medium of the mural, rising above the restrictions of social distancing with 12 new artworks by Humboldt and local artists. Thus, the Henderson Center Mural Tour was born (barely contained by E and F streets, Henderson and Harris streets). The Native Mural Project debuted with artwork created by Alme Allen, Carl Avery, Melitta Jackson and Julian Lang. The dazzling “Of a Feather” by Mir de Silva (Dave’s Place, 426 Grotto St.) reveals the charming detail of a frog with the artist’s signature hiding by a downspout. While taking in “Run,” by Native artist Jackson, you might be drawn into a conversation with another appreciator of Eureka’s public art passing by. Art can inspire reconnecting with fellow humans after such a long drought. Best of all, the only cost is your time. Visit www. eurekastreetartfestival.com to get the skinny on this summer’s event: A Colorful Week In the Streets. The Live Art Wall on Waterfront Drive is one of Eureka’s coolest places. These murals are ephemeral, seemingly blown in off the bay only to re-

turn when their time has come. Playful and powerful, the artistry makes good use of a utilitarian seawall. Differences in style and subject highlight the cultural diversity of Humboldt’s street art scene, from playful manga to distraught realism to edgy graffiti. In one mural, two crying children seem to join in our shared distress, openly wounded and inconsolable. Farther along, you may wish the colorful creature offering “Free Hugs” could deliver. This year the gentle “We will get through this together” piece reminds all that art can indeed keep us together. Take a selfie with your favorite and share Eureka’s love of public art with your friends and follow the artist’s social media. The continually evolving Live Art Wall is one of many projects Ink People uses to provide artists with paying jobs. Visit www.inkpeople.org for a public art map, make a donation (because, man, this is cool) or submit your own proposal. Fish cascade up into a startlingly blue sky, propelled along silver lines. Jolly celebration debuted these new installations, the result of a two-year community public art project spearheaded by the Arcata Playhouse. James Hildebrandt crafted two 14-foot sculptures, titled “Homeward Leaping,” that compel your gaze to flow along his vision of Jolly Giant Creek’s stream as sleek fish swim its current. The touching 4-by-72-foot mural painted by 70 students from Fieldbrook Elementary and Redwood Coast Montessori celebrates the creek that flows through their lives. Students created the 2-by-2-foot panels at home during the fall of 2020, painting a bit of the Jolly Giant they held in their hearts during a year inside. How can you support young artists? With the Kids What to do with the kid who jumps on your bed at the crack of dawn? The wavy greens of Lighthouse Plaza Mini-Golf beckon starting at 8:30 aM (9 aM on weekends; last tee at 6:30 pM). The quirky 18-hole course winds around a massive Humboldt

State University lumberjack who holds … a golf club. Your 4 year old will be so happy to find a putter in just the right size. The junior caped wonder who rides in your back seat will love the new Batboat. Grab a hot dog at the Lighthouse deli before

hitting the ADA-accessible greens. Afterward, seek out resident celebrity Homer J. Simpson and an opportunity for a hilarious family selfie. Play is $7 per person, 4 and under free. Take State Route 255 around Arcata Bay (north or south) to 180 Lupine Drive, Manila. Look for the lighthouse. Cat Shack Ice Cream fits the bill for the kid (and the adult) tired of the limitations of the family freezer. The little ice cream shop was built by fourth-generation scooper Mark Albert’s great-grandfather. Choose from the colorful menu offering butter pecan, bubblegum, espresso chip and more. Large or small, cone or dish? The small cone is easy to hold in little sticky hands and just the right size for an after-lunch treat. There’s a reason the cone’s paper wrap reads “JOY.” Fireman’s Park at the end of a stunning Victorian Main Street gives parents a playground opportunity to burn off some dairy-fueled energy before bundling everyone into the car for the trip home. On the way back to U.S. Highway 101, see if the kids can spot the roadside cutout sign (driver’s side) of a young woman bottle feeding a calf. Cat Shack Ice Cream is open noon to 9 pM at 606 Main St., Ferndale. Hot today? Grab the kids and that 5-foot inflatable floating pretzel they gave you for Father’s Day, and head for Swimmers Delight at Van Duzen County Park. It can’t have a more appropriate name. The river is clear and cool with a majestic backdrop of intense geology. Relax in dappled sunlight as crayon-colored canoes paddle by. Squeals of happy children echo off the bluffs as families caper in the water. Relax. Float. No interruptions — the park is a cell phone dead zone. Give the kids a history lesson and call grandma on the pay phone. Day use fee is $5 per vehicle (sunrise to sunset), or camp for $25 (no reservations). Floatation vests are available for smaller swimmers who may need a bit of an assist (free, thanks to the Sea Tow Foundation). U.S. Highway 101 to the Carlotta exit 685 and State Route 36 E, then contain the excitement for 16 miles. Any questions? Call the park ranger at (707) 445-7651. Don’t forget the towels!

Not Strictly for Tourists A good farm-to-table tour is a great way to spend a summer day and the Emerald Triangle provides. For a tour with a THC twist, Humboldt Cannabis Tours begin and end in Eureka with a fully vaccinated driver who can answer all your burning questions. The Half Day Farm Tour begins at a dispensary before heading to the fields. The budtenders of Northern California are the cannabis equivalents of French sommeliers. Seeking enlightenment about edibles beyond the gummi spectrum? The budtender knows all. Two terroirs combine in the Weed and Wine Tour. Start with a tasting and charcuterie board at Briceland Vineyards. After lunch, meet cannabis at its most beautiful: swaying gently in the breeze. You can even pick the brain of a ganga master. Legend Johnny Casali and his award-winning Huckleberry Hill Farm hold the key to many of marijuana’s mysteries. Ask questions, feel the sun on your face (or the rain — this is Humboldt) and enjoy. Half day tours are $95 per person; full day $195. Due to COVID-19, tours are limited to 10 people. Check www.humcannabis.com for additional options and call (707) 839-4640 (9 AM-6 pM) to reserve a tour. You’ve got the time and the Clarke Historical Museum is the place to go back in time. Schoolteacher Cecile Clarke founded the Museum for Humboldt to explore its history. What are you waiting for? Contemplate the luxe life of the lumber kings in the Victorian Room that boasts the influencer swag of its day. Become entranced by the virtuosity of Karuk, Hupa and Yurok master basket weavers. Find out what it took to mine gold (and why no gym memberships were needed during the Gold Rush). Appreciate the courage necessary to use the gear in the Firefighting exhibit (closes Sept. 21), some of which saw local action. Admire the beloved 14-foot-tall Lentell Map, fresh from the careful touch of a papier mâché conservator. Examine the early roots of anti-Asian prejudice through the online exhibit Immigration, Expulsion, Homecoming: The Legacy of the Chinese Expulsion in Humboldt

County (www.clarkemuseum.org). Reconnoiter your way to 240 E St., Eureka (10 AM-4 pM. Wednesday-Sunday, suggested donation $5, $10 per family). On a misty day, the Sumêg Village at Patrick’s Point State Park is dreamlike. The traditional houses materialize out of the fog. You run your fingertips over a fallen redwood and contemplate the Yurok who split boards, built homes and dug out canoes by hand. The woodworking skills of the Yurok are awesome: artistry mixed with a deep understanding of the environment and its resources. The architecture of family

and changing houses speaks directly to the realities of living on a heavily wooded, wet coast. The ultimate in green construction. The village is aptly named Sumêg, Yurok for ”forever,” a place created to heal and teach. Summer will see the end of a restoration project that is passing techniques from elders to the next generation, led by 86-year-old Yurok master builder Walt Lara. Call (707) 677-3570 to schedule a guided tour with Yurok site interpreters to learn more. Day-use fee per vehicle is $8, $7 for seniors 62+, sunrise to sunset at Patrick’s Point State Park, Trinidad, U.S. Highway 101.

Before you dig into your plate of shrimp and grits at Fat Anne’s Bistro, or take the point off your lemon meringue pie, take a moment to appreciate the plate — its little painted roses or scalloped edges — because it might be a family heirloom. Owner and chef Tevyn Fisher serves on her grandmother’s china, along with plates and bowls friends and family have given her as gifts. Some are the plates Fisher grew up eating on. Named for a childhood nickname bestowed by her brother, Fisher’s restaurant may draw its menu from New Orleans cuisine, but her grandmother Gayle Fisher — known as “Maw” or “Mawsie” — is everywhere. Her recipes hang on the lavender walls and her legendary pie crust, developed with her neighbor Lois Mangrum (Fisher’s other grandmother) is in the dessert case most every day. Originally from Southern Humboldt, Fisher spent plenty of time at her grandparents’ house, with their garden full of tomatoes and cucumbers, picking peaches off the tree. It was largely in Maw’s kitchen that she learned to cook, watching her put up big family meals with mashed potatoes and gravy. “I was always inspired by watching my grandmother in the kitchen, laughing and cooking with a cocktail in her hand,” says Fisher. “She would taste as she went and when it was ready, she’d say, ‘Well, I’ll be damned.’” Maw would make extra pie dough

for her 11 grandchildren to roll out little tarts of their own, too. “There’s nothing like the feel of dough in your hands. Does it need more flour, more butter?” Fisher knew she wanted to be a chef when she was a kid. At 12, on a family trip to New Orleans, she went to her idol Emeril Lagassi’s eponymous restaurant, where only she ate because it was too expensive. The grilled shrimp salad was a little spicy for her back then but she loved it. And she fell in love with New Orleans and its rich food culture. After graduating high school, Fisher attended Le Cordon Bleu College of Culinary Arts in San Francisco, where she also worked before returning to cook in Humboldt, including a four-year stint at the Sea Grill. All the while, she kept her eye out for a place to open a spot of her own. At 25, she opened in Fortuna, which later relocated to her current digs on Ferndale’s Main Street. “I’ve definitely combined my classical French training with my grandmother’s cooking,” says Fisher, noting that her style, which she feels is still developing, isn’t myopically focused on perfection. “I’ve grown into accepting using what we have,” she says, “I want people to feel like their grandmother made it for them.” Homegrown ingredients are a good start. From her home farm, she brings in okra to dip and fry, and to add to the gumbo, as well as heirloom tomatoes, lettuce, kale, collard greens, habaneros for the

peach hot sauce and herbs for the homemade ranch dressing. The pickles, mayonnaise and bread are house made, too. “You have to spend time with the ingredients in order to get to know them and let them shine.” And shine they do. The buttermilk fried chicken is a favorite of hers and her regulars. “You can’t really go wrong if you eat it hot here or take it home and eat it cold leftover.” She’s a fan of “anything you can eat with a spoon,” including the Creole prawns and grits, a fine play between spice and creaminess. The Rumiano Cheese curds strike a similar balance, coated in panko and deep fried before a drizzle of honey, basil and red chili flakes. Also popular is the black bean burger — a hefty round of savory whole and mashed black beans on a house bun — a hearty pleasure you may have to share or pack some part of to take home. A beer garden is in the works, offering an outdoor space to enjoy a special menu of appetizers and finger foods along with the nine local beers and ciders on tap, and wines from Old Growth Cellars and Largo Ridge. Perusing the little wood-framed glass case of desserts may take more time than you expect. On one hand, it’s easy to understand why the grandmotherly carrot cake, a little lumpy with plump raisins and box grater shreds of carrot under a blanket of cream cheese frosting, is so often requested for birthday celebrations. But Fisher’s favorite is the lemon meringue pie. (Here’s some help: The carrot cake travels better but if you’re dining on the premises, seize the meringue. If the Grand Marnier olive oil cake is on offer, you’re on your own and we wish you luck choosing.) Fisher’s small crew includes her sous chef Lucas Bell and a 16-year-old prep cook interested in culinary school. “I was once that young kid who didn’t know anything and wanted to be in the kitchen,” says Fisher. So far, it must be quite an education. “We opened up not even 90 days before COVID,” says Fisher, explaining that the Ferndale restaurant, which started out with breakfast, lunch and dinner table service with a full menu of seasonal dishes, quickly had to adapt to shelter in place. Regulars and newcomers ordered takeout family dinners, holiday spreads and Fat Tuesday seafood boils, and showed up for patio dining. Indoor dining restored, patrons have returned to enjoy the cozy feel of the dining room. But a big party with zydeco music is the stuff of Fisher’s

dreams, and Fat Anne’s 2022 Mardi Gras celebration is already in the works. “I’ve got grand plans for a full Carnival-style party.” While Fisher may not cook with a cocktail in hand like her grandmother (maybe a glass of wine, now and then), she says she’s been told, “When I’m in my rhythm there’s a dance that I do … I don’t even think about it but I definitely enjoy being in the kitchen — it’s my happy place.” Perhaps happiest when her grandmother finally came to Fat Anne’s. “That was one of my proudest moments,” she says, “having her in the restaurant and eating her recipe’s pie crust.”

Septentrio’s Wine Connection Septentrio Winery By Erin Young • Photographs by Ryan McGaughey As I sip my glass of pinot noir

that in previous years, I have taken for granted the ability to drink in public. Like many, I have been desperate for a sense of normalcy (also wine). Because of their ability to think quickly and re-imagine their operations over the past year, Septentrio Winery and Tasting Room has been my go-to — a place to enjoy each other’s distanced company, to feel somewhat normal on a date night and to fuel my new-found day-drinking hobby. Having only opened their tasting room about six months before shelter in place took effect, owners Tynel Humphreys and Jared Sandifer saw the need for a quick and early pivot in order to adapt their service to the new challenges and regulations set in response to the spread of the virus. Humphreys and Sandifer began as wine lovers — Sandifer found that he had a talent for tasting, and Humphreys had pursued wine studies in Croatia. For fun, they began helping Humphreys’ mother, a talented home winemaker in Napa, where Sandifer quickly discovered his passion for winemaking and dove in headfirst, learning from mentors who encouraged his natural talent. Septentrio’s first official vintage was in 2012 and from there, production continued to increase. Sandifer’s wine making style is an elegant combination of Old World traditional notes and New World combinations and flavors. Septentrio features a large selection of wines — both single varietals and blends — in a spectrum of pricing, making it easy to find something for everyone. In conjunction with the winery’s celestial name (Septentrio is a Latin term referring to following the North Star), my personal favorite is the 2017 Retrograde blend, which combines cabernet franc, malbec, petit verdot, cabernet sauvignon and merlot to create a wine with notes of sour cherry, field strawberries, tomato leaf, slate and green bell pepper that is both complex and extremely drinkable. And if you’re looking for big red wine, the 2016 Sonoma County petit verdot is the perfect bold solution with notes of tart huckleberry, blackberry, cedar and cigar smoke. Other lighter selections include the crisp and refreshing gewurztraminer, or the large offering of pinot noir, including a 100 percent Humboldt County selection that features the bright red fruit and acidity that differentiates our own AVA from the rest of warm California. From the beginning, they intended to open a tasting room in Arcata. The dream was to create a space to bring the community together, recognizing that, as Humphreys says, “wine is a connector.” When they found the perfect space on C Street, they again dove in headfirst and spent

two years renovating, making sure that it reflected their vision before opening in August of 2019 in conjunction with the Hatchet House Throwing Club across the street. (If you haven’t thrown an axe at a wall like a lumberjack before, I strongly suggest checking this place out.) The space that they created is a stylized blend of industrial and rustic pieces that create an elegant, high-end experience. A sign that displays the winery’s name is made an art piece by the surrounding barrel staves, bottles line the walls and plants decorate the corners. And they built out a patio for outdoor seating, which features chic planter boxes, fire pits and a food truck. Business was good in those six months. The tasting room was full with guests lounging on the couches, lined up along the bar for tastings, laughing and gathered around the fire pit, connecting in all of the usual, beautiful ways. When the shelter in place orders came down, Septentrio Winery shut off the lights and locked the doors indefinitely, as unsure as the rest of us how long it would last. As restrictions lifted, Humphreys and Sandifer watched closely as other businesses reopened and crafted protocols for the ever-changing landscape. Humphreys began delivering wine to doorsteps from Orick to Hydesville, offering curbside pickup

← Lamb Sliders from The Nosh. ↓ The spacious patio.

and using social media to update customers about how and when they could get their hands on wine, all while Sandifer diligently stayed the course of regular production. Septentrio reopened with offering outdoor seating in the patio. Humphreys and Sandifer expanded the courtyard to increase space between tables, placed hand sanitizer on each table, replaced the self-service water station with water service, created single-use menus and implemented sanitizing protocols for tables and chairs after each seating, and masking rules for guests and servers. Humphreys says, “It’s our job to try to make our guests humboldtinsider.com

feel normal, but it’s my duty as an owner to make sure my staff and clients feel safe.”Though the terrain of the past year was tumultuous and difficult to navigate, Septentrio Winery is thriving. Today the tasting room is buzzing and guests circle the fire pits with blankets on cool Humboldt nights. Septentrio has also partnered with Pat Knittle from Wrangletown Cider and Northstory Wines in acquiring a production facility and barrel room in what Tynel calls the Septentrio Winery “beautiful winery that Robert Good650 6th St., Arcata man built,” in the old Iron Works Open Wednesday-Friday building on I Street. They are now 4 pM to 10 PM, Saturday 2 to 10 PM, arranging for private barrel tastings Sunday 2 to 8 PM, and working with a variety of local (707) 672-2058 caterers and restaurateurs to create septentriowinery.com pop-up dinners and small events. They have also begun a new part← Market salad with nership with Executive Chef Casaseared peach. ndra Kelly’s The Nosh food truck, ↙ Chacuterie board. offering small bites like fries, oysters, almonds and olives, as well as salads, lamb sliders, barbacoa cauliflower tacos, and rotating entree specials like fried chicken and steaks. All of which pair wonderfully with the vast variety of wines created by Septentrio. Humphreys and Sandifer’s goal in beginning Septentrio Winery has always been to bring people together, to offer a space for guests to gather and connect and to collaborate with other businesses in the community. The past year has made connection difficult but they stayed firm in their intentions. And now as many of us are reconnecting with friends and loved ones, Septentrio Winery has tables ready. Whether you gather at the tasting room, or in a private small group in the Barrel Room, the professional (and very fashionable) staff and phenomenal wines make it easy to relax and begin to feel a bit like ourselves again. After all, “wine is a connector” and there is nothing we need more right now than to feel that connection (and maybe get a little wine-drunk).

have been about the start of the school year, reveled in shopping for supplies. The satisfying heft of a new notebook, the fresh curls of wood from sharpening a new pencil. (Inhales deeply.) And when we grow up, we peer into stationery shops with the glee of Holly Golightly at Tiffany’s. “I think I still have my miniature Hello Kitty stapler around here from when I was a kid,” says Lynn Jones, proprietress of Just My Type Letterpress Paperie. Not a shocking revelation, really, considering her store caters to lovers of such analog delights as handpressed cards, journals and prints. Well, more than analog — around the shop are 10 presses, ranging from a desktop model for business cards to a 1-ton, cast iron behemoth in the window, likely chugging away as her apprentice Taylor Montoya cranks out artful packaging for Dick Taylor Craft Chocolates. Once upon a time, Jones

says, “I was a graphic design student and I really didn’t know anything about letterpresses.” Then she spent a summer working with David Lance Goines in Berkeley, learning to use printing presses. “And I was hooked,” on the process, the control and the presses themselves. Jones, who’d met her husband, Andy, at Humboldt State University, returned to settle in our county and discovered an old Eureka print shop’s equipment was for sale. With some 20 cabinets of type and a trove of outdated equipment, they knew it was time to set up a business. In 2016, Just My Type opened around the corner from its current spot in the Carson Block Building’s ground floor. Since the move onto F Street, the foot traffic has blown up. Customers come in for custom wedding invitations, to browse work by local makers — Makino Studios, Pen and Pine, Fickle Hill Letterpress, Graphic Heart,

Skye Henterly and others — and the wall of mostly indie cards. In an age of e-cards, they offer old-fashioned distinction with tactile pleasure and sentiments for our times, like Jones’ apology card with an untrustworthy looking raccoon or her platypus card, shruggingly announcing, “It’s complicated.” To feed your Goth soul, Jones also has a series of “dark” pieces. “So much of the stationery world is cutesy and pink and floral,” Jones says. And so she created images like a scorpion or bat (a popular choice among her locally printed vinyl stickers). Among her linoleum-carved prints are rocky Humboldt beachscapes, lounging cats and bright California poppies. There are even home-friendly versions of the stunning mural she created at the Morris Graves Museum of Art for the Eureka Street Art Festival — a vertiginous upward view of redwoods in black and white. She also won a pair of Louie’s — the Oscars of the greeting card world — for her stationery box sets and her plantable seed paper cards that read, “They tried to bury us, they didn’t know we were seeds.” Place them in soil and watch them sprout wildflowers. ← Lynn Jones operates a 1-ton, cast iron press that sits in the window. → Lynn Jones, in her element. .

In the charming town of Trinidad, Humboldt County’s fishing past lives on. Every day, the boats that dot the small harbor’s moorings scour the sea among dramatic, rocky outcroppings. For a look back, tour the Trinidad Museum, then stop at the replica 1949 Memorial Lighthouse honoring those lost or buried at sea, and take in the view and the sea air. You can tour the 1871 Trinidad Head Lighthouse (a working navigational aid) from 10 AM. to noon on the first Saturday of every month. In summer, the annual Fish Festival and Blackberry Festival bring in folks from all over.

The sign says horses have the right of way, which should give you an idea of McKinleyville’s vibe. Some of its biggest attractions are outdoors. Play with the kids in Hiller Park and hike or bike the paved Hammond Trail. Ditch your shoes and spend the day at Clam Beach (yup, there are clams out there for the digging) kayaking, paddleboarding or just relaxing among the dunes. There’s a course if you’re itching for a round of golf, and there’s even a sweet, little waterfall tucked along the road into town. Already visited the world’s biggest ball of string? Swing by the world’s tallest totem pole. And on McKinleyville Arts Night, the third Friday of each month when COVID-19 conditions allow, you can tool around town and see what local artists, artisans and musicians young and old are creating — maybe even take a piece home.

Home to Humboldt State University, Arcata is a magnet for arts, culture, entertainment and education. Hike the Arcata Community Forest or play among the big trees in Redwood Park. Cruise the plaza for Saturday's farmers market or a festival. Go from locavore to exotic in the restaurants and cafés. At night, the bars, theaters and restaurants are stages for live music for every taste — from big name performers to hometown legends. The music spills into the streets and shops and restaurants turn into galleries during Arts! Arcata, the second Friday of every month when COVID-19 conditions allow.

Humboldt residents socked in by summer fog know that they can find warm refuge in Blue Lake, a picturesque town whose motto is “sunshine and sea air.” On the shores of the Mad River, locals enjoy fishing, sunbathing and swimming in the summer, and fun hikes and bike trails anytime. In addition to fun outdoor adventures, Blue Lake is a hub for music and the arts. The Dell’Arte International School of Physical Theatre imports students from around the world, producing shows throughout the year, including the annual five-week Baduwa't Festival. You can also sing along at Humboldt Folklife Festival in July, a weeklong celebration with live music, dancing and workshops. With the little ones? Check out photos and artifacts from Blue Lake’s pioneer, indigenous, logging and railroad histories at the Blue Lake Museum or visit Perigot Park, where you can play baseball or soak up picturesque views.

Eureka ← This place is full of stories. Once a raucous lumber town and fishing village, early Eureka bustled with saloons and brothels, along with a hardy mix of rugged entrepreneurs looking to settle the North Coast. Jack London himself is said to have taken a swing in a barroom brawl in Old Town. Today, the boats still bring crab and salmon to the docks, and historic buildings at the edge of Humboldt Bay form a walkable enclave of places to browse, drink and dine. Slow down with a stroll along the waterfront trail or lean on the railing of the Old Town boardwalk and watch the boats go by. And don’t miss Arts Alive!, the first Saturday night of each month as COVID-19 conditions allow, when the streets fill up with folks touring the shops, restaurants and galleries for local art and live music.

Ferndale ← There’s a reason Hollywood keeps coming to film in Ferndale. It’s an idyllic American small town that hasn’t lost its character. (You might recognize Main Street’s Victorian architecture from movies such as The Majestic and Outbreak.) Ferndale’s downtown offers plenty to explore, including artist galleries, old-fashioned shops, classic restaurants and the Ferndale Museum. Grab a coffee and window shop the vintage storefronts and take photos of the Gingerbread Mansion, or put on your hiking shoes and take in the view from the bluffs in Russ Park or Centerville Beach. Downtown or in the great outdoors, it’s a trip back in time.

Even those of us who live among redwood giants look up now and then in amazement. Driving along the Avenue ek e Cre of the Giants shows you something Bridg new around every corner, something photos and video can’t quite do justice. We lean on words like “majesty” and “breathtaking,” but you kind of have to be there under the ancient, towering canopy to really get it. Take it slow and plan to make a few stops. (Are you not going to stop and see chainsaw sculptures? Please.) From kitsch to fine woodwork, the shops along the Avenue are their own local attraction. South is Garberville, where you can hit the farmers market for an afternoon treat and maybe catch a show. The nearby Mateel Community Center regularly brings in major musical acts and puts on some of Humboldt’s biggest festivals.

South of the Avenue of the Giants lies Garberville, where you can escape the coastal fog, enjoy warmer temperatures and hit the farmers market for a treat. The little town has a surprisingly robust nightlife scene and a wild and beautiful landscape of hills and forest that you can sample in Tooby Memorial Park. Check the calendar and see what’s playing at the Mateel Community Center in neighboring Redway — the venue regularly brings in major musical acts.

Aptly named the “lost coast,” Shelter Cove is nestled in a stretch of beach that offers a natural retreat tucked away in its own world. Accessible by sea and air, the town has one road in and one road out. Once there, enjoy fishing, hiking, boating, golf, excellent lodging and camping options. Settle in for winter storm watching, whale watching or a hike along a unique, 24-mile stretch of black sand beach. A natural coastline unfettered by highways and the normal comings and goings of humanity make Shelter Cove a singular American destination.
