Nori Muller Hypnosis Now Accepting Clients

Gain Clarity with Colibri Holistic Coaching

Nori

Muller is a certified hypnotist who helps people free them selves from a variety of issues using a cutting-edge method called Rapid Transformational Therapy (RTT). RTT was developed by world-famous hypnotherapist, Marisa Peer. Peer designed RTT to deliver results fast, often in only one to three sessions.

Muller uses RTT in her practice to help her clients experience lifechanging results in as little time as possible. RTT is very effective for feelings of anxiety and stress, self-esteem issues, increasing confidence and motivation, weight issues and many other common problems.

Muller spent over 20 years on her own quest to experience deep healing of the body, mind and spirit. She understands first-hand what it’s like to struggle with difficult issues and ap proaches her clients’ RTT sessions with deep compassion born of this personal experience. After using hypnosis to completely eliminate her symptoms of irritable bowel syndrome, she real ized that our minds can be our most powerful ally in our healing journey. Since discovering RTT about two years ago, she has been able to free herself—and her clients—from such issues as chronic fatigue, feelings of anxiety and low self-esteem.

Muller has a Bachelor of Science degree in Nursing and is a certified hypnotist, certified Rapid Transformational Therapy Practitioner and a member of the National Guild of Hypno tists. She is a dedicated lifelong learner and is always looking for ways to enhance her skills so that her clients experience the best possible care. Muller is based in Tucson. At this time, all RTT sessions are offered online via Zoom. It is just as effective to experience RTT online as it is in-person.

In Buddhist tradition, there are seven factors of awakening. The first is known as Sati, which in English translates to awareness. This gift can then lead to investiga tion, joy, tranquility, concentration and equanimity. At Colibri Holistic Coaching, Carla Echavarri helps clients bring awareness to the areas that are blocking them or making them feel stuck so that organically, they may start to get more clarity.

“As the fog lifts, you intuitively get a better sense of direc tion—a sense of what’s next. As you heal, you vibrate at a higher frequency that allows you to just be; hence, the doing in your life happens organically and without too much effort. You can then channel this healing, positive energy into concrete actions which create a beautiful ripple effect. Now you can create the change you need to live a fuller, more joyful life that truly honors who you came here to be,” enthuses Echavarri. “Through some empowering techniques you can, at your own pace, regain that balance and connection to yourself and to that space of inner wisdom, calm and clarity that we all are born with.”

Echavarri has a bachelor’s in Anthropology from the Univer sity of Arizona, and a master’s in Health Science with a specialty in the psychological well-being of caregivers for dementia and Alzheimer’s patients. She has several years of experience as a col lege and high school teacher in the areas of health, community health and anatomy & physiology. Echavarri has taken special ized courses in Gestalt therapy, reiki and yoga, and is currently pursuing Bioenergetic and Acupressure Healing training.

In sessions with Echavarri, clients can expect: Pranayama breathing techniques, stretching exercises, meditation and visualization, cathartic release through verbal expression and healing energy channeling (reiki).

Register for U.S. Pain Foundation’s Chronic Pain Support Group Leaders Training

Build your practice by registering for U.S. Pain Foundation’s chronic pain support group leaders training and receive Making the Invisible Visible: Chronic Pain Manual for Health Care Providers, written by Gwenn Her man, LCSW, DCSW and Mary French, RN, MSW, LCSW-C, who both have chronic pain. Take an active role in changing how people with chronic pain and conditions are treated.

The next chronic pain support group training will be held virtually via Zoom meetings over a four-week period from October 25 through November 17. The training sessions will be each Tuesday and Thursday from 2 to 4 p.m. Eastern. The dates are: October 25 and 27, November 1, 3, 8, 10, 15 and 17. Apply at PainConnection.org/support-group-leader-trainings

Over 50 million Americans have chronic pain, and this number does not include veterans and children. People with chronic pain are stigmatized by healthcare professionals, are not believed and are under treated—especially people of color, women, migrants and the under-insured. Most people with chronic pain develop depression and anxiety, which can lead to suicide if left untreated.

Training objectives are to empower the leaders so they can teach group members to utilize their own internal healing abili ties, understand the psychosocial stages of pain and grief, learn the Pain Connection group model, incorporate complementary health approaches, learn to develop a Treatment Tree Plan and a Flare-Up and Relapse Plan. Participants will take away tools and skills including: cognitive reframing, acupressure, chakra medita tion, breathing techniques, meditation, guided imagery and more.

Pain Connection leaders facilitate 16 state Chronic Pain Sup port Groups (CPSG) per month. There are also five national CPSGs each month that clients/patients can utilize via Zoom, without leaving home. The calls last between one and one-anda-half hours, with the last 15 minutes saved for breathing and guided imagery techniques. These groups are free. Register at PainConnection.org/support-groups

There are 10 specialized groups: Basic Training for Veterans with Chronic Pain; LGBTQ+ communities; caregivers/partners; Spanish speaking family group; Black, Indigenous and People of Color (BIPOC); The Writing Room; Teen Pain Warriors; Func tional Nutrition; The Reading Room; and Overseas Military/Vets.

For more information, call 800-910-0664, email Gwenn@USPainFoundation.org or visit PainConnection.org or USPainFoundation.org.

Monarch Butterfly Now Officially Endangered

The International Union for Conservation of Nature (IUCN) Red List of Threatened Species numbers 147,517 species, including 41,459 that are threatened with extinction. The latest update adds the migratory mon arch butterfly, a subspecies of the monarch butterfly (Danaus plexippus). In the past decade, the native population has shrunk by between 22 percent and 72 percent during winter migrations from Mexico and California to summer breeding grounds throughout the U.S. and Canada due to logging and deforestation for agriculture and urban development. Pesticides and herbicides kill butterflies and milkweed, the host plant that the larvae of the monarch butterfly feed on. Drought related to climate change limits the growth of milkweed and increases the frequency of catastrophic

wildfires, and temperature extremes trigger earlier migrations before milkweed is available, while severe weather has killed millions of but terflies.

Possible remedies are planting native milkweed, reducing pesticide and protecting the overwintering sites. IUCN Director General Dr. Bruno Oberle says, “To preserve the rich diversity of nature, we need effec tive, fairly governed, protected and conserved areas alongside decisive action to tackle climate change and restore ecosystems. In turn, conserv ing biodiversity supports communities by providing essential services such as food, water and sustainable jobs.”

Take the first step in faith. You don’t have to see the whole staircase, just take the first step.

Save the Sequoias

The U.S. Forest Service is speeding efforts to protect giant sequoias from wildfires; almost 20 percent of the ancient trees have been destroyed by wildfire in the last two years. They will thin the forest in and around sequoia groves by removing brush and smaller trees from 13,000 acres of national forest to protect 12 giant sequoia groves this summer and conduct prescribed burns using the agency’s emergency authority under the National Environmental Policy Act. Forest Service Chief Randy Moore says, “Without urgent action, wildfires could eliminate countless more iconic giant sequoias.”

Giant sequoias can live for more than 3,000 years and are found only on the western slopes of California’s Sierra Nevada mountains. The trees are adapted to fire with thick, spongy bark, and the heat releases seeds from their cones, allowing young trees to take root in areas cleared by fire. A policy to put out wildfires as quickly as possible has created unnaturally dense forests and allowed brush and dead wood to accumulate. Climate change has led to hotter tempera tures, severe drought, a year-round fire season and the proliferation of bark beetles that have killed the drought-weakened trees. Bigger, hotter fires are more likely to reach giant sequoias’ crowns, killing them.

Paintings that tell a story of simpler times in bygone days aptly describes the work of artist Medana Gabbard. This self-taught American folk art painter relies primarily on oils and acrylics and fondly speaks of her cover image, Andrew: “It’s a proud, early morning rooster I named after my father-inlaw, posing with bright autumn pumpkins.”

The opportunity to tell a story is what she enjoys most about the artistic process. Her penchant for vibrant color in general, and the large orange winter squash in particular, is evident. “I put pumpkins in almost every one of my paintings,” she says.

Gabbard’s inspiration comes from all folk artists, past and present. She was greatly influenced by her father, Edward Galda, and brother, Ed Galda, both of whom she deems accomplished artists. “In such a family,” she notes, “my favorite childhood Christmas gifts were always coloring books and crayons.”

The artist was raised in the desert of Arizona and now splits her time between her home studio there and her studio-gal lery in Brandon, Vermont. The Vermont landscape and simple way of life she enjoys there is another popular theme in her art. “People are surprised when they learn I’m not a Vermont native,” she says.

Total Breast Health

Women are encouraged to get a mammogram so they can find any presence of breast cancer as early as possible. But instead of early detection, let’s be proactive in our breast health and identify risk factors so plans can be put into action to improve the health of the breast and reverse develop ing pathology. This is preven tion—not just early detection.

Mammograms image the structure of the breast and thermography images the physiology (for example, an x-ray of your heart shows how big it is and where it is in your chest, whereas an EKG will show the function of the heart). Thermography “shows” the function of the breasts and how healthy they are. Mammograms are after the fact; they can only see what is already there. They can identify a mass, if it is large enough, but cannot distinguish the difference between a benign lump and a a possible cancerous tumor. A tumor must be fed by blood vessels, and that vascular formation starts many years before the tumor begins to grow. The vascular feed produces heat which can be seen with thermal imaging. This is an indication that either the body is preparing to produce a possible cancerous tumor or the mass that is present could possibly be cancerous.

There is a large margin between healthy breasts and breast cancer, and it’s helpful to know where you fall within that spectrum. There are many factors that can contribute to unhealthy breasts, such as dense and fibrocystic breasts, calcifica tions, lymph congestion, inflamma tion, thyroid dysfunction, hormone imbalances and more, which can contribute to dis-ease and a pos sible unfavorable diagnosis down the road.

Thermography can tell you how healthy the breasts are instead of just screening for breast cancer. It also has the potential to truly detect breast cell anomalies long before mammography can detect can cer. This allows one to implement lifestyle changes that can improve the health of the breasts proactively instead of waiting for a cancer diag nosis later.

It is important to know what’s hap pening so you can make positive

changes to improve your breast health. Thermography is an excel lent tool for you and your healthcare practitioner to help identify specific challenges and then monitor the results of the changes you make.

There are many things that we can do to avoid breast cancer, but knowing our risk factors should be at the top of the list. With proper risk assessment that includes different testing modalities, a client is able to determine their risk factors and develop an action plan on how to improve the breast tissue or even reverse the existing developments. Or hopefully, see that you have a low risk for breast cancer so you have one less thing to worry about. Knowledge is power.

How Does Hypnosis Work?

Has your mind ever drifted away while driving and you missed your turn or arrived at your destination without remember ing the drive there? Often, when we are driving, we are on autopilot. After learning a route and taking it many times, we don’t have to think about where we are going. It seems that we get there quicker and we don’t even have to think about it.

Unlike the first time we go somewhere new, we have to pay attention and concentrate. The conscious mind is drifting off and thinking about other things while the subconscious mind comes forward and takes over the driv ing. The mind wanders and you are lost in thought. Your thoughts seem more real than what is happening on the road.

During hypnosis, the subconscious mind is active while the conscious mind relaxes. You are not unconscious or asleep and you remain in control. It is the place in between being awake and asleep. It is in this relaxed state that suggestions into the subconscious mind can support positive change.

When Life Coaching is combined with hypnotherapy, a practitioner will first converse with the client about how they feel and what changes they wish to have in their life. During this conversation, the pair will create state ments of intention or affirmations to integrate into the hypnosis session. The client is in control and the conscious mind is relaxed. The conscious mind can come forward at any time. The subconscious mind will not accept sug gestions that are not aligned with one’s own decisions.

Dawn Marie Davis of Holistic Mind Body Life Coaching offers hypnosis and life coaching sessions in person in the Tucson area or online. Connect at 360-298-4812, YogaWithDawnMarie@gmail.com or DawnMarieDavis.com.

Viewing Art Online Improves Well-Being

Art and music have long been said to soothe the savage soul, and hun dreds of studies have shown that people’s moods and sense of wellbeing are improved by everything from artwork displayed in mental institutions and offices to regu larly visiting art museums. With the pandemic, many museums began offering extensive online tours and exhibits, and a new study from the University of Vienna suggests that online art can have the same effect as “real life” art.

Researchers tested 84 individu als that viewed Monet’s The Water Lily Pond and also photographs of a Japanese bento box that included information on its traditions and food preparation, such as might be found in a history museum. Par ticipants typically spent one to two minutes with each viewing. Followup questionnaires found that even a short online experience encouraged positive states like serenity, hap piness and stimulation, while also lowering negative states like fear, anger, anxiety and loneliness. Wellbeing effects are most pronounced, wrote the authors, when “such content is beautiful, meaningful and inspires positive cognitive-emotion al states in the viewer.”

The Balance of Yin Yoga

Let’s talk about a balanced yoga practice. This starts with acknowledging the different ener gies in the body: yin and yang. The idea of yin and yang comes to us from Chinese medicine. Yang energy is more warm, dynamic and mov ing, while yin is cool, quiet and still.

Our bodies are an interesting combination of these two different energies. The yang parts of the body are the blood which moves constantly, the muscles that work and warm, the breath flowing and fluids moving. The yin parts of the body are quieter and like less movement: the bones, tendons and ligaments.

Because these yin parts of the body don’t like as much movement or heat, they seem to respond better to slow, quiet and cool states. Yin yoga is the per fect tool to rejuvenate and strengthen the yin joints with gentle long stretches.

Estimating that the body is about one-third yin and two-thirds yang, one might try doing yin yoga about one third of the time. If practicing yoga three times a week one of those might be a yin yoga class. In this way, we find a balance in our bodies between the yin and the yang.

Relax the Body with Thai Massage

Thai massage is an active form of massage using gentle pressure and dynamic stretching to relax the whole body. This is an ancient heal ing practice that originated in India thousands of years ago. Clients wear comfortable, loose clothing and lay on a mat on the floor. Bolsters and cushions are used to support and assist the body to unwind.

The benefits include less stress in the body, more energy, fewer head aches, cardiovascular improvement, increased range of motion and better flexibility. It can be great for athletes for fast recovery and improved performance.

Too much stress can affect our mental and physical health, leading to serious illnesses including depression, joint pain and lack of mobility. Thai massage helps close the gap between ailments and connection.

Traditional Thai massage is believed to be a practice used in temples in Bangkok by the monks. Yoga and acupressure are also used in combination with clients to move their limbs and increase flexibility.

Contraindications may include high blood pressure, cancer, diabetes, heart disease, osteoporosis and coronary artery disease.

The Power of Befriending Your True Self

Wespend so much time trying to figure out how to do life. We read books, we search for answers, we wish for certainty. Consider the one thing that makes the difference is discovering how best to do YOU.

What would it look like to really do you? Like a virtuoso, I mean. I’m talking about advancing to where you’re a master of YOU-ness who’s flouncing around all sparkly and bold and leaving good vibes in her wake, even if she’s just zipped out real quick to pick up a bottle of wine and some cheese. Where she goes, magic happens—it just does.

That kind of person. That kind of life. You want to know how to get some of that? Here’s the answer: It begins with self-love, babycakes.

Maybe you’re thinking, “Enough with the self-love already.” Fine. I have another way of serving up this dish. Think about this in terms of friendship. I want you to get seri ously interested in befriending yourself. Because when you are befriended by yourself, you become next-level brilliant about how to be the happiest, most self-expressed you.

What does that look like? It begins with curiosity, as you might bring to any new friendship when you feel that first spark of oh-wow-she-seems-cool. Except in this case, you’re leaning in and curious and dancing with some beautiful questions about

you: What matters to me now? What makes me come alive? What does my Soul desire?

Your soul knows when you’re really lis tening versus getting distracted by your phone, by the way. She starts to speak up more, she tugs on your sleeve and whis pers things in your ear at just the right time. She tells the truth. Your truth.

And that’s the kind of friend you want to have. New ideas emerge about what delights you. You treat yourself to inter esting excursions. You order what you really want from the menu of life.

And in the tough moments? Being your own best friend is the best soulful comfort food ever—because when you’re scared or disappointed or discouraged, you speak to yourself the way a loving friend would.

When in doubt, ask what kind of friend you’re being to yourself right now. The more you embrace your own short comings, flaws, gifts and uniqueness—as you would a perfectly imperfect friend you love to pieces no matter what—the sweeter life gets.

Sustainable Tucson

Putting Sustainability at the Heart of Our Community

Ahealthyplanet is something everyone wants, but not all are sure how to achieve it. Although some would rely on government action in order to make it happen, many people want to contribute toward that goal with personal actions and behaviors. Fortunately, there are community resources.

Sustainable Tucson is a nonprofit volunteer organization founded in 2006. The mission of Sustainable Tucson is to work with others to build community capacity for a sustainable future in Tuc son, in harmony with our Sonoran desert home and life on Earth.

The organization focuses on the entire range of issues required to achieve a sustainable community. Programming highlights the interconnections between those issues through education, action and advocacy. To achieve this, Sustainable Tucson pres ents monthly public meetings, topical workshops and multi-ses sion training courses; organizes special events; supports working group actions in the community; and galvanizes public support for policies that support the organization’s mission.

The monthly meetings, all free to the public, offer informative presentations by experts from the Tucson community and be yond. Topics include, among others, water use, energy, transpor tation, housing, food, agriculture and local economy—all focused on building a healthy, resilient community in the face of climate

challenges. Discussions with the presenters give attendees the opportunity to learn what they can do to maintain a healthy plan et. For example, to ensure clean air and clean water for Tucson (past meeting topics) or, as in the most recent meeting, to prepare for and respond to climate-driven emergencies and health risks, particularly ones related to excess heat. Meeting announcements are posted monthly online at SustainableTucson.org

Beyond these meetings, Sustainable Tucson offers an excellent learning opportunity for anyone who wants to explore sustain ability more in-depth. The Ambassadors of Sustainability training program meets for 12 weeks. Local experts and activists explore topics such as water, food resilience, shade, sustainable housing, green infrastructure and much more. Participants also receive training and practice in communicating about sustainability. A new season of the program will start in Spring 2023. The public is also welcome to participate in the Sustainable Leadership Train ing workshops, with a new series starting this month.

For any who are ready for active projects in the community, the Working Groups and Committees are the place to look. These groups, a relatively recent addition to Sustainable Tuc son programming, all grew out of an issue that volunteers were passionate about, and there have already been some exciting successes. For example, Habitat Restoration, with a grant from the Leveler Foundation, has planted pollinator gardens adjoin ing two vegetable gardens affiliated with Community Gardens of Tucson, and has more gardens in the works. The Charitable and Faith-Based Sustainability Committee worked with the Kidane Mehret Eritrean Orthodox Tewahedo Church to install raised-bed gardens and create food-growing opportunities at the church; the project had support from the African-American Legacy Fund of the Community Foundation for Southern Ari zona. This committee hopes to expand sustainability features at other institutions.

The Zero Waste Working Group is perhaps the most active, with current projects working to encourage use of reusable takeout containers at local restaurants and in dining halls at the Uni versity of Arizona, as well as a program exploring ways to reduce food waste in Tucson. An exciting spin-off from this group is the Tucson Repair Cafe. Anyone can bring an item in need of repair, from electronics to clothing to household small appliances, and volunteer repairers will fix the item. All these projects help to keep things out of the landfill, a valuable step toward a more sustainable community. Volunteers are welcome to join one (or more) of the working groups and get involved with an ongoing project or initiate one of their own.

One more important way to support Tucson’s move toward a sustainable community is through advocacy. Sustainable Tucson has submitted feedback on two major City of Tucson initiatives, the Climate Action Plan and the transition of the Los Reales Landfill to a Sustainability Campus. Individuals can also be active in advocating, by signing up for the Environmental Advocates elist (send email address to Jana@SustainableTucson.org) and then contacting elected officials in response to the action alerts.

How does our health help a healthy planet?

Think of the rings that form from a stone tossed into a pond. If you are the stone, each ring affects those closest to you and the rings continue to flow out to literally the planet. So, what you do, how you care for yourself, how you eat, how you play, how you smile and everything you do translates to a healthy planet.

Besides fitness, good diet, nutrition and positive mental attitude, here are some of the things we can do to affect our rings: avoid plastics, recycle, use solar, garden, always find the good, get outside, stay pos itive, be kind and never give up. The more we all work on our selves, the healthier our planet will be. What do your rings say?

YWCA of Southern Arizona Joins & Expands the Tucson 2030 District

The YWCA of Southern Arizona has joined the Tucson 2030 District (T2030D) as a partner in the district’s mission to create a healthy community and mitigate climate change by helping Tucson businesses, organizations and residents reduce their energy, water and transportation emissions and usage.

“The stakes couldn’t be higher,” says Magdalena Verdugo, CEO of the YWCA of Southern Arizona, of the need for reducing energy and water usage. “We are already seeing the impacts of higher temperatures from a warming planet. We need to start working as a community to begin the process of both mitigating the dangers of climate change and, even more importantly, building resilience. This is especially true for our underserved populations.”

Last year, the heat claimed 339 lives in Maricopa County alone, according to the Arizona Department of Health Services.

“The YWCA will strengthen our commitment to engage all of Tucson in taking the steps and making the commitment to protecting the planet, but also the people who live and work in our beautiful Sonoran Desert,” says Karen Peterson, T2030D chair. “Now in its 105th year of commitment to the health and well-being of women and their families in Southern Arizona, the YWCA will bring its tradition of community outreach and action to the T2030D’s work of reducing harmful environmental and atmospheric pollutants.”

Verdugo adds that the partnership with T2030D will “ensure energy equity in Tucson’s poorest neighborhoods. There are numerous programs and financial incentives for weatherizing homes and conserving water—both of which can also save money. One of our goals is to make sure that everyone knows what’s available to them, and that requires communication.”

SUSTAINABLE SANCTUARIES SUPPORTING HUMAN AND PLANETARY HEALTH AT HOME

Nothing underscored the importance of a comfortable and versatile sanctuary quite like the pandemic. Stuck at home isolating, many families reconfigured their living arrangements to accommodate expand ing uses for work, schooling, cooking, entertainment and more. Today, that spirit of renewal lingers, prompting steady and robust activity in the construction and interior design industries.

A house is literally our shelter from the storm, made more critical as we increasingly encounter extreme and unprecedented weather events due to climate change. When we upgrade, re model, build or buy new cocoons for our families, the time is ripe to incorporate elements that preserve and promote the health of humans and the planet.

Inspiring Goals

Lindsay Baker, CEO of the International Living Future Institute (ILFI), is part of a growing community of industry profes sionals trying to figure out how to design, build and operate structures in more environmentally sustainable, socially

impactful and healthy ways. “We ask what would it look like if a building were to give back more to the world than it took,” she explains. “We’re a resource-consumptive industry with a large carbon footprint. Forty percent of global carbon emissions are caused by the energy required to construct and operate buildings. We also use lots of materials that pose negative impacts on people’s health—products known to contain carcinogens or cause respiratory problems—and people spend 90 percent of their time indoors, so everything we’re exposed to indoors has a huge impact on our health.”

The ILFI Living Building Challenge sets bold aspirational goals, and buildings around the world have proven that it is possible to hit these benchmarks. “The energy impera tive is that the building produces more energy than it consumes, and that happens by generating renewable energy like solar power onsite and using very little energy,” Baker asserts. “For water, we ask that everyone return the water that goes through the building cleaner than it entered, which means people need to treat water onsite and use a lot less of it. You can do that with composting toilets, as well as grey water systems and rainwa ter recapture strategies.”

Baker is proud of ILFI’s ambitious goals. “If you decide to do a renovation to save 5 or 10 percent of your water or energy consumption, it will feel good to get there, but what we’ve found is that when you set a really exciting target for yourself, the whole process is more fun and you get further with similar amounts of effort and money, because you’re thinking about systems differently, questioning assump tions about what a home might be capable of doing and employing a different level of creativity. At the end of the day, it can lead to a much more beautiful, more efficient building.”

Energy Conservation

Energy conservation is job number one for Jennifer Languell, founder and president of Trifecta Construction Solutions, in Babcock Ranch, Florida. “An inexpensive but impactful upgrade is adding insulation. If you’re in an existing house, add insulation on top of what you already have. If you’re new construction, beef it up. You also want to address unwanted points of air infiltration using gaskets, weather stripping and caulking around exterior doors and windows. Over time, these items can shrink or get damaged, and may need to be replaced to seal the house and minimize air drafts,” she says. “You want to improve efficiency first, which costs much less than transitioning to renewable energy. And when you do transition, you only have to buy smaller quantities of photovoltaic panels to offset your power generation.”

low-flow shower heads, toilets and faucets, which cost the same as traditional-flow fix tures, as well as a visit from the plumber to fix any leaks. Minimizing or eliminating turf grass and planting drought-tolerant, native vegetation outside will also significantly cut water use, Languell suggests.

“Grey water and rainwater collection systems are gaining momentum, and these systems for home use have come leaps and bounds from where they were 10 years ago,” she says. “They can take water from your laundry or shower, treat it, and use it to flush toilets, for example— a huge benefit for the West Coast and a huge water savings, because you’re using your water twice before you dispose of it.”

Eco-Responsible Materials

According to Languell, windows are climate-specific and can be modified by adding or subtracting panes, coatings and treatments. “In Montana, I want the heat from the sun coming into my house, but in Florida, I don’t,” she says. “Natural light is great, but there’s a balance between your glass-to-wall ratio. In Florida, you would never have a skylight, but up north you’d consider it. And at this point, everyone should be transi tioning to LED lighting, which will save money and energy.”

Water Preservation

With regard to building materials and products, the annual ILFI Red List calls out chemicals with negative human health impacts that shouldn’t be used in buildings, such as bisphenol A, chlo rofluorocarbons, formaldehyde, flame retardants, phthalates, toxic heavy metals and volatile organic compounds (VOC). Its Declare label is like a nutrition sticker that details what is in a building product, whether it is free of Red List chemicals and what its carbon footprint is.

the products put in their homes,” Baker says. “One of the rules of thumb I like to apply is to ask, ‘How far is this material removed from nature?’ Wood is one of the better materials from an ecological and health standpoint. Fake wood floor ing that is meant to look like wood but in fact isn’t—not so much. A lot of what we’re supporting is about getting back to the basics, removing chemicals and using brick, wood and clay.”

According to Languell, the more durable and local a material is, the bet ter for the environment. “I’d never say no to a metal or concrete roof that lasts 50 years versus shingles with a 15-year cycle. Although bamboo is rapidly renewable, most of it comes from China, so the greenhouse gases associated with the transportation makes it less environ mentally friendly. Local materials are ideal. The closer the better. Get granite from Georgia, instead of Italy.”

When it comes to human health, home décor and cleaning products are equally as important as the construction materials, Languell advises. “Many times we’ll build a healthy and efficient home and then people put all sorts of fabrics and chemicals in there that are off-gas sing because they’re not thinking about the health of the indoor environment.”

Sustainable and Healthy Furnishings

“There’s good, better and best quality furniture,” says Robin Wilson, a New York City eco-designer and founder of Robin Wilson Home. “Good might

use inexpensive wood or heavy-duty cardboards that look great, but if you sit on the arm of the sofa, it caves in. Better might have a less expensive wood, but it’s solid frame construction. The best is a very good wood and solid frame construction made for heirloom qual ity. There are costs associated with each level, and I recommend spending the most budget you have on a quality prod uct, because that sofa, if it’s made well and it’s styled in a classic design, can be recovered over and over again; therefore, you ’re being eco-friendly to the world because it’s not going into a landfill.”

Her favorite materials for furnishings are sustainably forested or reclaimed wood, long-lasting metals like steel and aluminum, fast-growing bamboo and recycled or reclaimed plastics. She’s also a proponent of vintage pieces. “With all furniture, if it can be salvaged, salvage it. Healthwise, make sure the materials are hyper-washed to protect you from allergens. Old glazes or paints might have lead in them, so take vintage furniture to a professional that uses the right safety equipment or go to YouTube University and make sure that you protect yourself with gear to rework the piece in a garage or outdoor space. Always choose nontoxic paints and stains with low to no VOCs.”

Biophilic Design

Baker is particularly excited about interior design innovations that recon nect us to nature, known as biophilic design. “Natural light is important, but also, lighting manufacturers are figuring out how to produce light ing that feels like you’ re sitting outside in a forest while a cloud passes by or under a tree with dappled light. Mo hawk and Interface offer low-carbon, healthy carpets that mimic natural forms like a rocky beach,” she says. “Fractals are often mentioned in biophilic design

because they’re fascinating geometric compositions in nature like fly wings and bark that have an inherent intelligence to them, and we’ve come to understand that these natural elements are not just inter esting, they also have measurable positive impact on our psyche and mental health.”

Durability

“I rate durability over everything else. If you build it once and it doesn’t get destroyed by a natural disaster, you’re going to generate less waste and use fewer resources,” Languell says. “Durability might mean fireproofing in California, windproofing in Florida and floodproof ing in Louisiana. It also means future proofing your home, especially if you’re building new. Anticipate technologies that are coming. Even if you can’t afford photovoltaic panels now, for a couple of bucks, you can run electric conduit from your panel up to your roof so if ever you decide to buy them, it’s not a major overhaul of your house. Dual-pipe your house and have the pipes ready to tie in rainwater or grey water, even if it’s not financially viable right now. Wire your house for a 220-volt plug in your garage so everyone that has an electric vehicle can charge it overnight.”

Nature’s Virus Killer

Copper can stop a virus before it starts

Scientists have discovered a natural way to kill germs fast. Now thousands of people are using it against viruses and bacteria that cause illness.

Colds and many other illnesses start when viruses get in your nose and multiply. If you don’t stop them early, they spread and cause misery.

Hundreds of studies confirm copper kills viruses and bacteria almost instantly just by touch.

That’s why ancient Greeks and Egyptians used copper to purify water and heal wounds. They didn’t know about viruses and bacteria, but now we do.

“The antimicrobial activity of copper is well established.” National Institutes of Health.

Scientists say copper’s high conductance disrupts the electrical balance in a microbe cell and destroys it in seconds.

The EPA recommended hospitals use copper for touch surfaces like faucets and doorknobs. This cut the spread of MRSA and other illnesses by over half, and saved lives.

The strong scientific evidence gave inventor Doug Cornell an idea. He made a smooth copper probe

with a tip to fit in the bottom of the nostril, where viruses collect.

When he felt a tickle in his nose like a cold about to start, he rubbed the copper gently in his nose for 60 seconds.

“It worked!” he exclaimed. “The cold never happened. I used to get 2-3 bad colds every year. Now I use my device whenever I feel a sign I am about to get sick.”

He hasn’t had a cold in 10 years.

Users say:

“It works! I love it!”

“I can’t believe how good my nose feels.”

“Is it supposed to work that fast?”

“One of the best presents ever.”

“Sixteen flights, not a sniffle!”

“Cold sores gone!”

“It saved me last holidays. The kids all got sick, but not me.”

“I am shocked! My sinus cleared, no more headache, no more congestion.”

“Best sleep I’ve had in years!”

After his first success with it, he asked relatives and friends to try it. They all said it worked, so he patented CopperZap® and put it on the market.

Soon hundreds of people had tried it. 99% said copper worked if they used it right away at the first sign of germs, like a tickle in the nose or a scratchy throat.

Longtime users say they haven’t been sick in years. They have less stress, less medical costs, and more time to enjoy life.

Customers report using copper against:

Colds Flu

Virus variants

Sinus trouble

Cold sores

Fever blisters

Canker sores

Strep throat

Night stuffiness

Morning congestion

Nasal drip

Infected sores

Infected wounds Styes Ringworm

Other microbial threats

The handle is curved and textured to increase contact. Copper can kill germs picked up on fingers and hands after you touch things other people have touched.

The EPA says copper works just as well when tarnished.

Dr. Bill Keevil led one of the science teams. He placed millions of viruses on a copper surface. “They started to die literally as soon as they touched it.”

CopperZap® is made in the USA of pure copper. It has a 90-day full money back guarantee. Price $79.95. Get $10 off each CopperZap with code NATA31.

other types of electromagnetic radiation, affects 30 percent of the population and is recognized by the Americans with Disabilities Act and Medicare. Exposure to microwave radiation has also been as signed its own international medical ICD billing code: W90.

Negative impact on plants and animals

Environmental and Health Impact of Tucson’s 5G Cell Tower Deployment

5G cell tower deployment began in 2018 with one single tower in Menlo Park. Now, close to 450 have been installed in a densification that has been largely unregulated by our local government. These towers emit continuous, pulse-modulated microwave radiation 24/7 and represent the newest, most rapidlygrowing source of environmental pollution in Tucson.

Tucson’s

The 5G towers are often referred to as “small cell poles”. They may be smaller in size, but they often deliver more powerful radiation than many 4G macro towers due to their high capacity and close proximity. The towers are being installed next to homes and schools, sometimes directly in front of bedroom windows and classrooms. Their close proximity to homes has a negative impact on property values, not to mention impeding enjoyment of beautiful mountain views and sunsets. But what about the impacts on our health and on the well-being of desert plants and animals?

Negative impact on our health

The science is clear that exposure to microwave radiation poses a significant danger to human health. It is associated with numerous debilitating symptoms, such as sleep dif ficulty, headaches, skin rashes, memory loss and dizziness. Serious health effects from long-term exposure include neuropsychiatric and reproductive disorders, immune dys function, DNA damage and cancer. The peer-reviewed and government studies, based on 100 years of research, number over 20,000—far more than for tobacco and asbestos combined (see SafeTechTucson.com/harmful-effects).

A 2022 review of studies of the health impacts of living near cell towers in Environ mental Research confirms three specific effects: functional disturbances of the central nervous system (also known as “microwave sickness”), cancer and changes in bio chemical parameters such as HBA1c, a marker for diabetes.

Electromagnetic Sensitivity (EMS), a high sensitivity to microwave radiation and

Microwave radiation affects all living beings at the cellular level, including our precious plants and animals of the Sonoran Desert. A May 2021 review of 1,200 studies published in Review of Environmental Health reported a wide variety of negative impacts on flora and many types of mammals, birds, insects, amphibians and reptiles. The adverse effects on animals include alterations to key survival behaviors: migration, orientation, food finding, reproduction, mating and defense. Cell tower radiation exposure is also a leading cause of disap pearing pollinators. The review authors warn strongly against the unregulated and dramatic proliferation of microwave radiation required for 5G technologies, such as the Internet of Things, Internet of Bodies and SMART surveillance cities.

Solving the 5G cell tower problem in Tucson

Plan Tucson calls for a “sustainable com munity that embraces prosperity, equity and a healthy environment”. How can we ensure a healthy and prosperous future for Tucson when its people, plants and animals are being harmed by increasing exposure to microwave radiation?

Federal and state laws passed by Congress expressly preserve some local control over wireless telecommunications facilities such as the 5G cell towers. Spe cifically, municipalities have the power to deny installation permits for matters of public safety (A.R.S. 9-592). The laws allow them to adopt protective telecom munications ordinances, as is occurring in many other cities across the country.

Despite numerous requests for protec tions from residents, Tucson currently

does not have such a protective telecommunications ordinance. Harm to people, plants and animals continues unabated. The “rubber-stamp” approval of permits allowed by our Mayor and City Council is a violation of our fundamental rights to safety and property enshrined in the Arizona and United States Con stitutions—and of the Oaths of Office they took to protect these rights.

In addition to adopting a protective ordinance, our local of ficials can take the initiative to conduct an investigation into the dangers of microwave radiation, as done by New Hampshire’s legislature. They can inform the public of the dangers and help people with EMS find medical care and ADA accommodations. They can take advantage of Tucson’s vast fiber optic cable net work to provide safer, faster wired connections to serve homes, schools and workplaces. Such a Fiber-to-The-Premises system would allow placement of wireless facilities away from densely populated areas, as done in Chattanooga, Tennessee.

What We Can Do

Protect ourselves from involuntary cell tower radiation.

If you live near a 5G cell tower, it is important to determine which areas of your home have unsafe levels of microwave radiation. Options are to avoid these areas or to shield walls, windows and roofs with RF-blocking material. Reduce your exposure to other sources of radiation over which you do have control, such as Wi-Fi routers, cordless (DECT) phones and “smart” appliances.

Inform ourselves and advocate for a protective telecommunications ordinance.

To solve Tucson’s 5G cell tower problem, it is important that we continue to inform ourselves with accurate information about their impacts and the role of our public servants in protecting us. Read the Notices to the City of Tucson prepared by residents and business owners from across Pima County (especially Notice #3 regarding the failure to protect electrosensitive resi dents and the plants and animals of the Sonoran Desert) at SafeTechTucson.com/notices-and-affidavits

Join the email list of Safe Tech Tucson to stay up-to-date on local happenings.

Other sources of information are the Environmental Health Trust and Americans for Responsible Technology. You can advocate for a protective ordinance by contacting your City Council Member, making public comments at City Council Meetings, engaging with like-minded residents and writing an Op Ed in the newspaper.

Beauty Has No Expiration Tucson Photographer Celebrates Women Over 50

MichelleBeaumont-Owens has always had a flair for photography. Despite her innate talent, she didn’t pursue a career as a professional photographer until she turned 50.

Born in Canoga Park, and raised in Solvang, California, Beau mont-Owens bought her first camera—a Kodak 110 instamatic pocket camera—when she was 11, with money earned from her paper route. Even though it was an expensive hobby for a young girl, she continually bought film and paid to develop the pictures. She never stopped, at least not until she purchased a digital cam era in her late 30s.

Beaumont-Owens’s parents convinced her that photography was not a lucrative career, and instead she worked in the hightech industry for 30 years. In 2001, she moved from San Jose, California to Tucson. In 2018, after caregiving for her oldest sis ter who died after a brutal fight with breast cancer, BeaumontOwens reevaluated the meaning of her life and decided that it

was time to pursue her love of photography as a business.

“I had crossed over the threshold of 50 years old, and I rue fully considered that my life might already be two-thirds over. I spent the summer portfolio-building while simultaneously doing a deep dive into Photoshop to learn portrait retouching techniques,” she relates. She joined a weekly networking group, Business Networking International, had business cards printed for Artifact Photography Studio and opened her calendar for bookings. And she has never looked back.

Beaumont-Owens found that she really enjoyed photograph ing women, and refers to herself as a “styleographer”, a word her publicist coined to describe her unique work as a stylist and photographer. All clients receive a consultation to design the photo shoot of their dreams. It’s important for her to under stand the client’s goals and how the photos will be used, in order to select the perfect wardrobe, accessories, lighting and backdrops to complement the desired looks.

“We are capturing my client’s legacy. The portraits we capture will outlive both my client and me and will be enjoyed by future generations. I want my clients’ portraits to be an authentic rep resentation of who they are and who they aspire to be,” she says.

Most of Beaumont-Owens’s clients elect to get their hair and makeup done on-site from professional artists that she works with regularly. Beaumont-Owens feels this service makes clients feel more relaxed and confident during the photoshoot sessions, noting that, “Everyone enjoys being pampered and feeling like a celebrity for a day.”

Being both a stylist and photographer together helps clients look their best. Beaumont-Owens loves any opportunity to expand her creativity, and to create a mood for the portraits. She perceives that having her own studio is a huge advantage in capturing the photos that clients desire.

Beaumont-Owens has full control over all the elements in her studio, which gives her the ability to focus on guiding clients into flattering poses and capturing beautiful expressions that reflect their true personalities. “One can never predict the weather when photographing outdoors, but conditions are

always perfect in my studio,” she says.

“A photographer coaches expressions from people during a photoshoot, so it is important that a client clicks with the photographer to feel comfortable and have an enjoyable experience. A thought ful photographer will help clients feel empowered in front of the camera. That is my superpower—to instantly connect with people, which allows them to relax, be themselves and have fun during the photoshoot,” she opines.

Beaumont-Owens earned an Associ ate level accreditation by The Portrait Masters, which recognizes some of the world’s best photographers. Whether you need a well-crafted headshot for business, eye-catching personal branding photos, engaging visual content for a website or a boudoir style portfolio, Artifact Photog raphy Studio will create magazine quality portraits for you.

Q&A with Photographer

Michelle Beaumont-Owens

When you do a portrait, what are you looking to capture?

Connection. A successful portrait evokes an emotional connection between the viewer and the subject of the photograph.

Can you give us an example of a portrait with meaning and an emotional appeal?

Absolutely. I photographed a participant for my 50 Over 50 project as a Phoenix rising from the flames. During our prephotoshoot consultation, we discussed how she had recently been through a painful divorce and was in the process of starting a fitness business. As I listened to her experiences and how her story was evolving, I had a vision of her in my mind as a Phoenix rising from the flames.

I shared the idea with her, and we both loved it. Next thing you know, we were collaboratively figuring out how to style her into a Phoenix complete with wings and flames. She cried tears of joy when the artistic portrait was unveiled to her. The portrait, Phoenix Rising, will serve as a reminder—a touchstone if you

will—that she can transform herself and rise above adversity, time and time again. Plus, what an amazing piece of artwork to include as part of her personal legacy.

Is the lighting of the individual or the background more important?

Lighting. In photography, the photogra pher paints with light. When the lighting is perfect, it sculpts the face and makes the portrait look three-dimensional.

I have many lights and modifiers. My favorite setup now is natural light com bined with a strobe. This combination creates a luminous look for the portrait.

Is it important for you to be recognized as a portrait photographer?

I think when you do anything well, it’s wonderful to be recognized for it. Recently at a networking event, a woman approached me who recognized me from social media, told me she followed my work and was a fan. I felt like a celebrity!

What is the most rewarding aspect of your work?

Clients will constantly lament that they are not photogenic when we initially meet. They are so surprised at their viewing sessions when they love their portraits. It’s the best feeling for me when I can shift their negative thoughts into positive experiences.

Carlotta Flores and Michelle Beaumont-Owens Renee Deeter by Michelle Beaumont-Owens Jan Froeschle by Michelle Beaumont-Owens
31October 2022

Women walk out of my door feeling better about themselves than when they walked in. I will never tire of helping people feel better about themselves. I find that both personally and professionally rewarding.

Where did the idea of your 50 Over 50 project originate?

I would love to say it was my brainchild, but it’s not. The first project started in Australia, and now it’s a global sensation. In 2021, the idea went mainstream when Forbes magazine published its first 50 Over 50 Vision list. In fact, one of the women on that list, Tucson’s Carlotta Flores, was the 50th woman photographed for my Wise Women: The 50 Over 50 Project.

Initiating a 50 Over 50 project excited me because my life significantly changed when I turned 50. Women over 50 deserve recognition. It’s a time in most women’s lives when they begin to feel in visible and not as valued as we once were. We are a culture that celebrates youth. Women 50+ are a wealth of knowledge and they are making huge impacts in their communities and the world.

A different component to my project is that I will also be publishing Wise Women: The 50 Over 50 Portrait Maga zine. Every woman in the project is wor thy of having her own memoir published, so I am thrilled that each participant will be spotlighted with a feature article and photos from her portrait collection.

What can you tell us about the Wise Women: The 50 Over 50 Portrait Gala?

The Portrait Gala will be a truly special evening. Meet and mingle with these 50 amazing women. Enjoy talking with them and viewing their creative portraits. The venue has both indoor and outdoor areas with plenty of seating and plentiful, free parking.

The Gala will be at the Savoy Opera House on October 13 at 5 p.m. In addi tion to the portrait gallery, the fun-filled evening includes a buffet dinner with dessert bar and a no host bar; magic by master illusionist Rodney Housley; dance music by DJ Jonas Hunter; magic by Neal Kreuser; and a special raffle to win a makeover, photoshoot and portrait portfolio with me.

How much are tickets and where can you buy them?

Tickets are $55 until October 12 and $75 at the door (if available). They are avail able at The50Over50Experience.com.

Do you have any favorite quotes?

“Photography is not about cameras, gadgets and gismos. Photography is about photographers. A camera didn’t make a great picture any more than a typewriter wrote a great novel.” ~ Peter Adams

How would you describe your self in four words?

Creative, determined, problem-solver and fun. I am known to bring the party!

The Joy of Movement

DANCING BOOSTS OUR HEALTH AND HAPPINESS

Whether it’s salsa, hip-hop, belly dance or ballet, find ing our groove has proven to ease depression, sup port the cardiovascular system and improve overall joint function. By all accounts, dancing gives us a step toward better health, but equally as noteworthy is its potential to bring more fun into our lives. Contrary to popular opinion, dancing is not just for kids, and special ability is not necessary. “You are never too old, and there is no such thing as two left feet, but we can also argue: When you have great instructors teaching you, you can learn anything as a beginner,” says Monique Maldonado, marketing director of the Latin Rhythms Academy of Dance and Performance, in Chicago.

Brainy Benefits

Stepping into a dance studio can help us enrich our lives while sharpening cognitive function. After participating in an eightmonth dance program during which they memorized intricate steps of the merengue, salsa and samba, Spanish-speaking, middleaged and older adults had significant improvement in working memory scores, reported University of Illinois Chicago researchers in Frontiers in Aging Neuroscience. “Just like working out and puzzles, dancing works out brain paths and keeps them active and healthy,” says Maldonado.

Tango lovers will be pleased to know that the pas sionate dance style has been shown in a 2017 study published in Complementary Therapies in Medicine to lower anxiety and stress levels more effectively than mindfulness meditation.

Individual Moves

Mike Hallworth teaches cruise ship passen gers, mostly in their 60s and 70s, how to navi gate the dance floor. “We teach all the main dance genres, including ballroom and Latin American, salsa and mambo, along with modern jive,” says the Southport, Englandbased, lifelong dancer who teaches with his wife, Jan. “For those not as agile as they would like to be, I would suggest starting with ballroom, social foxtrot and waltz, then progress to Latin American, cha-cha and rumba.”

At age 75, he partially attributes his basal metabolic rate of 60—common in men 15 years his junior—to his love of dancing, which “can burn up to 385 calories per hour with salsa or 400 calories per hour with swing,” he notes.

Joan Price, a contemporary line dance instructor in Sebas topol, California, also attests to the longevity-promoting perks of moving joyfully. “At 78, line dancing keeps me physically fit, mentally alert and happy to be alive. The older we get, the more we need social activity, physical movement and mental stimula tion. You get all three at once with line dancing.”

The form has long outgrown its country-western music roots and now offers something for everyone, including Latin, swing, contem porary pop and Broadway. “Since you dance on your own in a row, line dancing is ideal for singles and for partners of non-dancers. It’s also wonderful for people who want a social activity that doesn’t involve dating or partnering,” says Price. She says that there are thousands of different line dances, ranging from super-simple to extraordinarily complex. “As a beginner, be sure and choose a class that is beginning level,” she says. “Beginning level teaches basic steps, patterns and terminology—and the joy of dance!”

For those looking for a little more heat, Latin dance can accommodate any fitness level. “If you are looking for a fun, new hobby, any style is a fit, but if you are more interested in advancing your salsa skill level, trying mambo and cha-cha can be a nice challenge,” says Maldonado. “Sensual bachata is for those who want a little more spice and advanced body movement.”

Hallworth often sees people approaching dance with uncertainty and apprehension, and he encourages an open mind: “Dancing isn’t for everyone, but if you give it a chance, you will be well rewarded. Most people learning to dance are a friendly bunch and will help newcomers.”

For Maldonado, it is also about shared experi ence, which she feels is one of the most beautiful aspects of Latin dance: “It’s a great, diverse group of people who can change your outlook on life. Being a part of any dance community can truly be life-changing.”

Fall Beets

VERSATILE LEAF-TO-ROOT EATS

Versatile, nutritious, colorful and flavor ful, beets are quite the package deal. This easy-togrow, multi-season vegetable is packed with nutrition and plays well with other ingre dients. Beets can be enjoyed raw, roasted, boiled or pickled. They can be blended into quick dips, thin-sliced for healthy chips or incorporated into desserts for a mild, sweet flavor and bold color.

“Beets have been a staple ingredient on our vegetarian menus for generations. They are an easy way to add natural sweetness and gorgeous color to so many dishes, both savory and sweet,” says Danica Wilcox, owner of the Moosewood Restaurant, in Ithaca, New York, which is celebrating its 50th anniversary next year. The quintessential vegetarian eatery’s go-to beet dishes include hummus, burgers and borscht.

“Beets boast so many health benefits. Being rich in folate, manganese and copper, they are good for heart, brain and bone health. They are also a good source of fiber, which will feed the good bacteria in your gut, leading to improved gut health,” says Candace Bell, a Phoenixbased holistic nutritionist and food blogger at The Wheatless Kitchen.

“Beets have a unique earthy flavor that goes perfectly with bright citrus. Roasting them brings out their sweet and savory flavors, and they pair well with arugula, crunchy walnuts and tangy goat cheese in a salad.”

34 Tucson Edition NaturalTucson.com EVERST /AdobeStock.com conscious eating

Lisa Keys, of Kennett Square, Penn sylvania, author of the food blog Good Grief Cook, grows beets and uses them in a number of ways. “Beets get their color from natural plant pigments called beta lains, which contain antioxidants and antiinflammatory properties that help control illnesses like diabetes and heart disease,” she says. Her blog offers a recipe for a hearty, roasted beet sandwich, which pairs the root veggie with feta and a smashed avocado, dill, lime and yogurt spread.

Versatility is one of the beet’s star qualities. The root vegetable can be quickpickled with other garden vegetables, pureed into soup, roasted for a side dish, shredded raw into salads, juiced into a smoothie or even concentrated into a powder—a favorite of registered dietitian nutritionist Mascha Davis, in Los Angeles. “Beet powder can be added to so many recipes for a fast and easy superfood boost,” she says. Her go-to applications for beet powder include a beet and rose latte, a beet-colored “pink yogurt” topped with berries and cacao nibs, and overnight oats swirled with beet powder.

Versatile, nutritious, colorful and flavorful, beets are quite the package deal.

If the benefits of the beetroot didn’t already run deep enough, its stems and leaves are not only edible, but also packed with vitamins A, B and K, as well as copper, manganese, iron and calcium. The greens make a great side dish to accompany a beetroot main dish or can be incorporated into a beet soup, salad, sandwich or smoothie for a zerowaste meal turbocharged with nutrients.

Like spinach, chard and other veg etables in the goosefoot family (Che nopodiaceae), beets are rich in oxalates which can contribute to kidney stones. For most healthy people, though, oxalates aren’t harmful, if enjoyed in moderation.

BEET, GREENS AND GOAT CHEESE LINGUINE

2 medium, fresh organic or local beets with leaves

¼ cup unsweetened jasmine green tea (or water), hot or cold

1½ Tbsp extra-virgin olive oil

Juice and zest of ½ lemon (1½ Tbsp juice)

2 large garlic cloves

¾ tsp sea salt

10 oz dry, whole-grain linguine

2 oz soft, artisanal goat cheese or soft cashew cheese, crumbled ¼ cup fresh, small basil leaves

Preheat the oven (or toaster oven) to 350° F. Wash, dry and remove the leaves from the beets; thinly slice the leaves and chill until ready to use. Wrap the beets in recycled aluminum foil and roast in the oven until cooked through and tender, about 1 hour and 15 minutes. When cool enough to handle, scrape off the beet skin using the dull side of a paring knife, then chop the beets.

In a blender, add the chopped beets, tea, olive oil, lemon juice and zest, garlic and salt. Blend until velvety smooth, at least 2 minutes. Set aside. (Tip: Be careful. This purée will stain anything that it may be splattered onto.)

Bring a large saucepan of water to boil over high heat. Add salt to the water, if desired. Add the linguine and cook according to package directions. (Alternatively, try my lidcooking technique to save energy: After stirring the linguine into the boiling water, cover with a lid and turn off or remove from heat. Let cook without heat per the same timing suggested on the pasta package.)

While the pasta is cooking, pour the beet purée into a large sauté pan and bring just to a boil over high heat. Reduce heat to medium-low, add the beet greens and cook while stirring until the greens are wilted, about 5 minutes.

Drain the pasta, reserving ½ cup of the cooking liquid. Add the pasta to the beet sauce and gently toss with tongs to combine. Add desired amount of reserved cooking liquid (if any) and gently toss to combine.

Transfer to a large serving bowl and sprinkle with the goat cheese and basil. Sprinkle with additional lemon zest, if desired, and serve.
