Breast Cancer Art Homage Looking for New Home

L

ocal artist Robert Gay is seeking a new home for a sculpture he made to honor women with breast cancer. He would like the sculpture, nicknamed “The Green Lady”, to live “where any woman relating to breast cancer can experience it and be heartened.” Gay is not looking for profit, but would accept a donation for materials. “A longtime Oro Valley friend and artist, Linda, was diagnosed [with breast cancer] in about 2009, along with her sister within six months. Having been through prostatectomy, I could easily relate to the emotions of cancer diagnosis and big body modifications to survive,” explains Gay. “Both sisters chose mastectomy with reconstruction, both successful, and both had made plaster casts of their torsos before surgery. Linda got the idea of a breast cancer gallery show, and made a number of casts from both molds. She distributed them to about a dozen artist friends ‘to do something visually interesting’.” For the show, Gay filled out the plaster cast’s rib cage with a curving back that received a photo collage of wildly diverse imagery—“stuff that might be in anyone’s head”. It is illuminated by a concealed light inside, when her hinged left breast is opened. She sits on a four-foot high plywood base with a cord for the light. omi Lomi massage therapy eases the recipient into a state of relaxation and stillness, while simultaneously freeing the mind of stress. During the massage, a lymphatic drainage cleansing process releases toxins to assist the body in eliminating tension, which promotes pain reduction and boosts the immune system. Native Hawaiian culture reports this massage enhances the connection between mind, body, emotion and spirit. The Lomi Lomi technique includes flowing, circular integrated strokes through the use of forearms, hands and elbows. Traditional Lomi Lomi was practiced with three basic aims: as a healing practice of native healers—kahuna Lāʻau lapaʻau (healers) and kahuna hāhā (diagnosticians); as a luxury and an aid to digestion, especially to the ruling chiefs; and as restorative massage. Lomi Lomi, akin to all traditional Hawaiian endeavors, was conducted with prayer and intention. Hawaiian kupuna (elder) Auntie Margaret Machado describes Lomi Lomi as “praying” work. In the 1930s, kupuna Emma Akana Olmstead of Hana, Maui, remarked, “When a treatment is to be given, the one who gives the treatment first plucks the herbs to be used. He prays as he picks the herbs. No one should call him back or distract his attention, all should be as still as possible for they do not want the vibration broken.” In our modern society, many Lomi Lomi practitioners find it nearly impossible to offer traditional style Lomi Lomi in a spa setting or massage office. To deliver the most authentic experience, the preference is to work with clients quietly and privately, via in-home settings. Buy Nothing Neighborly Groups Share More and Waste Less CONSIDER THESE FACTS: The average American creates almost five pounds of solid waste per day, according to the U.S. Environmental Protection Agency. Only 26 percent of Americans know most of their neighbors. Americans, with 4 percent of the world’s children, throw away 40 percent of the world’s toys. Rebecca Rockefeller and Liesl Clark, neighbors on Bainbridge Island, near Seattle, realized there was a simple way to change these trends. They created the first local Buy Nothing group in 2013, which has grown to 4 million members in 44 countries. In 2020, Clark and Rockefeller co-authored The Buy Nothing, Get Everything Plan: Discover the Joy of Spending Less, Sharing More, and Living Generously. GIVE OR GET GOODS People can join a local Buy Nothing group through Facebook. The groups provide a free platform to give, ask, borrow and lend items. It’s also a place to thank others in the community. Just about any item or service can be exchanged, as long as it’s legal. Food is commonly shared among group members. Clothing, toys and equipment for children are popular, too. Gifts of self, including talent and time, are also allowed. For example, members can offer to spend time with elderly neighbors or do yard work for them. As the name implies, nothing may be bought or sold in the group. Once a group gets too big, usually more than 1,000 or 1,500 members, it is split into smaller neighborhood groups. People can only belong to one Buy Nothing group.

The conception of Sugar Me Love was made possible through a partnership with Dr. Alie Buckmire, owner and director of Om Yoga Tucson. My strength, yoga practice and discipline were developed at Om Yoga and as part of this evolution, I was inspired by Dr. Buckmire to start living consciously, with greater purpose, and together we created Sugar Me Love.

etween the pandemic and the summer months, it may be the right time for us to get pampered with skin and body hair maintenance. Elegant, sleek and chic, Sugar Me Love is a skin care salon and naturopathic clinic centrally located in Tucson’s Copenhagen Plaza. Dr. Alexandra Porter was born in Kingman, Arizona. After living in Seattle for 16 years and feeling a bit soggy, she is thrilled to be back in her home state, and excited to share her naturopathic medicine practice with Tucson. She has both a personal and professional commitment to helping her community to reach their most robust selves. She co-founded Sugar Me Love as a result of her own struggle with skin and health issues for most of her life. Porter had to find her own path to healing, so she knows the work it takes to be radiant from the inside out. That is where her compassion, ability and empathy to support others on their paths was born. Professionally, Porter has a naturopathic medicine degree from Bastyr University and an undergraduate degree in nutrition from the University of Arizona. She spent 14 years in private medical practice and has accumulated various methods for healing, which has now become a blend of both Eastern and Western medicines. She practices positive touch medicine, specializing in Bowen therapy as well as Ayurvedic medicine. Porter’s patients are each prescribed a unique treatment plan that fits their lifestyle specifically. Porter opines that, “To have truly radiant skin, it takes the journey going inward for optimal digestion, lymphatic, circulatory and adrenal health.” She espouses the philosophy that sugaring and naturopathic medicine are a lifestyle, not an indulgence. “It’s choosing self-care. How would you characterize your approach to medicine?

My approach is different. It’s the three of us: you, me and the higher self. The third element of spirit provides the synergy of putting our heads together, and we’re an investigative team. It is essential to me that patients feel like they’re not just a number. My ability to be creative to heal is never-ending. I care about you, and want to help you, whatever health issues exist. I’ve had mentors from India and worked at an Ayurvedic clinic. I have found Bowen therapy to be one of my most effective tools in helping my patients get back their lives lost to disease and dysfunction.

What is Bowen therapy?

If you’re feeling stressed, suffer from pain or other ailments, Bowen therapy could be the answer for a fresh start and a first step toward feeling relaxed, rejuvenated and out of


pain. Developed in Australia, Bowen therapy is a gentle, hands-on treatment at the heart of naturopathic medicine in that it reduces the “fight or flight” (sympathetic) nervous system, while stimulating the “rest and digest” (parasympathetic) nervous system. The therapy is performed over clothing and consists of a series of gentle pressure movements over various tendons, ligaments, fascia, nerve and lymphatic bundles. These moves bring in circulation and stimulate lymphatic movement, while simultaneously releasing dysfunctional nervous system patterns, allowing the system to heal. Everyone can benefit from Bowen therapy, including highly trained athletes, pregnant women, infants and the elderly. A Bowen therapy session is an hour of deep relaxation, and immediately leaves the patient feeling rested. Long-term effects are improved sleep, mood and organ health, as well as decreased pain and inflammation. This gentle, yet powerful therapy helps every system in the body, musculoskeletal, circulatory, lymphatic, nervous and internal organs.

Is sugaring less painful than regular waxing?

It is absolutely less painful. Chemicals in wax cause it to stick to healthy skin layers, while sugaring sticks only to the dead skin cells, resulting in being less painful and having glowing and rejuvenated skin. It is also less painful because the hair is removed in the direction of hair growth, unlike waxing. The only ingredients are Vitamin C, lemon juice, sugar and water, cooked like candy. It resembles a ball of honey used for the whole body. It is 100 percent non-toxic, biodegradable and reduces the inflammatory response to waxing (fewer red bumps, less pain).

ne in eight women in the United States develops breast cancer in the course of her lifetime. “Notably, only five to 10 percent can be blamed on inherited gene mutations, and merely 13 percent of women with breast cancer have a first-degree relative with a history of disease,” says Kristi Funk, a board-certified breast surgeon in Santa Monica, California, and medical director of PinkLotus.com. “It’s empowering to realize that the causes for the vast majority of breast cancer are under our control in the choices we make every day.” “Whenever you lift fork to mouth, you move closer to cancer, or farther away,” says the author of Breasts: The Owner’s Manual— a vegan proponent. “Plants, legumes and whole grains provide nutritional armor for your cells, decreasing cancer risk. They release molecules that scavenge free radicals, eliminate carcinogens, prevent and repair DNA damage, identify and destroy harmful cells, inhibit the supply of blood to tumors, stimulate the immune system, regulate hormone metabolism and reduce inflammation.” Funk recommends regular consumption of cruciferous vegetables, leafy greens, soy, ground flaxseed, berries, matcha green tea, mushrooms, turmeric, aloe vera, garlic, onion, chives and cacao. Functional doctor Elizabeth Boham, the medical director of Dr. Mark Hyman’s UltraWellness Center in Lenox, Massachusetts, proposes a balance of animal and vegetable protein, as long as the animal sources are good, like eggs, salmon or grass-fed beef without antibiotics. “Organic, non-GMO soy like tofu or eda-

mame may decrease a woman’s risk of breast cancer, but avoid bad soy that’s added to processed food, including soybean oils and soy lecithins,” she advises. “I also suggest cutting back on dairy for women at high risk of breast cancer because it naturally contains growth hormones, which may cause things to grow in our body that we don’t want to grow.” Citing a clear association between alcohol consumption and breast cancer risk, Boham recommends eliminating or moderating drinks to no more than five a week. She also highlights the importance of seven to nine hours of sleep and relaxation techniques to improve stress response. Maintaining a healthy weight is also important. “Our body fat is where hormones get turned into estrogen, which has been associated with an increase in breast cancer,” Boham says, adding that 35 grams of fiber per day will feed healthy bacteria in the gut which helps eliminate used-up estrogen and other toxins. “Avoid xenoestrogens, too, which can act on the estrogen receptor, such as BPA in plastics and store receipts, parabens in skincare products and pesticides and herbicides on lawns and in non-organic foods.” Boham suggests eliminating refined and processed carbohydrates like bread, white rice and cookies, which cause blood sugar to spike and the body to produce insulin, the hormone that lowers blood sugar after every meal. “Over time, people develop insulin resistance, causing it to produce even more insulin to do its job. Those high levels of insulin can encourage cancer growth,” she explains. Carlos Garcia, M.D., director of the Utopia Cancer Center (UtopiaCancerCenter.com), in Oldsmar, Florida, and author of Cancer is a Symptom, uses liver and gallbladder flushes, colonic irrigations and coffee enemas to help the body purge toxins. “Gut flora imbalances compromise the immune response and nutritional absorption. Yearly colonic irrigation with recolonization is essential in the prevention of disease,” he explains. Some women experience breast tenderness or pain and lumpy, bumpy breast tissue; having dense breasts can increase breast cancer risk, Boham says, noting that too much caffeine or an iodine deficiency can exacerbate these symptoms. She recommends consuming less coffee and more iodine-rich foods like nori, kelp powder or seafood. According to Boham, there isn’t enough good research to say that we should never wear underwire bras, but good lymphatic flow and circulation to the area is important and can be facilitated with daily movement, exercise and sweating to remove stuck toxins and support the detoxification system. Boham says many women find their breast cancer during a selfexam. “Know your own body. If something looks or feels different, if you feel a lump that shouldn’t be there or see a shift in the skin, a dimpling or a pulling, have it checked. ART THERAPY Creating Lasting Change

ocal Tucson Art Therapist, Rebecca Wilkinson, MA, ATR-BD, LCPAT shares her passion about the world of art therapy, a highly in-demand modality that is helping many who currently cope with obstacles that prevent them from living their best lives. Long before electronic and handheld devices, we doodled and sketched, played in the sand box, made chalk designs on the sidewalk and (everyone’s favorite) colored in coloring books. We had ways to calm ourselves and create something from our internal thoughts and imagination, release negative feelings, as well as generate positive ones. There is a mind/body connection that is illuminated through the process of making art which allows space for reflection and exploration. The ability to express oneself in order to enhance our life can make us happier, address sadness or negative emotions and help us to reach these goals in a healthy and often more effective way. Communication and healing through art has been around for millennia. Some artists will reflect on early times when imagery was used to communicate in almost every civilization. Cognitive psychology research shows us that images can strengthen communications in several different ways—capturing attention, 18

evoking emotions and easily conveying large amounts of information in a short period of time. How can art and imagery help people change their way of thinking and positively address issues that previously have been unsuccessful? Those who are interested in improving their clarity and general well-being will often seek out new and creative ways to improve their mental and physical health through art therapy. “Art gives us ways to connect and bridge when we are feeling isolated and often times struggling with expression,” says Wilkinson. Art therapy is a mental health profession that uses active artmaking, the creative process, applied psychological theory and human experience within a psychotherapeutic relationship. Art therapists are mental health clinicians with master’s-level degrees or higher, trained in art and therapy. They serve diverse clients, from children experiencing behavioral challenges; victims of violence or trauma, including military service members and survivors of mass shootings; older adults struggling with dementia; and anyone that needs help coping with life’s challenges. Wilkinson was drawn to art therapy as an artist who was also curious about how the brain works. Those who study art therapy acknowledge the powerful and positive relationship between neuroscience or the activity of the brain and the art of expression. “In the end, it is a metaphor to engage with the internal experience,” describes Wilkinson. “Art is a way to access the other realm.” How can therapy address some of the most prevalent public and mental health issues we are currently experiencing as a population? Unfortunately, the COVID-19 pandemic has created unprecedented chaos and stress in the lives of nearly all Americans across the country. A recent NHIS study has found that between 2019 and 2021, the percentage of adults polled expressed some level of depression had increased from 11 to 41 percent over the two years. An Art Therapy Association poll indicated that “nearly all art therapists (92 percent) surveyed reported that their clients were experiencing anxiety due to isolation during the Coronavirus pandemic, and two in three

changing their internal experience. “We understand imagery fundamentally,” says Wilkinson. Words only allow us certain types of expression, and in many cases, verbal expression is ineffective. Through art, the artists can communicate their thoughts and feelings with greater intensity than may be possible with words. Art therapists are highly trained and specialized professionals that support clients with specific issues that may not

have been successfully addressed through traditional cognitive or verbal techniques. They have the ability to assist individuals dealing with trauma, help to change the way we think about ourselves and our world and support active minds to remain calm, focused and less anxious. Many therapists will work in private practice with individuals but will also help groups with specific needs to address issues they are experiencing on a substantial level. (62.7 percent) said that their clients raised these concerns frequently.” Many of our front-line therapists and mental health professionals are using art therapy as a very effective way to address several types of health concerns including depression, PTSD, anger, isolation, changes in circumstances and lack of focus or purpose. Wilkinson also points out that one does not need to be an artist to benefit from art therapy. Art therapy generally serves three functions: expressing feelings that are “stuck” inside and inaccessible or we are unable to communicate; mentally and physically changing the energy level and physiology of the body; and accessing or experiencing new information and personal insight that could not be articulated otherwise. For example, art as a form of expression. The image on the left depicts one of Wilkinson’s clients who felt relief in expressing anger that she was experiencing: feeling like people were disrespecting her boundaries. After she’d made it, she also saw the elegance in this expression. It transformed perception of herself and her anger. This same client also had a “poor sense of self, difficulty grasping who she was, and felt adrift,” according to Wilkinson. “After working together for a while, visual themes began to emerge that helped confirm a sense of identity— she could see herself in her images and see that they reflected qualities that she possessed: warm, soft, flowing, light and bright, fluid, feminine.” There is an increasing amount of evidence that supports art can enhance brain function and decrease levels of anxiety that affect the physiology of the body. It has an impact on brain wave patterns and emotions as well as the nervous system and can raise serotonin levels. Art can change a person’s outlook and the way they experience the outer world by

Positive Art Therapy provides a paradigm to integrate the strengths of two complementary fields: art therapy and

positive psychology. “Positive art therapy can and should be pivotal to significantly increasing individual and social wellbeing,” says Wilkinson. W

hen holistic wellness coach and personal trainer Sergio Rojas saw his contract with a trucking company terminated by the pandemic, he and his wife Krista turned it into an opportunity to step away from a life of too much stuff and over-scheduled activities. “When life gets too complicated and there’s too much going on, you get stressed and irritated easier,” he says. “You don’t feel connected to yourself.” The couple sold their 4,200-square-foot house in Dubuque, Iowa, along with 85 percent of their belongings and spent eight months living out of suitcases exploring the southeastern United States and Latin America with their 14-year-old daughter and 12-year-old son. “We wanted our kids to see what it’s like to downsize, to live with less,” says Rojas. After considering Vancouver and Miami, they settled in the Atlanta area in a townhouse half the size of their Iowa home not far from extended family. “A simpler life lets you focus on what’s important,” he says. “We have deep, deep conversations with our kids, and dinner can be a two-and-a-half-hour experience, with a game of cards and singing songs.” Not everyone moves in such dramatic fashion toward a simpler lifestyle, but thanks in part to the lessons of COVID-19, intentionally living with less is gaining currency across the country. “The pandemic gave us an uninvited sample of a more minimalist and simple life, and we have all become 22

acutely aware of what feels good to let go of and what’s really important to us,” says minimalist blogger Ema Hidlebaugh, of MinimizeMyMess.com. According to research from the multinational consulting firm Accenture, the pandemic made consumers more mindful of purchases, more conscious of food waste and more interested in sustainable, local options. Other polls found that two out of three Americans adopted more eco-friendly habits during the pandemic, and that 52 percent are open now to living in a van. There is no one-size-fits-all approach for simpler living; each person crafts what best fits their values and needs. Three common strands have emerged: minimalist simplicity—living with less clutter and busyness; ecological simplicity—living with the sustainability of the planet as the priority; and conscious simplicity—driven by deep personal and spiritual values. The approaches can overlap, yet each has its unique flavor. None has an end stage: All are dynamic explorations and encourage continual experimentation and growth. With time, they often merge together. In an in-depth study published in the International Journal of Applied Positive Psychology, people living long-term minimalist lifestyles reported spending more time with family and friends, volunteering, engaging in pro-ecological behaviors, making sustainable and ethical purchases, and choosing to spend money on experiences rather than material objects. They described their mental


space as a feeling of clear-headedness, spaciousness and lightness, and some said that stripping back to minimal possessions enabled them to strip back to their true identity. Moving toward simplicity often starts with a decision—sometimes thrust upon us—to reconsider how to spend our energy. “Whatever you own, owns you,” counselled pacifist, mystic and environmental activist Peace Pilgrim in the 1980s—a sobering thought, given that the average American household is estimated to hold 300,000 separate items, from T-shirts to coffee cups. As one woman told her, “I’ve just realized I’m working my fingers to the bone to provide a home for my furniture!”

Minimalist Simplicity Minimalism involves “owning less, practicing sufficiency and improving the quality of life by not indulging in consumerism,” says Aniruddha Pangarkar, assistant professor of marketing at the University of Wisconsin-Green Bay, whose study on the

topic appeared in the Journal of Business Research. “By practicing minimalism, consumers can achieve life-goals through experiencing well-being, satisfaction, happiness and peace.” A 2019 YouGov survey reported that 17 percent of Americans describe themselves as minimalists, 23 percent would like to become one and 31 percent have no interest in the idea. Historically, minimalism in America goes back to the Quakers and Henry David Thoreau’s writings, but it gained new life in 2014 with Marie Kondo’s The Life-Changing Magic of Tidying Up. She says holding each object and asking, “Does it spark joy?” If it doesn’t, thank it and toss it, she advises. After her Netflix series ran in 2019, thrift stores reported a dramatic upswing in donations. Because research suggests that clutter is linked to depression, fatigue and higher levels of stress, decluttering alone can be life-changing. Journalist Ellen Pober Rittberg, of Brooklyn, moved into a one-room studio when she downsized

from her house. “I could have chosen a one-bedroom apartment, but it would have meant more places to put things that I probably didn’t need to acquire,” she says. Asking if something “sparks joy” can also be applied to everything from friendships to jobs to food and finances, whittling away what is not essential. As millennials are discovering, renting instead of owning a home frees up weekends for fun instead of home repairs. Using Lyft or Uber and mass transit saves money otherwise spent on car loans, repairs and gas. Spurning designer brands opens up funds for trips to Yellowstone or Iceland. “Even though everyone embraces minimalism differently, each path leads to the same place: a life with more time, more money and more freedom to live a more meaningful life,” advise Joshua Fields Millburn and Ryan Nicodemus in their top-rated blog TheMinimalists.com, which has 20 million followers. “Getting started is as simple as asking yourself one

clothes made to last many years; and reducing energy consumption at home, work and on the road. Sustainable living can be as simple as using a personal mug when ordering a latte or as complex as joining a stockholders’ rebellion to force sustainable corporate policies. It also can mean returning to the simpler practices of yesteryear, such as linedrying clothes and bonding more closely with the natural world. For Barbi Gardiner, owner of The Outdoor Apothecary, in Plainfield, Connecticut, embracing a simpler, sustainable lifestyle after leaving a high-pressure job meant “adopting a do-it-yourself attitude” that included starting a permaculture garden, composting, raising chickens, foraging and cooking wild food, and creating healing remedies from homegrown and foraged herbs. “Nature is the medicine for what ails us,” she says.

Ecological Simplicity This green approach means “to choose ways of living that touch the Earth more lightly and that reduce our ecological impact on the web of life,” writes ecoactivist Duane Elgin in his seminal book Voluntary Simplicity. Half a century ago, the Whole Earth Catalog kicked off the movement with its Earth-centered living strategies. Today, thousands of websites and books offer step-by-step ecological advice, recycling has become commonplace, electric cars are the hottest sellers and according to the National Retail Federation, 70 percent of American consumers value sustainability in products. Lowering our impact on the planet means living more simply with less. Among other strategies, this means going without household plastics or lawn chemicals; gardening and buying local produce in season to lower shipping emissions; choosing equipment and

Conscious Simplicity Deeply held values, not money and possessions, shape this form of simpler living, sometimes called soulful or conscious simplicity. Its focus is on lifeenhancing experiences, inner growth, spirituality, natural health, creativity, nurturing relationships and social action. Owning bling has little allure. “With conscious simplicity, we can seek lives that are rich with experiences, satisfaction

and learning, rather than packed with things,” writes Elgin. Sometimes passion is the driver. Alex Honnold, the renowned rock climber profiled in Free Solo, lived in a van for 10 years while scaling Yosemite’s El Capitan and other formidable peaks. He donates one-third of his income to global solar power initiatives. Millennials like him are finding stuff less enticing: The Harris Group reports that 72 percent of them say they would rather spend money on experiences than material things. A study from San Francisco State University found that the happiness of buying something new like a car or a laptop fades over time, while spending money on an experience provides joy long after the experience has ended. Deeply held values can mandate a simpler life. Ross Martinie Eiler found his calling 15 years ago when he read about the voluntary poverty of the Catholic Worker Movement, which offers hospitality to the homeless in 178 centers worldwide. “It struck me as an authentic way of living that’s true to the beauty and goodness of the religion,” he says. Today his life is built around the Bloomington, Indiana, Catholic Worker community. He, his wife Andrea and their four children live communally in four houses with other members and guests, sharing meals, belongings and easy-going conversations with the homeless. He tunes pianos part time for money, half of which he donates to the community. For fun, he pounds the keys in a rollicking boogie-woogie band. The committed communal life isn’t always easy. “Every day there’s a new challenge that needs a new approach. Against my will, I’ve been forced to become a better person,” he chuckles. “I have little money on paper—I’m probably in the bottom 10 percent—but I don’t need anything. eople that wear a fitness watch get a little buzz on the wrist as a reminder to get more steps in each hour, but many ignore the simple opportunity that exists to exercise upright for free anytime and anywhere. “Yes, we take walking for granted,” says Alexia McClerkin, a Houston chiropractor whose clients include professional and elite athletes. “Most people only walk as far as it takes to get to their car.”

Sitting is the New Smoking According to On Your Feet America, Americans sit 10 hours or more each day, and that sedentary habit is considered hazardous to our health. It may contribute to climbing obesity rates in the U.S., currently at 44.5 percent among those ages 40 to 59. Today’s most common preventable diseases are directly linked to obesity, the key word being “preventable.” Walking briskly daily has proven to increase metabolism, lower both blood pressure and resting heart rates, and burn calories. Other benefits include improving mobility, equilibrium and stamina. Benjamin Horning, a Laguna Hills, California, chiropractor and author of A Kid’s Guide to a Healthy Spine, says, “I’m a big believer that movement is life. I recommend that if you can move, get moving. Walking is a good starting point. If you can walk instead of drive, go for it. If you’re stuck indoors, schedule 15-to-20-minute walks in your calendar.” It’s important to put it in the calendar because, he says, “You have to make it real.” 26

We’re wearing the right shoes. We can encounter hills, rocks or the right tree.”

Heads Up McClerkin and Horning both ask patients to be mindful of their limitations when taking on a new physical activity and to be careful to prevent injuries when adding brisk walks to a daily routine for the first time. “Too heavy a walk on cement and other hard surfaces like roads can cause shin splints,” McClerkin says. “Walk on a track to prevent injuries from an uneven surface.” “Just be responsible,” says Horning. “Walking is so beneficial. The basics of health just can’t be ignored or taken for granted.” Humans walk upright on two feet, unlike any other animal on Earth. Walking allows us to connect with our bodies and environment in a very special way, something we can take advantage of instead of taking for granted. Let’s go for a walk. Water Scarcity Woes A Global Problem That’s Getting Worse by Jeremiah Castelo

The world’s population will rise to 9.7 billion by 2050, leaving even more people in water-stressed conditions. An estimated 60 percent of all surface water on Earth comes from river basins shared by separate nations and almost 600 aquifers cross national boundaries. In places where water is already scarce, this can lead to geopolitical conflict. Three in 10 people on Earth currently do not have access to safe and clean water. According to the World Health Organization, 2.1 billion people do not have access to a safely managed water source. An estimated 263 million people must travel over 30 minutes to access water that isn’t clean, and 159 million still drink from untreated surface water sources. 28

By 2025, half of the world’s population will be living in areas of water stress as people will be unable to access the water they need. Climate change, population growth, agricultural demands and mismanagement of water resources all contribute to the growing water crisis.

ater scarcity is a legitimate concern. It is true that the hydrologic cycle, the process in which the Earth circulates water throughout its ecosystems, is a closed-loop cycle that neither adds nor takes away water. In theory, the amount of water on Earth will always remain the same. But problems occur when the hydrologic cycle is disrupted, causing some regions to grow arid while others get constant floods. The human activities that disrupt that process include the building of dams, the industrial pollution of waterways, the paving of roads, excessive drilling and bottled water privatization. Here are 10 of the most alarming water scarcity facts that the world is currently facing.


One in three people worldwide does not have access to a toilet. Around 2.3 billion people lack access to even basic sanitation services, forcing them to either practice open defecation or use pit latrines and buckets. Fecal contamination in the water supply is a major cause of deadly waterborne diseases such as hepatitis A, norovirus and E. coli. Annually, 1.6 million people die from waterborne diseases. Of the 5 million people that become ill from bad water, most are children. Water privatization causes harm. When corporations site water bottling operations in developing countries like India and Bolivia, they significantly deplete supplies needed by local farmers. In the U.S., when a struggling public water or electricity utility sells their rights to a private corporation, household water and sewer services typically become, respectively, 59 percent and 63 percent more costly. In the U.S., 2.1 trillion gallons of clean water is lost each year due to poor infrastructure, including old, leaky pipes and broken water mains. David Le France, CEO of the American Water Works Association, estimates that repairing America’s water infrastructure will be a trillion-dollar program. Due to divided efforts in governmental decision making, adequate policies and budgeting are often difficult to come by. Often, water burdens fall upon women, some of whom walk four miles a day just to fetch water that is likely contaminated. In sub-Saharan Africa, for example, it takes about six hours to carry a 44-pound container of water from a source that often has the potential to make them sick, according to the Global Water Institute. One-third of the world’s largest aquifers are water-stressed. Underground aquifers are naturally replenished

through rainfall and surface water, but a deficit occurs when more water is pumped out than replenished. Eight of the biggest aquifers, including those in Saudi Arabia, northwestern India and Pakistan, are not being replenished at all. Meeting the United Nations’ sustainable development goals for the water crisis will cost $114 billion per year. Attaining these critical goals will be time-consuming, expensive and may face political division. Yet the cost of not doing so is also high. Addressing healthcare needs due to water-related diseases and poor sanitation costs $260 billion globally each year.

Water scarcity is real. To ignore it or to assume that it is only a problem of the developing world is to be blind to the reality that the rest of the world is experiencing. Excessive water consumption and poor water management are factors that can be controlled. Supporting clean water initiatives will certainly help the movement against the global water crisis. Finally, educating ourselves and raising awareness is a task we should all take on. FORAGED FUNGI FARE Cooking with Wild Mushrooms

ild mushrooms can infuse exciting new flavors and textures into familiar dishes, along with a taste of the local terroir, the natural habitat, from woods to plate. “I first encountered wild mushrooms through local foragers, then later from specialty food purveyors who would fly mushrooms from around the world into our kitchen. They were the most unique ingredients I could find, offering colors, flavors and textures I had never experienced … pure catnip for a chef,” says Alan Bergo, a Minnesota chef and author of The Forager Chef ’s Book of Flora. Recipes at ForagerChef. com feature more than 60 species of wild edible fungi, from common deer mushrooms to prized porcinis. The intriguing flavors of wild mushrooms in part come from their diets, akin to the difference between grain- and grass-fed meats. “For fungi, their food is their habitat. Cultivated mushrooms have less variety of the micronutrients and secondary metabolites 30

that can add flavor to a wild mushroom,” says Eugenia Bone, a New York City food journalist and editor of Fantastic Fungi: The Community Cookbook. Foraged fungi also offer a host of nutritional benefits surpassing commercially grown mushrooms. Wild mushrooms like chanterelles and morels can contain up to 1,200 international units (IU) of vitamin D per serving, whereas commercial mushrooms, typically grown in dark conditions, contain less than 40 IU, according to the Harvard School of Public Health.


While foraging is the most satisfying way to procure wild mushrooms, they are becoming increasingly available through farmers’ markets, online purveyors and gourmet stores. Some species that grow wild throughout North America such as oysters, maitake (hen of the woods) and lion’s mane are also grown commercially; these can be suitable for transitioning from buying to hunting. Sam Fitz, owner of ANXO Cidery & Tasting Room, a neighborhood taproom in Washington, D.C., picked up mushrooming when COVID-19 hit, in part mentored by the restaurant’s wild food purveyor. Fitz started ANXO making hyperlocal ciders from crabapples foraged on bike rides through the nation’s capital, salvaging fruit that otherwise would go to waste. Today, the seasonally focused menu often features wild fungi and other foraged ingredients from savory tartelettes made with beech and hedgehog mushrooms to cocktails made from bitter boletes. One of ANXO’s signature dishes is a vegan “chicken of the woods” sandwich,

served hot, Nashville-style. This orangecolored tree mushroom, also known as sulphur shelf, has a taste, texture and color that so closely resembles chicken that many recipes use it as a meat substitute. “People are so blown away by its meaty texture they can’t believe they are being served mushrooms,” says Fitz. When preparing mushrooms, “Forget what you know about cooking vegetables,” says Bone. “Also forget the notion that mushrooms are too delicate to take washing or high heat. Mushrooms are extremely hardy because of the chitin in their cell walls, a compound that is more like fingernails than the cellulose of plants. You can cook mushrooms twice and they will still retain their integrity.” Because the amino acids in mushrooms respond to heat more like meat than vegetables, Bone suggests searing mushrooms on the grill or under the broiler. “A slice of maitake will cook beautifully on the grill,” she says. When cooking a particular species for the first time, Bone recommends oven-

roasting the mushrooms wrapped in parchment paper. “When you open up the parchment, you can really smell the mushroom. It’s a wonderful way to pick up subtle flavor differences and see how the mushroom handles,” she says. Since fungi take on all sorts of shapes and sizes, Bergo suggests letting a mushroom’s morphology inform how to cook it. Lion’s mane, for example, has a texture that mimics crabmeat, so faux crab cakes make a fun dish that honors its form. “Chefs tend to chop things up, but I prefer to cook many mushrooms whole, especially when they have interesting shapes,” says Bergo. One of the chef ’s go-to preparations of oyster mushrooms is to toss large pieces in seasoned flour or brush them with mustard, then bake until crispy. “They turn into cool-looking, crispy croutons you can put on a salad or eat as a snack,” he says. Wild mushrooms are a culinary delight, but beginning foragers should harvest with caution. The forager’s rule of thumb is to be 100 percent sure of an identification 100 percent of the time given that toxic lookalikes can exist. It’s also important to try a small amount of a mushroom the first time around, as some individuals can respond adversely to a particular species despite its general edibility.

Hen of the Woods Steaks yield: 1 serving per 4 ounces mushrooms

Clean the hens by swishing them in cool water, gently peering inside the caps to make sure they are cleaned, trimming with a paring knife as needed, then allowing to drain on paper towels. Heat the oil in a pan or on a griddle until hot, but not smoking. Add the mushroom clump and season with salt, placing a weight—like a rock, log, crumbly wood or cinder block wrapped in foil or a pan—on top, then cook until the underside is deeply caramelized, then flip and repeat.

Sicilian Chicken of the Woods Here is a traditional Italian preparation for chicken of the woods (Laetiporus sulphureus or Laetiporus cincinnatus), flavored with wild monarda leaves and served with charred bread rubbed with garlic. yield: 4 to 6 servings photo by Alan Bergo, ForagerChef.com

1 lb young tender chicken of the woods, sliced ¼- to ½-inch thick 1 large clove garlic ¼ cup mild or extra-virgin olive oil mixed with flavorless oil, like grapeseed (plus 1 or 2 Tbsp extra if the pan threatens to dry out), along with a drizzle at the end 1 large shallot or small yellow onion 1 Tbsp sliced Monarda fistulosa (also known as bee balm or wild bergamot) or fresh mint or oregano Crushed red pepper flakes or hot chili to taste 1 Tbsp capers or a small handful of Castelvetrano olives (or other green olives) 2 dried bay leaves ¼ cup dry white wine ¼ cup water or stock 1½ cups seedless tomato puree or tomato sauce Grilled high-quality bread, preferably slightly charred, for serving 2 whole fresh garlic cloves as needed for rubbing into the bread Heat the oil in a wide pan with high sides. A cast iron skillet will work, but isn’t ideal as the sauce is acidic. Add the mushrooms and cook until they’ve given up their moisture, then push them to the side of the pan, add a little extra oil if the pan looks dry, or if the mushrooms were very juicy. Add the garlic to the clean spot of the pan, then arrange the pan off-center on the burner so that the heat is focused on the garlic.

Meanwhile, lightly oil the bread and char on a grill. It should have good black spots, but not be ashy. Rub a garlic clove gently into the toasted bread

slices, pressing down so that it “melts” into the bread a bit—don’t go crazy, a little goes a long way. Double check the seasoning of the mushrooms for salt and chili, adjust as needed, then serve the stewed mushrooms with the grilled garlic bread on the side. Drizzle some oil over the top to give the dish an attractive sheen. Spoon the mushrooms and their sauce on the bread and eat. Sweat the garlic in the oil slowly until it’s light golden and aromatic, then add the shallots and cook for 1 minute.

Add the crushed red pepper directly to the garlic and shallot, cook for a moment more, then deglaze the pan with the wine, tossing in the bay leaf. Reduce the sauce by one half, then add the tomato puree, water, capers or olives, bergamot or other herbs and cook until the mixture is thickened lightly and the mushrooms are coated with a rich sauce, about 15 minutes.

2 Tbsp olive oil ½ cup minced shallots 1 tsp sliced garlic 1 to 2 tsp grated ginger Freshly ground black pepper 6 oz oyster mushrooms 1 Tbsp white or black sesame seeds 2 marinated white anchovy fillets, chopped 2 Belgian endives, leaves separated and cut into 2-inch sections ½ Meyer or regular lemon Pinch of kosher salt ⅓ cup chopped fresh cilantro or flat-leafed parsley for garnish 2 whole scallions, chopped diagonally for garnish Drizzle of high-quality white truffle oil for garnish (optional) Grated Parmigiano cheese for garnish (optional)

In a wide skillet, heat the olive oil over medium high heat. Add the shallots and garlic, and sauté until golden, a few minutes. Stir in the ginger and pepper to taste. Tear the oyster mushrooms into bite-sized pieces and add. Cook for about 5 minutes, flipping the mushrooms over, until they release their liquid. Add the sesame seeds and toast them in a bald spot in the pan for a minute or so.

Turn the heat down to medium, add the anchovies and endives, and cook until the endives wilt, a few more minutes. Take off the heat, add the lemon juice and season with salt. Garnish with the cilantro and scallions, and optionally, white truffle oil and a sprinkle of the cheese. he best singers can convey emotion through their songs, and truly connect with audiences. Sheryl Ann Starlight’s mellifluous voice exudes a grace, a passion and a confidence which resonates with her listeners. She’s got talent, and she’s a force to be reckoned with when she sings. Her affinity for pairing rich textures with classic songs as well as her charismatic persona rival the iconic Diana Krall. Starlight’s success is also attributable to her comfort onstage and chemistry with her band members. At a recent performance at Westward Look Resort, she featured a special guest, virtuoso trumpeter 34

Jason Carder, who travels with Yanni’s band, and is an assistant trumpet professor at the University of Arizona. During the show, Starlight effortlessly segued from various genres, including traditional, pop, jazz and blues melodies, inspiring some people in the audience to get out of their seats and dance in the aisles. While her singing career is the second act in her life, Starlight consistently gives people an experience to remember, with her vocal energy and innovative song repertoire. It is obvious she loves what she does, she’s dreaming big and she’s reaching for the stars.

What first got you into music?

Both of my parents influenced me by playing music in our home while I was growing up. My father is an accomplished, self-taught, legally blind guitar player, and he loves the blues. So the blues lives deep down in my soul. In addition, it was a seventh-grade teacher that had mandatory choir auditions. She heard something in my voice and recruited me for her choir. She said something special was there. It was odd to me that I could just sing. I struggled with being given a gift and I hid it a lot. I had a difficult time accepting I was given such a wonderful, soothing


Who inspired you to make music?

My first biggest inspiration came from a glorious gentleman named JR Reynolds. I had the honor of meeting him in 2010 when he was sitting in with a Latin jazz group. JR was a singer and entertainer all his life. To make a long, marvelous and magical story short, at the end of the night he asked me to call him the next day to schedule a time to come over and sing for him and his wife Vicky. I did, and in a nutshell, he told me singing was what I was born to do. My mother Shirley Ann could see better than most—just not with her eyes. She was totally blind since age 12. She took flight from this earth from brain cancer November 7, 2012, far too soon. After leaving my job to help take care of her, I was back at my job. A co-worker named Victoria was announcing to me that my mother was visiting from the other side, and she indeed had a message for me. Basically, I was given the message, “I know about the bee… get busy and do your music. I’m out of the way now.” I’ve never been the same since that message. It may sound cheesy, but my mother is truly the wind beneath my wings. I push on to give my music even when it’s hard, and my Shirley Ann lives in my heart. Finally, my audiences continually inspire me to make music. Their energy, presence and support are truly the greatest of gifts. They are the fuel, and the exchange of energy is as beautiful as music itself. My audiences give me the courage and strength to use my divinely given voice.

How would you describe the music you typically perform?

I perform jazz, the Great American Songbook, torch songs and a bit of blues. I began with the Great American Songbook and jazz, which I dearly love, and I’m committed to. Sometimes you just can’t beat the classics, but lately I’ve been branching out more. I perform Stevie Wonder,

Norah Jones, the Carpenters and Burt Bacharach, to name a few. I’m always expanding my repertoire. I’m looking for messages the world needs. I love songs with strong, positive or powerful messages. I throw my whole being into the message of a song. I essentially act out the song. I become the lyrics. I strive to evoke thought and feeling, and to bring people together to unite in the message of each song I perform. There’s often a healing that takes place for me, and I’m hoping with all I have that a healing of some kind is happening for others too. That is my heartfelt intention. To me a song is like a painting; what I see or feel, you may not see or feel, but you are affected, nonetheless.

Can you tell us about your band?

I surround myself with some of the best of the best musicians here in Tucson. I strive to get my first call favorites and I’m loyal to the core to them. The masterful lineup is Rob Resetar on piano, Jack Wood on bass, Max Goldschmid on the horns extraordinaire— and anything else he might want to play since he is gifted on so many instruments. When I’m able, lucky and blessed enough, I add the one and only phenomenal, force of musical nature, master trumpet player Jason Carder. Jason is an

energy factory, and he is musical inspiration personified.

What is one message you would give your fans? I would tell them that their energy and presence is far stronger than they know. They are on stage with me in my heart. The connection I feel on an energetic level is powerful and transformative. That connection inspires me to no end.

What would you be doing right now, if it wasn’t for your music career?

There’s no other option for me than to try to find all the right ways to use the gift of my voice for the greater good and for the

voice. I would attempt to use it, and for some inexplicable reason I never felt worthy or good enough.

munities and private parties. My favorite place to perform is out in nature at an outdoor venue. There is nothing quite like the power of nature and the power of live music coming together for me.

My first CD, Sheryl Ann Starlight – Invitation, was financed by a true patron of the arts and came out in April of 2019. It’s a 17-song pure labor of love project recorded at Allusion Studios.

Fortunately, we have the help of monumental figures living among us now — a circumstance, according to the Ageless Wisdom tradition, that has never before taken place in recorded history. Cancer and Its Connection to the Mouth About 1 in 8 women in U.S. (about 13%) will develop invasive breast cancer over the course of their lifetime. In 2021, an estimated 281,550 new cases of invasive breast cancer are expected to be diagnosed in women along with 49,290 new cases of non-invasive breast cancer here in the U.S. Although it’s rare, men may also be diagnosed with breast cancer, with approximately 2,150 cases diagnosed each year.

New Research Has Discovered That Women Who Suffer From Gum Disease Are 3 Times More Likely To Develop Breast Cancer A study published by Breast Cancer Research and Treatment found that women who suffered from chronic periodontal disease had higher rates of breast cancer diagnoses. Researchers believe that women with high levels of bacteria in their mouths may develop bacterial infections in their bloodstreams. “Breast cancer could be triggered as a result of a systemic inflammation which originates in the infected gums; They also suggest that bacteria from the mouth may enter the circulatory system through the gums which then may affect the breast tissue”. Over time, those bacterial infections can coincide with Epstein-Barr virus and cytomegalovirus infections which can reduce the body’s immune response and lead to the proliferation of cancer cells in breasts.
