This is a recipe that takes literally minutes to prepere and less than 15 to bake, you could even add a poached or fried egg to the top or serve with some hash browns.

SERVES 1 – multiply as needed

• 1 fillet smoked cod* approx 100g (skin on or off)

• 1/4 red onion – thinly sliced

• 1/2 tomato – sliced

*I use all sorts of fish cooked in this simple style, smoked haddock or cod works well as does salmon and other white fish portions.

For the sauce:

• 1 heaped tablespoon crème fraiche

• 1/3-teaspoon (tip) Colman’s English Mustard

• 20g grated cheese (small handful)

• 1 teaspoon Worcester sauce

• Few twists black pepper

Pre-heat an oven to gas 7 / 220°C.

Place the fish skin side down in a one-portioned ovenproof dish (warningthe sauce will run when heated).

Top with the sliced onions, then the sliced tomatoes.

For the sauce simply mix all the ingredients together and spoon over the fish.

Bake for 10 - 12 minutes (or if cooking several portions in the same dish allow 1520 minutes). The tail end of fish will cook in only 10 minutes while a thicker piece may take a little longer.

It’s ready to eat but if you want it golden brown and bubbling finish off under a pre-heated grill.

Delightful Debbie Celebrates

10 Years of Care

Local home care company, Home Instead Norwich, is celebrating the 10-year work anniversary of one of their longest standing Care Professionals, Debbie Howard from Costessey.

Debbie, who started at Home Instead after hearing about her mum’s friend receiving home help from the company has had a number of personal stories over the past decade, with a particular favourite for Debbie of being able to look after her boss from a previous role.

Debbie, who was gifted with an anniversary card, flowers and a Home Instead bear and special anniversary badge, said: “It has been very enjoyable working for Home Instead for the last 10 years.

“I have bonded with all my clients in one way or another and funnily enough found a link between a family member or mutual friend on a number of occasions which has only added to the experience of caring for them. A lot of things have changed over the last 10 years but the one thing that stays the same is the relationship with the clients and the trust they put in you.”

Hindsight, they say, is a wonderful thing and that is certainly true for many retirees struggling financially. Diligent planning at the earliest opportunity, however, can make all the difference between enjoying a comfortable retirement and enduring a regretful one.

Research constantly shows that people typically leave retirement planning too late and regret not saving more across their working lives. over-50s regret not saving into a pension sooner, while nearly two thirds wished they had made larger contributions at an earlier stage. These findings vividly highlight the need for more people to take control and prioritise retirement planning earlier in their working lives.

Pension blind spots

Other research+ has revealed the cost of being kept in the dark on key pension details, with over three-quarters of people not knowing how much they pay in pension fees. Additionally, a third of pension holders are unaware of their pension’s risk profile, with a similar proportion invested in low risk funds. This lack of

awareness in relation to fees and investment choices is estimated to cost an average pension holder around £120,000 over their working life.

Engagement gap

The lack of engagement has led the Association of British Insurers and Pensions and Lifetime Savings Association to launch an industry campaign to boost people’s understanding of pensions. The campaign, which is due to run this autumn and winter, will aim to raise awareness of various pension-related issues so that more people can ultimately enjoy a better standard of living in retirement.

It was 75 years ago, in 1947, that the very first Ferrari hit the streets; and while in the time since various manufacturers and designers have looked to emulate the Prancing Horse’s mould of motoring magnificence, very few have been able to.

The legendary Enzo Ferrari (1898-1988) set up his own racing company in 1939 after splitting from Alfa Romeo.

The Cavallino Rampante (prancing horse) was adopted from the

emblem of Italian WW2 fighter ace Francesco Baracca, who painted the design on his plane.

The first Ferrari

The first racing car to bear the Ferrari moniker was the 12-cylinder 1.5-litre Tipo 125, which was released in 1947. Just two models of this original car were created, neither remain today.

A winning formula

The first Ferrari driver to claim the Formula One World Championship was Alberto Ascari, in 1952.

Scuderia Ferrari has produced the most championship-winning drivers – 15 – since Ascari’s maiden victory. The most famous of these include Niki Lauda, Michael Schumacher –who won five consecutive titles –and Kimi Raikkonen. Ferrari also holds the top spot when it comes to the Constructor’s Championships, with 16 victories from 1961-2008, and 239 F1 race victories in total.

The 200 Club

The Ferrari F40 was the last car approved for production by Enzo Ferrari himself, and was the first road car to break the 200mph barrier.

HOTEL CHOCOLAT The Success of

“It’s true, I eat chocolate every day,” says Angus Thirlwell, entrepreneur and co-founder of Hotel Chocolat. “My wife can tell when I haven’t. I‘ll get in a slightly bad mood.”

It’s three decades since the 57-year-old ripped up the rulebook when it comes to mixing business and pleasure, setting up a confectionery company with colleague Peter Harris. Originally specialising in mints, the pair gradually evolved to focus on their first love: chocolate.

Back then it was a small operation in a lock-up next to a train station, surviving thanks to £10,000 in personal loans, a figure that took a sizeable hit when a product-wrapping machine they bought turned out to be a dud.

Regardless, the company gained some traction, and by the middle of the decade were one of the first to be selling their wares online. “We were pioneers,” he laughs. “We saw new methods for promoting a classic product, and that contradiction seemed to resonate.”

“We were very aware that a lot of people buy their chocolate on impulse, and even though our website was very good, there was no doubt that you had to wait until your chocolate was delivered.”

“We were looking for somewhere relatively near to our main base in Royston, because we wanted to be very hands-on. We knew the first shop would require lots of tweaking and polishing in order to get it exactly right, but sometimes that’s half the fun of business.

“We chose Watford - a classic British town. We considered it to be a great bellwether for the UK,

In another forward-thinking development, Hotel Chocolat acquired its own cocoa plantation, the Rabot Estate in Saint Lucia, becoming the only UK company to grow, manufacture and distribute its own product from scratch.

“We’re a very creative business. Our biggest challenge is deciding which ideas we should back, and which don’t deserve to get further than the drawing board.

“We are a nation of chocolate lovers, and our duty is to support that fanaticism, whilst recognising the responsibility that goes with it. In the first instance that’s things such as dairy-free recipes, but also fair-trade initiatives, and of course we always like to keep one eye on the health aspect.”

A Celebration of Cocktails

Cocktail Week is back this October with Mindful Mixology’s Danielle Wilson and chef, blogger and Handy food writer Zena Leech-Calton mixing things up across Norfolk.

Sponsored by Bullards, bars, restaurants and venues across Norfolk are taking part. Special cocktails will be on offer for £7.50 or less.

Alchemista has created ‘The Emperor’ cocktail, while The Last Restaurant are doing a ‘Wine & Roses’ cocktail. The Bowling House is smashing their ‘New York Sour’ and Frank’s Bar have a brilliantly named ‘Live and Let Chai’ made with vodka, coffee liqueur, double cream and chai syrup.

It’s not just drink, Christophe’s Crepes have a ‘Grand Cosmopolitan’ cocktail-themed crepe, while Saffire Chocolate, SweetTree Patisserie and Cupcake & Co will have cocktail themed treats.

There will be special events taking place across Norfolk, including a walking food and drink tour with Zena and cocktail masterclasses by Star Plain Stores in Holt. There’s also a competition searching for the best cocktail, with the winner receiving a barware bundle worth almost £200.

The launch party is at Tipsy Jar, which recently won the Muddy Stilettos award for ‘Best Bar’ in Norfolk! Open from 1pm on Friday 14th October.

He’s the UK’s leading money saving expert - a journalist and presenter who has kept millions of pounds in people’s pockets as well as lifting the lid on the threats and dangers we need to be aware of as consumers.

In this month’s column, Martin Lewis looks at whether it’s possible to still be green at times of real economic restraint.

None of us need reminding how tough this year has been, and while we’re all looking for the green shoots of recovery, that greenness has become another sticking point of late, with environmental campaigners looking to keep their own eco priorities live and real.

As consumers, we’re all pretty aware that products and services that are more organic, or better ethically sourced, or that contain a strong environmental edge, are typically more expensive, so that leads us to a potential conflict of choice – do we look after our planet, or do we prioritise the money in our pockets?

The answer – from research I have been doing on part of my website, and a collection of other polls that pool data on this subject – is very much that green issues take a massive backseat when our backs are against the wall.

Save the Pennies or the Planet?

Now that’s not to say I don’t have a green conscience, or the average Joe in the street doesn’t work hard to preserve the planet, but the absolute truth is that in the vast, vast majority of cases – both at times of struggle and even when things are less chaotic – individuals are not willing to make big sacrifices.

What I think is important though is that, in future, it would be nice if people are being incentivised to go green, and doing so means we are given all the support we expect from government.

We expect tax cuts on fuel and a decrease in oil price to be reflected at the pump; we expect utility providers to play by the rules with clear billing and fair price schemes; we expect home insulation initiatives to really add up in the short-term, not 25 years down the line; and we expect new customer incentives to be accompanied by rewards for existing ones.

What’s more, the days of us feeling guilt-tripped into buying a green product over one that isn’t, are probably and hopefully over. Of course, we all want to get back to a place of economic and environmental prosperity, and I’m sure that will come, but our conscience to feed our families has been proven, time and again, to be stronger than anything else.

James Martin Tomato & Basil Soup

INGREDIENTS

Serves 4

• 1kg mixed ripe tomatoes, roughly chopped

• 3 garlic cloves, roughly chopped

• 1 handful fresh basil  leaves, plus extra to serve

• 1 tbsp tomato purée

• 4 tbsp olive oil, plus extra to serve

• 400-600ml hot  vegetable stock

• Salt and freshly ground black pepper

• 2-3 tbsp caster sugar, to taste

• 150ml double cream, plus extra to serve

• 1 ciabatta loaf, thickly sliced, to serve

1. Heat a large, heavy-based saucepan over a medium to high heat. When the pan is hot, add the tomatoes and fry for 4-5 minutes, or until they have started to break down. Add into this the garlic, basil, tomato purée and two tablespoons of olive oil.

Continue to cook for a further 1-2 minutes.

2. Pour in 400ml of hot vegetable stock, bring the mixture to the boil, then reduce the heat until the mixture is simmering. Simmer for 3-4 minutes.

Depending on the water content of your tomatoes, you may need to add more stock to reach a good consistency. Once ready, remove the pan from the heat and use a stick blender to carefully blend to a purée.

I have always felt there is something enchanting about tomato and basil soup. It doesn’t pretend to be anything it isn’t, yet amongst those flavours there is sweetness, sharpness, depth, and a blitz of the tastebuds that will awaken anyone up from their slumber.

With a piece of rustic bread, and served al fresco, I struggle to think of a better lunchtime treat.

3. Return the pan to a low heat to warm through and season to taste, with salt, freshly ground black pepper and sugar. Now pour in the cream and return the mixture to a simmer. Continue to simmer for a further 1-2 minutes.

Meanwhile, brush the ciabatta slices with the remaining two tablespoons of olive oil.

4. Next, heat a griddle pan until hot, add the ciabatta slices, in batches if necessary, and cook for 1-2 minutes on each side, or until golden brown griddle marks appear on both sides of the ciabatta.

5. To serve, ladle the soup into four serving bowls. Drizzle a swirl of double cream into each bowl, then a swirl of olive oil, to garnish. Sprinkle over a few basil leaves.
