hey are frustratingly elusive, covered in warts and smell like rotting flesh – and yet truffles are the ultimate in luxury. They can cost more than diamonds –a white alba truffle weighing just over a kilo was sold last year for £150,000 to a retail investor and his wife from Hong Kong. These bulbous fungi exude a charm that quite belies their appearance and inspire much devotion amongst foodies due, not only to their unique flavour, but the fact that they are so scarce and when they are found, they have a very short shelf-life. On page 90, writer and photographer Doug McKinlay reports on his expedition to hunt for truffles in Lot, south west France, alongside trusty Labrador Lago. He also jostled with fellow truffle finders at a market place, where the fungi changed hands for more than the cost of a carat-sized diamond. One chef who has surely cooked with truffles is the hugely talented Nathan Outlaw. On page 62, the Michelin-starred king of seafood talks about his love of the seaside, how he sources his ingredients and why ensuring sustainability in the seas is important to him. There is much in the issue dedicated to food and if you’ve ever considered beginning your own wine cellar Wieteke Teppema, sommelier and wine buyer, offers advice on where to start. And you can have the best food and drink in the world but it can mean little without the perfect setting in which to enjoy it. hen Eddie Redmayne first came to global prominence, it was clear from the off that Hollywood had very much fallen for his typical boyish charm. The Westminster-born actor and model has enjoyed a career that straddles noteworthy dramas The Theory of Everything and The Danish Girl, bigbudget epic Les Misérables, and the magical box-office smash franchise Fantastic Beasts. His latest project hopes to tap into an already proven combination, as Redmayne reunites with his compatriot and The Theory of Everything co-star Felicity Jones in Tom Harper’s ballooning epic The Aeronauts. “Having become good friends and remained good friends with Felicity over the years, it made everything so much easier and more comfortable,” smiles the 37-year-old. “Especially due to the nature of this story, which involved two people sitting together in a basket for a significant portion of the filming.” The film is based on the 1862 world-record-breaking altitude flight by British aeronauts James Glaisher and Henry Coxwell, which saw the pair reach a height of around 11,887m by gas balloon. Jones’s Amelia Wren replaces the character of Coxwell. Shooting at high altitude offered plenty of opportunity for midair mishaps. “It was wonderful and terrifying in equal measure,” Redmayne explains. “Gas ballooning is very different from hot air ballooning. Hot air ballooning allows for more control because you can keep raising yourself up and down. With a gas balloon, it’s literally a hydrogen-helium-filled balloon with a basket attached to it – and we had a certain amount of trepidation attached to the prospect of going up in one.” And with good reason, as Redmayne recalls. “On the first day of shooting, we wound up crashing into these trees around 20m high and came careering down to the ground. The basket smacked over and Felicity’s head – I’ll never forget the sound – cracked against this champagne chest, and then there was total silence.” Jones was thankfully OK. “We had this slightly hilarious moment at the end of filming where I was like, ‘Wasn’t that fun?’” Redmayne laughs. “And she said, ‘Actually it was really hardcore and slightly horrendous.’ I think I had more fun than she did.” Following a positive premiere at the Toronto International Film Festival, the biopic could well be on course to secure yet more silverware for Redmayne’s trophy cabinet – not that the star himself is wrapped up in visions of a second Oscar win in the near future. “I never had very lofty ambitions other than to be able to earn my living on the stage. I loved doing theatre at school and I enjoyed being part of that world. I wasn’t thinking much beyond that and so I didn’t have any specific ambitions when it came to working in film. Once I began acting in movies, I took a very practical approach – one job at a time – where I simply wanted to LU X U R Y L ON D ON .C O.U K

do the best possible work with every character I played.” He says he is usually inclined to let himself be pushed out of his comfort zone. “I’m always surprised by how other people see me and the kinds of roles I get offered, as opposed to those I’m more anxious to play. I tend to be drawn to characters that scare me or challenge me in some way, but you never know until you read the script what is really going to excite you about a character. It’s very easy for me to immerse myself in a world that does not exist. I am good at letting my imagination run wild if, for example, I’m in front of the green screen, pretending to scream at creatures in Fantastic Beasts. Sometimes while I’m acting, I feel like a child who’s been given permission to have as much fun as possible, and come very close to believing myself to be whoever I’m playing at the time.” Some of his best parts, including roles as Stephen Hawking and Lili Elbe, he says that he never expected to get. “My only goal in this business has been to keep working regularly. That would have been more than enough for me. I never for one moment take things for granted. There’s this pressure to keep working and working because you never know when the roles might stop coming in.” This can prove more stressful than glamorous, he adds. “For many years I did nothing but go from one job to another, but in doing so you give yourself no time to properly live. While I

was shooting The Danish Girl, I was promoting The Theory of Everything, and while I was shooting Fantastic Beasts, I was flying to promote The Danish Girl. I remember one time I happened to finish shooting at five in the morning on a Saturday in London, catch a plane to Los Angeles, land at seven in the morning, do a day of interviews, screening and red carpet, and then have to fly back immediately to London for night shooting on Beasts.” Redmayne is still getting used to living in the spotlight. “I’ve tried to learn how to be entertaining while doing talk shows but I’m not very good at that,” he sighs. “Since I don’t have the security of a character to protect me, I try to be funny at all costs, but I never manage to pull it off.” One of five children, Redmayne was the first in his family to break into acting. He made his stage debut aged 11, appearing in a London production of Oliver! directed by Sam Mendes. As he explained to the The Telegraph, “I was workhouse boy number 40. It was such a minor part that I didn’t even meet Sam Mendes.” Redmayne attended the prestigious Eton College and was in the same class as Prince William. It was there that he fully fell in love with acting. “It was thanks to the greatest drama teacher I could ever have wished for, Simon Dormandy. He inspired me to continue acting and I owe him so much,” Redmayne recalls. “He treated us like professionals and that kind of respect and guidance makes you want to take things very seriously. When you have someone like that giving you advice and encouraging you every step of the way, you feel that you can accomplish anything. We still stay in touch and over the years I’ve continued to seek out his advice and work with him if I think I could use some feedback when I’m preparing for a role.” At Cambridge University, Redmayne studied art history, and landed his first substantial stage role in the 2002 production of Twelfth Night while still a student. Soon after, he was cast in The Goat, or Who Is Sylvia?, a performance that earned him accolades including Outstanding Newcomer at the 50th Evening Standard Theatre Awards in 2004. During university, he also had a fleeting career as a model and while it wasn’t his natural calling — “It was the most hilariously unsuccessful event ever” he told The Telegraph — it did set him up for a number of fashion gigs he has since secured as a Hollywood star, most notably Burberry in 2012, for which he starred in a campaign alongside Cara Delevingne and, as of 2015, OMEGA – a brand he was introduced to by his father, and for which he is ambassador for the Seamaster Aqua Terra series. Away from the spotlight, he lives in London with his wife, PR executive Hannah Bagshaw, whom he married in 2014 at Babington House in Somerset, following a two-year romance. The couple had a daughter, Iris May, in 2016, and a son, Luke, in 2018. Redmayne took a break from acting for the first time in his career after his daughter was born and says becoming a parent was an “extraordinary” feeling. “The amazing thing is, everything that everyone tells you beforehand – which is all cliché – is true. You’ve heard it all before, and yet when you’re experiencing it, it feels like the first time and you find yourself telling everyone these things as if they’re completely new and original thoughts. There’s this amazing thing with children: whenever you’re having a bit of a tired moment or something, it’s like she’s always just one stop ahead of you, smiling you along. It’s great.”

Our sense of smell is a powerful tool. Closely linked with memory, a particular fragrance can transport us back in time almost instantly, conjuring up vivid scenes in our mind. The fresh zingy scent of an apple orchard can evoke childhood nostalgia, while the musky undertones of grandma’s 1920s silk scarf has a collection of stories to tell. The art of perfumery itself is such a delicate balance of science and nature. It takes years for perfumers to hone their olfactory skills, cultivating a ‘nose’ for aromas. And even then the end result often alters on an individual’s skin. So, the idea of wearing more than one perfume at a time sometimes goes against the grain. That was, of course, until we discovered the dizzying heights of scent layering. In a world where customisation is king and one-offs rule, scent layering is the ideal way to create your own bespoke aroma. For perfumer Alexander Lee, creator of Penhaligon’s Trade Routes fragrances Agarbathi & Paithani, perfume layering is “like walking in the shoes of a perfumer”. Having always regarded fragrance to be like “invisible pieces of clothing”, he says fragrance combining is “simply wearing multiple fragrances at the same time with the goal to create a personal olfactive form”. Andrew Goetz, co-founder of natural brand Malin + Goetz, supports Lee’s clothing analogy, saying, “Each layer brings something unique and special to the ensemble.” So, what exactly is perfume layering? In its simplest form, it is applying two or more singular perfume notes on top of one another to create an original smell. But, spritzing a little Chanel Allure on your décolletage followed by a splash of Miller Harris Tea Tonique and hoping for the best is not where it’s at. While you don’t have to keep to one ‘family’ of perfumes – i.e. it’s ok to mix brands – it is wise to experiment first to discover which tones suit your skin best to avoid venturing outside in a billowing cloud of pong. And just as importantly, be sure to get the order of layers right, says beauty expert, Leighton Denny, MBE. “Imagine baking a cake – sponge, then flavour, then icing,” she says. “This is key, and fragrance cocktailing works in a similar way; each layer of your cocktail should be ‘lighter’ than the last. If you reverse them, all you smell is the strongest note because that would be on top.” Jo Malone London has forged the way when it comes to scent layering, not only offering in-store consultations but also helping customers to layer their scents when ordering online. First choosing from a range of 20-plus perfumes that span the spectrum from citrus and fruity all the way to floral, spicy and woody, customers then opt to make their scent ‘warmer’ or ‘fresher’ and the website’s algorithm does the legwork for you, matching your choice with a complementary second perfume. 32

For optimum results, however, there’s no beating the good old-fashioned method of spray ‘n’ sniff. You might end up with some pungent odours, but a bespoke bouquet could also be a happy surprise. “For beginners I would suggest starting with a deeper, richer scent like a woody musk as your base, then layering a soft floral or a fresh citrus scent on top,” advises Denny, whose own collection of Light & Dark fragrances lend themselves well to layering. The warmer the scent, the better suited it is to a base note (the first layer), so sandalwood, pepper, and cardamom are good bets. For the second layer, floral tones comprise the likes of rose, jasmine and gardenia, while lime and grapefruit are more fresh aromas, and fruits, such as watermelon, apple and cherry are – to state the obvious – fruity. Denny also advises using labelled scent strips or tissues to pull the scents together in different groupings. Once you’ve found a combination you like, you can test it out on your skin. “Apply the stronger scent to skin first and immediately mist the second fragrance over it as a little residual wetness allows the two scents to fuse,” she says. “If you have a combination that you love, then you can start to bring in a third scent too, if you want.” Layering can also help perfume to last longer on your skin, as it prevents the fragrance oils from being absorbed into the skin as quickly. Also, keeping your skin ultra-hydrated will work to lockin the scent, and avoid rubbing just after application to prevent ‘crushing’ the scent and dulling its development. If you’re a little unsure about the whole layering process, a good starting point can be using an ‘active’ scent like Molécule 234.38 from Zarko perfume, which relies on one large molecule as its dominating ingredient. The molecule interacts with your own pheromones, as well as body temperature and surroundings, making it an active part of the fragrance. This means the perfume will evolve continuously over a period of 10 hours, adapting to the person wearing it and essentially using your own pheromones as a base layer. For the more daring among you who are keen to make an impact, Space NK’s beauty blogger Rebecca Fearn suggests mixing a refreshing citrus with a soft oud, like Clean Reserve’s Sueded Oud. “This unlikely pairing will result in a rich, spicy aroma perfect for evenings out or special occasions,” she says. Alternatively, Orange de Bahia from Boucheron, which launched in spring, is a fragrant perfume with refreshing notes of citrus-floral-green, and will mix well with the woody tones of Stories No. 2 by Eliza Grace. Blending notes of Bulgarian rose, spiced ginger and cedarwood with tonka bean, patchouli and amber, it serves as a complex base layer that will leave a lasting impression. 33

his September, jeweller Monica Vinader teamed up with Caroline Issa – fashion editor, CEO and publisher of Tank – to create a 16-piece collection of necklaces, earrings and bracelets with raw, candy-coloured gemstones and complemented with 18ct gold and rose gold vermeil. Montreal native Caroline has travelled the world but called London home for the last decade. Having been friends for over eight years, both women were eager to bring Caroline’s expertise in fashion and street style and Monica’s flair for hand-crafted gemstones together, deciding to collaborate in Vinader’s Norfolk design studio. Vermeil is a French technique that involves gilding silver or bronze with gold to ensure that the pieces are stylish yet affordable. Vinader’s following is a loyal one; she’s worked with The Duchess of Cambridge, Kate Winslet and Bella Hadid, but her jewellery has also become a symbol of discreet taste and elegant understatement – get any group of women together, and you’re likely to find a few sporting stacks of her signature Siren rings. CHAI KI WORDS ANNA PRENDERGAST

C

hai Ki is the lesser-known little sister of Mayfair-based Indian Roti Chai. The latter (whose name basically translates to ‘bread tea’) has always celebrated the simplicity of street food under managing director Rohit Chugh (who opened The Cinnamon Club in Westminster) and executive chef Vivek Singh. Opening in 2015, Chai Ki allowed the team to get a little more creative, bringing flavours from Southern Kerala to Canary Wharf’s North Dock with an unintimidating menu and two restaurant spaces. Chai Ki’s Toddy Shop Bar, the more informal of the two, is where couples deliberate over the cocktail list and friends drop by before a concert. Named after the small stalls in Kerala that tend to sell ‘toddy’, or palm wine, Chai Ki’s bar offers fun cocktails with Indian flavours seamlessly incorporated – think margaritas with tamarind and martinis with grapefruit and cardamom. Chai Ki is the kind of place you find yourself relying on – it’s open from 7am until 11pm; everything bar one item on the menu is under £10; you can order wine by the carafe for those evenings when one glass won’t quite cut it but a bottle feels like a bad idea (see: Mondays). The food is seriously good value for money, with moreish sharing plates such as Bhel Puri puffed rice dotted with pomegranate seeds and Indo-Chinese chilli chicken. Parathas are flaky and golden, and garnish several dishes such as the jackfruit masala fry, a warm spiced coconut and cumin curry. It’s also accompanied by a zingy kachumba, a serving of salad that consists of chopped tomato, cucumber, onion, lemon juice and chilli. The Himalayan ribs are the hottest thing on the menu (toddy shop food tends to be on the fiery side), rubbed in fermented chilli, pineapple and star anise; order with a side of dahl puri, crispy semolina shells filled with potato, tamarind and cooling natural yoghurt. The staff don’t just know the menu, they also know the food – they have favourites, and aren’t afraid to share their insider tips. Make use of it if you don’t know your paneer from your paratha, and ask them for the latest drinks promotions and a table by the window (the pew-style seating isn’t as comfortable).

o vast is Nathan Outlaw’s cookbook collection that his Wikipedia page makes reference to it. While the rest of us may have a shelf or two dedicated to dusty paperbacks from gastronomy’s finest, the Cornwall-based chef has a veritable library that spans hundreds. “My wife goes mad,” he chuckles down the phone from his home in Port Isaac. “I’m getting on for a thousand now. We have to keep buying new shelves.” His most prized tome is a 1988 copy of Rick Stein’s English Seafood Cookery – “back when he was still called Richard,” Outlaw jokes. “To this day it’s my favourite.” It’s hardly surprising; Outlaw owes much to Stein. For two years, he supported the chef in his kitchen in Cornwall’s Padstow, where he learned how to craft the seafood masterpieces that Stein is renowned for. Today, the only person who rivals the Cornish cook is Outlaw himself. “The best lesson Rick taught me was to be confident in simple food,” he says. “His enthusiasm when he’d come back from his travels was infectious; I just loved listening to him. I still do now – I watch all of his television programmes.” Born in landlocked Maidstone in Kent, Outlaw spent his summers in Cornwall, where he found a love of the seaside. His first foray into the kitchen was as a child, when he would help his chef father make toast for the breakfast crowd. He later trained alongside Gary Rhodes and Eric Chavot, before moving to Cornwall to learn the ropes from Stein. At the age of 25 he opened his first restaurant, Black Pig, against his peers’ better judgement. Less than a year later, he was


awarded his first Michelin star. Black Pig didn’t last long; it closed after three years, which was perhaps a blessing in disguise. In 2006, he took over the restaurant at Marina Villa in Fowey, Cornwall, where he opened his eponymous Restaurant Nathan Outlaw, a seafood-focused eatery with a relaxed vibe and simple, faultless, food. The restaurant – which moved to Rock in 2010 and then to Port Isaac in 2015 – was awarded its first Michelin star in 2011; it now has two, and to this day remains the only specialised seafood restaurant in the UK to hold the two-star culinary badge of honour. But the plaudits don’t end there. Twelve years after it opened, Restaurant Nathan Outlaw scooped The Good Food Guide’s top gong when it was named Britain’s best restaurant in 2018, knocking Simon Rogan’s L’Enclume off its throne – a throne Rogan had sat on for four years. “Outlaw’s food is characterised by absolute freshness of ingredients and by a clear sense of

where our fish is coming from,” says Outlaw. “When you’re in a landlocked location, it’s very difficult to know who to trust, but I can just talk to the fishermen. Personally, I’m a bit of an anorak about fishing so I’m always quizzing them about what gear they’re using, and if there’s something I don’t like the sound of then I won’t use them.” Among the stories in the book are recipes that have previously been on the menu at Restaurant Nathan Outlaw. The crowd-pleasing gurnard with Porthilly sauce is, the chef says, a personal triumph. “It’s everything I ever aimed to do when I first started cooking under my own name,” he explains. “I always wanted to get to a point where my food was so simple that when you looked at it you’d think ‘Well, I could do that’, but actually you couldn’t. I remember telling one of my chefs about 10 years ago that that was the stage I wanted to get to, and now we have.” When he’s not winning awards for his work at

“Outlaw’s food is characterised by absolute freshness of ingredients and by a clear sense of purpose” purpose,” The Good Food Guide said. “He follows no fads, copies no recipes, joins no schools, but is driven by his supply of impeccably fine ingredients, and a chef’s talent for unlocking all they have to offer.” The chef’s new cookbook, named after his two-Michelin-starred Port Isaac eatery, serves as proof of all that The Good Food Guide has claimed. It follows a year in the life of the restaurant, with recipes that riff on Outlaw’s simple, and seasonal, approach to cooking. “Seasonality is everything, especially with the food that I cook,” Outlaw says. “Even though our dishes are quite complex in the way they’re put together, they rely on the ingredients being bang on. We can all go to the supermarket and grab some asparagus at any time of the year, but where we are there’s a lady who grows it for just eight weeks and that’s the only time I’ll ever have asparagus on the menu.” The asparagus grower is Jax Buse and she, along with a number of the restaurant’s other suppliers, is referenced in the book. Unlike the chef’s previous cookbooks, the new volume focuses less on cooking and more on sharing stories about the restaurant and the farmers, winemakers and fishermen that are behind it. ‘Farm to table’ is hardly a new concept, but for a seafood chef in Cornwall, knowing the source of your ingredients is part and parcel of the job – and ensuring sustainability in the seas was a vital task long before David Attenborough got involved. “We’re lucky with sustainability in that we can see 64

His London restaurant, Outlaw at The Capital, closed earlier this year to make way for new a venture: Siren at The Goring in Belgravia, which launched this summer. It is the hotel’s first new restaurant in more than 100 years and is, naturally, focused on seafood. The Russell Sage-designed space takes full advantage of The Goring’s delightful secret garden, with double french doors that link the restaurant with the outdoors. The menu offers the best of Outlaw’s artfully-executed dishes, with fresh fish available direct from Cornwall each day. Given his seafood background, it comes as no surprise when the chef confesses his favourite pastime is fishing. It’s hard to imagine he can possibly find the time, what with writing a new book and flitting between four restaurants – but he assures me there’s still space in his schedule for doing what he loves most: cooking. “I’ve always just loved the kitchen. If I’m at home, I’ll be sitting in the kitchen, even if I’m not cooking,” he says. “A lot of people think it’s strange that I can do 15 hours a day and still love it, but that’s the reason I do it. WHERE TO START The world of wine is vast and confusing with many rabbit holes to go down. To narrow your selection, focus on one red grape and one white grape that you like, or one region you love. HOW TO STORE The days of large stately homes with deep vaulted cellars are gone. In London, we tend to be flat dwellers and as such finding suitable storage space for wine can be difficult. Wine is a fairly delicate creature. The ideal temperature to store wine at is 13-14 degrees; it doesn’t like sunlight, heat or excessive humidity/ dryness, which can damage the cork and spoil the wine – which means kitchens are wine killers. Throw away that rack on top of your cupboard and instead invest in a small wine fridge. This will offer you a temperature controlled space to store your wine. Once your collection has outgrown your fridge, you can consider opening an account at a Bonded Warehouse. Many merchants will sell you a case of wine and deliver it straight into your warehouse account. For a small annual fee, your wine can be correctly stored there until you are ready to drink it. WHO TO BUY FROM Developing a relationship with an independent wine shop is a good start. Ask what they are excited about or what they would recommend to you – they know their selection best. Once you trust their recommendations you can broaden your horizons. Many shops will host small tastings that will give you an opportunity to try new wines and see what you like. Lea & Sandeman, Bottle Apostle and Humble Grape are oenophile favourites – and the latter has recently opened a space in Canary Wharf. Online also gives you a lot of options and merchants tend to specialise in certain countries – one may delve deep into the delights of German Riesling while the other highlights South African specialities. The Wine Society (thewinesociety.com), Woodwinters (woodwinters.com), Howard Ripley (howardripley.com) and Stannary Wines (stannarywine.com) are all good places to start. Start with a few different bottles and narrow down which grape or region you prefer. Once you find a wine you like you can invest

in a case. Wines by the case are cheaper than by the bottle – plus, you have the added benefit of drinking the same wine over the course of a number of years and seeing how it evolves. HOW TO SERVE Keep opened wines in the fridge (even reds – just get them out 30 minutes before you want to drink them). This will slow down the rate at which the flavours oxidise. Be aware that not all wine is built to age, and some are better young, when they have all their fresh, crunchy fruit flavours When it comes to drinking, be sure to buy some nice glasses. Larger glasses that taper at the top allow the aromas to stay within the glass. If you keep your glasses stored in a box, wash them before you pour in the wine. You don’t need a fancy crystal decanter if you want to aerate your wine – a jug will do. Simply pour the wine into the jug, and pour back into the bottle when you’re ready to serve. Magnums (2x 750ml bottles in one) are great fun for parties, especially Rieslings from Germany.

A DAY IN THE LIFE OF A S OMMELIER Beginning her professional career in media, Wieteke Teppema changed direction in 2006 to become a commis sommelier at Prism Restaurant in the City before stints at two Michelin-starred restaurants The Square and The Ledbury. Following position as head sommelier and wine buyer at Viajante Restaurant, Teppema moved into on-trade sales for Roberson Wines until 2015 and then Howard Ripley Wines until 2018, during which time she also consulted as sommelier for Trinity. In 2019, she opened Gezellig, a wine-focused restaurant and bar in Holborn. Here, she describes her typical day. The life of a sommelier is dictated by service, which may only last around four hours for lunch and six for dinner. To ensure service runs smoothly, it’s crucial that everything is ordered and organised ahead of time. It’s commonly assumed that we are paid to drink, which is not far from the truth… It is considered professionally acceptable to have your first sip of wine by 10am. My day usually kicks off around 9am with a pot of coffee to help me power through the morning. I go through emails, looking for wines to purchase for our drinks menu – this can be a selection of wines through wine merchants, or what we’re seeing more of these days are wines offered from private collectors. Orders are placed and deliveries will arrive. The wines are all checked for the correct vintage and producer (difference in price between a bottle of premier Cru Burgundy and a Grand Cru can be a couple of hundred pounds – the labels look very similar, so we always have our eye on the small print). Cellar management is crucial; wines need to be organised, tagged and bins numbered, which will allow us to find the wine swiftly while we are in a busy service. Lunch service will kick off at noon. We are an informal restaurant without a white tablecloth in sight. Our style of service is relaxed and there is no ‘official’ sommelier. Instead all the 68

Front of House staff are very knowledgeable on all drinks offered. Lunch will finish around 4pm and we’ll set up the restaurant for dinner service. Between lunch and dinner service I may do a tasting with an importer, who will open a selection of wines that they have recently started working with. This allows me to keep up to date with what is happening on the ground in wine regions that I am interested in and see how certain wines are evolving. The briefing for dinner service is given at 5.30pm, which is followed up with a staff training where we taste and talk through a cocktail, a wine or a digestive and go through a new dish that our chef wants to put on the menu. Our first guests arrive at 6pm. As we are a wine-focused restaurant, we also offer corkage and we’re happy for people to bring bottles from their own cellars to enjoy with their meal. It offers us the chance to taste rare wines and older wines, which we don’t have on the list.

SETTING THE SCENE Whereas summer décor is all about bringing the outdoors in and dressing down a table, winter trends are more about sprucing up the ordinary, and beautiful textured tablecloths, table runners and linen can transform a space in seconds. TAKE CENTRE STAGE Charming, rustic centrepieces are the prettiest (and trendiest) way to accent your meal for winter. And the beauty is in its versatility. Opt for a collection of greenery gathered from the woods for country chic, or push the boat out with an ice-packed champagne bucket. If baking is your forte, why not showcase your desserts under a glass cloche or artfully display them on a marble or slate chopping board? HIPPING HALL Lancashire The ideal spot for exploring the Lake District and the Yorkshire Dales, this original 17th-century blacksmiths may look like a traditional country bolthole, but appearances can be deceptive. Head chef Oli Martin’s menu is minimalist and unexpected – butter pie, chamomile tomatoes and hen of the woods may sound simplistic but don’t be fooled – tastes are complex and beautifully multi-layered. Martin’s philosophy is to celebrate local artisanal producers, seasonal produce and organic suppliers with the menu often changing daily depending on what comes into the kitchen. Best for... a windswept retreat YNYSHIR, SNOWDONIA Wales At this original Victorian house in North Wales, found in a breathtaking location between Borth Beach and the rugged mountains of Snowdonia National Park, head chef Gareth Ward showcases the best of British produce, giving it a unique Japanese twist. Miso, dashi, mirin and soy bring out the flavours of foraged foods from the grounds, woodland and nearby coast, while farmers and Welsh growers are paramount to his approach. Best for... gastronomes RESTAURANT SAT BAINS Nottingham Holding two Michelin stars, Restaurant Sat Bains, found on the outskirts of Nottingham, is renowned for its gastronomic highs. Celebrating its 20th anniversary this year, chef Sat Bains’s boundary-pushing cuisine means that his eponymous restaurant consistently clocks up awards, placing it among the best in the country. With a choice of a seven or ten-course tasting menu, it’s wise to arrive hungry. Highlights include the inventive ‘introduction’ named The Five Taste – a precursor of the salt, sour, bitter, umami and sweet dishes yet to come, and which include tagliatelle of kohlrabi, squab pigeon shawarma spices and chocolate 85 per cent. After the indulging, you’ll need a lie-down in one of the seven recently-revamped bedrooms found in the converted farm buildings. S

he’s a professional, at the top of her game. Her senses are pin sharp and very little gets past her. She has plenty of patience and takes her time with almost zen-like concentration; and once her target is acquired it’s all over. No, she’s not one of the great cats stalking prey. This predator’s game is much more difficult to find and, deliciously, always adds that little bit of je ne sais quoi to any Michelinstarred meal. She’s Lago, a five-year-old chocolate lab and a seasoned truffle hunter. In this region of south-west France, the Lot department, there are two culinary stars that combine with the area’s rich history to produce some outstanding gastronomic treats: black truffles and Malbec wine. Of the two, I find it difficult to distinguish which has had the greatest impact; it’s like splitting very delicate hairs and adding a touch of locally grown saffron to come up with something truly mouth-watering. However, Lago is definitely the queen of the truffle hunters at the 700-year old Château de Mercuès, the family home of Christine and Bertrand Vigouroux. The Vigouroux family have been vintners and hoteliers here for four generations. Bertand’s father, the late Georges Vigouroux, bought the château in 1983 and began a painstaking reconstruction until he retired in 2010, when Bertand and Christine took over. But on this chilly early afternoon at the beginning of February, the middle of the three-month truffle season, Christine is running Lago through her paces. Truffles tend to be found among the root systems of certain nutty trees, oaks being one of the best, and with a thousand planted throughout the vineyards, the Vigouroux’s can almost guarantee a ready supply of black truffles for the larder of Le Duèze, the château’s Michelin starred restaurant. But first Lago has to find them.

“We prefer to use dogs now when it comes to finding truffles,” remarks Christine. “There are others who use pigs, but when we’ve used pigs in the past, I always found I had to fight with them to stop them eating the truffles. It’s not the same with dogs.” And almost on cue, Lago shoves her paws and nose into the dirt, among the detritus of last autumn’s rotting oak leaves and comes up with a golf ball-sized lump. It looks like it could either be a piece of coal or just a wad of dirt, anything but something edible and so precious. Indeed, truffles are like black gold in this region, almost elevated to celebrity status among the local population, and fetching a pretty penny at market too. For most of the year the village of Lalbenque, in the Lot Valley, is like any other medium-sized town in the region, all business and getting on with life. But during truffle season, between December and March, it changes. And on every Tuesday afternoon, the streets are closed off to traffic where stalls and long benches are then set up for the weekly truffle market. But it’s really more melee than market. When I first ventured into the market I didn’t really know what to think. All I saw were hundreds of people jostling to get close to what I can only describe as a stage (it later turned out to be a truffle weigh station). It looked like a mosh pit at a punk show. But as I got closer any semblance to wild haircuts and unruly teens morphed into tussling middle-aged men and women. This was definitely more of a Paul Anka crowd than a Dave Grohl one. Although there was no stage-diving, they still shoved and shouted, trying to get as close to the star as possible. Which, of course, is the black truffle. Later, back at the 13th-century chateau, after a good hour’s wrestling with the truffle set, I had the chance to really get to know the place.

Situated high on a forested promontory overlooking the Lot Valley and the historic town of Cahors, Château de Mercuès is exactly what a mediaeval castle should look like. For centuries it was the summer residence of the counts and bishops of Cahors before time and a lack of interest took its toll. Working with specialist architect Axel Letellier, the Vigoroux family began to benevolently restore the castle when they took it over in 1983. Now complete, with crenelated walkways, turrets and even a drawbridge, it is a genuine French château, complete with 30 well-appointed doubles and suites. There are even the remains of coats of arms on the walls damaged during the French Revolution, giving the castle a true patina of history. But I’m here to get the skinny on the wine, that sumptuous Malbec that goes so well with the Michelin food served up by chef Julien Poisot in Le Duèze. But before tucking into what would become a five-course meal of pure excellence, I had the chance to tour the working end of the château with Bertand. “Malbec was almost lost to France,” he says quietly, while we are standing in the château’s cathedral-like Romanesque cellar. “At the end of the 19th century a blight all but wiped out the grape. It’s been grown here since Roman times, but we almost lost it.” Indeed, the Phylloxera pest, imported from American vines, hit the French wine industry hard, including the Malbec grape in the Cahors region. It wasn’t until 1971 when Bertand’s father, Georges, started re-planting Malbec grapes that the wine got a new kick-start. “Some said he was crazy,” said Bertrand. “That the Malbec grape was all but done, but he proved them wrong. And the proof of that is in the wine we produce today.” Bertrand isn’t concerned with how many accolades his wines win. He only really cares about how drinkable it is. “Wine is for a good time,” he says. “I want people to share the wine and finish the LU X U R Y L ON D ON .C O.U K

bottle. Every wine needs to be drinkable; that is my central goal.” It’s a noble idea, but the provenance of modern Malbec wines isn’t just a French story. In fact, if it wasn’t for the foresight – or just plain luck – of the governor of the Mendoza region in Argentina, it’s conceivable that French Malbec may not have recovered. In 1852 governor Domingo Faustino Sarmiento employed the French agronomist Miguel Pouget to bring a variety of French vines to Argentina, Malbec being one of them. It flourished beyond anyone’s expectations and today it’s thought of as an Argentinian wine, rather than the French of its origins. And crucially it wasn’t affected by the Phylloxera blight of the late 1800s. But this is where the flexibility of the Vigoroux family really makes it mark. Not to be left resting on his laurels, Bertrand got together with legendary Californian wine maker Paul Hobbs, who arguably put Malbec, Argentina and Mendoza on the international wine map, to collaborate on a number of French Malbec projects. Indeed, the two of them have developed the Crocus line. Founded in 2011 by Hobbs and Vigoroux, Crocus wines combine old world, ancient terroirs with new world thinking and technology to redefine Malbec in its birthplace. It’s a concept that has trickled down into other wineries in the Cahors area, including Bertrand’s family plot at the Château de Mercuès, where prior to tucking up in bed for the night in my Art Deco suite, I was able to sample some of those wonderful Mercuès Malbecs while Chef Poiset’s five-course menu, consisting of all things truffle, put the finishing touches on a wonderful experience in the Lot Valley. I

t’s the island paradise said to be where billionaires go to escape those pesky millionaires. In truth the island is exclusive and luxurious - but is also hugely welcoming and worth saving for. Those specialising in elite holidays believe that this haven has effortlessly bypassed the likes of Mustique and St Barths. My stay at Canouan’s Mandarin Oriental convinced me this is true. In a ruthlessly competitive race to provide other-worldly travel experiences, the brains behind this hotel are winning. Canouan is in the heart of St. Vincent & The Grenadines, an archipelago made up of 32 islands including St. Vincent, Mustique, Petit St. Vincent, Bequia and Palm Island. Known as the island of tortoises – you see them everywhere – it is five beautiful miles of lush, tropical, rolling hills that peak at the top of Mount Royal. Home to the Caribbean’s largest natural coral barrier reef, it is also known for its exceptional white-sand beaches. The word unspoiled hardly covers Godahl Beach, Carenage Bay, Shell Beach, L’Ance Guyac and Grand Bay. Fine white powdery

sand, clear azure sea and a seemingly always cloud-free sky are picture-book perfect. But there is so much more to Canouan. For a relatively small island, it has a surprising number of top-notch amenities which attract the very wealthy. These include a super-yacht marina, championship golf course and an airport runway that can accommodate aircraft up to the size of a Boeing 737 or an Airbus A319. Just a few reasons why the island has overtaken competitors. It simply offers more. To reach this nirvana, there are main gateways via Grenadine Air’s scheduled flights from Barbados, St. Lucia, St. Vincent and Grenada. Private charter planes and Canouan’s private planes are popular options for getting to the island. We took the hotel’s private jet from Barbados and heartily wished the 20-minute journey had been longer. It’s a fact that travelling this way thoroughly spoils you; those ordinary flights taken by most of us really cannot compare. The views of the island as we came in to land took our breath away. The Mandarin sits on the 1,200-acre Grenadine Estate, a complex that the developer is transforming into the next “it” destination in the Caribbean. The lure is a world of luxury where every single detail is spot on and all tastes catered for. Unlike those more well-known destinations, Canouan is remote and the beach is inside a gated community, which makes it, according to Duarte Correia, the Mandarin Oriental’s general manager, an ideal place for celebrities and high-profile people who don’t want to see or be seen. “We are super, super private,” he says. So private, in fact, that Hollywood A-listers have passed through with never a mention, although Amy Schumer did post about her babymoon to Canouan. All the buzz and the new developments have sparked the question: is Canouan the next St Barths, Antigua or Turks & Caicos? But Correia has the right answer: “Ideally the island will not be the next anything, but instead become its own thing”. Joan Roca, CEO and founder of the Essentialist travel site, says: “There’s been a lot of talk recently about Canouan, particularly among sophisticated clientele looking for a balanced share of luxury and adventure. “In the next few years, we expect this under-the-radar hotspot to emerge as the perfect luxury Caribbean micro-island.” At the Mandarin, the brand’s first property in the Caribbean, there are 13 villas with 12 more in the works, and 26 sumptuous colonial-style suites, all with hypnotic views of Godahl Beach and the Atlantic Ocean. All 26 of the one- and two-bedroom suites are furnished, as you might imagine, to the highest standard. The smallest rooms are 1,200 sq ft, complete with a living room that closes off from the bedroom, and decked in white Italian marble. The rooms are easily some of the nicest in the entire region, with spacious en suite bathrooms with separate baths and showers, walk-in closets, full honour bar and Nespresso coffee and tea makers. Touch-screen tablets put guests in control of every aspect of their room including room temperature, lighting

and entertainment. I stayed in a beach-front one-bedroom suite which had a private garden leading to the beach just steps away. Each suite has a butler who checked in with us regularly on WhatsApp. The first floor Oceanview one-bedroom suites feature expansive, fully-furnished, sea-view balconies and there are four two-bedroom Oceanview suites with spacious balconies or terraces showcasing beach views. Two one-bedroom Oceanview penthouse suites are designed to feel like private residences. On the first floor, these open to a grand foyer leading to a large living room area, ocean-facing bedroom, a dining room with a wine tower, and an adjoining designer kitchenette. Both Oceanview penthouse suites have spacious, breezy terraces for lounging and ocean gazing. Always looking to further enrich the experience, the owners have added the Patio Villas. Designed by a team of Italian architects, these meld beautifully with the tropical landscape. The six three-story Lagoon Villas are four-bedroom colonial-style residences on the hillside with panoramic views of Godahl Beach and the island’s impressive coral reef. Every last detail is covered, including a fullservice kitchen, laundry and golf carts. Looking to substantially raise the culinary bar for the Caribbean, the resort has six restaurants and bars offering the freshest produce in atmospheric beachfront locations. Just in case we needed more choice, a short golf cart drive away are four additional restaurant and bar options that are also part of Grenadines Estate. We loved Asianne, one of two fine dining restaurants which serves the most decadent breakfasts. And dinner there is a real experience. We watched chefs prepare our steamed Mahi-mahi, which was to die for. Tides Bar and Grill is another sophisticated space, overlooking the lagoon, and for a night cap it was hard to beat a delicious cocktail in

Turtles bar. The resort’s unique Castaway dining experience offers guests the opportunity to dine in a remote, idyllic island location for a few hours or an entire today. Whether it’s a sunrise-by-the-sea breakfast, a beachside Bento, BBQ picnic, or a champagne-atsunset gourmet dinner. We knew that in order to match the rest of the complex, the spa would have to be something special. It was. The hillside treatment suites are approached by a wooden walkway which had a calming effect before we even stepped inside. As well as the signature Mandarin Oriental treatments, there is a menu of Essence of Canouan treatments including the Blissful Sea experience and the Emerald Enchantment wellness ritual. Specialty treatments designed with specific needs in mind include the Golfers Tonic massage and a Digital Wellness Escape. There is also a Mindful Teen Spa Menu offering teen-friendly treatments such as the Texters Treat massage and Little Mermaid Manicure & Pedicure. The first-rate fitness centre caters to anyone wishing to burn off the calories of all those delicious meals. The resort’s famous golf course would also help with that. Canouan has the only championship 18-holer in St Vincent and the Grenadines. The legendary golf course designer Jim Fazio is to thank for this, which is as challenging as it is beautiful. The island itself has an interesting history. Donald Trump’s casino, which went bust years ago, is still standing. We took a spooky tour of the abandoned building which has a definite Marie Celeste vibe, with ivy growing inside the rooms, and an old piano which had once seen heady, high-rolling days. The contrast between the ruined casino and the pristine Mandarin Oriental could hardly be more marked. As you do, in the Grenadines, we took a yacht to the mustvisit destination of Tobago Cays. This was where Pirates of the Caribbean was filmed. We dawdled along the deserted beach in the famous scene in At World’s End, where Jack Sparrow

drunkenly hallucinates and finds various versions of himself. Tobago Cays comprises five small uninhabited islands and a protected coral reef with no fishing allowed, offering some of the world’s best snorkelling. In fact if you stayed a month you could not cover all the stunning dive sites. Anyone seeking a Christmas/New Year holiday with a difference could consider Canouan. Festive season highlights at the Mandarin include participating in release of turtles to the wild. It is one of many celebratory occasions from 19 December to 5 January and a glamorous gala dinner is held on New Year’s Eve. All in all, this little island packs a huge punch. T

he Husqvarna Svartpilen 701 is a very cool motorcycle indeed, but why exactly? Talented actor and rider Steve McQueen – Mr Cool himself – rode a Husky in seminal 1971 movie On Any Sunday and was a huge fan of the Swedish brand’s early dirt bikes. But there’s much more substance to it than that. Sharing key components with the Vitpilen 701 cafe racer released in 2018, the Svartpilen, meaning ‘Black Arrow’ in Swedish, is the latest launch from parent company KTM, which had a vision to capture some of the original spirit that originally made motorcycling so appealing, and so cool. Successfully harking back to the flat track oval racers of the 70s and 80s, but with an injection of contemporary rawness, Husqvarna has taken the ‘go fast, turn left’ mantra of these exciting machines and very successfully reduced it for the modern day, and, indeed, the street. There’s no doubting it, this is one hugely appealing motorcycle in the flesh. Compact and minimal, the package includes wide-raked bars, an 18-inch front wheel, fork guards, a kick-tail seat with number board and rugged Pirelli MT60 flat track tyres; pure flat track-inspired touches that give an incredibly purposeful but approachable look, especially painted in matte black. Climbing aboard, the Svartpilen reveals a firm seat and a very narrow design


with only the sides of the radiator protruding out into the airflow. You sit neatly on the bike however, arms apart, feet slightly back, with your knees low over the motor. The riding position certainly means business and reminds you of Husqvarna’s off-road DNA. The dash is dominated by a single, circular dial that contains all the relevant information you need (including a fuel gauge and gear position indicator), but on a bike of this price many buyers may feel disappointed with its dated single-colour design. The rear of the dial is also rather unsightly considering the standard of design on the rest of the bike. In a world of waterproof TFT touch screens in 2019, this falls somewhat short. Power comes from the same KTM-sourced 693cc singlecylinder as you’ll find in the Vitpilen 701 and the Duke 690, but in Husqvarna guise it produces 75bhp (compared with the KTM’s 73bhp), making it the world’s most powerful single-cylinder engine. Delivering an incredibly smooth and potent drive for a single, all the way up to its 8,500rpm rev limit, the impressive unit weighs just 50kg according to Husqvarna, and goes some way to explaining where your £8,899 investment has been spent. The exhaust note also suits the bike’s character perfectly, even in standard form. Fueled up, the Svartpilen weighs approximately 175kg, which means performance is startling. Out on the road, there’s little to complain about – even on an everyday basis in the city, and as soon you take your first challenging corner the penny drops. Here, the Svartpilen 701 really starts to focus the mind. The bike is incredibly easy to ride with its up/down quickshifter and willingly accepts almost any entry speed, approach angle or gap in traffic. Whether you’re commuting a relatively short distance, or enjoying a sunny

Sunday B-road blast, the 701 soon works its way into your good books. It’s fast too and can be ridden very aggressively should the mood take you. In fact, as a way of getting from A-to-B swiftly and stylishly, either in a semi-urban environment or along a twisty country road, few other off-the-shelf bikes fit the bill so perfectly. Feather light controls and a beautifully supple-but-firm WP suspension setup will further encourage you to pick a line that would be unfathomable on poorer handling machines. Pulling on the single Brembo front disc brake also incites huge confidence when the need to stop or shed speed approaches. The 701 features an auto-blipper for smooth progress down the ‘box, whilst the traction control can be turned off if you really want to play silly bees. Few bikes this side of large capacity supermotos (slick tyreshod dirt bikes) can deliver such rewarding and grin-inducing progress at legals speeds. The machine also cuts such a dash on the street, especially in the city, that it’s easy for the progressive styling to fool you. Flat track-inspired it may be, but the Svartpilen 701 is able to ‘go fast’ on tarmac and with it, turn left or right too. Steve would’ve loved it. 104

MICHAL ROVNER TRANSITIONS, 2019 Permanent artwork Crossrail Place FREE On Thursday 3 October, Israeli artist Michal Rovner’s site-specific 16-metre long video artwork, Transitions, was unveiled in Crossrail Place, the latest artwork to be launched as part of the Crossrail Art Programme for the new Elizabeth line. It is one of 10 major works of public art by internationally-renowned artists that are being integrated into seven of the new Elizabeth line stations, from Paddington in the west to Canary Wharf in the east. Rovner’s Transitions was sponsored by Canary Wharf Group and the City of London Corporation. Michal Rovner has pioneered the use of the moving image as a non-narrative, non-cinematic medium for the creation of painterly

images and installations, which conjure timeless realities in a way the narrative arts cannot. She has been represented by Pace since 2003. In this new work for the Crossrail Art Programme, Rovner has addressed themes of humanity, history and time. ‘I wanted to encapsulate, to summarise this place, London, with the mystery of fog, the rich theatre, literature and architecture. A mixture of present and past, a world full of monuments, testimonies of a dramatic and grand history, living with the vivid present time which is marching constantly into the future.’ The large-scale video references the striking architecture and character of London and Canary Wharf, capturing the lively nature of the new Elizabeth line station. It is a vivid reminder of the tide of humanity that ebbs and flows through London, an entity which formulaically moves to the stop and start of the London Underground. Transitions can be found on the Quay Level of Crossrail Place.

Yau has since opened a string of highly-successful Asian restaurants across Britain, perhaps most notably Duck and Rice, Park Chinois and Hakkasan, the latter of which became the first Asian restaurant to earn a Michelin star in 2003. Now, he’s bringing his expertise to Canary Wharf, where the new Wardian London development will house two new restaurants. Comprising two residential towers and 766 homes overlooking South Dock, Wardian London will offer suites, one- and two-bedroom apartments and penthouses moments from Canary Wharf estate. The East Tower will be home to Yau’s two new ventures. Chyna Canteen, the larger of the two restaurants, will offer an à la carte menu of authentic Chinese food, along with modern takes on classic dishes from other cultures and live seafood. The restaurant will serve 130 covers and will boast a large terrace overlooking the water. Yaugrilling, meanwhile, will provide a more casual intimate setting, with 45 covers and food served all-day. Think traditional breakfasts in the morning and a Japanese-inspired grill for the evenings – as well as open kitchen counter dining, so you can see the chefs in action.
