How hypnobirthing helped with pregnancy and labour “You know, William didn’t feel he could do much to help and it’s hard for everyone to see you suffering without being able to do anything about it [acute morning sickness]. Hypnobirthing was something I wanted to do for myself. I’m not going to say William was standing there chanting sweet nothings at me – he definitely wasn’t. It was something I wanted to do for myself. I saw the power of it – the meditation and the deep breathing and things like that. Because morning sickness had been so bad during pregnancy, I actually quite liked labour because I knew there was going to be an end to it.”

On the ‘terrifying’ moment she presented baby George to the world “Everyone had been so supportive and we were conscious it was something everyone was excited about, and we’re hugely grateful for the support the public had shown us. However, after receiving a series of disturbing messages from an unknown man, she’s too scared to leave her apartment. The disturbing incident occurred on Valentine’s Day, when James Lafferty refused to leave the foyer of her apartment

I couldn’t help if I was in love with her. Now a source close to the pair tells Woman’s Day that their surprising behaviour is a result of their relationship being on the brink of total collapse. “Dan and Steph’s marriage has been struggling for some time,” the on-set spy reveals. “It’s been boiling up since day one [of filming] – and it’s only getting worse.” The source says that before filming commenced, Dan, 38, had told friends the couple were having issues and that Steph, 37, had changed after losing weight and giving herself a “mummy makeover”.

Following the judge’s ruling, she faces a three-month driving ban and from April 29 she will have to drive with an alcohol interlock for a year.

Accustomed to being in native wildlife war zones, having rescued hundreds of injured koalas in the recent Adelaide Hills bushfires, nothing could’ve prepared her for the severity of the wounds the distressed animal had sustained.

I think he had come down from the fires and been hit by a train – we don’t know for certain,” she says. “Katie and Chantelle were so traumatised, but we managed to get him, an adult male, into the rescue vehicle and back for emergency treatment. They showed unbelievable courage – staying to comfort him until we arrived. I was almost as worried about the girls as I was about him because that’s one very grisly scene to erase from your memories – I’m even struggling with this one.” Sadly, despite the almighty efforts of everyone, the brave little fighter, lovingly dubbed Choo Choo by his teen rescuers, passed away hours later. “Telling the girls was the tough part – they were heartbroken.

They’ve found some comfort knowing he’s up in koala heaven with all his mates who didn’t make it through the bushfires,” Jane says with a warm smile. “Each time they walk by that spot, they’re reminded of that awful day. It got me thinking: we have to make the bad memories go away, so I got them in as volunteers where they get to meet the survivors and see how rewarding our work is.”

LIFE-CHANGING It’s been 18 months since Jane established the Adelaide Koala Rescue, funding the entire set-up out of her own pocket. Today, she has financial support largely from public donations and a handful of local businesses. Every day she and her 80-plus volunteers – made up of vets and vet nurses – continue to rescue koalas who have been displaced or injured. For Jane it’s business as usual, as she bolts for the door to attend to yet another rescue. “I sleep here many a night – especially if I’ve got one that probably won’t make it,” she says. “I hold their little paws and say a prayer, because I never want them to feel they’re alone. “Then I walk away and have a good old cry, before I get back on the frontline. It’s my calling, and I wouldn’t have it any other way.”

February 28 last year, she couldn’t have imagined it would be the last time she’d be doing her routine for a very long time. On that day, Nicole, 31, and Vinnie left their house in South West Rocks, NSW, and didn’t return for four months. “Vinnie had a temperature the day before, but he’d woken up totally fine,” Nicole tells Woman’s Day. “He was dancing around the lounge room telling me he was OK.” The angelic blond boy loved day care, and rushed in that morning at his characteristic million miles an hour. “I went off to work, but I got a call around lunchtime saying Vinnie had a temperature again,” says Nicole. Arranging

for her mum Nina to pick him up, she wondered why they were calling back just minutes later. “They said he was doing something weird, like a seizure, but even then I wasn’t too worried,” Nicole remembers. “Vinnie had had febrile seizures before, with temperatures, and we’d been assured by doctors it was common in children his age.”

STATE OF SHOCK Still, Nicole jumped in the car to meet her little boy at Kempsey hospital. It was there she faced the severity of the situation. “As Vinnie arrived in emergency, it seemed like there were about 100 people around him. I couldn’t even see him,” she says. “When I found Mum, she burst into tears. She didn’t have any idea what was going on, but Vinnie’s seizure wasn’t

just a two-minute thing like in the past. He’d been convulsing non-stop for half an hour.” As doctors tried to work out what was wrong with her precious boy, Nicole stood back in shock. “The doctor kept asking where Vinnie’s dad was,” says Nicole. “I realised afterwards they wanted him there because the situation was so serious.” By the time Nicole’s husband Cade arrived, Vinnie had been pumped full of medication to stop him seizing, but he was completely unresponsive. “It was so scary. His eyes were open and staring blankly,” says Nicole. “He looked like Vinnie, but it was like he wasn’t there.” Holding his hand and willing him to be OK, the emergency

The family and community are fundraising to adapt their house for Vinnie’s wheelchair and for a car to transport it. “People ask me how I’m so positive,” says Nicole. “But if Vinnie can smile through all this, then I have no excuse.”

he officially becomes a pensioner later this year, but the most notorious female killer in Australian history remains at the top of her game inside, running one of the state’s hardest prisons. And it’s not just with an iron fist. Katherine Knight, the first Australian woman to be sentenced to life without

parole, was convicted for the horrific murder and mutilation of her partner John Price in October 2001. Since then she has ingratiated herself into the hearts and minds of those who call Sydney’s Silverwater Women’s Correctional Centre home. She is a confidante to some and a grandmother to others. A mediator when things get a bit

But Knight cannot be trusted. “She’s still at the top of her game and we still have to be at the top of ours,’’ one prison insider told Woman’s Day. “She is actually quite nice most of the time. But you can see the evil streak in her eyes when she gets cranky.’’ Knight, 64, is responsible for one of the worst crimes in Australian history – the murder and skinning of her partner John Price, 45, in Aberdeen, in the NSW Upper Hunter Valley. This week sees the 20th anniversary of a crime that appalled the nation – a murder scene so depraved it left an indelible mark on all who saw it. John, a miner who enjoyed a beer, had already told his friends he was worried his partner was going to kill him. The hard worker told colleagues if he failed to get to work, then Kath had got to him.

GRUESOME SCENE On the morning of March 1, 2000, when Sergeant Graham Furlonger and a young constable were called to John’s home, they found a blood smear next to the front door, a sign of what lay inside. John had returned home the night before to find Knight in a set of new black lingerie – and they had sex before he fell asleep. Knight struck when John woke to go to the toilet. She stabbed him at least 37 times as John desperately tried to make it to the front door. His hands grabbed the door frame, causing the blood smear that police first saw, but he couldn’t make it out. Knight dragged the lifeless body back inside and got to work. With precision knife work learned from years in the abattoir, she spent several hours skinning her lover in one pelt. The only piece of skin she left was

‘The filth that comes out of her mouth is extreme, even for this place’ a small scar on John’s chest – a scar of an earlier stabbing attack from Knight. She hung the skin up on a door frame to dry and went to work in the kitchen, cooking John’s decapitated head in a large pot with some vegetables. It was found by police hours later still bubbling on the stove. She fed some pieces of his body to the dogs and cooked other pieces and placed them on two plates with baked potato, pumpkin, beetroot, zucchini, cabbage, yellow squash and gravy. There were notes next to them with the names of John’s children. She went back to bed, and police found the snoring mum-of-four shortly after walking through the grisly scene, which included the remains of John’s body on the lounge room floor, one arm propped up on a Coke bottle. The details were so hideous that Knight became the first woman in NSW to receive life in prison without parole. Almost instantaneously, she became a feared figure

in the prison, not unlike Val Lehman’s portrayal of “top dog” Bea Smith – even down to the ginger locks – in the cult Australian TV drama Prisoner. But she has also displayed a softer side. In his book on women in prison, Green Is The New Black, journalist James Phelps describes Knight as a “nanna’’, stopping altercations before they get too serious and a prolific artist whose one-bed cell is cluttered with wool and crocheting.

HIDING DARK THOUGHTS But a prison source told Woman’s Day Knight is still not allowed to handle knives. She is respected without being trusted – her ageing face hiding her dark thoughts. “She can turn on you in a second, and the filth that comes out of her mouth is extreme, even for this place,’’ says the insider. “The other prisoners only call her the confidante and the mediator because they’re scared of her. Everything goes past Kath. Everything. “Nobody’s forgotten what she did to that poor bloke. And not for a second do we think she’s not capable of doing it again,” the insider says. WD 41

MILD ITCH & RED PATCHES POSSIBLE CAUSE Psoriasis

Psoriasis is an autoimmune condition where your body makes too much skin, leading to scaly red patches that are often more obvious on your elbows and knees. “It can arise at any age and can be associated with arthritis and metabolic syndrome (an increased risk of type 2 diabetes and cardiovascular disease),” says Dr Michael Rich from Enrich Clinic in Melbourne.

WHAT TO DO Treatment options include light therapy (UVB) and prescribed medications, including biologics, which help regulate your immune system.

POSSIBLE CAUSE Eczema

Eczema is a non-contagious, inflammatory skin condition. “Eczema can come on at any age and makes the skin dry, red and itchy,” explains Dr Rich. “The itch leads to scratching, 60 WD

which can become habitual so it’s very important to get your eczema under control before an ongoing scratch cycle sets in.” Prime eczema sites are behind the knees, elbows, neck and around the eyes and ears.

WHAT TO DO “Avoid anything that will dry out your skin, such as soap,” says Dr Rich. Topical steroid creams can also help, as can moisturiser. “Wear 100 per cent cotton clothing and avoid synthetic fabrics,” adds nurse Stephanie Holdsworth, creator of eczema and allergy website Allerchic. “[Wear] mittens at night to avoid scratching, wash bed linen regularly in hot water to get rid

of dust mites, avoid extreme temperature changes, always pat your skin dry, use wet dressings for flare-ups and take a daily probiotic.”

GENERAL ITCH & PAINFUL, HOT WELTS

POSSIBLE CAUSE Hives Hives occur when your body produces too much histamine in response to an allergen. It can be acute or chronic, and there are also rarer forms. “Common causes are food, medication, infections and internal disease,” says Dr Rich. The chronic form lasts for more than six weeks.

WHAT TO DO “The best treatment is to eliminate the cause,” says Dr Rich. “If food is the trigger,

a scratch test can diagnose it.” Other treatments may include antihistamines. Severe cases usually need oral steroids.

HOT, ITCHY & INFLAMED SKIN POSSIBLE CAUSE Allergy (contact dermatitis)

Contact dermatitis occurs when the skin reacts to something you’ve touched. “This can cause an acute allergy (histamine reaction), which produces hives or an eczema-like inflammatory reaction, along with redness and blistering,” says Dr Rich. Common allergens include nickel, chrome, fragrances, preservatives and plants.

Heat half the oil in a wok, stir-fry chicken and onion, in batches, until chicken is browned and cooked through. Remove from wok. 3 Heat remaining oil in wok, stir-fry seeds until browned lightly. Return chicken to wok with pak choy, choy sum and reserved honey mixture, stir-fry until vegetables are just wilted. Sprinkle with peanuts and chilli to serve.

BERRY & WALNUT CRUMBLE SLICE MAKES 20 PREP + COOK 55 MINS ✦ ½ cup ground walnuts ✦ 2/3 cup icing sugar, plus 2 tsp extra ✦ 1 ½ cups plain flour ✦ ¼ cup self-raising flour ✦ 1 tsp ground cinnamon 72 WD

✦ 250g butter, chilled ✦ 200g frozen strawberries ✦ 200g frozen raspberries ✦ 2 tbsp caster sugar ✦ 2 tsp fine semolina ✦ 20g cacao nibs ✦ 1 tbsp demerara sugar ✦ ½ cup walnut halves 1 Preheat oven to 200°C. Grease a 20cm x 30cm slice pan, line the base and long sides with baking paper, extending the

paper 5cm over the sides. 2 In a food processor, process ground walnuts, icing sugar, flours and cinnamon until finely ground. Add chilled butter, process until mixture starts to form clumps. Reserve 1 cup of the dough mixture in a small bowl. Press remaining dough firmly onto base and sides of slice pan. 3 Place strawberries, raspberries, caster sugar and semolina in a medium bowl,

toss gently to coat. Spoon berry mixture into pastry case. 4 Add cacao nibs and demerara sugar to reserved dough. Using your fingertips, rub mixture together until it forms slightly larger clumps. Sprinkle crumble and walnut halves over berries. 5 Bake slice 35 mins or until base is golden. Cool in pan before cutting. Dust slice with extra sifted icing sugar before serving.


GARIBALDI SLICE MAKES 24 PREP + COOK 50 MINS + REFRIGERATION ✦ 1½ cups currants ✦ ½ cup sultanas ✦ ¾ cup dried figs, chopped finely ✦ ½ cup water ✦ ¼ cup marsala ✦ 1 egg, beaten lightly ✦ 2 tbsp caster sugar PASTRY ✦ 2 cups plain flour ✦ 1/3 cup caster sugar ✦ 185g cold butter, chopped coarsely ✦ 2 egg yolks ✦ 1 tbsp iced water, approximately 1 Preheat oven to 180°C. Grease a 20cm x 30cm slice pan. 2 PASTRY Sift flour and sugar into a medium bowl, rub in butter with your fingertips. Stir in egg yolks and enough of the water to make a firm dough. RASPBERRY BROWNIES WITH MALTED HOT FUDGE SAUCE MAKES 16 PREP + COOK 1 HOUR ✦ 250g unsalted butter, chopped ✦ 250g dark chocolate, chopped, plus 50g extra, coarsely chopped ✦ 2½ cups caster sugar ✦ 5 eggs ✦ 1 tsp vanilla extract ✦ 2/3 cup plain flour ✦ 1/3 cup self-raising flour ✦ ½ cup cocoa powder ✦ 150g raspberries MALTED HOT FUDGE SAUCE ✦ 175g white chocolate, chopped ✦ ½ cup pouring cream ✦ 2 tbsp malted milk powder 1 Preheat oven to 180°C. Grease a 20cm x 30cm slice pan, line base and long sides

with baking paper, extending the paper 5cm over the sides. 2 Stir butter and chocolate in a saucepan, over low heat, until smooth, transfer to a large bowl. Stir in sugar, then eggs and extract, followed by sifted flours, cocoa and extra chocolate. Pour into pan, press raspberries into mixture. 3 Bake 45 mins or until firm. Cool in pan. Refrigerate until cold. 4 MALTED HOT FUDGE SAUCE Stir ingredients in a small saucepan over medium heat, without boiling, until smooth. 5 Turn brownie onto a board, trim edges, cut into pieces. Cut top layer of pastry into 24 squares, prick squares all over with a fork. Brush pastry with egg, sprinkle with sugar. 5 Bake slice 30 mins or until pale golden. Cool slice in pan before cutting into pieces.

SERVES 4 PREP + COOK 1 HOUR 20 MINS

✦ 2 sheets puff pastry ✦ 1 cup shredded barbecued chicken ✦ ½ cup baby spinach leaves, chopped roughly ✦ ½ cup frozen corn kernels, thawed ✦ ¼ cup tomato chutney ✦ 1 egg, beaten ✦ mixed salad, to serve 1 Preheat oven to 200°C. Line an oven tray with baking paper. 2 Using a 10cm round cutter, cut four rounds from 1 sheet pastry. Cut four 12cm rounds from the other. 3 In a medium bowl, combine chicken, spinach and corn. Season to taste. 4 Place 10cm rounds on tray. Spread each with chutney, leaving a 1cm border. Brush border with egg. 5 Spoon ½ cups chicken mixture onto each 10cm round, pressing firmly. 6 Arrange 12cm pastry rounds over filling, pressing edges together with a fork. Using a small sharp knife, cut a small slit in centre of each pie as an air vent and score top. Brush with remaining egg. 7 Bake 15-20 mins until well puffed and golden. Cool on a wire rack. Serve pies warm with salad.

Cover with plastic wrap. Microwave on High 6-8 mins until tender. 3 Drain vegetables. Using a fork, mash with nutmeg, season. Mix in raisins. 4 In a large jug, combine passata and stock. Pour 1 cup into a 20cm x 30cm casserole dish. 5 Place lasagne sheets on a clean surface. Spread 2 tbsp pumpkin mixture on long edge of pasta sheet. Top with 1 tbsp ricotta. Roll to enclose filling. Place seam-side down in dish. Repeat with remaining ingredients. 6 Pour remaining passata mixture over cannelloni. Bake, covered with foil, 45-50 mins. Serve cannelloni sprinkled with parmesan and basil.

FRAGRANT FISH CURRY SERVES 4 PREP + COOK 40 MINS ✦ 2 tbsp olive oil ✦ 1 onion, sliced ✦ ¼ cup tikka curry paste ✦ 2 garlic cloves, crushed ✦ 2 tsp grated ginger ✦ 2 potatoes, chopped ✦ 400g can chickpeas, rinsed, drained ✦ 1 cup water ✦ 500g firm white fish fillets, cut into 3cm pieces ✦ 1 head broccoli, cut into florets ✦ 2 tomatoes, chopped finely ✦ steamed rice, natural yoghurt, coriander leaves, to serve 1 In a large heavy-based saucepan, heat oil on medium. Saute onion 3-4 mins until tender. 2 Stir in paste, garlic and ginger, cook, stirring, a further 3-4 mins. Add potato, chickpeas and water. Bring to boil. Reduce heat to low, simmer, covered, 10 mins. 3 Mix in fish, broccoli and tomato. Bring to simmer on medium, reduce heat to low, cook, covered, 5-7 mins until potatoes are tender and fish is just cooked through. 4 Serve curry on a bed of rice, dolloped with yoghurt and sprinkled with coriander leaves. Species like whiting, flathead or boarfish are great on the barbecue. Brush the fish with oil and rub down with a mixture of herbs, lemon and butter. Cook fish on both sides until the flesh is soft and flaky.

he Elias family – Les, Danielle, Jacob, Lily Rose and Ivy – are here, and all set to make their debut on our screens on the 11th season of Gogglebox! But they’re the first to admit they’re feeling a few nerves. Sitting down with Woman’s Day, the family from suburban Sydney reveal they’re ready to get critical – and they don’t have any issues telling it like it is!

Whose idea was it to apply to be on the show? Our son Jacob was very keen to get the family on Gogglebox – he’s always been a big fan. It was something we took a while to decide but he certainly did a great job of convincing us to take part. 82 WD

Exclusive ! interview How did your extended family and friends react to the news? We decided not to tell a soul, not even our family – it was our little secret! There will definitely be some surprised people when the show premieres. It’s all part of the fun! In your own opinion, what makes a good TV critic? We’re firm believers that a good critic is one who says it how it is. There’s certainly no point sugar-coating things, is there? Obviously a filter is required but mostly a critic who’s vocal always gets the message across.

Are there constant fights for the remote control in your house, and who usually wins? We don’t fight for it – we’re just constantly trying to find it! We

Oh absolutely! If we weren’t nervous about our debut, I think it would seem as though we don’t care. We definitely care and are taking our new role very seriously. We can’t wait for the viewers to meet us! What’s the one show the whole family agrees on not watching? Is there something you guys just can’t stand? We’re not going to lie – The Masked Singer was very hard to digest. It was a little bizarre for us – we just couldn’t get into it. We like I’m A Celebrity… Get Me Out Of Here!, Australian Survivor and The Good Place.
