Oatmeal Peanut Butter Jumbos Makes 24 1 cup peanut butter ½ cup butter ½ teaspoon baking soda 1½ teaspoons baking powder 1½ cups packed brown sugar ½ cup granulated sugar 3 eggs 2 teaspoons vanilla 4 cups rolled oats ¾ cup chopped nuts (peanuts or pecans) 1½ cups mini M&M's
In a large mixing bowl, beat peanut butter, butter, baking soda and powder, and sugars until combined. Beat in eggs and vanilla. Stir in oats, nuts, and candy. Drop dough by level ¼ cupfuls 4" apart onto an ungreased cookie sheet. Bake at 350 degrees for 15 minutes or until edges are lightly browned. Cool 1 minute in pan, then transfer to wire rack to cool completely. Jennifer Carter
