Melt-In-Your-Mouth Sugar Cookies Makes 7 dozen 8-ounce package cream cheese, softened 2 cups butter, softened 2 cups sugar 2 eggs, separated 1 teaspoon vanilla 4½ cups all-purpose flour Colored sprinkles and/or sugars Icing: 1½ cups sugar 4 tablespoons butter or shortening 1 teaspoon vanilla 3 tablespoons milk food coloring

In a large mixing bowl, combine butter and cream cheese until light and fluffy. Add sugar, egg yolks, and vanilla; mix well. Gradually add flour. Can do one of two things next: 1.) Cover and chill dough 2 hours until firm. Roll out on a floured surface to ¼” thickness and cut into desired shapes 2.) Do not chill. Simply roll dough into 1” balls. Roll balls in various colored sprinkles or sugars. Bake at 350 degrees for 10 to 12 minutes or until set (not browned) Cool in pan 5 minutes; remove to wire racks to cool completely. Frosting: If you have made the cut-out version, combine 1 cup sugar, butter or shortening, vanilla, and milk in a mixing bowl; beat until smooth. Gradually add remaining ½ cup sugar; beat until light and fluffy, about 3 minutes. Add enough milk and desired food coloring until frosting reaches desired consistency. Jennifer Carter
