Fresh Green Peas Serves 4 3 or 4 outer lettuce leaves 2 pounds small green English Peas 4 tablespoons butter 1 tablespoon sugar salt to taste, about 1 teaspoon 1 cup water 2 tablespoons cream 3 green onions, white part only, chopped fresh mint leaves, fresh parsley, finely chopped

In a heavy saucepan with a tight-fitting lid, bring water to boil. Remove from heat. Lay lettuce leaves on bottom of pot. Add washed peas. Return to heat and simmer on low heat until peas are tender, about 10 - 20 minutes. Drain and discard lettuce leaves. Melt butter in heavy skillet. Add chopped onions and cook until translucent. Add peas, cream, salt, and sugar. Serve warm, tossed with mint and parsley. The onions, cream, mint, and parsley are optional. Carmen Boatwright
