Chicken
Chicken Kievsky Serves 4 2 chicken breasts, split ½ cup fine dry bread crumbs 2 tablespoons grated Parmesan cheese 1 teaspoon basil leaves, chopped 1 teaspoon oregano leaves, chopped ½ teaspoon garlic salt ¼ teaspoon salt 2 3 ⁄ cup butter, melted ¼ cup white wine ¼ cup green onion, chopped ¼ cup chopped fresh parsley
Preheat oven to 350 degrees. Combine bread crumbs, Parmesan cheese, basil, oregano, garlic salt, and salt. Dip chicken breasts in melted butter; coat with crumb mixture. Reserve remaining butter. Arrange chicken, skin side up, in an ungreased baking dish. Bake for 50 to 60 minutes or until chicken is tender. Meanwhile, add wine, green onion, and parsley to remaining melted butter. When chicken is golden brown, pour butter sauce over chicken. Continue baking for 3 to 5 minutes. Serve with sauce spooned over chicken. Sylvia Warrick
