Pasta, Potatoes, & Rice Chicken Spaghetti Serves 6 l large hen 1 pound cheese, grated 1 package spaghetti, cooked and drained 1 small jar sliced ripe olives 4 ounces mushrooms, sliced 4 tablespoons butter, cut into small pieces Sauce: 1 cup chopped onions 1 cup chopped celery 1 clove garlic, chopped fine 1 can tomatoes 2 cups chicken broth salt and pepper 2 tablespoons flour

Preheat oven to 350 degrees. Cook hen by boiling. Cool and remove meat from bones. Prepare sauce by sautĂŠing onions, celery, and garlic.Then add tomatoes, broth, and seasonings. Simmer 1 hour; thicken with flour. Cook spaghetti using package directions. Layer casserole with chicken, spaghetti, and cheese, and dot with ripe olives and mushrooms. Pour sauce over top and continue with layering. Finish with ripe olives and dot with butter. Bake for 1 hour at 350 degrees. Cindy Foster
