The heart of a fine dining experience is elaborate dishes elegantly displayed and subtly, exquisitely spiced. The Royal Thai Banquet includes an array of starters, soups, main courses and desserts, which range in degrees of spiciness and represent an innovative approach to Thai cooking with a spectrum of recipes from the past and present with a look to the future. Starters include Chor Muang, a steamed flower shaped dumpling, Doi Kham Salad, purple eggplant salad with grilled scallops, Labb Salmon, a salmon tartar and Black Chicken Crispy Spring Rolls. Enticing soups include a choice of Tom Kha Kai Black Chicken, a soup of coconut milk and galangal and Tom Klong Wild Red Sea Bass, a spicy and sour soup. Main courses, a variety of seafood and meats, are tantalizing. Nooror’s Massaman Lamb, a coconut milk curry with potatoes, peanuts and cashew nuts, is described in a 19th century poem by King Rama II. Then there’s Duck with Tamarind Sauce, Black Chicken Green Curry, Phad Sator Koong, prawns with parkia in shrimp paste and Bamboo Fish, Parrot fish cooked in a bamboo case. Exceptional. Professional. The succulent Australian Angus Grain Fed Beef Tenderloin is ‘pick of the bunch’, but must-try other meats include Rib Eye, T-Bone, Lamb Chops and the famous El Gaucho Spare Ribs. And a special treat: choose from more than 20 different homemade mustards and sauces to accompany your dinner. Next on the agenda, if you fancy oriental instead of Latin American, upstairs you’ll find Orient Asia. Here, the décor speaks of Asian influences with red wall panels, subtle back lighting and contrasting dark wood furniture. Decorative Chinese urns and bottles occupy the shelves along the walls. Here you’ll be pampered with Asian delights such as Thai Warm Shrimp Salad with lemongrass-mint leaf, Tom Kha Gai (spicy chicken and herbs cooked in coconut milk soup), Roast Duck Saigon or Steamed Whole Sea Bass with Lime garnished with chilli, garlic and coriander. For a change of pace and style, move on over to “upbeat and buzzing” Mint, with its lively ambience and not-too-loud music. While this is a very much a family orientated restaurant, there’s a lot going on, including frequent theme nights. Dinner is a choice of à la carte or help-yourself from the wellstocked carvery and buffet. 5

The Nai Harn has undergone many transformations over the years. Nowadays, Rock Salt, a pebble’s throw from the waves lapping Nai Harn Bay, is perfect for a pre-prandial cocktail. Relax to funky music, admire the roseate sunset, and peruse the list of ‘Tribute and Signature Cocktails’ created by Salim Khoury. Awarded the accolade of UK ‘Bartender of the Year’ in 1992, and famous for his stewardship of the London Savoy’s American Bar, he has long been associated with The Nai Harn. Little wonder the cocktails are so memorable. My partner has a Nai Harn Sunset, a deep pink confection made with Balls gin, fresh water melon, basil, lime and Prosecco. Mine, a Nai Harn Cooler, is a luscious offering: Kristall gin combined with zesty orange marmalade and the juice of lime, orange and pineapple. Also on the list are: Rumble, Blushing Monarch – featuring gin and Campari and, of course, Lady Nai Harn. For a main course, a must-try is the ‘piece de resistance’, the Andaman Platter, a comprehensive sea-food offering for two, which pays homage to the very essence of Phuket’s marine heritage. Sea shrimps, tiger prawns, Fine de Claire oysters, steamed Rawai clams in chili, ginger, coriander and coconut milk, served with all the trimmings. Less demanding on pocket and palate, sample Mediterranean inspired flavours: Souvlaki – barbequed pork kebabs with grilled peppers – or the Italian-inspired Blue Mushroom Pizza. Dessert was a Coconut Pannacotta (with fruit salad and homemade passion fruit ice cream) that looked good and tasted divine. My partner’s reluctance gave way and an order for one became two. It was just too hard to resist. To top it all, there’s a DJ playing every Friday from 4 pm -10 pm. Daily Happy Hour ‘Buy 1 Get 1 Free’ from 5.30 - 6.30 pm.

Rock Salt, despite its alfresco, dramatic beach setting, is cosy and intimate. The funky music, alcoves and different levels add to its charm. Comfortable sofas, attentive but unfussy service and valet parking, make the whole experience a relaxed, and pleasurable one.

at the Nai Harn Cosmo offers a unique gastronomic experience in a paradisal setting. The flagship restaurant of the iconic Nai Harn, it occupies one of Phuket’s most coveted locations, a promontory flanking Nai Harn Bay. Featuring grey furnishings and geometric white décor, the dining area exudes space and airiness. Immediately below us, the sandy beach is framed by jagged rocks. Executive Chef Mark Jones carefully explains the new menu. Recently appointed and with an impressive CV in high-end catering, he is rightly enthusiastic about a cuisine which reflects his passion both for global travel and culinary innovation. We begin in Northern Japan. Mark’s choice of appetiser is pan-fried Hokkaido scallops with apple ginger, and crispy coppa ham. The juicy shellfish are lightly seared, their succulence complemented by a delicate echo of apple. The main course, again ocean inspired, accentuates the Andaman Sea: moist White snapper steak, and matching croquette. Other chef’s recommendations reveal a capacity for adventurous combinations. Marinated raw sea bass comes with pomelo, coriander, chili lemon, ginger and lotus root; Seared yellow fin tuna with greens, avocado, watermelon and ponzu citrus dressing. A Mixed grill of Andaman seafood includes the local catch of the day. Char-grilled cauliflower provides an inventive vegetarian option. For carnivores, Australian rib-eye steak with rissole potatoes and oyster mushrooms, rocket, asparagus, garlic and Béarnaise sauce admirably fits the bill. There are artisanal ice creams inspired by local fruits, and crisp organic salads. The attention to detail is exceptional. Nothing is too much trouble. Every dish is accompanied by exquisitely chosen vegetables and herbs with matching sauces and dips. Ingredients are ultra-fresh. Most of the seafood is purchased twice daily from Rawai fish market, and there is a stress on local, organic produce. The wide-ranging meats are created in the resort’s own charcuterie, even down to regional sausages. 7

The brunch features international food stations offering Indian fare, classic Thai favourites, freshly made pasta with a variety of sauces, an enticing cheese and cold cuts selection, as well as traditional Australian roast meats and accompaniments such as cauliflower mash and roast potatoes. The Watercourt at Banyan Tree

Established 22 years ago, Banyan Tree was then the only resort on Bang Tao Beach. Now joined by many others, it remains an international symbol of luxury living. The refurbished Watercourt is part of its ceaseless striving for excellence. Service, ambience and food are impeccable. The menu is comprehensive, while the wine list (equally wide-ranging) boasts, for instance, more than 50 reds, including classics such as Chateau Latour. As an aperitif, I choose a white Thai wine, a Gran Monte sauvignon blanc which is pale and citrusy; with the food, a full-bodied Delicato cabernet sauvignon from California. The open kitchen is next to a welcoming dining area with mirrored columns and picture windows. The whole culinary process can be observed on a huge television screen. But executive chef Ian John Thomason provides a personal touch by recommending house specialities. The emphasis is on widely sourced fish and seafood. An international cuisine, with some genuflections to Europe; Fruits of the Sea features oysters from France, California and Ireland. My friend chooses salade Niçoise, a delicious confection with seared yellow fin tuna, potatoes, quails eggs, lettuce and cherry tomatoes. The dressing is a tangy red berry vinaigrette. Keeping to the Spanish theme, my selection from Starter Plates (six of them seafood specials, including prawns pil pil and seafood croquettes with aioli) is Mallorca seafood zarzuela, “a thick stew served with prawns, snapper, mussels, squid and a hint of saffron”. The zesty, reduced broth is poured from a jug. For main course, my partner selects linguine vongole, “pasta and clams with a splash of white wine and tomatoes”. Rich and satisfying. At Chef Ian’s suggestion, I try the seafood market selection: seven different fish: cod, Dover sole, hake, John Dory, salmon, tuna and white snapper. Guests can choose both the cooking method and the side order. My hake, a huge chunk of fish, separates into flakes of succulent white VISIT US flesh and is ideally complemented by buttery ONLINE mashed potato, asparagus and broccoli. To finish, a perfect crème brûlée. Oh, and by the way, The Watercourt offers a weekly Sunday Seafood brunch. Something to look forward to…. 9

Restaurant The Boathouse is a legendary boutique hotel and restaurant, one of the first in Phuket and now the beneficiary of a most imaginative refurbishment. Sip your cocktail in a bar area with blue and white nautical motifs, then dine al fresco amid venerable trees and wooden decking in an atmosphere of rustic grace and charm. Beyond is the sea, now silvered by moonlight, with black silhouettes of late bathers, and revellers launching illuminated lanterns into the tropic night. Magical. There is, of course, an air-conditioned option, still with the sea view. We begin with drinks – a classy Oz chardonnay available by the glass – then adjourn to the spacious restaurant where the cool sounds from a trio playing jazz standards, filter through. From a selection of 14 starters, all living up to their stated claim to be “fresh and delicate”, I opt for the King Prawn Salad, a crunchy, spicy amalgam of sliced baby eggplant, lemongrass, lime, mint and chili paste, the perfect green complement to massive grilled prawns. My partner’s seared marinated scallops, on a bed of asparagus and fresh leaves, are succulent and enhanced by an intense chili-garlic sauce. The ‘new’ Boathouse is already celebrated for two iconic dishes: the slow-cooked Duck Confit in “tangy” tamarind sauce and the Lamb Shank Massaman. The restaurant’s most popular offering, this southern Thai curry featuring lamb on the bone is served in a delectable and aromatic sauce with sweet potatoes. Massaman like you have never experienced it. Sensational. The Gaeng Kathi Neua Poo, yellow crab meat curry in coconut milk with betel leaves, is densely flavoured and creamy. Also recommended are Grouper Fillet, Razor Clams with Cashews and Okra, and Smoked Roasted Pork Neck in Green Banana Curry. The wine list is legendary. Everything up BOOK NOW ONLINE to Chateau Petrus. I settle for an Australian Shiraz, the perfect partner for a sumptuous repast. The Boathouse has everything: history, attentive service, a unique setting, a romantic ambience and above all, ambrosial food. Do go… You will not be disappointed.

Gotha is a delightful surprise: a spacious, bistro style restaurant with functional banquettes, chrome fittings, wooden-slatted tables, and themed murals, allied to friendly service and distinctive “haute cuisine”. A new venture, inspired by the Steampunk science fantasy movement associated with the city of Gotha, it has, for good measure, a French chef and French proprietor – which no doubt accounts for the classic Gallic emphasis. The menu is still changing; at present a moveable feast with frequent exciting additions. We begin with another surprise: an amuse-bouche of creamy salmon in an oyster shell, resting on a bed of pebbles. Totally in keeping with the inventive and meticulous character of Gotha. For starters, I sample the Chicken breast and goat’s cheese in pastry. Two very distinct flavours and textures. My friend opts for the Gravlax spiral, an authentic Scandinavian dish of raw salmon served with herbs, cream and crispy vegetables. Other delicious-looking starters include Oeuf parfait with fried cèpes, cream and shallot confit. The Burger is, again, very different from the usual offering: a massive layer of ground beef with truffled Brie cheese, topped with an eye-catching dressing of caramelized onions, beetroot spaghetti and asparagus. The spicy Boeuf Bourguignon comes with red wine sauce, mashed potato, mushroom and asparagus. Desserts run the gamut from rich chocolate mousse to Exotic entremet – passion fruit and mango mousse with fresh fruit and rum syrup. Unsurprisingly, the wine list is modest, but inexpensive; glasses of house red and white won’t break the bank. For our repast, we sample a fruity Australian red. The luxurious bar lounge has a wide selection of drinks and opulent surroundings in which to enjoy your aperitif BOOK NOW or cocktail. ONLINE
