Cooking With Wine: Shrimp Scampi

INGREDIENTS

• 2kgs Shrimp, peeled

• 3/4 cup Mont Rochelle Sauvignon Blanc

• 4 garlic cloves

• 1/2 white onion, minced

• 3 tbsp butter

• 2 tbsp Olive oil

• 1/2 cup fresh parsley, chopped

• 2 tbsp lemon juice

• 1/2 tsp salt

• Fresh ground black pepper to taste

METHOD

1. On your pan over medium heat, melt butter with oil.

2. Add onions and cook for 2 mins or until they get soft. Add garlic and sauté for 30 secs.

3. Add wine, salt and black pepper and bring to simmer for 4 mins or until the wine is reduced by half.

4. Add shrimp and sauté for 4 mins, until pink and cooked through.

5. Remove from heat and stir in lemon juice and parsley.

6. Serve with bread.
