Hello everyone!

My goodness, where has the time gone? I think I open each quarter’s address in a similar fashion, but time is a thief! It is flying by. We hope you have had a great summer and are looking forward to the fall and winter. Ready or not, it will be here soon!

Looking back, we’ve accomplished many things this year as a community and a Chamber. A few highlights would be the HUGE Little Dribbler’s Tournament, the first Cindy Walker Days festival hosted by the Cindy Walker Days Foundation, Fort Parker celebrated 100 years of State Parks in Texas, new businesses moving in, several businesses celebrating milestones and anniversaries as well as expansions. We’ve gained a new City Manager, and a new EDC Executive Director. As a chamber we hosted the State Representative, we’ve hosted multiple Business After Hours and Learn Over Lunches, Digital Marketing Classes, ribbon cuttings, recognized and spotlighted members each week, named and promoted members of the month, and so much more! We’re poised for growth in our community and in our businesses and we are excited about it.

The Chamber is looking forward to adding in programs in the future to benefit the business community, such as programs to help them grow and learn topics that are helpful to them. These things are still in the development stages, and more will be coming soon. If you aren’t already following us on Facebook, we encourage you to do so. We create events for things we’re doing, and we publish information on things happening, as well as sharing events that our members notify us about. Additionally, if you haven’t already done so, please check out our website at www.mexiachamber.com. You will find information about our members, the business of the month, our contributors, as well as events – including member events, and often

you will find jobs and coupons. Membership profiles offer membership a way to showcase their events, create a photo album, post jobs, offer coupons and so much more. This is a huge benefit to our members, our community, and to visitors.

Along with growth comes change, and change isn’t always easy. Our board of directors has made the decision to no longer host the Christmas Market or Christmas Parade, or the 4th of July activities, so that we can better focus our time and efforts on supporting and promoting our Chamber members. This does not mean that these things are canceled. It just means that someone else will need to take the lead. It’s a great opportunity for another organization to gain recognition and support through hosting these events, especially the Christmas parade and 4th of July activities. As soon as we know who the host will be and have details, we will share the information on our Facebook page.

Stay tuned for more business type events through our Chamber. If you’re a business and not a part of the Chamber, contact us and find out how you can get involved. We’re here for you, and we work hard daily to continue to serve our businesses and our community. Let’s grow together. Together, we’re stronger. Together we’re better.

Hello Mexia Friends –Summer is drawing to a close. School has begun. Local coffee shops have begun exuding the aromas of pumpkin spice and cinnamon (the ONLY sign that we in Texas have that fall may finally be here). Somehow, however, our family was able to make one more escape to the beauty of the ocean in an effort to secure a few final summer memories with loved ones near.

As I considered what devotional offering I might provide to you, the crash of the waves just feet away, brought to mind Psalm 93 – The Lord Reigns. Verse 4 shares with us “Mightier than the thunders of many waters, mightier than the waves of the sea, the LORD

on high is mighty!” Indeed friends, the LORD on high is mighty! In this life, things come together and things fall apart. Friendships grow and dwindle. Children thrive and struggle. Dreams are born and laid to rest. But our LORD (verse 1) reigns - “He is robed in majesty.” His throne (verse 2) “is established from of old; you are from everlasting.”

Friends, no matter what life hands you, remember this: God’s not going anywhere. While He allows us to suffer sometimes, He is not the author of that suffering. While He knows the success and failures we will endure, He also knows His plan is perfect and tells us in His Word that we can place our lives in the embrace of that promise when we repent and trust in the free gift of salvation through Jesus Christ (Romans 8:28).

Back in my days as a youth minister I would always open up a time of teaching with my students by reminding them “Guys….we don’t have a lot of time.” They needed to know the truths of God’s word that tell us our time on earth is fleeting and we only have ONE chance (here and now) to make the choice to turn from our sins and serve our risen Savior, Jesus who died on the cross for each of us. Once that time is gone, the choice we made to either repent and follow Jesus as our King or reject Him will stand, permanently and for all eternity. We will spend eternity either with Him or departed from Him. Relatives cannot pray us into heaven, and there will be no do-overs at the pearly gates.

Summer is fading and so is the opportunity that we have to accept the free gift of eternal life through God’s only son, Jesus.

Anna Pat (Lucas) Alpert has submitted the recipe that “is absolutely the all-time most favorite peach cobbler recipe the Lucas family has ever enjoyed!”.

Anna Pat is the daughter of Benny and Nell Lucas, long time educators in Mexia, who also had a fruit and vegetable stand in Shiloh, known for their peaches and tomatoes. We hope you enjoy the recipe.

Mexia Peach Cobbler

Place 2/3 stick Butter in Pyrex 9x13 dish and melt @ 350 degrees during the cobbler-making process.

Crust:

• 1 cup flour

• 1/2 tsp salt

• 1 tsp Baking Powder

1. Cut in 1/3 cup Crisco (butter flavored works nicely) with a fork until the mixture looks like meal; then Add 1/3 cup milk to make a dough.

2. Take the dish with butter out of the oven as soon as the butter is melted, but not burned (turn the oven up to 375 degrees).

3. Sprinkle the surface of a cup towel or pastry mat liberally with flour. Roll or pat crust into a rectangular shape. Spread 2 cups of peaches (or any other fruit desired) onto the dough and roll like a jelly roll or cinnamon roll. Cut the roll into slices about 1 inch thick. Place each slice cut side down in the melted butter.

4. Meanwhile ... mix 2 cups water, 2 cups sugar, 1 tsp almond flavoring, and a small amount of peaches (or other desired fruit) in a saucepan and bring to boil. Remove from heat and slowly & carefully pour over the entire 9x13 Pyrex dish. (The dough should puff up a bit).

5. Bake @ 375 degrees for 45 minutes.

Inspiration Gardens project moving along

A major project has been under way in Limestone County for nearly a year, one that will add a fun and educational feature for the people not only in this county but for those in the area.

It’s called Inspiration Gardens and it has the potential to provide hours of pleasure and make a lasting, even life-changing impression on children as well as adults.

The project is being created by the Limestone County Master Gardeners next to Springfield Hall, which is off Highway 14 on the Groesbeck side of the Navasota River. Master Gardeners is an adult volunteer program conducted by the Texas A&M University Extension Service.

“The Limestone County Master Gardeners are extremely excited about this project,” said Kris Clark, a Master Gardener and project director, “because we believe this will have a huge impact on our community by providing unique educational, horticulture-related training and learning for all ages within the county.”

The Master Gardeners are known for creating projects all over the county, such as flower beds next to churches, nursing homes and the at the Limestone County Fairgrounds. They also teach classes on various horticultural subjects.

Through Inspiration Gardens, the Master Gardeners will have a location where people can come to them to learn various types of gardening and about other subjects.

Although the project appears to be just beginning, it has been a long time in the making. The group had talked for years about a garden project, and the agreement for Inspiration Gardens was signed in October 2022. The Massey Foundation agreed to a 10-year lease of half an acre of land next to its Springfield Hall venue, with an opportunity to extend that lease further at the end of the initial 10 years.

The preparations began with much planning of the various areas of the garden, laying out irrigation and electrical lines, and establishing relationships with people and businesses all across the county.

“We are 90 percent complete with our irrigation system,” Clark said. “That’s been the primary focus.

“We’ve been lying a bit low with the extreme heat we’ve been having,” she said in late August. “We’ve tried to avoid a lot of manual labor during the summer. I have intentionally kept people out of the garden, because the last thing we need is our members suffering heat stroke. So we’ve really focused on all the planning, and now we have a number of things that are poised to move forward very quickly as soon as we can get back into double digits (temperatures) instead of triple digits.”

Different gardens in one project

Eventually, Inspiration Gardens will include about eight or 10 gardens, with the first few including a Welcome Garden, a Children’s Garden and a Prayer/ Inspiration Garden. Different committees of Master Gardeners have been formed to plan each garden. Other committees are planning a Rose Garden, a Vegetable Garden, a Texas Natives Garden and a Rainwater Harvesting Project.

The committees’ plans include everything from hardscape or decorator features of the garden to what plants they are going to be putting in the garden. Hardscape refers to physical materials incorporated into a landscape, like stone pathways, brick walls, a concrete bench or a wishing well.

The committees are also planning curricula for their respective gardens, what to teach their visitors, both children and adults.

“As they are developing the concept around that specific area and planning the actual layout and design of that area, they are also building into that design things that would be curriculum related,” Clark said.

For example, a section of the Children’s Garden is planned to be called Ladybug Crossing, which will include decorative items children would be attracted

to, but also will include information about bugs that are good for gardens, insects that gardeners like to see in the garden.

Another example of curriculum is in an area called the Welcome Garden, which will be one of the first areas people see when they walk into Inspiration Gardens.

“Their design is really focused on how to create features that draw people in,” Clark said. “So curriculum that might come out of their garden area would be something more adult oriented. It would be more the challenge of creating a composition that is attractive to people. That’s thinking about color, about sizes and shapes of each of the things you put in the garden; and thinking about their relationship to each other.”

Because the project is so large and the number of Master Gardeners is limited, Inspiration Gardens will be worked on incrementally.

“So some of the gardens will be brought in this fall and will be finished early spring (2024),” Clark said, “and then some of the gardens, including the Texas natives will be coming in later that spring because they are more heat tolerant. So they can be planted a little bit later in the season and will do well during the summer. Some of these other plants, we’ll have to be sure they are established before we start getting into too much heat next year. Those are the kind of things we have to think about in terms of what order we actually do this.”

The rainwater-harvesting project is earmarked to be created the second year, so it’s still about a year and a half out, she noted.

“We want to have most of Phase 1 of the gardens established,” Clark said, “and then we will actually be able to focus on the rainwater system; then be able to utilize it to support the water needs of the gardens.”

Donations and speaking opportunities

The Master Gardeners speak at various venues like clubs and churches that want to know more about them. Besides talking about the project and forming committees, the Master Gardeners have requested from the public monetary donations and in-kind donations, such as flagstones, bricks, flower pots, especially if they are large and in pairs; all sorts of tools and also wheelbarrows.

“When we’re in working phase and are going back and forth, when we have a crew out there, it would be really nice to have a few wheelbarrows,” Clark said. Donations of materials like compost or mulch are also needed.

People often have leftovers from projects they have done at their homes, and these items are welcomed as materials that can be incorporated into the gardens. Since the group is currently working on creating pathways in the gardens, they need donations specifically for expenses associated with that work, Clark said.

Recruiting new Master Gardeners

The Master Gardeners are also looking for people interested in becoming Master Gardeners themselves. Consequently, the group is recruiting those who would like to attend the next Master Gardeners class, which starts in January 2024.

To become a certified Master Gardener requires 50 hours of training, which is usually done in once-aweek classes; and then 50 hours of volunteer work in

the community as the initial investment. Those who complete the requirements receive a certificate of completion from Texas A&M’s Extension Service.

Anyone who wants more information or is interested in potentially becoming a Master Gardener is encouraged to call Limestone County Master Gardeners President Linda Valls at 281-772-9051.

Valls is on the committee to plan the Children’s Garden, and she, like Clark, sees the long-term positive effect Inspiration Gardens will have on the people of Limestone County.

“This is a wonderful project for everyone in the community, introducing our residents to the joy of gardening,” Valls said. “Our primary goal as Master Gardeners is education, so with Inspiration Gardens we’ll be able to reach a lot more children than we have in the past. Not only that, but it’s going to be a beautiful place if somebody just wants to come to a peaceful, relaxing garden. It’s going to be that, too. There’s nothing like it in the whole county.”

Part of what her committee is working on in the Children’s Garden is providing opportunities for children to explore a garden, Valls said.

“How much time do they spend outside nowadays?” she asked rhetorically. “It’s going to be a sensory garden, where they can smell, feel and taste what’s in the garden, but they are also going to get hands-on experience in terms of how plants grow and be able to plant something.”

The Children’s Garden will also offer art projects related to gardens, fun activities and books on gardening.

“If you can start children young and get them interested in gardening, it can become a lifetime experience for them,” she said, “something they can take with them in their lives as well.”

Mexia EDC Update

Summer has been very hot this year, I’ll bet we all are looking for cooler weather and settling into our fall routines. School seems to always get the routine going and help us realign our focus.

The EDC continues to remain focused on job creation, business development, housing concerns and taking care of local businesses. Locally, the EDC has supported the Chamber, the Lions Club, Youth Sports, and other community events including Cindy Walker Days. Several local businesses have benefited from MEDC funds, and

they include Sandy’s Bar and Grill and Cool Cats Learning Academy. We continue to receive calls from local entrepreneurs looking to start a new business or expand what they currently have. Referrals are made to the Small Business Development Center (SBDC) associated with Navarro College to develop a business plan and then come back to the EDC. Teri Stewart is the Business Advisor for the SBDC, and she is doing a great job, super positive and looks for any way to help. She truly is a great asset to have in the EDC building. On the business/industrial park side sometimes things move slower than we would like but the EDC is still on track for two major developments. While I cannot give you the name of the businesses coming, I can tell you that they are going to create 400 new jobs for Mexia and will need approximately 50 acres for their business. It will be the biggest positive news to hit our area in a long time when this happens. The second business potential will be more of a professional building with several new jobs, but a lot of jobs are already filled. Thirdly, one of our local businesses is going to expand its operations and will probably employ an additional 60 to 80 positions. I’m proud of the work they do and very encouraged by their expansion efforts, we will be assisting in that process. The fourth development involves affordable housing. Not sure any housing is “affordable” these days, but we are working with developers to try and put a good project together for much-needed housing in our area. The housing will be located on 100 acres of the EDC property, this will make it easy access to the schools and other areas, with Highway 84 getting so busy this may help ease a little congestion during school days. Additionally, the EDC has been approached by two different travel plaza-developers for sites in Mexia, this is due to the increased truck traffic on Highway 84 and Highway 14. Businesses are looking for places to go and we sure want to be on their list.

Hope that all of you will continue to support your local businesses, encourage people of all ages to fill the current jobs we have in Mexia. I’m a firm believer that having a job makes people feel better, sets the tone for future development, and helps our community prosper. Our local diversity helps us be resilient to unhealthy influences, helps us maintain and sustain our community, and gives us an economic advantage over other communities.
