La Mare Black Butter

Like everything from La Mare this is made in their in-house kitchen. Despite the name Black Butter is actually a rich and spicy apple preserve that goes back hundreds of years. The island used to be full of apple orchards and cider was made by farmers to give to staff as part of their wages! People would then make Black Butter by boiling the cider over an open fire for up to two days and would then add apples, sugar, lemon, spices and a hint of liquorice while continuously stirring with a wooden ‘rabot’ or paddle. Use it on sweet or savoury dishes.

You can’t get much more Jersey than salt made from the sea water which surrounds the island. Made using traditional methods in their bespoke salt houses, they solar evaporate large quantities of sea water to make this excellent cooks ingredient. It comes in a variety of blends including lemon, pepper dulse and our favourite, chilli (perfect for the glass of a margarita!).
