It’s hard to believe that the holidays are here already. In some ways it feels like just yesterday that we were facing a socially distanced holiday season. The months of pandemic have brought challenges for many of us, yet the people of Concord have faced those challenges with courage, patience, and compassion for others. As you plan for the coming season, you might find our article “Holiday Celebrations Around Town” on p. 14 useful. If you’re looking for tasty new side dishes for the family table, have a look at “Holiday Dishes Sure to Please” on p. 37. And shop-local supporters will find our “Where to Eat, Where to Shop, Where to Stay” reference – along with walking maps – handy. That information starts on page 29. Happily, many of the shops, restaurants, and historic sites of Concord were able to reopen this year, although many of the historic sites are still on limited schedules. Shops and restaurants are doing their best to serve us, despite staffing shortages nationwide. They’ve been there for us this year —now it’s our turn to support them. This holiday season, please shop locally! You can shop in-person, by phone, or via website. Order that special gift and pick it up curbside or have it delivered. Or grab your holiday mask and drop by in person, the shopkeepers would love to see you! From Concord Center to Thoreau Depot and West Concord, there is an amazing array of unique gifts for everyone on your list — right here in the town we love. The Gift of Concord certificate (available at Middlesex Bank or the Visitor Center) is a great option too - it can be used at any participating Concord business! Concord’s restaurants are here for you too. Plan a special night out (restaurants have put in place meticulous cleaning and safety protocols to keep holiday dining safe and fun) or purchase a gift card for a friend, colleague, or family member.

Holiday Dishes Sure to Please BY DEBRA STARK With thanks to Debra’s Natural Gourmet for their support
Gathering with friends and family around a table laden with good food is a highlight of many holiday celebrations. While everyone loves the tried-and-true dishes they grew up with, why not surprise your guests with a new side dish or dessert this year?
Wild Rice & Purple Potato Pancakes
Gingerbread with Pear and Molasses
Potato pancakes are good for any celebration. These potato pancakes take it to the next level by, ooh la-la, including wild rice. (Did you know wild rice is not a grain, but a seed? Just like buckwheat is not a grain, but a fruit?) If purple potatoes aren’t available, use russets. Use organic in either case. Choosing organic supports practices that protect the environment, workers, and you and your family. Organic is a winner!
A good pear is lovely. A nice counterpoint to summer fruit. And speaking of ingredients, we know blackstrap molasses is rich in iron and that ginger not only promotes good digestion, strengthens circulation, and warms extremities, but also helps alleviate nausea. This cake and a good cuppa ought a do ya.
Serves 4
1 C boiling water 1/3 C wild rice 1 1/2 lbs organic purple or russet potatoes 2 Tbsp extra virgin olive oil (EVOO)
1 tsp good salt like Celtic 1 tsp black pepper 4 farm fresh, free-range eggs 1 medium organic onion, chopped fine Additional oil for frying
Put wild rice into boiling water. Cover pot and simmer one hour. Drain the water if any remains. In the meantime, steam unpeeled potatoes until easily pierced by a knife. Mash with a fork in a medium bowl. Add rice. Gently warm EVOO in a medium skillet and sauté onion until soft. Add onion, salt, pepper, and eggs to potato-rice mixture. Mix lightly with a fork. Using the same skillet, add just enough oil to cover the bottom. Over medium heat, heat the oil. Spoon large tablespoons of the potato mixture into the hot oil. Pan fry for 2-3 minutes on one side Flip. Fry on second side. Serve hot, warm, or at room temperature. (To cook ahead and reheat the next day, put potato pancakes on serving platter in a 350-degree oven for 10 minutes.)

4 C whole wheat pastry or einkorn flour 2 C coconut sugar 2 Tbsp ginger powder 1 Tbsp cinnamon 1 tsp good salt like Celtic or Himalayan
1 C blackstrap molasses 1 C extra virgin olive oil (EVOO) 4 farm fresh, free-range eggs 1 C milk, any kind, full fat 1 Tbsp lemon juice 1 Tbsp baking soda 4 pears, any kind, peeled, diced
Preheat oven to 350 degrees. Grease a 9x13 pan (Spectrum Naturals lecithin sprays are perfect). In a large mixing bowl, combine dry ingredients. In a second bowl, mix wet ingredients. Pour wet into dry and stir quickly. Don’t over mix. Fold in pears. Spoon batter into greased pan and bake for 35-45 minutes, or until knife inserted in center of cake comes out clean. Remove cake pan from oven and place on a wire rack to cool. Cut into 12 large pieces and serve as is, or, of course, you can top with caramel ice cream or organic heavy cream whipped to soft peaks with a splash of vanilla. You can top with crystallized ginger or serve with a side of fresh raspberries. It’s all heaven.
